We’re now past the one-year anniversary of The Big Shutdown that hit Michigan (and most of the country) on March 16, 2020. I didn’t notice anyone having any big birthday parties for the virus, though! If you’re anything like me, you’ve really had it with masks and all the other stuff that goes along with this. But we keep going, doing the best we can with what we’ve got! I am SO ready for spring this year! Being able to go outside without bundling up, no worries about plans being canceled because the roads are too bad to drive, and enjoying time outside again. Guys, spring turkey season is almost here, the golf courses and driving ranges are open, and the fish are waiting for you. For local race fans, Butler Speedway will soon welcome you back! We’ve got some good articles for you this month including the car feature, information about area golf courses, business spotlights, guidance on protein intake, and more. Meet Dr. B! By Melissa McCance

The country of Ghana lies in the curve of Africa’s west coast on the Gulf of Guinea. For the people of Hillsdale County and beyond, one of Ghana’s most important and influential leaders in the practice of medicine is Alfred K. Bediako, or “Dr. B” as he is affectionately known by many. Dr. Bediako has been working as an obstetrician/gynecologist on staff at Hillsdale Hospital for almost 30 years, during which time he has delivered so many babies that he can only guess at the total number. When asked, he responded with his signature deep chuckle and said, “Oh, I cannot say! It must be 7,000—maybe 8,000. No, it must be more, because I think we decided it was that many when I was asked that question some years ago!” Dr. Bediako completed his medical training in Africa which included a three-year surgical residency. After moving to the United States in 1983, he pursued additional training which would enable him to practice here. He entered an official surgical residency at Brooklyn Jewish Hospital (now Kingsbrook Jewish Medical Center) in New York, but the program closed before he could finish it. At that point, Dr. Bediako changed to a gynecology residency and completed his surgical program in 1992. As Dr. Bediako neared the end of his residency, he looked for somewhere to practice. He wasn’t interested in staying in New York City for several reasons. “When you are there, you have four boroughs: Manhattan, Brooklyn, Queens, and the Bronx. Your patients can be anywhere in those four boroughs and you usually have to work out of several hospitals. I didn’t want that. It’s so hard to get around in that city. There were several other physicians working with me at the time who were from Ghana, and they commented that the people who’d left the city and started practices in smaller towns seemed to have better lives.” With those thoughts in mind, Dr. Bediako had secured a contract from the hospital in Oberlin, Ohio. It had been sitting on his desk—unsigned—for several months. One day while in the operating room, he got a call from Pat Lyden, nursing director for the (then-named) Hillsdale Community Health Center, asking if he would consider practicing in Hillsdale. Dr. Bediako said he would think about it and get back to her, but Pat was determined. She asked for his address and offered to send him information about the hospital. Sure enough, shortly thereafter he received an information packet and an open plane ticket.

Dr. Bediako decided Hillsdale was worth a look, even though he knew almost nothing about it. So, he boarded a plane and arrived at Detroit Metro Airport late one winter night. After picking up his rental car, he headed to Hillsdale. It was dark, he’d never driven on snow before, and he had no idea where he was going. Almost certain he had lost his way, he stopped at the Jonesville police station at around one in the morning and asked the officers on duty, “Where is Hillsdale?” The officers explained how to reach his destination, and Dr. Bediako soon arrived at the Dow Center on the college campus. After some well-deserved rest, he awoke and was impressed by the beauty of the sun shining on the snowy campus. The next morning, he contacted the hospital. Dr. Bediako’s arrival was a surprise as he hadn’t notified anyone he was coming, but a meeting with CEO Chuck Bianchi was quickly arranged. Bianchi’s passion to improve and expand the hospital was clear from the first time they met, and, even though the hospital was much smaller than Dr. Bediako was accustomed to, he still had a positive feeling about it and about the town. When he returned to New York, he described the area enthusiastically to his wife Irene. After some further visits, the entire family approved that Hillsdale would be their future home, and, in July of 1992, Dr. Bediako came on staff.

Hillsdale Hospital has changed greatly since that time and expanded its services offered in obstetrics, ranging from simple deliveries to more involved care. With the proficiency and effectiveness of doing deliveries and surgeries all at one hospital as opposed to traveling between several, Dr. Bediako has greatly enjoyed practicing within the small town of Hillsdale. “There’s a big advantage to small town hospitals where you get to know the staff well and everyone works as a close team. We offer a good range of services and we have excellent support from the bigger hospitals around us when we need it. It’s been satisfying . . . very satisfying.” One huge step forward in obstetric care at the hospital was the opening of the Birthing Center and Women’s Service Center in April 2013. The center features large birthing rooms with a comfortable, homey feel. There’s also a gynecology surgical room and a twobed triage area. Besides offering mothers a more comforting, less “hospital-like” atmosphere, the design of the center gives the nursing staff more room and better flow to help them provide top flight care. Dr. Bediako is no longer in private practice and is employed by the hospital while otherwise continuing business as usual. Ob/gyn is a very demanding branch of medicine since babies don’t understand how much easier it would be if they arrived between the hours of 8 a.m. and 5 p.m. Dr. Bediako is nearly 70 years old which is a lot of years of being up most of the night followed by putting in a full day’s work. However, he’s not ready to retire just yet. A new ob/gyn will be joining him in September, and he currently plans to work another two to three years. When he does deliver that last baby and enters retirement, it is certain that he will have delivered a significant percentage of Hillsdale County’s residents, and that “Dr. B’s” kind, dedicated presence within Hillsdale Hospital will be greatly missed by many.

HIGHS AND LOWS OF COMPETITIVE STRENGTH


W

asn’t long ago that I decided to become a competitive strength athlete. I’ve worked out practically my entire life going back to high school in the very early 90s. I fell in love with Strongman in my first comp and, almost four years later, I’m still an avid competitor. With anything competitive, you will have good days and bad ones, good comps and subpar ones. In a perfect world, your prep for each comp will be full of solid work and all of it will come to the surface on the day in question. For the most part, it does just that. However, there are a few other peeps in your weight class that are hoping for that exact same thing.

Why do I love that? Simple. You have total control of the outcome. Either you pick it up, or you don’t. Almost doesn’t get you any points and it surely doesn’t help you win anything on the comp floor. Yet, if you fuel, if you recover, if you work your ass off ... you win! You can do all of those things and get to your comp and not come in first place, but you still win. If you’re stronger than you were before, it’s a win. Keep in mind, the rest of the field is doing the same thing. Personally, that’s fuel for me. I mean, knowing that if I don’t work hard or I miss a training day the other guys aren’t! So, on the days that get hard, dedication to being better is what drives me. I don’t rely on motivation to carry me, cause quite frankly motivation will fail you more often than not.

When it comes to the prep work, to be successful you do as you would in any other sport and work to develop weaknesses and fine tune strengths. Some comps will showcase your strengths magnificently, but of course, there are the ones that will test your weaknesses to the absolute max. As with life, there will be highs and there will be lows.

So, what if you go to a comp and it doesn’t go well? Well, it’d be easy to say that it isn’t for you and walk away. I don’t care much for easy; if it’s easy it’s usually not worth having. I’ve had this happen too! When it goes sideways, you just have to roll with the punches and do everything you can. Morel Hunting Potential Morel Mushroom Hunting Locations on State Land

Spring is morel season in Michigan! Morel enthusiasts have their favorite hunting grounds but for first timers it’s worth it to check out the DNR’s morel map. Each year the DNR releases a map pinpointing locations that it believes will have the best morel hunting. Morels grow in forested areas, typically where there had been a fire the year before. The mushrooms have unique appearance with their long, honeycomb-like cone and distinct aroma that gourmet chefs love so much.

Morel mushrooms often are found in locations where sizable fires (more than 10 acres) occurred the previous year. The mushrooms only will grow where there was a forested covertype; grass or other ground covers will not yield morels. Additionally, morel mushrooms are more likely to grow in burned areas where jack, white, or red pine once grew. This map and information provide locations where fires greater than 10 acres in size - from either wildfires or prescribed burns - occurred in 2016. ADVENTURES It is just about time to bust out of winter and take on spring! Besides warmer weather, sunshine, and green grass, spring brings us National Beer Day on April 7! And really, what better way to celebrate spring fever than with a nice, refreshing Michigan craft beer? With the mitten state ranking fifth in the nation for the number of breweries, microbreweries, and beerpubs, there is no shortage of opportunities to quench your thirst across Michigan. First up on the list is Beer City USA. Popular for its craft beer, the Grand Rapids area has more than 20 breweries each with its own twist. From Founders – named the the 3rd best brewery in the world by ratebeer.com – to HopCat -- voted number one brewpub in the United States by ratebeer.com – Grand Rapids has plenty of must-stop venues for beer lovers. To get the most from your visit, travel along the Beer City Ale Trail on one of the four area tours. Rather stay in one spot? On June 2, just outside of Grand Rapids at the Hudsonville Fairgrounds, is the annual event Beer City Spring Fest. Beer City Spring Fest offers good food, great beer, and fun entertainment. On the other side of the state, travel to Michigan’s very own Little Bavaria. Germans are known for their love of this frothy beverage, so it is no surprise Frankenmuth is host to Michigan’s largest sampling event. Protein is a food buzzword right now. It seems that everything you buy at the grocery store except for maybe beer and potato chips has something on the package trumpeting the protein content. As more evidence emerges on the importance of exercise and solid nutrition, people are learning they need to pay attention to protein intake. But, many adults—if not most—aren’t getting enough. Protein deficiency in the diet can cause growth failure in children along with loss of muscle mass, decreased immunity, and weakening of the heart and respiratory system at any age. There are over 10,000 types of protein in your body, and it is essential to the processes that provide energy and carry oxygen, and it helps keep cells healthy and to make new ones. After exercise, protein aids in recovery including reducing post-exercise soreness and building muscle. If you’re trying to cut weight, getting enough protein aids in curbing your appetite, satisfying hunger longer, reducing cravings, and maintaining weight loss. There are 20 basic building blocks for protein which are the amino acids. Our bodies don’t store these components; they make them or modify others. Of these amino acids, there are nine which are classified as essential amino acids (EAAs) because the body cannot make them. These must be obtained from food or supplements, but food is the preferred primary source. The EAAs are histidine, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan, and valine. When you start talking about how much protein should you consume, it can get confusing because many things affect a person’s protein requirement. A general daily baseline for adults is a minimum of

7g of protein per 20 pounds of body weight. So, a 180-pound adult should eat at least 63g per day. However, the amount of energy used per day, age, gender, body weight, activity levels, health conditions and other factors all make a difference in how much protein an individual needs. If you engage in intense physical activity like weightlifting or distance running, an accepted rule of thumb is to consume 1g-1.5g of protein per pound of body weight on workout days or more frequently. This level of protein intake will significantly reduce delayed-onset muscle soreness (DOMS—that “everything hurts and I’m dying” that hits one or two days AFTER the workout) and aids the body in repairing muscle tissue that was broken down during the workout and in building new muscle. If you’ve heard that high protein consumption damages kidneys, don’t worry. Subsequent research has shown that healthy kidneys can handle it just fine. Both plants and animals are good protein sources, but most plants do not provide all the EAAs, so if you eat a primarily or completely plant-based diet, be sure you’re getting what you need. The complete EAA profile is found in meat, poultry, fish, eggs, milk, cheese, yogurt, quinoa, and soybeans. Protein supplements like whey or plant-based protein powder is another good way to increase your intake. Be picky about things like protein bars, as some of them are basically candy bars that have added sugars and fat in amounts way out of proportion to the protein content. SO, if you’re serious about staying healthy and especially if you’re trying to build lean body mass, check your protein intake! It very likely needs a boost. 25

Life is the Berries We’re on Vacation! Plans SPLAT sometimes.

This happened to my friends, Judy and Joe Tvergyak, while in the middle of their vacation. Joe experienced a medical issue, so they rushed to the medical center. On the way, his wife glanced over, grinned and exclaimed, “We’re on vacation!” She hoped to make light of the reality of ending yet another holiday early. Their stress busted into laughter. It worked! Ever since their interrupted vacation, they repeat this infamous phrase. It ushers in giggles and lifts the despair. When Joe needs to drive to various doctor appointments, medical procedures, or ER visits, the mood lightens with, “We’re on vacation!” Even in the middle of night with a medical issue popping up, they chant, “We’re on vacation,” as they drive in the darkness to the hospital. Judy shared with me, “This specific saying lifted our spirits, cut the tension, and brought us much laughter even amongst the tears!” You see, Joe and Judy started their marriage adventure as a typical couple. Three years later, life dropped a challenge. Now, Joe rolls in a wheelchair with Judy walking by his side.

Their faith in God bonds their 36-year relationship strongly as they adjust to medical issues. The energy and engaging joy around this couple draws others toward them. Joe thrives by the Bible verse, “I can do all things through Christ who strengthens me.” (Phil 4:13 NKJV). His face beams with Jesus’ joy. Judy draws her courage from these inspired words: “For God has not given us a spirit of fear, but of power and of love and of a sound mind.” (2 Tim 1:7 NKJV). She radiates God’s love. Judy chuckles and tells me, “If you see us driving with our hands raised through the sunroof, smiling and laughing while pulling into the hospital, it’s because ‘we’re on vacation.’” Their positive perspective brings a smile to my face, imagining their handraised cheering rolling into the ER drive with a puzzled expression on the medical attendants’ faces. Unexpected trials plop on our paths. Readers, we choose our response to unanticipated troubles. We can drop our shoulders, sulk, mope, and complain when our plans are cut short. Or, we can join Judy and Joe as we adjust to challenges and dance in our car while laughing and shouting, “We’re on vacation!”

Muddy day? Please don’t play! Written by Michigan DNR With warmer weather in the forecast, we wanted to remind everyone to help protect Michigan trails by not using them when muddy. Riding or walking on a muddy trail destroys the surface. It leaves ruts/deep holes, uneven tire and footprints, contributes to erosion and creates a hard-to-fix trail surface. Hint: If you are leaving visible bicycle ruts, deep footprints or hoof tracks the trail is too muddy. Spring is an especially sensitive time because frost layers often linger below the trail surface (even when air temperatures have warmed up). As a result, spring rains have trouble permeating the soil, creating muddy topsoil. Trail use and muddy conditions can erode trails very quickly. Although you should avoid muddy trails altogether, please keep these tips in mind if you encounter a muddy section: MOUNTAIN BIKING - If you encounter a muddy section, dismount and tiptoe down the center, not to the sides because it widens the trail. HIKING - If you must traverse a muddy section of trail, go right through the center of the trail, rather than travelling around the mud and widening the trail. HORSEBACK RIDING - Although most horses don’t mind getting their feet wet, you and your horse are encouraged to travel through the center of the trail so inadvertent trail widening doesn’t occur. HD Mechanical is your "one stop" shop! Heating, ventilation, and air conditioning systems—commonly known as HVAC systems—are essential for our homes and businesses. They contribute not only to our comfort but also to our health. When one of them isn’t working, we want it fixed as soon as possible. (Michigan winters without heat can be pretty miserable!) The availability of parts and supplies has a direct impact on how quickly that will happen. Dave Dow of HD Mechanical (formerly Hillsdale Mechanical) is working hard to make sure that area professionals and homeowners have what they need to get those systems back in service.

Dave was born in Florida but graduated from Pittsford High School after his parents returned to their roots in the Hillsdale area. He also owns D&D Heating and Cooling which he started in 2013. Dave sometimes had issues with being able to find parts when he needed them and knew that other HVAC contractors were in the same 32 situation. When Hillsdale Mechanical

became available for purchase, he decided to take the plunge and add it to his already-established HVAC business. Dave reopened it as HD Mechanical early in January 2021.

The 6,000 square foot building houses a wide array of parts and supplies for heating, cooling, and plumbing. Dave is expanding the range of plumbing supplies including PEX fittings, SharkBite supplies and tools, PVC pipe, and water heaters. His goal is to make HD Mechanical the “one stop shop” for both professional contractors and DIY homeowners who are up to handling some repairs on their own. “We’re open to everyone. We welcome anyone who’s looking for HVAC or plumbing supplies, and we’ll do our best to help them get what they need to do the job,” Dave says.

One future service that should be especially helpful is online shopping. As the website is developed and expanded, it will be possible to view available inventory. Customers can order what they need and have their merchandise packed and ready for pickup. This can be a serious timesaver for contractors out in the field who discover that a job requires additional parts. Once this is up and running, they’ll be able to access the website on their phones to see if HD Mechanical has the parts in stock and then place the order online or just swing by the shop to purchase them.

Ex-motorcross pro Carey Hart has customized the new Indian Chief to stunning effect, turning it from a mild-mannered cruiser into a wild-eyed West Coast brawler. Although it looks far from a stock machine, the engine and frame are untouched which demonstrates the ease of customization of the new platform. Gone is the retro-looking suspension, replaced with jacked-up Fox piggyback shocks as well as GP Suspension forks lengthened with Altered Industry extenders which should give it a bit of extra ground clearance for carving up the twisties while exaggerating the laid-back stance.

Like a Mickey Mantle rookie card or a Spider-Man #1 comic book, car enthusiasts have that one special make and model they dream about owning and search endlessly to find.

what drew Dave to the car. Impalas tend to get the love when it comes to Chevys in the early 60s. However, the Bel Air – and in particular the Bel Air with the Bubble Top designation – should not be discounted.

Dave Mills found his long-soughtafter treasure in the form of a 1962 It certainly wasn’t for Dave. A big fan of Chevy Bel Air. The Chevy’s body style the Detroit-made machines, Dave said – which was unique for a Bel Air – is

he “worshipped Chevy when I was a kid.” So it wasn’t just going to be just any classic car he was going to buy. It had to be the car. “The Bel Air was more affordable,” he said of the car when it was first produced. The Impalas were the top of the line, but demand for the body style led Chevy to make a more economical version


which they called the Bel Air. Noticeable differences were mainly on the interior of the car, with a number – including Dave’s find – having the coveted Bubble Top, a transparent dome that serves as the roof or part of the roof. Dave said he searched for years to find the exact 1962 Bel Air (with the Bubble Top) he wanted. In 1985, he found it. Work and family keeps even the most devoted Chevy fan busy and Dave said it took him seven years to get his Chevy ready for the road. Or, more correctly, for the drag strip. Fashioned with the classic 409 engine which Dave installed, the car spent many years on the drag strip before she was retired. Now Dave and his wife Jean like to take her out to cruise-ins and car shows. That doesn’t mean Dave is also retired from racing. He still spends plenty of time on the track in his 1965 Chevy II, better known as the Nova. “I built this car to race,” he said. Purchased back in 2005, Dave also put in a 409 engine and outfitted the machine for speed. “It is not set up for the street,” he said. Although 2020 was not the year for racing, things are looking up for 2021 and the tweaks Dave has made over the past year and a half prove to make his Nova even faster than before. “It runs real good,” he said. “The fastest I’ve had it up to is 145 miles per hour, but with the tweaks I made she’ll do 150.”

He said he’s done quite well with his Nova and even won the Great Lakes Gassers at the Milan Dragway in 2012. Dave said he is also part of a group that owns 409s and races throughout the country. He is looking forward to the Rock ‘N Race 2021 at Dragway 42 in West Salem, Ohio, this summer. “It’s a hoot,” he said of racing and getting together with others who have a love for classic cars. When he’s not racing, he and Jean enjoy taking the Bel Air out for rides. He has kept the white exterior but has redone the interior to blue. “I call her a 20-footer because she looks good from about 20 feet away,” Dave said with a laugh. “It’s fun to fire up and go.” He is hopeful to get back to cruise-ins this year and a few car shows if it can be done safely. “If it’s safe to go, we’ll jump in the car.”

DIRECTIONS DIRECTIONS

In a stand mixer (with dough hook) or large mixing bowl, stir together the water and yeast. Let it sit for a few minutes until the yeast is dissolved and starting to bubble. Then stir in 3-4 cups of the flour, the oil, and salt. Mix until a shaggy dough is formed. Place it in a lightly-oiled bowl to rise at room temperature for 1-1.5 hours, or until it’s doubled. Cover with plastic wrap and let sit. Grill the pizza: You should be able to do 2 at a time. Bring the dough to room temperature if it’s not already (at least an hour). Lightly flour a surface and roll out small portions of dough (a little bigger than your fist). Preheat a gas grill with all the burners on high for 10 to 15 minutes before you plan to cook. Brush a light coating of olive oil onto one side of the dough, then carefully place the dough directly onto the grill over the flames. Close the grill and let it cook for a few minutes, until the bottom of the dough shows char marks and is barely cooked (usually 2-3 minutes). Flip the dough over. Brush a little more olive oil on the cooked side, then quickly spread your sauce and toppings on the pizza. Close the grill and cook until the bottom is nice and crispy, the toppings are warmed through, and the cheese is melted--another 2 to 5 minutes.

INGREDIENTS Cedar plank salmon — savor the flavor INGREDIENTS 1 salmon fillet (about 2 pounds) 6 tbsp brown sugar 2 tsp salt 1 tsp pepper 2 tsp paprika

DIRECTIONS DIRECTIONS Soak cedar planks for at least 2 hours. Cut the salmon fillet into 6 equal-sized portions. Pat the salmon fillets dry with a paper towel. Mix the brown sugar and spices together in a bowl. Rub the top and sides of the salmon generously with the brown sugar rub and place the salmon, skin side down, on the wet cedar planks. Preheat the grill to medium so that the temperature is around 350F-400F. Place the planks, with the salmon on them, on the grill and close the lid. Cook the salmon for about 15 minutes. The time may vary depending on the thickness of the salmon. The internal temperature should be 135F.
