Cherryville physician Dr. Thomas Rhyne White was honored on Friday, Nov. 6, with the prestigious NC Family Physician of the Year Award. Said White recently of the honor, “It’s an award I’ve witnessed being given every year at the Grove Park Inn (in Asheville) for as long as I can remember. “It’s not voted on and you are nominated anonymously. A committee meets and looks at all of the nominees and goes from there.” White, a 1972 Cherryville High School grad, said a career in the medical field was not on his radar then; he instead said he wanted to be a basketball coach and a biology teacher. “I knew I wanted to go to Duke at a young age – around 5, I believe – and told my mom that’s what

The N.C. Department of Public Instruction and State Board of Education have released Career and Technical Education (CTE) credential performance data for the 2019-2020 academic year, and it provides “good news” for Gaston County Schools. Gaston County is first in the state for the number of CTE credentials earned by students and first in the state for the percentage of students earning more than one credential in a particular CTE area. It is the only time since the state began tallying credential performance data in 2010-2011 that the same school district has earned top rankings in both categories in the same year, according to the State Board of Education.

dents. Gaston County is the tenth largest school district in the state. In 2018-2019, Gaston County was second in the state with 10,811 credentials earned by students and was second in 2017-2018 with 12,566 credentials. In the summer of 2000, Gaston Together began a program for school children to enhance the awareness of Gaston County and grow Community Pride. By building on the study of the community in the third grade, Gaston Together worked with Gaston County Schools to develop the “Pride in Gaston Traveling Tour” field trip for all third graders in the county, including both public and private school students. As of the 2020 – 2021 school year, over 50,000 students have participated in this program since its inception. Just like much of the rest of year 2020, this year’s tour was different. It went virtual! With the help of Gaston County Travel & Tourism, we were able to provide a virtual tour that showcased all sixteen sites in the Pride in Gaston Traveling Tour Activity Book. In addition, two of the sites traditionally visited on the field trip tour, the Schiele Museum and the Gaston County Museum of Art & History, created customized videos for the students. The virtual tour and classwork components were conducted in November. Although very different, the virtual format did provide

Meanwhile, said Lutz, Head Start allowed the program to carry out a home-based, program staff visiting children in their homes. “The staff provided a socialization day each week located in the St. John’s Lutheran Church where children met with teaching staff for activities and then went to the Cherryville Library for literacy activities,” she said. “The parents would come with their children, so the parents would participate in a parent group that met with the Family Advocate. The parents and children received breakfast from the Cherryville Mc-

Donalds each time they had the socialization day.” Center Manager Beverly Mobley remembers the day of the fire well. “We are so happy to have children back in the building,” said Ms. Mobley, a sentiment echoed by all of the teachers and Child Advocates as well. Lutz noted they now have a new Family Advocate in Amiee Palmer, along with Family Advocate, Janet Gordon. It is Ms. Palmer’s first time in Cherryville, she said, adding that she “loves it here.” Additionally, and equally as important, the kids’ teachers are back. Classroom I teacher Ms. Quawona Hill is back, as is Classroom II teacher Ms. Lakisha McCorkle, who has worked with children with special needs previously and has taught at Rankin 1 & 2; Highland Charter; and is now at Cherryville. “The kids are all so excited about being her,” said

Ms. McCorkle. With Ms. Hill, who has been at Cherryville for six years, is Substitute teacher, Mrs. Charlene Withrow. Rounding out the able and capable staff is Ms. Kristin Thomas, the Education Specialist for the Cherryville Head Start. Both Lutz and Thomas said, “we are so excited about having children back in the building!” Currently, there are 20 children enrolled in the center at this time. Mobley and Lutz said the students attend four days of the week, with Wednesday as the day for professional development and training for staff. This allows the staff to spend extra time in the center cleaning and sanitizing for the next session. Said Ms. Lutz, “We are cleaning according to CDC guidelines. We have our staff cleaning daily and we also have a professional contractor cleaning each night, sanitizing and wip-

ing down high touch surfaces. If there is an issue with COVID-19, we then get an electro-static fogger and go through the center to disinfect the surfaces. “We feel the cleaning is going above and beyond the CDC guidelines for cleaning in daycare situations.” Mobley and her staff are very thankful for the hard work and help of their “miracle worker”, a young man named Gary Washington, who said it took roughly, “923 days of ‘love’ (a.k.a. hard work!)” to get the center up to speed in order to open back up for the kids. Additionally, Mobley said, “We would like to thank the community for being patient with the program. We are happy to be back to providing services in the center where children can be engaged with the teachers learning and accomplishing their goals.”

After high school, Dr. White attended Duke, receiving his undergraduate degree, and later, his medical degree. After an internship and residency at Charlotte Memorial, now CMC Main, from 1980 to 1983, White said he knew he all along he wanted to eventually return home to Cherryville and set up practice here. In the summer of 1988 Dr. White moved his family to Cherryville, and in September of that year opened his first practice. “It was a real barn-burner of an opening,” he said, smiling at the memory. “That first day I saw 13 patients! That was the slowest day of my entire career,” he said. Things went along until 2013, he said, when White noted it became apparent to him he wasn’t, in his words, “going to be happy working with a large hospital.” White elaborated, “I thought, ‘that’s not how I want to end my career’. Medically speaking, I thought we had lost our focus, which was treating our patients and giving them the proper time they needed to be seen and heard. “So, I left in 2014 and took a year sabbatical. I began making inquiries into the medical model of Direct Primary Care (DPC), studying different models, until I found one that answered many of my questions and met my criteria.” White said DPC is not a true concierge medical service model, like some that have been touted in the past by the media, buy is rather a significantly less expensive model. “In our office the patient has a direct relationship with the physician,” he said. White’s practice has been so successful they have been, he said, full for about three years now. In 2017 Dr. White added another physician to their DPC – Dr. Joshua Carpenter. “We anticipate adding another physician by this coming summer,” he said. As for the honor given and the award itself, Dr. White had this to say, in the speech he gave at the November event held at the Cherryville Fire Station. Here is a part of that speech; his words speak volumes. “We have all been through much together, and you all have made my life and career memorable and richer. Thank you all for my connection to you and your families, and for letting me be a dot in your lives. “I understand this award honors me – but the truth is it honors many, many, other people. It honors my family; my wife, Diana, and my children, Whitney and Daniel – who deserve much bigger awards than me. Thank you, I love you. “It honors my staff, Kristin, Shari, and Mary, who have worked with me for over

This award honors the great partners I have had over the years who have made me a better physician, Ashley Miller and Cheryl Baxter, at CPC, and in the past three years, at HTDC, Dr. Josh Carpenter, the best young doctor I know, and the recipient of this award in the year 2040. “This award also honors my patients who have granted me the privilege of being their doctor and it honors the City of Cherryville and its citizens who have supported me and given me this opportunity. “And lastly, this award honors a huge number of other doctors who should all be recognized and thanked. All those medical students who chose family medicine as a career, knowing that other specialties seemed more prestigious and certainly more rewarding financially. “It honors all those family doctors who chose to practice in small towns and communities, foregoing the conveniences and, again, the higher salaries of the bigger cities. It honors all those family physicians who have returned to their home town to practice, even when told this was crazy. And it honors all those family physicians who have listened to a different drummer, who have practiced medicine the way they thought was in the best interest of the patient, and who have done other outrageous things, like painting their building pink. “All those people – my family, my staff, my colleagues, my patients, my community, and the many other family physicians who chosen the same path as me – deserve to share in this honor today.” After offering a quote from one of his favorite business role models, Apple cofounder, the late Steve Jobs, Dr. White closed with this thought, “Somehow, luckily, and with lots of love, support, and friendships, I became what I was supposed to become – a family physician, in my hometown of Cherryville, in a pink building, with a wonderful family, exceptional friends and colleagues, amazing teammates, and trusting loyal patients. “I have been very fortunate. Thank you for this honor.”

The spread of the coronavirus across the state and record hospitalizations prompted Gov. Roy Cooper to issue a modified stay-athome order effective Friday, Dec. 11, that requires businesses to close from 10 p.m., to 5 a.m., except those that sell food, gas, or pharmaceuticals. “The virus is upon us with a rapid viciousness like we haven’t seen before,” Cooper said at a press conference on Tuesday, Dec. 8. More than 2,300 North Carolinians have died since the pandemic began in March. Daily case counts have exceeded 6,000 for several days in the last week, shattering previous records. The order creates a nighttime public closure period that prohibits alcohol sales between 9 p.m., and 7 a.m. Takeout and delivery services may continue during the nighttime period. Travel to and from work is permitted, and employees may continue to work throughout the night so long

The order does not change capacity limits for bars, restaurants or other establishments, but “events or convenings outside of the home must end by 10 p.m., and guests must leave the establishment and travel home or to the place where they will stay for the night.” The governor warned that if trends do not improve, more restrictive action may be necessary. “Let me be clear: We will do more if our trends do not improve,” Cooper said. “That means additional actions involving indoor restaurant dining, entertainment facilities and shopping and retail capacity. None of us wants that.” The state tracks several metrics to determine the level of spread in each of the state’s 100 counties, designating those with the most critical levels in red. Forty-eight counties are now red on the County Alert System map, up from 20 two weeks ago. (Ed. Note: Gaston and Cleveland county are in that red zone group.) “If you are in a red or orange county, you should limit going out to essential activities, you should avoid people that you don’t

live with,” said Dr. Mandy Cohen, N.C. Department of Health and Human Services secretary. The current spike does not yet account for people who contracted the virus over Thanksgiving, she said. Those patients are expected to present to already overwhelmed emergency departments in the next few weeks, exacerbating an already challenging situation for medical providers. If current trends continue, the state may run out of intensive care unit beds in less than five weeks, according to a study issued today by University of North Carolina and Duke University researchers. The increasing rate of hospitalization creates concerns not only about available beds and ventilators, but also health care staff tasked with treating Covid19 positive patients. “When you talk about bed capacity, it is just as much if not more making sure that hospitals have the personnel to take care of the people,” Cooper said. “They may have additional bed capacity that they may not be able to put patients there because they may not have enough workers available to do it.”

On Tuesday night, Fast Play delivered its 14th jackpot win to Barry Jenkins Jr., of Gastonia, to the tune of $319,692. “It’s just unbelievable that it’s this much,” said Jenkins. “I never even fathomed it could be this much even when I played.” Jenkins purchased his winning $10 Jackpot 7s ticket at the Kingsway on Kendrick Road and waited until the next morning to check it. “I was at work waiting on a customer and I happened to pull it out,” he recalled. “I looked down and it was a jackpot winner and I was sort of stunned. I had to look at it two or three times. So, I downloaded the North Carolina Lottery

app and verified that it was a winner.” Jenkins claimed his prize Wednesday at lottery headquarters in Raleigh. After required federal and state tax withholdings, he took home $226,185. “It’ll help our family in so many ways,” said Jenkins of his prize money. “I look forward to spending it with them and spending it on our house. It’ll just benefit us greatly.” Jenkins plans to use his prize money on home improvements and a new car for the family. “It’ll take a lot of anxiety off of having to spend big money here at the holidays,” he said. Like I said to begin with, it is the celebration of the birth of Jesus to Mary and Joseph in a stable in Bethlehem. It is the story of God’s Son coming to this world as a sacrifice on that cruel, old cross for the payment for our sins. So, when I think back to that year we gave to that family, it was all about giving rather than receiving. But in reality, we did receive a lot that Christmas. We received a special blessing for bringing the real meaning of Christmas to some very good people who became our friends. Merry Christmas to all!

Their analysis shows that the death rate from COVID-19 is not three percent of people who are infected; it’s more like 0.2 or 0.3 percent and that the mortality rate among young patients is significantly lower than it is for

adults over 70 years of age. Dr. Bhattacharya recently authored a summary of their findings. In it, he wrote, “the World Health Organization said back in early March that three percent of people who get COVID die from it; they were wrong by at least one order of magnitude. The COVID fatality rate is much closer to 0.2 or 0.3 percent. perfect that we celebrate on the Winter Solstice. It re-connects our adoration of the Christ child with our adoration of God Who created all and is in all created things. This was the greatest festival of the year for nature-worshippers because it marked the longest night of the year – and from that point on, the sun would provide more and more warmth and would bring Spring and new life. County’s Board of Commissioners names new chair; vice-chair for year ahead individuals representing the Gastonia Township. Keigher serves as the Gastonia Township’s other representative and is in the middle of his sixth term on the board. This will be his fourth time serving as chair. Crowders Mountain Township Commissioner Bob Hovis and South Point Township Commissioner Ronnie Worley were each sworn in to new four-year terms, having run unopposed in the general election. Fraley will also serve

In response, we wrote and issued the Great Barrington Declaration, which can be viewed – along with explanatory videos, answers to frequently asked questions, a list of co-signers, etc. – online at www.gbdeclaration.org.” An excerpt from the Declaration makes it clear what it’s prime purpose is: “As immunity builds in the population, the risk of

infection to all—including the vulnerable – falls. We know that all populations will eventually reach herd immunity – i.e., the point at which the rate of new infections is stable – and that this can be assisted by (but is not dependent upon) a vaccine. Our goal should therefore be to minimize mortality and social harm until we reach herd immunity. “The most compassionate approach that balances the risks and benefits of reaching herd immunity, is to allow those who are at minimal risk of death to live their lives normally to build up immunity to the virus through natural infection, while better protecting those who are at highest risk. We call this Focused Protection.” It is significant that nearly 50,000 medical and public health scientists and medical practitioners, along with more than 673,000 concerned citizens worldwide, have endorsed the Great Barrington Declaration. The general population, including medical personnel and lay persons are invited to sign their concurrence with the conclusions of the Declaration at its website.

Lincoln County 9-1-1 and advised she was traveling behind her vehicle near West Express on Highway 27 West. While deputies were searching for the vehicle the NC Highway Patrol advised they had chased the vehicle and the car ran into a field near Howard’s Creek Fire Department. What is needed is a spiritual revival, to restore the Lord to His proper place in every aspect of life. Only then will we have a correct interpretive lens, the truth, through which to look, to stand for and to do what is right, to embrace selfless priorities, and to pursue a right-minded and purposeful life.

Crouse man arrested for stealing the vehicle According to a media release sent out last week, Lincoln County Sheriff’s deputies and the North Carolina Highway Patrol recovered a vehicle stolen on Friday, Nov. 20, from a residence in western Lincoln County. Deputies were dispatched to 1998 Seagletown Rd., in Vale, in reference a stolen vehicle report. The owner told officers that Levi McCutcheon had stolen her 2012 Subaru after coming on the property without permission. The Moss vehicle was turning right around the gas pumps as the Garcia-Amaya vehicle was traveling straight, attempting to make a left turn around the same gas pumps. Four high schools rank in the top 15 Additionally, Gaston County has four high schools that rank in the top 15 statewide for the number of credentials earned by students during the 2019-2020 year. Hunter Huss High School is ranked second in the state with 2,976 credentials. Ashbrook High School ranks fifth with 2,297 credentials, Forestview High School ranks 13th with 1,721 credentials, and Stuart W. In response to the community’s request for more technical (vocational) training for students, the Board of Education established the CTE oversight committee in 2015. The committee, which involved business, community, and education leaders, reviewed CTE programs and shared feedback to ensure that the courses and pathways being offered were in alignment with the current workforce demand. Also, the committee wanted to ensure that CTE courses were relevant and equipped students for career and college readiness. The CTE oversight committee morphed into the Gaston County Schools Business Advisory Council. The council is responsible for fostering a partnership between the school district and local businesses to ensure that students are prepared for life after graduation and have the skills necessary to be competitive in a global workforce. a Pride in Gaston Activity Book. The 2020 Activity Books were graciously sponsored by Times Oil/ T.E.A.M. Foundation and Alliance Bank and Trust. The books now feature 16 sites of interest throughout Gaston County. New sites were added to the book last year including: the Loray Mill and MLK Plaza both located in Gastonia as well as Goat Island Park located in Cramerton. Some of the other sites in the activity book are the Hoyle House, the C. Grier Beam Truck Museum and the Daniel Stowe Botanical Garden. The Activity Book features a pen and ink drawing of each site, a few facts about the site and additional space where the students can add other information. All of the pictures in the book were drawn by Gaston County native, Lucy Penegar. The cover design was created by Image Mark Business Services. The “Pride in Gaston” Traveling Tour program is free of charge to the students thanks to the generosity of community sponsors. The 2020 Corporate Gold sponsor was

Following the tour, the students are asked to write an essay entitled, “Why I am Proud to Live in Gaston County.” These essays are entered into Gaston Together’s “Proudest Kid in Gaston County,” essay contest. The individual school winners and the overall county winner are announced later in the spring at Gaston Together’s annual Community Leadership Award event. The “Pride in Gaston Traveling Tour” has proven to be a valuable tool in building community pride in our students. It has allowed them to experience first-hand some of the heritage of Gaston County through these wonderful points of interest. With the experience learned through this program, it is hoped that as adults these students will one day want to make Gastonia their home! • Once baked, roll while still hot in confectioners’ sugar until coated. Let cool. Lightly dust with more confectioners’ sugar.

Coconut Macaroons 2/3 cup all-purpose flour 5-1/2 cups flaked coconut 1/4 teaspoon salt 1 (14 oz.) can sweetened condensed milk 2 tsp. vanilla extract

Chewy Sugar Cookies 2 3/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1-1/4 cups margarine 2 cups white sugar 2 eggs 2 teaspoons vanilla extract 1/4 cup white sugar for decoration • Preheat oven to 350 degree. In a medium bowl, stir together the flour, baking soda, and salt; set aside. • In a large bowl, cream together the margarine and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then the vanilla. Gradually stir in the dry ingredients until just blended. Roll the dough into walnut sized balls and roll the balls in remaining 1/4 cup of sugar. Place cookies 2 inches apart onto ungreased cookie sheets and flatten slightly. • Bake for 8 to 10 minutes in the preheated oven, until lightly browned at the edges. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Rolled Sugar Cookies 1 1/2 cups butter, softened 2 cups white sugar 4 eggs 1 teaspoon vanilla extract 5 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon salt • In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight). • Preheat oven to 400 degrees). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart

on ungreased cookie sheets. •Bake 6 to 8 minutes in preheated oven. Cool completely.

Amish Sugar Cookies

(Soft cookie made with batter, rather than dough) 1-1/2 cups vegetable oil 1-1/2 cups white sugar 2 eggs 4 cups all-purpose flour 1 tsp. baking soda 1 tsp. baking powder 1 cup buttermilk 3/4 tsp. salt 3/4 tsp. vanilla extract • Preheat oven to 350 degrees. • Mix together vegetable oil (yes, 1 1/2 cups of vegetable oil), sugar and eggs. Mix in the flour, baking soda, baking powder, buttermilk, salt and vanilla. • Pour teaspoon-sized amounts of batter onto cookie sheets, leaving plenty of room in between. These cookies will puff up and get large. • Bake for 8 to 10 minutes.

Peanut Butter Cup Cookies 1 3/4 cups all-purpose flour 1/2 teaspoon salt 1 teaspoon baking soda 1/2 cup butter, softened 1/2 cup white sugar 1/2 cup peanut butter 1/2 cup packed brown sugar 1 egg, beaten 1 teaspoon vanilla extract 2 tablespoons milk 40 miniature chocolate covered peanut butter cups, unwrapped • Preheat oven to 375 degrees. Sift together the flour, salt and baking soda; set aside. • Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan. • Bake at 375 degrees for

about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Peanut Butter Balls 1 1/2 cups creamy peanut butter 1/2 cup butter, softened 1 teaspoon vanilla extract 4 cups sifted confectioners’ sugar 6 ounces semi-sweet chocolate chips 2 tablespoons shortening • Line a baking sheet with waxed paper; set aside. • In a medium bowl, mix peanut butter, butter, vanilla, and confectioners’ sugar with hands to form a smooth stiff dough. Shape into balls using 2 teaspoons of dough for each ball. Place on prepared pan, and refrigerate. • Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat. • Remove balls from refrigerator. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set.

Russian Tea Cakes 1 cup butter 1/2 cup confectioners’ sugar 2-1/4 cups all-purpose flour 3/4 cup chopped walnuts 1/4 teaspoon salt 1 teaspoon vanilla extract 1/3 cup confectioners’ sugar for decoration • Combine all ingredients, mix well. • Refrigerate dough until chilled. • Roll dough into 1 inch balls and bake for 15 minutes in a preheated 350 degree oven.

• Preheat oven to 350 degrees. Line cookie sheets with parchment paper or aluminum foil. • In a large bowl, stir together the flour, coconut and salt. Stir in the sweetened condensed milk and vanilla using your hands until well blended. Use an ice cream scoop to drop dough onto the prepared cookie sheets. Cookies should be about golf ball size. • Bake for 12 to 15 minutes in the preheated oven, until coconut is toasted.

Pumpkin Bars 4 eggs 1 2/3 cups white sugar 1 cup vegetable oil 1 (15 oz.) can pumpkin puree 2 cups all-purpose flour 2 tsp. baking powder 1 tsp. baking soda 2 tsp. ground cinnamon 1 tsp. salt 1 (3 oz.) package cream cheese, softened 1/2 cup butter, softened 1 tsp. vanilla extract 2 cups sifted confectioners’ sugar • Preheat oven to 350 degrees. • In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy. Sift together the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined. • Spread the batter evenly into an ungreased 10x15 inch jellyroll pan. Bake for 25 to 30 minutes in preheated oven. Cool before frosting. • To make the frosting, cream together the cream cheese and butter. Stir in vanilla. Add confectioners’ sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars. Cut into squares.

Marshmallow Puffs 36 large marshmallows 1-1/2 cups semi-sweet chocolate chips 1/2 cup chunky peanut butter 2 tablespoons butter Line a 9-in. square pan with foil; butter the foil. Arrange marshmallows in pan. In a

microwave, melt the chocolate chips, peanut butter and butter; stir until smooth. Pour and spread over the marshmallows. Chill completely. Cut into 1-1/2-in. squares.

Mounds Balls 1/2 pound unsalted butter 3-3/4 cups confectioners’ sugar 1 pound sweetened shredded coconut 1/2 cup sweetened condensed milk 1 cup chopped walnuts 1 teaspoon vanilla extract CHOCOLATE COATING: 2 cups (12-oz) semi-sweet chocolate chips 4 oz. unsweetened chocolate 2 -inch x 1-inch x 1/2-inch piece paraffin wax Round wooden toothpicks Styrofoam sheets In bowl, cream together butter and sugar. Add coconut, milk, walnuts and vanilla; stir until blended. Chill until slightly firm; roll into walnut-sized balls. Insert a toothpick in each ball. Place balls on baking sheets; freeze. In double boiler over simmering water, melt chocolate chips, chocolate squares and paraffin wax. Keep warm over hot water. Using picks as handles, dip frozen balls into chocolate mixture; stick picks upright into was paper-covered Styrofoam sheet. Chill until firm. Remove picks and package candy in individual paper liners. (May also be frozen.)

Christmas Fudge 4-1/2 cups sugar 1 can (12 oz.) evaporated milk 1/2 cup butter, cubed 2 pkgs. (11-1/2 oz.) milk chocolate chips 4-1/2 cups miniature marshmallows 2 ounces unsweetened chocolate, chopped 3 cups chopped walnuts, toasted 2 teaspoons vanilla extract 4 ounces white baking chocolate, melted • Line a 13x9-in. pan with foil; coat with cooking spray. • In a heavy Dutch oven, combine sugar, milk and butter. Bring to a rapid boil over medium heat, stirring constantly. Cook and stir 5 minutes. Remove from heat. • Stir in chocolate chips, marshmallows and chopped chocolate until melted. Fold in walnuts and vanilla. Immediately spread into prepared pan. Drizzle with melted white baking chocolate; cool completely. • Using foil, lift fudge out of pan. Remove foil; cut fudge into 96 squares. Store between

layers of waxed paper in airtight containers.

Slow Cooker Chocolate Candy

2 pounds salted dry-roasted peanuts 4 ounces German’s sweet chocolate (about 4 squares) 12-oz. pkg. semi-sweet chocolate chips 2 1/2 pounds white almond bark

• Put the peanuts in the bottom of a 4-quart slow cooker. Layer the chocolate over the peanuts, beginning with the sweet chocolate, followed by the chocolate chips and then the almond bark. Set the temperature on low and cook for 3 hours. Do not stir the mixture. After 3 hours, stir the mixture with a wooden spoon until smooth. • Drop the candy into cupcake pan liners using about 2 tablespoons per liner. Allow the candy to cool completely before removing the cupcake liners.

Chocolate Peanut Butter Fudge 4-1/2 cups sugar 2 tablespoons butter 12 oz. can evaporated milk 2 cups chocolate chips Half of 16 oz. bag mini marshmallows 16 oz. jar peanut butter • Combine sugar, butter and evaporated in large saucepan. Let mixture come to a boil, lower heat and stir on very slow boil for 8 minutes. Remove from heat. • Immediately mix in chocolate chips, peanut butter and mini marshmallows. Stir until well combined. • Pour into greased 9 x 13 pan and let cool.

White Chocolate Dipped Pretzel Rods 1 pkg. pretzel rods 1 pkg. white chocolate candy melts or Almond Bark 1 tablespoon shortening (Crisco) if needed Sprinkles • Melt your chocolate according to package directions (or use mini crock pot) If the chocolate is a little thick add some shortening to thin it. • Line a baking sheet with wax paper. • Break pretzel Rods in half. Dip broken end in melted chocolate, tap excess off. To avoid dripping, give your wrist a little twist to turn the pretel. • Sprinkle a few sprinkles on melted chocolate then place dipped pretzel on wax paper to harden. • Repeat with remaining pretzels.

In last week’s matches, the JV and Varsity Lady Ironmen spikers split a pair of games, according to head coach Leigh Kiser. Kiser said on Tuesday, Dec. 8, her ladies were on the road in a conference match at Christ the King in Huntersville with Christ the King winning the varsity match 3-0. The match scores were 25-20, 25-9, and 25-22. Coach Kiser said the varsity ladies hung with the home team Lady Crusaders in Sets 1 and 3, but were outplayed badly in Set 2, suffering the defeat. “Addie Eaker had eight kills, set up by Rileigh Kiser’s 10 assists, with Kiser’s 10 digs and Megan Smith’s six digs leading the defense,” said Coach Kiser. “Reese Hoyle contributed three serve aces in the loss,” she added. On Thursday, Dec. 10, the CHS Lady Ironmen traveled to their rival, BCHS, for a match. The ladies came away victorious with a 3-0 conference win. Said Kiser, “Scores in this one were 25-17, 25-18, 25-18. We got great offensive production from junior Addie Eaker, who had 12 kills. Libero Megan Smith contributed four digs and four kills, and sophomore Rileigh Kiser led with six

serve aces and 19 assists.” Coach Kiser noted she hopes her squad will use the momentum from the win as they host Hunter Huss’ Lady Huskies and Highland Tech’s Lady Rams, who defeated Lincoln Charter’s varsity squad last week. The Lady Ironmen’s games are Thursday, Dec. 17, and Friday, Dec. 18, at Nixon Gym, starting at 4:30 p.m. In JV action, the ladies also picked up a win this week for first-year coach Brooke Henley, but first lost a hard-fought match at Christ the King (CTK). Match scores at the CTK loss were 30-28 (CHS), 25-18 (CTK), and 15-7 (CTK). Gracie Truesdale led the JV action at CTK with three serve aces and six kills, said Kiser. A quick victory was in order for the junior varsity Lady Ironmen as they defeated host BCHS’ Lady Yellow Jackets JV’s 25-4 and 25-7, for a conference victory. Freshman Taylor Digh’s 12 serve aces paced the ladies in this one, noted Coach Kiser. Head coach Scott Harrill said the CHS Cross Country team hosted a four-team meet at Tryon Park on Tuesday, Dec. 8. Harrill noted the Cherryville Ironmen, Bessemer City Yellow Jackets, Highland Tech Rams, and Thomas Jefferson Classical Academy Gryphons were in attendance for the Southern Piedmont 1A conference meet. Harrill said senior Ben Hayes once again led the Ironmen with a 21:24 time on the 5K Cross Country course. “Chase (McNeill) came in at 21:54 for the Ironmen and Scott Stroupe had a good showing,” said Coach Harrill, adding that Kadin

Beaver finished it out for the Ironmen. Harrill continued, “Kadin has been a good addition to the Ironmen in the last two meets.” Lady Ironman Landrie Wofford continued to pace the ladies’ Cross Country team, said Harrill, adding, “Landrie continues to improve each meet as she gets faster and faster.” Thomas Jefferson’s boys and girls won the meet and the boys will be looking to compete for a state championship this year. Harrill also noted the Gryphons took the top three places in the meet with times of 16:53, 18:55, and 19:38. The Ironmen will be competing for the Southern Piedmont Conference championship on Thursday, Dec. 17, at Lincoln Charter.
