VEGGIE POWER Hat’s off to 18 year old Constantia Waldorf scholar Deva Argue for fulfilling her lifelong ambition of climbing Mount Kilimanjaro. Deva has always followed a strict vegetarian diet that excludes eggs but includes a small amount of diary like yoghurt and chocolate. “Being a vegetarian doesn’t mean subsisting on almonds but being mindful about a balanced and healthy diet with vegetables that contain protein. My personal favorites are broccoli, green peas, artichokes and spinach - and of course, nuts, seeds and legumes. I also eat soya and Fry’s products for protein. And of course, bananas are the ultimate energy food perfect for hard work out’s.” “I’ve never been tempted to eat meat. There are so many yummy vegetarian meals like melanzane, Indian curries, Italian-style pastas and Oriental style stir-fry’s. Supplements have also never been necessary to maintain my energy levels or athletic ability.” According to registered nutritionist Caryn Davies, nutritional health can’t simply be justified or guaranteed according to dietary exclusions or inclusions. “It is the overall balance of the diet which is important, and a well-planned vegetarian diet can certainly be nutritionally complete. As with any type of diet, every ‘body’ is literally quite different and every athlete will have unique dietary needs.”

South Africa has the second highest recorded rate of skin cancer. If you have any concerns about your skin, take adequate precautions by visiting a dermatologist for a skin check. This involves a quick and simple body scan to analyse moles, spots or skin abnormalities. Skin cancer can be dealt with effectively with early detection. We spoke to local dermatologist Dr Moodley operating from the Christian Barnard Memorial Hospital in the city centre for some advice. For a melanoma check on moles he recommends following the ABCD rule. Melanoma may present as a change in an existing mole but can also occur on normal skin. Any part of the body, even parts of the body that are usually covered including the feet need to be checked.

Aromatic Apothecary My most favourite in-store department is the one filled with bottles of aromatherapy. There is something so exotic, uplifting and mood enhancing about these flower and plant oils. We are particularly excited to feature Aromatic Apothecary spearheaded by the amazing Doryce Sher, master of olfactory ingenuity who can mix up a potion for almost any type of affliction.

oryce has done so much for the aromatherapy industry and is truly an inspiration. This is the story of the Aromatic Apothecary, the union between two families and the delightful working relationship and environment that has resulted. After spending time studying and qualifying as a pharmacist, Doryce was never really sold on the idea of dispensing a ‘pill for every ill’ and after ten years in hospital and retail pharmacy she wanted something more. “I sat on my bed one day and asked

Her first flirt with aromatherapy was in a book called How to Banish Cellulite Forever. Instructions on how to make a bath or massage oil with detoxifying essential oils, got her going. She went on a course, started massaging from home and fell in love with making up different recipes. On a whim she made bath oils to sell at a market, she filled up medicine bottles with an antistress oil recipe and they were a hit. The next week she doubled her quantity and sold out again. A BLEND OF TWO FAMILIES Many years ago when the kids were little Clive and Doryce Sher had an angel sent to them in the form of a domestic worker. Hilda looked after the house and their two sons allowing them to go to work every day. When Hilda wasn’t looking after them, the boys pretty much grew up at markets between bottles of fabulous smelling fragrances. At that stage, the Sher’s had no idea Hilda’s extended family would become integral to the Aromatic Apothecary business. They also didn’t know their son would be actively involved and it would grow into a thriving operation employing 17 people, four agents and three part-time staff supplying over 300 health shops and outlets with two of their own retail kiosks.

FROM MARKETS TO MARKETING

A humble start selling bottles of aromatherapy at markets in 1992 led to formalizing the business and trading from a barrow at the Victoria & Alfred Waterfront in Cape Town. In 1998 Aromatic Apothecary opened the first exclusive aromatherapy shop in South Africa where the lure of aromas wafting down the shopping aisles attracted numerous customers. The shop was a huge success. These days Aromatic Apothecary is still at the V & A trading from a kiosk. They also have a successful kiosk at the Gateway shopping centre in Durban. Besides markets, Expo’s and kiosks Aromatic Apothecary has an extensive wholesale business. Growth along the way included opening and closing a few shops but their core business is on expos and wholesale along with online orders.

Clive Sher oversees the marketing, sales and personnel division. His marketing skills come from both the pharmaceutical industry and the corporate world before he joined his wife at Aromatic Apothecary. He is also a qualified massage therapist and has completed several counselling courses. Doryce Sher handles the financial and product development division and oversees production and public relations. After working in pharmacy and being troubled by over use of prescription and over the counter medicines she welcomed a different therapeutic solution that was safe and pleasurable. Doryce has incredible insight into aromatherapeutic products and their extensive benefits.

Daniel Sher has added youthful passion and ideas to the business, growing the brands image, driving it through social media marketing and delving into the development of a new easy-to-use online shopping site for Aromatic Apothecary.

Lumka Hilda’s daughter rapidly learnt how to blend and mix oils professionally. Her attuned aroma ‘nose’ is an advantageous skill in the business.

SOCIAL RESPONSIBILITY Immense help, training, encouragement and career development has been a natural part of Aromatic Apothecary’s business ethic. After a fire in Gugulethu burnt down the rented shack Hilda was staying in, Clive drove to Gugulethu at 3am to help out inspiring the idea that Hilda and her children need their own home. A few months later, Hilda bought a beautiful home in Gugulethu with the help of a government subsidy, a gift from Clive and Doryce, and a small bond which they paid off in five years. Doryce and Clive have helped their staff with interest free loans enabling team members to own their own homes. They have supported weddings, births, schooling and more. Lumka and her husband through Aromatic’s assistance have built a ‘Habitat for Humanity’ house. Their staff is so much a part of their family. The Sher’s attribute the success of their company to their amazing staff.

Love and Tragedy in
HARMONY

My inspiration for this month’s dish comes from the story of Sonia and Rajiv Gandhi – a tale of love and tragedy, somehow in harmony. I pay homage to the ingredients she grew up with Balsamic Vinegar and Mozzarella Cheese. Perhaps she used these ingredients to find harmony in her adopted homeland of India.
E
dvige Antonia Albina Maino was born in Lusiana, a dozy hamlet nestled against the verdurous slopes of the Italian lower Alps. Her father Stefano, owned a building company while her mother Paolo ran their modest household. When Albina was about 9 years old, Stefano and Paolo moved the family to Orbassano, a small village in Piedmont. The Maino’s had ambitions for their daughters, and enrolled them in a convent nine miles away, in Giaveno. Albina chose an academic course and had private lessons when needed. To Albina, this was a time of great simplicity both at home and school. She is remembered as being conscientious, curious, thoughtful and intelligent. When 18, Albina and her eldest sister were sent to Cambridge to study English. I suspect sister Anouchka was there to keep an eye on the beautiful Albina. This was the swinging sixties. The Beatles were turning young woman into shrieking, possessed, twisting sisters. It was a time when peace, freedom and protest were all in harmony with sex, drugs and Rock ‘n Roll. Across the pond, waves of anti-war protests were sweeping through the USA. The nation was torn and punch-drunk, and Rose Kennedy had just packed her black frock away when Bobby Kennedy was shot. It would have been a time of great anxiety for old Stefano, sitting in the quiet of the shadows of the Italian Alps – his daughters far away in the land of the Jack the Ripper and the hideous Morris Minor. Albina found work in a Greek Restaurant popular with students. For a simple girl from

Italy’s North, the buzz would have been intoxicating. Albina would have relished the cobbled charm of her academic surroundings, and been enchanted by the variety of cultures co-existing in the womb of English academia. But one night everything changed when, as cliché would have it, a tall dark stranger walked into the restaurant. The smitten young woman could not have imagined the fine-boned man with the piercing gaze and lightning smile was her ticket into a life of love, power and tragedy. Rajiv Ratna Gandhi was the eldest son of Indira and Feroze Gandhi. He was sent to London to complete his A-levels and then to Trinity College in Cambridge. Not much is known about his life at this time. But one thing is certain – one evening he walked into a little restaurant in Cambridge, unwittingly changing the life of a young Italian. “It was love at first sight”, she later recounted in her autobiography. A three-year courtship followed with Rajiv. When she finally visited India, Albina resisted the conservative dress and found the food too crass for her delicate palette. But she decided to marry Rajiv in 1968, and took the name Sonia. The wedding understated with Sonia in a pink Sari made from silk spun by Jawaharlal Nehru, Rajiv’s grandfather, during one of his many spells in prison. The young couple moved into the family’s sprawling estate, and Sonia soon found a friend in her mother-in-law, Indira. With Rajiv away in his job as airline pilot, the two women grew ever closer. Apart from the political tensions in the country, the Gandhi household was a haven for Sonia. Her marriage was strong everything you need to live life well
and in the 70’s they welcomed Rahul and Priyanka into the family.Tragedy struck, when Indira was murdered in 1984, and a reluctant Rajiv agreed to enter politics against the wishes of a terrified Sonia. It’s fair to say the novice politician, who took office upon Indira’s death – rather like Peter Sellers’ character, Hrundi V. Bhakshi in the film, erm… ‘The Party’, fumbled his way through his tenure, plunging the country into crisis after crisis. Sonia’s worst fears were realized in 1991, when a Tamil Tiger suicide bomber killed Rajiv. A grieving Sonia juggled her duties as a mother with that of her responsibilities as matriarch of one of the most powerful families in the world. And in 1998 she led the ailing Congress party to victory. Although eligible for high office, Sonia graciously declined the post in 2004. Sonia Gandhi is consistently voted one of the most powerful people in the world. She has found harmony between being a grandmother and the angst of Rahul entering politics. I wonder if as a young girl Sonia could have imagined her destiny. Could she have felt an unknown force driving her towards a mysterious future? A taxi, with faceless driver that didn’t ask her destination. Who would have bet in those days that little Albina would have so many other fabulous chapters in her life?

Pre-heat oven to 220º, roast beetroot and butternut chunks separately until tender. Lightly steam the peas and string beans. Slightly heat a bay leaf, cinnamon stick, star anise and 3 cardamon pods in a pan. Add 750ml Beetroot juice, Balsamic Vinegar, red wine and sugar. Reduce by half over high heat. In a food processor, coarsely chop onion and capsicum. In a heavy based pan, heat coconut oil and mustard seeds till they pop. Add Onion and Capsicum mixture and sweat down. Add the garlic, ginger, green chilies and fry until soft. www.wellnesswarehouse.com
Combine all the spices then add to the frying onion mix stirring constantly to make sure the spices don’t burn. Cook for about 10 minutes over medium heat. Combine the beetroot reduction with the onion mix in the pan and use the rest of the beetroot juice to get the required consistency. Tear Mozzarella cheese and put in a bowl.
Serve beetroot, butternut, Mozzarella pieces, string beans and peas in separate bowls. Dish up a serving of each and spoon the sauce over. Garnish with Coriander. Serve with a Saffron and cumin flavored Basmati Rice, a simple Sambal of chopped onion, tomato, chili, Balsamic Vinegar and a little sugar.
TIPS Be very careful with the amount of chilies you use. You can also use the beetroot reduction with chicken or fish. Be adventurous, try making a saffron and cumin Polenta or Risotto to accompany the dish.

at fat and go low on carbs, says the Professor. We open up his book and take a look at his reasoning. For decades we have been cautioned against eating fat. Anti-fat propaganda has left most people highly suspicious of advice that includes eating the fat rind on bacon, the skin from the chicken or deliberately choosing double cream yoghurt. Low fat or fatfree is all over food packaging and we are programmed to choose the fat free versions. Noakes points out that we mistake fat on food labelling to translate directly to fat on the body.
“Fat does not make you fat. Carbs do.” The focus of his book is to deconstruct the bad fat myth and return to the attitude of ancient times where fat was prized. Fat fuels you and gives you energy - carbs make you fat.

Hunger regulation is governed by the bulk and nutrient density of the foods we eat. The bulkier the food the faster we feel satiated, but because bulky food – pastas, rices, bread etc – are so nutrient-deficient, you feel the need to eat sooner rather than later. Almost every food product in your local supermarket has been developed to make you eat more of it. What he calls ‘time-bomb foods’ he says, are designed in laboratories to be as deliciously irresistible and addictive as possible. “Between the boardrooms and the laboratories of food processing companies, a specific junk food jargon exists. The perfect combination of salt, sugar and fat is the bliss point. Mouth feel is the bliss point combined with a textual factor like crunch. The idea being to achieve vanishing caloric density – where the food vanishes on your tongue so quickly you are fooled into believing you are not actually eating that much at all. So you eat more.” The principle anti-hunger weapon is something called the appestat. When you move off carbs you reconfigure your appestat – the part of your brain that regulates hunger. Noakes refers to carbs as a self-fulfilling hunger stimulant that keeps you in a hunger/gaining weight loop. Munching on nutrient deficient, sugar and salt loaded carbs make you want more and more carbs until suddenly you are overweight and baffled by how you got there. In contrast to eating carbs, when you are eating fats and proteins, you will feel full for longer from the nutrient-rich nature of these macronutrients. When you eat fat, you simply don’t get hungry in the same way carbs make you hungry. This is because your appestat is functioning optimally.

A WORD ON CARBOHYDRATES
Failing to plan is planning to fail. Watch out for foods with hidden carbs and sugar. This means: • Tins of food, sauces, dressings and pasta mixes • Boxes of cereal, chips and other treats • Potatoes, crackers, pasta rice or white flour
The reason for cutting carbohydrates is because they illicit an insulin response. Insulin is both an inflammatory hormone and a fat-storing hormone. Keep carbs as low as possible. Use the bare minimum to remove glucose from the bloodstream and turn it into energy. The excess is stored as fat, and this acts as a back-up fuel supply. The problem is that in today’s age we seldom use up the stored fuel, yet continue to eat lots of carbohydrates so stored fat is never needed. By keeping the body’s level of glucose in a narrow range, you prevent the huge release of insulin usually required to clear the glucose from the blood after a high-carbohydrate meal. Stable blood sugar allows the body to burn the stored fat as energy.

TIP IF YOU ARE IN A SOCIAL SITUATION AND HAVE TO CHEAT, INDULGE IN A VERY SMALL PORTION (AND MAKE SURE IT’S TAKEN AFTER A PROTEIN-RICH AND/OR FAT-RICH MEAL/SNACK TO BUFFER ANY SUGAR RUSH).
THE SKINNY ON FATS Dietary fats are essential to life and good health, and pivotal for permanent weight loss and glowing health. Some fats are not good for you, like hydrogenated or partially hydrogenated fats (found in margarines, commercial-baked and processed foods), all seed oils and trans fats. (Trans fats are damaged fats found in many margarines, seed oils and processed food.) All these unhealthy fats are high in Omega-6 fatty acids, are extremely inflammatory, and vie for position of receptor sites with the healthier Omega-3 fatty acids. By taking in too many Omega-6s, you sabotage the body’s ability to make use of Omega-3s, which are anti-inflammatory and healthpromoting. Choose fats found in nature like lard, duck fat and butter, as well as coconut oil, olive oil and macadamia nut oil. Healthy fat intake does not lead to fat storage, unless mixed with sugar and other carbohydrates. Fat functions well with protein and so by avoiding high-carbohydrate containing foods, especially if refined, you will spare yourself the inflammation that accompanies this way of eating.

SWEET TRUTH Rather than sugar use a sweetener like stevia. This is a natural herb with bloodsugar balancing benefits, no calories, no carbs. This is the sweetener of choice, but you can use a sugar alcohol like erythritol or xylitol for baking. Artificial sweeteners (including sucralose, acusulfame K, cyclamates and saccharine) are particularly harmful to the body and the brain, and amazingly – though being touted as ‘slimming aids’ – have been shown to increase hunger and cause weight gain.

Avoid excessive protein intake (the size and thickness of your palm without fingers is a good measure for a serving of animal protein). Choose fatty cuts of meat (often cheaper and tastier). Include a variety of foods. Diversity provides a wider spectrum of nutrients. Purchase foods you recognise in their natural state, ie. eat real food. Avoid processed and fast food. Stop eating when full, but satisfied. Don’t be too hard on yourself but do your best to get into the diet as soon as possible. Plan ahead.

Carb Free Satisfaction Get started on a low carb, high fat diet with two recipes from ‘The Real Meal Revolution’ by Tim Noakes. These two recipes replace the things we miss the most when substituting carbs. You can eat bread and pasta just in a different form.
Carb-free pasta

Preheat the oven to 160˚C. In a food processor, blend all the ingredients and leave the mixture to thicken for 10 minutes. Using coconut flour for dusting, roll the pasta into sheets and set aside. They can be frozen between greaseproof paper or cooked immediately. Cook as you would normal pasta (be careful, they cook quickly).
Carb-free bread Bread is by far the hardest thing in life to go without. It’s also near impossible to find zero-carb bread that actually has zero carbs, let alone one that tastes good. This recipe ticks all of those boxes as well as being ‘toastable’, which is an added bonus.

TIP BUY YOUR FLAX SEEDS WHOLE AND GRIND THEM IN A COFFEE GRINDER WHEN YOU NEED THEM AS THEY GO RANCID VERY FAST

Preheat the oven to 180˚C . In a mixing bowl or food processor, mix the dry ingredients together. Add the wet ingredients and whisk together until a batter is formed. Pour the mixture into a greased bread tin and bake until it is cooked through the middle. You can use a skewer to test this but it usually takes 30 minutes. Tip onto a cooling rack and use as needed. It will slice much better once it has cooled but it doesn’t keep for very long. For this reason, I recommend slicing it and storing it in the freezer.
Notes: This is a completely basic ‘dough’ recipe. You can add any flavouring you like along with other more bulky additives like cheeses or vegetables.

This whole loaf contains 47g of carbs. You can eat the whole loaf and stay within the low carb and high fat programme.

Heat the oil in a non-stick pan and gently fry the onion. Once slightly browned, add the garlic and paprika and cook for a few minutes Add chopped tomatoes and turn up the heat to reduce the liquid (if you’re using fresh tomatoes, cook more slowly until the tomatoes are softened) Once the tomato sauce has reduced by about a third, reduce heat and crack the eggs into the mix. Cook for around 5 more minutes or until eggs are cooked. Season to taste and serve with a generous sprinkling of chopped parsley.

Slice the chicken breasts into strips and place in a large bowl. Add olive oil, ginger, sweet chilli sauce, garlic, lemon and lime zest. Season with salt and pepper and add the chopped coriander. Mix well and place in the fridge. Place your wok or large pan on a high heat, add the chicken pieces by hand allow to char slightly before turning them over. Once the chicken is cooked, add the spinach leaves for 30 seconds until they wilt. Dish up the chicken with the pan juices spooned over them. Serve with the herb salad.
Serve with FLAVOURED WATER: Add crushed lemon, mint, cucumber and pineapple to a jug of sparkling water and serve in iced glasses (pour through cheesecloth for a smoother drink).

Mix the ingredients for the first marinade together and rub on the washed and dried salmon pieces. Place in the fridge for 15 minutes while you prepare the second marinade. he recipe originates from the Essenes – a Judaic community who flourished around the time of Christ. They lived an ascetic lifestyle practicing vegetarianism and communal living. ESSENE BREAD from sprouted wheat grains
Makes 1 loaf Preparation Time: Be aware you need a few days to sprout the wheat kernels before you can make the bread
YOU WILL NEED A GLASS JAR WITH LID OR CHEESECLOTH TO COVER THE OPENING A MEAT GRINDER OR PROCESSOR A BAKING TRAY 2 CUPS OF UNCOOKED, UNSPRAYED WHOLE GRAIN WHEAT KERNELS FIRSTLY YOU NEED TO SPROUT YOUR WHEAT KERNELS. USE A LARGE GLASS JAR WITH A SCREW-ON LID. PUNCH HOLES IN THE LID OR USE A PIECE OF CHEESECLOTH TO COVER THE TOP OF THE JAR SECURED WITH AN ELASTIC BAND.
TO SPROUT Pour 4 cups of water over the wheat and soak overnight. In the morning drain off the liquid (keep this nutrient rich water for soups or smoothies) Put the jar in a dark place, rinse the wheat twice a day with fresh water taking care to drain the water off after rinsing. Stir or shake to prevent spoilage. When it starts to sprout and the tails are twice the length of the kernels they are ready. This should take about three days. Let them dry a little. Make sure your grinder is well oiled then grind the sprouts until you get a doughlike consistency. It will be juicy and sticky and look a bit like the consistency of raw mince. If you like you can add nuts or dried fruit. If you are adding dried fruit, first soak it for 30 minutes. Once the dough is ready wet your hands take a handful of the dough and massage it to get any air pockets out. Shape it into a circular flattened loaf or a few muffin shaped sizes. baking tray. The baking method is similar to that used by the Essenes 2,000 years ago. Bake them on a very low heat (between 45 and 60 degrees celsius) for about 4 or 5 hours until the outside is firm but not hard. The inside will be soft and sticky but will firm once cooled. To stop it from drying out spray your dough with water before and during baking or leave a pan of water on the oven shelf below while baking. Let them cool and store in sealed plastic bags outside the fridge. They will keep well for 3 days outside the fridge or up to a month when refrigerated. They also freeze well.

Our ideal pH is slightly alkaline 7.30 to 7.45. You can test your pH levels regularly by using a piece of litmus paper in your saliva or urine first thing in the morning before eating or drinking anything.

ealth experts are using the balanced pH model more and more. Some say a balanced pH level is extremely important, others say it’s crucial and some believe it’s a matter of life and death. Keeping your body in a balanced pH state is a lifestyle recommendation and has not been used as much by traditional medical doctors whose approach is centered on pharmaceutical prescriptions for ailments and bugs. In chemistry, pH is a measure of the acidity or basicity of aqueous solutions. Solutions with a pH less than 7 are said to be acidic and solutions with a pH greater than 7 are basic or alkaline. Pure water for example has a pH very close to 7. When the body is too acidic, the immune system struggles to fight off germs, infections and disease, making it easier to get ill. Acid builds up in our systems from everything you need to live life well

When the body is too acidic the nervous system is deprived of energy and is weakened. This is known as devitalising or enervation, making the physical, mental, and emotional body weak. Acidity is also closely linked to arthritis. Arthritis is one of the most disabling diseases in developed countries. The word arthritis means inflammation of the joint and describes pain, stiffness, and swelling in the joints. The two main forms of arthritis are Rheumatoid and Osteoarthritis. Both are related to pH imbalance and accumulation of acid deposits in the joints and wrists. It is this accumulated acid that damages cartilage. When the cells that produce the lubricating synovial fluids and bursa fluids are acidic, it irritates and swells the joints. Where an acidic environment is a breeding ground for anaerobic pathogens, the hydrogen in rich body fluids keep bad bacteria inactive. Whether bad bacteria and pathogens incubate or remain dormant, all depends on the ratio of cellular pH. Premature aging is another result of the body being too acidic. Acid stimulates the aging process in the organs, arteries, skin and cells. This can result in a range of symptoms from wrinkles and gray hair to poor memory and weak bones and muscles.
The key is balance, not just pH balance, but lifestyle balance. nce known as adult-onset diabetes, children are also now getting the disease, because of the prevalence of obesity in children. The World Health Organization predicts that diabetes will be the seventh leading cause of death in 2030 – that is, unless the world’s population can be educated on how to avoid this disease. It’s quite simple, really. As people become more immersed in the fast-pace of today’s world, less exercise and more readymeals become the order of the day. This contributes to obesity and reduces the body’s ability to work optimally, leading to diabetes Type II, a disease with no cure.

With Type II, the disease is progressive and begins with your body resisting insulin – this is where your fat, muscle and liver cells stop using insulin adequately. Usually, your pancreas takes up the slack by producing more insulin, but it loses the ability to secrete enough insulin over time. Prediabetes is when your blood glucose levels are high, but not enough for a diagnosis to be made. It’s your body’s warning sign, however, that you’re at a high risk of developing Type II if you don’t make immediate lifestyle changes such as eating healthily, exercising and losing weight. There’s also what’s known as gestational diabetes, which can develop during the late stages of pregnancy and occurs when pregnancy hormones cause a shortage of insulin. This type usually goes away once the pregnancy is over, but women who have experienced it are at a higher risk of developing Type II later in life.
ONE OR TWO? The term diabetes refers to the glucose levels in your blood – everyone has, and needs, glucose because that’s what creates energy in your body, but too high levels are dangerous. Your body gets glucose from the food you eat, and it’s also made in your liver and muscles. Insulin is made by your pancreas and when it’s released into your blood stream, it helps glucose get into your cells – for energy production. If your body doesn’t make enough insulin or it’s not working optimally, the glucose in your bloodstream can’t get into your cells and so remains in your blood. This causes prediabetes or diabetes. There’s a difference between Type I and Type II, however. Type I is usually diagnosed in children, teens or young adults and occurs when your pancreas stops making insulin because your body’s immune system has attacked and destroyed the

PREVENTION There are numerous factors that contribute to your risk for diabetes Type II. Use this check list to ensure you don’t become a statistic: •
Weight The more fatty tissue you have, the more resistant your cells will become to insulin. Being overweight is the foremost risk factor for Type II diabetes.

FINDING BALANCE IN THE BODY B
alance, equilibrium, harmony... we use these words to describe the process of making equal, evening out, creating stability. Balance is not a static state, but rather a dynamic one, like trying to maintain your footing while standing on an ocean rock with the waves rolling in around your feet. Just as you find your balance another wave rolls in, requiring a muscular response to keep balanced. In life these waves represent the internal and external changes in our mind, body and spirit. Believe it or not, we get to choose how big the waves will be, and therefore how much energy we need to spend to counter them. The bigger the wave the more expensive or exhaustive it is for us. We call physiological balance or harmony, homeostasis, defined as the ability of a system to maintain stability in response to any stimulation or situation that disturbs normal function. Our body naturally strives towards a balanced environment where cells can thrive. When something disrupts this balance we activate a series of responses to recreate stability. Sometimes

we return to the same level of balance as before the disruption but mostly we find a new level of balance, different from where we started. This is how we grow. This dance can be both a positive and negative process, healing or harming, step up or step down. For example, if we drink lots of coffee we rapidly increase the acidity of our extracellular fluid, which washes over our cells. Our body, in its efforts to try and balance out the acidity, releases alkalizing mineral salts from our bones. In this way we regain balance, but at the cost of our bone health. Eventually we demineralise our bones in our efforts to keep up with the constant acidifying effects of that daily cup of coffee. Another example is when we are exposed to a cold environment and our core temperature begins to drop. We begin to pull blood away from our outer body to preserve warmth in our core, and we shiver to create heat. Homeostasis can get much more complex than this, where we begin to change the genes we switch on and switch off in response to changes in the environment around our cells, tissues, organs and

bodies. A cell bathed in high levels of glucose as a result of a high-sugar diet, may decide to activate a series of genes that lead to insulin resistance and diabetes. A cell exposed to the downstream effects of our thoughts and emotions may have its balance supported or disrupted. Using homeostasis as a tool to constantly advance our baseline level of equilibrium is one way to maintain and improve one’s health. Adding nutrients into the mix that disrupt the status quo and recreate a healthier improved level of balance allows us to correct the repercussions of past disruptions. A diet rich in phytonutrients and fatty acids, adequate sun exposure, living water, appropriate movement and actively unpacking our constrictive thoughts and belief systems all serve to use homeostasis as a tool of positive evolution. Show love and respect to yourself as you would a person you hold in high esteem. Eleanor Roosevelt said that you teach people how to treat you. By honouring yourself at home, you will also instil that sensibility in the people who share your home. Set the tone for the people you live with to honour each other with love and respect. Knowing that you can come home to a space that’s welcoming and open will instil a great sense of sanctuary.

There’s nothing quite as satisfying as a sparkling clean bathroom. Abandon your habitual standard options and use these simple recipes for super clean power:
If you’ve been experimenting in the kitchen and perhaps got a little over zealous with the celeb chef stirring and flipping, get rid of baked on grease with . . . more grease. Rub a little vegetable oil on the stove-top, grease stains and they’ll slide right off under a warm cloth. Bicarb makes a great non-abrasive scourer – merely apply some to a damp cloth and wipe the surfaces with small, circular movements. Vinegar is a fantastic solution for sticky surfaces – simply use a spray bottle to spritz vinegar on your surfaces and wipe down with a damp cloth after a few minutes.
Mould removal – mix ½ cup each of borax and white vinegar into a paste. Use a brush or sponge to scrub the mould off and rinse with water. For extra stubborn mould, leave the paste on for an hour before rinsing. Drain cleaner – pour ½ cup of bicarb into the drain, followed by ½ cup of vinegar. It’ll fizz, let it do that for about 15 minutes and then wash away with boiling water. You may need to repeat this, or leave the mixture in the drain overnight. Toilet bowl – mix a cup of vinegar with ½ cup of bicarb and pour into the toilet, let it sit for 15 minutes before flushing.

GOOD, CLEAN AND FRESH If your mother-in-law calls to say she’s about to arrive, use a quick freshen up fragrance before she arrives. For a green room spray: in a spray bottle, mix a tot of gin, vodka or rubbing alcohol with about 150ml of filtered water and 15-30 drops of your favourite essential oil. The mix will keep for about a month. An all-round cleaner that will work for everything from mirrors to floors has just three ingredients – 2 cups of water, 1 cup hydrogen peroxide and ¼ cup of lemon juice. Hydrogen peroxide is almost odourless and cuts through dirt and germs even more strongly than vinegar; the lemon juice helps to break down grime and offers a fresh citrus scent. Mix and keep in a spray bottle. Set up a new cleaning cupboard, buy the ingredients, make your bottles in advance and keep filling them. That way you also save on packaging.

“If you get the Tao (the path), there is no effect that cannot be produced, if you miss it there is no effect that can.” The first and foremost principle of Feng Shui is that of ‘attention’ – paying attention to everything around you. This means becoming aware of the spaces around you, your posture, your thoughts, your intuition, your responses and impressions. Can you feel the energy around you? Where is it depleted? Let this practice become second nature to you as this is the first and foremost principle of Feng Shui. The second principle of Feng Shui involves what is called ‘Chi’, explained as the cosmic breath; the universal life-force or vital principle. It is the essence of the principles of heaven and earth, of time and space, and of all relative phenomena. It is the force of change and transformation. “Chi is displayed in the circling of the heavens, the seasons and weather patterns, the undulations of the land and the tides of the sea, the changes in our bodies, emotions and thoughts and the changes of our affairs and our fortunes. Everything breathes and moves in accord with it. Everything comes from it, exists through it and returns to it,” says Lillian Loo, author of Feng Shui.
The question however is “where do I put the couch?” Using the first principle of ‘becoming aware’ the simplest application is to imagine chi as a stream that enters your home, coming through the main door and flowing everywhere throughout. The way you arrange and position things serves to guide or conduct the chi around and through the rooms and different areas of your home. Ideally this should flow smoothly and calmly throughout, neither rushing or stagnating in any one spot. The furniture and objects should be arranged in a comfortable, co ordinated and well-balanced manner. The chi, ideally should be made to circulate around the middle of each room. Imagine that the middle of your home is like the hub of a wheel – it should be left open, if you fill or clutter this area, you effectively suffocate
the chi of your home. The middle of each room should also be left open, with the exception of the dining room and possibly the bedroom. Furniture should generally be positioned parallel to the walls, creating the feeling of agreement and simplicity. Avoid creating obstacles by awkward placements like putting too much furniture in a room, or using furniture too large for the space. A room that is overly furnished will encourage you to become sedentary, leading to feelings of procrastination and ultimately, frustration. The key to the arrangement of a room lies in the focal piece of furniture like the bed in the bedroom, the desk in the study and the favourite couch in the living room. Once you have found where the most important piece of furniture goes, everything else can be arranged in relation to it. The walls in the room may be viewed as protective barriers. Couches and chairs for the most part should have their backs to walls. If you sit with your back to a window or door you will feel less secure than if you sit with your back to a wall. If two people are face to face in a room, one sitting in front of a window or door, the other sitting in front of a wall, the one with the wall behind will be in a more powerful position. Too many doors or windows in a room dissipate chi. This can be compensated by closing off the least needed door or doors and putting up blinds or curtains to help contain the energy flow. A good tip is to complement a view with an echo inside the house, this could be reflecting an outdoor garden with an indoor bonsai garden or a painting of a garden. Fish tanks are said to mean good fortune and ward off ‘sha’ or negative energy. To get a clear picture of how chi circulates through your home, draw a smooth continuous line, like an imaginary stream through your floor plan, beginning at the main door and flowing through and around every room. Good health and pleasant environmental conditions naturally arise when we cultivate pure awareness and equanimity in ourselves at the same time as practicing kindness and compassion towards others. HOW DOES FEAR EFFECT LABOUR AND BIRTH?
At the onset of labour, the hormone oxytocin kick-starts the process where the uterus starts contracting and the cervix begins to dilate. Oxytocin (also known as the love hormone) causes a natural high in the labouring mother but is inhibited by adrenaline produced when she feels fearful and triggers the ‘fight or flight’ response in the brain. Once this response is triggered the body moves into survival mode, diverting blood to the survival organs like the respiratory system, suspending digestive function, increasing heart rate, blood pressure and muscle tension. What then happens is that the working muscles of the uterus are left without blood flow and oxygen supply and can no longer work efficiently. The reduced blood flow leads to a build up of lactic acid and can cause unbearable pain (and yet more adrenaline) for the labouring mother. All too often this is the way mothers experience birth and although the pain is very real - it doesn’t have to be like that.
HOW CAN A BIRTHING MOTHER AVOID STRESS DURING LABOUR?
In contrast, when a woman comes into her labour relaxed and calm, she releases endorphins (the body’s natural relaxant) which have a natural numbing and analgesic effect significantly more potent than morphine. Endorphins are also responsible for feelings of euphoria and time distortion (hours will seem like minutes!). What is most important for birthing women however, is that endorphins and stress hormones (like adrenaline) have a mutually exclusive relationship. The more her body is relaxed and continues to produce endorphins, the less it is able to produce the stress hormones.

Every pregnancy guide and antenatal class helps you prepare your birthing options. They even encourage you to plot out your birthing plan. I often come across mothers who feel like failures after giving birth if they haven’t been able to follow their birth plans to the T. They’ve had their heart set on home births or natural delivery without intervention, and ended up in a hospital or in an operating theatre for reasons beyond their control or sometimes simply because they weren’t accurately informed of their options.

It’s no secret that many of the maternity wards in our private hospitals are aptly nicknamed “Caesars Palace”, and you’ll probably find at least half the ladies in your antenatal class end up giving birth via c-section, either by choice, or by ‘reasons’ given by their Gynaecologists. One thing you must understand that although our bodies are designed to give birth to our babies naturally, it isn’t always an option, and one should not feel discouraged by a change in the plan. Here is some advice when preparing to welcome your new little bundle into the world: 1. Try not to see how you birth your baby as a determining factor in your ability as a woman or a mother. It is not a competition, and your body and experience will be different to the other women in your antenatal class, because you ARE different and so are your babies. Don’t judge them either for choosing birth plans different to yours. 2. Do the Research. Know your options, watch birthing options on YouTube or DVDs, see what appeals to you, understand any complications you could face with each option, and be aware of the emotional and physical experience each brings to the birthing process. 3. Be informed. Some intervention is life saving and some is invasive. Knowing the difference will help you with planning and experiencing a positive birth outcome. Women often feel powerless during the labour process which can lead to grief and Post Natal Depression, if the desired outcome is not achieved. 4. Involve your partner when putting together your birth plan. Making sure your partner understands how you’d like your birth to go, and the kind of support you need will make them feel more part of the birthing process. 5. Do everything in your power to have the birth you desire, then let go knowing you did your best. Eat properly, prepare your body for labour, have a birthing pool on hand, hire a doula, or make sure the music is what you want when you go in for your c-section. Knowing you did your best is often a comforting thought should things not go as planned. Talk to an expert, a midwife, a doula, your doctor, if you fear that you may be overly attached to your expectations, but above all do what’s right for you.

ome is where most people feel most comfortable and relaxed. Feeling comfortable and relaxed is a great contributory factor in having a good labour experience. In previous decades, homebirth was the norm although nowadays it seems to be the reserve of only very few parents even though new research suggests the experience can improve outcomes for both mother and baby. We take a look at what might be in store for parents wanting to explore this option. In June this year, a study was done in Holland that showed severe risk for planned home birth is only one in a thousand compared to 2.3 per thousand in planned hospital birth. In the Netherlands, twenty percent of mothers practice home birthing and the country has excellent outcomes for mothers and babies. While the study showed that homebirth was at least as safe as the hospital setting for first time mothers, second time mothers showed far fewer complications at home than in hospital. A 2011 study of English mothers revealed that those who planned homebirth were less likely to end up having a cesarean or forceps delivery.

While homebirth is not everyone’s choice (and not viable for those with high-risk pregnancies), many women choose it because they feel safer in a homely environment where they are less medically managed. Others feel birth is a normal, natural event that doesn’t require medical intervention and choose homebirth to avoid unwanted hospital procedures. “Hospitals are not that private and women unwittingly find themselves exposed to procedures and/or people they did not anticipate or know” says midwife Marianne Littlejohn. “I felt terrified at the prospect of people I don’t know being around me and fiddling with me while I was giving birth. I also find hospitals so sterile and I don’t like the smell of them. For me home birthing was a much better option,” said home birther Audrey West. Birthing at home has many advantages. Robyn Sheldon (author, midwife and founder of Mama Bamba) explains that important birthing hormones can be affected by the environment you are in, “To labour well, a woman needs to feel safe and trust her support team and environment. Fear has a strongly negative impact on labour. Adrenaline, for example is a major stress hormone and counteracts the production of endorphins and oxytocin. Endorphins and oxytocin minimise pain, and increase bonding and love for the baby.” There is so much emphasis on and negativity around the pain of labour that mum’s-to-be often have great fear around expected pain. Hospitals are also often perceived as either frightening or foreign, and this doesn’t help the natural progression of labour. Homebirth needs a good deal of preparation and proactive birth planning. In South Africa it is critical to have a private midwife and backup gynecologist who share the prenatal care during pregnancy. Many homebirth parents also choose to use a doula (non medical birth support person) to assist during and after the birth. Antenatal classes and preparation are important for homebirth as pain relief options such as epidural aren’t available. Some mum’sto-be use a birthing pool and have water births, others prefer to use a birthing ball. Many plan a beautiful ceremony with flowers, their favourite music and uplifting aromatherapy oils. Littlejohn also believes in healthy lifestyle choices as an important preparation factor.

“A healthy diet and lifestyle are absolute prerequisites if you are planning a homebirth in my view. A high protein low carbohydrate and largely whole food diet is essential for a healthy body. Daily exercise helps prevent diabetes and moderates the growth of the baby.” Throughout pregnancy the mother is monitored and screened to make sure complications and conditions preventing safe homebirth are flagged well before the day. In about 12% of cases the mother will need to be transferred to hospital during labour for extra medical support and about 3% of babies will require transfer after birth. “Almost all problems in labour can be identified beforehand. Birthing at home with an independent midwife often includes having a complete labour ward discreetly tucked away in case of emergencies” says Sheldon. Post-birth, the midwife (and perhaps doula as well), continue to check up and monitor the mother to see she is coping and feeling supported and confident. Sheldon points out that a woman who births at home also has the benefit of constant care and attention she may not receive in a busy hospital environment. “A woman who gives birth at home is not only able to snuggle and bond with her baby and her family in a way that is not possible in hospital, but she probably gets more one-on-one attention from the midwife than she would in a hospital.” For the majority of healthy women, professionally supported homebirth remains a safe and viable birthing option that not only enhances the birthing process but also post-birth bonding and the integration of a new baby into the family. EARTHCHILD Lessons from the garden The Earthchild Project is a Non-Profit Organisation operating in disadvantaged primary schools in the Western Cape.

n Earthchild Garden Club member once said it all when he exclaimed,
“I think we should knock down the whole school and plant a big garden!” There is so much that can be learnt by getting our hands in the soil. The act of growing and eating our own food is a simple yet profound way to connect to the Earth. Gaining insight into a plant’s relationship with the sun, water, soil and air can deepen our own relationship with the intricate web of life. For children, it can be

a fun and empowering way to learn about nature, healthy living and life-skills such as responsibility and team work. This is why local NGO, the Earthchild Project has made food gardening an integral part of their programmes. Working in schools in Khayelitsha and Lavender Hill, they’re teaching thousands of children how to grow their own organic seedlings and vegetables. They grow seedlings in toilet paper rolls and veggie gardens in old milk crates, also imparting the principles of ‘reduce, reuse and recycle’ waste. Planting in containers is a great, accessible and practical technique for children, especially when they live in homes with limited space for gardening. everything you need to live life well

f your skin is still reeling from the effects of winter’s cold breath and the thought of exposing it even in a salon setting is scary, there are many things you can do at home, away from prying eyes, to feel as good as you want to.
EXFOLIATION Your skin naturally renews itself regularly (in teens, this happens every two weeks or so and for adults, it’s around once a month), which means that dead skin cells are shed and new ones are produced. But, unlike snakes, humans don’t simply step out of the old skin and sometimes it needs a little help. Gentle exfoliation is an important part of a beauty regimen, and its recommended you exfoliate 1-2 times weekly, depending on your skin type (for dry skin, exfoliate less). Always remember to cleanse your skin before exfoliating.
Face: Towel dry your skin, creating a little bit of friction to remove superficial dead skin layers. Then mix half a tablespoon of bicarbonate of soda with half a tablespoon of a gentle cleanser. Apply using light pressure in a circular motion for 1-2 minutes. If your skin is particularly dry, create a mixture of one part raw coconut oil with one part bicarb. For oily skin, leave the bicarb and cleanser solution on for 1015 minutes for deeper oil absorption. Rinse off with warm water, pat dry and moisturise with a cream suited to your skin type.

Make your own scrub cleanser by mixing one part sugar with one part coconut, olive or jojoba oil. Use a cloth to apply to your rinsed skin using mild pressure and circular motions. Spend about 1 minute on each limb. For body parts that need a little more attention, like elbows, substitute the sugar for salt and use a loofah instead of a cloth. Dry brushing also works wonders before a shower or bath. Use a dry, natural bristle brush and use gentle upward strokes – brushing for around four minutes for your entire body.
These days, you’re warned not to go into the sun, nor use a sun bed and self tanning sprays are also becoming definite health no-nos. But a lightly tanned body is just so sexy. To get a beautifully subtle tan anywhere, use an old 50s housewife remedy: infuse 10 black tea-bags in a litre of boiling water until the water cools. Using a cotton swab or cotton wool ball, gently rub the mixture over your freshly exfoliated skin. Three or four layers will give you a great tanned look, but be careful to keep your palms covered as these will stain too.
All over: Both yoghurt and honey offer gentle exfoliation and moisturising effects. Honey is also an ant-inflammatory, so it’s great for soothing puffy eyes as well. It speeds up your body’s natural exfoliation process and hydrates. The light concentration of lactic acid in yoghurt encourages skin smoothing, so it may just have a positive impact on wrinkles or stretch masks. Cover yourself in natural yoghurt and leave on for 20 minutes before rinsing off with warm water.

To tap in to lemon’s power without the danger, make the following mask: mix a quarter cup each of lemon, apple and grape juice. Dissolve a quarter of a cup of sugar in the juice mix and apply to your face with a cotton ball. Leave for 10 minutes before rinsing off with warm water.
Crush 10 ripe strawberries and mix in two tablespoons of olive oil and three tablespoons of coarse sea salt. Rub all over your feet for five minutes and rinse off.

A LITTLE TOO MUCH
If you’re going to expose your legs and bikini line, it’s not a good idea to let things get too hairy. But, if you’re tired of shaving and don’t like the smell of depilatory creams, here’s a tried and tested home waxing remedy that won’t leave you screaming, red and itchy.
Although you know to cover up with clothing or a CANSA approved sunscreen when you’re outside, it’s not easy to avoid the sun completely. So, if you’ve had a little too much sun, use the following to ease the burn:
Mix together 1 cup of sugar, 2 tablespoons of lemon juice and 2 tablespoons of water. Place in a pot over a relatively high heat and stir while the mixture thickens. Don’t let it get too thick, though.

There are two methods to use for the waxing itself. The first is the paste method: scoop a handful of wax into your hand and roll it into a ball. Once the wax is slightly opaque, roll it over the area you want to wax, in the direction of your hair growth. The other method, slightly painful, is to spread a thin layer of wax over the area primed for hair removal and using a cotton cloth, pull the wax off, pulling the hairs along with it. Another good home recipe is using plain yoghurt and chickpea flour. Mix equal proportions of the ingredients to create a paste and apply to the area where you want hair removed. Leave the paste to dry, for around 15-20 minutes. Using your hand, rub your skin in the opposite direction to your hair’s growth pattern and rinse thoroughly. Follow up with a good moisturiser. This isn’t a quick fix, you’ll need to do repeat this three times a week for around 12 weeks, but thereafter, hair growth will be inhibited and you’ll need to do it less often.

Yoghurt seems to be the ultimate summer ingredient. It helps to cool sunburn and hydrate your skin – smear it over the burn and leave until it warms.

Apple cider vinegar cools and soothes burnt skin – keep some in your fridge in a spray bottle, fragrance it with a little lavender oil.
ON TOP As your skin can become damaged by the sun, so can your hair. If you’ve spent a lot of time in the water and outside, use the following for a great hydrating hair mask: Massage about half a cup of honey into clean, damp hair and leave it for about 20 minutes before rinsing with warm water. To loosen the sticky honey, add 1-2 tablespoons of olive oil before rinsing. If your hair is extremely sun-damaged, mix crushed avocado or egg yolk to the honey, this will help replenish the keratin protein bonds.
