The festival is a celebration of cuisine from around the world and an opportunity to experience new tastes and flavours. There will be over 30 food stalls with dishes to sample and enjoy, inspiration for everyone, from the novice cook to the foodie. We will be cooking up a storm on the Cooking Demonstration stage, with the fantastic Frances Quinn, winner of Great British Bake Off enthusing you with her creative skills and ideas. Since she was crowned champion she has been inundated with commissions for clients from the Tate to illustrator Quentin Blake and Nike to name but a few. In 2015 she released her first book Quinntessential Baking with Bloomsbury.

What’s on stage The Swanvesta Social Club
Easydread
The Swanvesta Social Club is the UK’s number one Anglo Cuban band. They are from the Latin Quarter of St Albans known as “El Campo” or “The Camp”.
Easydread combine sounds drawn from a wide range of influences, from Rock to rap, soul to ska. As they seamlessly blend powerful political imagery with sweet harmonies and heavy grooves Easydread will get you thinking as well as skanking. Since forming in 2013 Easydread have been busy playing festivals like One Love Reggae Festival, The Bulldog Bash, Equinox, Alchemy Festival, as well as supporting bands/acts such as General Levy, Dub Pistols, Gentleman’s Dub Club, Kuenta I Tambu, The Voodoo Glow Skulls, Mr Woodnote and Dreadzone and were a crowd favourite at last year’s World Food Festival in Welwyn Garden City. You can catch Easydread on the World Music Stage at 4.30pm, we dare you not to move to their rhythm!

They have released three albums: “Never Mind the Bongos”, “The inauthentic sound of Cuba” and “Live from the Latin Quarter” (available from Amazon and itunes). They have twice topped the Soundclick World Cuban Charts. Their music mingles traditional Latin numbers such as Guantanamera, their original tracks and interpretations of pop songs in Cuban styles including “Cars”and “The Final Countdown”. Sophie Lotinga is currently a year 10 student at Dame Alice Owen’s School, taking Food Technology as one of her GCSEs.
Sophie has always enjoyed trying food from other countries, taking an interest in creation and presentation of dishes. Due to family ties with Japan she has an interest in Japanese food which has encouraged her to experiment with her cooking and take pride in presentation. Although Sophie loves all types of cooking she has a particular passion for desserts,

Her love for cake decorating harks back to her early years, and often gets asked to make special occasion cakes for friends. At the age of 11 she was a judge on the television show ‘The Munch Box’ and last year she was winner in the School ‘Bake Off’. This success and encouragement from her teacher gave her the confidence to enter the Oaklands Young Chef of the Year competition. Sophie took the competition crown after creating her winning recipe in a timed session in the kitchens of the college’s restaurant before facing the judges. With 26 young hopefuls keen to impress, judges had an exceptionally tough judging session in this year’s competition.
Sophie’s winning recipe White Chocolate Mint Mousse with Tuile Biscuits Ingredients & method
White chocolate mousse 250g white chocolate 250ml double cream 1 egg white ½ teaspoon peppermint extract Fresh mint leaves • Put the white chocolate into a heatproof bowl over a pan of simmering water. When the chocolate has melted stand the bowl on a cold surface to cool down a little. • In another bowl whip the cream, egg white & peppermint extract together. Until soft peaks (not stiff). • Put a dollop of cream onto the slightly cooled melted chocolate & mix then fold the chocolate mixture into the cream.

Divide mixture into glasses and chill in fridge or put on freezer for 20 - 30
Tuiles 115g unsalted butter 140g icing sugar 3 egg whites 115g plain flour • Preheat oven to 200oc/400oF/Gas mark 6. • Cream the butter & sugar together. Slowly add the egg whites to the mix & then fold in the flour at the end. • Place the template on a baking tray lined with a non-stick baking mat. Spread the mix very thinly over the hole with a palette knife, the lift off the template, leaving a perfect shape. • Bake in over for 4-5 minutes (until lightly colored around the edges. Leave to cool

Business Improvement District (BID)
In October 2016, Welwyn Garden City businesses voted in favour of setting up a Business Improvement District (BID) for the town centre. The BID will see businesses investing £1.5 million in the area over the next five years and came into operation on the 1st April 2017. The BID will focus on encouraging people to visit the town centre more often, staying longer and investing more in the local economy. Here are a few objectives the BID will deliver: ■■ Uniformed ‘WGC Ambassadors’ to welcome visitors and provide support to businesses ■■ Improve the parking experience by influencing tariffs, availability, signage and access to car parks ■■ A way finding signage scheme for the town and to improve pedestrian flow between the different areas

■■ More regular events and markets to create an animated feel to the town and raise its profile ■■ Town centre Wi-Fi access and footfall counters ■■ A distinctive Welwyn Garden City identity and brand to be used for promoting the town centre ■■ Support floral displays, public art and festive lighting to improve the appearance of the streets The new BID will be led and driven by the businesses themselves and this funding and commitment of collaboration will enable us to build on the town centre’s unique strengths and assets.
