The Monster master Jeremy Wade, star of Discovery’s “River Monsters” was in Singapore to promote its 6th season, and we netted an interview with the Monster master Jeremy Wade, the sun-kissed star of Discovery’s popular series “River Monsters”, came to Singapore as part of his “River Monsters Live in Asia” tour. Jeremy paid a visit to our very own River Safari and took the chance to meet and greet his biggest fans and fishing enthusiasts. He mesmerised us with some of the most spine-tingling stories of his adventures.

What else have you been busy with, Jeremy? In the time that I’ve been filming “River Monsters”, there has not really been time for anything else at all. I was looking to do a bit of fishing back home just for fun and last year I went once. I have got two young nephews, about 12 and nine, and one night I did get a chance to go with them.

What was the strangest moment on the job? A fish called the Goonch catfish. Just the appearance of that fish when I finally caught it... Fresh water fish tend to look very different. They tend to be very

ugly, quite hideous looking.

How did you closest brush with death go? I suppose the most serious injury I have was from an Arapaima. About 12 years ago one of these rammed me in the chest. It was not a particularly big Arapaima but I was in pain for a couple of weeks. I can only imagine what a bigger one could have done to me.

What scares you the most? Many of the types of fish scare me. In some ways fear helps because it makes you pay attention.

I find electric eels particularly scary; it is the one fish that I will not touch. I have industrial rubber gloves designed for people who work on power lines when I have to deal with electric eels.

With which creature was your greatest battle? The Goliath Tiger Fish. The first time I went to the Congo rain forest was 25 years ago. I caught nothing. The second time I was there, I caught nothing. It took me 25 years to get a big one; the challenges don’t come much more difficult than that.

ajor Bill Cage (played by Tom Cruise) suffers from a deadly case of déjà vu as he gains “cyclical immortality” from the extra-terrestrial enemy at war with humanity. Each time he dies, he appears to rise again at a previous point in time. With his newfound ability, the fate of the war lies in his hands.

Eternally Living & Dying Cage is arrested for resisting enlistment in the front lines and awakes as a private preparing for the heat of the alien warfare. When the alien enemy bleeds out on Cage, he is gifted with “cyclical immortality” and is given the chance to alter the outcome, over and over again.

No matter how many times he tries, he is unable to avoid death in the heat of battle. This changes when he meets Rita Vrataski (played by the beautiful and talented Emily Blunt), the “Angel of Verdun”, who tells him, “Find me when you wake up.” What could this mean?

Deadly Déjà Vu The term déjà vu, which means “already seen”, is used not only in reference to the powers Cage acquires in the film but also the familiar themes in Edge of Tomorrow. Viewers will find that this movie has an uncanny resemblance to blockbusters such as Groundhog Day and Starship Troopers. Although Edge of Tomorrow brings surprising familiarity to cinemas once again, the show is primed to be one of Cruise’s best performances in recent times. Also look out for performances by Brendan Gleeson and Bill Paxton.

Director Doug Liman has successfully transformed a generic plot into an amazing thriller based on the novel All You Need Is Kill by Japanese author Hiroshi Sakurazaka. Fortunately, the soundtrack that’s full of Latin and New Orleans beats keeps things moving along nicely. The pleasant cross-country ride and ‘food porn’ shots of the tempting grub will also stop most from throwing a fit about the film. Favreau develops an engaging chemistry with his former coworker, who insists on being part of Casper’s new venture. The growing bond with his son Percy will also bring a smile to

your face. There are also plenty of amusing moments. It is a pity though, that the ending is entirely predictable. We can’t help but think that while Chef is easy to sit through, it will likely fail to leave a deep impression. Chef seems to lack narrative spices and savoury surprises in character development despite the engaging actors and exotic locales. Would Favreau have done better with his usual bigbudget epics? An old HDB flat goes through an overhaul that results in a stand-out industrial look

T

his two-bedroom flat at Queen’s Close was built more than 30 years ago, and now bears the wear and tear that naturally comes with age. Its floor plan and layout was also a problem. For example, it comes with a single bathroom that can only be accessed from the kitchen. The couple staying here felt that these were some of the things that needed to be addressed, and they engaged design firm Meter Cube to handle the project.

Space Odyssey One of the first things designer Alvin Seah did was to rework the space planning so that the spaces would be better utilised. For instance, one bedroom is converted into a study and dining area. A portion of the wall was knocked down and a sliding glass door put in place. This creates greater visual flow throughout the space. Because the bedrooms are next to each other, Alvin was able to allocate space for a walk-in wardrobe and a music room right next to the bedroom proper, simply by carefully dividing the two bedrooms among the various spaces. “Measurements had to be precise, which was how we even managed

to include the music room,” he explains. A unique feature of this old HDB flat is the niche under each bedroom window where customised storage cabinets now provide space for their belongings. Past the simply-furnished living area and deeper into the apartment are the kitchen and master bedroom. Here, Alvin’s efforts in reworking the space create direct access to the bathroom from the master bedroom. Alvin also reduced the size of the kitchen, which in turn results in a more efficient space for cooking.

Turkish delight in Bedok Authentic Turkish food can be found in the new Bedok Mall adding spice and sweetness to the heartland As if the East side isn’t already filled with enough good food, Ottoman Kebab & Grill opened in Bedok Mall. Yes, you are hearing envy from a very jealous Westie. The restaurant is helmed by a native Turkish chef with over ten years of culinary experience, Chef Ali Kose. He worked as a sous-chef in Gordon Ramsay’s Michelinstarred restaurant, Maze, in London. Now, he serves his hometown specials at Ottoman.

A Turkish Treat The cheery setting of the restaurant is illuminated by tinted blown-glass lights. There

is also a large wood and white marble table that helps to convey a convivial feeling. The food is decidedly authentic, with an excellent Homous ($6). The chef’s chickpea dip is creamy but not overly so with a good balance of tahini – ground sesame paste, lime juice and garlic, perfect for mopping up with the homemade Pide Flat Bread ($2). The flat bread is cooked over lava stones for a char-grilled aroma before serving. My favourite was the humble Falafel ($5 for three). I am quite often disappointed by the falafels I get in Singapore, because most of them are stale and oily, but not the one at Ottoman. It was fresh and a good texture from the ground chickpeas and fava beans. If you like spring rolls you could try the Cheese Borek ($6 for six), which is essentially a

new menu

experience to come up with the new items. And, I must say, the portions are substantial. The restaurant is also launching its own label of wines.

An Open Door to refreshing change Popular eatery Open Door Policy revamps its menu along with a new head chef I’ve always wanted to visit Open Door Policy since they opened but I never got the chance to until its recent update. Open Door Policy welcomes its new head chef, Daniele Sperindio, along with newly-revamped menus. Working with Chef-Partner Ryan Clift of Tippling Club, both chefs put together a wealth of

The appetisers such as Crumbed Mediterranean Anchovies with red onion jam and caper berries ($20) make for a good start to the meal. The crispy fried anchovies, served alongside anchovies pickled in chardonnay, complement the homemade red onion jam and rocket salad very well, making it a slightly bittersweet and tangy salad with a crunchy bite. For something a little more Asian inspired, perhaps try the spicy lamb spring rolls served with fresh salsa, yoghurt and avocado ($20). The fresh minced lamb cooked with coconut cream, curry and house spices encased in crispy spring roll skin had a good bite while the accompanying salsa, yoghurt and guacamole masked the gamey scent well. If you are a fan of blood sausage, give the seared scallops with cauliflower couscous and preserved lemon ($24) a try as it comes with a side of boudin noir.

The minced mutton patties are grilled before they are placed atop pide bread croutons and slathered with a sauce made from sun-dried tomatoes, celery, carrots, shallots and dried mint before being topped with yoghurt. Should you have a large number of people in your group, you could share the Ottoman Shish Platter ($29), which comes with chicken, beef and seafood, with pilav rice and pide bread. Ottoman also carries an array of authentic Turkish desserts such as the Kunefe ($8.50), a bee hoon-like dish with stretchy nabulsi goat cheese in a shredded filo pastry, pan fried with butter and drizzled with sugar syrup and crushed pistachios. There is no scent from the goat cheese whatsoever; take it from someone who hates goat cheese. End the meal with a strong cup of Turkish Coffee ($4) or sweet Apple Tea ($3) for a proper close to a Turkish meal. Handmade Chorizo Tortellis with Fried Sage, Burnt Butter Sauce and Spinach ($27), it comprised about seven decent-sized tortellis with chewy and slightly spicy chorizo within. I’m usually disappointed with the amount of pasta given whenever I order ravioli or tortellinis, but I was glad to be filled up with this main dish. The beetroot risotto topped with feta goat cheese and pea tendrils ($25) is reason to rejoice and the pretty pink shade of the risotto is a great photo op. For dessert, do not skip the Chocolate Pistachio Souffle with Crème Anglaise ($18), which comes in a coffee cup and is a lovely shade of green. Pierce a hole through the airy soufflé and pour the crème anglaise in for a light yet decadent end to the meal. Comfort food in the heart of the city Give Sprigs a try if you’re looking for simple Western comfort food

as the parmesan scent is too overpowering. Besides that, it was a very satisfactory dish.

If you wander around the Purvis Street area, you might find a nice new place to have lunch. Sprigs opened in April and serves contemporary Western favourites at an affordable price. “I have always believed that it’s the fine details that affect the big picture. I wanted this fine attention to detail from the garnishing on the plate to the small sprinkle of spice that adds that special twist to a dish to resonate in the menu at Sprigs,” says one of the owners, Titus Tiong.

Affordable Gourmet Dishes A simple yet familiar dish is Cream of Mushroom soup ($6.90). It is slightly lumpy with bits of mushrooms and an additional fragrance of truffle oil. However, I did find the menu slightly pretentious with the description of a “medley of mushrooms”. Despite that, the soup did the trick of being comforting and filling at the same time. The Truffle Nori Fries ($6.90) is also a good starter to share. These shoe-string fries are coated with parmesan and seaweed, and drizzled with white truffle oil. The truffle smell is not as evident in the truffle fries,

Another simple dish is the Forest Mushroom Tagliatelle ($14.90). It is cooked in a flavourful vegetable nage or broth and tossed in garlic, parsley, cream, and truffle perfume. This dish fared much better than its more elaborate counterparts because the pasta was cooked al dente (chewy), and its slightly creamy sauce gave the pasta a richness that was not too cloying. The Pork Milanese ($16.90) is a sinful treat for lunch. It is deep-fried breaded pork with parmesan cheese and lemon caper sauce, in case you want something a little more heavy. The desserts were very delicious, especially the Crispy Chocolate & Caramel Crumble ($12). The rich chocolate toffee mousse is peppered with sea salt hazelnut crumble, giving the decadent mousse much needed texture. If you prefer something a little fruitier, try the Mango & Passion Fruit Panna Cotta ($12). It is fairly light and slightly tart, with sweet notes from the fruit. Find value-for-money and quality Omakase set meals at Sushi Kou Omakase, or “it’s up to you,” means putting your dining experience in the hands of the chef. The chef then crafts a meal in the order of appetiser, sashimi, grilled, fried, braised, sushi, and then dessert. At Sushi Kou, choose from delightful multi-course sets at $50, $80 and $100, featuring the best oceanic catch and seasonal vegetables directly-flown from Japan. The Omakase experience is different each time.

Sumptuous Adventure I had the $80 seven-course meal. Tako Geso Mushi Okaka (Octopus tentacles in sweet sauce) was the first to arrive, and tasted fresh with every bite. I liked how the flavour lingered in my mouth, yet it was not overpowering. The sashimi platter came next with beautiful presentation, guaranteeing happiness in a bowl. The melt-in-the-mouth Otoro (tuna belly) and Mekajiki (swordfish) stood out to me. Overall, the dish hits the perfect notes. It was simple yet satisfying. Murasaki Igai Cheese (Grilled

mussels with cheese) instantly won my heart, perhaps due to my weakness for cheese. Every scoop was irresistible. I loved how the texture was light despite the creamy flavour. The braised duck in Japanese style was memorable. It was smoky and very tender - easily a crowd-pleaser. When it was time for sushi, I was thrilled to see eel again as I was already craving for more after having unagi in an earlier course. Despite being full after gulping down all the sushi, I could not resist the generous scoop of ice cream for dessert that I thoroughly enjoyed.

Castles with Haunting Beauty There are thousands of castles across the world and several have been the scene of bloody battles and murders. It is no wonder that so many are reported to be haunted. One castle with a particularly interesting ghost has a very fitting name. It is called the Chillingham Castle, reportedly one of the most haunted in Britain.
