Whipped Shortbread
Cookies
INGREDIENTS
1 1/2 cups butter, slightly cooler than room temp
3/4 cup icing sugar
2 1/4 cups flour - sifted
3/4 cup cornstarch - sifted
makes approx. 2-3 dozen
Using a lined (parchment or silicone) baking sheet, scoop out dough balls using ice cream scoop or large tablespoon
2 tsp vanilla (use clear vanilla if available*)
Sprinkles, optional for topping
INSTRUCTIONS
Using electric mixer, use mix attachment to combine butter and sugar, beating approximately 3-5mins until fully mixed, adding in vanilla, ingredients should look ‘fluffy’
Add in sifted flour and cornstarch until combined with butter/sugar mix
Once all dough is formed into cookie dough balls, using a fork, press the tops of each *tip: coat the fork with flour or cornstarch to minimize sticking
Top with sprinkles
Place baking sheet into fridge or freezer to chill; approx 1hr in fridge; until cookies are firm to touch
Preheat oven to 300F or slightly lower if your oven tends to run hot when ready to take cookies out of fridge; bake cookies until tops look set; remove from oven and cool on cooling rack and enjoy!
