Hi, this is Fluffy! My owner Franky is sharing with his friends a few ways to contribute to animal welfare, to help take care of our furry friends. Let me share some pointers. Pets are wonderful companions. We can be great company for those who love us and are able to care for us. Are you considering having a furry friend join your family? If you are, consider pet adoption.

The Pros of Pet Adoption Yes, it is easy to buy a pet from the nearest pet shop. But why not go the extra mile and rescue one instead? Most animal welfare organisations offer a wide variety of pets for adoption. Most of these are strays, having been abandoned by their previous owners. The poor things! Why not adopt one of these darlings and give it the love it deserves? You can save a life while gaining a lifelong friendship. Also, some of these pets may already be ‘civilised’ – toilet trained and having had other basic behavioural training.

The Importance of Sterilisation Sterilisation may sound ominous and scary but it isn’t! It is important to sterilise your pet to prevent unwanted litters. Most pet owners usually do not know what to do when they face a pet’s unplanned new-born litter. They struggle to find homes for their pets’ babies and if they fail to do so, the baby animals tend to end up being abandoned. As a responsible pet owner, you can prevent this by getting your pets sterilised. When a pet is sterilised, it tends to be more affectionate. In a nutshell, sterilisation can help in preventing unwanted litters, modifying the pet’s behaviour for easier management and preventing womb infection or mammary cancer in female animals. That’s what Franky tells me. Most vets recommend sterilisation after your pet is past six months old. Tips from Fluffy, the rescued pooch, on caring for your furry friends and being a responsible pet owner

Reporting Animal Welfare concerns Franky told his friends, even if you’re not a pet owner, you can play a vital role in contributing to animal welfare. If you come across an animal that has been abandoned, is lost or is neglected by its owner, you can call the hotline at 1800-4761600 to report it immediately, including the type of animal. Franky reminded his friends that it’s most important to be kind to animals and to be a responsible pet owner. I feel extra proud to be his pet! I am glad to have an owner that’s so caring and responsible.

This is to be released on Valentine’s week for a reason. If your significant other is tugging your sleeves to go watch this film, don’t fight it, or you’ll be 50 shades of sorry. Would you really rather be spending Valentine’s Day watching Spongebob Squarepants in 3D?

I’ve readied my 2015 calendar years in advance for this one. Unlike the original movie series, Jurassic World actually depicts a functioning dinosaur theme park. It features rides alongside the long-necked Brontosauruses, and monstrous aquatic reptiles jumping through mega hula hoops, etc. It’s somewhere you actually don’t mind paying to go. But, of course, something goes wrong and a heroic stud (played by Chris Pratt of Guardians of the Galaxy, no less) jumps in to save the day. Star-Lord to Dino-Lord?

The Imitation Game Release: 22 jan If waiting is not your game, then good thing this movie is making its way to us very soon. The best thing to come out of England since Harry Potter, Benedict Cumberbatch (of “Sherlock”) now stars as visionary mathematician Alan Turing. Entrenched within the Second World War, Turing and his team must battle against time and enemy wits to decipher their military enigmas. Joining Cumberbatch is Keira Knightley (Pride and Prejudice, Pirates of the Caribbean), giving us more eye candy. Expect lots of seatclutching, if not for the dashing characters then for the heart-pumping suspense.

Marvel has been milking this series for all its worth, and we’re more than happy to lap it up. This sequel shows our favourite superheroes reassembling when a malevolent robot gains sentience, breaks free of its creator, and completely mows through civilisation. Following the big hoo-ha over how much to pay Ironman actor Robert Downey Jr to reappear, it’s no wonder this sequel is so hyped up. That and the ladies get to feast their eyes on Thor again.

Minions Release: 18 jun Ah, the ridiculously bubbly critters from the Despicable Me series are finally getting their own spotlight! If you’re wondering what silly mischievous acts these balls of fun can get up to, this movie is the one to catch. Maybe it’s the big let-down that was 2014’s Penguins of Madagascar but I’m hoping the minions won’t disappoint. If anything, it’s still sure to be a winner with the kids!

Inside Out Release: 20 AUG You may have seen this movie’s trailer already – the one prefaced (in cinemas) by a shameless Disney-Pixar movie montage of nostalgia. But, believe me, it doesn’t do Inside Out any justice. This cute movie depicts the five basic human emotions personified as animated little creatures in the mind. If you think it’ll be too childish, think again – it’ll show the funny thought processes of adults as well. Mark my words and mark these dates, because the year ahead looks to be an entertaining one!

Hossan-ah! The funny man is back! Local comedian Hossan Leong back and soaring into 2015 with a new show dedicated to his loyal followers

While many of us will be welcoming 2015 with parties and friends, funny man Hossan Leong has another kind of celebration in mind. The 45-year-old actor is starting the milestone year – Singapore’s 50th birthday – with HOSSAN-AH!, a medley of song, dance and stand-up routines that salute the Singaporeans who built Singapore. We caught up with Hossan amidst his busy preparations just before the show is launched, to find out more about what we can look forward to in HOSSAN-AH! as well as his plans to celebrate Singapore’s Golden Jubilee.

What do you think is the best quality that many Singaporeans have? You may not agree but I think we have a warmth that exudes... We just need to learn to smile more.

Apart from HOSSAN-AH! what else have you been busy with? 2015 kicks off with HOSSAN-AH! Then I’ll be performing at Resorts World Sentosa in a show called the Great World Cabaret, in February. On Mar 19 and 20, I’m performing my first French show called Voyage Voyage at the Alliance Française, then it’s Dim Sum Dollies, History of Singapore Part 1.

What’s the funniest thing that has happened to you in your life? So many funny moments in my life... I can’t pinpoint any really! I will tell some of these funny moments in the show though!

Who would you love to sing a duet with? Stefanie Sun. I first met her in 2000 when she first launched her first single. Such a nice, talented girl. I’ll even sing in Mandarin. What say you, Stef?

Could you tell us more about your new production in your own words? It’s a tribute to the pioneer generation. I know that phrase is being used to death but how often do we stop and thank them? Our superheroes, our family, our influences.

If you were a superhero, who would your sidekick be and what powers would he or she have?

You’ve portrayed a range of diverse characters. Is there a particular role you’ve yet to play that you’d love to? Bucket list role? The Engineer in Ms Saigon.

I’d love to be Wolverine, with that self-healing ability and claws! Mystique would be my side-kick. I think I’d like these two choices to be interchangeable.

If you were not a comedian, what would you be?

Umami flavour in sake? Sure!

Recently recognised as the 5th taste, umami is now the hottest taste for almost everything, including sake – Sake Master Shata-san explains how it’s been done for centuries About five years ago, Western scientists confirmed a new taste that Japan and other parts of Asia have recognised all along Umami. Japan, especially, has been perfecting it in foods ranging from soya sauce to sake, for centuries.

I had the pleasure to meet the Kazunari Shata, the 8th generation descendant of the brewery’s founder. Formerly a banker, he returned to his family’s business to helm its growth. As part of Shata’s expansion into Singapore, he introduced four selected expressions of their Tengumai sake – Junmai Umajun, Yamahai Jikomi Junmai, Junmai Daiginjo 50 and Yamahai Junmai Daiginjo. The first three are medal-winners in the Los Angeles International Wine Competition 2014. As with any artisan, Shata-san is fond of describing the intricacies of the craft. He described in depth the special rice they use, the polishing technique the rice receives, the koji (a special fungus used as an enzyme usually to ferment soybeans) that is used in brewing, and how the art has transformed through the ages. In the course of modernisation, the sake process moved from being aged in wooden casks to those of stainless steel. And, to ramp up productivity, lactic acid was added to speed up the fermentation process, which has resulted in a slight loss of taste and body.

From the Days of Yore In the year Sir Stamford Raffles founded Singapore (for those of you who’ve forgotten your history lessons, it is 1819), a little shop in Ishikawa prefecture in Japan started brewing its first batch of sake. This prefecture is well known for its history of outstanding craftsmanship, culture and sophistication, which rivalled the old capital, Kyoto. It should be no surprise then that some of the finest sake distilleries come from this region. Shata Brewery is one of them.

I started off with the assorted Kacyo Appetizer. For the pudding, I was surprised that the wasabi added only a slight tinge of sweetness. The octopus was soft and chewy. It felt like they went a bit overboard on the soya sauce. The fish was very well seasoned and incredibly salty. This appetiser was, in terms

Takumi Kacyo is the newest addition to the line of restaurants at Marina @ Keppel Bay. With a perfect sea view and air-flown sashimi, this place looks most impressive. I tried Takumi Kacyo’s range of offerings and discovered some new favourites.

Nonetheless, true to its art, Shata Brewery also produces sake with the traditional “Yamahai” method. By leaving the rice to ferment a little bit longer, and warmer, without the addition of lactic acid, the Yamahai process achieves a fuller and stronger umami taste from the rice. Upon side-by-side comparisons, the Tengumai Yamahai Jikomi Jumai and Tengumai Yamahai Junmai Daiginjo produced fuller flavour and richer aftertaste as compared to the other two variants. Though both sakes used the Yamahai process, the former had a stronger, drier taste

more suitable to be paired with savoury meat dishes; while the latter was more elegant and slightly sweeter, suitable to be paired with more delicate dishes such as sushi or sashimi. Since I ordered Matsu-ni, a traditional thick-gravy beef offal stew, it’s no surprise that I preferred the stronger, bolder and fuller taste of the Tengumai Yamahai Jiko Jumai to match. Overall, the Tengumai Sakes were very smooth, tasty and exceptionally refined. You’d expect that from artisans who’ve been perfecting their craft for hundreds of years. We have to thank people like KazunariSan for carrying on the tradition for all of us to enjoy.

I cannot stress enough on this – you have to try Takumi Kacyo’s grilled cod fish. This dish is wonderfully fresh and intensely seasoned. The skin of the fish was crispy and lightly salty, while the flesh was soft and delectable. The manager recommended a dash of lemon but I could not bring myself to even slightly alter the fish’s original taste – it truly is that fantastic on its own. Remember to scoop out the bits under the fin!

Tender is the Word Personally, I have tried many restaurants that offer beef as the main dish and I can assure you, none of them came as close to that of the standard of Takumi Kacyo. The beef was well cooked on the outside and suitably rare on the inside, giving each mouthful a tinge of both juiciness as well as marinated flavour. It was soft, tasty and savoury to the last bite. I am on the fence about whether it is this dish or the cod fish that will keep me coming back to this place but I know one thing – I am already hungry for more. Spicy Chicken Rendang INGREDIENTS • 1.5kg Chicken cut into 12 pieces • 500ml Milk from starch of 1½ grated coconut with 500ml (2 cups) water • 110g Toasted coconut paste (kerisik) • Salt to taste • Sugar to taste • 1 Turmeric leaf, sliced • 2 Red chillies, composed of flowers • 1 Handful Kaffir lime leaves, torn

• 8 Shallots, skin peeled • 3 cloves Garlic, skin peeled • 8 stalks Lemongrass, sliced • ¾ inch Ginger, skin peeled • ¾ inch Fresh turmeric, skin peeled • 6 Red chillies, deseeded • 5 Chilli padi, deseeded • 1½ tbsp Coriander powder • 1 tbsp Powdered aniseed • 1 tsp Cumin powder • 2 tbsp Chilli paste

1. Combine the spice paste ingredients in a blender and blend until smooth. 2. Combine chicken, spice paste and coconut paste into the pot and simmer for 30 min or until the broth is almost dry. 3. Lower heat and stir in coconut paste. Season with salt and sugar. 4. Add turmeric and stir well before turning off the fire. 5. Decorate with red chilli and kaffir lime leaves. Serve with white rice.

Think of Hong Kong cuisine but with a local Singaporean touch and you’ve got Sifu, an interesting new restaurant Sifu debuts in Singapore with inspiration from the Hong Kong dining scene, bringing a reinvented take on the East-meets-West classic quick meals. What do we mean? Striving to challenge the boundaries of casual dining, this caférestaurant offers a modern and relaxing sit-down ambience suitable for dinner dates and group gatherings alike, complete with the delicious aromas of freshly-baked pillow

buns from its in-house “bunnery”. In line with its philosophy of all things handmade, Sifu’s dishes are made by the chefs and bakers from scratch, from fish pockets to dumplings and so on. From Hong Kong beef stew and noodle dishes to all-day dim sum items, customers can expect a variety of comfort meals at affordable prices.

Hong Kong Meets Local So what makes Sifu stand out? Led by a Hong Kong chef, its team of cooks balances original Hong Kong tastes with

Served as a single rib with each order, customers can now enjoy ribs while leaving room for other dishes on the menu. Other highlights on the menu, honed from traditional recipes, include the Soup Noodles served in a hearty soup-base as well as the

flavourful Beef Stew. The star of the meal was undoubtedly the Handmade Char-Siew Pillow Bun ($1.20 per bun). At Sifu, the key to a pillowy soft bun lies in the technique of wrapping the filling. Individually handmade, each Sifu pillow bun is made using the same wrapping technique for a Xiao Long Bao to leave an air pocket above the filling on its base, and giving the bun its soft bite. Each Pillow Bun takes a whopping 98 minutes to be handmade and baked, from dough to bun! The handmade buns come in four fillings, from the traditional Hong Kong-style savoury Char Siew (Roasted Pork) and creamy Sweet Custard, to the creative Azuki (Japanese Red Bean) Custard and refreshing Yuzu Cheese. My personal favourite was the Char Siew bun, as the bun’s soft and smooth texture upon every bite really complemented the tender meat with sweet sauce.

“Bunnery” with Fresh Morsels Also in Sifu is a “bunnery” – to highlight the section where the soft pillow buns are baked fresh daily. The bunnery takes prides of place at the entrance of Sifu, enticing diners with wafts of freshly-baked buns. You can choose to order the buns for dining in with your meal or walk in for over-thecounter takeaway. Either way, you have to try Sifu’s expertly-crafted culinary creations. Are you in Sync yet? Riding the Korean wave is new, ultra-hip restaurant Sync – we check out the hits and misses Korean establishments have become almost a dime a dozen – from heartland malls to Orchard Road, they have conquered our streets. Sync raised my interest with its true-toroots Korean menu. It is not every day that a Korean restaurant includes street snacks in its offerings. I had to try it!

Savoury to the Last Bite The Gamja Tuikim was a pretty plate. The fries were a tad too salty but the accompanying cheese balanced it out. I would have preferred less cheese and more seasoning. The Topokki consist of Korean rice cakes with a generous sprinkling of bacon. I liked the crunch element. Bacon can never go wrong! The rice cakes were delectably soft and chewy.

Now for the Big Bites The pork belly rice wasn’t bad. The pork is succulent and tender, and suitably spiced enough for you to taste the mix of flavours in a single bite. s far as renovation projects go, the redesign of this apartment at Bayshore Park Condominium for a young couple was downright Herculean. You see, it wasn’t just about skin-deep alterations to how the apartment looked. It was about upending the very core of the apartment to create an open, fluid home. The original apartment was an awkward puzzle of oddly-angled spaces – not the most ideal shell for a home, as designer Matthew Lai of Studio XMSL says. He shares that the easiest way to deal with it was to “hack away all the walls and start over”, especially since the owners had a very specific, almost paradoxical brief for a home that is communal but also offers moments of reprieve when required.

CORRIDOR OF SPACES Once all the non-structural walls were removed, Matthew reconfigured the house into a series of spaces that loop themselves around a central core made up of the storeroom and walk-in wardrobe. Around this core, one space extends into the next, and that into the next, in a continuous “corridor of spaces”. This directly addresses the couple’s fondness for having large groups of guests over. “With big parties, people come in different groups and they usually gather in cliques,” Matthew explained. “In this home, there are various corners where different groups of people can gather, yet maintain visual contact with one another. So if you’re the owner, you can move around quite easily, interacting with various groups of people,” he said. “While the home has a very public kind of layout, it is also an intensely-private home. And in any kind of relationship, you need personal space. Same goes for husband and wife,” said Matthew.

Considering day to day living, the designer saw how both husband and wife can be at home at the same time without disturbing the other by taking an alternative route around the apartment. Underlining the flow of spaces, Matthew was very careful with how he detailed the spaces. In contrast to the abrupt angles of the original layout, he rounded off any corners facing the corridor to emphasise the fluidity of space, as do gentle curvatures in the false ceiling.

COLOURS TO DEMARCATE & EVOKE Given the continuous thread of spaces, it was important to clearly demarcate one space from the next. For this, spaces like the dining area and study area are appointed in sophisticated black as a contrast to lighter adjacent spaces. Colour surprises turn up in the bathroom where soft pink and turquoise envelope the powder room and master bathroom respectively while timber accents find their way throughout the apartment, ensuring that the home always feels warm and cosy.
