No action taken on topics discussed at November 29 work session

At the Tuesday night, Nov. 29 Council work session, Council heard about scheduling public hearings for the next regular Council session, which will be Monday, Dec. 12, 2022.

One of the hearings will be about considering a special use permit for property at 230 Dick Beam Road for a possible granite countertop business. The applicant for the property, Mr. Carlos Alexander Nieto Naguera, is seeking, according to the council’s agenda notes, “… to operate a granite countertop business on the property in which slabs will be delivered and the final cuts for sinks and other fixtures are cut to order.” The property is currently vacant with the

exception of owner Jerry Denet (Denet Properties LLC) “miscellaneous storage of personal goods.”

It was noted in the agenda that on “Monday, Sept. 19, 2022, a completed application was submitted to City Staff and the Special Hearing Procedure was initiated.” The Board of Adjustment voted unanimously to recommend approval of the request, as noted in the Tuesday work session agenda.

Council also scheduled a public hearing for Monday (Dec. 12) for consideration of rezoning property located at the intersection (corner) of S. Pink and S. Mountain streets. Owner Charles Alvarez of Expert Builders LLC seeks to change the current zoning designation from its current GMC Dis-

ing jurisdiction).

The City Council also discussed the National League of Cities (NLC) Service Line Warranty Program. In the information provided in the agenda it was recommended that “… Council authorize the Administration, or their designee, to enter into a royalty Marketing agreement with Utility Service Partners, Inc. (USP) for an initial term of three (3) years, subject to City Attorney review with an additional one (1) year renewal.”

The program is supposed to help the City of Cherryville achieve its goals by “…providing homeowners affordable protection against significant costs” pertaining to leaking, broken, clogged, or otherwise damaged water and sewer lines and in-home plumbing

lines; ensure the delivery of timely, high-quality repair services; and provide exemplary service that reflects well on the city, to name just a few of the items listed on the agenda’s informational packet. Residents

may choose to enroll in the program, according to the information from USP, and the financial impact to the city is that there is no cost to the city to participate in the program, although doing so would mean the city would

receive a 50-cent per product per month royalty, paid annually.

City Manager Brian Dalton said of the work session meeting of Nov. 29, “There was no action taken on anything at the meeting.”

CPD Chief Jenks takes new position with Gaston Co. Sheriff’s Office

Chief Cam Jenks said he has “…worked every position“ there was to work at the Cherryville Police Department, starting when he came on board in 2000. That includes starting out as a

dispatcher and working his way up through the ranks to becoming interim Chief in 2012 when the department suffered troubles at that time, and eventually becoming Chief of Police, the highest position in the department, in 2017, after then-Chief Chad Hawkins moved on to take the position of Chief of the Belmont Police Department.

“I worked part-time while I was going to Gaston College,” said the 1999 CHS

grad. At Gaston College, Chief Jenks earned an Associate of Science de-

gree in Criminal Justice Technology. He is currently enrolled at Gardner-Webb University and is working on a BS, double majoring in Criminal Justice and Homeland Security.

Jenks said the interim CPD Chief position will be filled by another CPD veteran law enforcement officer, Capt. Brian Doolittle. The Chief’s job position is

advertised in the Cherryville Eagle and it is noted the Chief job description information is on the city’s web page.

Said Jenks when asked why he was leaving, “I am taking an Administrative Management position at the Gaston County Sheriff’s Office.” This will see him working once again with his friend and former CPD boss and the current GC Sheriff, Chad Hawkins, who ran un-

opposed and was elected in the past election cycle.

Jenks said he wanted to “personally thank” the City of Cherryville; the Mayor and the City Council; the City Manager; and his fellow City of Cherryville department heads and their staffs for allowing him this opportunity to serve and for supporting him during his tenure at the helm of the CPD.

“I also want to thank my

Day said the next seasonal event for finding deals on Main Street is the “Sip and Shop” event, which will be held on Wednesday, Dec. 8, from 5 to 8 p.m., with many merchants offering holiday “goodies” in their stores.

Monday, Dec. 5 at 7 p.m. Performances are scheduled for Feb. 3, 4, 10, and 11 at 7 p.m., and Feb. 5 and 12, at 3p.m.

Sarah Fox Sandoval, of the Cherryville Little Theatre, said, “Oscar Wilde’s famous comedy of manners, set in mid-century America, is the classic story of two men – Jack and Algernon – who use aliases to live more adven-

turous lives and win the hearts of Gwendolyn and Cecily, who both want only to be with someone named Earnest. A hilarious tale of miscommunication, mistaken identities and love, this modern adaptation of this Victorian play is one you’ll want to be a part of.” Find their Facebook events for character breakdowns, scripts and more information.

Bessemer City took a chance on a $30 scratch-off and won a $3 million prize.

Stroupe bought her lucky Fabulous Fortune ticket from Kingsway #5 on South 14th St., in Bessemer City.

When Stroupe arrived at lottery headquarters last Thursday (Dec. 1,) to collect her prize, she had a de-

cision to make. She could choose to receive the prize as an annuity of $150,000 over 20 years or a lump sum of $1.8 million. She chose the lump-sum amount of $1.8 million and, after required state and federal tax withholdings, took home $1,278,189.

Fabulous Fortune debuted in July with six $3 million prizes and 18 $100,000 prizes. One $3

million prize and nine $100,000 prizes remain to be claimed.

Everything started at about 6 p.m., last Friday night, but the actual work and set-up began earlier than that, according to the event’s organizers. As early as middle November and the end of that month the sets and planning for who they would be and where they would go was “gelling” so the Chamber and City folks would have a better idea of who all was coming, so far as vendors and businesses were concerned. This is nothing new, as in past years, as far back as perhaps 2016 or 2017, Chamber Director and City Events Planner Mary Beth Tackett noted this scale of planning and work was the norm for putting on not just any event the City and Chamber has, but pretty much is status quo for getting the job done for ANY event the City takes on.

Mrs. Tackett also noted that, in addition to the massive planning and execution of events of this caliber, there are the years they were unable to host – of had to move – WhoVille, due to either snow, rain or the terror and fear associated with a then-unknown pandemic scenario. Still, Mary Beth and company never gave up and always managed to literally “knock it out of the ballpark” when it came to presenting a spectacle the likes of Who-Ville, which never ceases to amaze and “wow” children of all ages. When asked what she thought of the 2022 edition of “Who-Ville”, Mary Beth said simple, “It. Was. GREAT!”

She elaborated by adding, “It went exactly like I thought it should have done. Just seeing the looks on the faces of the little kids was worth all the hard work and everything!”

Another facet Tackett was very impressed with was summed up as she said, while looking west down Main Street, “We have people all over the place! I love it!”

The “Mayor of WhoVille” for this year was City Councilman Jon Abernethy, who donned the butterfly-like long eyebrows and walked around Cherryville’s Main Street greeting everyone who came out with a jaunty, “Welcome to Who-Ville! Welcome to Who-Ville,” or some variation on that theme. Chamber Board member Gary Dellinger was a Who-Ville citizen, while members of the

Cherryville Little Theater troupe donned costumes and played the parts of the beloved Dr. Seuss characters The Cat in the Hat; Thing 1 and Thing 2; and other characters. The night really got rolling when Cherryville Police Officer Josh Colvard finally found the Grinch, hiding out in the huge crowd, and finally escorted him to the mini-park gazebo stage so he could meet all the little kids and their parents who all came out to see him. It was, after all, his night!

The Grinch (played by Mr. David Wright) was perfect and he really got into his part as he talked with all the kids about what they wanted for Christmas. Down the road was the real Santa Claus (in the person of “Santa” Floyd) who was busy doing his part to make sure all the little tykes got their Christmas wishes and

Christmas music was provided by DJ Larry Wright, who by day, is a City Water Works employee, but loves to play music at various city events as well as other local events where his musical skills are needed.

Mrs. Tackett and the City noted their thanks to the Cherryville Police and Fire Departments as well as all the city and other personnel who helped set up Who-Ville and take it down later on, as well as all those who took part in constructing the sets, the buildings; the vendors and merchants of the city of Cherryville and from near and far who came and transacted business during the event.

As always, Mrs. Tackett and the City and Chamber’s work during this season is never done as they have the Saturday, Dec. 10 Cherryville Christmas Parade, which starts at 10 a.m. This event too is a well-known, and much-loved celebration of the Reason for the Season, the birth of our Savior, Jesus Christ.

For m ore information on the Christmas Parade either visit the city’s web

site at www.cityofcherryville.com, check out their Facebook page, or call the

Chamber’s office at (704) 435-3451, during business hours.

One of the talented actors from Cherryville’s Little Theater, taking on the role (and doing a GREAT job, by the way) of the Cat in the Hat, one of the characters of Dr. Seuss. And here he is! The Grinch in all his green glory, making this little girl smile. See… he’s really not so bad after all! The Mayor of Who-Ville (City Councilman Jon Abernethy) and a citizen of Who-Ville (Businessman and Chamber Board member Gary Dellinger) took a minute to pose for their portrait. In the Lutheran Church, the time between Thanksgiving and Christmas is known as Advent.

Advent is a season of waiting, a time of preparation for the coming of Jesus Christ. “Be patient, therefore beloved, until the coming of the Lord.” (James 3: 7).

In the culture we live in, Christmas becomes a mainstream item usually at Halloween and in some of the various stores and businesses Christmas items begin to show up in August.

Remember Christmas as a child, close your eyes and go back to that memory; cherished memory of being a child and waiting for Christmas Day to arrive. Oh, those infernal countdowns – only 30 days until Christmas, only

‘Tis the Season

Can you believe how Time has flown by? It’s that time again - the Christmas Season. As the song says by Andy Williams, “It’s The Most Wonderful Time Of The Year.” An occasion when the air is filled with excitement, and many people seem to act more thoughtful, kind, or even silly. I enjoy reminiscing about holidays with family, friends, and co-workers. They were filled with laughter, a lot of food, great music, and so much more. In fact, one unforgettable, funny memory I have is when my employer hosted a white elephant gift exchange. Of course a few of the gifts were really nice, but most were prank gifts. The greatest prank gift of all was beautifully wrapped in a gigantic box. The “lucky’’ individual who chose the gift was shocked when they opened it and saw that it was a toilet! Yes, a toilet! The look on my colleague’s face was priceless! They kept it for an entire year until the next white elephant party.

THE HEARTBEAT OF CHRISTMAS

While our family traditions and joyous festivities create fond memories, we must make sure our focus is on the main reason for the season - that Christ our Savior, Healer, Deliverer was born. Isaiah 9:6 (NIV) says,“For to us a Child is born, to us a Son is given; and the government shall be upon His shoulder, and His name shall be called Wonderful Counselor, Mighty God, Everlasting Father, Prince of Peace.” Jesus, who is Emmanuel, which means “God with us” came to show us how to live, and to give us a life that is full of his love, wisdom, and presence. Even the angels were excited about the gift that was given to humanity. Luke 2:13-14 (NIV) says, “Suddenly a great company of the heavenly host appeared with the angel, praising God and saying, ‘Glory to God in the highest heaven, and on earth peace to those on whom His favor rests.’” Do you need healing, peace, or love today? Open up the gift that was freely given to you and me!!!

PRAY THIS PRAYER:

“Father, I praise you because you are love. Thank you for loving me so much that you gave your only son that after I believed and surrendered my life to Christ, you gave me eternal life. I gratefully declare that I believe that Jesus was born, died, and rose again for me. That’s the true meaning of Christmas. Christ is the ultimate gift, and I exalt your holy name. Forgive my sins of doubt, unbelief, pride, and selfishness. Wash me from all unrighteousness, and fill me with the Holy Spirit. Lord, I ask you to connect my heart to yours so that I may be filled with your desires; teach me your ways so I can please you. I love you. In Jesus’ name - Amen.”

six (6) Sundays to Christmas, as a child those countdowns were horrible slow reminders that Christmas was still way off in the future. But for many of you, the word Advent has no meaning, but in the liturgical church world Advent is a four Sunday season beginning the Sunday after Thanksgiving and ending the Sunday before Christmas Day. James 3: 7 reminds us to be patient until the coming of the Lord. But the other day I heard someone coin the phrase, “waiting, impatiently.”

As I think of Advent

and preparing for the Lord to return, I like the phrase, waiting impatiently, not impatiently in the sense of getting angry, but in the sense of I just can’t wait for it to happen. Like those childhood days of waiting for Christmas to get closer, and closer until finally the day arrived. Advent is a season of slowing down or trying to slow down and make space in our hearts and in our lives for Jesus.

For Jesus, to return but also for Jesus to be here now.

The church sign read: Jesus is coming. Are you ready? Think about this for just

a minute, Jesus is ready. Are you coming? Jesus is here, Jesus has been here, and most importantly Jesus will be here. Come, Lord Jesus. We don’t need to be caught up in the fray so much that we miss the chance to allow Jesus to enter into our very lives.

Jesus is ready; are you coming. This is the season to take time to open our hearts for all that Christ has to offer us. Jesus has made it possible for us to be saved from the sin of the world, Jesus has made it possible for us to live in the promise of eternal life.

Cherryville Area Places of Worship

Jesus truly is the reason for the season, the season of Advent, when we prepare, we welcome, we open our hearts to hear the wonderful message of grace that comes to us through the gift of the Christ Child.

Isaiah 6:6, “For a Child has been born for us, a Son given to us, authority rests upon His shoulders and He is named Wonderful Counselor, Mighty God, Everlasting Father, Prince of Peace.”

We wait, impatiently….

NC products/gadgets filling out holiday shopping lists

Just 20 percent of North Carolinians planned to do their holiday shopping on Black Friday, compared to 40 percent on Cyber Monday, the biggest online shopping day of the year. The poll from High Point University found that 62 percent of N.C. shoppers say inflation shrank their holiday shopping budget this year.

Shipping delays are causing more than half of shoppers concern this holiday as the national supply chain disruptions and shortages factor into their holiday

plans. More than 80 percent say their holiday stress will be about the same or more than 2021.

If finding the right gift is one of those stressors, the North Carolina Chamber of Commerce has a few ideas. Their holiday shopping Gift Guide is a listing of products made in the state including clothing, handbags, toys, gourmet foods, even handmade saddles and crab pot Christmas trees.

“What began in the 1880s as a few textile mills across North Carolina’s landscape has evolved into an impressive, technologically driven industry that See NC PRODUCTS, Page 8A

CHS hoops men are currently 2-1 overall as winter sports season starts

Head Ironmen basketball coach Scott Harrill said the men “…started out the season at a very tough 3A Stuart Cramer team.”

He continued, “The Ironmen could not overcome the strength and size of a much larger (Stuart) Cramer team and lost in their matchup last week. Harrill noted senior Carson Kelly led the way with 21 points, while Darrien Floyd had 11 points and 15 rebounds.

In Lady Ironmen court action at SCHS, the ladies lost 69-36 to the Lady Storm.

However, noted Coach Harrill, the Ironmen “rebounded quickly”, traveling to and taking on, the 2A CHASE High School Trojans, coming away with a 88-83 overtime victory.

“(Senior) Landon Hahn led the Ironmen with 21 points including two big three-pointers in overtime,” said Coach Harrill. “Carson (Kelly) had 21 points as well and was closely guarded after knocking down three-pointers in the first quarter.”

Coach said the Ironmen had a lot of fight in them as they were up against a much taller CHASE team.

“(Darrien) Floyd had 16 points and 15 rebounds to do all he could in the paint against the large 6’7” CHASE big man. “Numerius Good took care of the ball from the point guard position and had nine points and seven assists,” said Coach Harrill, who added, “Nate Bookout came in and gave the Ironmen a big energy lift.”

Bookout had 11 points and six rebounds, said Harrill.

Coach Harrill said, “I am proud of how hard the men play. They are undersized most every game but they play so fast and hard to make up for it. Effort and energy will be a big part of our season.”

The Lady Ironmen played a hard game against the CHASE Lady Trojans and almost got a win, but the Lady Trojans eked a 42-40 win at the last buzzer.

The CHS varsity hoops teams played at home in Nixon Gym against the West Lincoln Rebels on Friday, Dec. 2.

The Lady Ironmen lost to the Lady Rebels of West Lincoln 62-40. The CHS ladies had a number of players who scored and played hard in this non-conference battle.

The CHS Ironmen are currently 2-1 overall, 0-0 in SPC 1A/2A play, while the ladies are 0-3 overall and 0-0 in SPC 1A/2A play.

generates nearly one-fifth of the gross state product and employs more than 1 in 10 of the state’s workforce,” said Gary J. Salamido, President and CEO, NC Chamber. “What’s made in North Carolina really does make North Carolina.”

In the HPU poll, NC respondents said they planned to spend, on average, $859 on gifts, food, decorations and other items related to celebrating the holidays.

“Overall holiday spending, as supported by the HPU poll, will likely be similar to last year,” said Jerry Fox, High Point University associate professor of econom-

ics. “One positive factor contributing to spending is ongoing low unemployment. But this is offset by the negative impact of high inflation and rising interest rates on holiday purchases.”

Nationally, more than 166 million people were expected to shop the weekend after Thanksgiving, according to the National Retail Federation, and the group expects spending to be up again this year. The group credits some online consumer spending for much of the jump in holiday retail gains.

“NRF forecast earlier this month (November) that holiday sales during November and December will grow between 6 percent and 8 percent over 2021 to between $942.6 billion and $960.4 bil-

lion,” their report read.

“Last year’s holiday sales grew 13.5 percent over 2020 and totaled $889.3 billion, shattering previous records. Holiday retail sales have averaged an increase of 4.9 percent over the past 10 years, with pandemic spending in recent years accounting for considerable gains.”

The most recent HPU Poll of 1,015 respondents was fielded by the High Point University Survey Research Center on Nov. 10 through Nov. 17, as an online survey using a panel of respondents recruited and maintained by Dynata with a margin of error of plus or minus 3.2 percentage points

THE SAVIOUR IS BORN

We Celebrate Christmas

Luke 1 The Birth of Jesus Foretold 26 In the sixth month, God sent the angel Gabriel to Nazareth, a town in Galilee, 27 to a virgin pledged to be married to a man named Joseph, a descendant of David. The virgin’s name was Mary. 28 The angel went to her and said, “Greetings, you who are highly favored! The Lord is with you.”

29 Mary was greatly troubled at his words and wondered what kind of greeting this might be.

30 But the angel said to her, “Do not be afraid, Mary, you have found favor with God. 31 You will be with child and give birth to a son, and you are to give him the name Jesus. 32 He will be great and will be called the Son of the Most High. The Lord God will give him the throne of his father David, 33 and he will reign over the house of Jacob forever; his kingdom will never end.” 34”How will this be,” Mary asked the angel, “since I am a virgin?”

35 The angel answered, “The Holy Spirit will come upon you, and the power of the Most High will overshadow you. So the holy one to be born will be called[c] the Son of God. 36 Even Elizabeth your relative is going to have a child in her old age, and she who was said to be barren is in her sixth month. 37 For nothing is impossible with God.”

38”I am the Lord’s servant,” Mary answered. “May it be to me as you have said.” Then the angel left her.

Mary Visits Elizabeth

39 At that time Mary got ready and hurried to a town in the hill country of Judea, 40where she entered Zechariah’s home and greeted Elizabeth. 41When Elizabeth heard Mary’s greeting, the baby leaped in her womb, and Elizabeth was filled with the Holy Spirit. 42In a loud voice she exclaimed: “Blessed are you among women, and blessed is the child you will bear! 43But why am I so favored, that the mother of my Lord should come to me? 44As soon as the sound of your greeting reached my ears, the baby in my womb leaped for joy. 45Blessed is she who has believed that what the Lord has said to her will be accomplished!”

Mary’s Song

46 And Mary said: “My soul glorifies the Lord 47 and my spirit rejoices in God my Savior, 48 for he has been mindful of the humble state of his servant. From now on all generations will call me blessed, 49 for the Mighty One has done great things for me— holy is his name.

50 His mercy extends to those who fear him, from generation to generation.

51 He has performed mighty deeds with his arm; he has scattered those who are proud in their inmost thoughts.

52 He has brought down rulers from their thrones but has lifted up the humble.

53 He has filled the hungry with good things but has sent the rich away empty.

54 He has helped his servant Israel, remembering to be merciful 55 to Abraham and his descendants forever, even as he said to our fathers.”

Luke 2

The Birth of Jesus

1 In those days Caesar Augustus issued a decree that a census should be taken of the entire Roman world. 2(This was the first census that took place while Quirinius was governor of Syria.) 3 And everyone went to his own town to register.

4 So Joseph also went up from the town of Nazareth in Galilee to Judea, to Bethlehem the town of David, because he belonged to the house and line of David. 5 He went there to register with Mary, who was pledged to be married to him and was expecting a child. 6 While they were there, the time came for the baby to be born, 7 and she gave birth to her firstborn, a son. She wrapped him in cloths and placed him in a manger, because there was no room for them in the inn.

The Shepherds and the Angels

8 And there were shepherds living out in the fields nearby, keeping watch over their flocks at night. 9 An angel of the Lord appeared to them, and the glory of the Lord shone around them, and they were terrified. 10 But the angel said to them, “Do not be afraid. I bring you good news of great joy that will be for all the people.

11 Today in the town of David a Savior has been born to you; he is Christ[a] the Lord. 12 This will be a sign to you: You will find a baby wrapped in cloths and lying in a manger.”

13 Suddenly a great company of the heavenly host appeared with the angel, praising God and saying, 14”Glory to God in the highest, and on earth peace to men on whom his favor rests.”

15 When the angels had left them and gone into heaven, the shepherds said to one another, “Let’s go to Bethlehem and see this thing that has happened, which the Lord has told us about.”

16 So they hurried off and found Mary and Joseph, and the baby, who was lying in the manger. 17 When they had seen him, they spread the word concerning what had been told them about this child, 18 and all who heard it were amazed at what the shepherds said to them. 19 But Mary treasured up all these things and pondered them in her heart.

20 The shepherds returned, glorifying and praising God for all the things they had heard and seen, which were just as they had been told.

RECIPES

Chewy Sugar Cookies

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1-1/4 cups margarine

2 cups white sugar

2 eggs

2 teaspoons vanilla extract

1/4 cup white sugar for decoration

• Preheat oven to 350 degree. In a medium bowl, stir together the flour, baking soda, and salt; set aside.

• In a large bowl, cream together the margarine and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then the vanilla. Gradually stir in the dry ingredients until just blended.

Roll the dough into walnut sized balls and roll the balls in remaining 1/4 cup of sugar. Place cookies 2 inches apart onto ungreased cookie sheets and flatten slightly.

• Bake for 8 to 10 minutes in the preheated oven, until lightly browned at the edges. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Rolled Sugar Cookies

1 1/2 cups butter, softened

2 cups white sugar

4 eggs

1 teaspoon vanilla extract

5 cups all-purpose flour

2 teaspoons baking powder 1 teaspoon salt

• In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).

• Preheat oven to 400 degrees). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.

•Bake 6 to 8 minutes in preheated oven. Cool completely.

• Preheat oven to 350 degrees.

• Mix together vegetable oil (yes, 1 1/2 cups of vegetable oil), sugar and eggs. Mix in the flour, baking soda, baking powder, buttermilk, salt and vanilla.

• Pour teaspoon-sized amounts of batter onto cookie sheets, leaving plenty of room in between. These cookies will puff up and get large.

• Bake for 8 to 10 minutes.

Peanut Butter Cup Cookies

1 3/4 cups all-purpose flour

1/2 teaspoon salt 1 teaspoon baking soda 1/2 cup butter, softened 1/2 cup white sugar

1/2 cup peanut butter

1/2 cup packed brown sugar

1 egg, beaten 1 teaspoon vanilla extract 2 tablespoons milk 40 miniature chocolate covered peanut butter cups, unwrapped

• Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan.

• Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Peanut Butter Balls

1 1/2 cups creamy peanut butter

1/2 cup butter, softened 1 teaspoon vanilla extract 4 cups sifted confectioners’ sugar 6 ounces semi-sweet

chocolate chips 2 tablespoons shortening

• Line a baking sheet with waxed paper; set aside.

• In a medium bowl, mix peanut butter, butter, vanilla, and confectioners’ sugar with hands to form a smooth stiff dough. Shape into balls using 2 teaspoons of dough for each ball. Place on prepared pan, and refrigerate.

• Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat.

• Remove balls from refrigerator. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set.

Russian Tea Cakes

1 cup butter

1/4 teaspoon salt

1 teaspoon vanilla extract

1/3 cup confectioners’ sugar for decoration

• Combine all ingredients, mix well.

• Refrigerate dough until chilled.

• Roll dough into 1 inch balls and bake for 15 minutes in a preheated 350 degree oven.

• Once baked, roll while still hot in confectioners’ sugar until coated. Let cool. Lightly dust with more confectioners’ sugar.

Coconut Macaroons

5-1/2 cups flaked coconut 1/4 teaspoon salt 1 (14 oz.) can sweetened condensed milk 2 tsp. vanilla extract

• Preheat oven to 350 degrees. Line cookie sheets with parchment paper or aluminum foil.

• In a large bowl, stir together the flour, coconut and salt. Stir in the sweetened condensed milk and vanilla using your hands

until well blended. Use an ice cream scoop to drop dough onto the prepared cookie sheets. Cookies should be about golf ball size.

• Bake for 12 to 15 minutes in the preheated oven, until coconut is toasted.

Pumpkin Bars

4 eggs 1 2/3 cups white sugar

1 cup vegetable oil 1 (15 oz.) can pumpkin puree

2 cups all-purpose flour 2 tsp. baking powder

1 tsp. baking soda

2 tsp. ground cinnamon 1 tsp. salt

1 (3 oz.) package cream cheese, softened 1/2 cup butter, softened 1 tsp. vanilla extract

2 cups sifted confectioners’ sugar

• Preheat oven to 350 degrees.

• In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy. Sift together the flour, baking powder, baking soda, cinnamon and salt. Stir into the pumpkin mixture until thoroughly combined.

• Spread the batter evenly into an ungreased 10x15 inch jellyroll pan. Bake for 25 to 30 minutes in preheated oven. Cool before frosting.

• To make the frosting, cream together the cream cheese and butter. Stir in vanilla. Add confectioners’ sugar a little at a time, beating until mixture is smooth.

Spread evenly on top of the cooled bars. Cut into squares.

Sugar Cookies

Makes 3 dozen cookies Soft cut out sugar cookie recipe that keeps its shape and dough does not need to be chilled before baking- perfect edges every time!

1 cup unsalted butter

1 cup granulated white sugar 1 teaspoon vanilla extract 1/2 teaspoon almond extract 1 egg 2 teaspoons baking powder 1/2 teaspoon salt 3 cups all purpose flour Preheat oven to 350° F.

•In the bowl of your mixer cream butter and sugar until smooth, at least 3 minutes Beat in extracts and egg.

•In a separate bowl: combine baking powder and salt with flour and add a little at a time to the wet ingredients. The dough will be very stiff. If it becomes too stiff for your mixer turn out the dough onto a countertop surface. Wet your hands and finish off kneading the dough by hand.

•DO NOT CHILL THE DOUGH. Divide into workable batches, roll out onto a floured surface and cut. You want these cookies to be on the thicker side (closer to 1/4 inch rather than 1/8).

•Bake for 6 minutes for soft cookies or 7-8 minutes for crisper cookies. Let cool on the cookie sheet until firm enough to transfer to a cooling rack.

NOTES: You can use salted butter (just leave out the 1/2 teaspoon salt). If you must chill the dough just leave it on the counter top for 10 minutes before rolling or work the dough with your hands for a few minutes. Lemon flavoring may be substituted for the almond flavoring. Truffles can be kept in an airtight container in the fridge for up to 5 days.

White Chocolate

Oreo Truffles

40 Oreos

1 cup cream cheese, softened 2 cups white chocolate, melted

• Using a food processor, pulse the Oreos into fine crumbs. Remove 1/4 cup of the crumbs and set aside.

• Mix the cream cheese into the remaining crumbs. The mixture will be sticky. Roll the mixture into 1 inch balls, and place them onto a baking tray lined with parchment paper. Freeze the balls for 30 minutes.

• Dip each ball in the melted chocolate, place back on the baking tray, and sprinkle with the reserved Oreo crumbs. Refrigerate for 1 hour, or until firm. Keep refrigerated for up to 5 days. Keep in the refrigerator and serve chilled, so the chocolate won’t melt.
