New-kid-on-the-block Fleur de Sel delights with modern French cuisine
RoundHouse serves western grub in a tranquil and historical stable in the old Turf City Looking for a new place to take the family? Try RoundHouse, which is nestled in the quiet enclave of Turf City. Radio DJ Vernetta Lopez and her husband Wayne Gladwin took over what used to be Picotin and changed it into a family-friendly establishment. Pizzas and More RoundHouse serves thin-crusted pizzas such as the Loco Lopez ($24) with cheddar, capers, beef salami, jalapeno and chilli padi for a spicy kick, as well as milder flavours such as Honolulu ($22) with honey baked ham, pineapple and onion. They also have starters such as the Seafood Bouillabaisse ($32) with halibut fillet, prawns, mussels and potato and saffron rouille and Wild Mushroom Soup ($14) with truffle oil and toast. Hot Grilled Items Beef lovers can rejoice at the Black Angus Beef. Have a rib eye ($35) or a huge Cote de Boeuf ($80) which can serve at least two to three people. Add half a grilled Boston Lobster ($38) for your very own surf and turf meal.
The Steak Grill

Grilled King Prawns
rench restaurant Fleur de Sel has joined the likes of Brasserie Gavroche and Maison Fatien in the Tanjong Pagar area, with an updated version of French sensibilities. Chef Alexandre Lozachmeur’s immense love for fine French cuisine and wine, and his years of experience working in the kitchens of some of the best restaurants in the world, has culminated in the creative menus at Fleur de Sel. Set Meals to Please If you have a client meeting or just a little more time for lunch, why not try the Executive Set Lunch ($38++) or the Fleur de Sel Set Lunch ($48++). Both set lunches have three-courses that change weekly. When we were there, we tried the latter set and loved it.

Muy bien Mexican!
We liked the starter of Le Homard, a Boston lobster bisque, lobster tartar with sour cream and croutons. The tartar sits in a bowl before the warm lobster bisque is poured in, making it a rich and fresh bowl of soup. La Cabillaud – a seared Atlantic codfish, baby spinach with Charlotte potatoes and beurre blanc sauce – was interesting to the palate. The beurre blanc sauce complemented the seared codfish’s meaty texture well. There is also a choice of two desserts in the set meal. A la Carte Orders Apart from the set meals, their a la carte menu also boasts dishes such as Le Lapin ($35), an Arborio rice risotto with shredded braised rabbit, mushrooms, olives, tomatoes
Lower East Side Tacos
Guzman y Gomez Since its inception in Australia in 2006, Guzman y Gomez creator Steven Marks, a New Yorker, brought traditional Mexican flavours to Australia and then to Singapore. The result is huge Burritos ($7.90-$10.90), Soft and Hard Tacos ($7.90 for two, $10.90 for three) and other sides such as salads, quesadillas and nachos. We especially love the Grilled Steak filling in a chipotle marinade with pico de gallo and salsa for a nice kick. Go for the mini burrito if you aren’t a big eater. You have been warned. Guzman y Gomez, Asia Square Tower 2, 12 Marina View, #02-11, Singapore 018961 Senor Taco Expanding from its taco stand in Clarke Quay to a full-fledged "taqueira" is Senor Taco. Apart from their Baja Fish Tacos ($8) with beer-battered fish and Carnitas Tacos ($7) filled with pork belly confit, they’ve also introduced the Corona-rita ($24) combining a frozen lime margarita with a bottle of Corona beer. Singapore 179023 Lower East Side Partners Christopher Lim and Claudio Sandri of Spathe Public House have started their own "taquiera" in East Coast. Christopher lived in California for six years where he had ready access to Mexican food and he brought this concept to Singapore. Instead of a fried fish taco, try their Tilapia Taco ($12) comprising a broiled fish with tomatoes, onions, red peppers, cilantro and caper berries. Their tacos also come with three spice levels. A Mexican wave seems to have hit Singapore with several burrito and taco stores hitting the street. We round up the latest Several Mexican food joints seem to have opened up or expanded recently. The wave started with Mex-Out, and then Muchachos along the Central Business District, before the rest came along. There’s something about the moreish quality of Mexican food that makes it attractive to Singaporeans. Here are a few places that have joined the fray, or that you can try.

Omakase meal surprise You’ll be spoilt for choice at Marukyu with their omakase style set lunch By Cheryl Chia Lunch hour just got better in the Central Business District with the opening of Japanese restaurant Marukyu. Specialising in omakase type set meals and fresh food, Marukyu makes a good setting for lunch. Started by Chef Derrick Lau, the distinctly Japanese décor of bamboo and wood sets the scene for a tranquil lunch. Omakase – loosely translated to “I’ll leave it to you” – means leaving your meal selection at the hands of the chef. Trust the Chef There are regular set lunches available but if you want to splurge on something more premium, try the Lunch Omakase Hana ($68) or the Lunch Omakase Maru ($88). The Lunch Omakase Hana comprises two kinds of seasonal appetisers, three kinds of sashimi, a seasonal simmered dish, a seasonal grilled dish, a noodle dish and a dessert. When we were there,
the menu started off with monkfish liver and seasoned roe for a light opening before the sashimi of winter yellow tail, slightly-seared megajiki and a scallop flavoured with truffles. Pristine Fresh The seasonal simmered dish that day was a snow crab served in its shell with turnip and carrots in a broth. The next dish of winter black sea cod was marinated in a miso base sauce for an almost ambrosia-like taste. The noodle dish did not disappoint, with the atypical angel hair pasta with truffle oil and salmon. Dessert came in a pretty martini glass nestled in a leaf. If you’ve ever wanted your entire meal decided for you, fuss-free, try Marukyu for a treat. Marukyu, 116 Telok Ayer Street, Singapore 068585, Tel: 6636 5608

refreshes with new Frozen Foam & funk For the first time in Singapore, beer with frozen foam is available. The KoRyuKai funk sessions also premiered, making it a double delight
Red Ginseng Tofu Salad
By Lester J Wan Kirin has launched its latest innovation – Frozen Foam Beer. Yes, you read it right. Kirin Ichiban’s premium first press draft beer made of 100 per cent malt now comes with a frozen foam head made from that very same liquid gold. This brand new Frozen Foam Beer, and beer drinking experience, was unveiled at Switch by Timbre on Nov 14. Switch is the first live music entertainment establishment in Singapore to serve the Frozen Foam Beer. Kirin’s Frozen Foam Beer served at Switch comes in five flavours – Cranberry, Lime, Lychee, Mango and Blackcurrant. Each flavour had been carefullydesigned to complement the crisp and fruity notes of Kirin Ichiban beer. The lychee flavour is especially pleasant, but can be a bit too sweet after a while.
this flavourful tofu salad recipe is from korean ginseng festival 2013 was introduced in Japan last year. Our new Frozen Foam Beer is the same great brew with an innovative twist, so every sip is as refreshing as the first!” said Mr Tetsuhiko Sato, General Manager, Kirin Holdings Singapore. KoRyuKai Funk Sessions What made it a double delight was the premiere of the Kirin KoRyuKai Funk (SingaporeJapan) Sessions, a collaboration between Singapore and Japanese funk and jazz musicians with an innovative blend of genres and rhythmic styles. It was truly a pulsating and entertaining affair, with fantastic music to keep the audience moving. The seven-piece band included
co-bandleaders Hiroaki Shimada and Danny Loong, Co-Founder & Chief Creative Director of the Timbre Group, and featured Ryna Mori and Bryan Tay. David Teague, Benjamin Hersche and Benson Kong joined them in the band and the set. “I am very honoured to be leading this incredible line-up of amazing musicians with Shimada,” said Loong. The stunning Ryna Mori stood out as the lead vocalist, with her soulful and soothing voice. Her opening song, Stevie Wonder’s “Superstition” immediately roused the audience. Visit Kirin Singapore’s Facebook page at www.facebook.com/ KirinBeer.SG for updates and upcoming events.

iana is a compelling portrait of Diana, Princess of Wales, during the final two years of her life. With Naomi Watts playing the role of the princess, the film depicts the love story between the princess and British-Pakistani heart surgeon, Dr Hasnat Khan, played by Naveen Andrews (of “Lost” fame). The filmmakers have assembled a talented and creative team to produce an insightful and compassionate study of Diana’s later years.

Metamorphosis? The heart of the film is the rite of passage of Diana from a slightly depressed, lonely lady to somebody who had found fulfilment in her personal life, which extrapolated into her professional life. Within that story is the love story between Diana and Khan. “Who knows what would have happened if she were still alive today?” asked Bernstein. Khan said, fairly recently, when he opened the hospital in Pakistan that Diana would’ve definitely been at his side as his wife or married to somebody else. “This gives you the sense that from his point of view, it wasn’t necessarily over but he didn’t have the opportunity to have a second chance and that is the tragedy of this story,” said Bernstein. Director Comes on Board Later, Oliver Hirschbiegel, director of Downfall was brought on board to direct the film. Hirschbiegel had heard of Princess Diana but he wasn’t at all familiar with the story that they wanted to tell. New Oldboy Popular Korean film Oldboy gets the Hollywood treatment in this remake
Fans of the Korean “Vengeance” series would either be thrilled or apprehensive about the American remake of thriller Oldboy, a story full of twists, turns and an unexpected ending. While paying homage to the original Korean film, this Oldboy heads into its own shock-filled, shadowy territory. Based both on the graphic novel by Garon Tsuchiya and Nobuaki Minegishi, as well as the highly-acclaimed film by Park Chan Wook, this American remake has director Spike Lee at the helm. Sudden Disappearance The titular character of Joe Doucett (portrayed by Josh Brolin) is a downward-spiralling advertising executive and absent father. One drunken night, he is kidnapped out of the blue and placed into a mind-numbing solitary confinement within a bizarre, hotel-like prison. Joe remains there for the next 20 years – full of torment that transpires without any indication of his captor’s identity or motive.
Inexplicably released from his nightmare, Joe emerges into the world with a single obsession: to uncover the person who orchestrated his punishment – and to, more urgently, understand why. But, though he is now physically free, he is still being manipulated, still caught up in a twisted web of conspiracy and payback that threatens to engulf him. His quest for answers leads him to a, young social worker (played by Elizabeth Olsen), and ultimately to an elusive man (Sharlto Copley) who allegedly holds the key to his liberation. Director’s Impressions As it did for so many others, Oldboy consumed Lee the first time he saw it, years ago. “I was just blown away by it. It was a completely unique story with all the best elements of mystery and revenge, portrayed in the grittiest possible of ways,” the director recalls. “People had never seen anything like it – I hadn’t either,”
he says. Josh Brolin also sought the original director for his blessing and Park said, “Whatever you do, make your own film.” Catch this reinterpretation of Oldboy and judge for yourself. Josh Brolin is Oldboy

Olivia’s voice was heard on the theme song of “The Little Nonya”
Singaporean songbird Olivia Ong has done us proud since her first debut album Girl Meets Bossa Nova. Her ethereal voice has also been heard in the theme song for the hit TV series, “The Little Nonya”. We managed to chat with her about her new role as spokesperson for beauty brand FANCL, and the latest in her life. How do you like your new role as FANCL’s spokesperson? I’m very happy and definitely very flattered to be chosen as FANCL’S spokesperson! I love that FANCL’S philosophy is about being preservative-free in all their skincare beauty products, which means being free of any harsh chemicals. (For me that is very important!) Your career has taken off in Japan, China, Taiwan, Singapore, etc. Do you ever look back and marvel? Marvel? Haha, I don’t think so. But my favourite part about this career is that I get to travel, and to perform to different live audiences; I love singing, and it
is a blessing to be able to sing to people as my job. Looking back, I’m very appreciative of the opportunities that I’ve been given, and I hope to continue to learn and grow further down this career path.

I just love how singing engages my entire body, mind and soul. I guess I haven’t experienced that in acting yet but I would love to explore that area more in the future.

Answers tO SPOT THE DIFFERENCE
“I love how singing engages my entire body, mind and soul.”
In every photo, there are areas of darkest shadow and brightest lights. The difference between the two is the tonal range. On lesser cameras, the highlight areas will look burned out by the light, or the shadow areas will be black without details. Better cameras, with better sensors, have the bandwidth to capture wider tonal range. In Photo A, taken with the phone cam, the draping leaves are “burned out” by the light. The phone cam was not able to capture the highlight details. Whereas in Photo B, taken by the Compact Digital Camera, the same area maintained its details and tones correctly.

Bring home your
best pictures & memories
While you’re ticking off your list of places to go, don’t forget to bring a Compact Digital Camera. Guinevere Sofer tells you why
S
weeping landscapes, majestic sunsets, colourful natives and awesome performances are all reasons why we travel. Though the duration of a vacation can vary from three days to many weeks, let your memories of these places keep your holiday experiences fresh forever. The best way to do that is with great photographs. Convenience & Quality: Why settle for less? We all know that phone cams are convenient, but their photo abilities are lacking when compared to Compact Digital Cameras. Fortunately, these days, Compact Digital Cameras are as “pocketable” as phones. Yet, their quality and versatility is demonstrably better. Higher Resolution Many phone cams are touting higher megapixels now but don’t be misled by these numbers. Without getting too technical, higher resolution requires a number of different qualities which phone cams simply don’t have. In order to have better resolution, the optics and sensors of the camera need to be better and larger. This allows more details to be captured. So, for example, instead of a bushy, fuzzy patch of green on top of a tree trunk,
you’d be able to see the separate fronds on the palm trees. With a Compact Digital Camera, patches of soft fuzzy colours become discernable textures, creating the perception and feeling of realism. Versatility in Various Conditions From sunsets to sunrises, night bazaars to outdoor performances, a Compact Digital Camera is able to capture them better than a phone cam. Standard features, such as long exposure, help you to capture Arabian nights with starry skies or even textured sand dunes. Fast shutter speeds help to freeze firetwirling Tahitians dancers in mid-motion. The zoom capabilities of Compact Digital Cameras produce crisp, smooth images of Alpine peaks without any loss in detail. Don’t forget to “pocket” your Compact Digital Camera before you go, take lots of photos and bring home your best. W

Lijiang Legacy The panorama of Jade Dragon Snow Mountain makes the theatrical drama more awe-inspiring
It may not be a coveted first-tier city, but Lijiang’s natural and cultural legacy is world class. Frank young shows us why claim a respectable status as a UNESCO World Heritage site. However, “Bar Street” remains a thorn in its respectability. The bar scene, loud music and touting are quite fun for tourists but belittle Old Town’s cultural significance, and threaten its heritage status. Subsequently, regulations have been created to curb the noise and to comply with cultural standards. Now, I wonder if the hostesses’ costumes were simply a tactic of compliance. Whatever the reason, it’s a great photo opportunity. In Old Town, rugged-looking Chinese cowboys give tourists a ride
A
bout 150km from the border of Myanmar, in the South-western part of China, lies Lijiang. Approximately 30 times the size of Singapore and with 1.22 million people, there’s plenty of room for everyone. One of the reasons for its low population density is, perhaps, its remote location. Fortunately for Singaporeans, there is now a four-hour direct flight from Changi on TigerAir. Like the Phoenix from the Ashes In 1996, Lijiang was struck by a major earthquake measuring 7 on the Richter scale. In its aftermath, much of the city was rebuilt according to safer building codes. Many of the hotels are new, clean and stylish to accommodate their newest industry – tourism. Quite a number of the city hotels are only a short walking distance from the main attraction – the Old Town. Much of the rigid structures of the Old Town – walls, streets and ceilings – fell during the earthquake. Except for the rare few buildings, which remain intact, most of the Old Town had been restored to preserve the original experience. Even the cobblestone streets have been replaced. Ironically, the new ones have rough surfaces, while the old ones had been smoothened from hundreds of years of foot traffic. After the earthquake, all the new buildings were restricted in height. As a result, Jade Dragon Snow Mountain, Lijiang’s second main attraction, still graces Lijiang’s skyline. World-Class Cultural Heritage The Old Town emerged some 800 to 900 years ago. It gained importance over the years as the Southern centre for silk embroidery trading. As part of the Southern Silk Route, caravans of horses, on two-year journeys, plied through the Old Town carrying commodities to places such as Tibet and Iran. Today, the descendants of those horses carry quarry of a different nature – cash paying tourists. If horseback riding is not your thing, the town is a great place to meander on foot. There are hundreds, if not thousands of shops, tastefully enclosed within “ancient” shop houses, offering drinks, souvenirs, local street food, and different ethnic cuisines. One of the most popular items with tourists is the rose petal biscuit. It’s like a tau sar piah with rose petal paste filling. It is sweet and dry, and with a mild scent of rose in every bite. The Old Town is quite large since it is designed to accommodate legions of domestic tourists during “Golden Week” [the Lunar New Year holiday period] and school holidays. I would recommend spending an afternoon and evening there, as the place looks quite different when the sun goes down. During daylight, the town appears more ancient. However, at night, thanks to electricity, the town twinkles like a big Christmas tree. Built on a slope, the Old Town’s well-lit rooftops seem to cascade from the hilltop down to the town centre. There are many places to eat and many interesting types of food to try such as bamboostuffed rice, stir-fried sparrow, sautéed tofu, and many others. Visit “Bar Street”, a side alley within the Old Town teeming with bars, loud karaoke music and hostesses in beautiful and elaborate traditional costumes, enticing weary travellers to quench their thirst. Like Old Town, I suspect this tradition hasn’t changed for centuries either. Despite its outward rowdiness, “Bar Street” is clean and feels very safe. But, it is not without controversy. Lijiang’s significance in history and the preservation of the Old Town have helped it to
Breath-taking Performance & Scenery After you have your fill of the Old Town, visit the Jade Dragon Snow Mountain Park. One of the attractions within the national park is a theatrical production, “Impressions Lijiang” by Zhang Yimou, the famous director of films such as Red Lantern, Hero, as well as the Beijing Olympics opening ceremony. At 3,500m above sea level, the outdoor theatre uses the sweeping mountainous panorama as its backdrop. Within this awe-inspiring setting, a cast of hundreds recreates the traditions and lifestyles of the Naxi, Yi and Bai natives of the area in song and dance. This is indeed a unique experience not to be missed. A short bus, then cable car, then electric buggy ride bring you to a meadow by the mountain. With the iconic mountain up close, visitors can rent flamboyant traditional costumes for selfies, or simply enjoy the awesome view from this vantage point. For golfers, the park also offers a world-class Jade Dragon Snow Mountain Golf Course, with the mountain as a backdrop. At that height, the thinner air produces less resistance on the ball. Golfers should be able to enjoy 10 per cent greater distance with every stroke. Other than these wonders of Lijiang, there are many other cultural and natural attractions worth discovering. If you are new to travelling in China and want a carefree vacation, join a tour such as the ones offered by ASA Holidays. Their friendly and knowledgeable guides will add further value to your Lijiang experience. In next week’s article, we will talk about exploring the allure of Shangri-La and experiencing travel at 4,000m above sea level. Local Delicacy: Stir-fried sparrow
