The stuff champions are made of By Brandon Era ‘Tis the season to be jolly, but it won’t be the case for a few of the teams in the Barlcay’s Premier League come Boxing Day. With the tradition of every team in the Premier League playing a match on Dec 26, this may prove to be the turning point in the title race. Arsenal may have once been sitting comfortably at the top of the table but after the recent manhandling they suffered at the Etihad stadium on Dec 14, the title race has been blown wide open. Last season’s champions, Manchester United, are looking to play catch-up. Champions No More? The anointing of David Moyes to succeed the legacy Sir Alex Ferguson has left in Manchester United was undoubtedly a heavy burden to bear. With their worst start to a season in 24 years, Manchester United is down, but you can never count
the Red Devils out. Nonetheless, with all things put in perspective, this has probably been one of the most entertaining seasons in recent years for fans across the world. We’ve seen a resurgent Merseyside, with Liverpool and Everton rising to the occasion and proving themselves as top four contenders, while Tottenham has been struggling with the absence of Gareth Bale. With the transfer window looming over the horizon, we could soon encounter a twist in the tale, depending on the signings the major contenders make. One thing is for certain; never leave the Red Devils out of the equation. Changing of the Guard As a disillusioned yet loyal fan of Arsenal, I’ve always come to view our early season performances with scepticism. I’m not too excited to see them at the top of the
table, at least not until I see Mikel Arteta lift the trophy, or else it might just end up another trophy-less season for us. After all, the league is a marathon, and not a sprint. Of course, the age-old argument of teams with spending power having an advantage will always rear its ugly head. However, how many times have United won the title, even with Chelsea and “the noisy neighbours” having perhaps the strongest buying prowess in the league? The Boys in Blue Still, it has to be said that both the teams in blue, Chelsea and Manchester City, to me, are the teams to beat in the league. Jose Mourinho’s accolades speak for themselves and Manuel Pellegrini is no pushover either. With both sides proving to be major contenders alongside Arsenal and Liverpool, we could be looking at probably the closest title race the league has seen in a good number of years. To me, I feel that the team that will stake its claim as champions of the Premier League will be the team to take maximum points from the fixtures on Dec 26 and the weekend of Dec 28 and 29. The team that is able to battle through fatigue to buckle down and to have enough grit to grind out wins will be the team that already has one hand on the prize. Just you wait and see.

T
he Formula 1 season ended a few weeks ago. Now, teams will focus their attention on the new v6 engines that will debut in Melbourne, some time in March next year. Before all that, let’s take a look at some of the most memorable moments from this season.
Perfect Marriage Between Man & Machine The title of the perfect marriage between man and machine has to go to Sebastian Vettel and his RB9, and the minister who facilitated this marriage has got to be Adrian Newy. We always knew that Red Bull would be right up there but to be as dominant as they were in 2013 was just amazing. I mean, with 13 wins and out of that were 9 victories in a row, it felt like a trip back in time when the great Michael Schumacher powered through every race for Ferrari. Speaking of Ferrari, they looked like serious contenders in the early part of the season but slowly faded away. It’s unfortunate because
they’ve got a really great driver in Fernando Alonso so he’ll be hoping for a better car, perhaps in 2014. Driver of the Year Yes, everyone will say it has to be Sebastian Vettel simply because he won the drivers’ championship. But, for me, I’d say it was Kimi Raikkonen. The guy didn’t have the fastest of cars, and he didn’t always start in pole position, yet he always seemed to get on the podium. There were races where he was in the bottom half of the field and was still able to finish second. It’s that sort of consistency that makes him such a great driver. Even towards the end of the season when he had a back injury, he still pulled some amazing races before eventually having to need treatment. Plus, you know he’s just so cool, especially with his deadpan responses at press conferences. I actually met the guy while I was at the paddock during the Singapore GP and the vibe I got was that, for this guy, he’s just there to do a job. He doesn’t care for the glamour; he just wants to show he’s the best. I’m really looking forward to his return to Ferrari next season. Best Moment The best moment is kind of bittersweet, actually. For much of the season, I had hoped to see Mark Webber win a race and he almost did in Malaysia. When he announced his retirement from F1, fans of the sport knew they were going to lose one of the nicest guys on the grid. I’ve actually interviewed
him and hosted for him three times and, every year, when he comes back he remembers me. It’s really nice to know how down to earth this superstar is. Webber is very professional at his job, and everyone loves his oneliners at press conferences. So, the best moment of the season has to be when he finished 2nd at the Brazilian Grand Prix, and being able to see him on the podium one last time. Of course, who can forget how he took off his helmet when he crossed the finishing line, cruising a lap around the circuit with the wind in his hair. Formula 1 will certainly miss you, Mark! In recent reports, the bantamweight fighter has shown confidence, and his “trash talk” has been quoted saying that he is “better than (Dave) in all areas”. This despite holding three wins shy of his opponent, who has a win record of 5-0. We speak to him and find out what it’s like to be the first Singaporean fighting in UFC.

oyston Wee, 27 years old, has been a professional fighter for five and a half years. Come Jan 4, 2014, he will make his debut in the Ultimate Fighting Championship (UFC) ring. UFC is one of the largest mixed martial arts promotion companies

How did you become interested in Mixed Martial Arts? I always thought of learning martial arts as a way to protect myself, keep fit and see how far I can push myself. I happened to see “The Ultimate Fighter” Season 1 on Spike TV a long way back and thought it was interesting, and I’ve been hooked ever since.
In terms of style, it depends on who Royston is up against
Do you have one style you favour over others? I like everything. I consider myself more of a generalist. It depends which type of fighter I’m fighting with. Describe a typical day for you. I wake up in the morning and have a small meal. Then, I head to the gym for a session. I eat again and take a nap. I have another small meal when I get up and read some book or watch some clips before heading back for another training session, and ending with a stretch and shower. Then, I have a rewarding meal and start the whole process again the next day. I just train, sleep and eat. How do you manage to balance your social life and your training? I only hang out with a close group of friends who are my main entourage. Other than training, I usually stay at home on weekends and watch movies and read. This is me usually, so it’s fine.

Which is your favourite entrance song? I have a few favourites. But I especially like rap and hip-hop, such as Eminem and 50-cent. If you could come up with your own fight name, what would it be? A lot of people have been asking me about my fight name, even my close friends. But no matter how hard I think I still can’t think of one. Maybe not now, we’ll see how after my next few fights. What do you have to say to your fans in Singapore? I’m truly grateful and thankful to my supporters out there; even if I don’t know them and they don’t know me, these people still stand up for me. These men and women turned to canning after the economic downturn eliminated their livelihoods
T
his scene may be familiar to you. After your dinner at the local hawker centre or coffee shop, an elderly lady or man waddles up to you, perhaps looking slightly dishevelled or tired, and asks if she or he could collect your drink can after you’re done with it. You may not have thought twice about the plight of these senior citizens but this is how they live – day to day, with the possibility of not earning enough to feed themselves. Talk about a retirement plan. It’s not just Singapore that has these “canners”, the term for the folk who go around collecting empty cans and bottles. A new programme puts the spotlight on their lives and lifestyle. A Global Phenomenon Emmy award-winning film makers Jon Alpert and Matthew O’Neill’s HBO Original Documentary, “Redemption”, looks at a growing army of restless New Yorkers, whose treasures are found in the trash of the city. Short-listed as one of the three nominees for this year’s “Documentary Short Subject” Oscar, the two of them had an uphill task ahead of them before they could even start filming. They had to spend months mingling with the “canners”, getting to know them and gaining their trust before the cameras were even allowed to roll. The major talking point of the
documentary is not about the state of which these “canners” live their lives, but rather the income disparity that is prevalent in the USA. From All Walks of Life Poverty doesn’t choose, favour or discriminate. It affects anyone and everyone it grabs hold of, and tears the life they once had into the ground. This documentary showcases the various walks of life that the “canners” come from. Former short-order cooks, computer-sales executives and factory workers; these men and women turned to canning after the economic downturn eliminated their livelihoods. They hunt the sidewalks and trash cans for empty cans and bottles, which they then drop off at redemption centres to earn a measly five cents apiece. Alpert and O’Neill noted that, “In the best of times for some, there is a growing army of New Yorkers who survive by scouring the sidewalks and sifting through our city’s trash. ‘Redemption’ shows the Dickensian conditions at the growing bottom of our city’s economy”. A Hero’s Welcome? Similar to the plight of some of the elderly in Singapore, this documentary shows how far people can fall, in terms of income. A man by the name of Walter, a 60-year-old Vietnam War veteran, is one of the people featured. After serving his country in the war and returning a hero, it’s no celebration for him now.
He has been a “canner” for a decade and he had the opportunity of seeing the number of “canners” soar as odd jobs that once supported the poor eventually disappeared. Like many unemployed “canners”, he equates the odds of finding a conventional job with “hitting the lotto”. It’s a frightful state of living for these poor people. Furthermore, the numbers are getting larger and the disparity between the rich and poor is growing bigger. Is there anything being done to solve the income disparity? How are people with relevant degrees and experience coping with a new life of sifting through trash to get by in life? eople working in the Raffles Place area now have another option for lunch with the opening of Taiwanese chain, Woo Ricebox. Woo Ricebox has a 70year heritage of serving Taiwanese-style “rice boxes” comprising fried or braised food items with rice. It has over 200 restaurants in Taiwan and opened in Singapore not long ago, in October, at Ocean Financial Centre.
Easy Takeaway Woo Ricebox has 14 different rice boxes with authentic Taiwanese flavours. Each rice box contains Chihshang rice, sautéed seasonal vegetables, pickles, braised egg and a main meat item. They are separated into three categories – fried, braised and “healthy”. The last type is served with brown rice. We liked Woo’s Pork Chop Ricebox ($8.30). The large pork chop almost eclipsed most of the rice but the meat was a little tough to cut with the plastic knife and fork. Try the Spicy Drumstick Ricebox ($8.90) for a golden-

fried chicken drumstick atop the rice. Taste of Taiwan Woo’s braised mains are all prepared in different marinades for a good variety. The Braised Pork Belly Ricebox ($8.90) and the Railway Pork Chop Rice ($9.90) are also must-tries. There is also the classic mini Braised Mince Pork Ricebox ($5.90) which comes with half a braised egg, for those who just want a light meal. If you are in the mood for soup, try the Taiwan Pork Ribs and Radish Soup ($4 a la carte, $2.50 for add-on). The soup is a tad oily as the pork ribs are fried before being cooked in the broth but it is altogether rich in flavour and complements the meal well. Wash everything down with a glass of Homemade Melon Tea ($2.20) for a palate-cleansing end.

On my way to the Bistro @ Gardenasia, the scenery on the road seemed to somehow transport me out of Singapore for a brief moment. In fact, I had the feeling that I was somewhere in Thailand or Malaysia. Farm Fresh Salads The design of Bistro @ Gardenasia was beautiful, with an overall rustic concept. The simplicity of the place added to the charm. The food served at the bistro was not pricy and it featured many local delights, influenced by Western cuisine. The dishes were interesting, to say the least. Their signature dishes had to be any of their salads, which include produce
Local Delights with a Twist I got to sample a wide variety of their delectable fusion cuisine, which included Gardenasia Mee Goreng Pasta ($15) and Hokkien Pasta with Jumbo Prawns ($15). Nonetheless, the highlight of the day had to be the Chargrilled Ribeye Hor Fun ($18). A delightfully chargrilled ribeye steak adorned the hor fun, which had a rich and flavourful sauce that tantalised my taste buds. If you’re feeling peckish, Bistro @ Gardenasia also has mains in sizeable portions, such as an Australian Ribeye Steak in Red Wine Gravy ($24), pan-seared Norwegian Salmon Fillet ($22) and pan-roasted Australian Lamb Racks ($24). The freshness of the ingredients spoke for itself and it was an absolute delight, not to mention it was served in a huge bowl that could easily feed a family of four. I kid you not!

Now, a trattoria-style café by Segafredo Zanetti has entered the Robertson Walk enclave. The cafe’s location near the public square of Robertson Walk gives it a piazza (open square) feel and the new menu further enhances the experience with authentic Italian recipes. The trattoria also uses Italian produce when it can be obtained. Simon Seah, who holds the exclusive Singapore franchise for Segafredo Zanetti Espresso café bars, says, “Our new menu took us more than six months to develop and involved extensive taste testing.” “We chose this combination of dishes and drinks as they appeal to the Singaporean palate,” he says. Molto Italiano We liked the starter of Portobello Mushroom ($6.50). The large and chewy mushroom is seasoned with olive oil, sea salt and pepper for a light start to the meal.
Soup lovers can try the Zucchini Soup ($5) as well but, of course, what’s an Italian trattoria without pasta? The Chicken Ravioli ($20) is handmade and stuffed with chicken, lemongrass, butter and sage sauce. We also liked the Anatra ($19), a fettuccine with duck, olive oil, garlic and crispy prosciutto (Parma ham). The Granchio Pasta ($19) had a substantial amount of crab in its Italian tomato cream sauce. It was not bad. Moving on to the pizzas, try the Barzini ($20). Its crust is made of handmade Italian flour dough topped with a white base with mushroom, cream cheese, garlic and bacon. If you prefer a more traditional take, give the Quattro Formaggi Pizza ($16-$19) a taste. It is covered with gorgonzola, parmigiano, mozzarella and provolone cheese with Italian tomatoes. Cornbread Wedges with Bacon Jam Chef Dan Segall is back to share his recipe for these easy treats that would be ideal for a weekend brunch Dan Segall, Executive Chef of The Big Idea group, which counts The Pelican, Fat Cow and Kinki in its stable, shares with us his recipe in the TOTT cookbook, “Best Brunch Ever: Delicious Morning Recipes to Savour”. INGREDIENTS Cornbread • 3/4 cup unsalted butter • 1 cup all-purpose flour • 1 cup polenta or yellow cornmeal • 1 tablespoon baking powder • 1/2 teaspoon salt • 1 tablespoon sugar • 1 cup whole milk • 2 eggs Bacon Jam • 500g bacon, chopped • 100g white or yellow onions, chopped • 25g garlic, chopped • 50g raisins • 100g brown sugar • 40ml balsamic vinegar • A pinch of mace, allspice or nutmeg METHOD Cornbread 1. In a separate bowl, combine the milk and eggs and whisk until frothy. Slowly add milk and eggs to dry ingredients and gently stir. Once combined, carefully remove the pan from the oven and pour the melted butter into the batter. Stir well and pour batter into the skillet, ensuring it is not filled to more than 3/4 full. Bake until the sides of the bread start to pull away from the pan, or about 20-25 minutes. Test by sticking centre of bread with a wooden pick. It should come out clean but not dry. Remove from oven and let cool in the pan for 30 minutes. Serve warm with bacon jam.

Do your photos break up when they’re blown up?
BEFORE: What do you do with a great photo but with some boring parts in it?
AFTER: Crop and keep the best of it, of course.
Whether you are on vacation or at a party, there are always plenty of opportunities to take photos. To make your photos more interesting, you can always crop closer into the image. Cropping simply means cutting away the uninteresting areas in the photo, thus leaving the more interesting parts for the viewer to focus on. Cropping to Improve Typically, when a photo is cropped, it needs to be resized back to its original dimensions. Say, for example, you have a photo of you and someone else at a seaside resort. It’s one of your favourite photos because you look great in it. Sadly, there are some ‘uninteresting’ parts (or persons) in the photo that you no longer like. The easiest solution is to crop away all the boring or irrelevant stuff, leaving behind a photo of you – albeit much smaller in size. Don’t Be Surprised If the photo was taken with a phone cam, you would be shocked by the results. The quality of the photo from a phone cam degrades rapidly after it is cropped and resized.

On the contrary, carpets and rugs can help enhance the look of small spaces, creating the illusion of a larger space. But first, let’s have a look at the terminology: the difference between a rug and carpet. While the terms may have been used interchangeably, the difference between the two lies in the size. A carpet is bigger than 40 sq ft and anything smaller is technically referred to as a rug. If you choose to install a full carpet, choose light colours like beige or tan to give the illusion of a large floor area. Having patterns on your carpets is another option. However, if you choose bold patterns, make sure that they complement the furniture. Otherwise, they would only overwhelm the living space. Tone-on-tone patterns that are also small and repetitive are a better alternative if you already have other focal points such as a bold artwork or statement furniture. Go Small To make a living area look more spacious, try incorporating a small rug then place your furniture around it. This creates the illusion of a more open floor area. Enhance the look even further
by moving your furniture away from the wall. This works well for the living area and dining area, especially because the dining set is usually set away from the wall. You’ll notice that seeing more of your floor creates the illusion of a more open space. Again, avoid bold colours that contrast with your flooring. This only serves to create greater definition of the space, in turn highlighting the size of the area. Instead, go for a rug in the same colour tones as your flooring. Try thick, plush textures when choosing rugs.

hether street markets or flea markets, weekend markets or permanent markets, a market is very often one of the best places to buy souvenirs, knick-knacks or even stumble upon a rare find or two. Almost every city in every country has its own popular market. While locals ply their wares there, tourists may like to gawk or stare and try to grab a great bargain, or even a great photo. We have come up with a list of a few must-visit markets from around the world. Please note, in most of these places, bargaining is quite common, so do not be shy to ask for discounts or a better price, especially when buying a larger quantity. Chatuchak Weekend Market, Bangkok Undoubtedly, many Singaporeans would be familiar with this place. This incredibly popular weekend market in Bangkok spans 27 sections and sells a myriad goods from clothing to souvenirs to furniture to books and even pets. Food and beverages are also
available at an affordable price. If you see something you like at a particular shop, you’d better buy it quickly as the place is so big, you might not find the shop again after walking away from it! It’s surprising that Siam Paragon in Bangkok has recently been named as the most Instagram-ed place, when all the action is here! There is also a Chatuchak 2 in the Minburi district. Tip: Always ask for their “best price”. Ladies Street, Hong Kong The real name of this street is Tung Choi Street but travellers would know this as Ladies Street. With over 100 stalls selling bargain clothing, accessories and souvenirs, its name is derived from the sheer amount of items sold for women. You might find some novelty lingerie, imitation bags and watches, paintings and even electronic products. Haggling is almost mandatory here and you’ll always hear rapidfire Cantonese around you. Tip: Best if you can speak
Cantonese or go with someone who can, so you’re not seen as a gwailo (foreigner). Hippie Fair Crafts Market, Rio de Janeiro What happens when a group of hippies start a market in 1968? The tradition continues to today, of course. With over 700 stalls, this place is excellent for Brazilian contemporary art, jewellery, clothing and lots of food. You’ll find Brazilian goodies such as codfish omelette and coconut candy. The fair takes place every Sunday from morning to late afternoon. Tip: The merchants are open to bargaining, so make the most of it. Camden Market, London Having started in an old timber yard in 1972, this well-known market features some of London’s best designers and makers. Find that rock-a-billy dress you’ve been looking for, or some steam punk gear to stand out in the crowd. Visit the Cyberdog for an eyeopening look into the fashion of the
cyber-goths. There are also many Chinese food stalls plying their wares in the market. Tip: Be discerning and look out for quality or rare items. Sidi Bou Said Bazaar, Tunisia This Tunisian souk [Arabic for “market”] has beautiful white walls with blue doors and windows that stand out. This makes it a great place for photos. The stalls here are mostly artisanal and arranged according to types of products from the most important, such as perfumes and carpets, to silver tourist souvenirs. Grab one-of-a-kind Tunisian pottery or Rose de Sable, natural sculptures of crystalized gypsum, for a souvenir like no other. Tip: Dress modestly to avoid sticking out like a sore thumb, and
La Boqueria, Barcelona Mercat de Sant Josep de la Boqueria, better known simply as La Boqueria, was born as a travelling market from 1200 to 1700. [Yes, it’s been around for that long!] The market finally settled where it is located now. The architecture itself is a marvel and the produce available here is astounding, including fresh fruit, and vegetables, charcuterie such as the famous jamon (Spanish cured ham), dried fruit, seafood and offal. Many think of it as the heart of Barcelona. Ask before you snap photos of specific stalls to avoid a scolding. Tip: If you’re not buying, don’t touch it!
