This week we take on Shinya Aoki, the “Most Dangerous Man in Mixed Martial Arts”, to sniff out his game plan for the One Fighting Championship next Friday By Cheryl Chia

hinya Aoki’s game plan usually involves breaking his opponent’s arm while trying to take him down, earning him the title of “Most Dangerous Man in Mixed Martial Arts (MMA)”. Shinya Aoki is a Japanese mixed martial artist, grappler and former police trainee, who is currently competing for the One Fighting Championship (One FC) lightweight title against last season’s winner, Kotetsu “No Face” Boku. He is best known for his flexibility and submission skills – often taking opponents by surprise – earning him the nickname Tobikan Judan, meaning “grandmaster of flying submissions". Speaking through his trainer, Chatri Sityodtong, we get into the mind of this prize fighter. Do you favour one style of fighting over another? Brazilian Jujitsu. (Chatri: Shinya is known for being the best grappler in the world. He’s like a python in taking his opponent down.) What’s the game plan for April 5? The game plan is to take him down and submit him. “No Face” knows what he’s going to do. He’s going to knock me out, and I am going to knock him out. There is no pretence here. Is it different training in Singapore as compared to Japan? In Japan, I had to go to many different gyms to learn all the different martial arts. Here, it is all in one place, which is much more efficient. Everything is planned out and I don’t waste time.

and that was when I got interested in MMA. I was 20 years old when I got into it for real. Since then, I have obtained a black belt in Judo and Brazilian Jujitsu. Do you prefer the Japanese rules of One FC compared to the American UFC? I definitely prefer the One FC rules. It’s more like fighting. The American one is more like a game. Describe a typical training day. I train six days a week in two intervals. Between 9am to 11am and then 2pm to 4pm. In the morning, I usually practice with Heath Sims (six-time US wrestling champion), focusing on wrestling and submission. In the afternoon, I practice striking, boxing and Muay Thai. If you could fight anyone, who would you choose? Anyone and everyone. I am a warrior. What is the real Shinya like outside of the ring? I am an average, normal human being. I know I have a bad boy image but, despite all that arm breaking, I am just a normal person. (Shinya is married with a child.) Should people be afraid to approach you for an autograph? Of course they shouldn’t. [laughs] No problems there! W

What is your most embarrassing moment? I’m sorry; I’m not familiar with

Beyond the wooden door Newly established restaurant Fordham & Grand goes for a speakeasy look for a quiet night out By Cheryl Chia Contemporary Australian cuisine bistro Fordham & Grand is on Craig Road, along a row of shop houses. If you are as blur as I am, you’d walk past the wooden door twice before you find it. The 45-seater bistro and bar is a cosy and intimate setting, perfect for a date night out without the kids. Open from 6pm to 3am daily, you can come here at midnight for a snack if you wish. Their chef has honed his skills at restaurants such as Joel Robuchon and Santi. Owners Timothy Lim and Tron Young based Fordham & Grand on a street intersection in the Bronx, which is one of New York City’s most colourful areas. “We liken the vibrancy of this street to the way we run our first establishment – with verve and passion. We also love how the name sounds and rolls off the tongue,” says Tron. If you love bouillabaisse, Fordham & Grand does a great Fish Broth with Seafood and Garlic Toast ($17). The heady smell of the sea paired with the
garlic toast made for a comforting bowl of soup on a rainy day. Try their Salmon Tartar with Mustard and Honey Balsamic ($16) to start. Their Green Pea Risotto with Zucchini Flower and Parmesan ($24) was a brilliant twist with green puree, crispy fried zucchini flowers and grilled zucchini slices. If you are hankering for a bangers and mash of sorts, partake in the Glazed Chicken with Pork Sausage and Mortar Potato ($26) – a plump Kurobuta banger and savoury-sweet glazed chicken thigh fillet with a generous serving of potatoes. Fordham & Grand has tempting desserts such as French Toast with Dark Rum Sabayon ($15), in which the sweet brioche bread is soaked with egg, cream and sugar, baked and then brulee-d with sugar and served with dark rum sabayon, vanilla ice cream and chocolate sand. This is definitely the most incredible pain perdu I’ve ever tasted. The bistro also has a fullystocked bar with cocktails and

signature treats served in unique ways. Le Café Cocktail ($16) looks deceivingly like a cup of coffee but is really a frothy concoction of Courvoisier VS Cognac, port wine and egg yolk with cognac and grand marnier jelly that resembles sugar cubes. Men who love pina coladas can drink them in peace here, as it comes cunningly disguised in a beer mug. No comments about drinking ladies’ drinks will be made. Fordham & Grand also has a supper menu from 10.30pm to 2am.

The highlight of the restaurant menu is undoubtedly the Segovian Style Roasted Suckling Pig with Lemon Puree. Its skin is crisp and tantalising, while the meat is tender and juicy. It is so soft that a plate is used to cut it. It tastes highly different from the Chinese style that many would be used to. There is also the Suckling Pig Tapa in a smaller portion. Comprehensive Wine List & New Cocktails A comprehensive wine list and revolutionary cocktails are the pride of Catalunya’s beverages.

Catalunya’s Reverse Gin Tonic is also fruity, light and refreshing. It is a signature drink that is even bottled. Try the signature dish of Ipoh at the newly-revamped Chinatown Point By Cheryl Chia Craving a comforting bowl of Ipoh hor fun with boiled kampong chicken? Give Ipoh Lou Yau Beansprout Chicken a try at the spanking new Chinatown Point. “Nga Choi Gai” in Cantonese, this chicken chain by the Select Group only chooses chickens weighing 1.8kg and above, to ensure a meaty meal. They also import their hor fun and beansprouts directly from their source in Ipoh. The beansprouts in Ipoh are grown with spring water instead of tap water, which results in a plumper and crunchier sprout. Jack Tan,
executive director of the Select Group Limited says, “Malaysia is a treasure trove of humble culinary delights whose simplicity touches the heart, and the beansprouts chicken of Ipoh is one such dish. Like the name suggests, I hope that Lou Yau (“old friend” in Cantonese) can bring the authentic dish made from the freshest ingredients to all, just like an old friend would.” The free-range kampong chickens are boiled in broth to increase the juiciness of the flesh, then simmered and submerged in an ice bath, which seals in the
juices and gives it a glossy sheen. We especially like the “dry” Ipoh Hor Fun, coming in a bowl of black sauce and garnished with fried onions and chives. For the soupy one, the smooth hor fun glides easily down the throat. A one-person set goes for $6.90 with hor fun, chicken and beansprouts, and a whole chicken for $39.00. Here’s a quick and absolutely top-secret recipe that sustains all alien life outside of Earth. Oh you earthlings are so primal, it kills us. Ingredients • 1 piece of green cytoplasmic weed • 2 slices of yellow jelloid capsaicin • 2 large white shells from a non-flying identifiable object • 1 tablespoon of white life essence • 2 slices of red fungus from the forests of Efor [the planet just beyond the Milky Way]
Method 1. Collect the green cytoplasmic weed from the rivers of the planet near our nearest Black Hole. Blast off the remaining necroids with your laser gun. Those are poisonous. 2. Put them out on a cylindrical disc. Place the yellow jelloid capsaicins on top of the green cytoplasmic weed. 3. Hunt for the white shells from the elusive Poultry of Ework. When you find it, probably nesting in the Ork Mountains, grab the shells and return. This time, boil them with your laser beam to kill the embryonic life within before consumption. 4. Go to the forests of Efor; pluck the reddest fungi you can find. They are usually in season from the fifth to the sixth elements of time. Slice both into half. 5. Go back in time to find the ancient white egrets of yore, from when birds first evolved into being, and squeeze its birdlike udders for their life essence. Dot them nicely on top of the red fungi. 6. Assemble them in the right order. They should resemble forest mushrooms of the primeval days. 7. Inhale them through the brain stem. 8. Ingredients • 300g of clams • 50g of Miso paste • 20g of garlic • 50ml of white wine or sake • 5g of Wakame seaweed • 50g of salted Ume (Japanese plum) Method 1. Heat up some oil in a wok. 2. Add in minced garlic and Miso. 3. Add in clams and de-glaze with white wine or sake. 4. Cook the clams until they open. 5. Lastly, toss in the seaweed to finish. planet Earth” Crop circles have long baffled scientists and sci-fi enthusiasts. Our reporter speaks to an alien who has just landed in Singapore. This is what he/she/it shared with us By Chia Hui Jun

y spacecraft has just landed on Earth. Not much is known about my species but I hear that we look intimidating to the human species. I came to see those elaborate, circular patterns created on crops such as wheat and barley when they get flattened. Earthlings call them ‘crop circles’, or ‘crop formations’. In case you belong to the ignorant portion of the general populace of Earth, to inform you, there are about 26 countries having reported almost 10,000 crop circles in the late
20th Century. Most of these crop circles occurred in Southern England, near monuments such as Stonehenge. These crop formations are simply created when parts of the crops are tamped down but other parts are left intact. The edges are clean, and some consist of interconnecting geometric shapes. Humans have been puzzled by how these are done without any marks left by their makers, all within one night. Earthlings are a curious and amusing bunch. They have many explanations for this phenomenon, ranging from weather changes, folklore, UFOs (that’s us!), top secret military experiments, hoaxes, earth-bound microwave, lasers, GPS, and even marsupials which run in circles when they get high on opium-laden poppy fields. I know who the ones who are trippy are. In 1991, pranksters Dave Chorley and Doug Bower took credit for them, saying that they’ve been creating crop circles since 1971 by using wooden planks and barrels. I heard that a researcher in Oregon said that GPS monitors are used to place the shapes, and magnetrons (tubes using electricity and
magnetism to generate high heat) cause the crop stalks to fall over at high speeds. Now, a historian from Tasmania is saying that crop circles that were present in 1945 prove that crop circles are not a modern hoax. These humans really can’t make up their minds. It’s obvious who the superior life form is. Some say the sheer size and geometric precision of these crop patterns can only be made by us extraterrestrial species, or alien spaceships. Well, my spacecraft did kind of flatten a few things when I landed... A cottage industry has emerged around the circles, with clubs and books devoted to the study of crop circles. Archaeologists, physicists, and researchers have been baffled by crop circles for ages. Haha, sometimes it is amusing looking at human beings scramble around like confused ants. In the early 1990s, a UK arts collective named Circlemakers created crop circles for artistic purposes, and for commercial clients as well. Aeronautical graduate students from MIT also have duplicated it, and there has even been a crop circles competition. What will these humans think of next? In other parts of the world, we have publicly indicated our presence, such as in this tiny country called Singapore. In 2007, we sent bursts of green streaks across the skies, with a blue and light glow. Truth be told, that incident was more of an engine malfunction. Nonetheless, predictably, the president of the Astronomical Society of Singapore issued a statement saying that those were actually meteors which were a hundred times brighter. I know who the Men in Black have gotten to. Frankly, humans are taking up so much space in the world. Many of them think that our purpose is to get rid of them and to dominate their world but, in fact, we are a peace-loving species. We simply desire to co-exist peacefully with humans and share public facilities. The concept of a flushtoilet is alien to us. I will soon be taking my findings back to my home planet but maybe I’ll leave my mark on some crop circles too before leaving. W
*Where to try to spot an alien In case you didn’t know, aliens do normal human things like go on dates too! One of the best places to meet single aliens is the newfangled Marina Bay Sands. We love the rocket-shaped part on top of the three towers, and the powerful beams of light emanating from the three towers can reach outer space. That’s one of the ways we gather data from Earth. However, top secret information is encrypted, and transmitted by wavelengths that even the most sophisticated of devices cannot detect. Yes, I know, we are cool that way. Other great alien hangout places also include satellite stations, what you call the new Supreme Court [which is actually a spacecraft] and Fort Canning, where there are a lot of secluded spots. Hey, we get frisky too. Unknown to Singaporeans, one of our hidden colonies is underwater in MacRitchie Reservoir. We often gather there together to keep ourselves from missing our watery home. What stops us from being spotted and hence terminated, is our ability to mimic human beings. It is amazing, though, how no one finds people who walk around fixated by their electronic gadgets abnormal. Many of our motherships - these huge circular discs with armourlookalike exteriors - have already landed in Singapore. Some of us go for tours to get to know this planet better. I’ll probably take one of those quaint Duck Tours soon. In fact, that is where many alien couples meet. *This story is part of our April Fool’s Day content.

"I wanted to bring my own version of menswear and my own vision to the industry" he says. Located in a shop house in the city, you feel a posh air upon entering but the friendly Han San will put you at ease. Most people think running is simple and that they know everything about it. Here are some running tips and things you may not know By Chia Hui Jun road moves under your feet. There are advantages to training outdoors. The training environment is harsher and more varied, increasing one’s fitness level and allowing one to adapt to different weather conditions.
Running 150 minutes with moderate intensity in a day reaps almost the same health benefits as running 30 to 45 minutes five times a week, research shows. This defies the myth that running has to be frequent in order to reap health benefits. What does moderate intensity mean? Being able to speak short sentences comfortably while exercising indicates moderate intensity, says Dr Ong Joo Haw from the Sports Medicine, Orthopaedic Surgery Department in Khoo Teck Puat Hospital. Types of Running One can choose from a few different types of running – recovery runs, base runs, long runs, and progressive runs. A recovery run, also known as jogging, is a relatively short run performed at an easy pace, while a base run is a relatively short to moderate-length run done at a runner’s natural pace. Triathlete Mok Ying Ren recommends that joggers keep it easy and allow their bodies to determine the pace. “Leave your
watch behind and look around at your surroundings,” he says. Progressive runs, or tempo runs, are slightly faster than a runner’s natural pace. For example, select a loop course such as at Bedok Reservoir, warm up for 15 minutes, and then run two to three laps around the loop, going faster with each lap. On the other hand, a long run increases raw endurance and lasts long enough to leave a runner moderately to severely fatigued. Those who are training for races can vary their distance and duration accordingly. If you are training for a marathon, run for two to three hours comfortably at an easy pace; for a 10km race, runs of up to 60 to 90 minutes would suffice. “Vary the distance and duration of the runs, running speed, frequency of sessions and the terrain’s incline, as these build running speed, endurance and tolerance for hilly conditions,” says Dr Ong. Ying Ren says that treadmill running removes the wind factor, and less effort is needed as the
Routine and Technique If you want to start a recreational running routine, Hollie Avil, a coach at MetaSport, recommends starting with 15-minute base runs to get used to the feel of running before building it up slowly over time. After that, you can begin progression or other types of runs.
