ARIANA VS MARIAH I thought she was a Selena Gomez wannabe, who wasn’t going to leave much of an impression on the music world. Boy, was I wrong. Ariana’s powerful four-octave vocals and the ability to sing at the highest register of the human voice have resulted in overwhelming comparisons to Mariah Carey. As it happens, Ariana has cited Carey and Whitney Houston as her biggest influences, which is also the reason why she was hard bent on making an album that celebrates the distinct 1990s R&B sound. Her first single, “The Way” (featuring Mac Miller), was the
MATURITY BEYOND HER YEARS Her team effort with Mika, “Popular Song”, did not win me over. Although upbeat, it sounds like it should be on the High School Musical soundtrack, and sticks out like a sore thumb on this album. Thankfully, that teenybopperish sound doesn’t appear often, which is why I’m adding two of her songs to my personal playlist. hat started merely as a weight loss goal has evolved into so much more for Singaporean Mixed Martial Arts (MMA) fighter Sherilyn Lim. Sherilyn has trained at Fight G since 2007, in their Muay Thai programme. She will represent Singapore on a global scale at the One FC tournament on Oct 18, at the Singapore Indoor Stadium. She shares with Weekender her thoughts on being a female fighter.
How do you feel about representing Singapore in the upcoming One FC? I am very honoured and excited. I have never thought that there would be such an opportunity! I am definitely gearing up and bringing my best to the cage. Describe a typical day of training. Absolutely brutal. I feel like I want to shout all the time. Ahhhhhhhhhh! But, I know all the hard work and sweat
What would you say to encourage women to take part in MMA? Whenever you start doing something new, you must always remember what your purpose in doing it is and keep your end-goal in mind. Whatever the reason is, be it for general fitness or to pick up a skill, societal stereotypes such as gender shouldn't stand in the way of what you ultimately want to achieve. It's the same for most things – you have to constantly push yourself to your limits. Then, push your limits even further. What would be a good starter style of MMA for women who want to try it for the first time? Pick up Muay Thai first. Compared to grappling, striking is easier to understand most of the
time, especially for women who have no experience in contact sports. What is your game plan for the upcoming One FC? You'll have to stay tuned and watch the match to find out! We'll put on an exciting bout that shows that women can be top athletes too. What would you like to say to your supporters and fans? I am truly thankful and appreciative of the support I have been given, and I will definitely be working hard and bringing my best game to the cage. The fifth episode of Chefs with Heart, a reality cooking show, whets your appetite with the contestants’ first timed food challenge The challenge is on for Chefs with Heart, a reality programme where 12 at-risk youths from disadvantaged backgrounds learn culinary skills from well-known chefs. In the last episode, Chef Willin Low from the Wild Rocket Group taught the contestants how to make panfried salmon with otak sauce. He helms this episode again, setting them their first timed challenge. The Challenge is On The contestant’s first timed challenge requires them to make pan-fried catfish with otak sauce – slightly different from last week’s dish. They can choose to make a fillet with sauce on top; or mince the fish, mix it into a paste and pan fry it; or cook it any other way they wish. Kitchen Challenges It is plain for the audience
to see, as they busy themselves slicing, stirring and frying, that they take this seriously. One of the contestants starts tearing because of the chilli in the otak sauce, but he perseveres. A mishap occurs for one of the trainees as she accidentally drops her blender of minced fish on the floor, and has to begin all over again. With only 15 more minutes to go, can she make it in time? Timing Is Everything Three of the contestants complete the challenge within the time allotted, and the rest get 15 more minutes to finish their dishes but will have points deducted. They have to be plating in the final minute to finish on time. Otherwise, they face disqualification. “Timing is very important, especially in the kitchen, when you are not just cooking one dish. You are cooking for 50 people, 60 people, or 70 people… During lunch time, your customers only have one hour,” Chef Willin explains. The newly-opened restaurant bearing her name brings that question to mind. Located above Timbre at the Arts House and behind the Sir Stamford Raffles’ statue, the restaurant is named after Raffles’ first wife. Scandalous Origins When Olivia first met Raffles, she was a mature mourning widow and he, a lowly young clerk. They got together amidst vicious rumours but she died before he received his knighthood and his new wife erased all records of her existence. Now Olivia lives on in this new restaurant, Olivia Cassivelaun Fancourt (OCF), a new initiative by A Thousand Tales and the Timbre Group. Like the Timbre outlets, OCF also features live performances from local artistes. Luxurious Lunch Those who are working in the area, take note. This establishment is a great setting for business meetings, with a three-
course set lunch at $38, and with three to four choices per course. When we were there, we loved their starter of Smoked Herring, with summer crudités in Chateau Estoublon olive oil. The savoury morsel was a good beginning to the meal. We also liked the Cargill Farm Striploin with salt-baked onions, pommes soufflé and garlic jus. The meat was a little too well done for us, but it remained tender and juicy. Sweets for the Sweet If you like a nice dessert tart, you could go for the Greek Yoghurt Royale with pink guava and ginger genoise. Chocolate fiends would love the Intense Chocolate Tart with fleur de sel and sorbet. Both will get you excited. Ku De Ta has kept things fresh in celebrating its third year, with a new executive chef and an upcoming brand new menu. From the award-winning Restaurant Nobu, a Japanese restaurant in Cape Town, South Africa, Executive Chef Frederic Faucheux brings his expertise in Japanese sensibilities to create a new menu for Ku De Ta that will launch towards the end of the year. The Best of East & West Chef Faucheux trained under Chef Nobuyuki Matsuhisa for four years and played an integral role in launching Restaurant Nobu in Cape Town. Prior to his training, Chef Faucheux practiced French cooking when he was at Langham Hilton in 1998 and London’s Savoy Hotel in 2004 to cook under the leadership of Chef Georg Fuchs. This is his first time in Asia. Celebratory Start Chef Faucheux has already begun to exert his influence in the kitchen in his new home at Ku De Ta, creating the menu for the third anniversary. The menu comprised dishes such as US Prime “Brandt Beef” Ribeye with wasabi salsa, spinach and a goma dressing,
and a Yutaka Roll filled with foie gras, salmon skin and cucumber, showing off both his French and Japanese influences. Chef Faucheux also put a twist on the desserts, such as with the Tumeric Hazelnut Cake with Hennessy white chocolate cream and blood orange. Future Menu Guests can look forward to a menu of Modern Asian dishes with emphasis on Japanese produce worked with unique twists – promising to be easy on the palate and the eyes. The chef also believes that a calm state of mind is a key ingredient to effective kitchen management and measures his success by impressing his customers with a dish that they cannot replicate personally at home. Ku De Ta celebrated its third anniversary on Sep 12 with a red and Asian themed party, complete with fire-wielding dancers. Know What You Are Looking For What exactly are you looking for? A trek through the road less travelled with loads of sight-seeing? Or, do you just want to see the basic sights and then head to the malls and markets to shop? Be clear about what you want, and do some homework about what package you are paying (or not paying) for. Don’t let travel agents bully you into signing a package you don’t want, or that doesn’t even look good on paper.

Know Your Options Always do a little bit of research, know your travel operator’s target market, and find out what options (from various agents) you have. If you are a couple on your honeymoon, you certainly do not want to be stranded on a tour
full of retirees or families with noisy children. You might, for instance, want to find packages specially-catered to couples on honeymoon, or perhaps even packages for younger groups of people. Trust us, being trapped in a tour bus for long hours with people you don’t like certainly will not feel like a vacation or be in the least bit enjoyable.

Free Time vs. Scheduled Programme Another thing to check on properly is the tour group’s schedule, to know exactly what you signed up for. More often than not, you may not realise how far apart locations are, and you may end up spending a lot more time on the bus than actually relaxing on your holiday.

Their Commission is Not Your Problem As mentioned, some tours might include visits to jewellery stores, leather goods warehouses or tourist shops, which include commission for the tour operators if tourists buy their products. If the price seems reasonable enough to you, you might as well save a couple of cents instead of running around shopping elsewhere for a better deal. But don’t feel obligated to spend at any of these designated “shopping” spots. In short, it is to your benefit to do a little research, and to know your stuff before you book. W

The transportation and accommodation may be simpler, or cheaper, but the value of your trip (especially in terms of experience) is drastically lowered despite the money you save.

Ingredients (Serves 4) • 1½ cups Royal Umbrella Thai Hom Mali Rice • 1½ cups water • 200g chicken fillet (cut into cubes) • 200g button mushrooms (sliced) • ½ can cream of mushroom soup • 5 garlics • Grated mozzarella cheese • Grated cheddar cheese • 15g butter • Salt and pepper • Parsley for garnishing Method 1. Melt butter in preheated wok.
Add mushrooms and chicken, stir-fry for a few minutes until chicken pieces are white. 2. Add rinsed rice, salt and pepper. Stir well. Transfer all to rice cooker. Add water and cook for 20 minutes. 3. When rice is cooked, scoop portion into oven-safe baking dish until half the height of dish. 4. Spread mushroom soup on top of the rice and top with layer of grated mozzarella and cheddar cheese. 5. Bake in pre-heated oven at 200°C for 20-25 minutes, or until cheese is melted and slightly browned. Garnish and serve hot.

AIG Asia Pacific Insurance Pte Ltd (AIG) recently held the AIG DriveSafe Challenge to teach people more about the importance of road safety in Singapore. More than 300 participants turned up for a fun day of engaging challenges. Donation to Further Road Safety In conjunction with this event AIG donated $15,000, which comprised partly of the registration fees collected, to the Singapore Road Safety Council in support of its mission to improve safety on Singapore roads. Bernard Tay, Chairman of the Singapore Road Safety Council said, “The turnout for today’s event was fantastic and I was impressed by the enthusiasm demonstrated by all teams.” “AIG’s generous donation will be an essential investment in our on-going effort to make the roads safer for drivers, motorcyclists, cyclists and pedestrians,” he added. $6,000 Reward for Winners Guest-of-Honour, Associate Professor Muhammad Faishal Ibrahim, Parliamentary Secretary for Ministry of Transport and MP for Nee Soon GRC, waved the chequered flag to kick-start the event, which took place at The Grandstand on Turf Club Road. A total of $6,000 in cash prizes were awarded to the top three teams. The champions of the
day were the team led by Fabian Ng Pek Chun from Nanyang Technological University (NTU). The competing teams drove to six locations around the island where they successfully completed a selection of fun challenges that put their road safety knowledge to the test.
About Singapore Road Safety Council The Singapore Road Safety Council (SRSC) was set up in 2009 by the Ministry of Home Affairs, and supported by the Ministry of Transport, Land Transport Authority (LTA), and other road safety-related stakeholders.
Road Safety Statistics for Singapore From the Traffic Police: • Last year, there were 327,503 cases of road safety violations in Singapore – 3.6% more than in 2011. From the General Insurance Association: • There was a 3% reduction in cases reported in 2012 compared to 2011 (157,471 down to 152,845 cases). • Personal injury accidents reported involving young drivers below 25 years remain high. There were 1,900, 2,075 and 1,789 cases for the years 2010, 2011 and 2012 respectively.
From AIG: • Over the past five years, AIG has seen bodily injury claims increase 11% on average per year. • Based on statistics, the age segment below 22 is twice as likely to get into an accident (involving bodily injuries) compared to drivers aged above 30 years old. • Motor accident claims received by AIG which involved cyclists doubled from 2010 (77) to 2012 (166). • In the first six months of 2013, the number of cyclist-related motor accidents exceeded the total for 2012 by 30%.

The e-commerce website offers various payment methods such as instalment payment offered by financial institutions for convenience. Expanding the Empire TyreQueen plans to expand its reach. Some of the key regional markets earmarked for expansion into include Malaysia, Indonesia, Thailand, Vietnam and Myanmar. In addition to tyres, it will also be selling tyre rims online to complete its offerings. On top of variety and cost transparency, the portal will also be big on consumer education. Says Ms Tan, “I believe there is room for industry players like us to take the lead in consumer education on tyre selection and safety. We will be having such content on our portal to make it more relevant to our motorists.” TyreQueen’s workshop at The Grandstand (210 Turf Club Road) operates daily from 9am to 9pm. The second workshop at First East Centre (10 Kaki Bukit Road 2, #01-08) will be operating from December.
