T
he Lake Chelan AVA is distinguished by a significant “lake effect” that creates mild and favorable temperatures for surrounding areas, resulting in a longer growing season and a reduced risk of frost. You can taste the efficiency of our winter, the quick thaw of spring, our intense summers and a gorgeous harvest in a glass of Lake Chelan AVA wine. Grapes have been grown in the Chelan Valley since before the turn of the 20th
century. Today there are more than 30 wineries and tasting rooms around the lake. Each offers a unique and special experience for wine lovers. What makes the Lake Chelan American Viticulture Area (AVA) so unique in geological terms is that our soil is relatively young with volcanic pumice on top of a glacially aged scape. It’s the kind of soil vines love to struggle in under the blanket of hot summer days and cool summer nights.

7. TSILLAN CELLARS Week 1: 2017 Estate Piccolo Rosso paired with Risotto Risotto served with bacon, portabella mushrooms, roasted plum tomatoes and Parmesan and finished with chive oil. Week 2: 2019 Estate Nudo Chardonnay paired Crab & Artichoke Dip Red Crab, artichoke hearts, cream cheese, mayo, onions, spice, Gruyère and Parmesan, oven baked until hot and creamy served with hot, fresh baguette. Week 3: 2018 Estate Syrah paired with French Dip Sandwich House slow roasted New York striploin, Gruyère cheese, French hoagie, au jus, choice of Kettle brand seas salt potato chips or Caesar salad. Week 4 (March 22-28): Red Blends & Family Recipes Wine: 2013 One Exception Red Wine and 2015 One Red Wine Recipe: RACK OF LAMB WITH CABERNET SAUCE DIRECTIONS • Heat oven to 425. • Mix together seasoning ingredients in a bowl.
• Heat olive oil in a large skillet to medium. • If you like you can trim some fat from the racks. You also can slice them in half for smaller racks. Sprinkle seasoning on each rack. • Sear each rack on all sides until browned (2-4 minutes tops). Put racks into a roasting pan and bake for 15 minutes to 130 degrees (for medium) or 20 minutes for a light pink medium well. When the lamb is done, take it out of the oven and cover pan with foil and let lamb sit for 10 minutes. • While lamb is cooking, make cabernet sauce by melting butter in the searing skillet (do NOT wash out the skillet -- you want the cooked bits of lamb or “fond” in there for flavor). When melted add flour and cook for a minute or so. Stir in other ingredients starting with the wine and beef broth, then simmer for a bit to reduce the liquid. You can add a bit of cornstarch if you want it thicker. • When everything is ready you can cut the racks into 2 bone chops or leave it whole depending on your presentation. Serve with cab sauce on the side. The cab sauce is also great on mashed potatoes.
