“She’s not here now.”

“Oh. And how are you, Shaindy?” Until a year and a half earlier, Shaindy had been a student at the preschool, a child who’d loved Naomi’s stories when she’d been the assistant. “Is this a new job?” In the past, Babbe had asked Shaindy’s family to submit her candidacy as preschool teacher so as not to leave Naomi alone to face Mila and someone else from the other group. Shaindy had not been accepted for the position, but she hadn’t seemed too upset about it.

“Yes, as a trial.” Shaindy looked pleased. “Dr. Annie said she wants to train more medical staff, so I left my other work. This job is more stable, and if it works out for me, then I’ll ask to stay here when I turn sixteen.”

“That makes sense,” Naomi said, but she wasn’t surprised when she felt a twinge of something in her heart. Babbe, if they were looking for a worker here, you couldn’t offer the job to me? Especially since a position in the medical field would certainly give her better wages and conditions; its salary was probably triple her own. And yes, this was on her mind, despite the many other issues that were weighing on her for the past few days.

“An infirmary is not a place for children,” Babbe said firmly.

“I wasn’t planning to go inside,” Naomi said. “I just wanted to speak…” To speak to you. But I can’t, because Aryeh and Binyamin said that at this point we should keep everything quiet.

“With your friend Elky? To give her some encouragement?”

Naomi didn’t answer. Dror, who was growing bored, sat down to play with the leaves on a nearby bush.

“That could have been very good for her, but not here. We sent her home to rest a little. She was here all night… We’re waiting for the results of the blood tests.”

“What does he have?”

“We’re not exactly sure. His skin started to get a bit yellow, and so did the whites of his eyes. It looks like jaundice, a condition when the bilirubin in the body doesn’t break down properly, and Dr. Annie is suspecting that it’s some kind of liver disease.”

“Hmm,” Naomi said. She didn’t say anything about Shaindy. “You know, I read a while ago about some kind of medication for the liver…what was it…”

“Medication for the liver?” “I don’t know if it’s actual medication, but it’s something that helps the liver function better. It was a plant or something… Oh, I know! It must have been in that album of dried flowers that my student Zuska made!”

“Interesting,” Babbe said. “But whatever the case, nothing is growing in this frozen ground now.” She glanced for a moment at Shaindy, who was closing the curtain at the other end of the infirmary.

Naomi caught the glance and bit her lip. She was angry at herself, because among everything that had recently cropped up, she was still irritated now that this youngster was puttering around here like an old, experienced hand, and she might even become a doctor in a few years.

“Could you come already, Naomi?!” Dror tugged at her hand. “I want to see your house, and you just keep talking and talking for so long already!”

“We’re going, sweetie,” Naomi said, but she hesitated for a moment. “I see that Shaindy is working here,” she said finally, her tone low.

SAVORY PASTRAMI DONUT HOLES

Frying puff pastry dough yields a deliciously flaky and crispy texture. In these donut holes, we combined the rich and savory flavors of our pastrami mushroom filling with all that puff pastry goodness for the ultimate Chanukah treat.

Ingredients:

2-3 tablespoons oil, for sauteing

1 white onion, diced

1 clove crushed garlic

1 pack pastrami, diced

1 4 oz can mushrooms, diced

1-2 tablespoons dark brown sugar or honey

1 teaspoon salt

¼ teaspoon black pepper

1 tablespoon dijon mustard

1 teaspoon onion soup mix

2- Mechel's 10x15 inch sheets puff pastry, defrosted

3-4 tablespoons oil, for frying

Directions:

1. Pastrami Filling: In a large frying pan, heat the oil and sauté the onions on medium high heat for 15-20 minutes, or until golden. Stir continuously so they don’t burn. Add the garlic, diced pastrami and mushrooms. Season with brown sugar, salt, pepper, mustard, and onion soup mix and stir until fully combined. Saute for another 5 minutes. Remove from heat and let cool.

2. Prepare the donuts: Slightly spread the puff pastry sheets on your counter (be careful it shouldn't get too thin). Using a glass or round cookie cutter, form round circles and place them on a parchment paper. Spoon 1 heaping teaspoon of the pastrami mixture into the center of each circle. Top with an additional puff pastry round and tightly pinch the edges to fully seal.

3. Heat the oil in a large frying pan over medium high heat. Add the filled puff pastry donuts and fry on each side for about 1-2 minutes until golden brown (don’t overcrowd the pan).

4. Using a slotted spoon, drain the donuts on a wire rack or paper towel. Sprinkle with flaky salt if desired. Garnish with pea shoots or microgreens and serve warm with a drizzle of maple syrup on top.

Yield: 28-30 Donuts

Recipe TIP: If you don’t need so many donuts, the extra pastrami filling can be used in plenty of other dishes! Think: pastrami focaccia (Tuscanini’s frozen focaccia, a smear of garlic mayo, and the pastrami filling on top!) or croutons in a soup, and even as a grilled/breaded chicken topping.

CHICKEN POT PIE SOUP

Nothing spells comfort like a bowl of rich, nourishing soup. Even more, when it’s inspired by a chicken pot pie. With its deluxe creamy flavor balanced by the crunch of the toasted dough on top, this soup will give you all the winter vibes you’re looking for.

Best part? Make a big pot of soup for Shabbos and use the leftovers here.

Ingredients:

2-3 tablespoons oil

1 white onion, chopped

2 medium carrots, peeled and thinly sliced into rings or halves

1-2 celery sticks, finely chopped

8 oz white or brown mushrooms, sliced

1-2 Yukon gold potatoes, peeled and cut into small cubes

3 garlic cloves, minced

⅓ cup all-purpose-flour

6-7 cups chicken soup

2 tablespoons white wine, optional

1/2 tsp black pepper

3 cups cooked chicken, shredded

1 cup green peas (frozen or canned)

1 cup corn (frozen or canned)

½ cup parve whip topping, defrosted

Mechel's Mini Puff Pastry Squares, defrosted (or larger, depending on your ramekin size)

1 egg, beaten for egg wash

Directions:

1. In a large soup pot, heat the oil over medium high heat. Add the chopped onion, celery, and carrots and saute for about 7-10 minutes, stirring occasionally, until softened and lightly golden.

2. Add the sliced mushrooms, potatoes, and garlic and sauté for another 5 minutes, stirring occasionally until softened.

3. Add the flour and stir constantly for 1 minute until golden.

4. Add the chicken soup, white wine, and black pepper. Bring to a boil then lower heat to a simmer. Partially cover the lid and cook for 12-15 minutes or until the potatoes are tender.

5. Add the shredded chicken, peas, corn, and whip topping. Bring back to a boil. Lower heat and simmer for another 5-10 minutes. Remove from heat. Blend some of the soup with an immersion blender if you prefer a creamier consistency.

6. Preheat your oven to 375°.

7. Pour the soup into individual oven-proof dishes/ramekins. Very carefully, stretch each puff pastry with your hands and cover the filled ramekins. The square should overlap the dish by 1-2 inches. (It will shrink while baking.) Press the edges to seal. Cut 4 small slits in the center to let the steam escape.

8. Brush the puff pastry with egg wash. Bake until puffed and golden, for about 15-20 minutes.

‘OLD-DELI

STYLE’ LOADED SMASHED POTATOES

Instead of latkes, try these awesome loaded smashed potatoes. They’re soft on the inside, crisp on the outside and topped with a delicious medley of flavors and textures.

Potatoes:

2 lbs baby potatoes, scrubbed 4-5 tablespoons oil, for brushing salt and pepper to taste

Toppings:

1 ½ tablespoons oil

1 pack corned beef, cut into small thin strips

1-2 packages beef jerky, cut into bits Sauerkraut

Crispy fried onions

Mustard Dill Drizzle:

1 cup oil

1 egg, room temperature

2 cloves garlic

1 tablespoon deli or whole grain mustard

1 tablespoon fresh lemon juice

1 teaspoon salt

½ teaspoon white or black pepper

4 tablespoons water

1-2 tablespoons freshly chopped dill or 1 teaspoon dried dill

Shortcut Tip: Short on time? Swap the smashed potatoes with (store bought) baked/fried french fries;)

Directions:

1. Potatoes: Preheat your oven to 425° and line 2 baking sheets with parchment paper.

2. In a large pot, filled with water, boil your potatoes on medium-high heat for 15-20 minutes or until fork tender (boiling time depends on the size of your potatoes).

3. Dry and transfer to your prepared baking sheets. Use the back of a glass to smash them down flat. Generously brush them with oil and season with salt and pepper to taste.

4. Roast for 45-50 minutes until golden brown and crispy.

5. Toppings: Meanwhile, heat oil in a saute pan. Add the corned beef strips and saute for 2 minutes until crisp around the edges (Cover the pan as the oil can get messy). Add beef jerky bits and toast for 1 more minute. Remove from pan and set aside.

6. Mustard Dill Drizzle: Place all the ingredients in a jar or container. Using an immersion blender, pulse the mixture until it starts to stiffen and emulsify. Add the water and chopped dill. Stir with a fork until combined. Add some additional water if you prefer a more runny consistency.

7. Assembly: Arrange the smashed potato on a serving platter. Drizzle with the mustard dill sauce, then add some sauerkraut, crispy fried onions, and the fried corned beef topping. Serve immediately.

Call this the ‘elevated sesame chicken’, it’s crunchy, sweet and savory, and the perfect family-friendly dish to serve on any Chanukah night. You can easily omit the crushed chili if you’re serving this for kids, or don’t prefer the spice factor.

Ingredients:

1 lb. chicken cutlets, cut into strips or nuggets

1 cup plus 1 tablespoon flour

1/2 teaspoon baking powder

1–2 teaspoons salt

½ teaspoon garlic powder

¼ teaspoon white pepper

1 teaspoon paprika

½ cup water

2 teaspoons oil, plus more for frying

2 eggs

Hot Honey Wine Sauce:

1 cup honey

3 tablespoons corn syrup

2 tablespoons soy sauce

½-1 tablespoon Tuscanini crushed Calibrian chili (decrease/ increase depending on amount of heat you prefer)

2 tablespoons white or red cooking wine

Black pepper, to taste

Directions:

1. Battered Chicken: In a large bowl, whisk together all the ingredients (besides the chicken). Once smooth, add the chicken pieces to the batter and toss until fully coated.

2. Heat oil in a frying pan over medium high heat. Fry the chicken in batches, making sure not to crowd the pan. Drain on a wire rack or paper towel.

3. Honey Wine Sauce: In a medium saucepan, combine all the ingredients for the honey wine sauce. Bring to a simmer and let cook on low for about 3 minutes. It will bubble up. Stir continuously. Remove from heat and let cool (once cooled, it should be the texture of maple syrup).

4. Toss the battered chicken with the sauce or serve it on the side as a dipping sauce. Garnish with fresh herbs, scallions, and/or sesame seeds.

PRALINE HOT CHOCOLATE

Ingredients

4 cups vanilla almond milk

2 cups whip topping, fully defrosted

2-4 tablespoons cocoa

2 bars parve Alprose praline chocolate, chopped

Pinch of cinnamon, optional

Pinch of salt

Perfectly decadent and festive, this hot chocolate is a warm celebration in every mug!

Directions:

1. In a saucepan over medium heat, bring the almond milk and whip topping to a simmer.

2. Sift in the cocoa, while whisking constantly.

3. Add the chopped chocolate and salt. Stir until well incorporated. Whisk and simmer on low heat for another 2 minutes. Remove from heat. It should be a smooth, rich consistency.

4. Pour the hot chocolate into mugs and top with whipped cream, marshmallows, and/ or mini chocolate donuts.

DELICIOUS MUSHROOM AND

TOASTED SESAME DIPS

Dips are the perfect way to add a burst of flavor to your snacks, appetizers, or even shabbos meals, and the best part is, many delicious dips can be made without the need for a blender. Whether you're in the mood for something creamy, tangy, savory, or spicy, there are countless ways to whip up a dip using just a few simple ingredients and a little bit of elbow grease.

MUSHROOM DIP

INGREDIENTS:

3 shallots, diced

1 box portabella mushrooms, sliced

1 box white mushrooms, sliced

3 tbsp oil

1 tsp kosher salt

1/2 tsp Milstein's black pepper

4 tbsp Balabusta mayonnaise

DIRECTIONS:

1. Heat the oil in a frying pan over medium heat.

2. Add the diced shallots and sliced mushrooms, but do not stir immediately. Allow them to sit for a few minutes until the shallots begin to brown.

3. Once browned, stir the mixture until the mushrooms are nicely sautéed.

4. Season with salt and pepper.

5. Remove from heat and allow the mixture to cool.

6. Once cooled, stir in the mayonnaise.

7. For convenience, you can freeze the mushroom mixture separately and then mix it with mayonnaise before serving.

TOASTED SESAME DIP

INGREDIENTS:

1/4 cup toasted black sesame seeds

1/4 cup toasted white sesame seeds

1 cup Balabusta mayonnaise

2 tsp Milstein's garlic powder

1 tsp Milstein's black pepper

Pinch of kosher salt

2 tbsp toasted sesame oil

2 tsp lemon juice

1 tbsp honey

DIRECTIONS:

1. In a container, mix ingredients together until well combined.

2. For an added twist, this dip can also be used as a schmear for chicken or cutlets.

“We had a sub today!”

“Can I have more meatballs?”

“Ma, we have a major test tomorrow, I want to study with Mindy and Faigy tonight.”

Suppertime conversation swirled around me. It was a regular night in the Feldman household.

Suddenly, I noticed Chani slipping out of her chair, her eyes half-closed. I ran over and steadied her.

“Chani, are you okay?”

“I d-dizzy,” she mumbled incoherently, then slumped over onto me. I grabbed my phone and called Hatzalah, then tried shpritzing water on Chani’s face and giving her a small pinch. After waiting what felt like an eternity, but in reality could not have been more than a minute, two Hatzalah men burst through the door. I motioned to Chani, who had just popped her eyes back open, and explained that she hadn’t been feeling well the past few

days, but had suddenly fainted just now. I also informed them that she had Crohn’s disease.

After checking her out, the Hatzalah men told me that Chani was suffering from severe dehydration, and we were whisked off to the emergency room.

“I presume you’re Chani’s mom?” the doctor asked. I nodded.

“So the test results show that Chani has an infection called clostridioides difficile, or C-diff. for short. It’s a bacterium that infects the colon. I assume she wasn’t feeling well the past few days?”

“Yes, she was under the weather the past few days, but because she has Crohn’s, this does happen here or there. It’s not so unusual, unfortunately.”

The doctor nodded. “Yes, that makes sense, but this is actually an infection, not just a symptom of Crohn’s.

People with Crohn’s disease are more susceptible to this particular infection, so it’s not surprising that Chani caught it. But luckily, her case does not seem to be particularly severe. We’ll be starting Chani on antibiotics, which is the standard course of treatment

Chani was not a very happy camper at being admitted for an extended hospital stay.

for c-diff. The other issue she’s dealing with now is combatting the dehydration, so we’ll make sure she receives plenty of fluids via IV.”

Being admitted to the pediatric ward brought a sense of déjà vu, and I couldn’t help recalling the last time we had stayed there. Baruch Hashem, Chani was doing so much better since then. On the other hand, that had been the start of this bumpy road called Crohn’s, which we were still in middle of travelling. One thing was certain, though. The shock and fear was nowhere near as much as last time. Then, I had gone from having a happy, healthy family to finding out that my daughter had a serious chronic disease. From one moment to the next, I landed in the hospital instead of continuing with regular life. Even though this hospital visit wasn’t something I was expecting either, it somehow didn’t have the same shock factor now that Chani had Crohn’s disease. And Baruch Hashem, we were just here for an easily-treatable infection.

Chani was not a very happy camper at being admitted for an extended hospital stay. She was beyond the normal school girl’s excitement at missing school; she had been absent so much already this year, and all she wanted was to feel well again and be able to attend school like regular. She was also extremely bored in the hospital.

After receiving fluids, Chani felt much better, obviously not fully back to herself, but well enough to be restless and eager for entertainment. I didn’t have much to offer her, though, so it was challenging. It was also really hard for both of us to be in the hospital for Shabbos. It just wasn’t the same without the rest of the family, and the familiar sounds and smells and coziness of Shabbos at home.

Meanwhile, outside of our little island in the hospital, the rest of the family was doing their best to manage without their mother at home. Zeesy pitched in a lot, but things were still a little crazy.

My husband received a call one night from Shloimy’s rebbe regarding his behavior.

“Shloimy has been causing so many disruptions in class the past few days, I can barely teach!”

Once he understood what was going on, he worked out a plan, involving treats, prizes, and extra attention for Shloimy, for the next few days, until things were back to normal in our household.

When Chani was discharged and we finally came home a week later, it was a big relief for everyone. There were “welcome back” signs and balloons galore. It was time to get back into our blessedly regular routine. • TO BE CONTINUED

Despite having little to no calories, sugar-free candies can have a powerful effect on your brain. Here’s how: They trick your brain into expecting sugar- Sweetness signals your brain to prepare for a sugar "reward." But when that sugar doesn’t arrive (as is the case with artificial sweeteners), your brain remains in a state of craving, looking for that missing energy boost. This can lead to a vicious cycle of wanting more sweet things.

They perpetuate sweet preferences- By constantly exposing your taste buds to sweetness, sugar-free candies make it harder to reset your palate. This means you’ll continue craving sweet foods instead of naturally gravitating toward less sugary, whole foods. If you are truly trying to lose weight from a healthy perspective, you would be trying to heal yourself from the root cause and try to get yourself to stop needing sugars constantly. Sugar free candy does not let you achieve that goal.

They may delay satisfaction- Unlike eating a piece of fruit or a small square of dark chocolate, sugarfree candies often don’t satisfy hunger or provide any feeling of satiety. This can lead to mindless consumption, even though the candies themselves are low in calories.

When you eat sugar-free candies, your body might still respond as though you’ve consumed sugar. Some research suggests that artificial sweeteners may stimulate the release of insulin, which lowers blood sugar and triggers hunger, despite the absence of actual sugar. This can leave you in a cycle of constantly craving more food. Moreover, the habit of keeping “something sweet” in your mouth reinforces the association between eating and feeling satisfied, making it harder to break free from sugar dependency. Are Sugar-Free Candies Truly Unhealthy? It depends on how and why you use them. In moderation, sugar-free candies aren’t inherently harmful. They’re certainly a better choice than regular candies when it comes to calorie count and tooth health (some, like xylitol, may even reduce the risk of cavities).

When Rivkah offered water to Eliezer, she did it in a sensitive way. Even though he had asked only for “a little water,” she allowed him to drink freely as much as he wanted. She also positioned the jug of water to allow him to easily drink and did not mention watering the camels until he finished drinking. If she had, he may have rushed or cut short his drinking knowing that she still had to tend to them.

There are different opinions as to how old Rivkah was when she married Yitzchak. According to one opinion, she was 3 years old. According to another opinion, she was 14 years old.

Rivkah Imeinu, the second of the Imahos, grew up in a family of deceitful individuals, but she remained unaffected by her immoral environment. For this reason, she is compared to a rose among thorns. When her husband Yitzchak grew old and wanted to bless their firstborn son Eisav, Rivkah orchestrated a plan to ensure the blessings were given to Yaakov instead.

3. BRINGING IT DOWN

Just as Rivkah thoughtfully helped Eliezer, we too can offer help to someone in need. In doing so, we should be as sensitive as possible to what this person’s needs may be. For example, let’s say you were given homework that you understand well, but you notice a classmate struggling with it. Aside from offering to help, you can be extra sensitive in how you do so. Try to tune in and figure out which part of the homework is difficult for your friend to understand, and use a tone and words that make him or her feel they are smart, too.

5. QUESTION TO CONSIDER

What is one way to be extra sensitive when helping someone out?

Measure out 1 Tbsp of strawberry jello mix and 1 Tbsp of hot water in a bowl. Mix until smooth and set aside.

Start assembling the mousse cups. Crumble the cupcake or cake into the bottom of the cup.

Pour the heavy cream into another bowl and use an electric mixer to whip, until stiff peaks form.

Next, fill the cup until ¾ full with the strawberry whip.

Scoop out a ¼of the whipped cream into a small bowl. Pour the jello mixture into the mixing bowl, and whip again to combine.

Add a dollop of the plain whip on top.

To finish off, create a rose from a strawberry by cutting small indents into the strawberry, starting from the outside going inwards until the rose effect is complete.
