fter the wildly successful first film, Thor, the filmmakers reached deep into the archive of Norse mythology and comic book history for a new film, painting an epic adventure of spectacular proportions. Thor races to restore order to the cosmos but an ancient race of the malevolent Malekith comes back and plunges the universe into darkness.

Will The Enemy Prevail? This ancient race led by Malekith is ominous, as Thor is faced with an enemy that even Odin and Asgard cannot withstand. Thor, the “Mighty Avenger”, pits his skills against a covert enemy older than the universe itself. And, this battle to defeat the enemy is his most perilous and personal one yet. It may reunite him with Jane Foster, or he may be forced to sacrifice everything to save the world. Drawing on universal and familiar themes, the film pits duty and family allegiance against personal aspiration and love. Carrie: Mess with the shy girl at your own risk roles beyond her years such as in Kick-Ass and Let Me In, the actress was perfect for the role of social misfit Carrie. Imperative in her mind was to make it as emotional as possible. “It is probably the most vulnerable I’ve ever been as an actor,” says Moretz. “So in some ways, it’s kind of terrifying for it to come out but at the same time, it’ll be kind of an awakening for me because I’ve never been able to show that level of my personal emotions on screen before,” she says.

This is a reimagining of the classic horror tale about Carrie White (portrayed by Chloe Grace Moretz), a shy girl outcast by her peers and sheltered by her deeply religious mother (played by Julianne Moore). Carrie unleashes telekinetic terror on her small town after being pushed too far. from the master of horroR The history of Carrie dates back to April of 1974, when Stephen King launched his celebrated career as a horror and thriller author with the release of his first published novel, Carrie. Metro-Goldwyn-Mayer’s (MGM) Jonathan Glickman invited Kimberly Peirce and Kevin Misher to helm the remake.

“What I wanted to capture was the essence of Stephen King,” says Peirce. “I went back to King’s characterisations of Carrie, her mother, and the girls, and to Carrie’s response to being bullied. Carrie is a misfit and an outcast who, like most of us, longs to be loved and accepted,” he says. “When she discovers she has special powers, she feels hopeful about her existence in the world and the fact that there may be others like her… I was thrilled to shape this into a super-hero origin story,” Peirce adds. Vikings: The human face of the “scourge” The lives of the fearsome Vikings are brought to life on screen in a new series, giving “the scourge of Europe” human faces “Vikings” follows the colossal adventures of Ragnar Lothbrok (played by Travis Fimmel of “The Beast” fame), a man who is always looking to break through barriers and to discover new worlds to conquer. With the help of his jester friend, Floki (Gustaf Skarsgard of The Way Back), they build a new generation of boats – faster, sleeker and more beautifully-crafted than anything else on the sea. A Different World & Culture The series will also delve into how the Vikings worshipped ancient Norse gods such as Odin, Thor, Freya and Loki. Ragnar claims to be a direct descendant of Odin. While “Vikings” is filled with

conflict, warfare and bloodshed, it is a family saga at heart. A young farmer and family man, Ragnar is deeply frustrated by the unadventurous policies of his local chieftain, Earl Haraldson (Gabriel Byrne), who continues to send his Viking raiders East every summer to the Baltic states and Russia, whose populations are as poor as themselves. Miley Cyrus may look like she’s about to fall off the deep end the way Lindsay Lohan and Amanda Bynes did, but with all the gossip that’s been invading our newsfeeds and tabloids, you can’t deny – this is one sharp girl. IN THE SPOTLIGHT Miley’s been in the spotlight in the last month, with her eyepopping twerking at the MTV Video Music Awards, the end of her engagement with Liam Hemsworth and her recent music videos, just to name a few. And, when you’ve got an album coming out, any publicity is good publicity. NOT ALL THAT ‘BANGERZ’ For all the effort that she’s been

school, I was in a punk rock band. The brother of one of the kids I was in the band with was an architect, so his computer had graphic design software. We had his help for some concert posters and after I saw it I thought, I want to do this for a living; I want to learn how to do graphics with computers. But it was very expensive because the school was private, so I went to study political science. After two years, I found some freelance little jobs to pay for design school, and that was it.

Power 98 Music Review putting in to publicise her 4th album, Bangerz has fallen a tad short of explosive. Don’t get me wrong – this girl can sing, and she has some really strong songs on the album, but the tracks that I fell in love with weren’t the hard-hitting ones. The Britney-Miley collaboration, “SMS (Bangerz)”, was a little too try-hard, and though I did like the sample of Salt-N-Pepa’s “Push It”, it did sound repetitive. I also wasn’t a fan of “4x4” (featuring Nelly) – the accordion adds an interesting flavour, but the country-twang sounds out of place on the mostly hip-hop and pop album. BUT IT ‘TWERKS’ With Pharrell’s stamp of approval, “#GetItRight” is a solid track that may just get you whistling too, while her first single, “We Can’t Stop”, has a hook that cannot be denied. The break-up anthem and second single off the album, Wrecking Ball, has to be my favourite, with the emotional lyrics and heartfelt crooning. A good follow-up song would be FU (featuring French Montana) which is furious and indignant at the same time, perfect for empowering you after a breakup. So, yes, this little Disney girl has definitely grown out of her past, and will still have us listening. Tune in to Charmaine Phua on weekdays, from 2pm to 4pm. imone Legno is an Italian artist, designer and cofounder of the cult brand, Tokidoki, which means “sometimes” in Japanese. He was in town for the Singapore Toy Game Comic Conference (STGCC), and has collaborated with Coolcore Singapore to launch limited edition towels with special cooling technology. We spoke with him. What do you think of Singapore? I really love it. I love the people; I love the fact that everything is functional, and the design community. There is a lot of support from Singapore institutions. For example, even before I started to launch Tokidoki as a brand, as a freelance designer, I

was working on some projects by Central Narcotics Bureau. About ten years ago, I was doing mobile phone stuff for MTV Singapore. After that, I was bringing collaborations to Singapore through Le Sports Sac, and Onitsuka Tiger. I’ve done limited editions of stamps for Singapore Post Office. What makes you happy? My daughter, first of all. She’s brand new. [Laughs] Five and a half months. It makes me happy when people love Tokidoki. That’s why I like to do events like Comic Con (STGCC), and signing events because I’m happy when people appreciate my artwork. It makes me happy to make something new, and my life is full of positive surprises. What I have in my social life – my family, friends, travelling, work – I’m the happiest person in the world. When did you know that You wanted to do this for a living? When I was a teenager in high

What are some projects or collaborations that you are currently working on? I’m working on accessories, with Karl Lagerfeld, collaborations with Hello Kitty & Sanrio, and NUS. Next week I’ll be flying to Venetia in Italy for a launch event for a toy in the Guggenheim Museum. I’m in talks for building partnerships to expand the brand internationally, currently in South America, China, and Southeast Asia. Where do you get your inspiration from? I constantly think about how to transform things, and to watch things from a different corner. The idea for Sandy the Cactus, a character who needs water, came when I was in South Italy on a holiday to see my parents. It was very hot and there was nothing to see but sand, and cactuses. I was bored, and with my sketchbooks, I came up with a cactus character which almost looks like a bunny but has spikes. Then I put kids inside. They are pure, innocent and need the cactuses to protect themselves from the bad things. how did you develop such a deep interest in Japan? When I was little, Italy had imported many Japanese animation and TV shows and it was right at the end of the ‘70s and ‘80s when I was growing up. It was a natural attraction. Watching anime was so interesting, like watching Japan pre-Internet era – watching people eating with chopsticks, doors that opened in a different way, bullet trains, beautiful white cherry blossoms, students in uniform… all these things from the Japanese world touched me a lot. I started to buy some books and

enrolled myself in the Japanese cultural centre where there was a library, and they were showing old movies. Japan is full of mysteries and I started to love everything. There is the aesthetic side that is fun, minimalistic, elegant and artistic, and there’s the pop, crazy side that’s full of lights. All these things interested me as a creative person. What are your favourite things about Japan? Pop culture, food, and people. Go to see cherry blossoms in April because it’s beyond beautiful; spend a classic Saturday night with Japanese locals to eat, karaoke until morning to experience the city. Why this collaboration with Coolcore? Kate (Cheong, Director of Coolcore Singapore) demonstrated the product to me. She put the Coolcore product into boiling water, and in a short while, it came out ice-cold. It was really surprising technology and I try to do innovative things. I’m happy to be one of the few artistes who have done some funky products that are beautiful and functional at the same time. Could you tell us about your designs for Coolcore? We try to do a collection where [there] is something for everyone. The black and white design is more minimalistic, maybe for an older audience or someone who likes to have something not so flashy. Some are intricate, in the signature Tokidoki style, with detailed and interesting patterns. Some are inspired by one character; and there is also something more edgy – Tokidoki’s signature girls with tattoos; those which are more cute and sexy, and one that is of a mono-theme – based on a carnival. What would you like to say to all Singaporeans? I love Singapore and hope I can continue to come at least once a year for the rest of my life. What do you do during the weekends? The journey to that show seemed to be an enjoyable one for Julien, and Rachel Lim and Viola Tan of Love, Bonito. From Singapore to Paris Rachel and Viola watched Julien’s haute-couture show at last year’s FIDé Fashion Weeks and expressed their interest in working with him through Dr Frank Cintamani, Chairman of FIDé Fashion Weeks. Their dream became reality. Rachel says, “We cannot tell you how blessed we feel. We only knew about this in August and, before we knew it, we were in Paris! Everything was a whirlwind.” “We were just saying to Dr Frank that it would be nice if we could work with Julien and Dr Frank said ‘Why not?’ and linked us up,” she says. “We were initially very apprehensive but Julien was very humble and he was very open to our suggestions and that tore our

walls down,” Viola adds. Back to the drawing board Julien Fournié was impressed by the poise of the two ladies when he met them in Paris. He says, “I’ve only shown my couture and I am glad to work with these two exceptional girls from Love, Bonito. Everything was so easy, stress-free. It was a creative big-bang between the ladies and myself.” “The girls know the DNA of Love, Bonito so I decided on simple silhouettes for the contemporary woman. I am happy to work with the girls again whenever they want,” he says. He also said to Rachel and Viola that there are “a lot of people in Paris who are anticipating the collection”. More burger hybrids seem to be popping up in the great US of A, with one or two Canadian exceptions. Some of them sound so artery-clogging, yet you can’t help but be curious to try. Here are a few we found from the USA, land of the fa… Sorry, we mean free.

Garlic Baked Sri Lankan Crab: 2kg of savoury goodness

S

urrounded by auto repair shops in the far edge of Sin Ming industrial estate lies a hidden culinary treasure from the sea. Well, at least it originated near the sea. Decades ago, Ubin Seafood Restaurant was located on a jetty shack on the northern shores of Pulau Ubin. Throughout the years, it had been developing and perfecting its delightful dishes for the few Singaporeans who ventured onto the remote island on weekends. Although it is primarily a seafood zi char restaurant, it has also developed a large selection of signature western, non-seafood dishes to complement its seafood offering. Fortunately for rest of us less adventurous types, they have moved to the mainland and brought all of their perfected dishes for us to enjoy. Here are a few signature items for you to savour. Hearty Rib-eye with a Surprise Local Twist Surprisingly for a seafood restaurant, one of their most popular choices is the US Angus Rib-Eye Steak ($12 per 100g). Their rib-eye was perfectly broiled, with nicely charred edges, to a medium rare to balance the tenderness and firmness. It was pre-cut to share and typically served on a wooden chopping board with potato wedges and caramelised onion sides, with bits of smoked bacon. They use USDA Choice grade beef, which has less marbling (fat between the muscles), and therefore has a firmer feel to the bite, whereas, the much more expensive US Prime grades or trendy Japanese Wagyu grades which are fattier have a waxier feel and taste. Now for the surprise: It is also served with fried rice, ‘sapoh fun’ style, and topped with charred fat from the rib-eye steak. The combination of the salty sweetness of the rice and the meatiness of the rib-eye was delightful. The poor potato wedges were easily upstaged by their unlikely Asian

carbo contender. Fried Hokkien Prawn Noodle Special: A Heavy Weight Contender Hokkien prawn noodle is a ubiquitous, and often mundane, staple offering in Singapore with many stalls and seafood restaurants vying for the claim to being the best in town. Like many Singaporeans, I’ve eaten my share at these famous places. So, when I tried New Ubin Seafood Restaurant’s Fried Hokkien Prawn Noodle Special ($12/$24), I wasn’t expecting it to be dramatically different – I was wrong. The seafood ingredients were generous – large prawns, pork slices, and eggs make it visually appealing, and the addition of whole baby squids, as opposed to the conventional sotong rings, was a pleasant discovery. The taste was complex and flavourful, with the ingredients working together to form a salty and balanced sweetness. The “wok hei” was apparent but not overpowering. The gravy was smooth, thick and rich with a firm taste of the sea. When asked why the taste was different from the others, Mr Pang revealed that because they are a seafood restaurant, they are able to use a very high quality seafood broth to serve as the base for the dish. Moreover, the whole baby squid added additional punch to the flavour. What’s a seafood restaurant without crab? A top competitor for the rib-eye at New Ubin Seafood is the Garlic Baked Sri Lankan Crab ($60 per kg). This is serious seafood served with XXL Sri Lankan monster crabs, fresh-flown live daily, with claws the size of my palm. Unlike its chilli and black pepper crab cousins, which they also serve, this dish isn’t smothered with overwhelming gravy or spices. The crab is baked under a layer of copious whole bulbs of garlic in a wok. The roasted whole garlic bulbs

are served along with the beautiful orange-red crab. As with such a large crab, the meat comes out of the shell in cotton ball sizes, unfettered by shell bits, making it a sheer luxury to eat. Unlike the big, bold flavours of the chilli and black pepper masking the quality of the crab, the infusion of baked garlic – gentle but obvious – enhances the freshness and sweetness of the crab’s meat. And, don’t forget to eat the bulbs of garlic. It has been baked soft and tender. The pungent “garlicky” blast that you’d usually experience when biting into a clove has been mellowed by the heat, giving it a soft texture with sweet garlic tones delectable to the mouth. This is certainly an underrated dish that needs to be tried!

Cronut Burger OK, granted, this one isn’t from the USA. It’s from their neighbour, Canada. These Cronut burgers from EPIC Burgers & Waffles in Toronto caused quite a, well, jam. Literally. The Cronut burgers contained tainted maple bacon jam from the chain’s supply partner, which caused mass food poisoning. Luther Burger Legend has it that this burger was invented by the singer Luther Vandross but the veracity of this story is unknown. It comprises a standard cheese burger but in between a Krispy Kreme, or other variant of glazed doughnut, and can run up to a 1,500 calories!

Avoiding the crowd Unlike many Singaporeans, I am too impatient to queue. And since New Ubin Seafood Restaurant has a strong regular following, it’s practically impossible to get seats on the weekends without a reservation. I recommend going on Mondays through Thursdays to avoid the crowd. And, locate it on a map first to familiarise yourself with the location. Ramen Burger Created by Keizo Shimamoto of Smorgasburg and combining the worst of college foods, ramen and burgers, you get the Ramen Burger. It consists of a fresh USDA Prime ground chuck beef patty in between ramen noodle patties with a leaf or two of vegetables in between with special sauce. This “burger” fad seems to be taking off – they were last seen at this year’s Oktoberfest in the USA. Mac Attack Chicago’s Rockit Burger Bar came up with this beauty. A gourmet burger sandwiched between deep-fried macaroni and cheese “bread”. Rockit’s answer to the ramen burger, this burger has been christened “best thing ever” by celebrity blogger Perez Hilton. Rockit Burger Bar also has gems such as a venison burger topped with foie gras, apples, red wine jam and truffle fries. Quadruple Bypass Burger From the infamous Heartattack Grill, where people above 350 pounds or 160kg eat for free and the staff dresses up as nurses and doctors. Almost everything is steeped in grease and fat. They were voted for having the most caloric burger (as they so proudly proclaim on their website) with their Octuple Bypass Burger. Several people have collapsed from real heart attacks in this joint. Try at your own risk.

These types of shots are called close-up or “macro” shots. Fortunately, this is a simple technique which doesn’t require much fuss, but has great impact. CLOSE-UP SIMPLICITY AT THE TOUCH OF A BUTTON Simply set your camera to the icon ( ) with the flower. Almost every consumer camera, from phone cams to digital compact cameras, has one. Typically, they are located on the dial, a button, or in the menu settings on your camera. When the camera is set to close-up (or macro) mode, it allows the camera to focus closer – much closer than it ordinarily could, to the subject matter. By moving closer, the picture of the food naturally gets bigger and more dramatic.

THE RIGHT CAMERA FOR THE JOB Phone cams are generally convenient, but they are limited in their ability to capture the details. Take a moment to look at your phone’s camera lens. Chances are, they are the size of a pinhole – tiny, very tiny. Their tiny-sized openings are terrible at squeezing fine details through. (A technical principle too lengthy to explain here.) Fortunately, when it comes to details, you can use your compact digital camera. They have larger lenses and larger sensors. Both features easily outperform in terms of capturing details. And, in terms of convenience, the latest compact digital cameras are just as portable and as compact as handphones. So, if you are taking photos for your blog or sharing it with your friends, try using a compact digital camera in the close-up mode; and don’t be afraid to get within centimetres, literally, of your gourmet dish!  With a compact digital camera set to close-up (or macro) mode, you can move your camera literally centimetres away from the food. RICHNESS IN DETAILS The whole objective of getting closer is to capture the fine details. The glistening oil, moistness, texture of meat, sprinkles of spices, or even the steam rising from piping hot soup bring out the visual richness of food into your photos. But you’d need the right type of camera to achieve that goal.

FOODMANIA

Ingredients • 10g garlic, chopped • 10g yellow onion, chopped • 2 tablespoons white wine • 6 tablespoons water • 80g fresh pasta tagliolini (or 120g dry pasta Spaghetti) • 60g crayfish, shelled • 1/2 chilli padi • 40g Roma tomatoes • 20g cherry tomatoes • 10g extra virgin olive oil • 5g unsalted butter • Sugar, salt & pepper to taste • 2 Basil Leaves (chop one only; leave the other for garnish) Method 1. Add water to a pot and bring it to a boil. Add Roma tomatoes to boiling water for 30 seconds and transfer tomatoes to a separate bowl of ice water to prevent the tomatoes from cooking further. Once cool, peel off the skin. 2. In a pan over medium heat, add some oil. When the oil begins to heat, add the onions and garlic and cook until soft. Add peeled Roma tomatoes,

1 tablespoon of wine and 3 tablespoons of water to the pan and cook for 20 minutes while stirring constantly. 3. Add sugar, salt, pepper and chopped basil leaf to taste and set aside the tomato sauce. 4. In another pot, add water and boil fresh tagliolini for 4 minutes (8 minutes for dry pasta). Drain water when boiled and set aside. 5. In a separate pan, add olive oil and when the oil begins to heat, add chopped garlic and sauté until golden brown. 6. Add crayfish meat and pan- sear for about 1 ½ minute. Add 1 tablespoon of white wine, chilli padi, cherry tomatoes, 1 ½ tablespoons of tomato sauce and 3 tablespoons of water (or vegetable stock) and let it cook for 3 minutes. 7. Add cooked pasta and butter into the pan and sauté until sauce is thickened. 8. Plate the pasta and add a basil leaf for garnish. Serve immediately.

ucked along a quiet path in the heart of bustling Orchard Road is Sidewalk Gallery Café, a café run by humble yet passionate people who aim to provide good food while aiding the less fortunate at the same time. Sidewalk Gallery Café, located on one side of the YMCA building, is a café and social enterprise programme that provides on-job training to beneficiaries with special needs, through which they learn skills and gain work experience that will increase their chances of full-time employment at any Food & Beverage (F&B) outlet.

How the Café is Run Sidewalk Gallery Cafe is a Uni-Y@ NUS student initiative, and is run by students from the National University of Singapore (NUS). Uni-Y (University YMCAs) is a student-run service club of YMCA

that strives to make a difference to its beneficiaries as well as to its volunteers. YMCA has its own Uni-Y in each of the three main universities in Singapore – NUS, NTU and SMU. Uni-Y believes in developing volunteers to be servant leaders through three main programmes: Community Service, Social Enterprise and International Service Programme. Some of the ways in which YMCA helps the initiative include providing the space and the setting for the café, and linking the volunteers with those who are potential trainees and staff, whom they can help. who Benefits? Essentially, the cafe aims to provide work exposure for the intellectually-challenged, allowing them to better integrate into society through

interaction with customers. Through this interaction and work exposure, their chances of full-time employment at any F&B establishment are also increased. Currently, Tai Yuan, 27 years old, is the sole beneficiary in the programme. The people behind Sidewalk Gallery Café are eager to bring in more beneficiaries in the near future. “We provide them with work experience by training them how to find customers a place to sit, to take orders and to serve them. But the main thing is for them to interact with the public, so that they are better able to integrate into society and to help themselves,” says Sherlyn Teo, an undergraduate and one of the volunteers in Uni-Y@NUS helping to run Sidewalk Gallery Cafe. All the volunteers there are from Uni-Y@NUS, and come from different faculties of the university.

Sidewalk Gallery Cafe also serves as a channel for its customers to better understand these beneficiaries through greater interaction with them, thus resulting in greater acceptance and understanding of the intellectually-challenged in our society. Savoury to Sweet Sidewalk Gallery Café’s menu is described as “American, breakfast and brunch”. There is savoury fare such as Beef Lasagna and Chicken Mushroom Tarts. There are also dessert and snack items, such as the Molten Lava Cake, salads, and nachos with cheese. Beverages include Sidewalk Specialty Iced Tea, brewed coffee and juices. Sidewalk Gallery Café was set up in Oct 2011. This year, it re-opened in mid-August after a month’s hiatus, with a new menu. Charity for Men’s Ailments Movember is an annual, monthlong charity initiative, held across the 30 days of November. The initiative encourages men to grow a Mo’ (slang for Moustache) and effectively become walking, talking billboards for commonly unspoken men’s health issues, such as prostate cancer and depression. Revealing Findings It was found that scents can make or break a good day. The stench of garbage, the trail of stale smoke or the putrid smell of vomit were ranked as the top three unpleasant odours across the five countries polled, and can ruin

even the best of experiences. At an event organised by Ambi Pur, “Smelly to Smiley”, there was an activity where scented papers were passed around, and guests were asked to guess what each scent was. Even though not everyone could identify the scents correctly we all agreed which ones were pleasant and, others, unmistakably unpleasant. Thus, it makes sense to ensure that one’s home and office smell pleasant as a means of improving moods and impressions of the people around you. In another activity, we were given three scented papers, and asked which scent corresponded with “creativity”, “happiness” and “relaxation”. Amazingly, most people matched the correct concept to the scents even if they could not identify each scent. This means that choosing appropriate scents might be able to stimulate creativity or relaxation in the office, or at home, if done correctly.
