A Different Chef at the Helm In the previous episode, Chef Benny Se Teo from Eighteen Chefs taught them to make a pan-grilled salmon dish. Chef Willin Low from the Wild Rocket group now takes over in the fourth episode, where he teaches them to make a pan-fried salmon dish using otak sauce. He begins by imparting words of wisdom to the 12 contestants, some of whom had been involved in gangs but have since renounced those ties. “It’s not just about cooking. If you are determined to learn something, you can achieve it, and you can do it right. With that attitude, you can apply it to anything else,” states Chef Willin. Pan-Fried Salmon with Otak The contestants first begin by cutting the ingredients and blending them into a paste,

commonly known as rempah, which is the base of any sauce in Malay cooking. Dried chilli is used, as the flavour is stronger. The trainees work on their dishes industriously, measuring, stirring, frying and plating. It is a lot of sweat and toil in the kitchen. Through the proceedings, it is obvious that the contestants have built up more rapport with one another than in the early episodes, and it hardly looks like a reality show now. How Did They Fare? What is Chef Willin’s verdict? Overall, all their ‘masterpieces’ were good and had the otak taste and flavour but the flavour was slightly lacking with some who did not fry their ingredients long enough during the preparation. Final Verdict Some types of food are meant to be packed and delivered, and others not. This was apparent to us. Sambal Tiger Prawns with Butter Rice When I was served the tiger prawns, I was fully aware that the seafood was alive moments ago in one of those floating farms within sight of where I was sitting. New Zealand Lamb Upon hearing “lamb”, many Singaporeans would immediately say: “Oh, I don’t like the smell.” The truth of the matter is, lamb has an identity crisis in Asia. In many Asian languages, including Chinese and Malay, the word for goat (yang or kambing) is the same as the word for lamb, which is a young sheep, even though both are very different animals and taste very different. To compound the problem, “mutton”, commonly used in Indian cuisine, refers to goat. However, in France and Britain, it refers to the flesh of sheep. Confused yet? The difference, in eating, is that goat meat is gamier and stronger-smelling than lamb. It is also leaner, making it healthier and tougher. Unlike sheep and lamb, which graze on grass, goats will eat almost anything, thus influencing the taste of the meat. Bearing that in mind, Singaporeans know that New Zealand is known for their sheep and, by extension, lamb. The dish served was grilled lamb from New Zealand. What surprised me was that there were two lamb steaks stacked upon each other. A pleasant surprise, indeed, especially when the price is only $19.90. The lamb was smoked, lightly grill-charred, and served with chicken and mushroom gravy.

The meat was tender and smooth, not fatty. The dish comes with vegetables and yummy baked potato with a generous topping of sour cream. ne of the oldest local bands still around, Jive Talkin’ is perhaps most famous for their glory days at Hard Rock Café Singapore. Hordes of party-goers and fans of rock and pop music would flock to Hard Rock Café just to see and hear them perform, and to jive along to the great music. Good news for fans of Jive Talkin’ or great musical covers: Jive Talkin’ is the new headline band at Fern & Kiwi. We speak to band leader Raffy Aspier and catch up with them. How was Jive Talkin’ formed? What’s the story behind the name? Jive Talkin’ was formed in a small pub in Holland village called

What sacrifices have you had to make over the years? As the band is a team, we make lots of compromises with each other. If one of us falls sick, we still have to try our best to come to work and to perform. If any of the band members has got family issues, for example, a death in the family, an accident or serious illness, we still have to put on a smile on stage and entertain. The show must go on.

Java Jive. It was formed by the late Mr Bani Farok, and most of its members were seasoned and experienced musicians playing various genres like jazz, blues and funk. The band was called West Blues. As the band gained popularity, the owners of the club suggested that we change our name to Jive Talkin' because it makes a good mix with Java Jive. So, Jive Talkin’ came about somewhere in 1990. What do you think makes Jive Talkin’ different from other bands? Jive Talkin’ has got a wide repertoire of music from almost every genre and we have the ability to add flavour and soul into the songs.

Which has been your favourite establishment to play in? Every establishment has its great points. At Fern & Kiwi, we are happy because the band and the venue share the same philosophy, which is to entertain and ensure guests enjoy their time at Fern & Kiwi. But of course, Hard Rock Café has a special place in our hearts because after the band left Java Jive, we performed in Hard Rock Café for ten years, and it was during this period when the band gained a large following here and abroad. It was also where we got to travel and perform in all the Hard Rock Cafés in Asia, and gave us the opportunity to share the stage with some of the biggest names in show business – truly a wonderful experience.

What are your most frequently requested songs? “Don't Stop Believing” [by Journey] and Bruno Mars’ “Just the Way You Are” are the most requested songs we’ve had recently. We usually do our best to please the crowd as they are paying customers. Even if we don’t like the song, we’ll still do it. Jive Talkin’ has played with famous artistes such as Gloria Estefan and Air Supply. Which has been your favourite collaboration? Definitely the horn section of The Miami Sound Machine – they jammed with us through an entire set; the music was tight and awesome. There was also the great Kenny G who came to watch us perform at Hard Rock Café and he asked his manager to get his saxophone in his hotel room because he wanted to get on stage and jam with us. That was a magical moment. What do you think has helped Jive Talkin’ to stay together for so long? 23 years is a long time. veryone needs a vacation every now and then. Instead of heading to the same old touristy spots where you are harassed all the time by vendors plying their wares, why not head to these gorgeous beaches instead for a spot of R&R? You might be surprised; some of these spots are much closer to home than you think.

Sun Island Beach, Maldives This gem in the middle of the Indian Ocean is chockfull of celebrity visitors as well as honeymooners. However, you should be able to find a fairly quiet spot, especially during lowpeak season. Take a dip in the clear blue waters for a spot of snorkelling and diving amongst the many

Not only are we a cosmopolitan society with a wide world view but we are also going places, around the world Singaporeans are amongst the most well-travelled in the Asia Pacific region, with 78 per cent of the participants surveyed responding that they have travelled for international leisure trips in the past 12 months. This finding is according to MasterCard’s latest survey on Consumer Purchasing Priorities – Travel. Other seasoned travellers in the region include Hong Kong and Thailand consumers. Itinerant Folk The outlook for leisure travel is set to remain strong, with most respondents having no intention to cut back on travelling for the year ahead. Only 1 per cent of the respondents do not intend to travel, while 33 per cent have definitive plans to travel more in the next 12 months. Regional destinations remain

popular for Singaporeans, with a partiality for budget airlines as a preferred way to travel. Over the next 12 months, 40 per cent of Singaporeans surveyed intend to travel to Australia, while 37 per cent intend to travel to Japan and 37 per cent to Thailand. If offered an all-expense paid holiday to anywhere in the world, Paris, Japan and London emerged as the top cities of choice for Singaporeans surveyed. Singaporeans’ fascination with Japan continues: with Singaporean consumers choosing Tokyo as the top desirable city destination in Asia.
