Golden Pheasant Inn


The Washington Crossing Inn adjacent to the spot where General George Washington assembled his troops before the historic crossing of the Delaware River and is likely where Washington dined before the crossing. The McConkeys, who owned the inn at the time, were instrumental in helping the Continental Army with its daring strategy. Diners can now experience fine dining under a lush canopy of trees intimately nestled next to their Secret Garden. The Golden Pheasant Inn resides on land where Colonel Arthur Erwin, best known for his role in assisting Washington cross the Delaware in 1776, owned before his death in 1791. When the “tavern� was built in 1857, it served as a social hub for area farmers, iron workers and canal men traveling along the river road. Today, it is an architectural beauty serving fresh local ingredients along the Delaware Canal. Since the summer of 1811, Spinnerstown Hotel Restaurant & Tap Room served as an important resting place for travelers between Philadelphia and New York. Once sold as part of a land grant from the estate of William Penn, it has since retained its position as an Upper Bucks County landmark and offers innovative cuisine and an impressive beer list. JOSE GARCES: Taking the Kitchen Countryside

The James Beard Award winner and Iron Chef champion is bringing his culinary skills out of Philly and into New Hope. We sat down with the Latin chef to get to the roots of Luna Farm and his Bucks County restaurant opening later this year inside the Playhouse Inn ...

What drew you to the greater Philadelphia region? After professionally cooking in New York City for five years, I knew that I wanted a change of scenery. I was cooking for a chef named Douglas Rodriguez there who had a couple of Latin restaurants. He had an opportunity to open a Philadelphia restaurant with Stephen Starr — Alma de Cuba. He chose me to come with him. That was my first Executive Chef position; my first time running the show, being my own man in the restaurant. A couple years later I opened El Vez with Starr. I started to gain a following, and that following drew me to stay and open my own place: Amada, a Spanish tapas restaurant in 2005. Along the way I got married, had two beautiful kids, and decided this region was a great place to raise our family and enjoy the fruits of our work.

How did you end up deciding on Ottsville to start Luna Farm? I was always interested in how our food got to our restaurants’ back door. It drew me towards farming. I noticed there was a beautiful state park nearby, Nockamixon, and I’m an avid outdoors person. I love to mountain bike, stand-up paddleboard, hike, and be active with my kids. Everyone in the area who knew I was looking for a farm kept saying, “Hey, you should really go check out Bucks County.” It became evident that this was a beautiful place; an oasis just an hour away from Philadelphia. We found a 39-acre farm and from day one coming onto the property I fell in love with it.

What was your inspiration for the name Luna?

Luna is our English Bulldog who was born a year before we bought the farm in 2010. She loved the farm (a lot more than city living!). At the same time, we noticed these beautiful crimson moons just off of our back deck. It was special, that glow that you would see come onto the farm. Luna in Spanish means moon. The name Luna Farm has a double meaning and signifies the love I have for our family, including our family pet, and the appreciation for the natural, beautiful landscape that exists in Bucks County.

Where are some of your favorite places to dine when you’re in Bucks County?

For Italian specialties, my go-to is Luberto’s. It’s like a jewel in the middle of Pipersville! I pick up their fresh mozzarella, mortadella, prosciutto, baguettes, olive oil, and some of their imported pasta from Italy. It’s one of my kids’ favorite lunches. I griddle the ingredients into sandwiches and it’s like, ‘oh, we’re here.’ It’s one of my kids’ favorite lunches. I’ve actually had them cater some things to me in the past as well. The Ottsville Inn is my other go-to Italian spot. And Brig O’Doon’s Coffee House does a great job and has an amazing product. I get the Jamaician Me Crazy, they have some quiches there and great bagels.

How did your culinary expansion into the countryside come about? We had hosted a farm-to-table dinner at Luna Farm for a select group and one of the representatives for the Bucks County Playhouse was there. They said they wanted to redo the Inn and would love to have it include one of my restaurants. It was just a casual conversation, but then I went to see the space in New Hope. We had recently started our catering and events company, and I believed there was a need for another great events space there. Playhouse Inn Rendering

What can tourists and locals expect from your new restaurant inside the Playhouse Inn in New Hope? The restaurant will be smaller in size and geared towards catered private events and weddings because of the beautiful river views. New Hope is a destination, it’s a great place for people to visit, not only from Philadelphia but from anywhere in the region. The events space will seat 150 people and the restaurant 50 to 90, depending on the season because we’ll have a pretty big outdoor space. Cuisine-wise, you can expect fresh seafood — oysters, raw bar, crab cakes, a great burger, lobster rolls, that sort of thing. It’s loosely emulated off of our Philly restaurant, The Olde Bar. Being on the river, being outdoors during the summer and having some great raw bar food and a cold beer, hanging out and enjoying the scenery is what it’s all about. For the full interview, go to

Roots to River Farm


Malaika Spencer isn’t afraid to get her hands dirty. The Yardley native explains to us the science and success behind farming in Bucks County‌

How did you get started in farming? I started with an organic farming program offered at my high school and fell in love with working outdoors. I would work on farms in the summer in Bucks County and Central N.J., and then travel with World Wide Opportunities on Organic Farms (WWOOF) to Mexico and Costa Rica. I studied Sustainable Agriculture at Hampshire College in Massachusetts where I learned about soil science, plant biology, and explored the depths of our unsustainable food system. It was at this time I started working in kitchens and cooking my own food and realized how much better fresh farm food tasted. From there, I started a small sustainable agriculture farm in the Poconos, before making my way back to Bucks County to start Roots to River Farm in 2013.

What’s your favorite thing about farming? Working outside with my hands, working closely with others on a common mission, eating food straight from the fields, being able to provide real food that nourishes our neighbors. The thing that makes me tear up the most is when new parents tell me the first thing their babies eat is food from our farm - there is nothing more special than that! Roots to River Farm

What makes Bucks County an ideal place to grow produce? Bucks County has great agricultural soils for growing flavorful produce (I know Jersey tomatoes are great, but I think Bucks County grown tomatoes are the best tasting!). We also have a growing market of people interested in local produce here. “Organic agriculture” is food grown with production methods that do not include synthetic chemicals such as herbicides, petroleum-based pesticides and fungicides. On Roots to River Farm, we take it much further than that, including a healthy rotation and resting of land, cover cropping in between cash crops, using and maintaining habitat for beneficial insects and designing our farm to reduce erosion and conserve soil biology.

Why do you think people enjoy knowing where their food comes from? We’ve become so distant from our food sources. People can go their whole lives and never see how a tomato grows or what a pepper plant looks like. When you become more connected with where your food comes from, you can start asking questions about how it was grown, who are the people who grow it, how long did it take to get from the field to my plate? You can start making better decisions about what you eat and who you’d like to support with your food dollars. Buying from local farms means keeping your dollars in your community. It also means getting fresher, better tasting and more sustainably grown products. By supporting local farms, you are supporting the stewardship of the region you live in and reaping the benefits of that investment for you and future generations.

Can you explain more about what a Community Supported Agriculture (CSA) program does? A CSA is a unique arrangement between consumers and farmers. By purchasing a membership to a farm, community members share in the benefits and risks of local food production, usually on a specific farm. In return, they receive a weekly share of vegetables, plus a meaningful connection to their food, the land where it is grown and the people who grow it. Roots to River Farm
