What if someone you lost… returned?

What would you do if you came back to life? Star of new TV show “Resurrection” Omar Epps answers this and more An eight-year-old boy mysteriously appears in a Chinese province claiming that his name is Jacob. He is brought home by immigration officer Martin Bellamy, played by Omar Epps; famous for his role in “House MD”. When he was brought to the house that little Jacob recognises as home, the elderly parents living there inform Officer Bellamy that their son had actually died more than 30 years ago. We managed to catch the stars of the show, Omar Epps and Kurtwood Smith (best known for portraying ‘Red’ Forman on “That ‘70s Show”), for a quick chat. They shared their thoughts with us.

What is the fondest memory you have of filming “Resurrection”? Omar: For me the memorable day was the first day on set. It was a brand new challenge after working so long on the set of “House”. It was similar to the first day in a new school, which begs the question: “What now?”

If you could resurrect one actor to co-star with, who would it be?

Omar: I have fond memories of my early movie Juice, which I co-starred in with Tupac Shakur, and I would relish the

Grace Kelly’s children have reportedly slammed the film for its inaccurate depiction of the late princess’s story, including “a series of purely fictional scenes”. Whether or not that is true – Dahan might have dramatized Grace Kelly’s story to appeal to the public’s fascination of royal families – we’d say it’s a movie to entertain, after all. Whatever the motivation for making Grace of Monaco, the film effectively reflects a lasting interest in a significant and complex figure, and has kept the image of the princess alive 32 years since her death. The Canyons: Sex-crazed fantasy The product of collaboration between notorious writer Bret Easton Ellis and director Paul Schrader (Taxi Driver) is an exciting and tasteful erotic thriller Young actress Tara (played by Lindsay Lohan) hides an affair from her movie producer boyfriend, Christian (portrayed by adult movie actor James Deen), in an adventure of glamour, revelry, sex and violence. This Kickstarter-funded film [with funds coming from web visitors who donated to the project] is brilliantly brought to life with a cast that almost everybody would be interested to see.

Little Girl Lost Once a demure Disney show princess, Lindsay Lohan now takes on the role of the illustrious plaything of a movie producer. One cannot help but feel that her character in The Canyons is on the verge of autobiographical. Lohan is also one of the show’s co-producers. Somehow, this is not surprising considering her talent. Still, it remains to be seen if Lohan can get her life back on track after all her troubles and to get less seedy roles.

Adult Film Exemplar Real-life adult film star James Deen plays Christian, the hot young movie producer who makes movies just for the fun of it. Throughout the movie,

Christian plots his revenge against his cheating girlfriend, Tara, and her lover. Nonetheless, that is hardly the big seller for the film. With ridiculously good-looking Deen and the foxy Lohan as the show’s main leads, in an already erotic script, The Canyons is sure to engage adventurous moviegoers and artsy fanatics. Or, it is great if you just want to ogle at the stars. orld Cup mania is upon us. You might relish the thought of heading to Brazil, to watch the best footballing nations clash. Nonetheless, if you are not interested in the game, you can fly to Rio de Janeiro and still have a great time without confining yourself to a packed stadium. For non-football tourists, here are six highlights that Brazil offers:

The samba and carnival are two of the most exciting aspects of Brazil

Your first stop in Rio de Janeiro should be the iconic Christ the Redeemer statue at the top of Corcovado Mountain (700m). It is the No. 1 tourist spot and Brazil’s most recognisable landmark. Standing at 30 metres tall on a pedestal with arms outstretched, the statue is a sight to behold. It has since undergone extensive restoration work, after being vandalised with graffiti and struck twice by lightning in recent times.

2. The Spectacular Iguassu Falls From Porto Alegre in the south, cross the border into Argentina and stop by the Iguassu Falls en route. You can view the falls from both the Brazilian and Argentinian sides. However, the latter enables visitors to get up close to the falls. Like the Niagara Falls on the Canada–USA border, Iguassu Falls arches at the Brazil–Argentina border. One of the world’s largest waterfalls, the Iguassu is actually a combination of 275 falls.

A fresh piece of steak carries a bright red appearance, steaks left on the shelf for a longer period turn brownish in colour because of oxidation. Fresh beef also has a meaty smell that does not give off an odour. Marbling is the network of fats within the lean meat of the steak; extensive marbling means the steak is more tender, juicy and flavourful.

Striploin is also known as New York strip, porterhouse, and entrecote. More commonly, it is known as the sirloin. The alternative to the striploin is the shortloin which contains a bone usually used in T-bone steak dishes.

It is quite often difficult to tell apart when cooked, but once a raw reconstituted steak is sliced through the middle; you will notice faint points of fusion where the chunks of meat have been pressed together. There will also be a slight colour difference due to the varied origins of the meat. The meat will be slightly powdery as well.

Beef is aged to make it tender, develop its flavour, and reduce some of the variability in quality. Dry ageing is letting the raw meat “relax” by hanging it up in a controlled environment (temperature and humidity). “Relaxing” the meat allows the beef’s natural enzymes to break down the connective tissue in the muscle and this will give us beef that is tenderer than one that is cooked and consumed immediately after slaughter. Also, dry ageing allows moisture in the meat to evaporate, hence the higher concentration and stronger flavour of dry-aged meat. Beef is considered aged when stored at least ten days.

All cattle begin by feeding on grass. Some finish off on grass while some finish off on grain or corn. A 200-plus day grain-fed Angus beef means during the last 200-plus days of the life of the Angus cattle, it was exclusively fed on grains in a feedlot. The high-energy grains allow the cattle to put on more marbling and fat. Grain-fed beef is fattier, juicier, tenderer and sweeter than those fed on grass. Grain-fed is also more expensive than grassfed ones, because while the animals can feed on grass that grows in the farm, farmers have to purchase grains.

How You Measure Answer: A.

Sous-vide is ubiquitous in restaurants these days. Most steaks are cooked using the sous-vide method for a couple of hours. They are then given a quick post-sous-vide sear before serving. Unlike with traditional cooking, the steak does not need to rest to reabsorb juice – you can serve it immediately after searing. If you got 6-8 correct: You, my friend, are a beef connoisseur. You know where your money is going and what exactly you are eating. You are probably planning a visit to an excellent steakhouse of repute soon, and you will order your steak rare with no sauce; just a little sea salt and pepper. If you got 3-5 correct: You know some facts but not everything about steak and are easily wowed by the terminology on the menu. Perhaps brush up a little so you don’t get ripped off by a glib-talking waiter who tells you what the management has told him to say. If you got 0-2 correct: Save yourself the pain and stick to fast food joints or mediocre steakhouses, where the steaks are more or less “well done” no matter what degree of doneness you specify. Or, better yet, order some chicken.

Here are a few great steak options that range from reasonably priced to splurging, to suit your wallet and your appetite For many westerners, the mark of a good restaurant is the chef’s ability to cook a piece of steak to the desired taste and tenderness. From experience, however, restaurants in Singapore have a lot to learn from western counterparts when it comes to cooking the perfect steak. In a place where finding a good steak restaurant is a rarity, my memory clings on to the places that have offered me the mouth-watering steaks I crave. Below are a few places that have outdone themselves when it comes to preparing excellent steaks. They’ve taken the cue from western recipes and have added their own unique taste. What’s more, the list has been compiled in ascending price order, to fit every foodie’s budget.

Hippopotamus Restaurant Grill Hippopotamus is the French equivalent of Jack’s Place, a steakhouse chain that opened in Singapore a few years ago. Apart from the signature 1.2kg steak that it serves (for sharing, unless you’re especially hungry), it also has a cheap lunch set ($15.90) on weekdays from 11am to 3pm, where the rump steak is available as a main dish. It serves the steak in two separate portions, and I like having the illusion that I’m eating more of it. The main also comes with an appetiser of walnut salad. Roundhouse Pizza, Bar & Grill Owned by local personality Vernetta Lopez and her husband, Roundhouse serves family-friendly grub such as pizzas and pastas, but it also does a fairly good steak at reasonable prices. Serving cuts such as Angus sirloin ($29), rib-eye ($34) and tenderloin ($39) in hearty portions, the steaks comes without sides but with your choice of sauce such as red wine jus, gorgonzola sauce, Dijon mustard and béarnaise sauce. Fat Cow Japanese-style beef can be found at the Fat Cow and it is excellent. It stocks goodies such as the Iwate grade-A5 rib-eye ($99-$288) and Snake River Farms American wagyu ($89). The meat can be cooked to your liking. Have sumibiyaki which is prepared over binchotan charcoal, and sukiyaki, prepared over cast-iron with a shoyu stock sweetened with rice wine. There are short descriptions that offer you a distinct idea of what exactly you are paying for, but if all else fails, ask the staff: they’re happy to help. Red House Seafood’s dim sum better than Tim Ho Wan’s? Having seafood and dim sum at the same time is not as far-fetched as some might think. The new set lunch menu at Red House Seafood on Prinsep Street makes it happen. Since it opened in 1976, Red House Seafood is known for its fresh seafood dishes. It has recently added to its repertoire with a fivecourse set lunch menu ($38+), now available with dim sum. I learned that Red House Seafood also hired a dim sum chef specifically for its

lunch menu. When I tried the food, I was not disappointed!

Dim Sum for Lunch The affordable set lunch starts off with a delicious Dim Sum Basket comprising siew mai, mixed mushroom dumplings, scallop and chives dumplings, and oven-baked char siew pau. The last item is very similar to the one at Tim Ho Wan, but I felt that the one at Red House Seafood was better. The bun was sweet and crumbly, and

encased brownish sweet char siew. It was less chewy than the one at Tim Ho Wan but I prefer it crispier, so I was very satisfied. The next dish that is served is the signature Creamy Custard Prawns, where juicy tiger prawns are lightly battered, deep fried, and then coated in a blend of milk, butter, and kaffir leaves. However, once I received the main starch dish, I was blown away. It was the Oyster Yuan Yang Hor Fun, a deep-fried egg and regular hor fun topped with huge

oysters. The meal had a lovely, crisp texture with a comforting sauce, and it was served with a silky egg omelette and fresh oysters.

A La Carte Apart from the set lunch menu, the a la carte dishes are quite good as well. I personally liked the Scottish Brown Crab in White Pepper ($58 per kg) because it had a flaky and meaty crab, coated in a fragrant and savoury white pepper. Wagyu Beef Barbecue and Shabu Shabu buffets at affordable prices Meat lovers who wish to have endless amounts of beef can rejoice with Tenkaichi’s barbecue buffet. Chef-owner Naing Ye Gaung has seven years of experience working in Tokyo and 21 years in total in the Japanese restaurant business. Having worked as the former Executive Chef of Yakiniku Daidomon for eight years, he has since struck out on his own with convivial dining space Tenkaichi, with shabu shabu hot pot and barbecue options.

Tenkaichi’s barbecue buffet ($98+ for adults; currently on promotion at $54.90+ to $59.90+) includes wagyu beef, other cuts of beef, pork and lamb. With meat being the focus of the barbecue, I would suggest focusing on that instead of the other miscellaneous items on the menu. The Wagyu Sashimi would be a good way to ease into the meal if you aren’t skittish about eating raw meat. The meat is soft and tender without a strong smell. If you’re looking for something more like beef tartare, perhaps you can try the Wagyu Yukke topped with an egg yolk. Apart from that, the barbecue options are great with various cuts of beef to suit your palate. I liked the Wagyu Karubi, Japanese beef belly; the fat marbling makes the meat melt in the mouth but do watch it on the grill as it cooks very quickly. The Wagyu Rosu, Japanese beef sirloin, is a cut with slightly more bite, should you prefer.

Other cuts include bonein short rib, rib finger, tri-tip and outside skirt. Should you like innards, Tenkaichi provides the large intestines, liver and ox tongue as well. The pork cuts, such as the loin, jowls, collar and belly are also available, and cook to a tender slice in mere minutes.

Hotpot Soups The other section of the restaurant is cordoned off for shabu shabu purposes. The small buffet area provides a free flow of fountain drink as well as small side dishes. The buffet line-up for the barbecue buffet is also available for the Shabu Shabu Buffet ($20.90+ to $24.90+ for adults, $10.90+ to $12.90+ for children). There are five different soup bases - miso, seaweed, pork rib, spicy bean paste and kimchi. An array of vegetables and sauces are also available. By incorporating the homeowners’ influences and style, the interior designer has managed to fulfil their expectations Having lived in Australia for an extended period of time, the young couple who owns this 4-room HDB flat wanted to bring their lifestyle into their new Singapore home. With the help of designer Pea Chong from D’Initial Concept, the homeowners managed to craft a unique apartment that takes inspiration from eclectic modern lofts commonly found in Australia.

Leaning on Loft The design team took the time to understand the young couple’s personal preferences, and set out to give the 1,200-sq ft home a strong yet unique standpoint. To achieve the Australian feel, Pea chose industrial surfaces, natural textures and a clean,

earthy palette as the basis of the home. Several walls were removed, leaving a floor space that feels larger than the typical HDB unit. This also allowed the designers to create a more spacious living and dining room configuration. Specifically, the dining room is now a long room that stretches out magnificently. Here, Pea built a display shelf into the wall, making it a strong focal point. She explains the rationale for it: the man of the house has an extensive collection of action figures and she wanted a place where he can proudly display them. The combination of wood and metal laminates on the shelf lends a masculine look that’s befitting of the hobby, and the mixture of open shelves and flip-up doors provides flexible storage and display options.

Customised joinery and fixtures were created just for the couple’s taste, resulting in a home that’s tailormade for them.
