Ever wondered what it is like being a TV- chef and how food magically appears from the oven with less than five minutes of cooking time? Host and chef Anna Olson of Fresh Flavours with Anna Olson – A Canadian Culinary Adventure tells us how all that magic happens. “I spend 12-15 hours a day filming an episode in my kitchen (the set is her real kitchen at home). We film the first one with me talking and a second one where it is super close up. With TV-cooking, it lacks the element of smell, so we up the ante by amplifying the sound of food cooking for that sensory experience,” she says. She recounted an instance where they were shooting the “time lapse” segment for the first time (think of how you would watch cookies bake in an oven squeezed into 30 seconds) the film crew and her were so curious they kept peeking into the glass oven and the camera picked up their faces so much that they had to reshoot that scene. “We know now never to peek whenever we are filming that section!” she laughs. Inspired by her grandmother as a child, her passion for food
is apparent. “I never go to a franchise like Mcdonalds or Starbucks when I travel. Last Christmas I was in Paris and Brussels and it was all about the beer, fries and chocolate!” she says. Anna also likes Singaporean delights such as bak kwa, briyani, chilli and pepper crabs. Singaporeans love to eat so much that while we’re having a meal, we talk about our next meal. Kong Kee Seafood Restaurant is one name that has been thrown around many times at the dinner table, and we’ve finally gotten round to paying them a visit and having a taste of their signature Kuala Lumpur (KL) Hokkien Black Noodles. I had thought that the typical yellow noodles (sek mee, or shou

mian) of medium thickness would be used in the KL Hokkien Black Noodles. Instead, the noodles were significantly thick and almost udon-like in look and texture. They were also the white ‘rice noodle’ variety. The black sauce that was used in the KL Hokkien Black Noodles was tasty and slightly sweetened. It was good but I was sceptical of its authenticity, so I spoke to the supervisor and she told me that the authentic KL style uses the thick yellow noodles with ghee, but theirs are “custom made” without the ghee, which gives the noodles its udon-like texture. One unique
Method 1. Whisk the egg yolk and the sugar into a bowl, until the sugar melts. Then add the flour to thicken it and, lastly, add in the milk. Continue to stir the mixture well. 2. Bring the mixture over a low fire, and stir it until it thickens. 3. After it thickens, add in 100g of chocolate, as well as all the butter, and stir until the whole thing is completely smooth. 4. Transfer it into a new bowl, and leave the cream mixture to cool down in room temperature before filling the pastry. 5. Melt the remaining 100g of chocolate. Dip the top layer of the pastry in the melted chocolate, and then leave in the chiller for about 1 hour. 6. After an hour, it will be ready to be served and to be eaten. Lor mai gai A comforting yet relatively easy dim sum treat to make. Food blogger Sherie Lee shows us how Makes 5-6 INGREDIENTS For rice 600g of glutinous rice, washed, soaked overnight and drained 300g of chicken stock 3 teaspoons of sugar 4 tablespoons of oyster sauce 3 teaspoons of light soya sauce A pinch of five-spice powder A few dashes of white pepper A dash of sesame oil 5-6 dried lotus leaves, soaked in hot water and wiped dry Filling 200g of boneless chicken thigh 70-80g of dried Chinese mushroom, soaked to soften, squeezed dry, stemmed and sliced 10-15 of slices of lap cheong (chinese sausage), sauteed Some chicken stock Seasoning (to taste) Salt Sugar Sesame oil Dark soya sauce Method 1. Marinate chicken with seasoning the night before and leave it overnight in the fridge. 2. Drain glutinous rice and mix with chicken stock and all other ingredients. 3. Steam rice over medium heat in a lightly greased plate for 15-20 minutes until partially cooked. 4. Meanwhile, prepare filling. Stir-fry chicken in hot oil until brown. Add in the mushrooms and finally, chicken stock. Taste and add in seasoning 5. Divide rice into 5-6 parts. Place a portion onto a dried lotus leaf. Spread rice out over leaf and place cooked filling in the middle together with 2-3 slices of sauteed Chinese sausage. Wrap up and secure with string. Repeat to make 4-5 more parcels. 6. dish that we had, to go with the KL Hokkien Black Noodles, was the Deep Fried Fish Bone. For this dish, fish bones still with morsels of meat are deep fried with chilli flakes and spring onions. Trust me; it tastes much better than it sounds. I also loved the Sweet and Sour Pork. The sweet and sour sauce was not overly sweet and was nicely balanced, with a tart-y feel covering the very tender and chewy pork. Another dish worthy of note was the Giant Prawns Crispy Noodles with egg sauce. The savoury sauce with the halfcooked egg made this a flavourful dish. Nonetheless, the crispy noodles were a tad too dry and could not soak up the taste of the savoury gravy. On the whole, the food at Kong Kee Seafood Restaurant was good, especially the KL Hokkien Black Noodles. Battle of the links! Even the underground connectors taking us from one part of the city to another have been turned into shopping opportunities By Cheryl Chia

ingapore seems to have the burning need to link everything underground to create a non-stop airconditioned retail experience. Recognising the fact that at times it is too hot to walk around outside, the concerted effort to create underground links have paid off resulting in easy and quick passages from one part of the city to another. The whole of Orchard Road for example is practically linked up underground. You can walk from Wisma Atria to Ngee Ann City to Ion Orchard to Wheelock Place to Shaw Centre. Not to mention the link from CenterPoint to Orchard Central. There’s almost no way you can break a sweat walking from street to street in the airconditioned comfort of these passages. Gone are there days where underpasses and linkages were dank and dodgy filled with buskers and beggars. They have now become the shop-filled link malls that people flock to while heading to another destination, which is probably another mall. Further cementing the image of Singapore being a shopping haven, the heart of the Central Business District (CBD) area also gets a similar treatment with Raffles Link and Marina Bay Link Mall. You can now comfortably walk from your office in Raffles Place to Marina Bay Financial Centre without the hassle of being under the hot sun. People working in the area also have the option of squeezing in some lunch-time shopping at these places. We compare two of the central link malls to help you spread your lunch hour shopping better.
MARINA BAY LINK MALL One of the newer link malls in Singapore caters to the crowd working at Marina Bay Financial Centre. Teeming with PMEBs and white-collar workers during lunch, the shops are also poised to cater to that crowd with fashion brands skewing their styles toward the career people. This is worth checking out even if you aren’t working in the area for the restaurants as well as the niche clothing labels, just to explore something new. Shiny and smooth locks for Christmas aren’t too much to ask By Cheryl Chia If you’ve exhausted all your good hair days by constantly abusing your hair with flat irons, colourants and toxic re-bonding or perming agents, you are not alone. My hair is frizzing and breaking off due to the brittleness of the shaft. What happened to my shampoo ad-worthy locks from my childhood? To remedy the results of my itch to change hair colour once every three months, I embarked on a hair care siege to reverse time and to save my locks. My hair routine has increased from a wash and condition to a monstrous multiple-step process. I switched out my “dry hair” shampoo for one meant for oily scalps, that stopped my roots from looking like an oil slick. Next, to remedy the ends, I used a leave-in serum to quell the wiry mess. On top of that, I use a hair masque once a week on the lengths of my hair to further moisturise it. Sounds like an incredible amount of work, doesn’t it? The look in my parents’ eyes when they saw me perform on stage for the very first time, and acknowledging their love and pride for me as their son. Where is your favourite place in Singapore? Ooohhh this is tough... I hang out at different nooks in Singapore, depending on who I’m with but, to narrow it down to a single location, I’d say Bishan. That’s my hood and late night walks alone in Bishan Park really clear the mind. What do people love most about you? You will have to ask them. *laughs* Apparently, it varies from my hearty laughter to my irritatingly passionate, positive outlook of life to my perky behind!
What food do you eat that makes you happy? I love cooking and home cooked food. :) Whatever I can whip up in the kitchen or, to just satisfy whatever cravings I have on the spot.
You have a time machine. Where and when do you go? I wouldn’t change a thing. I believe good and bad things happen in our lives for a reason. Who we are now is the result of what we have been through.
Which of your accomplishments are you most proud of? I cherish each accomplishment as it is because each is special in its own way. However, one of my favourite bucket list accomplishments was skinny dipping in the sea in the middle of an Australian winter. Shhhhh…
What is so ‘shiok’ about Singapore? Hands down, as a self-proclaimed foodie, it has to be the variety of food available. What message would you like to say to all Singaporeans? ‘Live’, ‘Love’, ‘Life’ – live without regrets; love the people around you; breathe life to those who need it. Something I personally live by.
What’s the most ‘paiseh’ (embarrassing) thing you’ve ever done? Contrary to popular belief about actors, I’m relatively shy. Every time I’m on stage, it can be frightening. Most recently, I even performed Gangnam style, live at the Esplanade’s Durian Awards, just because many people apparently said I look like him!

Ever since the mention of Singapore as a trading post in Greek cartographic references in the Second Century, Singapore has been at the crossroads of trade, culture, and ideas which provides a richness of history complete with swashbuckling seafarers, slave traders, pioneering founders, and mighty Malay warriors. Sadly, most contemporary Singaporeans are drawn to the excitement of other lands, while gladly accepting ignorance of one’s own. Perhaps, what makes us interested in our own past as adults begins with imaginative and intriguing stories we remember and enjoy as children. One can’t blame Don Bosco for leveraging on proven ways to attract young readers. Sherlock Hong has been enlisted by his secret sect’s senior to track down villains intent on restoring the “Book of Secrets”, the oldest magical manual from China, for profitable gains. This rare book was the Chinese Emperor’s wedding gift to the Princess Hang Li Poh, the bride to the Sultan of Malacca many centuries ago. It contains secrets of Eastern Alchemy, which described methods of making people influential and powerful. Knowing that the book would never be safe, the Princess cleverly converted the passages to songs which she taught to her servants’ daughters. With each passing generation, the number of daughters who memorised the songs diminished until there was only one left. Now, she is in danger, unless Sherlock Hong can get to her in time. The reader is taken on Hong’s journey from River Valley Road to the library in Johor, and to Malacca to help prevent the “Book of Secrets” falling into the wrong hands. Despite the interesting characters and plot line, I was left with a desire for more details about the entire journey. This story has tremendous potential and it certainly deserves it. Overall, the fusion of local lore, history and culture makes this story both unique and worth reading for young Singaporeans. Perhaps if young Singaporeans were fed less vampire stories from Forks, Washington and more stories with colourful, intriguing and local historical references, future Singaporeans may have fewer doubts about their unique identity.

Running for autism Their combined age is less than ten but Ethan and Daniel Khor, aged four and five, are joining forces to raise funds and awareness for autism Ethan and Daniel Khor, aged four and five years old, had participated in their maiden Standard Chartered Marathon Singapore Kids Dash. Having covered a distance of about 750 metres in the run, their earnest effort greatly helped to raise funds and awareness for autism. Ethan and Daniel’s combined effort had raised about $2,500 for the cause of autism, in the span of just one week. All the support they had received from their family and friends contributed to the total amount of money they had raised. Inspired by the success of their fund raising effort, Ethan and Daniel’s father, Mr Keith Khor, 35, will be running the full-length marathon in the Standard Chartered Marathon this year. He wishes to do his part as well. “This will be my very first marathon, and the first time I will be running for a good cause as well. We hope that with our combined efforts, we will be able to raise even more awareness for autism,” says Mr Khor. The whole Khor family will be lending its support to the
Autism Resource Centre, which carries out the noble work of helping individuals with autism spectrum disorders. The Autism Resource Centre aids these individuals in maximising their potential in life. The Autism Resource Centre’s services reach out to the young children who need early intervention, to school-going children and youth in Pathlight and Eden School, to adults via their employability centre, as well as to parents, teachers and other professionals in training and support. “You cannot always tell that someone has autism just by looking at them. Because of this, autism is also called a hidden disability,” explained Mrs Dominique Khor, 33, who will be accompanying Ethan and Daniel while their father runs the marathon. “Parents of children with autism often report that their children are labelled as being naughty, and adults with autism often feel misunderstood by others,” adds Mrs Khor. She feels that participating in the run is a perfect opportunity to keep fit, as well as to give the young boys a valuable life lesson. “The boys love to dash around in parks and open spaces. We feel that this is a chance for us to teach them about giving and supporting charities too,” she says. “Join us to raise awareness for autism!”
