With the knockout stages of the 2014 World Cup having just commenced, the nail-biting action and surprise results have continued. Will Latin America dominate this World Cup on their home continent?

When Brit beauty Ellie Goulding was in town for her concert, we caught up with her on the latest “Hello, everyone,” said the blonde, vivacious but slightly tired-looking Ellie Goulding as she entered the room at the Fairmont Singapore. The pretty British songbird had just flown in the night before and managed to squeeze in a visit to friend and fellow performer Taylor Swift’s concert. Ellie shared some of her latest endeavours.

Welcome to Singapore, Ellie! How do you like it so far? I love it! I’ve been here once before and I think it is a very friendly place. I’ve had nothing but good memories here.

Any plans for the future to share with us, Ellie? I’ve been touring this record Halcyon Days for the past couple of years and it hasn’t really stopped. I would like to travel a bit more, not in a touring sense but to stuff some inspiration together for the next record. I think I need to take a break first. I finish this year in October. But I’d like to stay in a place for more than a week. That would be nice.

You’ve worked with all these big names. Which has been your best experience? Hmm, Calvin (Harris) was fun. We went back and forth; we wrote in his house in London and then we left it for a year, and reunited in Los Angeles and recorded it back in London. This is quite a boring story actually… [laughs] For a while, I wasn’t sure what was going to happen with that song (I Need Your Love). But it happened, and I love it!

You used to have quite a bit of image insecurity early in your career. How did you overcome it? Er, goodness! I don’t think I’ll necessarily get over it. But the way I dealt with it probably changed. You see, three years ago I would not have been able to walk into this room, in fact. The only press conference I ever did, I crawled under the table and left instantly as I was so scared. It was daunting.

Well, I’m glad you’re still here with us now! I think it was the same for photo-shoots. I didn’t think becoming a musician came with

having to look a certain way, be pretty or wear designer clothes. But I got to a point where I stopped really caring and I stopped putting my face in certain ways or hiding my face. I think part of the reason I love long hair is that it covered my face. And I’ve cut it off! I’m way happier now; I can look at pictures of myself now and not be like, “Eugh!”

Brazil and Chile ended extra time with a 1-1 draw. The Chileans put in a great performance, especially FC Barcelona’s Alexis Sanchez who fought hard in attempt to carry his team through. The host nation scraped through by the skin of its teeth in the penalty shootout with a 3-2 win. Many will sympathise with Chile, who put in inspired performances game after game, only to bow out of the World Cup unceremoniously.

Colombia 2 – 0 Uruguay Everyone expects Neymar and Messi to shine, but James Rodríguez has been the revelation of the tournament so far. The young midfield star netted two goals to send Uruguay, pretournament favourites, home. Rodríguez has now scored an impressive 5 goals. Uruguay on the other hand seemed a little lost without Luis ”Jaws” Suárez, after he was sent home and banned for biting Italy’s Chiellini.

Netherlands 2 – 1 Mexico 2010 World Cup runner-up the Netherlands left it late to rewrite the script with a spectacular comeback. The Oranje danced with death up until the 88th minute, after trailing from Giovani dos Santos’ scorcher just after half-time. Wesley Sneijder saved the blushes, and their tournament, with a well-executed volley from a selfless headed pass from Klaas Jan Huntelaar. Late in injury time, chief tormentor Arjen Robben was once again fouled, and the referee finally gave a penalty. Huntelaar sealed the deal for the Orange Army. One can’t help but sympathise with Mexico who came so close, yet has ended its last 6 tournaments in the round of 16.

Costa Rica 1 – 1 Greece, Costa Rica through on penalties [5-3] Perhaps the biggest surprise of the tournament, Costa Rica continues to shine. Costa Rica’s performance was perhaps not as stellar or glorious as in their previous victories against Uruguay and Italy but the Central Americans pulled through on penalties. Will the Latin American tide prevail into the quarter-finals, especially against European giants such as the Netherlands and Germany? Stay peeled for more mouth-watering match-ups.

vs Brazil vs Colombia Brazil struggled in their last game against Chile. Will Neymar and co. pull up their socks, or will the young James Rodriguez upstage the Brazilian superstar?

vs Netherlands vs Costa Rica The Dutch look difficult to beat with a wealth of talent and an indomitable will to fight to the death. They certainly look set to crush Costa Rica. Still, the Oranje struggled against Mexico. Will Costa Rica seize the day? As we’ve witnessed, anything can happen in the World Cup. However, the sequences are now of much greater severity. Here’s wishing your team the best of luck to if it still remains, and a salute to the fighting spirit of Latin America!

Which band would you rather be stuck with on an island, One Direction or McFly? Well, I guess I don’t get to see my boyfriend that often. [Ellie is dating former McFly band member Dougie Poynter.] So, I would have to say McFly, although he’s no longer in McFly but in another band... But, still, McFly.

What to do if you get into a car accident with a foreign vehicle The basics of any insurance claim are the same, no matter if it happens in Singapore or Malaysia or with foreign or Singapore cars. Basically, to ensure that the claims process is as efficient as possible, insurers need as much information as the car owner can provide in order to process the claims, and to be used if and when the parties involved are contesting liability. A good guide on what to do for any motor accident in Singapore is to follow the Motor Claims Framework, a best practice framework undertaken by all motor insurers in Singapore, which was implemented in 2008.

* Additional info: In-car cameras can be placed at the front or the back of the car (some drivers have both). To help drivers decide where to place their in-car camera, an interesting fact from Aviva’s claim statistics is that ¾ of accidents occur with damage to the front of the car; hence placing a camera at the front with at least a 150-degree view should prove to be the most useful.

• Don’t allow unauthorized tow truck operators to bring your car to an unauthorized workshop. • If in doubt about what to do after an accident, call your insurer for advice as soon as it is safe to do so. They will be able to assist you on what details and procedures you will need to follow.

• Check your policy’s area of coverage. Most car insurance policies in Singapore cover you and your car up to West Malaysia and Thailand (up to 80km from the border with West Malaysia). • Check if your insurance policy covers cost for towing services outside of Singapore. With Aviva, customers can call the 24-hour hot line and we’ll arrange for your car to be towed back to Singapore free of charge, as long as the accident happens within your policy’s area of coverage (West Malaysia and in Thailand up to 80km from the border with West Malaysia). • It could take longer to claim against a foreign vehicle insured by a foreign insurer. As such, it might be easier to claim against your own policy first, and some policies such as Aviva’s will not penalise your “No Claims Discount” if they assess that the accident is not your fault. In general, the road conditions and traffic rules in Singapore and Malaysia are different, and we would advise Singaporean drivers to be more alert when driving in Malaysia to avoid accidents.

ired of conveyer belt sushi? Sometimes you really do get what you pay for, especially in terms of quality. Some sushi places in Singapore serve you less than stellar cuts for valuefor-money prices but are you really getting what you want? Get the sushi you are expecting at the right price. Here are a few options to suit various pockets.

Although this sushi restaurant originated in Hong Kong, the quality is of a Japanese standard. Apart from the sevencourse Omakase Set ($150 and up), the restaurant also has a more affordable set lunch menu which comes with miso soup, udon and ice cream. The Assorted Sashimi Cube on Sushi Rice ($42) and the Assorted Seafood on Sushi Rice ($52) are good options to try the pristine fresh fish. Not to be confused with the above-mentioned Sushi Kuu, Sushi Kou is nestled beside the ever-popular Teppei. Sushi Kou also specialises in Omakase sets ranging from $50 to $100, with a minimum of two sets. The fish and vegetables are freshly flown in twice a week from Japan, and the a la carte menu features 26 different types of nigiri sushi such as the Toro Salmon (salmon belly, $4 a piece) and the Negitoro Maki (a minced fatty tuna belly rice roll, $7). Sushi 101: What’s what?

Gunkan You know the seaweed wrapped sushi that comes topped with roe or, especially in Singapore, sometimes with tuna mayonnaise? That’s called gunkan. “Gunkan”, or “battleship” in Japanese, is served with ingredients that are usually difficult to place on rice. The seaweed encases a small ball of vinegared rice, leaving some space at the top for the ingredients.

Puzzled by all the Japanese terms on the menu? Here’s a break down on what’s what The one wrapped with seaweed, the one with a piece of raw fish, the one wrapped in tofu skin, and the rice rolls. Using these descriptions might bring to mind the type one is talking about. However, not everyone may understand, and you would look like a complete “noob”. Increase your sushi savviness by learning these terms. It’s a breeze once you practice a few times.

Maki The easiest of the lot to recognise, Maki are sushi rice rolls that are usually wrapped in seaweed with a pat of raw fish, pickles or cucumber. There is also a variation called the “temaki”, which is essentially the hand-roll. Of course, in recent years, there are “reverse makis” with the seaweed on the inside as well.

Nigiri

Sashimi is just raw fish that can range from salmon to tuna, yellowtail or swordfish. The main difference is the absence of sushi rice. It isn’t considered “sushi”, but it is usually listed next to the sushi in the menu.

You’d never think the nondescript “inarizushi” was named after a Shinto God. Sweet, deep-fried tofu skin is seasoned with a sweet mixture before stuffing sushi rice within it. There are also various permutations with crab mayonnaise, egg mayonnaise and such, and these have found their way onto many conveyer belt sushi places in Singapore.

Nigiri is a ball of vinegared sushi rice that comes topped with a variety of ingredients, ranging from raw fish to octopus to Japanese omelette. The fish ones typically come filled with wasabi in between but in Singapore restaurants usually leave it up to the customers to fill that space on their own.

The Shiok Maki Koh Grill & Sushi Bar has gained much traction since it unveiled the uniquely Singaporean Shiok Maki. There are apparently two different versions of the Shiok Maki but one of them comprises a rice roll with avocado, unagi and aburi salmon topped with a cheesy mixture of mayonnaise and mentaiko (roe of pollock and cod) and tobiko (flying fish roe). It looks helluva unorthodox but, apparently, many Singaporeans say it is truly “damn shiok”.

Coming out of the city that invented arrogance, crepes and baguettes, I was shocked to learn that this particular type of ‘sushi’ exists in Paris. Sushi rice is wrapped in a thin egg omelette with Nutella hazelnut spread, and sometimes banana is added into the mix. Everything may taste good with Nutella but this is just bizarre.

Deep Fried Sushi? How I think this sushi might have come about is cheap sushi chains trying to cut cost by frying less-than-fresh maki rolls in order to render them sellable. But the trend seems to have taken off with many conveyer belt sushi places serving these “tempura sushi”. You tell us if this is weird.

Obvious from its name, the California roll originated from the good ol’ US of A. Japanese chefs in the United States began to substitute avocado for fatty tuna. They started placing the nori (seaweed sheets) on the inside of the roll as Americans did not like the seaweed on the outside.

Mystical Skye Travel gurus have been singing praises of Scotland’s Skye – we join a small-group tour to the island to find out what the rave is about

Having booked with Skye Tours one day ahead, we took the 0858h train to the end of the line, arriving at Kyle of Lochalsh at 1128h. There, we met Angela, our tour guide and driver, who quickly got into gear and drove our group of ten across Skye Bridge for a five-hour romp on the isle. Along the way, Angela, in her Scottish accent, regaled us with historic tales of dinosaurs that once roamed Skye, of Nordic invasions, and of tragic battles led by Bonnie Prince Charlie. After a photo stop at a creek with the Cuillin Hills for the backdrop, we arrived at Portree, the main town, for a quick lunch.

My better half and I stayed in Inverness, Scotland’s northernmost city in the highlands, one summer weekend on the last leg of our maiden trip to Britain. The main streets and the Eastgate Shopping Centre next to the train station thronged with weekend shoppers. But we didn’t come all the way to Inverness to shop. We made Inverness our base for a day trip to the picturesque Isle of Skye, which travel gurus rave about.

To the land of Dinosaurs and Princes

The Old Man of Storr & Trotternish Peninsula Up ahead, The Old Man of Storr came into full view – a 50-metre pinnacle moulded from a volcanic lava outflow. It was impressive, to say the least. We then moved up north to the island’s remote parts in the Trotternish Peninsula. All at once, we saw how desolate and eerie the whole area was, compared with the scenario at Portree. It was as if we were the only ones there! Angela was no road-hogger and the vehicle was no jalopy either. She raced on the deserted A855 highway like an F1 driver. Never fear, we arrived safely at our next stop – the Lealt landslip parking lot.

Sweeping Panoramic Views The Lealt landslip lends sweeping views overlooking an inland gorge and the open sea. One catch: we had to watch our steps as we treaded down the slope and up again as there were no safety rails along the precarious escarpment. The next stop was a viewing point of the 60-metre Lealt Waterfall that pours out into the sea below and the adjoining Kilt Rock, shaped out of basalt columns like the pleats of a Scottish kilt.

The Land Before Time We visited the Staffin Museum at Ellishadder, which displays a dinosaur’s thigh bone fossil, primitive tools, framed old photos, and artefacts found on the island by a young boy. He is now the elderly curator of the museum. Our last stop was the lofty Quiraing tableland on the northernmost summit of the peninsula. The minibus ascended via a treacherous winding road linking Staffin with another outpost, Ulg. At the 543-metre summit, with the oceanic wind blowing at us, we could only gape in wonder at the views over the promontory. The clear skies that day also enabled us to spot mountain goats on the grasslands. Angela detoured to a pleasant training centre to let us freshen up before ferrying us back to Kyle of Lochalsh on time. We paid £35 (S$70) each for the whirlwind tour and thought it was well worth it. The travel gurus were right. Skye’s sheer beauty was unlike any other in the world.
