PUBLISHER’S CORNER In a politically charged climate these days, it’s nice to know we still have so much pretty and happiness to look forward to when I was laying out the magazine. I had a huge vision in my head to do something with Title Boxing Club of Cottonwood, and Dash, the owner, was on board from the get go! Brides are every day people, with hobbies and goals, jobs and families and I couldn’t get past the fact that we are slammed with images of the ‘perfect bride, in the perfect setting, with the most perfect of everything’ Even the biggest of wedding budgets will have stories of some stress in their journey of planning. So let’s embrace the everyday and add some quality elements, like exceptional gowns from Harlow Brides, and spectacular hair and make up by Signature Brides and Design, classic floral design by Bay Jo Lucas, and the most beautiful everyday girls you will ever meet! I can’t believe we are already to the second issue of Wed Utah. The support has been absolutely astounding! THANK YOU from the bottom of my heart. Get to know Baker Marcia I'm self educated. Dedication and a lot of practice has got me to where I am today. My passion exceeded my failures and gives me the drive to keep learning different techniques and improving with each project. I remember even as a child I loved being in the kitchen. Mixers and blenders were my toys. Working with couples to create their dream wedding cake has always been a passion of mine. I love that the cake I create is an important part in what makes their day special. The expression on the bride and grooms face when first seeing their cake is priceless to me. It gives me such a wonderful feeling and I am proud and honored to be a part of that. Marcia Says- Plan ahead and come prepared. Know your budget and have realistic expectations. Meet WendyI have literally been baking since I was tall enough to reach the countertop! My Mom started me off, but I'm self taught past her tutoring. The pies and cookies my ten year old self made were far from pretty, but I fell in love with the process. Growing up in a house with all brothers I always had willing taste testers. Now I have all sons so the situation is much the same - I experiment and immediately have 6 opinions (my husband included) at my disposal. Weddings are so much fun to cater, in part because I get a glimpse at the beginning of the couples' life together! I love being a part of a day they will always remember - and making it sweeter! On top of all that is the fact that weddings are a beautiful backdrop! I like to feel like my desserts are little works of art and they can really add to such a special day. Probably the two most important things I tell my customers to consider are first, choose a variety of types and flavors among your desserts so everyone has something they like; and second, have ENOUGH for your guests! We’re gathering up the tastiest recipes for our Health Sections- Fit Bride Recipes are what we are calling it, The best Utah food bloggers stepped up to the challenge and we know that this is not just for the Bride, but for everyone!


Golden Beet, White Bean, and Orange Salad BY DIANE HARTFORD @hellofunseekers INGREDIENTS 1 pound golden beets cooked, peeled, and cut into wedges (see Notes below) 1 large orange 1 shallot peeled and thinly sliced 1 cup white beans rinsed and drained 3 T pistachios shelled and roughly chopped 1 T Italian parsley chopped 1 T white balsamic vinegar 1/4 t salt 1/4 t pepper 1 head Romaine lettuce washed and chopped INSTRUCTIONS Place chopped Romaine on a small platter. Peel orange; using a paring knife cut into segments. Cut each segment in half or thirds if orange is large. Discard membranes. Combine beets, orange segments, and cannellini beans in a bowl with shallots, parsley, vinegar, salt, and pepper. Taste for seasoning, adjusting vinegar, salt, and pepper as needed. Place beet mixture on salad greens. Sprinkle pistachios, salt, and pepper over salad.


Quinoa Bowl with Sweet Potatoes and Avocado Cream By THEREISLIFEAFTERWHEAT@G MAIL.COM @lifeafterwheat

Ingredients 1/2 cup quinoa, rinsed 1 cup broth (vegetable or chicken) OR water 1 T oil (I used avocado) 2 cups chopped sweet potatoes 1/8 tsp turmeric salt and pepper to taste 1/2 T coconut sugar (you can sub brown sugar) 1 large, ripe avocado 1/4 cup mayo (I used a sriracha mayo) 1 tsp lime juice (bottled or fresh) 1 T water 1/2-1 T chopped fresh cilantro, to taste Black beans Sliced green onions and/or fresh cilantro for garnish Instructions FOR QUINOA: Combine quinoa and broth or water in a small saucepan. Cover and bring to a boil. Turn heat down so it's at a gentle simmer, do not remove lid. Set timer for 15 minutes. When timer goes off, most of the liquid should be absorbed. Turn the heat off and let it sit for 5 more minutes, then fluff with a fork or spoon. All the liquid should be gone and you can add salt and pepper to taste if you want. FOR SWEET POTATOES: Meanwhile, heat 1 T oil in a large skillet over medium heat. Add sweet potatoes and sautĂŠ until sweet potatoes are browned and just tender. Don't cook until they're mushy :) Sprinkle with turmeric, salt, pepper, and coconut sugar and stir to combine. Set aside. FOR AVOCADO CREAM: While quinoa and sweet potatoes are cooking, combine avocado, mayo, lime juice, water, salt, pepper, and cilantro in a food processor (I use a mini KitchenAid one). Process until smooth, add an additional teaspoon of water if needed to get the right consistency. I put the avocado cream in a condiment bottle to squirt out. PUT IT TOGETHER: In a bowl, arrange in thirds the sweet potatoes, black beans, and quinoa. Drizzle generously with the avocado cream, or just add a heaping spoonful to the top. Garnish with green onions, cilantro, and freshly ground pepper and serve. Store leftovers separately in the fridge and sautĂŠ quickly to reheat. The avocado cream will brown a little but will still taste great later, IF you have any leftovers :)

Banana Almond Pancakes – Gluten Free By Whitney-PURPOSE TO NOURISH Mind, body, spirit @Purposetonourish

INGREDIENTS PRODUCE • 1-2 bananas SPICES & CONDIMENTS • 1 TSP Almond Extract Certified • 4 TSP Bob’s Red Mill Garbanzo Bean Flour – 16 oz. • sliced almonds (optional) DAIRY • 2 TBS butter PROTEIN • 2 eggs

DIRECTIONS 1: BLEND BABY BLEND! Add all ingredients to a Vitamix or blender 2: Get cookin’! Heat butter on medium in a frying pan or griddle. Very slowly pour the mix into the pan until the desired size. Flip when you see the edges turn golden brown. Repeat until you’re out of batter. The above recipe should make about 4 pancakes, blend additional ingredients if necessary. 3: Serve. If dressing up your pancakes, deck out with slivered almonds, bananas, and syrup. To be honest, these are pretty sweet on their own and in my opinion do not need any syrup at all, but I’ve been known to barely have a sweet tooth, so you do you baby!

A Native American Touch on a Great Gatsby Glam,

Jacinda & Quanah’s wedding keeps us mesmerized by all the details! Photography by Moy Bogarin

I

met my husband outside the view hotel in Monument Valley, Utah. I had my mother and sister with me as we planned on getting a few good pictures before we headed to our home in Arizona. I decided to wander around a bit while they went inside to the gift shop. There's a patio just outside the shop overlooking the monuments and it was crowded with tourists. In the sea of craziness, there he was. There was something about him, the way that he carried himself and the way that he talked. His name was Quanah and just like his name he had a unique personality to match. I thought he was very handsome. He told me he was a tour guide, so my family and I embarked on a short tour with him before we had to head home. Afterwards, Quanah and I kept in touch and created a friendship. Then that friendship turned into something more. I had no idea I would fall in love with our tour guide and marry him. He really is the man of my dreams. My top priorities were to make sure everything fell into place but most importantly for everyone to help us celebrate the love between Quanah and I. There is nothing more special than seeing family and friends celebrating our wedding day. One of the most memorable moments was the ceremony, it was a gatsby wedding but I also tied in my Native American culture as well. My Grandfather conducted the sacred ceremony and this is something not many outsiders get to see. It was so special how everyone

there got to experience that wonderful moment. Then another favorite was the reception and watching everyone mingle together, having a blast. I'm pretty sure every girl fantasizes about their wedding day which was definitely true for me. I know I wanted something elegant and vintage. I based my wedding style off of my favorite book "The great gatsby." I think I was very lucky to have a mother as a designer and she really brought my vision to life. We picked out my vintage beaded wedding gown from "the bridal center" in downtown Provo. It was the perfect gatsby style dress. My colors were turquoise and gold with accents of black. The cake was a simple gold cake wrapped in lace with a delicious chocolate center made by cake master Kathy dally from Provo. My family owns a restaurant , Black Sheep Cavfe, and they did the catering portion of the reception. The venue was a vintage house built in the 1920s called Memorial House in Memorial Grove Park. It was an amazing cozy venue. I arrived in a 1920s Rolls-Royce rented from the Classic Car Museum in Salt Lake City. The big day arrived and everything was just as I imagined it would be. Tables topped with turquoise, black and gold with big ostrich feather centerpieces. It really felt like a 1920s party!
