Something old, something new Singapore has a reputation for being cosmopolitan and modern, yet somewhat soulless due to rapid development and globalisation. As small family businesses dry up and are replaced by bigger and brassier international chains, is it any wonder that our country’s soul is fast disappearing? From directors Royston Tan, Eva Tang and Victric Thng, the documentary Old Romances shows you old-school places you never knew still exist, along with the people who have a history with and love for them. Their previous documentary, Old Places, had a similar theme and tone. Explaining his decision to make a sequel, Royston – who is renowned for feature films like 881 and 12 Lotus – says, “I received an e-mail recently from a lady who wrote that as she was taking the MRT and looking out the train at everything that seemed so familiar, she realised that they were really places that were being lost by the minute. It’s almost as if we Singaporeans are suffering from a societal dementia due to our rapid urban development. With this, I felt the need to archive all the stories and old places.” Royston adds, “I believe, in every old place, there is always a story waiting to be told.” His fellow directors Victric and Eva share the same sentiment and thus jumped at the chance of making a sequel.

Victric says: “We know that getting people who want to be featured is not easy but we seized every opportunity we could. For example, we were pleasantly surprised at Shashlik Restaurant, one of the oldest Russian restaurants in Singapore. The owner was very accommodating and even treated the entire crew to their famous oxtail stew. We saw a lot of passion in that place and a lot of heart.” Eva adds, “When these places are gone, I feel a part of me will be gone too. It feels like a rendezvous and farewell to so many fond memories.” The documentary features places such as Colbar Eating House, Gim Joo Textile Co Pte Ltd, Lao Sai Tao Yuan Teochew Wayang and Tan Moh Hong Reptile Skin & Crocodile Farm, all with their own touching anecdotes and attachments. Victric sums up the whole experience aptly: “Making Old Romances was like re-visiting an old lover. ocated at the western edge of continental Europe, Lisbon is rarely on the top of one’s mind as far as European capitals are concerned. The centre of a once mighty and glorious empire, I came here with few expectations yet left brimming with praise. Lisbon is truly an underrated and, sadly, an often overlooked travel destination. Its buildings are painted in bright shades of yellow, pink and blue, and its floors are decked out in mosaic tiles. Mazy old quarters burst with tales from days of yore. Lisbon exudes character that is in no way inferior to more popular European destinations. Baixa and Chiado The Baixa and Chiado districts are jointly

considered to be the historical heart of the city. Flanked by the Praca do Comercio, this part of Lisbon was completely rebuilt after a massive earthquake ravaged the city in 1755. Today, upscale boutiques, museums and alfresco restaurants serving local fare such as bacalhau (codfish) line the grid-like streets of Baixa. This district is a retail paradise and is sure to please shopaholics looking for bargains among well-known European brands. Chiado, which is located just next door, is also lined with several shops and restaurants, but is less touristy. Due to the city’s hilly geography, Lisbon, like Rome, has seven hills. The Alfama Traces of Portugal’s Moorish past can still be found in the zigzagging streets of the old quarter, while historic trams still ply its cobblestoned streets. The Lisbon Cathedral is also located here. Built in the 12th Century, this is also where some of the finest views over Lisbon can be found. The mediaeval Castelo de Sao Jorge, which overlooks the Alfama, serves as a great vantage point over the city’s historic sections. Belem A 30-minute tram ride away from the city centre, this neighbourhood is arguably host to Lisbon’s finest monuments, including two UNESCO World Heritage Sites. Belem was Portugal’s gateway to the age of discovery. It was from here that many notable explorers
set sail on their momentous journeys, including Vasco da Gama, Henry the Navigator and Ferdinand Magellan. Christopher Columbus also stopped here for a time during the historic trip when he discovered the New World in 1492. It was during this time that the Belem Tower and the Jeronimos Monastery were constructed. Built in a Portuguese, late-Gothic style, these structures have come to be the defining monuments of Portugal in the same way that Angkor Wat is to Cambodia and the Eiffel Tower is to France. A must-try when in Belem is the famous Portuguese egg tart. It is said to have originated in Belem, behind the stone walls of the Jeronimos Monastery, no less. Today, this succulent custard confection can be enjoyed at the Casa Pasteis de Belem, a bakery located next to the monastery which was said to have received the original recipe from the monks. A coffee shop is the last place one would expect to find wholesome, piquant Italian dishes or a French dessert such as crème brulee. Pasta J is truly a curiosity, and a refreshing surprise. The amiable John Chan, owner and chef, adds his personal touch to popular dishes and even has his own unique creations. One charming dish is The Bourdain ($7.90), homage to celebrity chef and food show host Anthony Bourdain, who loves everything porcine. This pasta dish has a tomato-based sauce with loads of bacon, premium cheese and herbs, with a serving of homemade pork sausage meatball. One wonders if Bourdain himself might give a stamp of approval. There are a number of dishes popular with repeat customers, including the Lemon Yoghurt Chicken with Spinach Cream Pasta ($9.90 to $12.90, depending on size of chicken leg) and the Muddy Mushroom Soup ($3.50). The Lemon Yoghurt Chicken with Spinach Cream Pasta comprises a whole huge chicken leg in a Greek-style yoghurt, paprika and lemon marinade, together with other “secret ingredients”. The pasta is served with a spinach cream sauce and a dollop of minced black olives. On the whole, it makes a satisfying main that is not too heavy.
The Muddy Mushroom Soup uses pressurecooked pork bone stock with the marrow and cartilage removed and thrown into the soup, resulting in a rich, flavourful soup with lots of collagen. Such richness and flavour equates to laborious preparation. Nonetheless, the crème de la crème, literally, is undoubtedly the Crème Brulee ($3.90). Moreover, this is one time you can actually play with your food. John allows customers to use the food torch to burn the sugar over the custard to melt and to caramelise it. After waiting about 90 seconds for the caramelised sugar to set, you can tuck into the lovely, creamy dessert. According to John, the Crème Brulee even has a French lady coming back for it. His regular clientele comprises mostly of executives and their families who live in the nearby condominiums and landed property.
There are also a number who have heard of his stall by word of mouth, and have come to check out his dishes. John says the response has been encouraging, since opening his stall just about three months ago. He says there are many customers who patronise his stall about three times in a week. This is quite a feat for someone who did not have a culinary background. Previously, John ran his own events business, part-timed as an MC, and was a part-time lecturer at a polytechnic. “I’ve always liked to cook for others. I only started cooking as a business late last year, when I started selling my pesto at fairs and markets, after a suggestion from a friend,” John explains. “Getting to middle age recently made me realise that if I don’t pursue my dreams now, I’ll never be able to do it,” he adds. As to why he chose to set up his stall in a small coffee shop off Moonstone Lane, near Bendemeer, he wanted a small space to try out and to learn, without too high a cost. He also felt that the area had potential in terms of customers, with the number of private apartments and companies. John also sells a number of his sauces, including his bestselling pesto sauce, Soooo Pesto! He says it contains 14 different premium ingredients including only the leaf of farm-fresh basil. W

If you love seafood, The Pelican Seafood Bar & Grill is definitely the place for you. Taking over the old Pierside Kitchen space at One Fullerton, you can sit by the river as you enjoy tucking into its generous portions of fresh seafood. Created by the new food group The Big Idea – the brains behind The Marmalade Pantry, Kinki and Fat Cow – it brings you a cosy and relaxed locale at The Pelican Seafood Bar & Grill. Keith Low, The Big Idea’s Chief Executive Officer, says, “We want to create a medley of bold flavours with freshness and simplicity in mind. He adds, “Our chefs aim to source responsibly for the best catch from around the world, and use timeless cooking methods to create dishes for sharing.” The best catch they did find, as I was blown away by their value-for-money Pelican Platter ($99) showcasing raw oysters, clams, crabs, a steamed whole Maine lobster and marinated conch salad. Every item is fresh and tasting of the sea. Being a seafood person, this is definitely my favourite dish on the menu. Other seafood dishes such as the Line-Caught
Swordfish Steak ($36) and the Baked Snapper Pie ($36) are also worth a mention. The pie reminded me of cold nights in London where you’d tuck into a filo-pastry pie with a warm inside. Be careful with this dish though, you’re likely to make a mess of the flaky pastry. Bar bites such as the Cod’s Tongue Casserole ($26) – it’s not really the tongue, but the cheek of the fish – was served with roast garlic and pork scratching, and the Rhode Island Fried Squid ($18) with olives, capers and banana peppers, is worth a taste as well. I like how the fried squid was coated in agedashi batter, making it light and chewy. Diners can also look forward to their extensive dessert collection, such as their Double Chocolate Whoopie Pie ($16). This decadent mousse-filled “pie” is bittersweet and not too cloying. Also, try their Lemon Meringue Mess ($14) if you like to have your dessert tart. The Pelican Seafood Bar & Grill also has a fullservice bar with potent cocktails. This is perfect for those working in the Central Business District, who wish to grab dinner and drinks on a Friday night. For an ultimate burger satisfaction, have a go at the Big Momma Thashini Ramakrishnan, a.k.a. Biula, the 17-year-old contestant of Asian Food Channel reality programme The Big Break, created this Big Momma Burger. The burger is sold at Mel’s Drive-In at Universal Studios Singapore until Dec 31. You can attempt making your own Big Momma Burger with the recipe, given here. INGREDIENTS: 2 teaspoons of mayonnaise 1 teaspoon of chilli sauce Minced beef 2 teaspoons of guacamole 1 teaspoon of chilli sauce 1 sliced tomato, salad and gherkins for garnishing 2 teaspoons of black pepper sauce 2 teaspoons of barbecue sauce Fresh thyme leaves Sesame seed bun Butter 1 slice of cheddar cheese Purple cabbage METHOD (PATTY): 1. Add black pepper sauce and barbecue sauce into the minced beef 2. Using a spoon, gently mix the sauce into the minced beef to incorporate them 3. Add fresh thyme leaves into the beef and mix gently again 4. With your hands, shape the patty to about 1cm thickness
5. Chill the patty in the fridge for about 10 minutes 6. Grill the patty. After 1 minute, rotate the patty so that grill marks can be formed 7. Flip the patty and repeat step 6 8. When the patty is almost cooked, place a slice of cheddar cheese on the patty METHOD (BUN): 1. Slice the bun into half 2. Grill the bun for roughly 30 seconds 3. Spread a little butter onto the bun TO ASSEMBLE: 1. Place one half of the sesame seed bun at the bottom 2. Add enough mayonnaise to cover the bun 3. Place a few slices of purple cabbage on top 4. Add 1 teaspoon of chilli sauce 5. Place the beef patty 6. Add guacamole on the patty 7. To top, add the purple cabbage and finish with a few slices of tomato 8. Sticky Toffee Pudding Asian Food Channel Chef Anna Olson shares with us her recipe, perfect for the Christmas holiday INGREDIENTS 1 cup of loosely-packed, pitted and chopped dates 3/4 cup of hot English Breakfast or Orange Pekoe tea 1/2 teaspoon of vanilla extract 3/4 teaspoon of baking soda 6 tablespoons of unsalted butter – at room temperature 3/4 cup of sugar 2 large eggs at room temperature 1 & 1/3 cups of all-purpose flour 1 teaspoon of baking powder Toffee Sauce 1/4 cup of unsalted butter 1/2 cup of packed dark brown sugar 1/4 cup of whipping cream 1/2 cup of raisins or lightly toasted walnut pieces 2 Tablespoons of brandy METHOD 1. Pre-heat the oven to 350°F. Grease 6 five-ounce ramekins or individual savarin pans, and place them in a roasting pan with sides higher than the baking dishes. 2. Place the dates in a bowl and pour the hot tea over top. Let the mixture sit a few minutes, then stir in the vanilla and baking soda.
3. In a separate bowl, beat the butter and sugar until blended, then add the eggs one at a time, beating well after each addition. 4. Sift the flour and baking powder over the butter mixture, and stir to blend. Add the still-warm date mixture and stir until evenly combined. Divide this evenly between the prepared dishes. 5. Pour boiling water around the ramekins to half the height, and cover the entire pan with foil. 6. Bake the puddings for about 30 minutes or until the cake springs back when gently pressed. Remove the ramekins from the roasting pan, let them cool for 10 minutes, then turn them out onto plates and serve warm with toffee sauce. Toffee Sauce 1. Melt the butter and brown sugar in a sauté pan over medium-high heat until mixture starts bubbling. 2. Stir in the whipping cream, add the raisins, and return to a simmer. Add the brandy (taking care in case it ignites). 3. Spoon this over the steamed puddings, and serve warm.

The Sushi Bar is a cosy Japanese eatery snugly tucked in a lively corner of Far East Plaza. The young crowd of fashion, beauty and knickknack shop patrons add a youthful buzz to the area. Having opened on Nov 2, The Sushi Bar is barely out of its infancy. Yet, it is obvious that many of its customers are regular or repeat customers. One can tell by customers’ familiarity with the menu, as well as with the chef. Chef and co-owner Eugene Heng, 27, says The Sushi Bar is a place where he hopes patrons can
enjoy truly good Japanese food over drinks and conversation, at an affordable price. The Sushi Bar more than lives up to its ethos, as evidenced by the number of repeat customers. He says the majority of his regular customers are the shop owners of Far East Plaza, as well as yuppies who work in the vicinity. The Sushi Bar’s most popular dish is its Salmon Aburi Roll, which is a variation of the California roll, topped with
salmon, and cod roe sauce, and flame-torched. This is a must-try. Their signature dish will bring you to ambrosial heaven. Nonetheless, Chef Eugene says their best dish is probably the Scallop Mentaiyaki. This consists of thinly-sliced scallops topped with cod roe sauce and flametorched. It is bound to tantalise your taste buds, and works well as an appetizer. Here, customers can easily communicate with the chef to find out more about the food. In fact, when he is not too busy, the affable Chef Eugene makes sincere effort to chat with his patrons to find out how they find the food. “As long as you prepare the food with your heart, and in your mind you want to serve the best you can to your customer, somehow your customer will feel your intention,” says Chef Eugene. After National Service (NS), he enrolled in the At-Sunrice Culinary School. It was his first taste of the culinary world. Since then, Chef Eugene has worked in a number of professional kitchens, with various cuisines, including in a prominent MediterraneanItalian restaurant. “After doing Italian, French and Japanese cuisines, I feel most comfortable doing Japanese. Most of the food in Japanese cuisine is very simple yet so delectable,” he explains. As it aptly says on its Facebook page, “No pretentious setting, no jacked-up prices. We want you to enjoy the food and feel comfortable!” You can be sure you can at The Sushi Bar.

iT IS An innate, human response to want to multiply joy and divide pain – simply put, joy shared is joy multiplied and pain shared is pain divided. Adorable seven-year-old Ashley Ann Tan, a young artist who will be holding her debut exhibition at the Nikei Fine Art Gallery, fully understands this simple formula for happiness. Part of the “Joy Forever: A Christmas Surprise from Nikei” exhibition, the exhibition aims to spread the joy of the festive season along with fundraising for Singapore Children’s Society. A big heart belies her little frame. Ashley is the only artist who will be donating all the proceeds from her paintings to Singapore’s Children Society. This talented darling was the one who had taken the initiative and spontaneously offered to do so, for all the underprivileged children. Ashley shyly says, “I think this is a good way to help others. There are many children in Singapore who have much less than I do, and I would like them to be happy this Christmas.” With her pure spirit, the inspiration for her beautiful paintings is the bright colours of nature. With scenes of large scarlet blooms against lavender sky,
intricately patterned butterflies with smiley faces and a cluster of spotted toadstools, her paintings are reflective of Ashley’s bubbly personality. Ashley says, “Painting always makes me very happy because I can use different brushes to paint and have so many different colours to choose from. I can copy insects, animals and flowers and also other things I remember from daily life or from travelling with my parents.” “It makes me happy to be surrounded by lots and lots of flowers, with butterflies around them. Cute animals also make me smile, and of course if younger children than me are happy!” she enthuses. Ashley hopes Singaporeans will care enough to help spread the joy this festive season. She says, “Please come to see my

Admit it. You’ve passed on at least one gift to another person before in your life, sometimes you’ve even been caught and then you feel like dying from the embarrassment. There is nothing wrong with regifting but just like any other naughty matter, make sure you don’t get caught. Regifting is a delicate artform that require meticulous cover up skills and a good memory. Some may say it’s a major faux pas as the gift doesn’t come from the heart. That’s where they are wrong, I think it is equally timeconsuming as you wrack your brains thinking of what the person might like before you
Keep labels on gifts If you realise you have something you don’t need or want after unwrapping it, stick a little note on it with the date so you remember who and when this was given to you. That way, you avoid the mistake of giving the gift back to the person who bought it for you or circulating the gift within the same circle of friends that could result in subsequent embarrassing situations. Watch out for monograms Some people actually take the time to personalise a nice little gift for you with your name and a message. Make sure the item you intend to regift has none of those markings. Now that would just be in bad taste. Good condition only Items that are in good and unopened condition can and should be regifted. Think of it as reselling your pre-loved things on eBay or Amazon. People only buy secondhand things in a good condition. Same rule applies to regifting, it’s just that you’re upping the ante a bit more as the item you are supposedly giving is brand new. Always repackage Do not reuse old wrapping paper for a regifted item. Some wrapping papers have dates or years on them such as “Christmas 2011”. You’ve already saved money on an actual present, spring for some brand new wrapping paper. All it takes is a little common sense, a dash of sneakiness and some knowledge of the person you’re getting a gift for. Happy regifting this Christmas!

Origins of Kleenex Kleenex was first invented in America by the KimberlyClark Corporation in World War I when they patented Cellucotton, a cotton substitute derived from trees. Thomas Wee By Cheryl Chia I attended Thomas Wee’s special couture presentation, “Austere”, last week and I was immediately struck by the simplicity of it all, which was a breath of fresh air in an haute couture show. “Stripped bare. That’s what Austere is about. People always think that haute couture has to be so full of opulence or embellishment? Spending 400 man-hours sewing a single gown doesn’t make it haute couture,” says Thomas. After almost 40 years in the business, Thomas Wee was “surprised” at how many people turned up to watch his showcase at Fide Fashion Week. Among the audience was a smattering of French designers, local celebrities and Japanese designer Kenzo Takada. “When I went out to the foyer before the show, I didn’t see many people and I thought no one came! With all the lights on the runway, I didn’t realise how many people

there were in the audience,” he says modestly. To this day, Thomas doesn’t regard himself as a “couturier”; he calls himself a “clothes engineer”, and loves the process of how cloth becomes clothes. “I don’t believe in having themes. My design direction is based on innovation and the engineering process. I always ask myself, ‘What would I like to see in a show?’ I don’t want to show people things that can be seen in the store! I believe in minimalism with maximum impact,” says Thomas passionately. Maximum impact he achieved indeed, with the closing piece of Austere – a long, white jacket that opened to reveal a bright chartreuse lining and a red column dress with a sparkly belt. “Did you know that that piece at the end was quite reluctantly put in the show? The final gown is always the element of surprise. It is a breath of antidote for that final punch. I opened with a red

For young budding designers, Thomas, an ex-Nanyang Academy of Fine Arts (NAFA) lecturer, has this to say: “Remember that your customers do not walk with their back facing towards the wall. it up as all you need is your legs and a pair of shoes, because you can run anywhere,” says Gary. He reiterates that the only cost of the sport is for a pair of good shoes. This minute investment has reaped exponential rewards, as Gary says athletics has taught him resilience and the ability to handle pressure. “Sometimes you train so hard, and the results are not showing, it just means you have to work harder,” he says. It is also evident that he has developed a positive attitude in everything. He further adds, “It is tough making your way to the top, but it is worth it. Along the way, there are teammates, friends and family who will help you, and these are the people who are the most important in your life.” As for personal tips for runners, Gary has one piece of advice from his experience. “Sometimes, running with all your might does not mean you are running fast; running relaxed is the best and most efficient way to go,” he advises. With glory behind him and glory in front, he has only one tiny regret. “Perhaps, I could have been more serious in training when I first started out,” he shares. Nevertheless, we can be sure to expect even more greatness from this shooting star.

Today, Gary Yeo, 26, is an accomplished sprinter with the national team. His achievements include having broken the 4x100m record three times, two silver medals in the 4x100m in the SEA Games, and an individual silver medal in the 100m in the SEA Games. This achievement is quite a feat, considering that he only started in athletics in secondary school because his classmates were in athletics and he wanted to join them. “It is easy if you start from young. As your standard gets higher, the work required gets tougher,” says Gary. His progress was evident by the time he was 18, when he represented Singapore in 2004. Unlike with many athletes, fear has not been on his mind when he competes against international rivals. “That is when I feel that I worked hard and I finally have the chance to run against them,” he says. The last athletics meet that Gary and the team took part in was the Malaysia Open in October. According to Gary, the team performed to expectations and won

the competition. The Singapore Athletics team had a six-medal goal haul. Gary says that their success is an encouraging sign. The next challenge for the national athletics team is the ASEAN University Games, starting on Dec 12. Gary says training is “as per normal” and that they are, right now, in the final phase of training and preparation. Further down the road, Gary is gunning for medals for the relay team in the next SEA Games, the Asian Games, as well as qualification for the Athletics World Championships in 2013. He admits that all these would not be impossible if not for the opportunity given to him by his parents. “My parents are supportive, in the sense that they have always allowed me to pursue my own dreams,” Gary explains. Likewise, he encourages young people to pick up sports or athletics if they have the interest. “For those who are interested in sports, it is actually easy to pick
