Jamie’s first priority is her child and family

Jamie Yeo has been on our television screens and radio airwaves almost since she graduated from studying Mass Communication in Ngee Ann Polytechnic. Many still remember her from her role as Tammy Tay in the nostalgic TV drama, Growing Up. Jamie’s popularity further grew when she hosted Football Crazy on ESPN. She undoubtedly made many men hot under the collar. Being an old friend, Jamie reveals a little about her life and raising a baby. What has been going on for you, apart from hosting your show on Power 98? I’ve been hosting a show by TTV, which is a half-an-hour TV show packaged for 4 and 5-star hotels in Singapore, introducing the sights and sounds of Singapore to hotel guests.

How did your strangest request go? “Dear Jamie, please play me a song or else I’ll kill myself.” Which song would you sing in the bathroom? I would sing whatever song that is stuck in my head. Usually, something I just heard on the radio. Anything by Coldplay, usually. But, just the other day, I caught myself singing “As Long As You Love Me” by Justin Bieber. Which is your favourite break-up song? “Time of Your Life (Good Riddance)” by Green Day. That’s how one should look at it at the point of breaking up. It’s just another turning point in life. A “fork stuck in the road”. Let’s move on. Hope you had the time of your life. What makes you happy? My daughter, Aly. Every day is precious and full of joy as I watch my little girl grow up. Every new word she learns, every new sentence she utters, every new expression renews my faith in God and my hope for the future. How do you handle being a DJ, TV host and mother at the same time? What challenges do you face? Not many [challenges] now that Aly is older. She’s two and a half. I’ve got a very competent helper and a very helpful set of parents who are always willing to look after Aly. Having gone through various life and work experiences over the years, how different is your perspective on life now? My daughter definitely comes first above everything else. It’s all about making sure I spend quality time with her now. But, of course, work is still important. I love what I do and have done this for as long as I’ve been an adult. The job pays well and I’m passionate about it now as I ever was. Which famous person, living or dead, would you love to host a show with? I would love to host a show with Ricky Gervais because he’s brilliant and would just be such a laugh to work with. Plus, he’s highly intelligent, which is something I appreciate in a man. What new or upcoming project might you be involved in? At the moment, it’s all hush-hush as it’s not really confirmed but there might be some TV work and an Internet business venture in the near future.

Few Egyptian pharaohs have captivated the world – or been as shrouded in mystery – as King Tutankhamun. 3,000 years after his rule, the exact circumstances behind his death remain unclear. Ultimate Tutankhamun investigates 90 years’ worth of evidence to offer the most comprehensive picture of an iconic Egyptian pharaoh. BEYONCE Needless to say, Beyonce’s success has overshadowed that of her former partners in crime. Kelly Rowland, in her new album, Talk A Good Game, addresses the issue in what has to be her most controversial tune yet, “Dirty Laundry”. Kelly breaks open Pandora’s Box in this track, starting with her jealousy of Beyonce’s success, and culminating in her experience of being in an abusive relationship – it seems like she’s taking tips from Taylor Swift and Demi Lovato, releasing her emotions through her songs. Despite her admission of jealousy, she’s still close to them, with all three reuniting on the track entitled “You Changed”. The trio took the stage together at the Superbowl this year. BACK TO R&B With this album, Kelly revisits her R&B roots. Notable tracks include the first single, “Kisses Down Low”, which is her most successful single yet, and also the most explicit. Be warned, in case your kids start asking: “Mommy, what does that mean?” I really enjoyed the groove on “Street Life”, which features Pusha T. and was written and produced by Pharrell Williams. That’s not

the only track with Pharrell’s seal of approval – he also produced “Stand In Front Of Me”, with a distinct 1950s doo-wop spin. WHAT’S NEXT? Though she hasn’t experienced the success that Beyonce has, Kelly recorded over 70 songs for “Talk A Good Game”, so I’m sure she has another record or two up those translucent sleeves. She’ll also be back in the spotlight, taking the seat next to Simon Cowell and Demi Lovato as a judge on the next season of X-Factor (starting in September), so it’s safe to say that, sometimes, airing your dirty laundry may not be such a negative thing after all! Any barbecue aficionado can tell you that the burnt ends are the most coveted part of any barbecue cookout. The charred ends of the brisket provide the smoky taste in a well grilled piece of meat. Burnt Ends Burnt Ends is a restaurant on Teck Lim Road which serves wonderfully-charred meals with their wood-fired grills and unique kiln ovens. The latest project started by Chef Andre Chiang of Restaurant Andre and lead by Australian Chef Dave Pynt’s Basque country sensibilities, the restaurant uses quality ingredients which are prepared in a handmade dualcavity oven where temperatures reach over 700 degrees Celsius – the first of its kind in Singapore. Dishes range from $5 to $30. Unique Cooking & Top Ingredients Chef Andre says, “We wanted to open a place with a casual environment and unique style of

This is a great way to start the meal. We also loved the Toast, Tomatoes and Jamon – a crusty piece of toast topped with roasted vine tomatoes and jamon [Spanish cured ham]. The Burnt Ends Sanger is not to be missed. Tender pieces of pulled pork and homemade slaw sandwiched between soft buns. We polished this off in mere minutes.

anayoshi is tucked away at Duxton Road. It is a warm, homely and quiet Japanese restaurant, with simple wooden furniture and yellow lights.

Omakase Menu Their lunch set menus are pretty affordable, from $28++, and if you can’t decide on what to order, opt for the omakase set menus ($150++ and $180++), which leaves the choice of dishes up to the chef. You may be pleasantly surprised by Chef Mitsuo Ishii and the executive chef’s creative, tasty creations. After all, Chef Ishii has served dignitaries and was previously the personal chef of two Japanese ambassadors to Singapore. We were served nine dishes for this omakase menu, which came in pretty presentations and were delectable treats. The appetiser was Nigauri Tosani, or bitter gourd with bonito flakes, followed by Tofu Salad, Sashimi, and Steamed Red Snapper. Jelly Umeshu One of their interesting and noteworthy dishes was their unique concoction of Ikegame Shuzo Jelly Umeshu, which is made up of 90 per cent jelly, instead of plum. We liked that it was cool and refreshing – great for the sweltering weather. The jelly added texture and was chewy.

“Chef Ishii has served dignitaries and was previously the personal chef of two Japanese ambassadors to Singapore.” There are three types of agemono, which means deep-fried dishes – Suage (where food is fried without a batter coating), Karaage (where marinated chicken is lightly covered with starch and deep fried) and Tempura. Unusual Dishes We had Tempura Moriwase, where prawns are dipped in yuzu tempura batter, and served with three-flavoured salt. This ingenious culinary idea allows for three different tastes for the same

dish. It went quite well with green tea salt, followed by the aromatic curry salt, then the sakura salt. However, our favourite dish had to be the Mango Dengaku, or grilled mango with miso. It was warm, sweet, sour and savoury at the same time, and would make a good dessert. We were served Sushi and Somen (a type of noodles) after that, and ended the meal with gelato. By Lester J Wan The Masterchef himself, Gordon Ramsay, was in town for the Hawker Heroes Challenge at Newton Food Centre on Jul 7. There, the three-Michelin-star chef pit his skills against three of Singapore’s top hawker heroes. Mdm Foo Kui Lian of Tian Tian Hainanese Chicken Rice, Mr Ang Kiam Meng of Jumbo Seafood Restaurant [for Chilli Crab], and Mr Ryan Koh of 328 Katong Laksa were chosen out of a list of 12 popular hawkers through an online poll by SingTel. Chef Ramsay had to visit the various hawkers and to learn to cook the dishes before the event. Fanatic Fans More than 1,000 members of the public thronged to Newton Circus to witness this culinary battle. It was reported that some had even queued from 1am. The pulsing crowd cheered whenever they were queried by the host, none other than Makansutra’s KF Seetoh himself, about Ramsay or whenever they caught a glimpse of him. Before the night was over, Ramsay greeted his adoring fans and took photos with them, and even signed autographs. He was very different from his on-screen “Hell’s Kitchen” persona, and was the perfect gentleman. Squaring Off Diners were given a set of each of the hawkers’ speciality dishes, as well as Gordon’s version of each. Once they had eaten, they were asked to SMS their vote for the better version, which they preferred. Our taste and preference matched the final result. Ramsay’s Chilli Crab was fantastic, and

had a taste somewhat similar to that of the Perankan Ayam Buah Keluak curry, while Jumbo Seafood Restaurant’s Chilli Crab tasted a bit too sweet and was fairly starchy. Tian Tian Chicken Rice and 328 Katong Laksa were in a league of their own and were incomparable to Ramsay’s rendition of the two dishes. Katong Laksa’s gravy was rich, creamy and flavourful, while Ramsay’s Laksa was a bit too spicy and biting to taste. Love for Singaporean Food “It’s been phenomenal to see how passionate the people of Singapore are about their hawker fare. The hawkers have impressed me with their ability to whip-up dishes with such amazing flavours,” said Ramsay. “I can say without doubt the people of Singapore have much to be proud of – authentic, genuine, simple food that is of amazing quality and flavour,” he added. Said Mdm Foo of Tian Tian, “I enjoyed teaching Chef Ramsay the art of making chicken rice. The SingTel Hawker Heroes Challenge was a wonderful celebration of the good food we have here in Singapore.” Plans for Singapore When pressed on further thoughts about Singapore and possible plans, he immediately responded that he loves Singapore and that he is definitely looking into plans for something here.

Craving for a good pork belly? Why not make it yourself with this recipe? Chef Immanuel Tee, Chef de Cuisine of Keystone Restaurant, shares his Pork Belly recipe with us. This Pork Belly dish is inspired by Chef's Immanuel's childhood memories of the dish, and its flavours are robust. “Growing up, I realised that pork always makes its way to the dining table in just about every meal. It is a favourite with locals and one of my favourite ingredients to work with,” says Chef Immanuel. “I dedicate this dish to my mum who has through the years prepared her home-fashioned rendition for the family more than a thousand times,” he adds. This Pork Belly dish was also part of the Farm Fresh workshop, under the Singapore Food Festival, that was held on Jul 4. Ingredients • 60g of pork belly [from Snake River Farms] • 1 organic egg • 300g of agria potato • 10g of jamón Ibérico pork or bacon • Gourmet whip • 15g of porcini, 25g of shiitake and 25g of button mushrooms • 150g of sake • 60g of mirin • 15g of shoyu

• 40g of brown rice • 1.5g of texturas (gelling agent) • Salt and pepper • Butter Method • Cook the pork belly sous vide [sealed in an airtight plastic bag, in a water bath] at 65 degrees Celsius for 18 hours. Follow with a slow braise with sake, mirin, shoyu and brown rice for another 3 hours. • At 63 degrees Celsius, cook the organic egg sous vide for 30 minutes. • For the espuma, season the cooked agria potato with salt, pepper and butter. Follow by puréeing. Add the texturas and pour in the gourmet whip. Add two nitrogen cylinders and shake hard. • Sweat the jamón Ibérico slowly for 20 minutes to ready the fat, and then add the porcini, shiitake and button mushrooms. Lightly season and cook until tender. • Complete the dish with a crouton of jamón Ibérico, dehydrated for 5 hours. ike most 22-year-old female undergraduates in their final year of studies, I was preparing hard for my exams. Little did I realise, I would be facing life-threatening challenges. Something Brewing On Nov 28, 2011, the unexpected occurred. I suffered my first bout of fits, in school. The medical tests turned out negative. I recovered and I was back to myself within a day. On Dec 30, 2011, I had multiple fits at home and, while warded at Tan Tock Seng Hospital, I developed a high fever and I remained at a low level of consciousness. Over the next week, my condition stabilised but I was still not myself. Unusual symptoms I gradually deteriorated into short ‘frozen’ periods of time lasting a minute or two, and drooling at times. These were silent seizures and my arms would tremble and feel very warm as if I was running a very high fever.

The frequency of the silent seizures gradually increased and so did the duration of each seizure. My motor control was also impaired, and I would choke while eating solid food or drinking. As I could not feed myself, I depended heavily on family members and nurses. the ‘other side’ A week later, I developed a series of continuous silent seizures

over a couple of hours which then broke out into a series of fits lasting one to two minutes each. I began to hallucinate. I walked out of my ward, talking to invisible friends, and I experienced personality changes – behaving childlike. The nurses strapped me to the chair as I was restless, refusing to sleep and disturbing other patients. I could not speak in complete sentences

Feb 26, this year, while preparing for my exams. This time, the changes and hallucinations were less extreme. I believe early diagnosis, case history and medication helped. Nonetheless, the severity of the seizures and their increasing frequency alarmed the doctors and I was transferred to the High Dependency Ward. Likewise, my medication had to be increased. My cognitive function was temporarily impaired and I had trouble making simple decisions. I was told that my consciousness levels were so low that I fell asleep while eating. For fear of more seizures, I had to be confined to the bed, and fed and bathed by the nursing staff. I finally recovered and was discharged on Mar 25.

Hope for the Future Today, I am on a one-year immune-suppression treatment recommended by doctors and I have postponed my academic studies. I look forward to pursuing my passion – a career in baking and pastry. My prayers are with medical researchers and doctors to find an answer to this dreadful auto immune disorder, of which 80 per cent of sufferers are younger women. I thank God that I was spared the extreme symptoms and condition of the disorder. Teens Young people can be difficult to understand, or to deal with. Here is the first part of a series of questions and answers on teenagers

Establish clear guidelines.

Communicate your expectations and the consequences for disobedient behaviour in advance, and make sure everyone understands them.

Implement consequences promptly and consistently. If your teen challenges these standards, stay calm and don’t let them seize control of the situation. Teens of all temperaments are trying to form an identity at this stage, which leads to behaviour calculated to define ‘self’ in opposition to or over and against the values, beliefs, wishes and instructions of the parents. Therefore, it’s important to categorise your guidelines as such: non-negotiable rules, negotiable rules and rules that can be discarded as your adolescent matures and

Teach your teen about the reality of consequences when rules are broken.

Talk about the ripple effect of the choices we make in life – on ourselves, our friends, our families and the world around us. Negative consequences should take the form of lost privileges (phone or computer time, curfews, or access to the car). Match disobedient behaviours with appropriate consequences.

Affirm any attempt to cooperate.

One effective way to promote cooperation is to establish a point system based on chores that need to be done around the house: every chore earns a certain number of points, and points can be used to ‘buy back’ privileges lost as a result of rebellious behaviour. This helps adolescents understand the links between actions and outcomes.

Watch for strategies that separate you and your spouse.

You and your spouse must be on the same page to discipline effectively, as most strong-willed teens will pit the ‘softer’ parent against the ‘stricter’ one. If this applies in your case, consider seeking counselling as a family. Strong-willed kids often have at least one strong-willed parent, and it is difficult to work through the complex family dynamics associated with this clashing of wills without the assistance of a trained specialist. Some of these tours will also take you around the city to see the Notre Dame, the Post Office and the Reunification Palace.
