Big guns set for stroll… or not The Premier League returns this week, with the big guns set to breeze past their lesser opponents. But will they? The Premier League returns to action this weekend, and the traditional giants look to have rather favourable matches on their players’ return from international duty. It should be a straightforward affair, right? Probably not! Let’s have a look.

Manchester City vs Tottenham (Sat, 7.45pm) Normally, I’d call this match the highlight of the week. But with City having scored 11 goals against Spurs in both encounters last season (6-0 at the Etihad and 5-1 at White Hart Lane), I highly doubt things will change that much this time. At the most, the score line would be a little less flattering for the home side. Prediction: Manchester City 3-0 Tottenham

Arsenal vs Hull City (Sat, 10pm) The bad news for Arsenal is that its injury list continues to grow as record signing

Mesut Oezil becomes the latest casualty, who’ll be missing for up to three months. But not all hope is lost for the Gunners, at least against Hull City, as their recent results against the Tigers have been heartening. They’ll win, but barely. Prediction: Arsenal 2-1 Hull City

Ah Siao pushes his limits for charity Gerrard Lin is known to the running community as “Ah Siao”, for running marathons while dragging a tyre This quirky guy single-handedly raised almost $100,000 via crowdfunding in 2012, by running the Standard Chartered Marathon while dragging a 14kg tyre that’s strapped to his waist. Because of his feat, much awareness was garnered for the Bone Marrow Donor Programme (BMDP). Undoubtedly, it’s an unusual way to do charity work. But, in his own words, “the crazier, the better”. We met up with Gerrard Lin a.k.a. “Ah Siao” ” (“crazy” in Hokkien) to find out how he accomplishes such superhuman athletic feats, and to catch up on his future goals for the BMDP.

Why do you choose the Bone Marrow Donor Programme as your cause? Many think that I’ve a family member with a blood disease. But, no, I was motivated to do my part when I learned about the harsh reality that blood disease patients face. Did you know that they only have a 1 in 20,000 chance of finding a suitable bone marrow donor? In other words, they would have a better chance at striking 4D than finding a compatible and willing donor!

If you’re already running for charity, why do you need to drag a tyre too? The tyre symbolises the extra challenges that blood disease patients face due to lack of awareness about bone marrow donation. Many people think that it’s painful or troublesome, when all it takes is a simple cheek swab to register your DNA. In the chance of a successful match, the discomfort level of donating your bone marrow is comparable to donating blood. There are no health risks because bone marrow, like blood, is self-regenerative.

Why do you go by the name “Ah Siao”? I’m the typical Ah Beng that everyone can relate to, and I’m naïve enough to do what others say can’t be done. Being famous is not my goal so I don’t go by my own name. I hope that adopting this quirky persona would draw better and bigger awareness for my cause.

You ran 31 marathons within 31 days this year for the cause. What was that like? Hellish! I endured multiple injuries but I ran with a signboard of the BMDP logo which reminded me of my purpose. At first, my friends and fans thought I was just kidding but when they saw me persevering, some ran along with me and some made donations. I’m glad I fulfilled my goal; every kilometre that I ran was evidence of my commitment to the charity I’ve adopted.

Wow. What’s your next fundraising goal? Next year, since Singapore is turning 50, I intend to head to HDB flats and run up 50,000 storeys within a month. I estimate that it would take me at least 6 hours a day. Running is what excites my soul, and it doubles up as a platform to inspire people and raise awareness. If nothing in my body is broken, I’ll definitely carry on. A successful bone marrow match gives patients with blood diseases a second chance at life. With the new IPPT, anyone can pass (Well, almost)

New IPPT: Making warriors or weaklings? Depending on which side of the fence you were on, the recent changes to the Individual Physical Proficiency Test either caused you much anguish or made you celebrate like Mario Goetze after scoring the winning goal for Germany in the World Cup finals Looking at my Social Media feed, there were people who were posting about the changes and using words like “Finally!” or “Now I don’t have to do Remedial Training!” As for the opposing camp, netizens were concerned about how making the test easier is inviting criticism that soldiers in the Singapore Armed Forces (SAF) are weak and pampered. Are there drawbacks to the new IPPT?

accurate readings on which soldiers actually have the strength, flexibility, speed and endurance. Another bugbear I had was that as a combat-fit soldier who went into the field almost every week in full combat gear, I realised performing well in IPPT doesn’t always translate into performing well out in the field. Why? Again, because of the emphasis placed on running. Physical instructors were so obsessed with training soldiers who failed the 2.4km run that 90 per cent of the training consisted of running. In fact, every opportunity that SAF had, the commanders made the soldiers run. Oh, it’s Battalion Cohesion Day? Let’s go to East Coast Park to run. There’s a new Commanding Officer in the unit? Let’s welcome him by going for a run. You get my drift. There was a run for everything.

Desire for a Better-Balanced Gauge Running is beneficial and healthy, yes. But the truth is, endurance alone is not a good training to prepare soldiers for combat. Soldiers need to have strength training to prepare them for the heavy loads that they will be carrying, flexibility to climb over objects and uphill/downhill, speed to sprint to take cover or attack during fire movements. So, do the new IPPT changes address these issues? Well, Yes and No. As with everything in Singapore, the changes to the IPPT, which has been reduced to three stations (push ups, sit ups and 2.4 km run), are not new or original. The new IPPT is a watered down version of the United States Marine Corps (USMC) Physical Fitness Test (PFT), which consists of pull ups, sit ups and 5km run.

Easier to Pass This watered down test is great for Operational Ready NSmen (reservists) because it addresses the main grouse: It is easier to train for and pass because they are simply too busy with work. However, this test still does not determine if soldiers in active duty are combat fit and neither does training for the test prepare the soldiers for being in the field.

Different Tests for Different Folks?

Old IPPT Flawed? When I was still serving the nation more than two years ago, I felt that the IPPT was flawed and needed some tweaking. One of my pet peeves I had was that there was too much emphasis placed on running. I blame this on “the faster you ran, the fitter you are” culture in the SAF. The scoring system of the old IPPT system was proof of that. For example, if you pass your standing broad jump, shuttle run, pull up and sit up stations but fail your 2.4km run, you fail the whole test. How does that make sense? If I can do 20 pull ups, jump 250 cm, finish my shuttle run in 8.45 seconds, do 50 sit ups but I fail my run because I did it in 15 minutes, does this mean that I’m unfit?

Running, Running & More Running The old system cultivated a habit where soldiers who performed poorly in the 2.4km run would do the minimum effort required to pass in the rest of the stations in order to save energy for the run. This meant that there were no

The USMC has another test, called Combat Fitness Test (CFT), which includes an 800m run, lifting a 13kg ammo box over their heads as many times as they can in 2 minutes and a 274m course where they have to perform five various tasks. This test has to be done in boots, camouflaged pants and T-shirt. Here’s my suggestion: Implement the CFT for soldiers in active duty and use the PFT for NSmen. This will effectively kill three birds with one stone. Firstly, it will prevent the IPPT from being a purely endurance test and encourage soldiers to train for strength, flexibility, speed and endurance. Secondly, NSmen who don’t train regularly because of work will not have a hard time passing the test. Which is SAF’s main purpose for changing the IPPT system in the first place. Lastly, both tests don’t include the dreaded pull ups anymore. What do you think of my suggestions? Man up and drop a comment now! It’s a bittersweet rom-com – the kind that also seems to question what place love has in the world today. Grant said, “This story also has layers of despair and sadness that provide some bass notes to the comedy.”

Complementary Cast Joining Grant is a colourful ensemble of stars who fit equally well into their roles. Marisa Tomei – from My Cousin Vinny and Crazy, Stupid, Love – plays romantic interest Holly Carpenter. Tomei brings her While famous for My Cousin Vinny, Marisa experience in delivering Tomei has shone in numerous films both dramatic and comedic characters, giving the movie its fine balance. The audaciously daring student Karen Gabney is portrayed by Dark Shadows’ Bella Heathcote, who was readily welcomed to the project. Grant said, “She came to the screen test and was instantly the only one we could possibly cast. She had this fantastic air of privilege and spoiled sexuality about her.” Well, not that Grant isn’t the reason to catch The Rewrite, but it looks like there’s a more attractive reason that will draw the crowd!

A Killer thriller Japan and Indonesia cinemas collaborate for a killer thriller Seldom do we get a film collaboration between the best of two countries. But when it happens, we get a wonder child like The Killers. The story is split between two individuals. Japanese serial killer Nomura (Kazuki Kitamura) has a fetish for violently torturing his victims, then uploading videos of his sessions online. Indonesian journalist Bayu (Oka Antara) chances upon Nomura’s videos and is sickened by the content but finds himself re-enacting the violence on a burglar. He subconsciously records and uploads a video of the act online. Nomura identifies with Bayu, and reaches out to his psychopathic soulmate.

Til Death Do Us Part The Killers ties two separate persons together in a fateful bond through inhumane violence. Fans of psychological thrillers will love the killer camaraderie between these two criminals. It’s a treat to see the two seasoned horror actors turn up

the heat on screen. Kitamura is known for his outstanding work in movies like Kill Bill and Thermae Romae. Antara has starred in an impressive number of Indonesian horror films, including the semi-American V/H/S/2. However, this unity soon turns into tension and self-destruction. Nomura finds his life distorted from the moment Bayu arrives, and his behaviour becomes even more frightening. To make matters more thrilling, Bayu meets a girl, Hisae (Rin Takanashi), who stands out from his other victims. It certainly sounds like a story to die for.

Big, bad villain The cold-hearted character of Nomura may be both the boon and bane of this production. Even actor Kitamura reveals that he could not identify with his character: “There is no reason or desires that explain his actions, and he lacks any morals. What he does is… completely inhumane. As an individual, there is no part of the character Nomura I can identify with.” But there are undoubtedly many viewers

who can appreciate a good bad guy, moral deficiency included. “I realise that the end result may be mixed reviews,” Kitamura said with a laugh.

Killer collaboration This blood-soaked venture comes from a merger of the biggest names in Japanese and Indonesian horror. Timo Tjahjanto – of the award-winning Indonesian duo The Mo Brothers – and Japanese director Takuji Ushiyama co-developed the script. Given the directors’ penchant for artistic horror, we won’t be surprised if some people will start to buy into the violence as an art form.

Blended or Single? 10 tips to turn you into a whisky connoisseur

The recent surge in popularity for single malt whisky has made us wonder if people know how to appreciate this fine “Water of Life” – here’s a crash course

T

here have been many famous exports from Scotland. Actors and actresses such as Ian McGregor, Sean Connery, Tilda Swinton, or even Adam Smith, the father of Modern Economics, have all made their mark on the world. However, for me, the most important contribution of the Scots to humanity is Single Malt Scotch Whisky! Single malts such as Glenfiddich, Macallan, Glenmorangie and others have been present in Asia for decades but recently there has been a surge in their popularity. Departing from brands such as Hennessey or Johnny Walker, which represented the previous generation of drinkers, the younger mass affluent Asians are looking, perhaps, for something new to identify with. Enter single malts. Personally, I have been sipping the water of life or ‘Uisgebaugh’ (Gaelic for malt whisky) for about two decades now. And, like most, I simply enjoyed the taste but didn’t delve into the details of the craft until recently when I had the opportunity to taste some of Scotland’s finest: Macallan’s Lalique 62-year-old and Glenfiddich’s 12, 15 and 18-year-olds. It was in these tasting sessions that I developed a greater appreciation for the art – and science – behind the single malt Scotches, and here are some of the important basics to know.

Whisky or Whiskey?

Nope, it’s not a typographical error, nor is it an imitation from China. There are two ways to spell it. Ireland and the USA spell it as “whiskey”; while everywhere else it’s “whisky”. Essentially, they both refer to the same category of distilled spirits.

There are Only 3 Types of Whisky

The first type of whisky is “Grain” whisky, made from a mash of different grains such as barley, wheat and maize, and processed in a continuous industrial process for volume and cost efficiency. The second: “Malt” whisky made from only partially-germinated barley. Malt whisky is distilled in large batches and then stored in casks for long periods before bottling. Now, when they are from a single distillery, it’s labelled as “single” malt whisky. Lastly, “Blended” whisky, as its name suggests, is created by blending different malt whiskies and/or grain whiskies together. Quite often, each bottle of “Blended” contains two-thirds or more of grain whisky plus the rest in malt whisky from different distillers for added flavour. Remember, grain whisky is faster and cheaper to produce. Because it’s faster and cheaper to produce, the majority of the world’s whisky is blended.

Simplicity in Ingredients

There are only three ingredients allowed in malt whiskies: 1) Barley; 2) Yeast; and 3) Water. Don’t let anyone tell you otherwise. All the flavour notes like “honey”, “pear”, “chocolate”, or “walnut” are not because the distillers put those ingredients in. Again – only three ingredients are allowed.

Wooden Casks

An important variable which contributes significantly to its taste is the wooden cask, in which the whisky matures. Unbeknownst to many whisky drinkers, most malt whiskies are stored in used bourbon oak casks from the USA or sherry oak casks from France or Spain! There is hot demand for these used casks from sherry and bourbon makers and here’s why: The bourbon and sherry removes much of the harshness of virgin wood upon first use, and imparts additional character into the malt whisky over time. There are many other exotic combinations of pre-used casks (i.e. rum, cognac, port) used to impart different flavours. And often, during the maturation stage, the malt whisky is transferred from one type of cask to another. For instance, from bourbon cask to sherry cask, to increase its characteristics. Time to Mature

By British law, the whisky must mature for at least three years before it can be labelled as whisky. But many whiskies sold are older than that. For instance, the oldest I’ve tasted is Macallan’s Lalique 62-year-old, which was casked just after the Second World War.

The Age on the Label

To maintain consistency, casks of malt whisky of different ages may be mixed together. However, the labelled age must reflect the age of the youngest batch in the mix. So, if you are drinking 18-year-old Glenfiddich, there may be older batches of whisky mixed in but there cannot be any younger than 18 years old.

Shaping the character through the process

Most of the flavours and characteristics commonly used to describe finished products, such as “golden apple”, “honey”, or “vanilla”, are derived from the process of distilling, maturing, and finishing. For instance, burning peat to dry the barley before processing creates the smoky and “peaty” flavour in many famous brands. Glenfiddich’s 12-year-old, the world’s most popular single malt Scotch whisky, has fruity notes with a hint of pear from American and Spanish oak casks. Its 15-year-old Scotch whisky has honey, fruity notes from three types of casks: sherry, bourbon, and new oak. Then, it is mixed in their Solera Vat, which continuously combines previous batches with new 15-year-old casks.

Unusual yet intriguing tastes of Kushi Dining Bar

The strange yet interesting tasting Pitan Tofu

Nothing tastes better than chawanmushi on a cold afternoon but Kushi Dining Bar has a surprise for us! We came to the restaurant expecting the usual Japanese food and, instead, the chef showed us something better.

Old favourites with new tastes The first dish was the Pitan Tofu. It combines the century egg, a very acquired taste I might add, with tofu. This was definitely the most creative dish of the night. The dish tasted delightfully sweet and excessively flavourful because of the century egg. The tofu was soft and went well with the century egg. It was a very interesting combination and, in my opinion, one of the musthaves.

Savoury to the last bite The close contender to this is the Cheese

Tempura, also one of the must-haves. This one is supposedly a dish only available mostly in higher-end sushi establishments and deservedly so I loved every last bite of it. The crispiness of the tempura went well with the softness of the meat. There was soya sauce that I tried dipping into but it felt as if the saltiness would cover the taste of the anago [saltwater eel]. I recommend that you eat it without the dip!

Tastes as good as it looks The ton toro satay sticks were a pleasant surprise for me. I am a great fan of satay and this platter combined my love for that along with my obsession with bacon. It is a mix of ton toro and cheesewrapped bacon. If I had to choose between the two, I‘d probably choose the cheese-wrapped bacon and wait till you’re not looking then grab the other. They complemented each other and it was a convenient side dish to have during the course of the meal. The cheesewrapped bacon fit into a mouthful and being a cheese-lover, this is definitely a dish not to be missed! You have to try this Green Tea Noodles Tired of the same old bee hoon and pasta? We went looking for new noodles and found some interesting selections I love noodles – anything from bee hoon to fishball noodles to pasta. So imagine my delight when I stumbled upon Hakubaku’s Green Tea Noodles (Organic Cha Soba). Hakubaku has quite a selection of interesting noodles. It was recently voted No. 1 soba in the USA and has other accolades to boast of.

Noodles Infused with tea Needless to say, the first that caught my eye was the Organic Cha Soba Authentic Japanese Green Tea Noodles. I was wondering if the soup would taste like green tea too. With a cooking time of three minutes, I knew I would be finding out my answer soon! One of the bestselling products would be the Cha Soba Noodles. It is actually a great alternative to the usual noodles we have.

A suggested recipe would be to prepare lettuce cups to serve the Cha Soba Noodles with, framed with prawns and generously dressed with Japanese dressing. Just reading it made me hungry again.

A Taste of Japan at Home I think my favourite would have to be udon though. It reminds me of Japan and it can be cooked right from home, with my own set of ingredients. Most Japanese restaurants in Singapore fall short of their Japanese counterparts, now I can try my hand at it too! One of the more unusual noodles would be the Organic Somen. I have not seen it prior to this. Somen is the mee suah of the Japanese, even their suggested ingredients are very much like ours too. I’m going to whip up mine with eggs and light veggies! New menu from Michelinstar dim sum Tim Ho Wan opens its newest outlet in Lavender Aperia and we take a look at its new menu and old favourites You can never have too much dim sum. Tim Ho Wan, known for its Michelin-star dim sum in Hong Kong, opens a new outlet here in Lavender Aperia. Here are some hits and misses we experienced.

New Menu, New Tastes

The crispy seafood rice complements the soup perfectly, whether it is poured over or dipped into. I personally prefer the latter. Additionally, I love the soft and tender prawns and the crisp of the noodles.

The Usual Food Items

I am absolutely in love with the thick yet welltoasted crust, which provided a delicious touch to the flavourful BBQ pork in it.

I liked the Fried Potato Flour for its thick and warm paste, even though it was definitely too filling a dish as an appetiser. The crunchiness and the cheese paste provided a great mouthful. With that said, this is a dish I would probably add to my Tim Ho Wan must-haves.

Lovely Take on Well-Loved Hawker Favourite The next on the menu was the Crispy Seafood Rice Hor Fun. It was the restaurant’s take on a well-loved hawker favourite and I am sold.

The Pan Fried Dumplings were not a miss but were nothing outstanding. The skin was well done and the meat was suitably salted. There was an accompanying dip that I neglected. However, overall, this is a dish that is not badly done but just ordinary.

Star of the Menu

The Baked Bun with BBQ Pork is certainly not to be missed and if you still haven’t had it, I would urge you to make a reservation now and go. This dish was naturally the star of the menu. I am absolutely in love with the thick yet well-toasted crust, which provided a delicious touch to the flavourful BBQ pork in it. Trust me, your dim sum experience would be incomplete without this.

Egg Spinach and Cheese Bread Pudding

Eggs and cheese make a delicious combination and this easy to prepare dish stretches your dollar as it’s a complete nutritious one-dish meal for the family. Choose locally farmed vegetables, which are freshest, since the time between harvesting and displaying on supermarket shelves is much shorter.

Ingredients

1. Break 2 eggs into a bowl and whisk well. Pour milk into egg mixture, whisk well and add cheese, salt and pepper. Continue whisking and mix well. 2. Cut bread diagonally, into 4 triangles. Butter each slice of bread on 1 side. 3. Put all the bread into egg mixture and soak it for 10 min. 4. In the meantime, boil a small pot of water and put in the spinach. When it turns limp, drain it. Cut the spinach into fine shreds. Squeeze dry. 5. Heat oil in a frying pan or wok until hot, add in the onions and stir-fry till limp before adding the capsicums and do the same. 6. Lay the base of a small baking dish with bread and add some of the egg and cheese mixture. Add some spinach and fried onions and capsicums over the whole surface. 7. Top the dish with the remaining bread followed by the spinach, fried onions and capsicums. Pour the remaining egg mixture over the top. 8. Pre-heat the oven at 160ºC for 10 min. Place the Egg Spinach and Cheese Bread Pudding on the centre rung of the oven and bake for 30 min till the pudding is puffed up and brown on top. 9. Serve as a family meal or tea time snack with salad for 4 persons.

‘30s The 1930s was a difficult time for mankind as it was weighed down by The Great Depression, as well the social and political upheavals that led to World War II. Experimenting with metal in furniture design was a fledgling trend but it piqued Marcel Breuer’s interest, while Finnish designer Alvar Aalto dove into the tensile qualities of wood. Furniture designed in this decade eschewed detailing and ornamentation but focused on minimalist forms.

Easy Elegance

Artek Armchair 400 by Alvar Aato (1936) Aalto’s love for Finnish birch led him to design chairs made from this beautiful wood. Designed in 1936 for Artek, the Armchair 400’s ingenious engineered wood with cantilevered base was deployed with upholstered seat and backrest for added comfort. In this week of our popular segment, the owners had their new home done while they were in Hong Kong! Renovating a home is not the easiest of things to do. But when designer and homeowner are located in different countries during the renovation process, the task becomes downright gargantuan. Such was the case with this apartment. Its owners, who had been living in Hong Kong for eight years, were finally returning to Singapore and wanted a modern and elegant space to come home to. Addressing the brief head on, interior design firm Altered Interior not only delivered a refined apartment that is easy on the senses, but also managed to pull it off while the owners were still in Hong Kong during the entire design and construction process.

‘40s The World War took its toll on humanity as domestic production of everyday items came to a halt and material shortages were felt worldwide. Product designers were forced to be dynamic, adaptive and resourceful. At the forefront of furniture innovation were American husband-and-wife duo Charles and Ray Eames who championed the technique of moulding plywood in their designs.

Aligning Priorities Glass doors from the private lift lobby lead directly into an airy and open space, with the living area resting one side and the dining room and kitchen on the other. That the entire space feels streamlined is no accident. Designer Christina Choong shares that adjustments to the layout had to be made. Beside the dining area, the store room and common bathroom were aligned and cleverly concealed behind sliding panels that work in tandem with a simple but well-detailed mirror feature in the centre of the space.

A Fetching Pair The owners have a keen appreciation for design and wanted to fill their home with some of their favourite designer furniture pieces. This is most obviously seen in the dining area, which is a picture of contemporary elegance. The dining set and distinct lamps were all handpicked by the owners in Hong Kong with the help of Christina, and shipped over when they made their move. Complementing the dining area is the partially open kitchen. By moving the kitchen entrance to the side, Christina could create a convenient serving counter between the kitchen and dining area.

A Clear Study The renovation came with its fair share of hacking, not least when it came to creating a new study for the family. Walls were replaced with glass partitions for a bright and airy space that is conducive for work. A generous amount of storage was also included to organise the heaps of books and files that come with running a full household.

Care and Share The owners’ two children share the same bedroom, so it is important that it is conducive for both of them. Not only did

Practical interventions also took place, with additional cabinets in a row at the front of the room. The armchairs developed were imbued with a warmer, more organic aesthetic that toyed with earthy colours and natural materials such as wood. Fritz Hansen Egg Chair by Arne Jacobsen (1958) The Egg chair was conceived by Arne Jacobsen for the Radisson SAS hotel in Copenhagen, Denmark. The hotel was also designed by Jacobsen, right down to the minutiae such as door handles and cutlery. The core of the upholstery offers strong inner foam that provides astounding comfort. So you think you know how to shave?

Use a Clean, Sharp Razor and Proper Technique If you want the closest shave possible, go to a barber who uses a straight razor; the next best thing is a traditional double-edge razor. As a last resort, go for a cartridge razor. Be sure that the razor is sharp, as you’re not just removing hair but scraping some of the top skin layer too. For your first shave, do it along the direction of the hair growth. Begin with the sideburns, then the moustache area, leaving the chin area for last. Use slow, gentle strokes, and remember to rinse your blade under hot water frequently between strokes to remove the gunk. The next shave should be done across the grain. With a sharp blade, you do not need to apply too much pressure. As each person’s facial hair has its own growth direction, be observant as you shave and note the areas where you are prone to sensitivity and nicks. At this point, professional barbers would usually end off with another shave against the grain, but don’t try this at home unless you’re confident. Shaving is an art that takes time to master. Before you put the blade away to air-dry, rinse it thoroughly. For best results, ditch the blade once you sense it’s becoming dull.

Step 1:

Start With Thoroughly Wet Face Hair that is swollen with water becomes weak and therefore easier to cut. Ideally, shower before shaving to ensure that your facial hair is properly moistened. Alternatively, splash your face with water and then apply a warm, wet towel to your face for a minute to open the pores. Don’t be lazy and shave a cold, dry face – this is a common cause of razor burn.

apan is so beautiful and huge – it’s hard to decide on which parts to visit. Each region is known for a unique specialty dish, so every corner of the country is calling out to be explored. We take a look at selected parts of Japan and the best offerings to look out for, so you can plan your trip around them!

Regional specialities of Japan Osaka Specialty: Takoyaki

Hokkaido Specialty: Seafood

Osaka’s takoyaki is the real deal, and it’s way better than what you can get in Singapore. These creamy treats are filled with chewy octopus, and the outside is fried to crispy perfection. The tokoyaki balls are then topped with bonito flakes, mayonnaise, and sweet sauce. Osaka loves its takoyaki so much, it even has a takoyaki museum!

This northernmost prefecture of Japan is famous for its sweet and succulent offerings fresh from the sea. The Rishiri and Rebun areas are especially loved for sea urchin. Other highly-coveted seafood include crab, squid, salmon roe, and scallops. Hokkaido’s fish markets are also popular, with hot favourites like Sapporo’s Nijo Market and Hakodate’s Morning Market.

Although Tokyo has many specialities from all over Japan, its most popular dish is the pan-fried monjayaki, or “monja”. It’s a deliciously savoury mixture of ingredients such as white cabbage, eggs, cheese, bacon, octopus and squid, topped with mayonnaise, sweet sauce and bonito flakes. This quick-serve dish is similar to okonomiyaki, but with the runnier consistency of melted cheese.

Never underestimate a good plate of tofu, especially if it’s from Kyoto. These milkywhite cubes are soft and silky-smooth, and are prepared in a variety of ways. They can be sprinkled with toppings such as green onions, bonito flakes, or ginger, or soaked in a light soy sauce called shoyu. Kyoto’s tofu is often heralded as the best in Japan!

This famous confectionery was brought into Japan by the Portuguese in the mid16th Century, and it has remained the pride of Nagasaki ever since, becoming the region’s iconic souvenir. The original recipe is a simple yet delectably elegant mixture of eggs, flour, and sugar, with many different flavours also available. Notable varieties include green tea, brown sugar and honey.
