The first sign of the home stretch to the end of the season is here, the Capital One Cup final By Brandon Era

I

n the blink of an eye, we’re looking at the home stretch of this English Premier League season. The Capital One Cup final is also almost upon us and promises to be one to be remembered. Black and Blue? This Sunday, Manchester City will go head to head against the Black Cats, Sunderland, at Wembley Stadium. Under Gus Poyet, Sunderland has seen a good run of games and a string of fine form, which has

seen them land a place in the Capital One Cup Final. Even after the thumping they received at the Emirates last weekend, you could see that the side were resting for the Capital One Cup. It was more than likely that they were resting their main players and focusing on the final that will be held this Sunday at 10pm. Manchester City is still, of course, the team to beat. Even after the midweek loss to Barcelona, the team bounced right back with a hard-earned 1-0 victory against Stoke City. We have on one side an attacking force so potent that their goal average per game dwarfs most teams in the world and, on the other side, a team with nothing to lose and with everything to win, with a deep hunger for victory. Round-Up for the EPL Week Let’s not forget the rest of the pack in the league. Everton, fresh from defeat at Stamford Bridge, will be looking

to continue its fine form, hosting West Ham United on Saturday. It was a shame that Everton lost against Mourinho’s Chelsea last week. Nonetheless, Roberto Martinez’s approach has been commendable and Everton have seen a fine surge in form. Fulham host title-hopefuls Chelsea at Craven Cottage and how Chelsea performs at this stage in the competition away from home could prove decisive. Stoke gave Manchester City a tough time last weekend before losing to the boys in blue by a goal and they will host the Gunners this Saturday. We’ll see what the Gunners are made of and if their championship aspirations are still alive. The Saints, Southampton, will host Liverpool, the team probably in the finest form these recent weeks. Proving that offence is still the best defence, I’m looking forward to Liverpool’s games every week just to watch the attacking trio of Suarez, Sturridge and Sterling. Close to the finishing line, the matches still promise mouth-watering action.

After a whirlwind weekend, the actionpacked and eventful Extreme Sailing Series Singapore leg came to a close

T

he much-anticipated opening act of the 2014 Extreme Sailing Series began on Feb 20 in sunny Singapore, under the gaze of the city’s soaring skyscrapers. The eight pulsating and highly-competitive races produced six different winners. The Singapore leg also proved to be highly-eventful, including an unexpected crash. A Slice of the Action The Swiss-flagged team, Realtstone, were the form team, executing a consistent strategy in the trying conditions to finish the opening day of the global tour at the top of the leader board – their best result since joining the circuit last year. The second day saw the pressure further cranked up as the hot and windy Singaporean climate proved highly-challenging for some of the sails and the teams to manoeuvre. That day, Alinghi (Swiss) took the first spot on the leader board. Final Fight & Crash The final day of the Extreme Sailing Series Singapore leg saw the greatest incident. The Groupama (France) sailing team and Team Aberdeen Singapore crashed just metres from the finish line as a huge gust of wind hit the fleet on the final run to the finish. Team Aberdeen Singapore caught the

biggest blow as it drew closer to the finish line and ploughed into the back of the French boat. Tanguy Cariou of the French team even suffered minor facial injuries in the process and was taken back to shore for treatment. All this drama capped the excitement for spectators at this extreme weekend. In the end, Swiss team and winner Alinghi sailed a nearperfect regatta, with Morgan Larson, Stuart Pollard, Pierre Yves Jorand, Nils Frei and Yves Detry finishing more than 50 per cent of the 29 races in the top three positions. In review, Larson said, “It was challenging here and with the level of competition a couple of notches higher this season – I think we just carried on from last year and we’re the only team that hasn’t changed any of our crew.” “We will try and build on from last year and enjoy this victory!” said Larson.

T

he second electrifying season of “Vikings” will premiere this weekend. Continuing from from last season, more intrigues, conflicts and bloodbaths are to be expected in this Middle Age saga. In the first episode of Season 2, viewers will see Ragnar and King Horik combine forces against Jarl Borg, who is joined by Rollo. Brother will fight against brother. Before the premiere, I managed to catch the star of the series, Travis Fimmel (who plays Ragnar).

How do you feel about PLAYING Ragnar? It’s been very enjoyable. Michael Hirst is a talented writer and he’s written for me some amazing words, and I like the role. What kind of role would you love to play that you’ve yet to have the chance to? I’m a farm boy, so I reckon I’d love to act in a cowboy movie.

What can viewers expect in the second season? I think it is a lot better. There are more conflicts, new characters, more adventure… What would be your personal battle cry? Don’t mess with my family! “Vikings” Season 2 premieres on Feb 28 and continues every Friday, 10pm, on istory, StarHub TV Ch 401.

Which actor, living or dead, would you love to act with? Paul Newman. I love all his movies, Butch Cassidy and the Sundance Kid, and all. He’s a great actor, a lovely person and I have great admiration for him. Who is your favourite Aussie actor? Mel Gibson. I love the humour he brings to his work, and he’s a brilliant director. What makes you happy? The farm in Australia.

What was it like working with the late Patrick Swayze on “The Beast”? It was very enjoyable. He was a great talent and a great person. It was sad in the end. It was a great privilege working with him.

What do you miss most about the farm? I just love the country, the trees, the grass, the animals. The construction and stuff, the improved land that you’re on, before and after...

If you had a time machine, when and where would you go? I would probably go to the 1880s. I don’t like tech. I love horses and the country.

What upcoming project are you involved in? I’ll be in a new Warcraft movie. I can’t say much about it at the moment but my role is a human warrior.

andela: Long Walk to Freedom is the longawaited film adaptation of the personal story of one of the world’s most revered leaders, Nelson Rolihlahla Mandela. Based on his autobiography of the same title, this is the first film to tell Mandela’s whole story. The epic film spans Mandela’s life journey from his early years as a herd boy in rural Transkei to his inauguration as the first democratically-elected President of South Africa. The odyssey Begins The film begins with a small boy herding his father’s cattle over the Transkei hills. Years later, he becomes a young lawyer who buys himself sharp suits and fast cars in post-war Johannesburg. He is a reluctant advocate for his people, swept up in the murderous repressions of apartheid South Africa, and becomes an armed revolutionary. A wanted man on the run, the long arm of the authorities soon catches up with him and he is shut away on Robben Island to be forgotten forever. Over many years, he learns to forgive and to win the trust of his enemies. A father and grandfather who’s never known his grandchildren eventually comes out of prison to lead his nation. HOW “THE VOICE” WORKS Created by Dutch television producer Joh de Mol and Dutch singer Roel van Velzen, the talent show has four phases: blind audition, battle round, knockout round and live performance. In the blind audition, the panel of judges sit on swivel chairs and listen to a vocal rendition with their backs to the artist. If a judge favours the artist’s performance (not looks!), he/ she presses the red button, turns around to face the artist and affirms his/her coaching throughout the season. If two or more judges pick the same artist, the latter would have to choose one of them as coach. If no judge turns around, the artist is eliminated. In the battle round, coaches pick from their respective teams two of their proteges to pit against each other by singing the same song in a duet. Only one artist is

Cook for 5 minutes, drain and set aside. Sautee the chopped onion in the butter in a saucepan over medium heat. Add the cilantro and garlic and cook until golden brown. Add the mallow leaves to the pan and stir for about 5 minutes. Add the reserved chicken broth, the salt and pepper. Cook on low heat for about 45 minutes. Stir in the reserved chicken meat. Put the marinated pork on the grill and cook, about 5 minutes. Shift the pork 90 degrees and grill for 5 more minutes. Flip it over and repeat. Cook until the internal

temperature is 145 degrees F. Remove from the grill and let sit for 5 minutes. Place the remaining 2 tablespoons olive oil in a sauté pan. Add the shallots when the oil starts to shimmer. Volcanic ramen passes the test

W

hat comes to mind when you think of breakfast? For some, pancakes or waffles might come to mind. For others, perhaps toast, muesli, yoghurt or bacon and eggs. On this side of the world, the typical Singaporean breakfast might comprise greasy chwee kueh, nasi lemak, roti prata or even McDonald’s. Our cosmopolitan country has the privilege of having almost every kind of cuisine imaginable, thanks to rapid advancement and globalisation. From the American norm of bacon and eggs to the Australian vegemite on toast, some of these breakfasts from around the world may seem familiar to us, others not. We hope these give you some ideas. 1. Great Britain - black pudding The full English breakfast typically comes with eggs over easy, bacon, a coarse pork banger (sausage), sautéed mushrooms, baked beans, hash browns and toast. Sometimes, black pudding is added in as a side as well. Black Pudding is a type of blood sausage. In Singapore, we might have coagulated pig’s blood and offal in a congee if you’re having pork porridge, so that’s not too far off.

2. Wales - rarebit, not rabbit The Welsh have rarebit for breakfast. No, not rabbit. The rarebit is a kind of toast doused in Worcestershire sauce, melted cheese with béchamel or Mornay sauce. Sometimes, ales, cayenne pepper and mustard are added to the recipe. Hmm, perhaps we could spruce up our kaya toast or Kraft cheese on bread with some inspiration from this.

3. Denmark - morning chocolate? Chocolate for breakfast, anyone? The typical Danish breakfast comprises muesli, rye bread, cheeses, pate, cold cuts and spreads, and sometimes a few thin pieces of chocolate as well. This may be unusual for us but a welcome change. 4. Bolivia - sweetened puffs Here’s something similar to the puff pastry we have here. The Bolivians have saltenas for breakfast. Resembling our curry puff or the Mexican empanada, these are filled with vegetables or meat and are sweetened with some sugar. Hmm, could we try sweetened samosas? 5. Cuba - dunking bread A thick hunk of buttery, Cuban bread dunked into sweetened coffee with a little salt. Sound familiar to you? Doing that with our crisp kaya toast into our half-boiled eggs or hot coffee is a common habit and breakfast for Singaporeans. 6. The Bahamas - good grits Grits is an essential part of breakfast in the Bahamas, originating from the food that they had during the days of slavery. Grits – ground corn – is mixed with water to make gruel, similar to our congee. If you get bored of your usual breakfast, why not try making some of these?

I love tonkotsu ramen. That makes me very picky when it comes to eating it but Tonkotsu Kazan has passed my test. The founder and CEO of Tonkotsu Kazan, Mr Ken Takagi, came to Singapore in 2010 from Osaka. He was amazed by how Singaporeans could enjoy the hotpot dish in the sweltering heat. With that as inspiration, he came up with Tonkotsu Kazan, loosely translated to mean “pork bone volcano”. Volcanic Ramen The Kazan-style ramen comes in a heated stone bowl covered with a metal funnel. The broth is poured in and the steam comes out the spout. Leave to cook for a minute and your ramen is ready. I like the Kazan Karamiso ($15-$18), a spicy miso paste stirred into the tonkotsu broth with slices of chashu. The Kazan-style ramen also comes with a bowl of rice to pour into the remaining broth, to create porridge. I must warn you, the

There was a table nearby that ordered the normal-sized one for three people. The ramen within the Kazan bowls were a little burnt, from the stone bowl, but the charred bits added to the smoky flavour. The Kazan Kaisen-Shio ($15-$18), a sea salt paste and tonkotsu broth with assorted seafood was a little on the bland side and the liberal amount of cabbage overpowered the natural sea salt taste of the broth. Other hot stone options are curry rice and Japanese rice. Sides & More Apart from the hot stone bowl options, they also have regular tonkotsu ramen with chashu slices and half a marinated egg, which should

not be overlooked. You can choose from various ramen sets ($16-$27) with additional rice dishes or gyoza. The gyoza set caught my fancy, and it didn’t disappoint with soft gyoza skin and savoury filling. The tonkotsu broth at Tonkotsu Kazan is boiled for ten hours every day and all the unnecessary oil and residue is skimmed off before serving. I also liked their hand-trimmed chashu. It had just enough fat to keep the lean meat tender, and their homemade sauce added a sweet, smoky flavour to it. You can end your meal with any of their ice desserts, puddings or smoothies. ver sat down and ate nonstop for almost four hours? I did last Sunday at Edge, with unlimited amounts of Veuve Clicquot champagne, wines, beers and cocktails. Not to sound alcoholic but most champagne brunches might limit the amount of champagne in the Some of the desserts at the brunch

brunch or even give you just one glass. However, for $158++ per adult, you get to gorge yourself at Edge and drink to your heart’s content. Sounds good to me! Food, Food Everywhere The buffet at Edge is extensive but the additions for the brunch buffet are spectacular. The highlight for me was the live-grill station cooking omi-wagyu beef, lamb racks, chicken breasts and Pan Pacific Sausages. I unabashedly had two portions of the omi-wagyu all on my own. The marbled fat and tender meat is cooked to your preference and topped with their house sauce. The meat simply melts in your mouth. The egg stations also carry dishes such as Huevos Rotos, a Spanish egg, potato and chorizo dish, poached eggs with truffle coulis as well as bacon and mushrooms as a side. I was also impressed by the 2m-long cheeseboard, which carries an extensive selection of cow and goat cheeses. Ask the staff to melt the raclette cheese and put it atop

some potato wedges for your own version of “cheese fries”. Do Not Overlook Salads & Dessert The salad station is also not to be missed with their Heirloom Tomato Caprese featuring different tomatoes and small balls of mozzarella di bufala, seasoned liberally with their assortment of vinaigrettes and olive oils, if you wish. True to any intercontinental buffet, there is also the seafood on ice section, sashimi, Indian food, roast meat, Thai food as well as a bread counter and dessert station. The Yuzu Chocolate Tart and Lemongrass Crème Brulee deserve special mention. To say that they were good is an understatement. Fish Carpaccio Try to make this delectable dish using this recipe from Caffe B Impress your guests with this restaurant-worthy appetiser at your next house party. It takes some effort to make but the results will be worth all the effort. Pair this carpaccio with your favourite white wine to complement the taste of the tangy fish. Ingredients • 60g fresh salmon • 60g fresh snapper • 4g balsamic vinegar • 6g basil • 5g yellow capsicum • 5g red capsicum • 6g orange • 6g grapefruit

Steps 1. De-skin the fresh fish. Cut to your desired thickness and fold into half, arranging 14 pieces to form a line. 2. Marinate the different fish, each with one of the three respective dressings. 3. Cut the tomato into very thin slices. Arrange in a neat row and dice into small pieces. 4. Thinly slice the basil and toss together with the tomato alongside the olive oil. Season it. 5. Brunoise or cube the capsicums. Heat the sugar in a pan and add water until it dissolves. 6. Glaze the capsicums and strain them. Leave them to cool at room temperature. 7. De-skin the orange and grapefruit. Cut into segments. Trim and cut the segments into small wedges before garnishing.

magine a three-room 1970s HDB flat in a startlingly bad state. The first sight of the apartment, which is at less than 800 sq ft, shocked homeowner Jenny Chua. “The condition was horrible. Everything was old and dirty; even the flooring was falling apart!” she recalls. The flat’s last owner had left it looking worse for wear.

Sze Leng combined all three into one, transforming it into a huge master bedroom. In accordance with Jenny’s request, Sze Leng incorporated a walk-in wardrobe, a dressing room, even a niche where the owner can keep the vacuum cleaner, garment steamer and ironing board. Incidentally, the walkin wardrobe is one of Jenny’s favourite furniture in the flat. She praises the job saying, “I’m just amazed at how much the place has changed since I first saw it. Not only does it now look great, it also seems bigger and brighter than I ever thought possible. I love my new home!”

Barcelona Barcelona is truly one of the most beautiful cities in the world. Read about our exclusive trip and see what we mean By Cheryl Chia

I

woke up at the crack of dawn to catch my train to Barcelona from the historic Madrid Atocha railway station. Despite being bleary-eyed and slightly grumpy, my trip was off to a good start from the beautifully-designed railway station. Far from the depressing and complicated Gare du Nord in Paris, the Madrid Atocha has an indoor tropical garden and a small pond filled with turtles. That was my last sight of Madrid as I bid it adios and set off for the Catalonian capital of Barcelona. Barcelona Sunshine A welcome change from the slightly gloomy Madrid weather, I was greeted with sunny skies when I arrived in Barcelona at Hotel Omm, a modern hotel with beautiful décor. I soon embarked on a walking tour with a couple of Filipino media friends that I had made. The streets of Barcelona are fairly wide, as they were designed with tramways and ventilation in mind, and the buildings in the street are beautifully decorated with portraits, patterns and flowers in the walls. Among many things, Barcelona is known for being the home of famed architect Antoni Gaudi. His buildings are magnificent, to say the least, with uniquely-curved columns and

unusual, colourful patterns. In my opinion, Gaudi was a far-sighted man to conceptualise buildings like that in the 1800s. One of his buildings is the towering church, La Sagrada Familia (The Holy Family). Today, more than 130 years since construction began, it is still unfinished.

Gaudi’s Gift With scenes of the nativity and biblical verses sculpted with astounding detail, La Sagrada Familia is a real sight to behold. His other creations are just as intriguing. Parc Guell, also designed by Gaudi, looks like a life-sized gingerbread house! It was initially meant as an estate, but the project failed then as it was too far away from the city centre. Now, Parc Guell remains as a park with mosaic-tiled fountains and ergonomic benches facing a majestic view of the skyline. I’m sure people would kill to live here now. I certainly would! A little way up the road is the Casa Museu Gaudi – once Gaudi’s house – which is now a museum. The museum is filled with his own designs of furniture, which were well ahead of their time. La Sagrada Familia and Parc Guell are both accessible via the Barcelona Bus Turistic. This is sort of like our Duck Tours bus in Singapore, but with more extensive routes. Simply look for the bus stop nearest to your hotel and take the line which goes to the sights that you want to see, for just a small fee. An audio device is also available for you to listen to the explanations as you pass the sites. For football fans, one of the bus routes also takes you to Camp Nou, the FC Barcelona

stadium. If you have time, visit the Palau de la Musica. The architecture of the opera house alone is simply breathtaking. Old Yet Gold Another facet of Barcelona is its old quarter, with towering Gothic buildings and narrow passageways. One can almost imagine riding on a horse, down the cobblestone street. The public fountains are still in use as well, and the water is potable. Around the old quarter of Barcelona, you will arrive at the Mercat Princesa, a food court of sorts that serves a wide variety of tapas and other types of food for you to try. Another must-see for foodies is definitely La Boqueria, a large market that’s been around since 1217, located along La Rambla, the busiest street in Barcelona. You can get anything here from cooked food such as empanadas to cold cuts, fresh fish, eggs, and even candy. If you go during the day, watch the light-play off the beautiful stained glass roof. Be a little careful on La Rambla though, I was almost pickpocketed there but I caught the guy in time. I was only in Barcelona for two short days before I had to return to Singapore but I will definitely return to Barcelona one day to catch all that I had missed. It is already calling me back. Shopping in Barcelona The only problem with shopping in Barcelona is that it’s hard to stop! There are markets, art galleries, antique or craft shops, fashion boutiques, etc. You have a host of options to choose from. Downtown While going along the El Born and Gothic areas, keep an eye out for the monuments and the latest designer shops. Head to the Gothic part for more avant-garde galleries and restaurants, or to El Born if you are looking for unique bohemian style. Prestigious Eixample This is the area where the exclusive shops are located – local and international designers that go from clothes to jewellery in an elegant and bourgeois atmosphere. Street Markets Almost every day you can find unique objects such as craft work, antiques, stamps, cinema posters, records, books and coins in various markets in Placa Nova, Placa del Pi or Placa Real. These are some of the best places to find quirky or interesting stuff. Chic Outlet Shopping More than 100 exclusive boutiques await only 30 minutes from the city centre. Day trips from Barcelona The Benedictine abbey in spectacular Montserrat

Besides enjoying the relaxing seaside of the Catalonian region, Barcelona has several day trip options that are just a couple of hours away. Montserrat One of the most breathtaking sights in the world, this natural park is where the Benedictine monastic community has been living for almost 1,000 years. Their Basilica houses, the serene image of the Virgin of Montserrat, and the patron saint of Catalonia, are the reason why this monastery has been a pilgrimage point for centuries. For tourists, it is also a place with spectacular sights. Best way to get there: There are several options, from direct bus to train from Cremalleras and then cable car. Tarragona Only 92km south of Barcelona, you will find this incredible city with an impressive Roman legacy

that includes an amphitheatre, a circus and the ancient walls of the city. Don’t miss the Mediaeval quarter with its Romanesque and Gothic Cathedral that will naturally lead you to the Mediterranean Sea. The heart of this city is well known for the quality of fish and seafood, especially in Serrallo area. Best way to get there: A 35 min high-speed train from Barcelona Sans Train Station. Figueres Although 136km from Barcelona, being able to enjoy an intimate look at the surreal Dali Theatre-Museum makes it a cultural, enriching trip. The collection of surrealist artist Salvador Dali’s works is incredible, and the exterior of the building is also whimsical and intriguing. Best way to get there: A 1 h 50 min train ride from Barcelona Sans Train Station.

ipadan, Mabul and Kapalai, southeast of Sabah, may appear as dots on a map of Malaysia. However, these tiny islands are well-known as they rank among Malaysia’s top diving sites. Beneath the waters, the whole area is a thriving habitat for 1,200 species of fish and 600 species of coral! DARE TO DIVE Sipadan is so small that you can walk round it in 25 minutes! Its dense forests offer a haven for tropical birds such as kingfishers, starlings and sea eagles. This oceanic island rises to 600m from the seabed. But Sipadan’s treasure trove is its

rich marine biodiversity and clear underwater visibility. At Barracuda Point, for instance, you could peek at barracudas swirling in shoals like a tornado. At Turtle Cave, 23m deep, turtle skeletal remains can be seen! It is here that ailing turtles gather to be at their final resting place. Interestingly, also, you could spot green and hawksbill turtles mating or gently flapping their fins amid live corals, which are believed to be thousands of years old. Alongside other aquatic species, manta rays and white-tip and hammerhead sharks are also common sightings. Neighbouring islands Mabul and

GREAT BEACHES BECKON Landlubbers, no worries if you do not fancy diving. You can stay above the waters, sun bathe, enjoy the sea breeze, comb the beach or just take it easy at one of these three islands. However, you might want to look at other prime spots in Peninsula Malaysia, such as Pulau Perhentian Kecil off Terengganu, Juara Beach on Tioman Island and Tanjung Rhu in Langkawi. CNN listed these three among the World’s 100 Best Beaches, ranking them No.13, No. 21 and No. 49, respectively. Apart from their diving sites, these beautiful beaches and charming resorts offer a relaxing weekend escapade. Great therapy for

THE LONG ROAD TO CHAMPAGNE departure time that the train was nowhere to be found. I returned to the counter where the staff told me that my train departs from the centre of Paris, and that I was incredibly late! To cut a long story short, the Paris-Reims journey is the worst I’ve ever had. Along the way, I was close to tears, and so close to giving up. I was frustrated, hungry, and had to lug my massive 28kg bag up a long flight of stairs because no one would help. I found out the hard way that everything you’ve heard about Parisians being unhelpful was unfortunately true. But I did get there in the end and the moment I had my first glass of champagne that evening at dinner, everything was looking a lot rosier.

harles De Gaulle in Paris is not an airport that you look forward to flying into. I asked a girl at the information counter about catching a connecting train to Reims, Champagne, and she rudely muttered that the train was leaving in about two hours’ time. So I hung out at a really sad café by the train platform, only to realise half an hour before my scheduled

UNDERGROUND TREASURE The best champagne houses are in Epernay or Reims. I chose to visit Reims because it’s a great city with a fantastic cathedral and you can still get around without a car. In Reims alone there are about eight champagne houses, with Veuve Clicquot being one of the most wellknown, but entry is only by reservation. So I ended up visiting the Taittinger caves, which didn’t require prebooking.

From the outside, it doesn’t look impressive but once you’re 17 metres below the earth’s surface where the tour starts, you’ll be amazed by the entire process of how champagne is made and how much work goes into each bottle. The Taittinger cellars are located in Roman chalk pits that date back to the 4th Century. They provide the perfect conditions for aging wine. As many as 70,000 bottles can be stored in one room, and they are estimated to be worth €8.3 million! A one-hour tour costs €16 (half the price of the Veuve Clicquot tour) and you get to savour a nice glass of champagne at the end.

NOTRE DAME CATHEDRAL Over 25 famous kings of France started their journey here at this cathedral where the royal coronation was held. Even Joan of Arc passed through its doors. Work on the church began in 1211. Not only is it a Gothic masterpiece, it also boasts over 2,300 statues including the famous smiling angel. HOW TO GET THERE? Take the TGV Train from Paris to Reims (45 minutes), or from Charles De Gaulle Airport (30 minutes). Just make sure you pre-book the right tickets!
