HK's legendary hit serial drama Oshin, written by Sugako Hashida, is centred on the life of an indomitable woman from a poor farming village, roughly 100 years ago. With an average of 52.6 per cent ratings and peaking at an incredible 62.9 per cent when it was released in the 1980s, it is clear that millions of Japanese and international viewers were moved by the poignant struggles of Oshin and her life. The phenomenal saga captured the attention and evoked strong emotions of viewers around the world. Oshin was broadcast in 68 countries. Now, Oshin the movie is produced by Sedic International, known for its Academy Award-winning film Okuribito (Departures).
An Epic Yet Relatable Tale The story of Oshin is set in the Meiji period and revolves around the young daughter of a poor family in Yamagata Prefecture, who’s sent away to work for a wealthy family to earn a living. The overarching theme of perseverance in hardship became a trademark characteristic of Oshin, which made the original series incredibly popular throughout Asia and the world. Even in Singapore, many viewers were captivated by the show. The original drama spanned most of Oshin’s life, but the new movie will mainly focus
has influenced his musical style. A former professional surfer who was forced to quit one week after his debut due to a serious injury that left him with 150 stitches in his forehead and missing a couple of teeth, he turned to musicmaking as an alternative career. His music is not groundbreaking, experimental or edgy. He sticks to what he knows best, which are simple yet beautifully charming songs about his day-today activities. Many of them are inspired by matters of the heart.

A Highly Challenging Role Young Kokone studied hard for her role of Oshin in the film by learning a Japanese dialect from 100 years ago. The young actress also underwent a crash-course in voice acting to help her absorb the role further. Demanding, over two-hour long rehearsal sessions didn't break little Kokone's spirit. She recalls, "When I wasn't focused, the director would raise his voice and call me over. He can be very serious but mostly he's very funny.” Aya and Kokone had to immerse themselves in an icecold lake in winter.

Aya recalls, "I'd been preparing myself mentally for this scene since I got the part.” But, a day before they shot the scene, the director told her that it'd be even more difficult than the famous scene in the original TV drama. She says, "The director casually told me, that he wanted me to submerge. I was like, ‘Excuse me?’ " Director Shin Togashi as well as Kokone’s co-star raved about her performance and how she has developed as an actress. Jack Johnson makes me feel lazy. The moment I put on any of his albums, my entire body gets hit by a wave of relaxation, a sucker-punch of calm and a dropkick of doziness. While that may not sound ideal for most artistes, Johnson is the King of Chill. There’s just something about the combination of his guitar-playing and relaxed vocal delivery in that soothing voice of his that instantly removes any tension that my mind, body and soul are feeling. It’s a whole lot quicker and cheaper than a full-body massage and you can enjoy it anywhere, anytime. From Surfer Dude to Musician The fact that Johnson is from the Hawaiian Islands probably has a thing or two to do with his laidback vibe which, very clearly,

Replicating Success? “Better Together” and “Banana Pancakes” are two of his biggest hits so far, and on From Here to Now to You, his 6th album, he may be trying to replicate their success but doesn’t quite succeed. The problem is that after a while, the songs kind of blend into one another and it gets a little hard to distinguish one from the other but, hey, the overwhelming sense of Zen you feel when listening to this will soon have you forgetting that. Captain Phillips: Outwitting Somali Pirates This real life tale of courage on the high seas has Tom Hanks at the helm in the titular role Based on a true story and the book “A Captain’s Duty: Somali Pirates, Navy SEALs and Dangerous Days at Sea” by Richard Phillips, Captain Phillips is a nuanced, multi-layered portrayal of the 2009 hijacking of the US container ship, Maersk Alabama, by a crew of Somali pirates. Real Life Courage Desperate Somali pirates, led by Muse (played by Barkhad Abdi), board Captain Phillips’ (portrayed by the stellar Tom Hanks) ship and take control, holding him hostage. The series of events that are set in motion reveal the economic divide that ignited them and expose the rift between those who are within the lucrative ebb and flow of international trade and those who are left outside of it. A Statement on the Times Director Paul Greengrass is no stranger to documentaries, having directed Bloody Sunday (a 2002 film about a British Army massacre), and Green Zone (about the Iraq War). His research found that the depletion of fish in Somali waters due to industrial overfishing was a contributing factor to Somali piracy. “The stand-off between Phillips and Muse is a thrilling high seas siege, but one that speaks to the larger forces shaping the world today,” Greengrass says. Gritty, Realistic Filming Watch out for the taking of the
Alabama, one of the film’s most dramatic scenes, which was done without using Computer Graphics (CG) effects. “One of the most difficult feats of the entire shoot was… bringing a skiff (small boat) with four actors alongside a moving cargo ship with a tremendous undertow; getting close enough so that they could put the ladder up and execute the boarding manoeuvre… the film gives you the sensation that you really are there, and they are right alongside that ship and going up, because they are,” says Greengrass. High Tension on the High Seas Phillips’ first mate, Murphy, and the rest of the crew go into hiding, and they manage to overpower Muse when he is searching the ship alone after his barefooted comrade steps on broken glass. Phillips tries to broker a deal to have the pirates leave their ship with $30,000, but they turn the tables on his crew and take him hostage instead. A standoff ensues, with Phillips and the pirates fighting for their lives as the US Navy tries to rescue Phillips. This visceral and truthful film is one that will leave its mark on the audience. Saving monsters Dr Zeb Hogan is back to investigate the challenges that mega fish face in Monster Fish, Season 4. This time, his new series of adventures will be to help to save the world's big fish. Hogan will head deep into the wild for some heart-pumping encounters with the biggest and most dangerous river monsters on the planet. In each episode, he examines the environmental challenges that these mega fish face — from climate change to pollution. Some of these goliath fish have been around since the dinosaurs and now, like their predecessors, they face extinction. Hogan, a fish biologist and National Geographic Fellow, will also embark on his biggest fishing adventure yet: a mission to distinguish fact from fiction in some of the most remote regions of the planet. Legends Uncovered Monster Fish, Season 4, follows Hogan as he looks for everything from mythical giant catfish to the king of the Alaskan rivers.
He works with researchers, fisherman, enthusiasts and eccentrics to find some of the strangest fish yet. Follow Zeb on a 48,000km quest for fish that are so elusive that they have seldom even been seen. Hogan will attempt to bring these subjects of legend to light. Fusion confusion? In the previous episode, the young apprentices were taught how to cook duck, and white rojak. NOW, they learn a modern fusion dish Twelve youths from underprivileged backgrounds have been taking part in Chefs with Heart, a pilot training programme where three local celebrity chefs teach them culinary skills. Third Food Challenge In this 7th episode, Chef Heman Tan from JP Pepperdine teaches the young trainees how to cook a fusion dish – laksa stir-fried spaghetti with curry and mustard marinated boneless chicken leg. The sound of it already makes one salivate. The day before, he had taught them how to make that dish with brown rice instead of spaghetti. Chef Heman begins by demonstrating how to slice the chicken leg in a zigzag manner, then instructs them to first marinate the chicken, boil the pasta with salt and oil, and then pan-fry the chicken. Each young trainee has 20 minutes to complete their dish. Making Progress These at-risk youths have been taught by Chef Willin Low of Wild Rockets Group, and lead trainer, Benny Se Teo of Eighteen Chefs so far, and will be employed
by potential Food & Beverage industry (F&B) employers at the end of the show. They are starting to look more at ease in the kitchen now, slicing onions and green peppers less awkwardly than before. While boiling the pasta, a few of them try a strand of their pasta to check if it has been fully cooked. One of them manages to pan-fry his or her chicken into tantalising perfection, and the rest are also plating what looks like decent, presentable dishes. We’ll see. Facing the Judges As the judges sample the dishes, Chef Heman gives the young apprentices feedback on improving their hygiene standards while cooking, before critiquing each individual’s dishes. For one of them, the pasta is not too oily, but the taste is lacking; for another, plating should be improved on and his food should not exceed the rim of the dish. Timbre, a stalwart of local music, has recently launched new dishes at its branch at Gillman Barracks for a more diverse menu By Chia Hui Jun Tucked away in the serenity of Gillman Barracks, Timbre @Gillman provides an ideal chill-out environment with its abundant greenery; and the wooden chairs and tables give it a rustic feel. This latest and largest Timbre venue has a recently updated menu with some new food items, and we tried some of them. A Flavourful Starter The starter was Clam Veloute ($7), where fresh clams and diced celery gave it a little texture, served with garlic toast. For the uninitiated, a "veloute" refers to soup thickened with

egg yolk, butter and cream, or just soups thickened with butter and/ or cream. The Yellow Fin Tuna Tataki Salad ($14) was much a better entree. The fresh yellowfin tuna slices came with Japanese cucumbers, romaine lettuce, Spanish onions, and cherry tomatoes tossed in delicious sesame ginger yuzu dressing, giving it a delightful burst of flavours. Next, we had the Charcuterie Plate ($22), with prosciutto ham, chorizo sausage slices, and tasty smoked duck breast, served with white ficelle toast. The OpenFaced Foie Gras Burger ($22)
came with a generous portion of foie gras and aioli spread atop soft, toasted focaccia bread, and caramelised pineapple slices for a dose of sweetness. Mixed Mains The Almond & Sage Crusted Lamb Rump ($33) was visually appealing and the pumpkin puree was yummy but, unfortunately, the meat tasted a tad too gamey. The Crispy Skin Barramundi Aux Provence ($27) was a better choice, with fresh, tender fish, root vegetables, and warm capers tomato salsa with raspberry vinegar. It was certainly a filling meal. Having nice local bands playing live seemed to aid the digestion process. We rounded off the meal with Chocolate Fondant ($10). Thick, warm chocolate oozing out of the pastry, sprinkled with chocolate sauce and raspberries saved the day, where some flavours weren’t too great. To be honest, most of the food was fair, but if you’re looking for a place with live music where you can let down your hair with friends over drinks and more than tapas, Timbre @Gillman may just be the place for you. Pasar Bella has gotten a little more diversity with the addition of James’ Butchery & Co. The aforementioned James is the owner, James Goodenough, a local butcher who used to work for Mr Ernst Huber of Huber’s Butchery.
Crealto Tiramisu Chef Kentaro Torii of Forlino will be serving the delectable Crealto Tiramisu ($15++) at Forlino. “They can expect a combination of pleasant bitterness of Crealto and richness of Mascarpone cream, which gives a hint of nut and links to the flavour of Amaretto,” he says. Crealto Coffee Sunrise Chef Nicholas Vergnole, Executive Pastry Chef at Me@ OUE, has come up with a unique dessert named Crealto Coffee Sunrise ($17++). “I wanted to emulate the effect of waking up bright and early on a cold winter’s morning, whilst sitting by an open fire and taking in the sunlight while enjoying an excellent cup of coffee,” he says. The special Crealto-infused creations are available only in October, at each respective restaurant.

Legions of young people post their views and experiences on their personal blogs, hoping to either keep a record of their thoughts or, more popularly and profitably, attract an audience. One of the easiest ways to add content to your blog is to write about food, but quality is important.

Using the right equipment Just as a chef uses the right
Capturing the details of the food Cameras on phones have smaller lenses and chips than comparable digital compact cameras. These are the two most important factors which contribute to the ability to capture details. On a compact digital camera, the lens is larger, allowing more details such as the marbling of aged Wagyu beef, or the flecks of oregano on a fillet of sea bass to reach the imaging chip. The larger imaging chip in a compact digital camera can then record the minute details and subtle tonality of the food. It is the details that allow the eye to ‘taste’ the dish.

Do you need better photos? A picture is worth a thousand words. It cannot be truer for photography. You will need to write a thousand words and invent new adjectives just to describe what one good photo can do. Still, it’s horrendous the kind of shoddy pictures that bloggers are using for their posts. A beautiful dish poorly photographed will attract very little attention, while a nice photo will be visually appealing, enticing and more memorable.
Compact digital cameras have better low-light performance Most restaurants have mood lighting – low-light conditions. If you only carry a phone camera, the photos taken under these conditions will be very “grainy” and very low in contrast. For a blogger, this is a cardinal sin. Fortunately, a compact digital camera performs better. It will be able to render the tones and shadow areas more smoothly. And, as an added bonus, you can reduce shutter speed to allow more light in, therefore making the image appear brighter. Getting in real close to your food Another way to capture your food in an interesting manner is to get up close. Avoid the brim of the dish, the dinnerware, the background of the restaurant and get into the heart of the dish. Using the macro function, a fancy term for extreme close-up, focus on the gravy and textures. This is a very powerful way to give your readers a strong sense of the actual food served, and let them ‘taste’ it with their eyes. If that happens, then you know you’ve got your readers hooked even before a single one word is posted.

Old Fashioned Pancakes Pancakes, the quintessential breakfast food, are a deliciously sweet way to start the day By BubbaMama.com Ingredients • 1 1/2 cups plain flour • 3 1/2 teaspoons baking powder • 1/2 teaspoon salt • 1 tablespoon white sugar • 1 egg • 1 1/4 cups milk • 3 tablespoons melted butter Method 1) With a non-stick pan, melt the butter. Be careful not to set at too high a temperature. If the butter sizzles and bubbles, it is too hot. Pour

the melted butter into a small dish and set aside. Use a kitchen towel to wipe the pan clean. 2) Sieve flour, baking powder and salt in a large mixing bowl. Add the sugar in and mix well. Make a well in the middle, and add the egg, milk and melted butter. Mix until smooth for about 3 minutes. Do not over mix or it will become tough. 3) Let batter rest for 10 minutes. Heat up the pan again to medium heat. Scoop the batter onto the pan, using the back of a ladle to spread out the batter. Each
pancake is about 1/4 cup of batter, so you should be able to get 8 to 10 pieces. 4) The batter will form holes at the top when it is done. When the holes have formed, check the underside. If the underside is light brown, you can flip your pancake to the other side. 5) Serve hot with maple syrup or other toppings like cut fruits or whipped cream. Tip: You can add cinnamon powder and vanilla extract into the batter as well. Just mix the cinnamon powder with the dry ingredients and vanilla essence with the wet ingredients. There was an apple diet that I went on in my younger days and I was so angry all the time because I was hungry! Was the first thing on your mind, after pregnancy, to lose weight? After my pregnancy, I had to eat
a lot of things to “bu” – replenish energy – so I had to eat a lot of Essence of Chicken, vinegar with pig knuckles with all the oil in it; I had to eat all of it. I didn’t diet the first two months and, afterwards when I was done, I started eating whatever I wanted. Finally, the dietician from Marie France spoke to me – I realised I was missing some elements in my diet such as milk. She just balanced everything out. How did Marie France Bodyline help you along? My treatments vary greatly and, sometimes, I don’t even pay attention anymore as I am reading. It just feels like I am getting a massage and they are putting cream on me and I just relax and enjoy it!

How is life as a new mom? I really like my new hours. My schedule is just all in place. If I need to work, I know my baby is in good hands. When I sleep, I still sleep with my ‘security blanket’. Mine is just this little fur that used to be a headband but I still sleep with it and I need to have it against my face. And, I bring it with me everywhere. Yes, I’m 30-something and I still have it! What makes you happy? My daughter. Whenever I am around her I am happy. When I look at her picture, it makes me happy. I am the typical mother that shows people pictures and forces people to watch my videos. My baby is almost six months and I am loving motherhood.

f you are what you eat, then giving your child the best nutrition would correlate to a better growth. A new study conducted reveals that serving frequent meals and snacks to toddlers – as part of an age-appropriate and wellbalanced diet – plus the amount of time spent reading to the toddler, would result in a positive impact on language development. The study conducted by Abbott gathered data on 1,503 toddlers in Singapore, aged 18 to 20 months and 25 to 27 months, to investigate toddler bilingual vocabulary norms. In both age groups, the number of meals and snacks consumed per day and the number of hours the child that was being read to were positively linked to
expressive vocabulary. Smart Eaters More than 80 per cent of toddlers in the study consumed 500ml of milk, and 95 per cent of the children were drinking formula milk. The toddlers also consumed, on average, 3.5 meals and snacks a day. Every additional meal or snack consumed was associated with eight more words and 19 more words in expressive vocabulary among both age groups. In particular, milk is a fundamental part of a child’s diet and kids aged one to two years old should drink three glasses of milk a day. It also helps children who don’t finish their meals reach a proper level of nutrition.
New Frontiers for Singaporean Kids The study also reveals various aspects of language development in Singaporean children. A majority of toddlers are brought up in a bilingual environment, their first words are usually between 11 to 12 months old, and girls tend to have a larger vocabulary than boys of a similar age.
