from an innovative incubator to a parading egg queen, poultry shaped petaluma’s history. BY CHRISTOPHER HALL

Founded in 1852 on the former site of a Coast Miwok village and a Mexican land grant, early Petaluma supplied game meat and farm produce to booming San Francisco, and served as a vital port for wheat from California’s interior. In the 1880s, though, after two local men perfected a revolutionary chicken incubator, commercial egg production exploded, and a one-time farm enterprise transformed into a modern industry. By the early 20th century, Petaluma was hailed as the “World's Egg Basket.” Shipped by river and rail, millions of fresh Petaluma eggs each year graced breakfast plates across the country. With production focused on the Single Comb White Leghorn, a prolific breed capable of laying an average of 200 eggs annually, deposits swelled at local banks, making Petaluma one of America’s richest towns. The town honored its feathered benefactors, naming a park and a baseball team for the breed, and erecting one statue of a broody hen nicknamed Betty. In 1918, the town held the first of its National Egg Day celebrations — the precursor to today’s Butter & Egg s ochure site br at the ic r Days — which often featured eggo t is le H ilab

laying contests, a Chicken Rodeo, an Egg Queen Ball, and a parade with poultry-themed floats and costumes and the Egg Queen herself attended by her court. After its 1923 opening, the town’s Chicken Pharmacy scored a mention in Ripley’s Believe It or Not as the world’s only store catering to poultry remedies, including tiny chicken “spectacles” to guard hens’ eyes from being pecked. Production in Petaluma and surrounding Sonoma County peaked in 1945 at an astonishing 612 million eggs. A slow decline followed, in part because the region’s smaller ranches couldn’t compete with the giant factory farms that opened in the southern United States and elsewhere after WWII. Today, poultry no longer figures so prominently in the local economy, but Petaluma’s egg heritage remains front and center during the annual Butter & Egg Days Parade and Festival, held each April. You can even get a feel for the egg’s glory years on a stroll through downtown. There, many of the jewels of vintage architecture in the historic district trace their origin to money made in the egg trade. And for modern Petalumans, this is a legacy worth crowing about.

PET FRIENDLY

Let the Dogs Out

Dog-friendly spots that put the ‘pet’ in Petaluma. et your steps in at one of the city’s scenic dog parks. Rocky Memorial Dog Park provides a nine-acre open space for your pup to run around off-leash. Or, let Fido roam free at the Urban Separator Off-Leash Dog Area, which is nicely shaded in summer. The fenced-in Deer Creek Village Dog Park has watering stations for pups and benches for their friendly humans. Refuel after a morning at the park with some eats at Petaluma’s pet-friendly spots, which are likely to offer your pup a bowl of water (and maybe even a treat): Taps Beer Co. & Kitchen, Brewsters Beer Garden, Butcher Crown Roadhouse, River Front Cafe, Flamez Grill, Petaluma Pie Company, Lagunitas Brewing Company, Wild Goat Bistro, Risibisi, or Mi Pueblo. Treat good boys and girls with a new toy from Rivertown Feed & Pet Country Store or a custom collar or harness fitting at Petaluma Pet Company, or pick up novelty gear at Our Best Friends. And don’t forget to give your dog extra pampering with Soapy Tails dog-safe shampoo bars from the Soap Cauldron. Lastly, entertainment! For almost 30 years, the World’s Ugliest Dog® Contest has been one of the area's most anticipated events. Watch contestants of all breeds and sizes wag their tails to victory each June. Even better? The event emphasizes the importance of pet adoption, not pedigree. That’s worth the tail wagging!

neak in a tasting before dinner at Barber Cellars, which specializes in single-vineyard wines from their organically, sustainably farmed vineyards and pairs them with cheese and charcuterie (or fun snacks like goldfish crackers and jerky). Or consider Sonoma Portworks, where you can taste four ports or after-dinner wines. Make a reservation at Brooks Note tasting room to sip delicious Pinot Noirs from Petaluma Gap AVA. Depending on your date-night dinner vibe, start casual at open-air rotating food market and 30-tap beer garden The Block — which also hosts live music nights — or slurp oysters at The Shuckery alongside a cocktail from the lobby bar in adjacent Hotel Petaluma before digging into

seafood-focused shared plates. Across the street, sidle up to the bar at Southern restaurant Easy Rider for pork belly biscuits and the fried chicken dinner for two. For a dose of nostalgia, enjoy classic Italian at Volpi's Ristorante & Bar. The former home of a speakeasy, Volpi's "secret bar" is still in operation. Dance off dinner at the Speakeasy, which features live music seven nights a week, or at sister venue The Big Easy, which also hosts live bands. Check the calendar to see who has the stage at the Mystic Theatre. If you want one last drink — and something sweet — open-air Brewsters Beer Garden has 30 revolving craft beers and soft serve ice cream in a chocolate shell, perfect for enjoying by a firepit.

EASY RIDER SOUTHERN COMFORT

It’s fitting that Easy Rider is located on Kentucky Street in downtown. Owner and chef Jared Rogers hails not far from the Bluegrass State in the Blue Ridge mountains of Virginia, where he developed his affinity for Southern food. Specifically, it’s the Lowcountry fare of South Carolina that the former San Francisco Chronicle rising star chef has infused on menus at various stints throughout the North Bay. At Easy Rider, Rogers leans into his roots, offering dishes like fried chicken with chili honey and bacon truffle gravy, Cajun-spiced fresh fish and red rice jambalaya, and pork belly biscuits with bourbon glaze. A cocktail bar and by-the-glass wine options round out the offerings. The project is a personal one not only because of the food, but because Rogers is now a Petaluma local. “I fell in love with the town,” he says. “The happy customers make it the best deal for me.” —Ethan Fletcher

ALUXA AND JAZMINE LALICKER THE SHUCKERY Tomales Bay oysters are considered a local culinary treasure. The same could be said of sisters Aluxa and Jazmine Lalicker. They brought the perfect combination of fun and sophistication when they opened The Shuckery in Hotel Petaluma, which goes through 600 to 1,200 oysters a day. That’s a lot of shucking, but it’s nothing these two can’t handle. Aluxa honed her skills working as a kayak guide in Tomales Bay, where she would unlock oysters beachside. She passed on those skills to Jazmine and they started The Oyster Girls, a catering company that hosts onsite oyster bars at events. Aluxa 46

continues to run that business, while Jazmine runs the Petaluma restaurant — and will soon open a plant-focused restaurant on the riverfront. TONY NAJIOLA CENTRAL MARKET It’s hard to imagine a better cooking lineage than a scion of Sicilian vegetable farmers who was raised in New Orleans. Tony Najiola took that legacy and ran with it, starting his career in his teens before landing an executive chef position in Manhattan, followed by a series of high-profile gigs in San Francisco. Drawn to Petaluma because of its agricultural heritage, Najiola realized the ultimate farm-to-

STEPHANE SAINT LOUIS TABLE CULTURE PROVISIONS Stéphane Saint Louis has what can only be described as a globe-trotting background. Born in Brooklyn, raised in Haiti, and graduated from high school in Larkspur, he spent time cooking in such culinary hotspots as Paris, Shanghai, and Copenhagen. But it’s Petaluma that Saint Louis calls his “lucky charm.” “The love that is spread throughout this small community,” he says. “It was the perfect place to open a restaurant.” At Table Culture Provisions, Saint Louis marries his background with craveable comfort food in a laid-back setting. Seasonal menu favorites include delicata squash rings with onion dip, seared scallops with salmon roe atop a broccolini-sunchoke purée, and a vanilla pastry cream streusel. Lucky indeed. table dream by founding his own local plot to supply his restaurant. At Muleheart Farm, he grows organic produce and raises livestock, including several heirloom breeds of pigs, all of which appear daily on Central Market’s menu. It’s this passionate, hands-on focus on impeccably sourced ingredients turned into scratch-made food that has made his labor of love a Petaluma favorite for more than two decades.

hat to get the person who has everything? Delicious, local, scratch-made food and drink, of course! Petaluma is positively bursting with artisan food makers. Gin, Griffo Distillery What goes into Griffo’s gold medal–winning Scott Street gin? The light, crisp twist on a traditional English gin is infused with nine local botanicals, including coriander, grain of paradise, and wildgrown juniper, and then refined via one single run through “Betty,” Mike and Jenny Griffo’s towering copper still. WHAT’S ALL THE BUZZ? That’s some happy buzzing you’ll hear from busy bees zigzagging through the more than 5,000 lavender plants dotting the grounds of Lavender Bee Farm. It’s the reason for the unique floral notes so prevalent in its signature line of gourmet honey. Plus, the purple pastoral property is just a gorgeous spot to visit. Call ahead for reservations.

you can also grab a baguette, a bottle of wine, and make a picnic of it at the creamery’s lakeside property, located in the picturesque, rural outskirts of town. Olive oil, McEvoy Ranch Just 15 minutes from downtown, McEvoy Ranch is a magical oasis with 57 rolling acres of dusty green Tuscan olive trees set amid natural ponds, vineyards, and native wildlife. Apart from taking in the scenic surroundings (tours are available), a visit must include a stop at the tasting room packed with gorgeously packaged skincare products, candles, home goods, culinary items, and, of course, tastings of McEvoy wine and organic extra virgin olive oil. Jam, Lala’s Jam Bar and Urban Farmstand File this under “only in Petaluma.” Lala’s Jam Bar does indeed offer tastings of its homemade marmalades, jams, and jellies. SPIRITS The spirits scene is dominated by family-owned businesses and garden-to-bottle flavors. Griffo Distillery creates small-batch gin, whiskey, and vodka, available for purchase or served at the barrel room bar. At Barber Lee Spirits’ distillery, sample whiskey, absinthe, moonshine, and brandy, or try them in a creative cocktail (like bourbon, clarified milk, and cornflakes in Breakfast of Champions). Moylan's Distilling & Stillwater Spirits bottle raspberry and Bartlett Pear brandies plus whiskey and grappa. Mind the Gap

The Petaluma Gap AVA is powered by wind.

U

BY ETHAN FLETCHER

nlike many American Viticultural Areas (AVAs) in California, the Petaluma Gap AVA is defined not so much by what’s happening below ground but by what’s happening above it. “Lots of areas are associated with soil type or water influence, as with the Russian River,” says Erica Stancliff, of the wine region’s board of directors and winemaker at Trombetta Family Wines. “But we are measured by the wind that comes in from the Pacific

Ocean and blows through the gap in the hills into San Pablo Bay. It’s a naturally occurring wind tunnel, and it’s what makes the Petaluma Gap AVA so special.” Yes, the region has different and unique terroir, elevations, and irrigation. But the gap, which brings in fog in the morning and wind in the sunnier afternoons — “You can just about set your watch by it,” says Stancliff — has an outsize impact in two ways. First, wind tends to produce smaller

clusters of grapes with thicker skin to protect the fruit from the cooler temperatures. That thicker skin holds higher concentrations of phenolics, which in turn leads to more intense tannins, colors, and, ultimately, flavors in the wine. Second, cooler temperatures extend the length of the growing season and, importantly, harvesting season. That means that unlike warmer regions with smaller windows, local wine growers have upwards of two weeks to harvest. Simply put, winemakers have greater flexibility to pick grapes for optimal expression toward the specific wine they’re crafting. The AVA is best known for its Pinot Noir, followed by Chardonnay and Syrah. However, encompassing some 200,000 acres stretching southeast from the Pacific coast at Bodega Bay to Highway 37, Petaluma Gap has shown great promise in producing Riesling, Grenache, and Bordeaux varietals. For that, you can thank the dozens of hard-working wine growers. And of course, the wind. 1: Sangiovese vines at Barber Cellars 2: Harvesting Petaluma Gap AVA grapes

Take a post-shopping stroll along the Petaluma River.

W

ithout the river, there would be no Petaluma. Its proximity to San Francisco made Petaluma the original shipping hub for Sonoma County. In the 1830s, General Mariano Vallejo was the first to use the 18-mile waterway as a freight channel, conveying hides and tallow from his Petaluma Adobe to Yerba Buena (San Francisco), where they were loaded aboard vessels bound for Europe. During the gold rush, American settlers established a shipping depot at an abandoned Miwok village along the river, sending game meat and potatoes — the area’s first agricultural boom crop — on boats to San Francisco. In 1852, that depot became the genesis of the town of Petaluma. The dawning of California’s wheat boom in the mid1850s filled the river with scow schooners, sloops, and steamers transporting cargo and passengers to and from San Francisco. However, increased traffic surfaced an inconvenient truth — that the river wasn’t actually a river, but a tidal estuary. Extending south to San Pablo Bay, it rose and fell with the tides twice each day. As Sonoma County transformed into farm country, winter rains sent run-off from the fields into the estuary, filling it with silt. That created a chronically clogged artery at the very heart of Petaluma. The first dredging effort was undertaken in 1859,

VisitPetaluma.com | 2022-2023

a year after the city was incorporated. Some of the estuary’s many bends were straightened to improve its navigability. In 1880, the Army Corps of Engineers undertook a federally funded dredging of the estuary, the first of many to come. As the wheat boom ended later that decade, it was replaced by an egg boom, elevating Petaluma to unprecedented heights of prosperity and commercial shipping. Following World War II, new factory farms in the Central Valley dealt a lethal blow to Petaluma’s chicken industry, diminishing commercial water traffic. (See p. 22 for more.) In hopes of attracting new industries dependent on water transportation, the city of Petaluma asked Congress in 1959 to formally rename the estuary — historically known as the Petaluma Creek — the Petaluma River. Their efforts attracted some new shipping industries as well as an increase in recreational boating. The latter has helped to revive the Petaluma downtown riverfront as a dining and tourist destination. While the decline in commercial river traffic brought an end to dredging by the Army Corps after 2020, the increase in recreational boaters attracted by the Petaluma Yacht Club and the annual Rivertown Revival Festival, along with the newly constructed Floathouse for rowing sculls, bodes well for Petaluma’s historic waterway.
