I’ve walked past Octapas countless times at Clarke Quay but I have never tried the food until the launch of the new menu and, I must say, it is not bad. With live music, sangria, food, and with the restaurant overlooking the Singapore River, the ambience of Octapas makes for a great chill out venue after work. Inspired by Chef Javier Lecumberri’s – who hails from San Sebastian, Spain – life in the Basque county, the Bay of Biscay menu serves up rustic Northern Spanish treats. The Lubina en Salsa Verde ($17.50) features sea bass with a flaky texture, seasoned with sea salt and pepper, swimming in salsa verde sauce with two pieces of mussels sitting atop the fish. I liked the Pechuga de Pato ($20), a Basque take on the Pechuga de Pato

French duck l’orange. The tender pan-seared duck was complimented with a citrussweet orange sauce with orange peel garnish. Thumbs up on this one. The Calamares en su Tinta ($15) was a bit of a disappointment. I was particularly looking forward to this calamari dish in squid ink sauce but the squid was overdone, resulting in a mushy texture. Perhaps that might have been a one-off error. The Valenciana Paella ($40-$60) is huge and can easily feed a table of four to five people. They also have an extensive tapas menu that includes Calamares a la Parilla ($16) – grilled squid with lemon juice and Berenjena Tostada ($9.50). You can also satisfy your sweet tooth with Churros Con Chocolate ($10) – fried Spanish crullers with chocolate sauce on the side. I liked that one but I was disappointed with the absence of cinnamon sugar on the churros. Although there were hits and misses, altogether, Octapas is still worth a try. The first thing you might notice when you enter inITALY Bar Ristorante is the mural sketches on various parts of the walls. These sketches of olive trees and such, by the chef’s wife, conjure up the impression that you are truly dining in a restaurant in Italy. InITALY is an expression of Chef Mario Caramella’s personality and culinary tastes. Prior to this, most recently, Chef Mario was Chef Patron of the award-winning restaurant, Forlino. InITALY’s menu is a showcase of the classic cucina Italiana, or Italian kitchen, with Chef Mario’s personal touch. A great start Our day was already made perfect when we started our authentic Italian gastronomic

experience with a bowl of Raspadura ($7) – finely-shaven Lodigiano cheese flakes. The slices are shaven so thinly, the cheese almost melts in your mouth. It was already a promising start, with one good thing after another. The Gnocco Fritto (Italian beer bread) with Salsa Verde (both at no cost) freshly made with herbs, lemon juice and olive oil, was both chewy and crispy at the right parts and whet our appetite for more good things to come. This pleasing snack was followed by Cous Cous alla Trapanese ($26), a tasty cous cous salad with raw Sicilian tuna and citrus vinaigrette. To call it a cous cous salad doesn’t do it justice. The flavours were nothing short of ambrosial and sent us on the way to Italian heaven, though we had just started. This is my second favourite dish of the day. Though other dishes had been served, like a husband returning home to his wife, I kept going back to it. Perhaps that’s why cooking is so important to Italian families.

Traditional Classics & New Takes Fresh from the oven came the classic-looking Crostino ($20), of thin focaccia with melted Taleggio cheese, prosciutto, black olives and radicchio tardive (a European herb vegetable). The prosciutto (cured Parma ham) is also finely shaven. Each bite has just the right dose of flavour. If each dish was an everhigher level of heaven attained, the Crispy Duck with Pistachio Sauce ($38, off-the-menu special) must have been the crescendo, or seventh heaven. The pistachio sauce, pumpkins and raisins perfectly complemented the tender duck confit. This is not on the menu, so be sure to ask for it. With all the rave reviews Chef Mario has been getting for this dish, including from us, he is fairly convinced that he will have it on the menu in the next change. For a Grand Feast The Gran Bollito ($28) was another interesting and flavourful dish that is traditional mixed boiled beef, veal, pork, chicken, veal tongue and vegetables. This

is the trend now." Atypical from Peranakan cuisine that’s served in floral china and porcelain bowls, the clearly Western minimalist take on the serving style helps give the cuisine a fresh update. The Buah Keluak Pasta ($23) infuses the earthy decadence of the buah keluak with mouthsearing slices of chilli padi that cut through the richness of the buah keluak. The Chilli Crab Pizza ($27) marries meaty shreds of crab with mozzarella cheese, with a hint of heady chilli crab paste on a thin crust. It has already been voted the most popular dish on the revamped menu since its launch. We had two slices of it just to put out the fire in our mouths from the pasta! Only because we bit into a chilli seed. If you like spice, the chillicoated Sambal Eggplant ($9) features soft and chewy eggplants sitting in a sambal stir-fry which is great with a bowl of steamed white rice. The Spicy Winged Bean Salad ($11) also known as kacang botol, comprises raw slices of winged bean tossed in sambal belacan sauce - lime juice, dried prawns and sugar. Julienned raw shallots and dry fried grated coconut called kerisik complete this old time dish, if you’re craving for traditional fare. Contemporary to Classic Inspired by her trip to the United States of America, the Chicken Tenders with two dips ($15) are

Chef Mario’s modern take on this scales it down to individual portions, and it is served with a selection of parsley sauce, sweet and sour tomato sauce, chutney and horseradish. If this is still not enough for you and your party, you can order the Beef Fiorentina that comes in a portion for four to five people ($258). This imposing signature dish consists of oven-roasted 1.5kg of select Porterhouse Rangers Valley Angus Beef with sautéed porcini mushrooms, peperonata, crushed potatoes and rucola salad. This grand dish will make it a feast fit for a king. Wines from Piemonte “Italian food goes with Italian wine, not water,” stresses Chef Mario. To that end, Chef Mario presents his own ‘Caramella Selection’ range of wines, to perfectly pair with his cuisine. Each wine hails from the private harvest of boutique wine growers in Piemonte, Italy, and is personally tasted and selected by Chef Mario before being bottled. Chef Mario’s initial portfolio encompasses five quintessential Piemontese wines: Barolo, Barbaresco, Nebbiolo d’Alba, Dolcetto d’Alba and a Moscato d’Asti. I was particularly happy with my glass of Moscato d’Asti 2011 D.O.C ($12 per glass, $68 per bottle), which is sweet and aromatic, with great balance. We catch up with the founder of 2am:dessert bar and 2am:lab, Janice Wong, on her recent endeavours at the World Gourmet Summit By Cheryl Chia Chef Janice Wong burst into the culinary scene in 2005. She has since blossomed into a successful chef and entrepreneur with her brand, 2am. Janice's inventive desserts are applauded by some of the world’s most celebrated chefs, from French chocolatier-patissier Chef Pierre Hermé to Spanish chefrestaurateurs Chef Juan Mari and Chef Elena Arzak. The sole female chef at the 2013 World Gourmet Summit, she created edible chocolate outfits for the Hearts On Fire Edible Fashion Show. When asked if she is amazed by her achievements, she modestly shakes her head and says, "When I was 22, I had a dream and I risked everything to keep creating without reference. I just keep going and do not look back.” When I spoke to Janice in 2009, she spoke of starting her own cookery school. In 2011, she made it happen with 2am:lab. Janice is in the midst of updating her 2am:dessert bar menu with a new dessert inspired by her travels to Japan.

She also serves Hamburger and Fries ($25) with juicy Angus beef patties, her own homemade onion relish, Gruyere cheese, arugula and mushrooms, which will leave you hankering for more. The Chicken Lemak ($21) would hit the spot if you love your rendangs and your curries. Classic Peranakan treats of Kuay Pie Tee ($18) and Tauhu Goreng ($13) are also available on the menu. sweet endings If you like your desserts rich, try the Kuay Bengkah ($9), a dense

tapioca cake with coconut milk drizzled with gula melaka, and more coconut milk. It reminded us of a thicker version of the Filipino bibingka, a rice cake with grated coconut. We’d suggest sharing this one. It’s a bit jelat. The Leche Flan ($9) – Violet affectionately calls this the “leceh” flan, a play on the pronunciation of leche (lay-chay), a Singlish word for troublesome – a Mexican custard dessert topped with red fruit, is also a must-try. The Tiong Bahru area has been hyped to death, I know. But this 4,000 sq ft bar on Seng Poh Road comes complete with 400 different types of beer, wine and champagne. Tiong Bahru Bar (TBB) opened last year on Christmas Eve and has developed a relaxed and minimalist vibe, compared to the zi-char stall that first inhabited the space. TBB was started by Chris Chong and Kaz Sajimin, both with a strong background in the business. They wanted to create a place for friends to catch up. Chris says, “We wanted a place that friends and their guests would find comfortable, a place where they can chill for hours on end, a place where they would feel at home whether they come in their t-shirts and berms or their power suits.” Apart from being a watering hole, it also serves an extensive menu of mains and bar food. They serve tapas such as the Chicken Croquettes ($8), creamy béchamel, potato and chicken-filled croquettes with aioli, and the Chicken Wings ($12), deep fried to a crisp and paired with a mouth-searing chilli sauce. You should try these. If you prefer seafood, their Garlic

We also loved their Magic Fries ($8), shoe-string fries covered in a secret blend of house spices, which also comes as a side dish with most of their mains. Their Wagyu Burger ($28), however, was a disappointment as the meat was overdone, resulting in a dry and crumbly patty. The King Prawn Pasta ($18) covered in spicy tomato sauce tossed with king prawns and bell peppers fared much better. The prawns were succulent and tasty. If you are very hungry, order the Seafood Paella ($38) for that carb fix you need.

The extensive bar also has a large range of house mojitos; we loved the Blancito ($14), a classic mojito laced with French beer Kronenbourg Blanc. The clean and floral taste cuts right through the sweetness of the mojito. Order a couple of these during happy hour for a mere $10. TBB has other special mojitos such as the Granny Smith Mojito ($14) and a Mix Berries Mojito ($14). Happy hour starts daily from noon to 7pm. Absorption and functions CoQ10 occurs within the body in two chemical forms - oxidised (ubiquinone) and reduced (ubiquinol). Most people can utilise CoQ10 in its oxidised form, although it is possible that the bioavailability (the extent to which a substance is taken up by a specific tissue or organ after it is administered) and absorption may be greater with the ubiquinol.
