∞ Spray an 8-inch cake pan with cooking spray or brush with oil. ∞ Line bottom of pan with a round of parchment paper to prevent sticking. ∞ Combine the ZEST of one lemon, LEMON JUICE, and OLIVE OIL in a small bowl or measuring cup. ∞ In a separate bowl, add the dry ingredients and stir to combine. ∞ Place EGGS and SUGAR in a stand mixer. Beat on med-high until light in color and doubled in volume. You can also do this by hand using a whisk. ∞ With mixer running, slowly pour the LEMON and OLIVE OIL mixture into bowl. Avoid hitting the beater by pouring the liquid down the side of the bowl in a slow but steady stream. ∞ Reduce speed to low and add dry ingredients. Mix until combined. If making by hand, use a spatula to fold in dry ingredients. ∞ Place the cake in the center of the oven and bake for 25 minutes, or until the middle of the cake bounces back with a gentle touch. ∞ Just before the cake is finished baking, heat LEMON JUICE and SUGAR for lemon syrup until hot. ∞ Spoon syrup evenly over the surface of the cake once it has been removed from the oven. It will naturally gravitate towards the center so be mindful of getting plenty around the perimeter of the cake as well. ∞ Allow to cool for 30 minutes or so before running a small knife between the edge of the cake and the pan. Invert the pan and allow the cake to release onto your fingertips being as careful as possible to not tear the syrup soaked surface. ∞ Return the cake to the cooling rack and allow to finish cooling completely before cutting. ∞ Cut cake in 6 wedges and dust with powdered sugar just before serving.
