On Dec 21, at 8pm, National Geographic Channel (NGC) will take you on an exclusive tour of one of the modern wonders of the world, the Sagrada Familia in Barcelona. The Access 360° World Heritage series brings you new episodes, with all-access tours to more UNESCO World Heritage sites and wonders. This series is in line with NGC and Panasonic’s shared commitment to inspire and educate viewers to care for the environment and to support UNESCO’s work on the protection of world heritage and cultural diversity.

Exclusive Access This World Heritage series will bring viewers on an enriching and informative journey across the globe to some of the most well-loved and famous UNESCO World Heritage sites. It will provide a holistic view of each landmark, including never-before-seen footage that highlights the great history behind each site, behind-the-scenes work, plus a focus on efforts to preserve the culturally-rich heritage at these places.

More Fascinating Places The new series will also feature the Sagrada Familia in Spain, Mount Fuji in Japan, The Everglades in the USA, St Petersburg in Russia, Prague in the Czech Republic, Venice in Italy, the Galapagos Islands of Ecuador as well as Lake Turkana in Kenya. “The Access 360° World Heritage series has always aimed to provide an enriching learning journey for our viewers on some of the most spectacular places on earth,” said Mr Simeon Dawes, Senior Vice-President of Advertising Sales & Partnerships at FOX One Stop Media. La Sagrada Familia The second part, to be aired this December, will feature Basilica i Temple Expiatori de la Sagrada Familia [in Catalan] or the Basilica and Expiatory Church of the Holy Family. This architectural wonder in Barcelona, Spain,
is a unique and iconic masterpiece by the renowned architect Antoni Gaudi. This grand, complex and fascinating structure has been incomplete since the death of Gaudi in 1826. Construction is still ongoing, and the expected date of completion is between 2026, the centenary of Gaudi’s death, to 2028. The Sagrada Familia’s architectural design has characteristics of Spanish Late Gothic, Catalan Modernism and Art Nouveau styles but can only be aptly described as “Gaudi”. The Church has three main facades: the Nativity facade to the East, the Passion facade to the West, and the Glory facade to the South that is yet to be complete. Cooperation & Conservation “Both National Geographic Channel and Panasonic firmly believe that through this programme, we can help to spread the message of sustainable development and the need for us to appreciate and conserve the rich heritage which we have inherited and hope to pass on to our children,” said Dawes. Haunting History There have been too few films around the world that have captured, or that have even attempted to convey, the truth of the experience of slavery from a slave’s point of view. There have been even fewer films on slavery worthy of recognition. Slave stories are the stories of the shaping of the Americas and, much like the Holocaust in Europe, their stories cannot be told and retold enough. About 101 fugitive slaves published books about their enslavement but only one, Solomon Northup, published a book about his passage from freedom, to slavery and to freedom again.
American Civil War. 12 Years a Slave deals with the sober presentation of “American Slavery” that is interwoven with universal themes that are likely to resonate with audiences around the world, such as identity, betrayal, brutality and the need to keep faith in order to survive clashes with the evils that may come from within Man.

The boy and the girl play different roles in different settings. The story is told in three tales, with an ending that ties them together. Les Triplettes du Belleville [The Triplets of Belleville] There is little dialogue in this 2003 animation, with the majority of the film told through song and pantomime. Madam Souza sets out to rescue her grandson, a Tour de France cyclist who has been kidnapped by the mafia for gambling. The Triplets of Belleville, music hall singers, join her and her obese hound, Bruno, on her quest. Le Chat du Rabbin [The Rabbi’s Cat] Based on a comic series and set in 1920s Algeria, this delightful yet insightful animation depicts a cat which obtains the ability to talk after swallowing a parrot. The cat wishes to convert to Judaism and, together with its owner the Rabbi and a mysterious old painter, they journey to seek a mythical city in Africa. Thought-provoking yet highly-entertaining.

iv Lo is a familiar face in the modelling world, having had stints in Japan, France, Hong Kong, the USA and the UK. Liv is also an accomplished MC. She will soon be making her television acting debut in the new season of Channel 5’s crime drama, “Point of Entry”, on Dec 26. We speak with the lovely Liv on her new, action-packed role.

How has your foray into television been for you thus far? It has been an expansive and invaluable experience. Starring as Sophie Thomas on “Point of Entry” is my debut role as an actress. Going from model/host

to actress has changed my life and given me a new perspective and new goals in life. I will never watch movies the same again. I’ll notice the cinematic approach and appreciate film differently.
Stretch City. In between work, I am running this entrepreneurial business. Our site is growing to Stretch Hong Kong early next year, so I am busy starting that up as well as modelling and emceeing.
Do you do your own fighting in “Point of Entry”? There are most definitely no body doubles. The most we’ll get is a shin guard or torso padding to protect ourselves if we get kicked or punched. There is an awesome stunt man, Desmond, who choreographs our fights. He instructs us in our sequences, reactions, and makes sure the actors perform safely. The best part is that we are the good guys and will always make an arrest. They may get in a punch somewhere but, really, they don’t stand a fighting chance against Team Epsilon.
Can you share with us some fun or memorable occasions on the job? Our cast and crew have wonderful dynamics and work well together. We often crack jokes in between takes and I sometimes blush, which has got me the nickname ‘dumpling’ on set. Another time, we were filming in an out of town area next to a famous duck and roast pork restaurant. I don’t remember where the restaurant was, but it was quite possibly the best meat I have ever had.

Italian cuisine with Gusto Italian fusion restaurant Gusto brings a breath of fresh air after its revamp
I have always seen this classy Italian restaurant that is tucked behind the luxury goods shops at Ion Orchard. I have always walked pass the restaurant but, until now, I have never eaten there. I am glad that I finally had the opportunity to. Gusto, an Italian fusion cuisine place, has undergone a revamp with a new menu having been launched in Oct. I have to say, the results are interesting. Don’t believe me? Try it for yourself.

Italy meets McDonalds? One of the more interesting items on the menu is the Crab Shaker ($22), inspired by the McDonald’s shaker fries. Yes, you read it correctly. The Crab Shaker features crispy soft-shell crabs with a pickled ginger “shaker”, as well as a sweet corn mousse dip. The pickled ginger powder is reminiscent of the pink vinegar-ed ginger from Japanese restaurants. It added a slight sour-sweet punch to the otherwise common softshell crab fritter. A unique combination indeed. We also like the Crispy Risotto Balls ($18). It reminded us of an arancini filled with squid ink risotto and corn bread crust. It has a pretty presentation strung up on sticks like party favours. This would make for a great hors d’oeuvre should you have a house party.

Pizza, Pasta & Much More What’s an Italian restaurant without pizza? And we’re talking about in the authentic style here, not the fast food variety. Gusto puts interesting twists in their pizzas. The Char Siew ($28) is a relatively thin-crusted pizza that is topped with spicy tomato, as well as with fivespice char siew, mozzarella cheese, onions and cucumbers. Gusto also has Chilli Cheese Crab ($28) pizza if you prefer something richer or spicier. It doesn’t just sound good. Their Spaghetti Bolognese ($26) is double strength. What do I mean? The meat sauce is boiled down before more the meat is added to the meat sauce, resulting in a much richer and

Best Crackling Roast? Roast pork crackling on an open fire… Possibly the best roast pork in town, it’s guaranteed to have you singing we were walking around in PasarBella the other day and, lo and behold, we came across a new addition to the lineup, Keith Crackling Roast. I found out that they specialise in roast pork only and I thought, it had better be good. Picking up a small tasting portion, with growing scepticism, I bit down on the slightly-cold portion of pork. I was pleasantly surprised. In a most satisfying crunch, the salty and tender layer of meat gave way to melt-y pork fat. We spoke to the owner, Keith Lee, to find out how he perfected the recipe for his special roast pork. Chew, Crunch & Swallow Keith had been an IT professional for almost two decades. He had worked across three continents before he finally decided to switch to the food and beverage business. He also decided to specialise in roasts. “I started a specialised catering outfit, which operated solely by wordof-mouth reference
and all sales were by appointment only. My next milestone was a retail outlet which was co-defined by fans who engaged me on having the public enjoy this marvellous creation at a personal level,” says Keith. “So, I decided to move from food shared at event level to food accessible on a daily basis in personal servings. Keith Crackling Roast at PasarBella at The Grandstand was thus conceived,” he explains. There has been a strong and positive response, with “kids pulling their parents to the stall saying, ‘Mummy, I want this!’” says Keith. He’s had customers come up to him to tell him that his is the best roast they’ve ever had. Perfecting the Recipe Keith had lived and travelled for several years
in Australia, England and the Philippines and had observed how pork is prepared in these countries. Through much research and development, he finally came up with his own recipe. He says, “The first bite will experience a crackling unlike any other – it is ear-shattering crackly, crisp and bubbly like a biscuit.” “The crunch will give way to meat layers that weaken the knees – fullyrendered, moist, juicy and succulent, absent of any ‘porky’ notes,” he adds. Looking for a recipe for the festive season? This one will start your Christmas party well Ingredients • 4 cups milk • 5 whole cloves • ½ teaspoon vanilla extract • 1 teaspoon ground cinnamon • 12 egg yolks • 1 ½ cups sugar • 2 ½ cups Courvoisier VSOP Exclusif • 4 cups light cream • 2 teaspoons vanilla extract • ½ teaspoon ground nutmeg Method 1. Combine milk, cloves, 1/2 teaspoon vanilla, and cinnamon in a saucepan,
and heat over lowest setting for 5 minutes. Slowly bring milk mixture to a boil. 2. In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. Whisk hot milk mixture slowly into the eggs. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil. Strain to remove cloves, and let cool for about an hour. 3. Stir in Courvoisier VSOP Exclusif, cream, 2 teaspoon vanilla, and nutmeg. 4. Refrigerate overnight before serving.

Tandoori Treat The Tandoori Fried Chicken tasted especially fantastic. Unlike most Tandoori Chicken, it was breaded and fried. This gave it a lovely crispy texture on the outside, while remaining tender on the inside. The flavours of the Tandoori Chicken were robust and burst forth once we bit into it. The palate can easily detect the tasty spices in the seasoning. The tangy tamarind sauce on the side had a unique and zesty taste, and complemented the chicken well.
The dish was only lightly spicy, so it is suitable for most palates. We were also pleased with the portion, which we felt was quite generous. In comparison, the 50/50 Turkey Bacon Beef Burger was fairly good, but we did not find it as spectacular as the chicken. Like the chicken, the dessert was lovely. ach time we fall ill and take prescribed antibiotics, the medicine kills both pathogenic and beneficial bacteria in our digestive tract. Hence, the need to introduce them into our diet. Probiotics are considered “friendly bacteria” that help keep intestines healthy and assist in digesting food. It is also needed to synthesise Vitamin K, folic acid and Vitamin B12. Probiotics can be found in some fermented food items such as yoghurt, miso soup, and certain kinds of dark chocolate as well as other food items such as tempeh – a fermented soy bean product – and even the Korean pickled cabbage, kimchi. If you don’t already incorporate some probiotic foods into your diet, perhaps supplemental probiotics can help you maintain a healthy gut. The most common strains of supplemental probiotics are Lactobacillus (e.g. Acidophilus) and Bifido-bacterium. Products containing more strains may be more attractive because different strains provide different health benefits. Different strains may work together in synergy. Certain strains may not be able to colonise in some people while other strains may. There are more than 500 different types of bacteria in the digestive tract and probiotics provide health benefits by keeping harmful bacteria in check while supporting the immune system. A healthy person generally maintains the right balance of gut flora but some may still require probiotic supplements.
The Power of Probiotics There is good scientific evidence that probiotics are effective in preventing and treating gastro-intestinal conditions, especially diarrhoea. A meta-analysis of nine studies found that children below three years of age who were given probiotics had shorter duration and lesser frequency of diarrhoea compared to those who were given a placebo. Probiotics have also been shown to reduce the incidence and severity of antibiotic-associated diarrhoea, which may arise from imbalance of gut flora due to consumption of antibiotics. Probiotics may help people suffering from traveller’s diarrhoea as well. A study involving American tourists who had visited several developing
Probiotics for Your Gut People who suffer from Irritable Bowel Syndrome (IBS) may experience abdominal pain, flatulence, bloating and changes in bowel habits. Sometimes the person may end up with diarrhoea or constipation. At other times, there may be a combination of diarrhoea and constipation. There is scientific evidence that lactobacilli and bifido-bacteria may reduce flatulence, bloating and other symptoms associated with IBS. Other inflammatory bowel diseases include Ulcerative Colitis and Crohn’s disease. By controlling the growth of pathogenic bacteria, probiotics offer a more attractive and less harsh form of therapy compared to antibiotics. Probiotics may boost immune system activity. It may also improve immunity by competitively inhibiting the growth of harmful micro-biota. For example, disruption of the vaginal micro-flora may result in candidiasis or thrush. Simply restoring the microbial balance of the genital area with probiotics may treat this infection. The probiotics have been reported in clinical trials to reduce vaginal skin redness and discharge. It is also beneficial to both adults and children suffering from eczema. Probiotics are efficacious only if they survive the stomach acid and bile degradation as they pass through the gastro-intestinal tract. Probiotic supplements usually contain several billions of microorganisms to ensure adequate gut colonisation. It is advisable to separate the taking of probiotics and antibiotics by a duration of at least two hours.

Prebiotics & Probiotics Prebiotics are non-digestible carbohydrates that can be used as a food source for probiotics. Prebiotics can be found in foods such as bananas and whole grains which help probiotics thrive in the system. Probiotics are generally safe products. However, there could be side effects including bloating and flatulence. People who are critically ill or taking immuno suppressants should avoid taking probiotic products. Check with your doctor if you are considering adding supplements to your diet to ensure that you find the proper supplement for you. CRES (Animal Concerns Research & Education Society) recently opened its Sanctuary Area at the ACRES Wildlife Rescue Centre (AWRC). Minister of State for National Development, Mr Desmond Lee, was the Guest of Honour for the opening. Singapore’S First Wildlife Rescue Centre The AWRC is Singapore’s first dedicated Wildlife Rescue Centre and provides sanctuary to animals rescued from the illegal wildlife trade as well as injured native
wild animals. Since the opening of the AWRC in 2009, ACRES has rescued over 3,000 wild animals in Singapore, ranging from birds to tortoises and even pangolins.
First Time Back in Natural Environment Over the past six months, hundreds of volunteers from all walks of life in Singapore have helped to build brand new outdoor enclosures for the rescued wild animals. The ACRES volunteers, young and old, came together to put their heart and soul into improving the lives of the animals. During the ceremony, Mr Lee, together with ACRES volunteers, released the animals into their new enclosures. For many of the animals, this was the first time they walked on grass or climbed trees since they were poached from the wild. Big Momma, a star tortoise, is native to India and was smuggled into Singapore for the illegal pet trade. Like many others, she was probably packed into a suitcase and smuggled in horrendous conditions on board a flight from Chennai to Singapore. They comprised three Giant Asian Pond Turtles, 35 Indian Star Tortoises, one Hermann’s Tortoise, one Red-Footed Tortoise, one African Spurred Tortoise, two Common Snapping Turtles, one Pig-Nosed Turtle, one Eastern Snake-Necked Turtle, and one Green Iguana. So for France, Portugal and Argentina, the odds may be stacked against them, with Cristiano Ronaldo, Franck Ribery and Lionel Messi as the three favourites for the award. The Ballon d’Or will be awarded on Jan 13, 2014, in Zurich, Switzerland.

A
few years back, I had the opportunity to travel to the Maldives. Its breathtaking beaches and clear blue waters present terrific photoopportunities. I imagined how I would be the envy of my friends when I share these photos upon my return. To ensure that I made the best of this opportunity, I furiously snapped photos with my phone cam – until one fateful morning. Water & Phone Don’t Mix As the morning sun rose, the tide was calm and shallow. I decided to wade into the knee-high water and to take a photo of the resort as the surf lapped the beach in the foreground. As I was pressing away at the touch screen, the phone accidentally slid through my fingers. With my ‘lightningspeed’ reflexes, I was able to catch it – but only the top half! The bottom half went into the drink. My phone died a watery death, along with all the photos. Such a tragedy would never have happened if I had simply used a waterproof camera. Not only would I have pictures, but my phone would still be functioning.

lanning to travel from Singapore to England? Easy, just take a plane. But how about travelling from Singapore to England without flying? Most people would baulk at the amount of planning and the tedious journey it would take to travel solely by land and sea from Singapore to England. Not so for Briton Tom Woods. Having travelled almost 19,000km from Woodlands in Singapore to his home town, Woking in England, he’s seen much more than a plane cabin on his journey by taking the train, bus and ferry. A journey of a thousand miles truly begins with a single step. Tom’s first step was to decide not to travel via the conventional mode. Border Crossings En route to Woking, Tom’s first stop was Butterworth in Penang, Malaysia before crossing the border to Thailand. He then travelled on to Cambodia, Vietnam, China, Mongolia, Russia, Finland, Sweden and Germany before finally arriving in his home country of England. Tom did most of his research for his trip from the website Seat61.com, which advises travellers who want to travel by land and sea. Says Tom, “I thought it would be a cool thing to do. Much more interesting than sitting on a beach – I’m ginger and we burn easily. I get to tick a few more countries off the list as well.” “My uncle did the trip from London to Singapore when I was a kid, so I’ve always fancied doing it,” he explains. Tom moved to Singapore in 2010. He was in between jobs when he
decided to embark on this journey of a lifetime. The whole journey took him about one month, from departure to arrival. Window to the World Tom also thinks that travelling by train is a fantastic way to gain a window to the world. “You’re moving slow enough to appreciate the changes in landscape, architecture and people but still fast enough to cross countries, sometimes in a matter of hours,” he enthuses. Tom adds that “unless you fly in a business or first class bubble, air travel is a chore and really something that is to be endured rather than enjoyed.” He encountered interesting folks on the train such as an older Thai lady asking in perfect English for help with her baskets. It turns out that the lady had lived in London for seven years, but moved back to Thailand after her husband passed away. Wanderlust Travelling Apart from seeing the city sights of Penang, Bangkok, Phnom Penh and Ho Chi Minh City, his train rides also took him to far flung and picturesque locations such as the world’s deepest lake, Lake Baikal in Mongolia. It was on the last of his stops in Asia before hitting Eastern Europe. Throughout his trip, Tom kept his travel blog running, which tells of a funny exchange that occurred on the way to St Petersburg with an older Russian gentleman, who insisted on quizzing him on all things English despite speaking only Russian. The old man started the conversation by saying, “Are you from

I found the street with relative ease after picking up for tips on finding roads in Cyrillic in Moscow,” says Tom. This resulted in a delightful conversation with the hotel staff. Tom: “Morning, thanks for the call back, I have a reservation and I think I’m the right street but I can’t find the hotel.” Hotel Staff: “Sorry, I don’t speak English.” Tom: “Why did you call me back?” Hotel Staff: “I don’t understand; I go.” A passer-by finally lead Tom to the hotel through an unmarked gate. He says, “As much as I’d like to regale you with some nerve wrecking moments, there weren’t really any. Apart from getting a little lost in Russia and running late for a couple of trains… the rest of the time was pretty serene.” Homeward Bound When Tom finally reached London via Cologne, Germany, his friends were waiting to hear all about his
travels. He took his last train ride on the London tube’s Southwest train from Clapham Junction for his ride to Woking. He later took a flight back to Singapore.

The entire trip cost him $2,726 but he admits that he could have saved money on visas, and even some tickets by booking them earlier. When asked if he would recommend this model of travel he answers with a resounding, “Absolutely!” He says, “There are various routes you can take. There are loads of ways to get to London from Moscow, a few different ways to get to Beijing, etc. You can stop at different cities depending on what you find appealing.” “It is a great way to see the world,” he adds.
