llie Goulding is back with more. Her latest album, Halcyon Days, is a followup and an extended version of her second studio album. But, with that many additions to the release, she may as well have called it her third album.

A STAR TO WATCH For someone who has only had two official studio albums, Ellie Goulding has risen up the ladder of stardom incredibly fast. Despite releasing the first single, “Burn”, in the same week as Lady

RADIO-FRIENDLY HITS It’s easy to see why “Burn” was such a hit on the charts – with a radio-friendly beat that you can effortlessly sway to, and a chorus that really sticks. It’s a clear winner. With her unique ethereal voice, she’s taken that track from Leona Lewis (who had initially recorded it for her third album but later excluded it), given it an indie spin, and made it her own. A feel-good track to look out for is “Stay Awake”, featuring Madeon. The electronic beats are a little on the heavy side, interwoven with the synthesizer; just the way I like it. That said, though, I think it’ll take more than “Burn” and “Stay Awake” to replace her previous

THE “UNCHAINED” MELODY My personal favourite off Halcyon Days is the heart-breaking pianoballad, “Hearts Without Chains”. Giving the album the soul that it needs, it helps us look deeper, past the other trippy tunes, into an enclave that’s brought to life by her emotive yet airy voice. A Great Partnership Mark Wahlberg, recently seen as a muscle-bound doofus in Pain & Gain, was equally excited to be working with Washington. “We have great chemistry. People will be surprised to see how playful Denzel can be,” he says. Platt summarises the premise of the film, saying that 2 Guns is about “the nature of male friendship and the notion of two guys doing the job they believe in”. The Frozen Ground: Murder & mayhem Based on the true story of a serial killer in Alaska who murdered more than 24 women, this film depicts his crimeS and eventual arrest

Alaska’s most terrifying serial predator was a respected family man. For over 12 years, he systematically abducted more than 24 women and flew them into the Alaskan wilderness to be hunted. The man gets his just desserts when one of his victims survives, which leads to him being brought to justice. Behind the Façade 17-year-old prostitute Cindy Paulson (played by Vanessa Hudgens) runs into a motel screaming to Officer Greg Baker (Ryan O’Nan) that someone tried to kill her but the case goes cold when the suspect named, Robert Hansen (John Cusack), has a valid alibi. Sergeant Jack Halcombe

(Nicolas Cage), who is in the midst of investigating a bunch of murders, digs deeper into the case and soon realises that Hansen is the only one who committed the spate of murders, including the attack on Cindy. A plan is then set into motion to trap Hansen. The plan is more difficult to execute than it sounds. The Idea Behind the Plot Director Scott Walker came across the Hansen case while working on another story. “Someone suggested that there were similarities, and during my initial research I realised what he did and wasn’t sure if I wanted this to be my first film,” he admits. “There are so many families that are still affected today by the horrific events but I kind of let the people involved tell me whether they thought the film should be

Pamelyn Chee stars as Su Ling

Intrigue at Serangoon Road

We speak with Pamelyn Chee on her thoughts on starring as plucky Su Ling in the HBO original series Serangoon Road By Cheryl Chia

You might recognise the attractive Pamelyn Chee from her role in the titillating Peranakan drama, The Little Nonya, on Channel 8, as well as from Channel 5’s cop drama, Point of Entry. Born in Singapore and raised in New York City, Pamelyn now stars in HBO Asia’s original series Serangoon Road, with the likes of Joan Chen. She shares with us some of her thoughts and experiences on and off the set. How did you prepare for your role as Su Ling in Serangoon Road? What sets Su Ling apart from the other characters is her upbringing and her wealth. The way she speaks says a lot more about her social status than anything else. She is from an extremely wealthy Peranakan family and probably goes to school with all the expatriate kids, or has a private British tutor. She also fits seamlessly into that upper class circle, so I wanted to give her something closer to a posh English accent, like how the extremely well-educated Hong Kong people of an earlier generation used to speak. So, I watched a lot of Downton Abbey to try to get the accent down pat.

Food, wine, and graffiti? All that at Bar-Roque If you’re looking for good food, wine, and even art, Bar-Roque Grill has taken care of all of that. Just bring company Located at the corner of Amara Hotel, Bar-Roque serves everything from succulent roasted meat, tarte flambé to fresh seafood. Bring good company to go with the great food. Chef Stephane Istel hails from Alsace, France, and he has brought his traditional French sensibilities to his cooking. It helps that he smashes the grumpy chef stereotype with his vivacious personality. The décor of dark furnishings and a graffiti art Baroque style “painting” of a cherub on the wall adds to the arty ambience. Whet Your Appetite When we were there for lunch, Chef Stephane enthusiastically explained the dishes to customers, and even brought out a whole fish to show them what exactly they were eating. Our meal got off to a good start with The Classic ($12-$20) – a tarte flambé of bacon and onions. The thin crust “pizza” was paired well with the savoury bacon. We also liked the New Zealand Little Neck Clams ($22 to $32)

stewed in garlic pork sausage, mushrooms, parsley, and white wine, and served with grilled sourdough bread. The Main Attraction A must-try is the French FreeRange Chicken with a side of mesclun salad and mashed potatoes (which comes in their two or three-course set lunch, $32 to $38). The chicken – from their in-house rotisserie – is meaty, tender and juicy. To say it was good would be an understatement. Also from their lunch set, the Ravioles with wild mushrooms, shallot confit and aged gruyere is also worth a try. Dessert Time Chef Stephane has also incorporated his mother’s homemade Apple Pie ($12) recipe, with cinnamon crumble, topped with rum & raisin ice cream, into the menu. The chunky apple slices were well-flavoured with the buttery cinnamon crumble and made a satisfying end to the meal.

Artistic bites in modern Chinese cuisine A modern take on Chinese cuisine awaits at Millenia Walk You may have noticed Hong Shi Yi’s interior décor with hanging bird cages and white wooden chairs, while walking around Millenia Walk. You may even have seen people painting! Hong Shi Yi is, nonetheless, a restaurant serving modern Chinese cuisine. Lily Liu, owner, says, “At Hong Shi Yi, we want to present diners with gourmet Chinese food that is infused with the essence of creativity. The modern décor and the menu have been carefully designed to complement each other in conveying this experience.” Intriguing Signature Dishes Executive Chef Zhang Lin uses his decade-long experience in Chinese cooking to come up with dishes such as the Pumpkin Soup with Crab Meat ($9.90). This Asian version is slightly more liquidlike in texture than the Western pumpkin soup, and is less cloying. Also on the menu is Chairman Mao’s favourite dish of Stewed Pork Belly with Egg in Casserole ($16.90). Simmered for hours, the belly pork absorbs the essence of the spices, to give a highly

Other dishes such as the “Chongqing” Specialty Fish Slice with Preserved Vegetables in Superior Stock ($22.90 to $38.90) and the set of Twelve Beauties ($25.90) that comprises a pair of liu sha bao, prawn dumplings, fried wantons, lotus paste pastries, scallion pancake and a red bean filled sesame seed pastry, are both pleasing to the eyes as well as to taste.

Tea ($4.90) contains red dates, hawthorn, dried longans, wolfberries and sesame seed, together with rock sugar and premium tea leaves. It supposedly boosts mental alertness and detoxifies the body. The restaurant is open from noon for lunch and again at 6pm for dinner. If you are in town for tea, try their newly-added Jin Ling’s Twelve Beauties Afternoon Tea Set for two.

Mini Pavlovas

INGREDIENTS Pavlova Shells Makes about 40 mini pavlova shells • 9 egg whites • 250g castor sugar • 375g icing sugar (sifted) • 1 tablespoon vanilla essence • 2 drops pink colouring Custard cream • 250ml cold water • 170g instant custard mix • 200ml whipped topping cream Fruits • 250g strawberries (chopped) • 2 medium mangoes (chopped) • 4 kiwis (chopped) METHOD Pavlova Shells 1) Pre-heat your oven to 100 degrees Celsius. 2) Whisk egg whites at medium to high speed, and reduce once soft peaks form. 3) Add in the sugar and increase the speed until stiff peaks are formed. 4) Divide the mixture into half.

5) Add in the pink colouring and fold in using a spatula. 6) Transfer the mixture into each piping bag and pipe. 7) Bake the piped shells in the oven at 100 degrees Celsius for 1 hour, and let them dry. Custard cream 1) With the custard mix in a bowl, pour the cold water into the bowl while whisking, until a soft paste is formed. 2) Whip the topping cream until it droops slightly from the ends of the beater. 3) Carefully fold in the whipped cream into the custard cream. 4) Then transfer into a piping bag. Assembly 1) Take each empty shell and fill it up with prepared custard cream. 2) Add in the fruits. 3) Serve immediately. NOTES • Ensure egg whites are at room temperature. • Ensure no egg yolk bits.

• Add in sugar when the egg whites are foamy and still watery. • Egg whites have to be used immediately in order not to lose air bubbles. • When piping shells, pipe from centre then down. Vitamin C is necessary for many other bodily functions, such as the production of collagen, an important protein and connective tissue that strengthens skin, tendons, ligaments, muscles, blood vessels and bones. An intake of 400mg of Vitamin C daily for a few days before and

after intense exercise may improve athletic performance, reduce pain and speed up muscle recovery. Indonesia is the largest archipelago in the world. This idyllic group of islands can be found straddling the equator, between the continents of Asia and Australia. Semarang lies in the northern part of Central Java in Indonesia. It boasts a variety of cultural and historical attractions. Semarang was once a city of the spice trade, and is now one of Indonesia’s busiest regional port cities. Delicious Indonesian Cuisine Having taken the inaugural SilkAir flight from Singapore to Semarang, the tour guide brought us to the Ikan Bakar Cianjur (IBC) chain for lunch. IBC is an Indonesian restaurant chain serving authentic Indonesian cuisine. The food was excellent, especially the Gado Gado (Indonesian salad with peanut sauce), Ikan Bakar (barbecue fish) and Ikan Gurame (dry fried tilapia). The Ikan Gurame was seasoned with IBC’s special blend of spices before frying. A Historic Landmark After lunch, we walked across to the Immanuel Protestant Church of Western Indonesia in Kota

Lama (the old city), better known as the “Blenduk” or Dome Church. The Dome Church was built by the Dutch colonials in 1753 and is the oldest church in Central Java. The church had been renovated once in 1984 but the interiors of the church are original and have yet to be restored. Entering through its hallowed doors, one is immediately filled with a sense of peace. The quiet historic setting also evokes a feeling of nostalgia. Cheng Ho’s Legacy Leaving the old city, we visited Sam Poo Kong temple located in Simongan Village. We toured the temple and the Stone House, which is believed to be where Admiral Cheng Ho – also known as Sam Poo Tay Djien – anchored and set up his headquarters when he visited the Java Islands with his crew and soldiers. Admiral Cheng Ho was China’s key ambassador and diplomat to Asia and Africa with a fleet of 200 ships and a 2,700-strong crew. The temple is called Gedung Batu (Stone House) because there is a big stone cave. This stone cave was where Admiral Cheng Ho meditated and prayed while he waited for his crew to prepare for

the next journey. While he was residing in the village, he taught the villagers agricultural and moral knowledge. When he left the village, the villagers glorified and worshipped him for the goodness he had shown to them. More Culture & Sites After visiting the temple, we went back to the hotel to prepare for the inaugural SilkAir flight dinner celebrations. The next morning, we set off early and went on a road trip to Gedong Songo. The temple there is located in a Hindu cultural site on Mount Ungaran, Bandungan district. While the name suggests nine temples, only five are still standing. The others are in ruins. The site was originally built during the Sanjaya Dynasty, which controlled Central Java in the 8th and 9th Centuries. The temple was first discovered by Sir Stamford Raffles in 1804. It predates the famous Borobudur and Prambanan temple monuments, and is the oldest Hindu structure in Java. The temple is flanked by lush natural surroundings. Hiking up-hill to the five temples
