Colourful Cast Waltz, who plays bald computer wizard Qohen Leth, won Oscars for Best Supporting Actor in Quentin Tarantino’s movies – Inglourious Basterds and Django Unchained. Gorgeous French export Melanie Thierry (Babylon AD) plays the sex bomb who gatecrashes into Qohen’s domain to spur him on. The movie also features heavyweights in supporting roles, whose presence are mainly in cyberspace: Matt Damon as blonde boss Management and Tilda Swinton taking on the character of Qohen’s wayward Dr Shrink-Rom psychologist. Remember Sanjeev Bhaskar from BBC’s Emmy award-winning chat show “The Kumars of No.42”? The irreverent Sanjeev plays one of the doctors in the nutty three-man team. There are plenty of emotional outbursts centred on work, life and love. Don’t be surprised to find yourself giggling at the adulterated Blue Lagoon scene starring Qohen and Bainsley! Dystopia or surrealist movie fans will want to catch this one.

The Sci-Fi Setting Qohen Leth (played by acclaimed and popular actor Christoph Waltz) is a bald introvert who’s good at computer algorithms but has an unfulfilled life filled with angst. Like a modern Quasimodo, he works in a run-down chapel, and is assigned by top brass Management (Matt Damon) to solve life’s big riddle, otherwise known as the Zero Theorem – that everything equals nothing. Management dispatches ‘Esmeralda’ in the form of kinky escort Bainsley (Melanie Thierry), and his young son Bob (Lucas Hedges), to liven up Leth’s depressing state. He is also spotchecked by manager Joby (David Thewlis). To further relieve his jitters, Leth receives online counselling from therapist Dr ShrinkRom (Tilda Swinton), and treatment by three scatter-brained doctors. Behind the Scenes Believe it or not, this futuristic sci-fi movie was shot over 36 days, about two-thirds of which were within the confines of a spacious derelict church in Bucharest. Director Terry Gilliam’s illustrious filmmaking career started with the renowned BBC comedy troupe Monty Python (19691970s). He moved on to direct surrealistic

he popular television series based on George RR Martin’s series of novels, “Game of Thrones”, is back.

Premiering within a week of that of the USA, fans in Singapore would be on schedule with the latest season of the exciting fantasy drama series. The ten-episode fourth season of this Golden Globe and Emmy-winning series returns very soon, on Sunday, Apr 13, at 10pm. Subsequent episodes will then air every Sunday, at the same time. Based on A Song of Ice and Fire and A Game of Thrones series of books by Martin, the TV programme is an epic tale of treachery and nobility, set on the wild continent of Westeros – where summers and winters last for years, and the lust for power is eternal.

Captain America: The Winter Soldier Captain America faces trust issues and shocking revelations in this latest movie Not long ago, I caught the other Avenger-related movie, Thor:

Picking up Speed This season’s show picks up from the aftermath of the Red Wedding slaughter in the Riverlands that wiped out many of the Stark nemeses. The Lannisters’ hold on the Iron Throne remains intact… only if they survive each other and external threats from the South, North and East. It appears their fate is fraught with threats from all sides of their kingdom. While Stannis Baratheon continues to rebuild his army in Dragonestone, a more immediate danger comes from the south as Oberyn Martell, the Lannister-loathing “Red Viper of Dorne,” arrives at King’s Landing to attend Joffrey’s wedding to Margaery Tyrell, and perhaps act on an ulterior motive. In the north, a depleted Night’s Watch seems overmatched against the inexorable Wall advances of Mance Rayder’s army of wildlings, which in turn is being trailed by an even more formidable foe: the undead White Walkers. As if that weren’t enough, Daenerys Targaryen, accompanied by her menacing trio

The Captain is clearly having trouble adjusting to 2014, as everyone he knows is either dead or on the verge of dying. Cue a surprise appearance by Peggy Carter (from the first Captain America movie) as an old lady. There are some comedic moments as Cap meets Sam Wilson (Anthony Mackie), who goes on to become the Falcon, on his daily run around the compound. Also, try to read most of the items on Cap’s to-do list in the 21st Century. It’s quite a laugh. If you miss it, don’t worry, someone has already posted the screenshot on the Internet. The one-liners delivered by Natasha Romanoff a.k.a. the Black Widow (played by the sultry Scarlett Johansson) fell flat for me. “Could you tell me how to get to the Smithsonian, because I’m here to pick up a fossil,” she coos at the Captain.

New Faces & More Blood Game of Thrones fans can also expect new faces and characters such as Oberyn Martell,

Lost in the Future The Captain’s loneliness and Natasha’s constant prodding about dating culminate in awkward moments such as he visiting a museum exhibit of himself, in a baseball cap. But the story revolves around (as the title indicates) the Winter Soldier (played by Sebastian Stan), a reprogrammable and invincible soldier. The whole movie comes together as the Black Widow, Captain America, the Falcon and Nick Fury (Samuel L Jackson) unite against a HYDRA infiltration within S.H.I.E.L.D., to ultimately oust a doubleagent. Of course, justice prevails. There are two ‘Easter eggs’ in this one with a bonus scene during mid-credits and another after all the credits, for a peek into the developing story arc for the Avengers. You wouldn’t want to miss it as these are usually popular talking points. This review was made possible by Disney. Nurse: Hot vigilante on a rampage A nurse by day turns ruthless avenger by night, seducing men to bring out their worst before finishing them off Nurse prides itself in gore. Spend 84 minutes on this sleazy show and you may come out feeling disenchanted. It’s amusing to note that, amid the mayhem, this fast-paced movie still has room for a few laughs – perhaps to appease a gasping audience.

Devil in a White Dress A scheming mentor nurse, Abby Russell, derives pleasure in tracking down cheating husbands, seducing them and then vengefully slaying them. Nurse Danni has just graduated and is congratulated by Abby, who is out to befriend her. On a night out together, Abby spikes Danni’s drink and gets close to her. Waking up the next morning, Danni realises she’s been duped by Abby and walks out on her. Enraged, the vicious Abby returns to her psychopathic pursuit, going after Danni’s flirting stepfather and the hospital’s abusive Dr Morris, spilling more blood in the process. Behind the Scenes Nurse seems to have little to impress viewers except for the seduction and the CGI enhancement. Also, to live up to hype, the hospital’s nurses in the movie are seen strutting in busty and tightfitting uniforms. Prominent Cast Paz de la Huerta of the series “Boardwalk Empire” stars as the sultry but sinister Abby. Katrina Bowden, better known as Cerie in “30 Rock”, plays Danni. Kathleen Turner, who in yesteryear charmed Michael Douglas in Romancing the Stone, does a cameo as head nurse Betty Watson. It is nice to see that she is still acting. Doug Aarniokoski, who directed Highlander: Endgame, helmed this film and co-wrote the screenplay with David Loughery. We speak to the lively Pam Oei, who stars in this year’s laugh fest, Happy Ever Laughter Pam Oei has been a busy little bee, juggling family life with her duties on-stage and off. We catch up with her, including on her role in Happy Ever Laughter. What can people look forward to in this year’s Happy Ever Laughter? I am going to talk a little about the trials and tribulations of being a parent and my increasing idiosyncrasies growing older. There are so many comedians on this show, so the range of topics is going to be super wide. Some of us are in character, most of us are not. And we have some very talented, young comedians with us, ready to take on the world. Just bear the two ends of the spectrum in mind: Mark Lee and Kumar. OMG. Seriously, you do not want to miss this.

Since the birth of your child, have you managed to rest at all? Actually, I gave birth in March 2011 and I was part of Crazy Christmas that same year. In 2012, I produced the first installation of Happy Ever Laughter and I also made my directorial debut for a musical, Hansel & Gretel, for the Wild Rice Christmas pantomime. Last year, I was part of Crazy Christmas again and throughout the last three years I have continued to be an Allen Carr smoking cessation therapist while hosting corporate dinner and dances… So, I haven’t actually had a break at all! How is family life? Family life has been messing with my head a lot. Sometimes I absolutely love being a mum and sometimes I think, “This is too hard!” There are days where I cruise through as a parent and human being and sometimes I stumble and fall and am a sorry mess at the end of the day.

Happy Ever Laughter Any funny or memorable moments that occurred on stage that you can share? It was during Titoudao in 2000 and I was playing Madam Oon Ah Chiam, a famous Hokkien street opera actress. My Hokkien is much, much worse than my Mandarin, so I pretty much had to memorise every last sound for the Chinese parts of my script, especially the Hokkien opera bits. One night, Beatrice Chia, who played my master, found herself on stage during a Hokkien opera segment without the critical prop of a betrothal letter. None of the lines would have made sense without the prop, so Beatrice, who is as ang moh as me, started to improvise. After two improvised lines

in Hokkien which made very little sense, after just a moment’s hesitation, Beatrice projected with great confidence: “Wah wu sim, ai kahwin.” (I have heart; I want to marry.) And then what happened? I burst into the changing room backstage after the play and, halflaughing and half-shouting, I pointed out to Beatrice that “kahwin” was a Malay word. And laughing and screaming at the top of her lungs to me, she hurled, “I was trying to make it rhyme!” My ridicule immediately became respect and I think we fell on the floor and laughed for half an hour non-stop after that, until all our white opera makeup streaked off. Do you think Singaporeans have a sense of humour? I think that Singaporeans have a great sense of humour and they love to laugh at themselves. [smiles] Happy Ever Laughter is on from Apr 16 to 27. For some, it may be good vintage red wine, or an icecold beer. I prefer a glass of whisky, even with table food. You could say I like whisky the way I like my men - above the age of 18 and single (malt and cask). I spoke with Christoph B Nyfeler, Movenpick Heritage Hotel Sentosa’s whisky consultant from Switzerland, on the art of whisky. There are several types of whisky. Could you give us an overview on the different types? The main difference in the various types of whisky are the grains used. For example, Malt Whisky (Barley) and Grain Whisky (any type of grains), followed by Single Malt Whisky, Blended Malt Whisky,

Blended Whisky, Single Cask and Cask Strength Whisky produced from the different countries and regions. The style of producing it factors in the water, barley and grains used. It will then be influenced by the maturation and vaporisation of the alcohol over time as well as the wooden casks that give the characteristics of the final product. The debate on how to drink whisky has to be put to rest. What’s the best way to drink whisky? Whisky should be consumed neat, so as to not to dilute any of its original flavour. If it is a Cask Strength Single Malt with a high alcohol content and volume, then two to three drops of water can be added to the whisky to enhance and support the flavours and intensity. How does whisky complement food in the way wine can’t? Single Malt Whisky complements food in a different way as it adds another dimension to the palate. Especially when infusing dishes with a good Single Malt. Due to the higher alcoholic content, certain flavours will be enhanced on your taste buds

as well. The natural flavour range of whisky makes it the most common spirit used in cooking as compared to the rest of the spirits. WHICH is your favourite whisky? At the moment, my favourite Single Malt is an Imperial 29-year, Single Cask, Cask Strength Edition, Vintage 1982, bottled by the Independent Bottler Signatory as well as Spey Royal Choice. How old should a whisky be before it is considered “real whisky”? In official terms, a distilled malt spirit can only be called whisky after a minimum period of three years’ maturation in the cask. What is going to be the next big thing in whisky? In my opinion, I believe that we will go “back to the roots” with Single Malts, traditionally bottled, unchilled-filtered and Cask Strength Edition, as well as different interpretations of a single distillery. A global judge of the programme since its inception in 2009, Regan will be paying his first visit to Southeast Asia (SEA) in mid-May, to hand pick Singapore’s last bartender finalist. “Never before in the history of World Class have there been so many twists in a local programme,” commented Niamh Henry, Diageo Reserve Brands, MHD Singapore. “However, as the market has matured over the past five years, so has the level of expertise, creativity and innovation shown by local participants,” Niamh added. Test of skill & Mettle The finalists showed off their skill and ability to work under pressure in “The Mystery Box” and “Cocktails Against the Clock” challenges. The first involved using their creativity together with a string of ingredients from cinnamon sticks to prosciutto ham, to come up with a palatable cocktail. The latter showed off their skills to make a maximum of ten cocktails in eight minutes. A tremendous task indeed!

different victors The judges were looking for a balance of taste, presentation and technique across the two cocktails, and Peter 28HKS won by a narrow margin. His John “Old Smoke” Morrissey and Tequil-a Flappy Bird featured a perfectly-balanced combination of ham and cinnamon, which worked well with the profiles of Johnnie Walker Gold Label and Don Julio Blanco, for the first round. The second round saw Tom Hogan of Anti:dote shine as he entertained with a series of perfect serves, with details down to the hand-sketched coasters. The SEA finalists from Singapore, Malaysia, Philippines, Vietnam, Thailand and Indonesia will vie for the title of 2014 World Class Bartender Southeast Asia, and represent their countries at the 2014 Diageo Reserve World Class Global Finals scheduled for July, in the UK.

New watering hole in town has a familiar face behind the bar counter Singapore’s forefather of bespoke cocktails, Din Hassan, former head bartender of Bitters and Love, has struck out on his own to start speakeasy-style bar The Manor Bar and Cocktail Room. Tucked away on the second floor of a shophouse it shares with dim sum bar Zui Hong Lou, you’ll find an almost detective office-like door with the words “The Manor” emblazoned on it. Time for Mad Men Bar crawlers would know Din from his previous counters at Lucha Loco and La Vino Bar. Now, he mixes drinks at The Manor and lives up to his reputation for bespoke cocktails.

For instance, he can whip up a Campbell’s ($20), inspired by the iconic Andy Warhol painting, a tequila-based cocktail with fresh bell pepper and celery juice and a dash of Domaine de Canton, or the Hot4U ($21), a stimulating mix of gin with a hint of cherry and orange liqueur topped off with a few dashes of Tabasco sauce. Supernature warns consumers not to confuse “natural” with “organic” as even sometimes the term “organic” is loosely used. “If you see a bottle of apple juice in the supermarket labelled ‘100 per cent Natural’, it is only natural because apples are “natural” but nothing in the bottle is natural at all,” says the founder of Real Food. He goes on to explain that “image ethical” companies tend to label things such as “less oil”, “diet” and “low fat”. It is the same for eggs. Organic eggs aren’t exactly “organic”; the chickens were just fed organic feed.

[sic] The labelling in Europe for organic food is stricter than in the USA as they are more conscious of genetically-modified food.”

Worth the Money? But the perennial question amongst consumers is, why the heck is organic food so expensive? The simple answer is supply and demand. Organic food prices also factor in the free-range method in which the animals are raised as well as environmental processes that take up more manpower, that result in a “cleaner” and a less processed product, which in turn makes the product healthier. However, here is a scientific finding for you to think about. Sarah Sinaram, the senior dietician from Raffles Diabetes & Endocrine Centre, says, “While a few small studies showed that organic foods are higher in Vitamin C, iron, selenium, magnesium, and phosphorus, a recent review of 50 years’ worth of scientific articles about the nutrient content of organic and conventional foods showed that there is minimal difference in nutrient profile between the two.” She also adds that for vegetables all that is simply required is gentle rubbing in water and throwing away of the outermost leaves of lettuce heads. In my opinion, consuming genetically-modified and overprocessed food is definitely worse for you than eating, well, real food. But, organic or not, we’ll leave you to make your own decision.

The signature Tyson Peanut Butter Burger ($21.90+) made with stockyard angus beef, streaky bacon, arugula, creamy peanut butter topped with a sunny-side egg, cheddar cheese on a sundried tomato bun sounds both odd and delicious at the same time. However, for me the peanut butter burger just tasted like a satay burger with peanut sauce. If you dislike heavy meat patty, opt for the Pumpkin Crispy Rice Cake Burger Benedict ($16.90+). Burgers 1, Wings 0 The Hot Buffalo Wings ($15.80+) look deceptively mild but the spice kicks you in the mouth right

Go easy on this dim sum buffet Hai Tien Lo’s weekday dim sum lunch spread is almost like a Sunday feast

Typically a slow weekend dining option, dim sum on a weekday is not farfetched, especially if it is served quickly. Enjoy Hai Tien Lo’s new a la carte dim sum lunch buffet with an extensive selection of 35 dishes available. What I like about Hai Tien Lo is its central location in Pan Pacific Singapore. Most authentic dim sum eateries are far from the city centre and can take a while to get to. The a la carte dim sum lunch buffet ($48++ for adults, $28++ for children) is reasonably priced.

Steamed and Fried The weekday lunch buffet includes unlimited servings of classic dim sum but the signature items are the giant Steamed Bun with Abalone and the Wok-Seared Spinach Dumplings. I loved the latter, atypical of Chinese jiaozi; the skin is thinner and crispier, akin to the Japanese gyoza, but it is meaty. Next up is the Deep-Fried Bean Gluten with Minced Pork in Five Spices. This version of the ‘money bag’ is a deep-fried bean curd skin stuffed with minced pork, rich in five spices. The one I had was a little oily but crispy and the flavours spill from within. Chef specials such as the Baked Egg Tarts with Swiftlet Nest and White Fungus, and the Steam Berkshire Pork Buns are slightly more refined takes on the quintessential baked egg tarts and char siew bao you get at typical dim sum outlets. Decadent Delights Other upmarket dim sum treats include Hai Tien Lo’s Deep-Fried Yam Puff with Foie Gras and the Crispy Carrot Cake with the restaurant’s Signature XO Sauce. The yam puff would have fared better without the foie gras, but what can I say - I’m a traditionalist at heart when it comes to dim sum. Also on the menu are har gau - traditional steamed prawn dumpling, steamed pork dumpling and siu mai for those longing for contemporary favourites. Desserts such as Double-Boiled Osmanthus Tea with Pears and White Fungus, and Chilled Cream of Mango Sago and Pomelo are also available to end the meal on a sweet note. Ingredients • 400g Potatoes, peeled or sliced into 3-4mm thickness • 2dl Milk • 1dl Cream • 40g Garlic, chopped • 50g Butter • 100g Sbrinz cheese, grated • 50g Bread crumbs • Salt, pepper, nutmeg Method 1. Pour milk, cream and garlic into a casserole pan, bring to boil, then season to taste with salt, pepper and nutmeg. 2. Add the potatoes, bring to boil, and simmer until it thickens. Adjust the seasoning if necessary. Whisk in 1/2 portion of the butter. 3. Pour mixture into small gratin dishes – sprinkle with the grated cheese, breadcrumbs and the rest of the butter. 4. Bake the gratins in the oven (approximately 25 to 30 minutes) until the potatoes are cooked and golden-brown-crusted. Should the gratin dishes be dirty because of the baking, it is best to clean them before the potato gratins are served.

The master bedroom follows the common practice of absorbing the adjacent bedroom for extra space, so that the homeowners could fit a pretty vanity in a corner, as well as charming furniture pieces like an old-fashioned cabinet and a standing mirror in a similar style.

Room to Breathe “An interior as textured as this can sometimes look heavy, so we needed to make sure the space didn’t feel too cramped because we were trying to squeeze too many things in,” says Marc. “So we decided to push the dining area into the balcony. This way, both the living and dining areas have room to breathe, especially since the furniture selected are also quite big and heavy,” he says. Other spatial adjustments were also made for the master bedroom,

Keen Eye for Details “At the end of the day, what makes a house a home are the little things that its owners bring in,” says Marc. A traditional sewing machine has been salvaged as a study desk; scones in the style of old gas-lamps flank the entry into the master bathroom, while industrial lamps of various designs embellish various spaces in the home. “I think the homeowners really added to the design of the home with their keen eye for details and decorating.”

1. Your wooden table does not stop growing. “Wood is a living thing and it’s still ‘growing’ in the environment,” Jermaine says. That means solid wood expands and contracts in the weather, and even more so than materials like metal or plastic. “Sometimes, this change is irreversible,” she goes on to say. “So don’t be surprised if that crack in your dining table looks like it’s growing larger over time.”

3. Wood does not come perfect. The grains and cracks on natural wood are what make the material unique and special. Jermaine says, “Many Singaporeans want their wood panels to look identical or, at least, look like copies of one another. With natural wood, it’s almost impossible.” She says that we should learn to appreciate the flaws and imperfections of wood.

The owners of this 5-room HDB apartment, having been inspired by some of such images, wanted to put their own spin on the look by lacing it with industrial influences.

Daring Mix of Textures Designer Marc Wong of Linear Space was a big driving force in the design, himself being quite familiar with creating interiors that tend to be raw and more organic. A daring mix of textures, for one, marks this 1,100-sq ft apartment. Near the entrance, the shoe cabinet has been camouflaged with rough timber laminates to resemble heavy timber doors. The idea is echoed further down in the hallway that leads to the bedrooms. Keeping a firm balance on “cool” and “warm” materials, concrete screed was used as a backdrop to the industrial-style television console of heavy timber framed with black steel. A nature enthusiast and wood designer reveals secrets about wood furniture Jermaine Ng has a self-confessed love affair with wood. The designer started WoodHood about a year ago, importing wood from Myanmar, East Timor and Indonesia. She customises wood furniture, repairs existing furniture and plans to hold workshops to allow homeowners to try their hand at designing wood pieces. The nature enthusiast reveals some lesserknown facts about wood furniture.

2. Don’t like the colour of the wood? Change it! Staining or colouring wood “kills” the top layer of the wood so that the colour can take root. But because wood has inherent properties, you can only stain it darker, not lighter. Since only the top layer of the wood is coloured, you can sand down your wood furniture to its natural wood colour.

4. Wood differs in variety and quality. “There are many different types of wood, but most people are only familiar with one or two,” she says. An example she gives is that when it comes to outdoor decking, most people assume chengal wood as the only option. “The truth is, the chengal wood these days is of younger quality, and it might not be as durable

Extra-terrestrials first became big in Thailand in 2006, with gossip of sightings in the north. Since then, hundreds of UFO addicts regularly camp out at Kao Kala in Nakhon Sawan, which they deem to be a portal to another dimension or galaxy. The people who visit Kao Kala are far from the wackos you may expect and largely consist of professionals, scientists, doctors, students, businessmen and lawyers. Hundreds of photos and video footage of Kao Kala UFOs have been uploaded onto YouTube. Do a search and you may find some of them. Both travellers and locals make regular ‘pilgrimages’ to Kao Kala in search of UFOs. They adorn themselves with alien necklaces and pictures and trek to the top of the hill to absorb the extraterrestrial energy to treat illnesses, or to meditate at a statue of Buddha. When they meditate, they can understand what the UFOs and aliens are trying to tell them. They feel it through their bodies and they understand, or so they claim.

Alien Contact?

Among the many stories, one that stands out is that of Dr Debhanom Muangman, a 78-year-old physician educated at Harvard, who says that he made contact with genuine aliens at 2am in the morning, in 1996. He said that they called him on the phone using a land line. “They said they were from Mars and spoke a strange version of Thai. They also said not to worry about the phone bill,” Dr Debhanom recalled. Apparently, since then, the aliens have contacted him and other researchers quite often. According to Dr Debhanom, these aliens at Kao Kala are slightly taller than humans, communicate telepathically and sometimes are accompanied by pets that look like hairless dogs. You can make up your own mind about this.

An Authentic Floating Market & Historic Sites

Other things to see and do in Nakhon Sawan include Chan Sen Ancient City and Museum, Mae Wong National Park, Wat Bang Pramung Floating Market, Wat Woranat Banphot Buddhist Temple, and the “Spot Where the Rivers Converge”, where the Ping and Nan rivers converge to form the mighty Chao Praya River. Wat Bang Pramung Floating Market is a genuine floating market, unlike the more commercial or touristy ones in Bangkok. Prices at this floating market are much cheaper than the one at Bangkok. You can hire tour guides with boats that will take you around the many little canals, out to orchid farms and temples and even a nice place to eat. The market starts at 7am and is over by 4pm. Do note that the market only operates on the weekends. For people who do not like to rough it out in camps, there are hotels in Nakhon Sawan such as The Country Lake Nature Lodge Hotel. This scenic little resort in lush surroundings has other activities and things to do such as cycling and kayaking. If UFO-hunting in the mountains wears you out, there are also massage treatments in the hotel to reinvigorate you.
