The clash between 1st & 2nd Chelsea is breaking away and building a lead at the top, leaving the defending champions in its trail – will Manchester City be able to catch up this weekend? We are now well into the second half of this Premier League season. With Chelsea five points clear at the top and not looking like it’s going to lose that lead any time soon, this weekend’s clash between 1st and 2nd place may just be the title decider. Here are this week’s must-watch Premier League games.

Chelsea vs Manchester City (1 Feb, 1.30am) For what many are calling the potential title decider for this season, the clash of Chelsea and Manchester City will no doubt be hard fought until the very last minute. The odds do not look to be in Manchester City’s favour, who will be coming from a 0-2 defeat to the Gunners at the Etihad stadium last Monday. In contrast, Chelsea are fresh off a 5-0 thrashing of Swansea City where Oscar and Diego Costa were shining as bright as ever. Prediction: Chelsea 2-1 Manchester City

Manchester United vs Leicester City (31 Jan, 11pm) Who could forget the humiliating defeat Manchester United faced earlier in the season against bottom of the table Leicester City? When the teams last met in September last year, the Red Devils were taken by surprise when a surprisingly hungry Leicester side saw through an incredible comeback to win 5-3. Manchester United, who currently stand at 4th place, will be hoping not to be beaten twice by currently 20th-placed Leicester City. Prediction: Manchester Utd 2-0 Leicester

Arsenal vs Aston Villa (1 Feb, 9.30pm) Arsenal fans will be bursting with excitement in light of their team’s next opponents. Coming fresh from a 3-0 win against Stoke City followed by a 2-0 win against Manchester City at the Etihad, the Gunners look primed to secure another three points against a vulnerable Aston Villa. What will excite Gooners more is the fact that the reverse fixture ended in a 3-0 victory for Arsenal when the teams met earlier in the season. Prediction: Arsenal 4-1 Aston Villa

Southampton vs Swansea City (2 Feb, 12am) It seemed like a waiting game for the rest of the football world, as to how long Southampton could cling on to its position in the Champion’s League qualification zone. To the surprise of many, The Saints have not only survived, but have begun to impress many with their brand of football. Southampton holds firm at 3rd place and goes up against Swansea City, who’s evidently already missing former star striker Wilfried Bony, who just completed a transfer to Manchester City. Prediction: Southampton 2-1 Swansea

Tip 1: Find a dinner place with candlelight or dim lighting No, not because both parties would look better with dim lighting. It’s because candlelight or dim lighting has a calming, relaxing effect. Liam Neeson is arguably the defining geri-action star of our time. Real-life heroes of The Imitation Game Benedict Cumberbatch brings one of Britain’s most understated heroes to international spotlight

Do you know who Alan Turing is? To be fair, a large population of the world doesn’t. Yet, many of us use the product of his work every day. His machine was never perfected – he had committed suicide before then – but he generated future research that produced “Turing Machines”. Today, we call them “computers”.

Turing was an English crypto-analyst, mathematician, and computer scientist from the early-20th Century. He is widely credited as the founder of theoretical computer science and artificial intelligence. Starring as Turing in The Imitation Game is Britain’s finest: Benedict Cumberbatch from Star Trek: Into the Darkness and TV’s “Sherlock”. Unlike his famous clean-cut and monotonous mannerisms in “Sherlock”, Cumberbatch now portrays an eccentric and compulsive genius on the brink of political and technological revolution. Speaking about the visionary Turing, Cumberbatch said, “He was seen as an odd fish, ‘an odd duck’ as his mum called it. He was so capable, so fast-thinking… He was a remarkable human being.” Joining Cumberbatch is co-star Keira Knightley (Atonement, Pride and Prejudice, Pirates of the Caribbean) as the ingenious mathematician Joan Clarke, who defies the odds in an age of gender discrimination. CATS the Musical for the clueless CATS was an astounding medley of song and dance, and it won over this reviewer

Call me uncultured, but I usually don’t enjoy musicals. I prefer my stories told, not sung in flashy routines with flailing bodies. But CATS was a different story. Having received critical and mass acclaim internationally – as of last year, it is the third-longest running Broadway show – CATS was every bit as entertaining and moving as promised. Nonetheless, my mind refused to cooperate with the stellar show. I was constantly about three song numbers behind, and had to pester my friend Wikipedia for clarification. If you’re clueless or unfamilliar with musicals here’s what CATS is about, more or less.

A Funny Story, to say the least A tribe of cats – some mangy, some fabulous – dance and sing about jelly. (With the help of the Internet, I discovered their ‘clan’ name is “the Jellicle cats”.) Most of the show introduces us to the many different amusing characters, such as a flamboyant playboy tomcat called Rum Tum Tugger. Tugger hops off stage to tease audience members. I remembered how the actor, Earl Gregory, told me that he spots people to approach by our body language. I put on my grumpiest face

so he wouldn’t come and ruffle my hair. Finally, ‘cat-Jesus’ [yes, that’s right] arrives on stage. It’s none other than Old Deuteronomy, the most venerable cat of the lot, who picks one cat to be reborn. Go figure. This probably uses up one of their nine lives.

The Famous Song Possibly the highlight of CATS is the hit song “Memory”, sung by an old hag of a cat called Grizabella. Parts of the song appear at different moments, and it’s much more haunting than what you might hear on the radio. Grizabella is a dishevelled exile, and the other cats shun her while she stands in melancholic lighting crooning about her memories. But her performance is so riveting that the Jellicle cats are compelled to accept her again. They erupt in an outpour of acceptance, just like how the audience erupted into an outpour of tears.

Many Literary References Since CATS adapts the work of literary legend TS Eliot, it’s given that there are many classical allusions in the musical. For instance, one act features pirates sporting a trident that resembles Satan’s pitchfork. Some of them are more obvious, like the Christ-like figure of Old Deuteronomy. The musical is so detailed in both set and story that it would take serious focus to completely appreciate the spectacle. By the end of the show, though, I still didn’t know what a Jellicle cat really is. Perhaps I’ll have to watch it again. Andrew Lloyd Webber, you are quite the marketing genius. Buddha Jumps over the Wall

It’s an incredibly fancy name, isn't it? Buddha Jumps over the Wall is actually a variety of shark's fin soup. This Fujian dish was created during the Qing Dynasty and has since been regarded as a Chinese delicacy. Famed for its rich taste and generous spread of high-quality ingredients, Buddha Jumps Over the Wall's ingredient list includes quail eggs, bamboo shoots, scallops, sea cucumber, abalone, shark’s fin, chicken, ginseng, mushrooms, and taro.

Fujian or Hokkien cuisine is a native Chinese cuisine derived from the cooking style of Fujian province, China – did you know these dishes are Hokkien? Known for a light and flavourful cooking style, Fujian cuisine has developed a reputation for emphasising an ‘umami’ or highly-savoury taste in its dishes. The key cooking techniques that the Fujians shared were braising, stewing, steaming and boiling. Fujian or Hokkien cuisine places great emphasis on the making of broths and soups. The Hokkien people believe that it is unacceptable for a meal not to have soup and reaffirm that belief by either having a soup base in their trademark dishes or by insisting on having a soup dish as an accompaniment to the main course. I bet many of you didn’t know that!

Oyster Omelette Oyster omelette or orh luak is a simple dish. The recipe calls for potato starch to be mixed into egg batter, which gives the egg wrap a thick consistency. Pork lard is used to fry it. Then, oysters are added into the omelette. It is sometimes topped off with savoury sauces, usually sparingly. Different countries may have a slightly different take on this dish. For example, Singapore hawkers would add chilli to spice up the dish while Thai hawkers prefer to douse it generously in fish sauce for additional fragrance. Either way, it’s yummy!

Popiah Popiah is popular with many people but I bet you didn’t know it came from the Hokkiens! The quality of the popiah is determined by the dedication that the hawker chef puts into producing the wrapping, otherwise known as the popiah skin, as well as the filling. The filling usually consists of a selection of ingredients – mainly fried grated turnip, bean sprouts, carrot, lettuce and a few other ingredients that the hawker chef chooses (egg, prawn, etc) as his own touch.

Did you know that Bak Kut Teh originated from Malaysia and Singapore? Yes, this delightful bowl of goodness first came to recognition on our neighbours’ and our shores! This Hokkien dish from our region consists of meaty pork ribs simmered in a broth of herbs and spices. Common spices used include star anise, cinnamon, cloves and dang gui. Over the years, new ingredients such as dried tofu and diced mushrooms have found their way into the dish. Bak Kut Teh is usually consumed with rice. There is also a dry variety with the soup served separately.

The Ngo Hiang (literally “five fragrances) is a combination of various meats, vegetables, minced pork and prawn, which are seasoned with “five-spice powder.” These ingredients are rolled inside a bean curd skin and deep-fried. Inclusions to the dish are Chinese sausage, fish cake, deep fried spring roll, cucumber, century egg with sweetened ginger and more. It is served with chilli sauce or a starchy sweet sauce. Starting Highlights at the Haven The Creamy Corn Soup Trio, using Japanese corn that’s roasted, boiled and popped, was a refreshing and delightful start to the meal. It was amusing to see (and taste) popcorn in the soup! The DIY Steak Tartare, using Black Angus beef, also brings a smile with the petit quail’s egg (with its tip cracked open) sitting atop. For appetizers, Shelter in the Woods has a range of charcuteries and pâtés but one that stood out was the Charcuterie Duck a l'Orange. The sweet and zesty flavours of the fruit complement the duck well, and it is excellent to revitalise your palate or to perk you up after a long day.

Michelin influence in cosy haven The recently-revamped Shelter in the Woods looks brighter, yet the familiar comfort of a cosy log cabin still beckons one to enter, and to be greeted by wafting aromas Going back to Shelter in the Woods after some time feels like returning to a cosy haven. It is good to see that the good service of the staff and homeliness of the overall ambience still prevail. Most importantly, the question was how the food would be like with a brand new chef at the helm. The Mains & the Verdict The best things at the new Shelter are from the ‘old’ rotisserie, such as the Rotisserie Rack of Lamb comprising an herb-encrusted fourrib New Zealand lamb rack and the Rotisserie Suckling Pig with rotisserie pineapple. The rotisserie truly elevates and enriches the deep, tasty flavours of both the crisp suckling pig as well as the juicy, fresh pineapple. The Rotisserie Pineapple Crumble is also not to be missed, for dessert. There still remains a daily choice of Shelter’s Tarts and Pies, served with ice cream. The pretty-looking tarts include the Apple Tart, Fig Tart, Lemon Meringue Tart and Raspberry Clafoutis. On the whole, it is an interesting dining experience. One thing that’s sorely missed, however, from the old Shelter in the Woods, is its range of delectable macerated rums. That was quite unique and set the establishment apart. Somehow, some way, they should consider bringing them back.

Michelin-Starred Experience What’s interesting is that Shelter in the Woods’ new chef, Masashi Horiuchi, cut his teeth at Michelin-starred restaurants in Switzerland, France and the UK, for more than 20 years. hile storage is usually stowed away in most homes – out of sight, out of mind, they say – designer William Chan of Spacedge Designs bucks the trend and places storage front and centre in the design of this apartment at The Centris. Decluttering the original layout (the apartment came with a full spectrum of programmes – living and dining areas, wet and dry kitchens, three bedrooms, two bathrooms, a maid’s room, and a balcony – that the 1,152-sq ft floor area could not afford) William set a storage unit, referred to as the Centrepiece, where the dry kitchen previously stood.

Your first pit stop should be Busselton, 200km from Perth. Located in Geographe Bay, the claim to fame for this small town is its heritage-listed jetty. Extending 1.8km into the bay, it is the longest timbre-piled jetty in the southern hemisphere. At the end of the jetty is an underwater observatory, where you can descend 8m and watch the sea life through glass ports. If you want to avoid the long walk, opt for the Jetty Train, a quirky small scaled train that “choochoos” passengers down the jetty, to and from the observatory. The best thing about Busseltown is eating at The Goose Café with its great views of the bay, beach, and jetty. All you have to do is to book a car online before you leave Singapore. Then, drop by the car rental counter in the airport, pick up your car keys and it’s just a 3-minute walk to your car.

Gourmet Escape and Vineyards

We timed this trip to catch the 2014 Margaret River Gourmet Escape Gourmet Festival along the coast of Western Australia, with dozens of gourmet events attended by celebrity chefs, journalists, critics and gourmands. We only had time for three, where we were able to hobnob with celebrity chefs, drink fine wines and try fascinating food. The Audi Gourmet Beach BBQ was held in a giant teepee on Castle Beach overlooking the Indian Ocean. It was hosted by Anna Gare of Junior MasterChef Australia with local celebrity chef Dan Hong. The Gourmet Village at Leeuwin Estate Winery has a two-day event featuring wine, food, cooking classes, and master chefs. Tickets are for admission only. Once inside, you’ll need to purchase vouchers (called GEMs). “East Meets West Dinner” at Voyager Estate. This formal dining event featured dishes prepared by Singaporean celebrity chef Sam Leong and Nigel Harvey, the house chef at Voyager Estates. Tip: Keep your eye out for the upcoming Nov 2015 Gourmet Festival. Book your tickets online, but more importantly, book your hotel early to ensure a stay in the vicinity. (www. gourmetescapes.com.au) If you can’t time your trip to coincide with these extravaganzas, it’s still worth visiting the vineyards. The two must-visits are Voyager (www.voyagerestate.com.au) and Leeuwin (www. leeuwinestate.com.au) Estates, conveniently next to each other.

Bounty of Nature in the South

150km southeast towards Pemberton is Australia’s Southern Forest Region. Rich in quality agriculture, livestock, and flora, this remote part of the region is definitely the road less travelled for most tourists. Driving into Denmark, Western Australia, we visited the Valley of the Giants. It is the last 6,000sq ha in the world where generations of Yellow and Red Tingle trees have thrived for 65 million years. The Red Tingle, the larger of the two, can live for 400 years and grow up to 75m tall and 20m wide at the base! It’s wide enough for cars to drive through. Gourmet Meals at Pemberton

Even though the area is remote, you can still find fine wines and gourmet meals at Silkwood Winery. 20 minutes from the town of Pemberton, Silkwood offers gourmet meals worthy of any 5-star city restaurant. Unlike city restaurants, its dining area overlooks its own lake, and wines from its winery are served. (silkwoodwines.com.au) Another great dining option is Foragers. Six minutes by car from Pemberton, Foragers is a beautifully-designed, farm-based cooking school and restaurant which serves scrumptious seasonal (AUD$75) and wood-fired dinners (AUD$55) after its classes. While we were there, we had the honour of having Sophie Zalokar, the founder of Foragers, explain the finer points of Australian culinary heritage before preparing our dinner in front of us! Catch Star-Studded Nightly Shows

You may not find Hugh Jackman and Nicole Kidman but, in these remote parts, free from light pollution, you can see brilliant stars in the night sky! Stand in any safe, dark area, give your eyes about 10 minutes to adjust, and then see the nightly cosmic wonder. For free! One particularly important constellation to the southern hemisphere is the Southern Cross. Its kite-shaped formation of five stars has great navigational importance.

Explore Perth’s Hidden Side

Prior to departure, shoot over to Watertown Brand Outlet Centre. It may not have many of the first-tier brands Singaporeans covet but you might be able to get a few things you can’t get in Singapore. (www.watertownbrandoutlet.com.au) The real magic in Perth is in its alley bars and food culture. There are cool bars and restaurants set all around the city. There are many but a few names repeatedly come up: Wolfe Lane, Helvetica Bar and Cheeky Sparrow. For restaurants, check out Andaluz, The Aviary or La Cholita. (www.experienceperth.com) While we were there, we had dinner at Lot Twenty. Converted from a horse stable, Lot Twenty blends sophistication with rustic farm sensibilities to arrive at its unique character. Most of its ingredients (meat, butter, etc.) as well as its wines are sourced locally within the region. (www.lot20.co) What a superb way to polish off a memorable road trip through Western Australia!

While many people would be most familiar with Mt Hua through wuxia fiction or TV series based upon it, in reality Mt Hua is one of China’s Five Great mountains. It not only has a long history of religious significance (for Taoism) but is also home to one of the most risky hiking routes in the world.

Plank-walk in the sky Experience the mad thrill of walking a few hundred feet high, with your head in the clouds and your feet on flimsy-looking planks held together by nails and chains. Can you really entrust my life to those precarious planks that appear haphazardly nailed together? We wonder too. It seems that many who have tried the plank-walk can vouch for its safety. It is at your own risk, though. Do also note, the scenic and scary wooden path leads to nowhere – you’ll have to make a turn and walk back the same path from which you came. As if walking one way is not bad enough, you now have to share already limited space with opposing traffic! Gulp. Nonetheless, through the walk, one is able to fully appreciate and to be awestruck by Mt Hua’s largely-untouched natural beauty, from a bird’s eye view. There are also several (really, really) steep stone stairways to climb to access certain parts of the mountain. The breathtaking view would certainly be worth the arduous, nerve-wrecking, why-didI-even-do-this climb. I think.

Getting there *Don’t turn a wonderful road trip into a tragic one. Please be sure to nominate a non-drinking designated driver for every drinking occasion.

It takes 45 minutes to get from Xi’an to Mt Hua via high-speed rail, followed by a bus ride from outside the station. On Mt Hua, there are several means of transport to get around the different peaks, including a cable-car, but to limited areas.
