Compare the distinct strands of hair in both pictures. The phone cam’s (photo B) rendered these details poorly. The better and larger lens and sensor in a Compact Digital Camera captures finer details, which provides sharper images with smoother tones, resulting in a more beautiful photo.

A “Roar”-ing Katy Perry’s always been comparable to a bright and sunny day but, this time around, she’s throwing in a rainbow too By Charmaine Phua Katy’s back with her fourth album, Prism, and she delivers many tunes with an additional tinge of maturity. A SPECTRUM OF COLOURS The title of the album was an inspiration from John Mayer (her on-again-off-again boyfriend) and I can see why it’s apt. Katy serves up an array of songs that showcase the range of her vocals, delivered with a variety of emotions, in many diverse styles. “Walking on Air” will definitely be a chart hit, with the same bubble gum-pop flavours that we know her for. On the opposite end of the scale, Katy turns on her emotional crooning full blast in the album’s second single, “Unconditionally”. BRINGING ON THE “ROAR”… “Roar” is an anthem that was a good pick for her first single, since it caught the attention of both fans and critics after it received fiery comparisons to Sara Bareilles’ “Brave”. The heavy beats on “Dark Horse”, coupled with her sultry voice, make for a catchy hit that is
a true thriller, making you think twice about how prepared you might be if this actually happens, but also should be a powerful tool to inspire discussion on what we can do to strengthen our defences from such an attack,” said Jonathan Rudd, Director at Raw Television, which produced the show. Striking a balance between the two is “Choose Your Battles”, where she gives sage advice about picking your battles if you want to win the war. One can’t help but speculate that these may have been inspired by her past. O From the peaks to the depths, Cory has produced many striking images
utside of the harsh conditions in which we see Cory Richards on his treks with National Geographic, he’s a cheery and surprisingly freshfaced 29-year-old. Cory was in town last week to promote the 125th Anniversary of the National Geographic magazine as well as the photo exhibition in line with it, held jointly with Canon at VivoCity from Nov 1 to 3. Cory has been shooting for the past 14 years and his works have taken him across all seven continents. We were honoured to catch up with him in our little red dot. Hello, Cory, you’re looking spiffy today. You look nothing like in your photos. Well, you know, people always expect to see me in a puffy coat. I also age ten years and when I come back… whoosh… I get all young again. [Laughs]
How long have you been interested in photography? I’ve always been interested in photography. But I started doing this as my career path when I was about 18 years. So I’ve been in this almost 13, no, 14 years now. I understand that you started out in fashion photography. Why the switch? Well, I worked in fashion and I started as a photographer’s assistant and I worked on some fashion on my own. The switch was a natural one; I worked in fashion because I needed to pay the bills and I loved the pace and lifestyle. And, I was saving money from fashion work to go on climbing trips and while on climbing trips I’d shoot them and sell those images. Then, I was sponsored by The North Face [for my climbing] and that took me to more interesting places such as South America and Asia, and

that’s how I got involved with the National Geographic. Would you consider yourself an adrenaline junkie? Not at all! I think being in places and situations that challenge you is a healthy thing but the adrenaline part of it is actually pretty unpleasant. I don’t really love that. Do you prefer the farflung locations or the cities? I have a love affair with both. I really love getting as far away from what we consider as contemporary society as possible but I do love travelling in developing nations. I think that it is very interesting to see how people want and desire. And to see how [sic] this idea of opulence or opportunity has done to developing nations and how they respond. What’s next for you? The next trip I have planned,
this Spring, is again to Southeast Asia. Borneo, Malaysia. I won’t tell you what I’m doing, but I can tell you where I am doing it. [Grins] What’s one of the craziest things that has happened to you on the job? Wow, my life is a huge anecdote. It’s like one hysterical experience after another. I’ve dropped my entire person and lenses and camera into the ocean after an unfortunate situation after a climbing anchor broke. I almost drowned but managed to swim to shore and that was it. What would you say to encourage budding photographers? Don’t look for a recipe. Do what you’re passionate about and if somebody is telling you not to do something, it’s probably the right thing to do. There isn’t a correct path. The only correct path is perseverance.

Diners can also try their unique take on the Teochew orh ni, Yam in a Husk ($4.20) – yam paste steamed in a young coconut husk for extra aroma.
You would think that any restaurant located along Quayside Isle in Sentosa Cove would cost a bomb to dine in. Surprisingly, Blue Lotus Chinese Eating House – a new concept by The Emmanuel Stroobant Group – is reasonably-priced for good quality eats. Chef Emmanuel partners with his work and life partner Edina Hong and long-time friend Ricky Ng for this new concept. Ricky says, “Blue Lotus aims to be a fuss-free Chinese restaurant serving good value-for-money dishes.” We agree.
AsiaN with a Twist If you like hot-stone meats, try their Wok Fried Kagoshima Wagyu Beef Tenderloin ($45). The meat is mouth-numbing with peppercorns, capsicums as well as onions. It goes wonderfully with a bowl of their truffle rice. The piece de resistance is definitely their Blue Lotus Signature Chilli Pomelo Crab ($7.80 per 100g); their crabs are at least 1.5kg and come in a spicy chilli sauce topped with bitter-sweet fresh pomelo to kill the burn.

Weekender was among the first two to taste By Lester J Wan Ku De Ta Restaurant, famously located on the 57th floor at the SkyPark of Marina Bay Sands, presents a brand new a la carte menu from Nov 5, by new Executive Chef Frederic Faucheux. I was honoured to be one of the first two people to taste the dishes on his new menu. With the balmy weather and the resplendent panoramic view of the city skyline and the Straits of Singapore all around, I truly felt as though I was dining in the clouds.

Seafood by the Sea Blue Lotus Chinese Eating House has recently updated its menu with Lemongrass Prawn Roast ($18), with prawn paste roasted on the end of a lemongrass stick, for a fragrant and flavourful starter. We also liked their sinfully-good Crispy Fried Salmon Skin ($12) coated with salted egg yolk. The crispy and slightly sandy salmon skin is great with Fresh Coconut Juice ($8). Also try their Crispy Fried Squid Tentacles with salt and pepper ($26). Once you start, you simply cannot stop!

Heavenly & Artistic Food What completed the deified impression was the heavenly food. The new menu retains Ku De Ta Restaurant’s modern Asian dining concept. When my first platter of the tasting menu arrived, I was taken aback by its beauty. This may sound like an exaggeration but I assure you it’s not. It looked like a work of art, with three items arranged on a black ‘canvas’, complete with decorative flower petals. The Oyster with Kombu Jelly and Ikura was fresh, gratifying and easily the best part of the first presentation, while the Softshell Crab Sushi Roll came a close second. Both certainly whet my appetite for more to come. Best of East Meets West The pan-fried Foie Gras was topped with Sake Jelly to mimic the pairing of a sweet wine with foie gras, typical in the chef’s home country. Unique and refreshing, it was effervescent to taste. Other highlights include the Rack of Lamb with Walnut Jus – with mushrooms and fried sushi rice grains adding to the texture and flavour – and the Heirloom Tomato Salad that features a combination of sweet, spicy, and sour flavours. These are sure to please both Asian and Western palates. Keep an eye out for more heavenly creations. Next year, Chef Faucheux will present a new lunch and weekend brunch menu. The Waterfall is a little quieter than the other buffet, The Line, which is also in Shangri-la Hotel. The quality of the food here also appears much better. The premium brunch buffet costs $118-$198 for an adult and $59 for a child.
Food Galore The moment you enter The Waterfall, the pristine fresh seafood counter filled with Japanese and French oysters, cold shrimp, sashimi and lobsters meet you. To your right, lamb, beef and pork roasts sit under heat lamps with an array of condiments. There is a dessert cabinet nearby, bread shelves, a hot kitchen and, all the way at the end, a large assortment of cheese and cold cuts with a mixologist bar. We almost didn’t know where to start as we were completely overwhelmed.

Simple Yet Charming Décor This bright, airy café has high ceilings, understated light wood furniture, simple metal chairs, as well as an enticing shelf of bread that’s hard to miss. The breads were soft and fresh, and the marmalade and jam made in-house were excellent – a far cry from the cloying sweetness of canned jams found in stores. A croissant-waffle, that’s what. Think of a flaky and crispy waffle drenched in honey instead of the typical doughy and heavy waffles. It can be a bit on the small side, so do order more than one helping at a time. Kick back and relax as the inhouse singers serenade you as you feast for a thoroughly relaxing Sunday. Visit Anthesis, a simple, laidback boulangerie, bistro and café, where you can sit back and relax with a view of the Singapore River and have artisanal bread freshly-made by their own baker every morning.

The Tomato and Cheese Tian – a grilled vegetable and cheese dish – is probably the lightest of the lot. It suits you if your intention is not to fill up too much on carbohydrates.
4. Steam a cup of full-fat milk for about 10 seconds using the steamer function of the coffee-machine. Pour the steamed milk on top of the Cappuccino Truffle and espresso until it reaches the halfway mark of the glass. 5. Next, add a scoop of Chocolate Hazelnut Brittle ice cream. 6. Use a handheld mixer to beat a cup of cold skimmed milk for about 30 seconds to create cold foam. 7. Pour this foam on the top, to garnish.

with a yummy avocado salsa on bread. The pretty and colourful presentation belied several flavours and textures, such as the salty sweetness of the tuna and the smooth, buttery avocado salsa. The Oven-Baked Cod Fillet ($30) was marinated with miso and was tender, and baked with its skin on for a crispy finish. It came with fresh, crunchy prawns, tomato concasse (peeled, seeded and chopped tomatoes), pesto and their premium bread platter. For a pasta option, tuck into the Anthesis Sea Prawn Capellini ($25). It was delicious, but a bit on the oily side – the angel hair pasta and prawns were toasted in and infused with lobster oil. They also served Grilled Tenderloin ($32 for 200g), where juicy, succulent Angus tenderloin was served with homemade creamy peppercorn sauce and roasted herb potatoes.
Sweet Endings They serve a range of desserts (from $4.50 to $6.90) such as the rich Sea Salt Caramel Chocolate Tart. Old School Charm There is a fine art to choosing a proper suit and it is not merely throwing things together. A spokesperson for Swagger says, “Choosing a suit can be a daunting task. You’ve got fabric, colour and fit to consider. To add a level of complexity to the suit, you will also need to consider the style of the suit.” He advises notched lapels for a standard look and a peaked lapel for a touch of classic flair, and a double-breasted jacket – a jacket with six overlapping buttons – for men with a medium and/or tall build. “Since a double-breasted suit is a less common choice, it will definitely make you stand out,” he explains.
Suiting Up Most suits may be two-piece, comprising a suit jacket and pants, but the three-piece suit may have a slimming effect. “The waistcoat of a three-piece suit isn’t just there to look good, it also keeps you warmer and has a slimming effect as it distracts from the belly and draws to the neck and face,” he says. “Thirdly, most suits are made of only two pieces – the suit jacket
and pants. As for a three-piece suit, that is essentially the classic suit ensemble with an additional waistcoat,” he adds. General suit etiquette also has to be adhered to, according to the spokesperson. “The jacket sleeves should end at the break of your wrists. You should be able to see between 1/4-inch to 1/2-inch of your shirt sleeve when your arm is at rest,” he says. He also advises that the length of your pants hits the top bit of your shoes, and the back touches the top of your heels. You should also easily be able to cup your hands beneath your suit jacket. Finding strength through adversity Read this short, interesting reflection on a true-life experience of rising from the ashes Someone once said, if you remove the rocks from a brook, it would lose its song. Well, that holds true for you and me as well. Rising from the Ashes Author Scott Walker tells of the time he was asked to help some friends to dig through the ashes of their house after a fire. When they arrived, all that was standing was a portion of the outer brick wall. Where the piano once stood lay only a pile of ashes and twisted wire. Nothing had survived the blaze. But while sifting through the debris, Walker came across a tiny, china bluebird.
Refined by Fire He wiped away the soot to find that the colours were still bright. A few hairline cracks had formed in the glaze but, beyond that, it remained intact. Walker wrote: “As I gazed down at the bird’s small beak and two black eyes, I wanted to weep. If only this little bluebird could talk, what a story it would tell. A story of the heat of the night, of terror, of survival against great odds.” “And then the crucial question hit me. Why did this china bluebird survive? It had survived the fire because it had been tested by fire,” he continued. And so it is with human beings who have been refined in life’s raging furnace. They are tougher, harder, and more resilient than those who have never faced difficulty and loss. That understanding may help us cope the next time the heat is turned up on our tranquil little world.

One of the ways to do so is to manipulate time with your camera.

s I disembarked from my ferry at the idyllic Bintan Island, I was a little sceptical. Would Angsana Bintan’s “Ultimate Chill Out – All-Day Beach Party” live up to its billing? Upon arriving at Angsana Bintan, the first thing that struck me was the impeccable service and the warmth of the staff, no matter in which role or where I encountered them. Attention to detail, including leaving gifts and well wishes written with leaves, flowers and stalks on my bed, heightened the inviting ambience. It truly felt like coming home, away from home.
High-Speed Fun The welcome aside, Angsana Bintan has various exciting sports activities available. For me, the most fun of them all was the All-Terrain Vehicle (ATV) ride. Also known as quad-bikes, these mean machines are basically motorcycles with four wheels that can travel over any terrain. It was exhilarating being let loose as a speed demon on the beach and the open roads, as well as overcoming challenging or bumpy tracks in the forest and over the little knolls. What makes it more fun is that it is not that easy, so you not only experience the thrill but feel a sense of accomplishment at the end. Along the journey, we got to see a small kampong, and even spotted a wild monkey in the trees! Jet skiing was also a thrill, though the waves can be choppy and you need to be prepared to take water in your face. Still, if you like a high-speed chase on the water a la James Bond, this would be your kind of fun. Other Games & Activities There are other beach party activities especially ideal for families or groups of friends. You can participate in a nature walk, beach soccer in sarong, a volleyball competition, a marble race with a spoon, and even a mobile gym on the beach.
There are also activities for kids, such as the sandcastle building competition, a bike race on the beach, kids’ treasure hunt, and a sugar sack race. It was lovely to see the little ones having a great time. Release of Sea Turtles The high point of the entire weekend was undoubtedly the release of sea turtle hatchlings, as part of Angsana Bintan’s conservation effort. It was quite the experience, watching these little hatchlings clambering along the beach and heading straight for the sea. Only about 10 per cent of baby sea turtles survive to adulthood once they reach the sea and, in the wild, many are eaten before they even reach the sea. The breeding and release of sea turtles greatly aids in the odds and numbers of survival. Make sure you come early and plan your photo spot as there will be others scrambling for a shot of these little darlings. Beach Grill & Party As the sun began to set, we headed to indulge in a massive barbecue spread for dinner at Pantai Grill, by the beach. We were surprised to find that our table and seats had been moulded from the sand. Laid in our sight was a wide array of barbecued meat including beef, lamb, chicken, fish and seafood. The heady, tempting aromas wafted along with the sea breeze and helped to build up an appetite. All of a sudden, there was a buzz of excitement. In a flash, the sky was lit in a flurry of striking colours and patterns. The spectacular fireworks that painted the night sky lasted for a long time. We left at about midnight, but not without reluctance. Spa Rejuvenation The next morning, we went for a spa experience at the Angsana Spa. You can choose a soft, medium or hard massage, and different scents of potpourri. Each level of massage has different options. I chose the “Dreams” massage. Suffice to say, I can’t remember too much about it as you can guess where I drifted off to. The massage was soothing and therapeutic, and helped to unknot a few tense muscles from the daily grind. I certainly felt rejuvenated after this great weekend escape. W Angsana Bintan’s “Ultimate Chill Out – All-Day Beach Party” was launched on Oct 26. CONTROLLING TIME With a compact digital camera, you can adjust the camera’s shutter speed. The shutter speed is, simply, the time the camera stays open to receive the light from your scene. With fast shutterspeeds, moving objects begin to “freeze”, or stop in their motion. Conversely, slower shutterspeeds allow moving objects to blur in your image. Both extremes can produce “wow” results. Unfortunately, phone cams don’t have features which let you adjust the shutter speed. So you do need
FREEZING THE ACTION Bright sunny days are made for this effect. In this photo, the hair and water trail is “frozen” by the camera’s fast shutter speed. Setting your camera’s shutter speed high, (i.e. 1/2000 of a second) can help to freeze the action in midstride. Always make sure you take multiple shots in order to capture the best options! 3 STEPS TO WRITING A MESSAGE IN LIGHT This is an example of when a phone was used not for taking pictures but for its flashlight function. Here are three simple steps on how to write a message in light: 1) Mount a compact digital camera on a tripod or table; 2) Turn on the selftimer and set it to a slow shutter speed (i.e. 15 sec) to capture all the light it needs for this night shot; 3) Run into the photo, and point the phone’s flashlight towards the camera and use it to “paint” a heart shape. As long as you keep moving, you will appear as a faint “ghost” in the picture. Try writing your name in your photo! DAZZLING LIGHT STREAKS Similar to the technique above, point the camera to fast moving light, set the camera for long exposure, and capture any light motion. Play with various shutter speeds from 5 sec to 15 sec, and make sure to set your camera on a tripod so it’s stable and stationary.
