Kite Flying: Happiness on a string Kite flying is the ultimate carefree experience for all ages, and a fine activity for promoting health The term “Go fly a kite!” may be what you say to someone who is annoying you. On the other hand, kite flying is a positive and perhaps even peaceful activity that one can indulge in. Kite flying is a simple yet fun activity, in which all you need is a kite and a large open space. Here are some tips for you to get started. The Right Type of Kite In order to get the best experience out of kite flying, it is important to get the right type of kite. In Singapore, the winds are generally of light to medium strength. To suit these conditions, the ideal types of kites would be those with shapes known as the Delta, Diamond or Dragon. There is a large variety of kites to choose from. You can even attempt to make on your own kite, though this may be more challenging than one may think. It would take quite a lot of work experimenting with the materials for the kite and adjusting the balance in order

to make it airworthy. Whether or not they are made or purchased, as one’s skill gets better with experience, one’s kite tends to get larger and fancier in shape. Right Time, Right Place, Right Company Be sure to pick a day when a nice breeze is going. A day without wind is most definitely set up for a disappointing kite-flying experience. More importantly, stay away from a high density of trees. Ideal locations include parks, beaches and fields where there is a lot of space and without too many people around. Last but not least, company makes all the difference so go with your family or friends and not alone. It is also very helpful to have one person to hold the kite and keep the line taut before the other person runs with the end of the line or spool, and attempts to launch it. Graham (Hugh Dancy) held in custody at an asylum awaiting trial. Framed for the murders committed by his psychiatrist Dr Hannibal Lecter (Mads Mikkelsen), the accused Will struggles to prove his innocence. FBI head of Behavioural Sciences unit Jack Crawford (Laurence Fishburne) is confused by how Will had ended up with so much against him, much as he likes to help him. Sabotage: Arnie’s baaack… again as millions of dollars in drug money. Unfortunately, a large portion of the money goes missing and the cartel begins to hunt down Wharton’s squad. As the body count rises, and with some twists and turns in the tale, everyone soon becomes a suspect.

rnold Schwarzenegger is back once again in David Ayer’s (known for Street Kings, 2008) new movie, Sabotage. Yet another action-thriller, Arnie goes back to basics in Sabotage – gun-toting, explosive-filled action.

Too Graphic? Some may argue that the violence portrayed in the movie may be overboard, even for an R-rated film. If the gruesome trailers are any indication of the scenes to expect in the full movie, perhaps the graphic scenes in the movie, especially of the violence, may well be over the top. Nonetheless, some may argue that this was so that the movie could portray drug crime and enforcement in a slightly more realistic, albeit harsh, light.

Sabotage on Speed Sabotage tells the eventful story of an elite DEA (Drug Enforcement Administration) task force in the USA, led by John “Breacher” Wharton (portrayed by perennial action hero Schwarzenegger). Wharton and his masterclass squad score a big bust when they apprehend a major figure in a drug cartel, as well

classic power-packed Schwarzenegger we all know and love. Who doesn’t miss the first Terminator movies, or even Conan the Barbarian? The film’s setting, revolving around drug cartels and an incredibly high body count, may be too much for some – there appears to be a higher amount of dead bodies than there are lines of dialogue. Decent Cast Arnold Schwarzenegger is an action hero who needs no introduction. The same could be said about some of his supporting actors in this movie. It is great seeing Sam Worthington (Avatar and Terminator: Salvation). One can’t help but wonder if this movie is below him, though. Joe Manganiello (Magic Mike) and Josh Holloway (Ghost Protocol) also star in Sabotage. Beep, Beep it’s Veep Julia Louis-Dreyfus stars as the Vice-President

Hit comedy show campaigns for more laughs with its return Sunday nights will get whacko with the return of Emmy nominated comedy series, “Veep”. The third season kicks off a week after the US premiere on HBO Signature and HBO Signature HD at 9.30pm on Apr 13. Slumdog Millionaire to Infinite Love Mr “Jai Ho”, AR Rahman, shares with us his source of infinite love and happiness AR Rahman is a music extraordinaire and international star known for integrating eastern classical music with electronic music, world music genres and traditional orchestral arrangements. Nonetheless, most would probably know him best for the score of the hit film Slumdog Millionaire, for which he won two Academy Awards for Best Original Score and Best Original Song. Last in Singapore in 2011 for his “Jai Ho” concert, AR Rahman will be back at the end of this month for “AR Rahman: Infinite Love – Live in Concert”. The three-hour concert, with a 78-piece ensemble and several prominent guests, will feature many of his hits from films. He shares about his life and the inspiration for his concert. How did you discover your interest in music? I didn’t; my mother did. She forced me to take up music and leave school. My father was a composer and she knew what music could do for my life. Looking back, how do you feel about Slumdog Millionaire? It was divine intervention. I am also proud of the whole team; they rose to the occasion. The combination of such an anthem and the artistes involved was once in a lifetime.

What are your thoughts on “Jai Ho” now? I always write the songs for the movie. Things appropriate work wonders. I felt it was perfect for that movie. The magic… What have you been busy with apart from the concert? I’ve been working on a movie called Highway, and a Disney movie called Million Dollar Arm. What’s the biggest difference between Hollywood and Bollywood? I think the biggest difference is the distribution and the exposure. There is much more and it’s much faster internationally, for Hollywood. How do you cope with the stress of all you do? Spirituality helps; I am an aspiring Sufi student. That means, love is that which matters. Everything happens through God: stress, success, failure... Just be at peace. What would you like to tell your 14-year-old self? “Thank you for not committing

suicide.” [laughs] Seriously, I think there are too many people who cannot deal with failure and disappointments and choose to end their life. Some things may happen in a day, some in a year, while some may take ten years. What makes you happy? Prayer. [smiles] Each day. When I nearly gave up on life, I discovered love beyond limitations. That is what this concert is about. How would the song about your life sound? I would have to look into the mirror for 24 hours before I decide. [smiles] I think it would be in stages. I’ve done so many things and been through so much, and I am constantly evolving. Still, there would be a commonality in all these. The music would have to keep up with the changes yet be rooted. Bold idea for a great lunch Caffe B gets a breath of fresh air with its updated menu of contemporary Italian cuisine infused with Japanese elements. The restaurant recently celebrated its third anniversary with the new menu. The décor of the restaurant is a mish-mash of baroque-style furniture with Japanese paintings and bamboo, as if to let diners have a whiff of what’s coming from the kitchen. The Best of Both Worlds To start off, I opted for a plate of In-House Smoked Tofu with Teriyaki Powder and Italian coriander salad topped with parmesan cheese ($18). Caffe B’s take on the traditional Japanese dish of agedashi tofu sat very well with me as the melt-away fried exterior of the tofu gave way to the smoky taste with a touch of saltiness from the parmesan cheese. Classic Italian fare such as the Burrata with Tomato Sorbet and Basil Espuma ($20) is also on the menu. My favourite main course was definitely the new Risotto Singapore ($38). To my delight, I found out that it was a chilli crab risotto topped with large Hokkaido scallops. The risotto doesn’t

reek of the typical pungent chilli crabs but takes the spice and the crab into the sauce, resulting in an atypical risotto dish. Much More than Pasta Of course, there is a smattering of pasta dishes available at Caffe B but do not discount the meat dishes. I loved the Momoiro Pork ($40), braised in barolo wine and served alongside seasonal vegetables. The pork was so tender and well braised with soft fat. It also carried a sweet flavour left by the braising oil, which is characteristic of Japanese braised dishes. The Merluzzo ($45), a meaty Chilean cod in miso with garlic flakes, is also a dish not to be missed. Moving on to dessert, the Zipole con Vodka Adzuki ($18), a traditional Italian doughnut stuffed with vodka red bean paste topped with vanilla ice cream, is a chewy and sinful treat with a heady scent of vodka. In short, Caffe B’s new menu is worth trying out, perhaps for a business lunch in the Marina Bay area. This liquid gold from the oldest wheat beer brewery in Germany is a must-try The history of wheat beer is intertwined with the history of the Schneider brewing family and its famous “Schneider Weisse” or Schneider wheat beer. About 200 years ago, wheat beer could only be brewed by the Bavarian royal family in the breweries. In 1872, King Ludwig II discontinued brewing wheat beer due to a decline in sales. Saving Wheat Beer from Extinction That very year, King Ludwig II sold the exclusive right to brew wheat beer to Georg I Schneider. Thus, the Schneider family is credited with saving wheat beer from extinction! Today, Georg VI Schneider is running the brewery in Kelheim, which the family acquired in 1972, and has remained the Schneider Weisse brewery to this day.

The dim sum is handmade fresh daily at the Royal Pavilion and it shows. I especially like the carrot cake in its slightly spicy and sweet chilli sauce. The smoky and aromatic scent exuded from the duck platter even when it was placed at the opposite end of the lazy Susan from where I sat. The taste was even more phenomenal. The skin was crispy and the meat, tender without a gamey smell, probably absorbed by the overpowering fragrance after all that smoking. Two thumbs up! Chinese desserts can be a little underwhelming at times, but I did like their Steamed Mashed Taro with Pumpkin Puree Served in Young Coconut ($8.50++), the traditional orh-nee dessert steamed in a coconut husk. But the Special Walnut Pastry ($3.80++ with a minimum of four pieces) was a little disappointing and hard. Unthinkable Dishes To stir things up in the “Chopped” pantry battleground, the mix of ingredients that are hidden in the basket can be appalling. Each episode has its own basket of surprises. For example, viewers might be taken aback when they see in Episode 1 the chefs being faced with a basket of poultry innards and red miso – a true test of one’s gut feelings for sure! In another episode, contestants have to do wonders with peanut butter and shrimps for the entree, and then follow that up duly with wonton wrappers and grape jelly beans for the next course! 

Which contestant will surrender?

If you were one of the chefs up there, what would you do to blend gummy fried eggs with corned beef for an appetiser? Would you dare sprinkle espresso powder over flank steak for an entree course? In Episode 3, you will learn that the chefs have to settle for ostrich tenderloins in preparing their appetiser! Also, the judges were confounded watching a contestant who used a rolling pin to flatten a hot dog bun. You will inquire too, if you were judge no. 4. Baffling Moments As with most reality shows, there are baffling moments too in “Chopped”. Imagine having chocolate as a key ingredient for all three courses. Watch the chefs go nutty at creating a dessert presentation out of candy nuts and kombucha. One episode does due diligence to this American TV reality show by highlighting a US-themed menu. All four chefs keep their “strategy” close to their chests to the very last minute; personal and national pride are at stake. “Chopped” indeed gives the contesting chefs a hard time. But, hey, what’s a contest if it is not both fun and mean, or challenging enough? One last poser: Who will be the ultimate “Chopped” Champion to win the US$10,000 prize? any Singaporeans live in the constant pursuit for more space, with dreams of upgrading to bigger, better homes. The same goes for Mr and Mrs Chan, who discovered that staying in a condominium apartment with their growing son was proving to be a spatial challenge. It wasn’t long before the family decided that it was time to move into a larger space, namely, this three-storey inter-terrace house. The next step was deciding on a look for the 4,000-sq ft house. The well-travelled homeowners have been exposed to different global influences, and have fallen in love with different designs the world over. It was only natural that they wanted a home that can comfortably balance these different styles without looking like a hotchpotch mess.

Mediterranean and Country Blend When the Ciseern interior designers first heard the brief, they were a little confused. “The homeowners wanted something classical and Mediterranean. At the same time, they also wanted to achieve the relaxing atmosphere of the countryside. We felt a little bit lost,” recalls one of the designers with a laugh. That initial hump was easily overcome when the designers sat down for a thorough discussion with the homeowners. Instead of bringing in overpowering design elements to represent different looks and international cultures, the design team decided to go with a more subtle route: by using colours. Each room is marked by a particular hue – green in the kitchen, blue in a bedroom, for example – while the design elements remained relatively similar throughout the four-storey house. “It was definitely challenging,” the designers admit. “We’ve never handled so many colours within one project. But because of the space and layout of this home, we managed to make the interior look fresh, cosy and very homely.”

The air well stretches through the four storeys, and the designers created a cosy little sitting area on the second floor. Thanks to the stone wall backdrop and the orange and yellow palette, the atmosphere is akin to roadside cafes in European cities.

Colour my casa Creative Balance of Colour and Style The result is a home that creatively balances colours and styles. The living room and kitchen have a classical feel with influences gleaned from a countryside cottage; the second-floor landing has a relaxed Bohemian vibe; and the master bedroom boasts a Grecian sea-blue theme. Mr and Mrs Chan walk through the room, pointing out some of the major renovations that took place. “There used to be a spare bedroom on the first floor but we had to sacrifice it to make way for a kitchen pantry,” says Mr Chan. “Then we had to balance the respective sizes of the kitchen, the dining room and the lift to make sure that they each have comfortable space.” He adds, “For an inter-terrace house, light will naturally come in from the front and back of the house. That leaves the dining room quite dark, so I wanted a way to bring some sunlight to this area.” The solution was to create an air well that pierces through the centre of the house bringing in light and natural ventilation. “I like the fact that our house doesn’t feel like it’s a typical

Singaporean home,” Mr Chan shares when asked about his favourite thing about the design. “It’s a different style and look that truly stands out. Wood veneer – whether for furniture or floors – has always been an important component in furniture and interior design. And although its popularity may have waned over the years, veneer remains a viable option for home design. This is especially true as more people become environmentally aware, as veneer is lauded for its ecological characteristics; it is recyclable, promotes sustainability and is non-toxic. According to the Singapore Furniture Industries Council in its book “Essential Furniture Knowledge”, veneer is sliced from species of wood that are decorative with various vein patterns. Never fear, mid-April also sees the celebration of Pimai, the Lao New Year, with colourful festivals, holidays and waterthrowing to lift the spirits. Pimai is the largest and most famous of the festivals in Laos and is celebrated throughout the whole country with three days of official holidays, although most locals stretch it to a whole week!

Water pistols, buckets, water hoses, cups and water balloons are the weapons of choice, so get one of these and join in the fun. It is endless and merciless, in a tremendously fun way, but also very much welcome as the heat takes a back seat, giving way to a cool, clean atmosphere. What’s even more interesting is that each town and village in Laos has its very own way of celebrating. In the capital of Vientiane, and in cities such as Luang Prabang, the celebrations sometimes last an entire month! The streets are filled with processions, concerts and games. Expect loads of fun for everyone.

Religious & Fun Celebrations The main feature of Pimai, in this predominantly Buddhist country, is the sacred act of cleansing Buddha statues in the temples with scented water – an act of purification that also marks the end of the dry season. This carries on to splashing water on one another on the streets, with much fervour and fun. Pimai is not a day to get your hair done, and your camera and precious belongings

offerings are also made to merit good fortune and health. The streets are alive with beauty pageants, colourful floats and, of course, water throwing. In terms of nature or water features, Champasak has many beautiful waterfalls where one can swim, kayak and even see freshwater dolphins! Champasak is the ultimate setting for Pimai soaking fun. For Food & Rest When hunger strikes, Lao food not to miss includes laap, a traditional dish made with minced meat, crushed crispy rice and herbs; tam mak houng, a spicy salad with green papaya, chilli, garlic, peanuts and fish sauce; and French-style baguette sandwiches filled with a local pate or grilled meat, salad leaves and chilli sauce. There’s no better way to discover the heritage of North America than to attend a powwow, a unique gathering event of the Native American peoples. Powwows are where Native American tribes gather to dance, sing, renew old friendships and make new ones. A powwow is a sacred time to renew Native American culture and to preserve the rich heritage of American Indians. There are many stories about the origination of the powwow. Some believe that the War Dance Societies of the Ponca and other Southern Plains tribes were key figures in the origin of the powwow. As various tribes come together in a powwow, they share their songs, and often change the songs so singers of different tribes can join. With these changes come the use of vocables to replace the words of the old songs. Some songs at powwows today are sung in vocables with no words. Dance & Rhythms In most powwow dances, there is a circle that represents unity, the circle of life. Dancers often follow a clockwise pattern, associated with the sun. Some of the regalia or ornaments signify special events or honours in a person’s life, special religious traditions or even symbols rooted in legend. In the past 31 years, the “Gathering of Nations” has grown into one of the world’s most-recognised annual festivals. From the beginning, the concept has always been to produce an event in which Native American people can come together each year to celebrate and to share their unique culture. Things to Note When Attending a Powwow Non-Native American visitors to powwows should observe a few rules and guidelines. These include: 1. When the Eagle Staff is brought in during the grand entrance, everyone must stand and all hats are removed in respect. 2. That same respect is shown should an eagle feather fall during the dancing. Everything must stop until a proper returning of the feather has been performed.

weekender.com.sg 3. Pay attention to the MC and his various announcements, including about the etiquette for the event and types of dances. 4. Do not touch the dancers’ eagle feathers, bustles, plumes or fans. 5. Do not bother the performers or stand in front of those preparing to dance or those singing. 6. Ask permission before snapping an individual’s photograph outside the dance area, for this is private time. Some powwows are more restrictive than others in terms of photographing the event. 7. Ornaments have special meanings and many of the handmade outfits cost thousands of dollars and are highly-cherished, and sometimes are made by a respected family member. Often, they are heirlooms and may be delicate. Experience a grand powwow at least once in your lifetime.

Kuantan – Patin Fish & Nasi Dishes Apart from lovely beaches and islands, Kuantan is known for its mouth-watering food. It’s a fusion of Indian, Chinese and some Arab influences. There are many dishes that you will enjoy, including Nasi Kebuli, a traditional rice dish of the local Malays that is cooked with coconut oil and mixed with meat, raisins, onions, cloves, olives and lemongrass – very Arabic, yet also Thai and Malay. Another popular dish is Ikan Patin Masak Tempoyak (Silver Catfish in Durian Paste), a traditional dish of river villages because of the abundance of Patin fish. The tempoyak (durian paste sauce) is rich and delicious and shows how villagers make use of local produce to enhance the seafood. Kuala Terengganu – Coconut Milk & Banana Leaf Goodies Even before we reach Kuala Terengganu, further north, one can smell the rich coconut milk simmering to make Laksam, a local highlight with noodles, herbs and fish in coconut milk gravy. Then there’s Satar, a concoction of fish, shallot and ginger paste,

basted with coconut milk and wrapped in a cone shaped banana leaf and barbecued over a low charcoal fire with a bamboo stick. An ideal snack is Pulut Lepa, a glutinous rice dish flavoured with coconut milk and also barbecued in banana leaf. The food doesn’t just taste good, it looks good too! Kelantan – Rice & Sweet Things The locals of Kelantan love their rice, which is why the surrounding padi fields are a common sight. Head for a local breakfast favourite: Nasi Berlauk. This rice dish is served with fish or chicken and vegetables, and spiced with turmeric and galangal in yellow gravy. Other rice dishes include Nasi Kerabu, a salad served with fried breaded fish, keropok keping (thin and crispy prawn cracker), salted egg, solok lada (chillies stuffed with minced fish and grated coconut) and pickled garlic, and dressed with budu (salted anchovies) sauce. Nasi Tumpang is a cone-shaped banana leaf with rice, omelette, meat floss and chicken or shrimp curry with sweet gravy. Need more meat? Ayam Percik is wood-fired chicken with sweet coconut gravy dressing. When in Kelantan, sweets and desserts are a must. Che Mek Molek,

which translates to “pretty lady of Kelantan”, is fried sweet potato with sugar syrup filling, while Puteri Mandi is a colourful dessert made of glutinous rice flour balls mixed in freshly-grated coconut and sugar or brown sugar (Gula Melaka). Lompat Tikam is another local sweet dessert, made out of coconut milk, rice flour, glutinous rice, brown sugar and pandan leaf extract.
