By Charmaine Phua After yet another unsatisfactory New Year party, a father reveals to his son, Tim (played by Domhnall Gleeson), that the men in his family have always had the ability to travel through time. Even though they can’t change history, they can change what happens and has happened in their own lives.

I

t seems as though Jessie J’s a real veteran in the music industry, having been around for a few years. So, the realisation that Alive is only her second album may come as a bit of a shocker. The 25-year-old has been busy this year, pulling her weight as a judge on The Voice UK, recording this album and even shaving her head to raise £75million for charity.

A VOCAL POWERHOUSE Her extensive vocal range cannot be denied, and with tracks like “Wild” and “It’s My Party”, it’s not a surprise that she’s found herself on the charts once more. The former is a collaboration with Big Sean and Dizzie Rascal, while the latter shows her getting in touch with her fun side – a party-pop tune that looks set to stay on the charts for a while. This woman does like to do things in extremes though: on some songs, she sings so hard, she’s almost spitting angry. Just listen to the chorus of the emotional ballad “I Miss Her”. It’s a beautiful track, but she sounds frustrated and angry when singing it.

EMOTIONALLY CHARGED One of my favourites off the album is her team effort with Brandy, “Conquer the World”. It’s easy to listen to and it almost feels as though she’s talking directly to whoever’s listening when she sings, “I know how it feels to cry in the middle of the night” and “don’t ever give up; together we can conquer the world”. Another song to pay close attention to is “Thunder”, a love song that starts out slow but escalates quickly into a powerful display of her vocal talent. With an incredible talent for not

It is a slight, sort-ofmagic realism with the timetravel aspect but it adds to the emotional content,” she says. Story Inspiration This movie was inspired by a conversation director Richard Curtis (who also directed 2003 British romantic comedy Love Actually) had with a friend about what they would do if they only had 24 hours left to live. “The next step was how I would be able to incorporate this into a movie,” says Curtis. “It would have to be about someone who could manipulate

their final day, or manipulate their life in some way, to enable them to come to that conclusion,” he says. Watch out for stellar acting from this more than capable cast, in this comedy about love and time travel. You might realise, upon watching this film, that making the most of your life may not require time travel. Watch it, and see for yourself. See what Chef Heman teaches them In Episode 6 of Chefs with Heart, a reality show featuring 12 trainee youth chefs from marginalised backgrounds, you can see (from the webisode on YouTube) the youths make a white rojak, white burnt custard and roast duck with the help with this week’s mentor. Chef Heman Tan is from JP Pepperdine, and his skills in the kitchen are apparent. Getting a Roasting Chef Heman teaches the trainees the right way to clean out a duck, in order to prepare the English Roast Duck. The trainees start the preparation of the duck for use. Chef Heman then cautions the students to “learn their fundamentals properly in their culinary journey” in order to achieve success. The trainees plate their roast ducks and pose happily with their dishes. The next day, they

make white rojak – a rojak with prawn paste instead of the usual shrimp paste. The chef also teaches them the virtue of consistency, as certain dishes may taste different each time you make it, such as with the white rojak. Making the Grade About 80 per cent of the grade is based on presentation, taste and hygiene. The remaining 20 per cent comes from a group of guests and food bloggers who will be giving comments. Chefs with Heart was conceptualised by Josephine of Just Cinnamon and produced with Threeonesix. The successful apprentices will be employed in one of the three chefs’ restaurants after the series. The Singaporean menu mirrors its Thai counterpart for the most part but some recipes and items might have been added or tweaked in certain dishes.

The Singaporean version of the Phu Nim Phad Pong Karee is a little thicker than the Thai version, which I prefer. Either way, this is another must-try dish.

Lamb lovers would like the Welsh Salt Marsh Lamb Rump ($35) with roast onions and green sauce. If you’re a little more adventurous, try the Thornback Ray Wing ($35) with leeks, anchovy and garlic for a taste of the coast. Messy Dessert What better way to end off a British meal than with a Strawberry Eton Mess ($14)? Tips for tastier food photos by Guinevere Sofer Whether you enjoy taking pictures of food to share or to keep as a memento of some of the great restaurants you’ve been in, it’s always a good idea to take the best possible photos. In this first in a series of three articles, we’ll be exploring lighting for food photography and share some handy tips and tricks. Step 1: Get a table with access to light My strategy is always to find an area in the restaurant that has the most light. This could be: 1) A dining area outside (if there is available daylight); 2) Inside, next to the window where daylight spills in; or 3) Tables under a spotlight. The more lighting you can get, the more colours and highlights you can get on your food. But it’s always good to have some fill light in, with flash from your equipment. This brings the question of control.

which simply blast away any detail or texture of the food. To avoid that, you need to be able to control the flash. That’s why, I always carry a compact digital camera. Even the most basic compact digital cameras have the ability to control the flash setting, which can reduce or increase the flash intensity to balance out the ambient lighting in Step 1. Balance simply means that the flash should not overpower the other available light. [See example]. There is a setting on every camera which reduces or increases the intensity of the flash easily. This feature may not be easily available on phonecams. Step 3: Take lots of variations The final and surest way to take better pictures is to do what the pros do. Take about six to ten variations of the same scene, then delete the ones you don’t like. In each shot, make sure you adjust the flash in small increments; the “sweet spot” is where the flash from the camera will balance in harmony with the surrounding lighting.

Organic & Sulphite-Free Wines To cater to customers’ increasing preference for organic products, Cold Storage also introduced a selection of wines that are free from sulphites and additives, and are grown in accordance with principles of organic farming, so as to better reflect the subtle nuances of terroir. French label Naturae, produced by Gérard Bertrand (European Winery of the Year in January 2012 by US magazine Wine Enthusiast), offered award-winning sulphites- and additives-free wines from the South of France’s terroir in Languedoc Roussillon. Visitors enjoyed free wine samplings and opportunities to talk to winemakers and experts who had specially flown in. A number of the wines are still available after the fair. The photographer used a strong light from the background window and the camera’s flash from the front to balance it out. Compared to the previous image, the use of flash is more pleasing. Don’t forget to take multiple shots and adjust the power of the flash incrementally, and choose the best one.

He has kindly shared with us his recipe for very yummy Grilled Garlic Prawns. Ingredients • 150g prawns, de-veined • 160g unsalted butter • 1 small shallot, finely minced • 2 garlic cloves, finely minced • 1 handful of fresh, chopped parsley • Salt & pepper, to taste • 35ml of Pernod Method • In a heated pan, over medium heat, add

the butter and fry the shallots and the garlic. • Reduce the heat, and then cook until the aromatics have softened. • Increase the heat of the pan, and add in the prawns. • When the prawns are almost cooked through, add the Pernod and then flambé the prawns. • Once the flame has died down add the salt and pepper, to taste. • Just before serving, add the fresh parsley. Serve immediately.

eeing your photographs in hard copy is just so much better than looking at it in the monitor. It also enables you to edit and analyse your images more easily, especially when you're working on sequencing a group of photographs, or even just archiving your best work. Sure, high-definition printers can cost an arm and a leg but nowadays there are more practical and, in fact, more efficient ways. Enter the Canon Pixma MG7170. I'm sort of a gadget geek, so I easily get excited with new gadgets in the market, especially when features that I haven't seen or tried before are introduced. Recently, I got my hands on the Canon Pixma MG7170 and, reading through its features, I couldn't wait to try it out. But when I took it out of the box and placed it in the corner of my room, the first thing I noticed was its modern design. I thought to myself, that’s a thing of beauty. First Impressions The first things I appreciated were the little things, like when the out tray automatically opens up by itself when it’s printing. That was pretty slick. Another smart feature that Canon put here is the Intelligent Touch System which selectively shows you the buttons for the options you need for a particular task. I worked as a User Interface Designer for more than a decade and I can definitely say that this is best practice in the industry.

Wireless Printing through Wi-Fi Usually, whenever I get a new printer, I have to rearrange my furniture in the room to make sure that the printer is located near the computer, particularly because the USB cable from the printer needs to reach the computer. Now, with wireless printing, I can put the printer anywhere I want. I can even put it in the kitchen if I wanted to. This sort of convenience is gold in my book. And, setting it up with Wi-Fi was surprisingly a breeze. More wireless options A new Access Point Mode has been introduced in these printers, and it is designed to answer the increasing demand for ad-hoc wireless printing between wireless digital capture devices and printers, without the need to connect them via a signal broadcast by a wireless router. This means that a visiting friend will be able to make use of your printer without you having to disclose the security pass phrase for your home

wireless network. For users with wireless digital cameras that support the DPS over IP protocol, or Wireless PictBridge as it is more commonly known, they will also be able to send their photos wirelessly to the Canon Pixma MG7170 wirelessly, over a local wireless network, without the need to connect the devices with data transfer cables. Printing Online Photos One of the features that piqued my interest was the ability to print photos from your online sites like Flickr, Facebook, Twitter and Picasa. Ever since I started photography five years ago, I uploaded all of my good photos in Flickr. So, I have a huge archive of photos online, and it's now instantly available for print with the Canon Pixma MG7170. Now, if I need a certain image printed, I don’t have to dig into my computer archives; I can just access Flickr through my printer. Though, I noticed that it takes a wee bit of time for the photos to be processed and printed... but after seeing the photos, the wait was worth it. Printing through Mobile Devices This one seems like something out of a futuristic movie. Just whip out your iPhone and start printing photos from there. Of course, you’ll need to install the free app in your smart device, the Pixma Printing Solutions. Although I don’t find myself using this feature much, since I prefer to print properly-processed photos, the convenience to print personal or family pictures is priceless. It is almost like a modern day polaroid: just shoot and print. If I were to have a party at my house, I can see myself taking a few photos, printing it in real-time, and giving it out for novelty’s sake.

Good enough for your portfolio, for trading prints, and definitely for just appreciating your works of art. Other Features The features I listed above are my favourite features of this new gadget. In addition to this, it still has a host of other functionalities, like the multi-card slot for photo direct print (JPEG) and direct scan of PDF/ JPEG files to memory card, direct print to CD, and the auto photo fix function – handy for personal or family photos. The Verdict The Canon Pixma MG7170 is definitely a great addition to my workflow. The convenience of having to print wirelessly from my computer, from my mobile device, and from online sites like Flickr makes it easy for us photographers so that we can focus more on taking good images. Printing is no longer a chore. For print quality, I’ve always believed that photographers should print out their photos to better gauge the quality of their image. This printer will definitely serve that purpose as it does your artwork justice.

Printing through E-mail I’ve seen this in the Canon Pixma MG7170 commercial, and I can see myself doing the same thing: you’re travelling somewhere and you see something you like and want to share it with your loved one. Take a quick photo, and then send it to your printer in your room by E-mail. Better yet, take a selfie with the words “Missing You”. Print Quality Now, we come to the most important feature of the printer for me: its print quality for photos. To be honest, I wasn’t expecting much since this is basically an all-in-one print/scan/copy device. If I want a high-definition fine art print, I would go to the professionals. But, I have to say, I was

where no one has gone before One-way ticket to Mars, anyone? Three Singaporeans have signed up for this maiden voyage from which there is no return By Cheryl Chia

or years, popular media has bombarded us with images of aliens invading the Earth. The reverse is about to occur. Human beings will, for the first time ever, colonise another planet. For the intrepid voyagers on this mission, it will be a one way trip – there is no return. Mars-One is a non-profit organisation that hopes to establish the first human settlement on Mars by 2023, with the guidance of advisors and prospective suppliers to create a viable place for humans to live. Mars-One will fund the mission, from sponsorship to broadcasting rights of every aspect of this mission – astronaut selection, training in a Mars-like mockup and eventually humanity’s first step on Mars. These space settlers’ lives on the Red Planet will be filmed and broadcast. This is truly an unprecedented and historic initiative.

Singaporean Space Voyagers More than 78,000 applicants from all over the world have registered to be one of the first human settlers on Mars. Out of the many thousands, at least three applicants are from our sunny red dot of Singapore. Choo Peng Hong, a 39-year-old adventure course centre manager, Roy Chan, a 34-year-old polytechnic lecturer, and another man known only by his first

name, Robinson, a 54-year-old man with grown-up children, are attempting to fly the Singapore flag on a new, uncharted frontier – Mars. Roy says, on his decision to apply, “I feel it is the most awesome thing – on one hand to be able to serve mankind by being a pioneer in space exploration to the planet Mars, like how our early forefathers who came from all parts of the region to Singapore to develop the country, and on another hand to be able to realise my childhood dream of being an astronaut [and] having the experience of floating in zero-gravity environment.” “Mars-One allows me the opportunity to fulfil these two purposes,” he says. Most Coveted One-Way Trip Dr Norbert Kraft, Mars-One Chief Medical Officer says, “Applicants we have received come from a very wide range of personalities, professions and ages. This is significant because what we are looking for is not restricted to a particular background. “From Round 1, we will take forward the most committed creative, resilient and motivated applicants,” he explains. The first round of selection ended in August and the selected candidates will undergo an intensive six to eight years of training to prepare themselves for the harsh living conditions in a simulated environment of Mars. From their online profiles, it is

apparent that both Choo Peng Hong and Roy Chan are fans of science-fiction, and have been interested in the concept of space travel, which prompted their application to the Mars-One initiative. Alien Ambassadors? Roy speaks of his intentions should he be selected: “I want to foster goodwill by making an entirely new living environment where humans will live in harmony and peace without conflicts and desire in the form of greed.” “Everybody will be invested in a common goal, which is the development of the planet Mars into an even more habitable and friendlier living environment for our future generations to come. I feel, that is my purpose in life, in tandem with my ambition,” he elaborates. Should one of these three bold Singaporeans finally make it into space, it would also be a historic moment for Singapore. “By being the first Singaporean astronaut, I hope to inspire more Singaporeans to become interested in space aeronautics and exploration as well,” says Roy. After Earth, Mars is the most habitable planet in our solar system. Its soil contains water and the temperature on its surface is manageable. There is enough sunlight to use solar panels and its gravity is 38 per cent that of Earth’s, which is sufficient for the human body to adapt to in good time. It has an atmosphere, albeit a thin one, offering some shielding from radiation from the cosmos. The only other celestial bodies close enough from Earth are our Moon and Venus. There are far fewer resources on the Moon than on Mars, and one Moon day lasts a whole Earth month. It also does not have an

atmosphere to form a barrier against radiation or small meteoroids. Venus, among other things, is too hot at 400 degrees centigrade. What will the participants do on Mars?

The settlers will spend their time exploring the Martian surface, doing experiments, construction work and farming. This will be in addition to regular system operations including health and fitness evaluations, monitoring of all systems parameters and conferences with mission control. Why not choose experienced astronauts?

Astronauts, as we have known them from the space-faring

missions until now, are often pilots, medical doctors, science payload experts or engineers. For a crew that will permanently settle on Mars, the most important skill is their ability to function in a group. The best individuals fulfilling such criteria can be found in all backgrounds. Of course, they need to be healthy and smart. Mars-One will train the astronauts for seven years: long enough to learn to solve any medical and mechanical problems and to grow their own food. Why settle on Mars permanently? isn’t there a way back?

There is no way to go back. Going to Mars is a decision that you make for the rest of your life. The technology for a return mission does not exist.
