Art of Calligraphy I: Italic Discover the beautiful art of calligraphy using a broad-edged dip pen that gives sumptuous thicks and thins to the letters as you write. In this beginning class, learn the Italic style that can be used to create elegant invitations, place cards, stunning envelopes and letters or a special poem to frame. Viking Weave Jewelry - Bracelet Viking weave is an art form that has been used for centuries. Wire is hand-woven around a mandrel and then pulled through a draw-plate to secure the intricate weave. Completed pieces are elegant, durable and oneof-a-kind. It’s as easy as sewing or knitting. Once you have learned the technique, you’ll be making jewelry pieces for friends and family for years to come. You’ll Viking weave! leave the class with a completed bracelet in gold, silver or copper. Painting for all levels
Beginning Oil Painting Explore the lusciousness of oil paint. During this five-session class learn the beginning processes of oil painting. We will explore the paint through value studies, color studies and one developed final painting. Students will learn how to control oil paint through working observationally with expert guidance. Stained Glass & Copper Abstract Art Design copper wire into a simple shape, then use stained glass pieces, nuggets, beads and more to create an abstract design inside. All tools are supplied by the instructor including a hot soldering iron. Learn the ancient art of pottery Pottery - Wheel Throwing Learn how to throw bowls, vases and more as you master the basics of wheel throwing. Come prepared to have fun and get dirty! The instruction and demonstrations will focus on the fundamentals of pottery wheel, glazing, and firing. Pottery Wheel Throwing Intermediate Skills Series Stained glass and copper beautiful Beginner Stained Glass Workshop Perfect workshop for those with little or no experience working with stained glass, or who need a refresher! Beginners will learn basic copper foil techniques from cutting to assembly. The first night focuses on choosing a pattern and discussing equipment needs and projects/interests. Large windows excluded due to space limitations. Stained glass (approximately $25), specialty tools and materials may be purchased from the instructor. Tool kits are available for use during the class only. One free session of Open Studio included in the fee.
Learn a different intermediate pottery skill each night! Week 1: Pottery with handles such as mugs, cups and pitchers. Week 2: Trimming, making and attaching handles, and surface texture techniques. Week 3: Lidded forms, sugar bowls, jars, canisters and teapots. Week 4: Finishing and trimming lidded forms. Week 5: Japanese tea bowls. Week 6: Underglaze and glaze applications and scraffito. Victor Albrecht’s Dance Classes ALL NEW DANCE CLASSES! Victor Albrecht is a “mature adult” with a young outlook! He has been teaching dance classes for 20+ years and in dozens of communities. Victor keeps classes informal and fun! He has mastered more dance steps and moves than he can count. He has a passion for dance and a love of teaching. Food Bake ‘n Take Holiday Cookies: Adult-Only Class Get all your holiday treats made in one day! We’ll make dough from scratch and bake up: Peanut Butter Blossoms, Snickerdoodles, colorful Sugar Cookies as well as no-bake treats including Rum Balls and Chocolate Suckers. Students will work in teams of 4 and each person will take home approximately 10 dozen treats and a packet of recipes. Offer it again!” Learn how to make the classic honey-walnut phyllo dough pastry baklava. Demae, “The Greek Lady”, host of the NWCT public access TV show “It’s OPA Time!”, shares her YiaYia’s (Grandmother’s) special family recipe and secret to making the best baklava ever. Sample Demae’s baked baklava as you prepare your own in class. You will bring home your dish to finish; it will require 30-45 minutes baking time and 1 cup of honey. Don’t worry! Mia will teach you Asian cooking Asian Fusion Do you crave the fragrance and flavors of Asian-inspired cuisine? Stop ordering takeout and let our instructors teach you how to create authentic Asian dishes. Learn the secrets of making delicious dipping sauce and salad dressing. Bursting with flavors and color, this menu will satisfy any cravings! We’ll make: Egg Rolls with pork, bean noodles, mushroom, carrot, and onion filling; Dipping Sauce; Tofu Lettuce Salad with ginger dressing; to finish — Deep Fried Banana and Chocolate Stick (banana wrapped in egg roll wrapper, fried and dipped in chocolate), served with vanilla ice cream. Learn to create the rolled Norwegian cookie, Krumkakes made with cream, butter and cinnamon or sometimes flavored with vanilla. Italian Pizzelles are also baked on the top of the stove using an iron but are a flat, aniseflavored cookie or they also may be flavored with vanilla. The chewy, almond Swedish Sandbakkelse are delicate golden brown in color and are baked in tiny tins to resemble tarts. Finally, we will master deep fried Rosettes – the exceedingly fragile, paper thin Scandinavian delicacies dusted with confectioners’ sugar. You can make the perfect cake
Make the Perfect Cake Nancy’s Burgeson’s cakes win prizes at county and state fairs. Learn from her experience! Learn how to mix, bake, trim and frost some of her favorite cakes. Together, we will prepare: Chocolate Caramel Pecan cake, Bailey’s Irish Cream cake, and Red Velvet with REAL red velvet frosting. Each student will go home with a completed 8-inch iced cake, plus other samples! Kids and parents and cookies… what a terrific combination! And nothing is better than making and baking an assortment of yummy chocolate chip cookie variations. Note that officials in the food industry estimate that half of all homemade cookies are chocolate chip! We’ll make 4 fantastic cookie recipes – Almost Mrs. Field’s Chocolate Chip, Banana Chocolate Chip, Chocolate with White Chips and Toffee Chocolate Chip. Then we’ll also make and bake Chocolate Mint Cookies, Peanut Butter Cookies, Sugar Drops and Rolled Sugar Thins; with the kids painting original designs on them! Who doesn’t love truffles? Truffles! Chocolate Candies for All Occasions Nancy has taught hundreds of people to make these chocolate delicacies and they are so easy, anyone can make them. Truffles make wonderful gifts, if you can part with them. Each student will take home an elegant box of 15-18 truffles. We will make 5 different recipes in this class. $12 supply fee is payable to instructor at class. Optional truffle kits available for purchase for future candy making projects. Bring your child or grandchild for a night out in the kitchen. Cooking with kids is not only fun but it’s a great way to improve their reading and math skills. Together, we’ll cook up kid-friendly foods including homemade Calzones, Peanut Butter and Jelly Muffins, Sloppy Toms and Apple Turnovers. Plus, you will bring home a packet filled with more recipes to try together at home. The fine print: Boys and girls ages 6 and older are welcome. Registration fee is 1 parent + 1 child. What’s the difference between the PSAT and the SAT? The PSAT (Pre-Scholastic Assessment Test) is a “practice run” for taking the real SAT. Colleges do not see scores from the PSAT. Typically taken by sophomores and juniors, the PSAT can be important because juniors who achieve a good score on the PSAT can qualify for a National Merit Scholarship. The SAT (Scholastic Assessment Test) is taken by juniors and seniors and is used by colleges/universities to help make admission decisions.

Online Learning for ACT and PSAT/SAT Is your student too busy to sit in a classroom to prepare for the ACT or PSAT/SAT? Consider an online prep class with Ed2Go! SAT/ACT Preparation - Part 1 Both the ACT and the SAT contain verbal and math question types. SAT/ACT Preparation Part I will give you all the information you need to do well on the verbal questions of the ACT and the new SAT. The ACT verbal sections are called the Reading Test, the English Test, and the Science Test. The Reading Test and the English Test assess your knowledge of English usage, grammar, and reading comprehension. The Last Keeper at Split Rock Here’s what students said last year: “Just fantastic!” “Stories were really interesting and fun to hear.” “Loved his enthusiasm and breadth of knowledge.” Mike Roberts turned off the light at the Split Rock Lighthouse at the end of the 1968-69 shipping season. Little did he know that the light would never shine again for the mariners of this iconic Lake Superior National Landmark. Mike will enthrall you with the stories from his U.S. Coast Guard experience, personal search and rescue stories, and the sinking of the Edmund Fitzgerald in November of 1975. Technology Meet Your Technology Instructors! Andrea Lee Formerly a 7th grade English teacher, Andrea Lee has taught adult education computer classes for the last 5 years. She greatly enjoys helping adults better utilize and understand the wonders of today’s technology. Ron Timm Ron Timm, Ph.D., has been a professional photographer for 20 years, is an international photography judge, has been a teacher for over 20 years, is president of the Camera Council, and is director of a photography judging school.

Sharon has been teaching Community Education classes for two decades. After earning her Master’s degree, Sharon did cytogenetic research at the University of Minnesota. Her interest in computers began when the first personal computers came on the market in the early 80s. She completed the MIS program at the University of Minnesota.
This class is a follow up to the Computer Basics: Part 1. A review of the basics of function and operation of the personal computer will start the class followed by exposure to Microsoft Word, using email including attaching photos and files, creating an email address and address book, computer safety, and how to use the Internet to do research, view videos, watch television, banking, and how to back up files. The computer basics class or some computer experience is a prerequisite for this class.

Haven’t exercised in a while? Coming back from an injury (and have doctor’s approval)? Pilates Core is for you. Modifications will be available for all levels of fitness! Pilates improves core strength, posture, flexibility and correct spinal alignment. We will use balls, bands and other tools but you need only to bring a yoga mat and bath towel. Joan holds full Stott Pilates Certification (was trained by Moria Stott Merrithew), has 28+ years of teaching fitness and applies her RN Orthopedic background to her classes. WISHES Youth Enrichment The WISHES Youth Enrichment program offers a variety of after school, evening and weekend enrichment opportunities for elementary and middle school students. Classes are held at each of the elementary schools. Students can attend classes at any of the schools. Transportation is not provided. Class selections include arts and crafts, science, engineering, music, drama, dance and many others. WISHES catalogs are distributed 3 times per year (fall, winter/spring and summer), and are sent home with all elementary students. Adult Basic Education GED Preparation Attention GED testers! There are only a few months left to take the current version of the GED test. If you started your GED test or want to pass it before the new test goes into effect January 1, 2014, the time to prepare for it is now! Once the test changes, you will need to take it in its entirety; any previous test scores WILL NOT transfer. There is still time to pass the test in its current form. Prepare for your GED in a student-centered, individualized class to meet your learning needs. Classes are open to students who are 16 years or older and not enrolled in high school. Payment is made directly to the instructor at the first class. Are you in? If you register online, you will know immediately if you are in the class; provide your email address when setting up your account and we will email confirmation and a receipt. If you register by mail, assume you are enrolled unless we notify you. Although most classes run, we reserve the right to cancel classes due to enrollment. Refund Policy Full refunds are given when Adult Enrichment cancels a class. Unless noted, refunds (less $5 cancellation fee) will be given when an enrollment is withdrawn at least 3 business days before the start of the class; 7 days for cooking classes. Note that other Community Education programs have separate refund policies. Facility changes: For reasons beyond our control, it is sometimes necessary to change facility, location, time and date. Inclement weather information: If school closes during the day due to weather, Community Education will cancel all activities. If school is not closed, assume classes are “on” — no refunds if classes commence. Announcements are broadcast over WCCO-AM radio.
