Conditioning young athletes
I’ve been back and forth about writing on this topic for some time. Not because of the debate it’ll create, but because of the noses it may bend. Let me start by saying that there are always exceptions to every situation, but in what I’ve come across it’s almost as rare as the fabled unicorn. It is the topic of youth athletics and the boundaries—or lack thereof—of the individual sports coach. By James Campbell Everything Men Magazine
I’ve tried to coach; my love of the game I felt would lead to success. Unfortunately, it did NOT! I learned that I’m not a very effective coach of the game, in this case, football. A few years later I’m building stronger people, from middle schoolers to the mature adult. Now, let me point out one thing about high school boys particularly. There is one simple point that will take away from some programs’ “successes” and that is that at those ages the athletes will get stronger and faster each year on ACCIDENT! This happens 100% due to their bodies and the hormones changing within. So, imagine if the workouts provided were properly guided and charted accordingly with progressions. What if the programming took into account that the athlete’s first love is football with college potential but that same athlete has a basketball game that night at John Smith High? See, programming is EVERYTHING for these young hopefuls. By properly I don’t mean opening up the school’s weight room and sitting in the office while these athletes come in with their iPods or smartphones, pop in some earbuds, and walk out of the weight room 40 minutes later. At that age, headphones should be outlawed for athletes so the focus can be on proper technique and what it feels like. And, a good sweat is not an indicator of a successful workout unless it’s simply to burn calories! I’m not saying that some of these coaches don’t have good
12
intentions because I believe that their intentions are in the right place. It’s the knowledge that is missing. Most of these coaches order a book/program like “Bigger, Faster, Stronger” and try to implement what they perceive, missing some key pieces. That’s only the start! First, consider the population of our area. The student athlete pool around us is small and they’re generally the same students from sport to sport as the year passes. Now consider that each sport has a different coach and each coach is focused on making THEIR sports team better. I don’t blame them here—it’s a gauge of success, is it not? The problem is that in basketball season the football coach is after them to be in the weight room and the track coach is after them for sprint workouts and the athlete is left trying to figure out whom to please. What if ALL coaching staff was on the same page? Imagine for a second if one person was in charge of ALL programming to make each ATHLETE a betterperforming ATHLETE!! Improving performance across the board for what each individual athlete needed, giving guidance on TECHNIQUE first and building a proper foundation for the future in and beyond the high school world. Using cutting-edge programs instead of the one that was the go-to when I was in school 20 years ago. I’m not a coach and so I don’t pretend to know how to guide an athlete on the sports field, but I can walk through the importance of heart in the game, which is universal. So I don’t pretend to know how to implement techniques on the field. I think it’s about time these coaches stop pretending to be strength and conditioning specialists. Coaches should coach, not train . . . . Trainers should train not coach . . . .

Steps to a Healthier You
Across the world, men die an average six years younger than women and for reasons that are largely preventable. That means it doesn’t have to be that way. We can all take action to live healthier, happier and longer lives. Here are five easy ways to take a step toward a longer, healthier life. 1. Make guy time. Stay connected. Your guy friends are important and spending time with them is good for you. Catch up regularly, check in and make time. 70% of men say their friends can rely on them for support but only 48% say that they rely on their friends. In other words, we’re here for our friends, but worried about asking for help for ourselves. Reaching out is crucial.
2. Have open conversations. You don’t need to be an expert and you don’t have to be the solution, but being there for someone, listening and giving your time can be life-saving.
3. Know the numbers. At 50, talk to your doctor about prostate cancer and whether it’s right for you to have a PSA test. If you are black or have a father or brother with prostate cancer, you should be having this conversation at 45. Know your numbers, know your risk, talk to your doctor.
4. Know thy nuts. Simple. Get to know what’s normal for your testicles. Give them a check regularly and go to the doctor if something doesn’t feel right.
5. Move. Move. Move.
Add more activity to your day. Do more of what makes you feel good.

Ready to swing a golf club? You’re in the right place! By Melissa McCance, Everything Men Magazine
W
ith more public courses than any other state in the nation (over 850 of them, according to Forbes Magazine), Michigan offers resident and visiting golfers a wide selection of places to enjoy the game they love. (Or, love to hate, depending upon how the day’s round goes!) The list below is not exhaustive, but it gives an idea of your choices if you live in our area. Some public courses offer memberships that can save you money if you golf frequently, so be sure to look into that when you find a course you love to play. (Note: Some courses have more information provided simply because there was more available!)

Special Needs Trusts Having a child with disabilities can be worrisome and daunting, but it gets even more complex when it comes to protecting the child’s government needsbased benefits and providing for the child’s needs. Fortunately, there are opportunities available to lessen these concerns through special trusts. By Timothy Dixon Simply Hers Magazine
Timothy E. Dixon Licensed Michigan Attorney Law Office of Timothy E. Dixon 27 N. Broad St. Hillsdale, MI 49242 Ph: (517) 437-4070 Fx: (517) 437-4062

These special trusts are often referred to as a special needs trust and/or supplemental needs trust. A special needs trust is an irrevocable trust that is designed and implemented to manage assets effectively for someone with disabilities who is receiving government needs-based benefits such as SSI or Medicaid. The funds are managed by a trustee and distributed for the beneficiary for commodities not provided for from government benefits. The trustee is restricted as to how he or she can use the funds, and the funds are still taxed. Some of these items may include house cleaning services, repair services, pets and pet supplies, medical expenses and private counseling not covered through Medicaid, a vehicle, phone services, etc. It is crucial the special needs trust is set up properly or it could result in a loss of the disabled individual’s government needs-based benefits. There are two types of special needs trusts: first party and third party special needs trusts. The first type of special needs trust is known as a first party special needs trust. This type is considered selfsettled regardless of who sets it up because the assets of the beneficiary establish it. These trusts are often established with unexpected or unplanned for funds from an inheritance or from a court action settlement. Regardless of where the funds originate, these trusts
can only be set up before the disabled individual turns 65 years old. The trust must also contain a provision that requires Medicaid reimbursement for all the benefits provided by the government to the disabled individual upon his or her death. The second type of special needs trust is known as a third party special needs trust. In contrast to the first party trust, this type is established by a third party with funds that do not belong to the disabled individual. The third party could be any relative or friend. The benefit of this type of trust is that the remainder of assets does not need to reimburse the government upon the disabled individual’s death. This is a huge benefit because the funds can be passed to whomever the settler choses. Because the trust owns the funds, they are not available to any creditors that may be out there for the beneficiary because the funds were never the beneficiary’s to begin with; it was the donor’s money, who could have been a parent or grandparent. Another benefit with this type of special needs trust is that there is no age limit as in the first party special needs trusts; these can be established at any age. There are benefits to each type of trust, though, and it is important that you speak to an informed professional who can help make this part of your planning painless and successful. Dealing with disabilities is tough enough as it is, so take the steps necessary now to secure your loved one’s financial future.

time to Get Into
hunting shape
by Drew YoungeDyke
I
hear it all the time: I don’t need to be in shape to hunt. If you’re referring to releasing the arrow then you’re right. However, if you include hiking into the woods to set up treestands or retrieve your deer, then it can be a different story. If you want to get in shape for hunting season there are a few requirements. You need motivation. The “why” is important to sticking to a fitness plan. You’re not going to do it because society says you should look a certain way; after all, we’re hunters. We wear camo as fashion. It’s about performance: hanging tree stands, hiking over deadfalls, and bagging that buck. Being fit will reduce the barriers to everything you do and allow you to do it season after season as you age. You need a plan. The right plan can help you make fitness a habit. Start simple. When I started getting back in shape sixty pounds ago, my plan was to run one mile on a trail near my house and keep it up until I was running two miles, and so on. Your plan should be based on your health, capacity, time, and fitness level. Consider checking out a fitness class or gym. Train To Hunt is a variation on CrossFit. It incorporates the same functional fitness philosophy but with bowhunting as the function. Created by western mountain hunters, its movements build leg strength, endurance, core, and total body strength using movements that mimic hunting situations. Most CrossFit affiliate gyms offer a free introductory class to see if it’s right for you. Workouts are scalable to every fitness level.
22 20
You need a community. Surrounding yourself with people who share similar goals is key. I was intimidated when I went to my first workout at Treetown, but that disappeared fast. Everyone was supportive and the fittest people in the gym were the most encouraging to the least. The same can be said of competitors at Train To Hunt Challenges. After three competitions, they’re like family and training for competitions keeps me on track year-round. The Michigan chapter of Backcountry Hunters & Anglers hosts “Hike to Hunt” days in the off-season where you can strap on a pack and climb a hill with some fellow hunters. Social media such as hunting fitness groups and apps like Strava that allow you to track your runs can also help.
F
inally, what you eat is important to achieving your fitness goals. Eating healthy means something different to everyone. What has worked for me is emphasizing lean protein and vegetables, and reducing carbohydrates, sugar, and dairy. There’s no secret to getting in shape for hunting. It’s about doing the work and being smart about what you eat. As is the case with most things in life, the reward is commensurate with the work required to achieve it. I can vouch the same holds true for venison.

Over a hundred years of experience show up at Fieldstone Veterinary Care on Tuesdays. As Dr. Gene Sellers (usually in the morning) and Dr. Lauren Smith (usually in the afternoon) split veterinary duties. They combine years of experience with the latest tools in ultrasound, laser therapy, digital X-rays and in-house lab, plus a great staff of licensed veterinary technicians and assistants. There isn’t much Dr. Gene Sellers hasn’t seen in over 50 years of veterinary practice, so his diagnostic skills are very fine-tuned. A native of Reading, he started practice in Pioneer after graduating from MSU in 1965. He’s been a fixture at the Hillsdale County fair as a world-champion horse-puller. About halfway through his fifty years of practice, he switched from mixed to small animal practice. Dr. Lauren Smith, a 1968 Michigan State veterinary school graduate, lives and farms in Hillsdale County close to where he grew up. After vet school, he started a practice in Kalamazoo which he ran with a partner. He sold the practice in 1988 and returned to the Hillsdale area where he had a small animal house call practice for many years. In 2017, he started working at Fieldstone Veterinary Care on Tuesdays and helps fill in when Dr. McGonigal is away. He and his wife have a cockapoo/yorky mix companion named Willie.

Becker & Scrivens Concrete opens second location Story by Sarah Gray • Photos by Synergy Photography
The busy season for Aaron Scrivens and Becker & Scrivens Concrete is about to get much busier. The company is in the process of opening a second location in Montpelier, Ohio. This will be the first time the company has expanded to a new location since the business began in 1940. Becker & Scrivens Concrete is a fourth generation business started by Aaron’s great grandfather Leonard Becker. Aaron started working at the company while he attended Hillsdale High School. He then went on to get an accounting degree from Hillsdale College. Soon after graduation, he decided to make his employment at the family business permanent. He’s worked just about every position at the company starting out in the yard and moving into the office for scheduling and keeping the books. Since he has taken over as president, his role has become more defined: currently, working out all the details of opening a new location.
Hillsdale Hospital’s hospitalist Even after almost 80 years in the business, Aaron says program customers still can be confused about exactly what kind of services Becker & Scrivens Concrete provides. “Many provides people still think we are contractors,” he says – which they quality care are not. “We are service providers. We supply the product.” He likens them to a lumber yard. Customers come there 24/7 to get lumber but the employees who work there are not going to build the house for the customer; they are only going to supply the lumber. Becker & Scrivens works the same way. Customers will get a high quality concrete delivered, but the employees are just there to deliver. “We will help the customer as much as we can to ensure that their project is a success,” Aaron says.
Materials used at Becker & Scrivens are all regionally sourced. Cement is milled in Alpena, mix admixtures come from Pioneer, Ohio, and aggregate is locally mined. Due 24
to the nature of the product, Becker & Scrivens services a 25-mile radius of the Hillsdale and Montpelier areas. This gives them ample time to arrive at the site and unload the product. “Concrete is a perishable product,” explains Aaron. While the company is open year-round, the busiest times are from mid-April to mid-November. This year, with the addition of a new location, the company’s workload will increase even more. Aaron says he looked to expand to
another location several years ago but nothing really panned out. Then, this location became available. He is planning on extending Becker & Scrivens quality and service to Montpelier. “We want to carry on the same thing we do here,” he says. “We strive to make what can be a challenging job go as smoothly as possible.” He hopes to be operational by April 1. Aaron will be splitting his time between both locations and some of the current staff will also work in Montpelier. Four of the company’s 15 trucks will go to the new location. Aaron knows opening a new location requires many details to be in place, but he is confident there is a good market and is looking forward to learning more about the area and its needs. “The market is pretty similar,” he says. “There are many great companies and a solid customer base.”
Becker & Scrivens is a leading ready mix concrete supplier in the area and is able to meet customers’ needs in all areas including industrial, commercial, residential, agricultural, and governmental. Their fleet allows them to complete many types of projects including sidewalks, concrete patios, and driveways. “We do a little bit of everything,” he says. With a rural community like Hillsdale County, there
are many different types of jobs the company is a part of including recently completing work at the Hillsdale Municipal Airport which was their first project with the Federal Aviation Administration. In the last few years, the company also acquired a form for a precast concrete storm shelter which is important to think about as the story spring season approaches. The seven-foot tall structure is ideal for any home without a basement and can be buried right next to the customer’s house with only the roof and the slanted steel door exposed. In addition, Becker & Scrivens also sells precast concrete steps and septic tanks.
Giving back to the community is just one way Becker & Scrivens has earned the trust of the community over the years. Quality of service and the staff that works for the company has solidified its positive reputation. “The employees are what make the company,” Aaron says. “They are the face of the company.” He says that he enjoys working with the staff and, being a part of a company for so long, they no longer feel like employees. “It becomes like a family.”
A newer industry popping up from their business is decorative concrete. Mostly used outdoors, decorative concrete consists of stamps and is often time colored to give a unique look. The company sells all the supplies for stamped concrete and can color concrete for their customers.
Aaron is married to his wife Veronica and they have two children, Jorey and Marcus. For more information about Becker & Scrivens Concrete call 517-437- 4250, visit their website www.beckerscrivens.com, or find them on Facebook.
Along with serving Hillsdale County and surrounding areas with concrete for more than 70 years, Becker & Scrivens also knows the importance of giving back. Over the years they have contributed to many non- profit organizations including the Hillsdale Rotary’s Sandy Beach project, Domestic Harmony, Kimball Camp, and Camp Michindoh. They have also sponsored local teams, schools, and race cars. “It is important,” Aaron says about giving back to the community. “It’s the right thing to do.”
He admits there are challenges every day in his job but he and everyone at Becker & Scrivens strive to “make sure everybody is successful.”

lAURA LOVEBERRY
WWJD-----What Would Judas Do? What would Judas do? Sheesh! This catches me off guard. I heard a radio interview clip where an author wrote a book with this provocative title.
By Laura Loveberry Everything Men Magazine Elementary School Assembly Presenter, Author, Caricaturist splatterpainthero.com Inspirational Speaker, Sign Language Dramatist lauraloveberry.com
Boy, I am grabbed by the question of “What would Judas do?” We all hear “What would Jesus do” and attempt to live like Jesus being loving and sharing God’s love with those we meet. It is a good goal. But “what would Judas do” jerks my mind around to a down-side-up thinking. Judas has the most tragic of stories in the Bible. It is catastrophic to ponder his betraying decisions, his conflicted mind, and his tragic end. But, I challenge myself to contemplate what Judas would do today based on the record of what he actually did in biblical times. Judas was part of the inner circle of 12 disciples and an outward follower of Jesus. He was trusted by the band of brotherhood to be the treasurer and was present at important events in biblical history. Here is the inside issue. Judas was a miser with money, greedy, and resorted to stealing. After the facts, we can surmise Judas as a professor of faith but not a possessor of faith. In the Bible we are warned about people who, “. . . having a form of godliness but denying its power. And from such people turn away!” 2 Timothy 3:5 NKJV Bible. Judas had a heart problem.
26
Judas looked honorable on the outside, but inside his heart, he was a liar, deceiver, and hypocrite. Check out this quote referring to the time Mary poured costly oil on Jesus’ feet: ““Why was this fragrant oil not sold for three hundred denarii and given to the poor?“ This he said, not that he cared for the poor, but because he was a thief, and had the
money box, and he used to take what was put in it.” John 12:5-6 NKJV Bible. Judas hung out with the Jesus group, but he did not truly have their same inward convictions. Judas eventually fell to total demise and betrayed Jesus with a kiss of death. How does the “what would Judas do” question apply to us? I believe it is a treacherous warning for our hearts not to be divided. Do not be a hypocrite. Let’s heed the warning. Do not just “do church” on Sunday morning and live separate from God in your inner being. Do not be fake news. No one needs to be like Judas and tread a dreadful path straight to hell. Seriously, let’s make certain our faith is the real deal, genuine, living for Jesus, and full of sincere compassion for the One True Living God. The following may be an example of how Judas would act today. Judas would walk into our church dressed up and all spiritual on the outward appearance. He might raise his hands in worship service, but his heart would not be truly lifted to the Lord. He just copies others to fit in with the “in” group. He may give a little of his money to mission work but he would hold back giving as much as God prompted him. He probably would not trust the leadership in church as God-guided, and he may cause turmoil in the congregation by doubting and undermining the Biblical process of leadership. Judas would not be genuine within relationships because he was faking spiritual convictions. This empty shell fakeness of uprightness can appear religious, but is downright wrong. Let’s be genuine in our faith walk journey with Jesus. Drop the fake faith. DDWJWD. Don’t do what Judas would do.

SS Badger
#1 30 30
If you’d rather be a passenger and not a paddler, the iconic SS Badger is still in operation. In February 2016, the ferry was named a National Historic Landmark. For more than 60 years, the coal-fired passenger steamship has provided a fun passage across Lake Michigan. The fourhour cruise transports people along with their cars, buses, bicycles, RVs, and trucks from Ludington, MI, to Manitowoc, WI. While on the ship, passengers can enjoy Badger Bingo, free movies, an arcade, food service, and two bars. For a more romantic experience, take the night cruise and sit on the deck to watch the sunset and sparkling constellations.

offers an exciting kayaking program called All About Water. The tour starts at North Bar Lake and from there the group paddles about 1.5 miles to the Pierce Stock Scenic Overlook where kayakers are encouraged to climb as much of the 450-foot dune as they can before paddling back to North Bar Lake. If you get the chance to paddle to the south end of the lake, make sure to look for the bald eagle family that lives there. Of course, you can see many of the features without getting in a kayak but seeing the dunes from the water is a truly unique experience.

Spring is morel season in Michigan! Morel enthusiasts have their favorite hunting grounds but for first timers it’s worth it to check out the DNR’s morel map. Each year the DNR releases a map pinpointing locations that it believes will have the best morel hunting. Morels grow in forested areas, typically where there had been a fire the year before. The mushrooms have unique appearance with their long, honeycomb-like cone and distinct aroma that gourmet chefs love so much. Save the date — Saturday, May 12th. 22nd Annual Osseo Heritage Day & Great Mushroom Hunt 38 34
Morel mushrooms often are found in locations where sizable fires (more than 10 acres) occurred the previous year. The mushrooms only will grow where there was a forested covertype; grass or other ground covers will not yield morels. Additionally, morel mushrooms are more likely to grow in burned areas where jack, white, or red pine once grew. This map and information provide locations where fires greater than 10 acres in size - from either wildfires or prescribed burns - occurred in 2016. Please note that this map may provide details on the covertype that was burned; it’s up to the user to investigate whether morel mushrooms will grow at any location included in the map. A location’s inclusion on this map does not mean morels will be at the area identified. Additionally, the Michigan Department of Natural Resources is not responsible for the incorrect identification of morel mushrooms by an individual.

Big Spring
#4 36
Visit the Big Spring this spring! You don’t have to know how to pronounce Kitch-itikipi to appreciate the beauty of Michigan’s largest fresh water spring. Two hundred feet across and 40 feet deep, Kitch-iti-kipi gushes over 10,000 gallons of crystal clear water per minute. Float across the spring on the self-operated raft and look straight down to the bottom of the pool where you will see trout suspended in nothingness and ancient tree trunks framing the edges of the spring.

It is just about time to bust out of winter and take on spring! Besides warmer weather, sunshine, and green grass, spring brings us National Beer Day on April 7! And really, what better way to celebrate spring fever than with a nice, refreshing Michigan craft beer. With the mitten state ranking fifth in the nation for the number of breweries, microbreweries, and beerpubs, there is no shortage of opportunities to quench your thirst across Michigan. First up on the list is Beer City USA. Popular for its craft beer, the Grand Rapids area has more than 20 breweries each with its own twist. From Founders – named the the 3rd best brewery in the world by ratebeer.com – to HopCat -- voted number one brewpub in the United States by ratebeer.com – Grand Rapids has plenty of must-stop venues for beer lovers. To get the most of your visit, travel along the Beer City Ale Trail on one of the four area tours. Rather stay in one spot? On June 2, just outside of Grand Rapids at the Hudsonville Fairgrounds, is the annual event Beer City Spring Fest. Beer City Spring Fest offers good food, great beer, and fun entertainment. On the other side of the state, travel to Michigan’s very own Little Bavaria. Germans are known for their love of this frothy beverage, so it is no surprise Frankenmuth is host to Michigan’s largest sampling event. On May 18, the World Expo of Beer 2018 will feature nearly 300 beers from all over the world. With such diversity, every member of your group will be sure to find a beer they love. In the heart of Capital City, Lansing combines craft beer with America’s favorite pastime on Saturday, April 28 for the 5thAnnual Beerfest at the Ballpark. Held in the home stadium of the Lansing Lugnuts, this event takes advantage of the large venue and brings in more than 50 Michigan breweries and cideries to showcase 200+ beers and ciders. Can’t make the Beerfest? Bring the family out for a Lugnuts game this summer! With the HopCat in Midtown and other breweries including Atwater Brewing, Motor City Brewing Works, and Detroit Beer Company it is obvious that Detroit knows beer. Explore the scene on a Motor City Brew Tour available by bus, bike, boat, or foot to breweries throughout the city. Heading across the Bridge? Find a variety of breweries in historic buildings and amongst beautiful spring scenery throughout the Upper Peninsula. Places to check out include The Vierling, Blackrocks Brewery, Ore Dock Brewing Co., Keweenaw Brewing Company and Tahquamenon Falls Brewery.

Grilled Margherita Pizza Dough 1 3/4 – 2 1/4 cups flour 1 envelope Fleischmann’s Pizza Crust Yeast 1 1/2 teaspoons sugar 1 teaspoon oregano 3/4 teaspoon garlic powder 3/4 teaspoon salt 2/3 cup very warm tap water (about 125oF.) Pizza 3 tablespoons olive oil 3-4 tablespoons canola oil for brushing 8 oz. fresh buffalo mozzarella, sliced thin 1/2 cup fresh whole basil leaves 1 large tomato, sliced thin olive oil for drizzling In a large bowl, combine 1 cup of flour, yeast, sugar, oregano, garlic powder, and salt. Add water and olive oil. Mix ingredients together with a wooden spoon until well combined, about 1 minute. Gradually add 1/2 cup of flour at a time until the dough forms into a soft ball. It will be slightly sticky, but add additional flour if needed. Preheat your grill to medium. Turn dough out onto a lightly floured surface and knead for about 4 minutes or until smooth and elastic, adding additional flour if necessary. Cut dough in half and form into two circles about 6 inches in diameter. Place each dough circle on a flat baking sheet or a pizza stone to transfer it to onto the grill. Brush the tops of the dough with canola oil. Carefully flip or place the pizza dough, canola oil side down, onto the grill. Brush the top with remaining canola oil. Cover and cook for 5 minutes or until bottom is cooked and grill marks are present. With two large metal spatulas, flip the dough over to cook. Working quickly with your topping ingredients, place tomato, basil and mozzarella over the grilled dough.Drizzle with olive oil. Close the cover of the grill and cook for about 5 minutes or until crust is grilled and cheese is melted. Transfer the completed pizzas to the baking sheets by using the spatulas.
Maple BBQ ChickenKabobs 2 lbs. chicken tenders 1 (packed) cup brown sugar 1 cup ketchup 1/4 cup red wine vinegar 1/4 cup water ¼ heaping cup pure maple syrup, meaning a little over ¼ cup 1 tablespoon Worcestershire sauce 2 teaspoons ground mustard 2 teaspoons paprika 1-1/2 teaspoons kosher salt 1 teaspoon black pepper Marinade: Mix brown sugar, ketchup, red wine vinegar, water, pure maple syrup, Worcestershire sauce, ground mustard, paprika, kosher salt and pepper in a large bowl. Place chicken tenders in marinate. Cover and let chicken marinade for at least 2-4 hours or overnight. I like to throw all the ingredients into a Ziplock and let it marinate this way. If you are using metal skewers skip this part, but if you are using wood skewers soak skewers for 30 minutes, making sure the entire stick is completely under in water. Once they have soaked, remove and start to assemble the skewers. Kabobs: Remove the chicken from the fridge, one piece at a time grab a tender and lace onto the skewer. I start at the chunkier end and do a weave motion. Or you can just slide the entire tender on the kabob and not make it all fancy like a wave. Either way, they will taste the same. Set kabob on a plate and repeat the process. Once completed drizzle extra marinate over the chicken, and let it sit while grill is heating up. Heat gas or charcoal grill, remove chicken from marinade. Place chicken on grill over medium heat. Cover grill and cook 3 minutes, then turn over the kabob and cook another 3 minutes. At this point, check the chicken. To know if it’s done, the juices should run clear when you cut it and the thickest part should register 170° on a thermometer. If not done, continue to cook, at this point I leave the lid open and just turn the kabobs so they are cooked evenly on both sides. My chicken takes about 8-10 minutes. Remove from grill and serve immediately. Or cover with foil and serve later. 43
Ingredients 2 lbs. 80/20 ground beef Oil for brushing on burgers 6 seeded hamburger buns 12 tbsp. mayonnaise Onion Rings – Thin & Crispy Bourbon Whiskey BBQ Sauce 6 slices Cheddar cheese 12 slices tomato 2 cups chopped lettuce Instructions 1. Preheat a gas grill over high heat or a charcoal grill until it glows bright orange and ashes over. 2. While the grill preheats, divide and shape the ground beef into 6 patties. Brush the burgers lightly with oil. 3. Grill the burgers until browned and slightly charred on the first side (about 3-4 minutes). Flip the burgers over and continue to cook until desired doneness – about 4 minutes for medium rare, longer for a more done burger. Drizzle burgers with Bourbon Whiskey BBQ Sauce and place one slice of cheese on each burger. Cook an additional minute or until the cheese just begins to melt. Remove from the heat and set aside while you assemble the burgers. 4. To assemble the burger, spread the cut side of both parts of the bun with 1 tbsp. mayonnaise on each half. Place Onion Rings on top of the cut side of the bottom bun portion. Add the burger with sauce and cheese. Top with tomatoes and lettuce. Replace the top bun over the top of the sandwich. Serve!
