OW THAT THE EXCITEMENT of winning the Rugby World Cup has simmered down, it feels apt to confess that I have not always been a fan of the sport. In fact, I have a long and complicated relationship with it. My grandfather, Charles Newham, was the coach for the Transvaal rugby team and manager of the Springboks in the 1950s. His son (my father) inherited his passion for the game and was a committed rugby player and a very enthusiastic rugby watcher. My childhood was spent hearing the man I love turn into a terrifying and raging lunatic in front of any game where the Springboks were deemed not to be up to scratch or where the ref was being a twit. His passion, which felt more like his life depended on it, permeated our home. Inconveniently for my father he married a writer and a poet (my mother) whose delicate sensibilities did not allow her to truly ever appreciate his passion. The story goes that the first time she went to watch my father play a match at the age of 19, she sat in the stands ensconced in a book. A commotion on the field was the only thing that could tear her away from her novel and when she looked up, she saw my father being carried off on a stretcher. He’d broken his collar bone. She never went to watch him play again. During screened matches she’d make herself scarce, and as much as his passion for the sport infused our home, so too did my mother’s disdain for it. It was only after my firstborn son arrived home from school, his eyes wild with excitement at the discovery of the most exciting game he’d ever played (he’d already tried swimming, cricket, karate and soccer) that I realised the rogue rugby gene had re-emerged and that I’d have to face the sport head on. I have since spent many a winter morning standing on the sidelines of a school rugby pitch and, like my father before me, often been the one to leap around and yell the loudest. I have read Victor Matfield’s autobiography out loud (to my son) and sent handmade cards to Patrick Lambie (from my son). Over time I’ve developed a newfound appreciation for the sport I’ve so long avoided. Earlier this year when winning the Rugby World Cup was still only a dream,

I visited Paris. Though not there for the rugby, I did get to walk down the ChampsElysées, which had been turned into a car-free fan walk culminating in a screening of the matches right next to the Arc de Triomphe, on a Sunday afternoon. And, of course, like the rest of South Africa, I held my breath during the quarterfinals, then the semi-finals and then the finals as we refused to lose, worrying all the while that neither my father’s nor my mother’s hearts were strong enough to survive this. In this issue we raise a glass to South Africa, which continues to surprise and inspire us. See ‘Taste of the Stars’ on page 52 for champagne suggestions. You can also feast your eyes on the beautiful artworks of South African artist Zanele Maholi in ‘The Alchemy of Seeing’ (page 28). Currently, her bronze figures have found a home in the Tuileries Garden in Paris. We also take to the streets of Paris itself to discover a world poised to stir the emotions in ‘City of the Senses’ (page 64). London’s burgeoning Battersea Power Station development is home to the newest branch of tashas, the beloved South African restaurant group known for its unpretentious, freshly-prepared comfort food served in aesthetically comforting spaces. ‘I feel like we now have the right team and processes in place to be a part of London’s incredible food scene,’ says Natasha Sideris, who opened her first tashas in Atholl, Johannesburg, in 2005. The group has in recent years made successful inroads into the Middle East and continues to expand at home. ‘London is a very big step for us, one that we’ve contemplated for a long time.’ Sideris says she has ‘something of a gut feel’ for what will work – and where. She regards Battersea as having found London’s sweet spot, a prize location. ‘When looking for new sites, we search for those close to a city centre or a hub with a residential clientele,’ she says. ‘We need the housewives, we need the ladies who lunch, we need people who are picking up their kids from school and coming to have a bite to eat. We need the businesspeople as well. Battersea is ideal in that regard. I think it’s less competitive than the rest of London as it is a new development. All the other areas we’d like to go to like Marylebone, Chelsea, Mayfair, the high streets and those types of areas are pretty saturated. ‘We’ve got an unbelievable spot in the precinct, too, next to the biggest Zara in London. It’s an iconic building and we’re near one of the main entrances to the development. I don’t think you can get any better.’ And as much as it’s a new food audience, the bones of the London store are unmistakably ‘tashas’, its design an update of the look and feel of the Atholl original: dark chocolate-coloured timber walls, intricate mosaic tiles on the floor, marble and brass accents throughout, high-gloss textured stucco walls, sculptural pieces by Cape Town foundry Bronze Age, and a delicate paper installation by Elonah O’Neil. You might feel as though you’ve stepped inside a cappuccino. Foodwise, it’s a mix of classic ‘fan favourites’ and new dishes developed for London, plus an entirely fresh beverage menu with options ranging from matcha-infused health drinks to boozy cocktails, something to match the multiple moods of its all-day dining concept. What’s likely to make regulars of Londoners is that honest striving for excellence that Sideris and her brother Savva have made the backbone of their restaurants. ‘I think what people love is our overarching, relentless attention to detail,’ says Sideris. ‘In everything we do, there’s a magical alchemy that our guests really appreciate. Visual activist Zanele Muholi has blazed a trail with photographs and, more recently, bronze sculptures that shine a light on the humanity of some of our nation’s most marginalised people.

T IS IMPOSSIBLE to avoid the gaze. Eyes, like ebony gemstones set against pearl backdrops, glare at you, daring you to look. They are questioning, inviting, provoking you with powerful intensity, urging you into a tantalising staring contest. The eyes belong to Zanele Muholi, the visual activist who uses the singular pronoun ‘they’, and whose portraiture has over two decades become a highpoint of the contemporary art world. At any given moment, Muholi’s work is being shown in at least a dozen spaces around the world. Since debuting in New York’s Yancey Richardson gallery in 2015, Muholi’s ongoing series of portraiture work, Somnyama Ngonyama (isiZulu for ‘Hail the Dark Lioness’) has travelled the globe, their work featuring at Documenta, the Venice Biennale and the São Paulo Biennale. Muholi’s artworks are among collections at the Guggenheim, New York’s Museum of Modern Art and the Tate Modern in London. Muholi is currently the highest-ranked person from the African continent on ArtReview’s annual ‘Power 100’ list of ‘the most influential people in art’, right behind British film director and Oscar winner Sir Steve McQueen. It is no wonder. Muholi’s images, executed in high-process, exaggerated black-and-white, are infused with symbolism and steeped in historic allusion and allegory. While the images stand on their own, they also parody early photographs, often ‘exotic’ images of Black people designed for a colonial gaze. They riff old tropes by ‘borrowing’ certain poses and paraphernalia to comment on certain kinds of racist representation. These self-portraits feature the artist in enormous headdresses, in masks of soot, in turbans and wigs, in blankets, feathers and shells and, sometimes, clad in clothes pegs or other cleaning accessories that acknowledge the artist’s mother, who was a domestic worker. The power is in the depiction - the fictionalised selves are always of an actor – never an object, never someone subjugated by the gaze. While there is a deliberate fierceness, even ferocity, in Muholi’s selfportraits, in person they are softness incarnate. Those eyes – so furious and blazing in their artworks – brim with gentler qualities: personal pain, laughter, vulnerability. Born in the early-1970s, and raised by a single mother, Muholi says their first recollections of photos were often violent ones. ‘My early visual training came from images in the media. In the ’80s, there was a lot of violence, the State of Emergency, a lot of protests – images of people running, being

chased. Those were the images we consumed as youngsters. Those are the images that shaped my life.’ Later, the artist became aware that images of their own community did not exist. ‘I picked up the camera because, at the time when I needed them the most, there were no images that spoke to me as a Black lesbian. At the height of the country’s transformation I needed to see myself. Photography became my therapy, a tool of expression that helped me survive and deal with personal issues.’ Such ‘issues’ have found new expression in Muholi’s latest work; the solo show at Southern Guild at the V&A Warerfront in Cape Town introduced to the public a series of bronze sculptures exploring themes ranging from sexual freedom and inherited taboos, to the ongoing stigmatisation of LGBTQI+ people. Other sculptures continue the artist’s critique of a violent patriarchy.

‘Bambatha’ is Muholi as a little girl entangled by what looks like a giant snake. Asked to talk about it, Muholi is gripped by emotion and explains that the work references numerous instances of women being butchered, dismembered, violated. It is a threedimensional representation of Muholi’s own trauma in response to such tragedies. One sculpture is ‘Umphathi’ (‘The One Who Carries’), a largescale uterus – a ‘self-portrait of being’, according to Muholi. ‘The uterus is my DNA, where I come from; it is the rite of passage that is common to all of us regardless of race, class, gender. It is a common space: you are born from someone, you come from that passage. Whether you are rich or poor, the womb becomes the original leveller. The uterus is my signature.’ It is an explicit attempt to provoke conversation, to bring the perplexity of the female anatomy into the open, particularly in an environment dominated by patriarchal, colonial and often patronising language. ‘These pieces are autobiographical,’ Muholi says. ‘They are just about my life, my body. I’m talking about things that are never said and also about what may be uncomfortable. Stories we don’t hear.’ Muholi’s sculpture series The Politics of Black Silhouettes (2023) was on display at the Tuileries Gardens for Paris+ par Art Basel art fair week in late October 2023. Muholi says that it is because of all the untold stories, unheard voices and unseen people that they feel such an urgent need to produce work; Muholi remains first and foremost an activist, driven by a deep desire to create work that heals, that contributes to the cause of humanity. ‘This is why I take my camera everywhere, why I work all the time. Because sometimes I get this sense that I haven’t even started, and there is still so much work to be done.’ 

backs to the setting sun, moments from its disappearing act into the ocean. ‘We tasked Anya with creating an easy-living bungalow, knowing she’d approach its design with her flair for understanding the balance of natural materials, light, and a joyful lightness of being. We knew what we didn’t want - and that was another massive, ego-plumping and overbearing beach house.’ Given the neighbourhood’s zoning scheme, with its severe restrictions applicable to both design and construction intended to preserve the precinct’s architectural and community ethos, a massive house was never likely. More so given that once the dark and dilapidated original bungalow that stood on the site had been demolished, building space equalled an area of 140m2. ‘We were permitted to add another level to our proposed design, as the property is backed by bush,’ says the homeowner, for whom the bungalow is a second property, and one that’s available for short-term rentals when unoccupied. And yet, given its clever design, the compact space never feels restrictive. ‘One can see the beach from the moment you step through the front door – the living area’s seamless flow draws your eye out to the pool deck, garden and beach beyond.’ Walls of glass, windows, skylights and portholes connect areas and rooms within the bungalow to one another and open them to views not only of the beach, but also to glimpses of Lion’s Head.

This same sense of place was a key consideration when it came to furnishing and decorating the home. Colourful local art and craft speak of the owners’ appreciation of South African creativity and populate all corners of the bungalow. From Conrad Botes bathroom cabinets (complete with hand-painted tattooed mermaids) to a Laurie Wiid van Heerden bench painted by Lionel Smit in the media room, from a green all-seeing monster sculpted by Frank van Reenen to a James Mudge dining table (both in the open-plan living space), you need not look far to notice an underlying playfulness to the home’s interior. ‘Each piece invokes a special memory for me and is an invitation to remember that play is essential to life,’ the homeowner explains, pointing out several artworks. ‘Barend de Wet’s welded steel hanging sculpture in the living room reminds us how lucky we are to live on such a beautiful coastline, while Sanell Aggenbach’s bronze ‘Pieta’ near the fireplace that family is what matters.’ As thought-provoking and evocative as the interiors are, in the summer months, outside is where the magic happens. Slide open the living space’s walls of glass, and the bungalow spills out onto a deck complete with hammock, loungers and heated pool. To the background soundtrack of breaking surf, see-and-be-seen beachgoers and ‘lolly-to-make-you-jolly’ ice-cream vendors, this outdoor entertainment space – along with the two-tiered garden beyond – is where the homeowners are most reminded of how holidays should feel.

GREAT BEASTS What to do with 2 000 rhinos that nobody wants? This is the conundrum property tycoon John Hume recently found himself in.

T’S A CAUTIONARY TALE. Thirty years ago, property tycoon John Hume bet the bank on farming rhino. By 2023, he owned almost 2000 – between 8 and 15% of the world’s total population – and some 10 tonnes of horn. Rhino horns can be harvested every two to three years – like shearing sheep, the pro-trade argument goes. With the average 2022 wholesale price of raw African rhino horn in South Africa on the black market at R142 000/kg (Wildlife Justice Commission report), harvesting a potential 3kg spread over three years could rake in an estimated R47 333/year per animal.

Pro-trade arguments set forth by the Private Rhino Owners Association appear pretty cogent. Flood the market and drop the price. Create a commercial value for live rhino (citing the explosion in crocodile numbers when the decision was made in the 1960s to farm them). Contribute taxes to SARS and funnel these back into conservation. If the ban – imposed in 1977, when there were 29 rhino range states – actually worked, why are there now only five left with viable rhino populations? Conservationists counter this with equally strong points: South Africa’s rhino population grew exponentially after the ban,

peaking at around 20 000 in 2012; even with huge poaching losses, the number currently stands at an estimated 15 900. Legal trade will reverse the progress made in demand reduction. The subsequent increase in demand could outstrip legal supply. Farmed horn will likely be seen as inferior (plausible, given that consumers will pay eight times more for rarer Asian-sourced horn). And the ease with which the black market can ‘launder’ poached horns will incentivise more poaching, as was the case with elephant poaching after a one-time legal sale of ivory in 2008. This ‘bleeding’ of stock incidentally happens both ways – at least 18% of illegal rhino horn seizures over the past decade are from legal stockpiles; including 181 from Hume’s. Regardless, it is the Convention for International Trade in Endangered Species (CITES) that determines what member nations can do, and with CITES having zero interest in legalising trade, Hume finally ran out of cash. On 26 April 2023 he put his entire operation on auction. And received not a single bid. ‘When African Parks was approached to help find a conservation solution for these rhino, we felt we had a moral imperative to step in, given our unique position,’ says Jean Labuschagne, Director of Conservation Development at African Parks. Founded in 2000, African Parks co-manages 22 conservation areas with governments and local communities. Labuschagne, who has signed on seven of these, explains that over 20 million hectares across 12 countries now fall under their ambit, the largest portfolio of protected areas managed by any one NGO on the continent.

‘African Parks is not about saving any specific species. It is about good land management and stewardship, successfully and holistically conserving multiple large landscapes that benefit all species in that system. ‘Part of this is conducting translocations and reintroductions, and with 20 years’ experience, we are – along with the support and input of key stakeholders – well-placed to carry out this ambitious rewilding project.’ According to Donovan Jooste, African Parks’s Rhino Rewilding Project Manager, all the rhinos will be rewilded within 10 years. ‘We are currently working with experts to create a stringent criteria framework to identify the most suitable protected areas, and hope to complete the first translocation by June 2024.’ Hume may have lost his punt, but the final outcome of his project has been a win for conservation. By not only growing the population but ensuring their genetic diversity, and successfully protecting them from poachers, the man most condemned for his commercially-minded interests may one day be hailed as an accidental conservation hero. 

Restrained too is Bell And Ross’s latest BR 03, the Black Steel. It’s slimmer, with a case size down from 42mm to 41mm, the lugs shrunk by 0.5mm. The French watch is still instantly identifiable of course, and wholly masculine, the iconic circle in a square with four screws motif a stand-out design. Minimalism is Nomos Glashütte’s raison d’etre and the Original Orion Neomatik 41 Date rates as one of the season’s most pared-down, neatest watches. It doesn’t come as any great surprise to discover that Nomos is German; there’s a simplicity that suggests extreme order, much loved by the maison. Note the slivers of gold as indices, which seem to lend the watch a contemporary edge, even though the 175-year old company specialises in vintage looks. If the clean Nomos is a step too far, Tudor’s Royal walks a careful path between understated and extrovert. The integrated metal bracelet and notched or diamond-set bezel suggest sober restraint, yet the new salmon and chocolate brown dials offer an unexpected twist. Tudor has added applied Roman numeral hour markers as well, and for the high-flyers there’s the option of eight diamond-set hour markers. Tradition is what Cartier are best at, and the latest Cartier Tank, the Cintrée Platinum, accents the past while presenting a wholly contemporary face. Cartier even has a name for the approach: Les Rééditions de Cartier – a new take on an established icon. Cintrée is the latest, almost a dress watch, elegant, simple, classic, with just the material (platinum) setting it apart from the watches of yore. That and the movement of course, Cartier’s lauded Calibre 9780 MC movement. Jaeger-LeCoultre is just as good at accenting the past. In 2018 it revived its iconic Polaris model to much fanfare. Now the latest 42mm Polaris Chronograph takes it further, offering a rubber strap with an interchangeable steel bracelet, two looks in one. The complex triple-level dial gets 40 layers of varnish to achieve its exquisite depth of field.

ALFA 33 STRADALE (1967 ALFA ROMEO 33 STRADALE) It’s generally accepted that the golden era of automotive design was the two decades following World War II. And in that time, no designer was as celebrated as the one-time aeronautical engineer Franco Scaglione. The Florentine’s designs have stood the test of time, with cars such as the Lancia Aurelia, Jaguar XK150 and Alfa Romeo Giulietta Sprint fetching astronomical sums at auction today. Chief among the icons was the 1967 Alfa Romeo 33 Stradale, a car deemed so beautiful Sophia Loren declared it ‘perfection’. It was a car of firsts – the first real supercar, the first to feature butterfly doors, the first to use curved window glass that reached into the roof. It was fast, furious and glorious. Half a century later, Alfa, eager to highlight their ‘Mechanics of Emotion’ tagline, announced they would be reviving the Stradale name. Sceptics scoffed; after all, Alfa has been trying to reinvigorate itself for decades, desperate to rekindle that sense of 1960’s la dolce vita. But naysayers had to eat their words. When Alfa’s Jean-Philippe Imparato took the proverbial covers off the

Franco Scaglione’s 1967 design icon, the 33 Stradale, was the inspiration for Alejandro Mesonero-Romanos’ latest iteration. Only 33 will be made, and are likely to fetch in the region of R34 million. There are two powertrains, a 3.0-litre twin-turbocharged V6 or a fully electric version.

33 Stradale in August this year, the world gasped. Finally, here was a car the Alfisti could rally behind. Bottega, a special Alfa design team, had been tasked with turning the past into the future. Job done – the new Stradale has already won accolades as the most beautiful car in the world. It is also something of a curiosity: it is Alfa’s final internal combustion engine supercar. From now on, the Italian marque, owned by the Stellantis Group, will focus on electric machines. Only 33 Stradales will be made, costing R34 million apiece, easily the most expensive Alfa ever made. There are two powertrains: a 3.0-litre twinturbocharged V6 or a fully electric version. No prizes for guessing which is the most popular...

The latest AMG GT from Mercedes-Benz trades in lust, just as its inspiration, the 300SL Gullwing did in 1954. The AMG GT 63 gets the fire-breathing V8, likely its last outing before being consigned to history.

MERCEDES-BENZ AMG GT (1954 MERCEDES-BENZ 300SL GULLWING) Another swansong – allegedly – for Mercedes-Benz. This time it’s an engine, the fire-breathing V8. It will do final service in the soon-to-be released Mercedes-Benz AMG GT 63, itself something of an anachronism in an electric world. Engine aside, the new car’s main talking point is its retro design, Mercedes-Benz clearly harking back to an era when style, grace and elegance were the bywords for GT cars. It’s the coupe version of sister car SL, recently launched and equally nostalgic in design. The historical inspiration for both is Stuttgart’s celebrated icon, the 1954 Mercedes-Benz 300SL Gullwing Coupe. The Gullwing is one of only a handful of cars that non-petrolheads can identify at a hundred paces and it makes sense for Mercedes to accent its celebrity. Friedrich Geiger’s original was a sensation when it was launched at

the 1954 New York International Auto Show, utterly new and revolutionary. Its heavenly doors made all the front pages but there were other quirks, such as a folding steering wheel for easy ingress and an eye-watering price tag (it was easily the most expensive coupe of its day). In comparison, the new AMG GT 63 will seem like chump change at R3.6 million. Car design is, and will always be, a harbinger of wider fashion trends across the world. The current emphasis on yesteryear reflects a desire for a simpler, less complicated world. Expect couture, art and architecture to follow suit soon enough. 

HETHER IT’S THE EXCITING SIGH of the cork being dislodged, the tickle of small bubbles on the mouth, or simply the luxurious taste, champagne has long been the drink of choice for those who relish life’s finest moments. Champagne sales are expected to reach 314 million bottles (the number being shipped from Champagne) for 2023, according to French industry group Comité Champagne. While the biggest markets are the US, UK and Japan, here at home, French champagne continues to be seen as the hallmark of excellence. HOUSE OF TELMONT With a heritage dating back to 1912, and a home rooted in the landscape of Damery in the heart of Champagne, the House of Telmont is a storied cellar that prides itself on both a familial philosophy and a deep respect for nature. Guided by its motto In Nomine Terrae (‘In the Name of Mother Nature’), Telmont has over the past decade worked steadily towards organic conversion and, today, more than 80 percent of the estate’s own vineyards are certified as organic. Telmont’s dedication to sustainability and a lighter carbon footprint is also reflected in the minimalist approach to branding and packaging, and its commitment to renewable energy use in both production and supply chain. A lighter green bottle made largely from recycled glass is adorned with a simple label, with no wasteful cardboard packaging. It’s a forwardthinking philosophy that deserves celebration. VEUVE CLICQUOT 2015 In stark contrast to the ever-reliable character of non-vintage (often labelled NV) champagnes, come the remarkable vintage-specific releases of one of champagne’s most venerable houses. It was Madame Clicquot who, in 1810, created the first vintage champagne, and in the centuries since, her esteemed cellar has declared just 67 years’ worth of ‘vintage’ champagne. One of the finest is 2015. Vintage champagnes are always produced from a single vintage. It’s a way of bearing witness to the vagaries of that season, what nature provided, and what challenges were weathered. It is, therefore, a wine full of character and intrigue, a portal to a year long since past, and a marker of the cellar master’s skill.

A wine for celebration, and cellaring. MOËT & CHANDON NECTAR IMPÉRIAL In a history stretching back nearly three centuries, the house of Moët & Chandon has created a remarkable diversity of champagnes to suit every occasion, from the widely enjoyed Moët Impérial to the remarkable Grand Vintage Collection. But times change, and tastes along with them, so kudos to Moët for leading the way in creating wines that walk the tightrope of complexity and sweetness, catering to a palate that prefers champagne to be rich and luscious, rather than dry and austere. If that sounds like you, the Nectar Impérial is your go-to champagne this summer. As with all the finest champagnes, Moët & Chandon’s Nectar Impérial is a carefully curated assemblage. With fish populations plummeting, mindful consumption of seafood is an objective that a growing number of local chefs are pushing, one fish dish at a time.

ASON KOSMAS MASSAGES the large slab of yellow-

tail tenderly, his skilled chef’s hands caressing it with something like affection. Its oils are all over his fingers, something that doesn’t bother him in the least as he speaks of the meat’s improving textures and flavours intensifying with age, elements that would ultimately add depth to the dishes the fish might star in. Kosmas is tall, a commanding presence at The Pot Luck Club, the Woodstock restaurant where he’s been head chef for almost five years. His piercing eyes are like those of an Arctic fox, his arms crowded with tattoos testifying to the awe he feels for aquatic life: swimming up and down his arms are a cuttlefish, a lionfish, a dusky kob, leopard shark and grouper. There’s a nautilus, an octopus and a turtle, too. And a galjoen, South Africa’s national fish. You might spot Kosmas from your table, gazing out from the open kitchen, tracking diners’ reactions to dishes he’s sent out. It’s a relatively small space as restaurants go, yet it feels expansive. Perhaps it’s a trick of the location. As you glide up in the elevator from The Old Biscuit Mill’s ground level, it’s always a treat arriving to those high-angle 270-degree panoramas showcasing mountains, city, harbour… it’s that ‘all Cape Town’ experience.

Another reason The Pot Luck Club feels so much bigger than its physical dimensions is perhaps the enormity of flavours coaxed onto the plate in that kitchen Kosmas oversees. There are dishes that, once savoured, will never be forgotten. Like the sliders, basically miniature fish burgers, but an easy contender as the ultimate death-row meal. Other instantly memorable dishes? An enthralling ‘taco 2.0’ stacked with line fish and black bean purée. And a simply seared cut of tuna served with tom yum broth. The delivery with smoked fish bone miso and walnut XO is another triumph. While there are perennial favourites, it’s also a place of ongoing renewal and reinvention. Which is where dry-ageing comes in. Kosmas explains that, when he manages to get yellowfin tuna in, the time it spends in the ageing cabinet transforms it into the ocean-born equivalent of Wagyu, that most prized marbled beef.

‘The belly, or otoro, has a high fat content, so we can age it for longer, up to 21 days, and the result is impeccable.’ He wipes his hands, fragrant with fish, on his cloth, and asks one of his chefs to return the yellowtail to its temperature-controlled cabinet, the way you’d return precious jewels to the safe. ‘Of the fish we dabble in, yellowtail is a great one, and can be aged between five and 10 days, resulting in a beautiful, softly textured game fish with a super-clean flavour profile,’ Kosmas said. ‘It melts in your mouth.’ The dabbling is simple enough if done properly. Keeping the fish in a low-temperature, low-humidity environment, reduces moisture content and prevents rotting. ‘Fattier fish age better. Swordfish, which is superfatty and really moist around the loins, ages really well – seven to nine days on the bone with skin on. The result is a firm piece of sword loin that absorbs incredible flavour from the fire.’ He explains that ageing ‘relaxes the protein structure of the meat to give a softer mouthfeel and allows it to cook better over charcoal’. Dry-ageing opens up the scope and scale of what can be done with fish in the kitchen. Among its pioneers is Sydney-based chef Josh Niland, a master of fish butchery, hailed for his nose-to-tail approach to seafood. At his restaurant, Saint Peter, Niland has popularised fish offal, wholefish cookery and dry-ageing; his recipe tome, The Whole Fish Cookbook, punts previously far-fetched recipes such as fish black pudding, swordfish bacon and guanciale made from fish jowls and cheeks. In many ways, Niland has done for whole-fish cooking what Fergus Henderson first did with land-grown animals 30 years ago at St. JOHN in London. Niland’s push for this less wasteful treatment of seafood has helped boost awareness of the fact that less than half of all harvested seafood actually gets eaten by humans. Almost 60% of catch is thrown away or ground into fishmeal; much of that is offal and bones and heads, all of which – save gall bladders – Niland has found uses for. Niland is slightly evangelical, saying that if an animal gets killed, chefs should commit to using the whole thing.

It’s a guiding principle for Kosmas, too. ‘Dry-ageing lengthens the lifespan of the fish out of water so helps prevent it from going off too quickly.’ It means less wastage. Kosmas lives (and cooks) by the motto ‘everything in moderation’. It’s an attitude he says he shares with people he works with. ‘Hopefully more restaurants will start to realise that our oceans aren’t an endless pit of fish. And that we chefs need to be mindful.’ Such mindfulness is spreading. Across town, in the burgeoning East City Precinct, a short distance from where the world’s first hemp high-rise building is nearing completion, former The Pot Luck Club chef Isca Stoltz heads up Galjoen, South Africa’s first restaurant dedicated to local, sustainable seafood. Like Kosmas, Stoltz says her connection with fish is via a bond with the ocean, something that for her was forged during childhood holidays in Mozambique where she remembers seeing piles of shellfish on returning boats and tasting honest, local, catch-of-the-day fish from seafood markets. Strangely, genuinely local seafood can prove elusive in Cape Town. Which prompted Galjoen’s core tenet – hitting permanent pause on imported produce. They’ve denounced Norwegian salmon, eschew Argentinean calamari and sea bass, and buy only from ethical local suppliers and artisanal fishers. It means a more adventurous approach to cooking, a chance to broaden diners’ horizons, introduce them to katonkel and chub mackerel, maybe skipjack tuna, Cape bream and even redlip mullet, known up and down our coast as haarders, but seldom seen in restaurants. The restaurant’s namesake is, however, a nono. Galjoen is on SASSI’s red list, but the idea behind it is to spark conversation about ocean conservation.

Stoltz says Galjoen is firmly in the camp of minimising wastage by utilising as much of the fish as possible. That said, food preparation takes account of diners’ potential fastidiousness. Like Niland’s HQ in Sydney, Galjoen is not a restaurant where the food feels like a dare. Nothing like eyeballs gawking at you, fishy entrails slithering across the table. Instead, greatness is achieved through simplicity. ‘Our food must be true to itself,’ says Stoltz. ‘What you’ll get here are simple, nostalgic flavours: we braai fish over coals, we serve sashimi, we serve tataki, we poach seafood in its own liquid or in a bokkom broth. If you are looking for fine dining and you want me to pipe a fish mousse into a fish mould after it’s undergone sous vide for 16 hours at 35 degrees and then gets sprayed to look like a live fish, you are looking in the wrong spot.’ Stoltz doesn’t think she’s doing anything groundbreaking, but admits that she’s pleasantly challenged to come up with a new menu every month featuring only local seafood. Among those ‘honest, authentic-tasting’ dishes being imagined for this summer, ‘you can expect a curried fish sosatie and roti, abalone broth with seaweed, and stuffed Cape Hope squid’. Does working with fish, thinking about it 24/7, change a person? ‘OMG, yes!’ Stoltz says. ‘I pretty much am a fish now. I wake up in the middle of the night with crazy recipe ideas. I have to write them down or talk about them immediately. My fiancé probably thinks I’m bonkers.’ But bonkers is possibly a good thing. That’s how you make waves, inspire change. After all, it wasn’t by going with the flow that Josh Niland got the world’s leading chefs to sit up and pay attention.

It’s our third day in Paris, brought here for this exact moment – to experience what’s behind the doors of this palatial building. Inside we’re met by another suited man, speaking into an earpiece, who leads us to a large room dimly lit with blue light that brushes the velvet couches. The DJ, her hands holding her headphones, is moving in time to the music. A projection of turquoise and gold swirls in time to the lounge-style beats behind her. Smartly dressed guests huddle in small groups, sipping on tumblers of liquid gold. This is the waiting room.

THE FIVE SENSES We’re here to experience the revealing of the limited release from Johnnie Walker Blue Label: Elusive Umami. With only a few thousand bottles made available to purchase, this finely crafted whisky is a collaboration between two masters of their craft: whiskymaking master blender Emma Walker and creative gastronomist and Michelin-starred Japanese chef Kei Kobayashi. Both masters have achieved firsts in their fields: Emma Walker is the first female master blender in the company’s history since it was founded in 1820, and chef Kobayashi is the first Japanese chef to have earned three Michelin stars in France. the world’s most alluring – and elusive – taste profiles: umami. The flavour, literally meaning ‘delicious’ in Japanese, is a relatively new concept to Western palates, but in essence is associated with a delicious savoury flavour that one can’t get enough of. From the waiting room, small groups move from one tasting room to the next – each room representing the elements of earth, fire, wind and water – to experience a tasting plate exquisitely created by chef Kobayashi to pair with the unique flavours of Elusive Umami whisky. The experience doesn’t disappoint, with each bite and sip evoking the very essence of that hard-to-pindown flavour of umami itself. There’s oyster confit with seawater jelly and caviar; hay-smoked lobster with mushroom fricassee and lobster sauce; spicy karaage free-range chicken; Gorgonzola muesli foam and whisky honey and, finally, tarte au chocolat infused with Johnnie Walker Blue Label Elusive Umami. For Emma Walker getting acquainted with the intensity of the umami flavour was the key to producing the Scotch whisky. To create the blend, the duo handpicked select casks from inland and coastal distilleries that offered unique umami profiles – a true rarity in that only one in 25 000 casks actually succeeds in bringing this elusive character to life. ‘Umami possesses a mysterious quality that ignites our senses, revealing sumptuous taste, complexity and depth,’ says Kobayashi. Explaining his approach to the tasting experience, chef Kobayashi says he sought to elicit an emotion beyond flavour. He says, ‘Think of a forest at dawn, when the scents rise after the rain. It must be a treat for the senses.’ The launch event is just the start of a memorable week designed specifically with this sentiment in mind – Parisian experiences to treat the senses.

A PLACE OF TASTE Unsurpisingly, chef Kobayashi is just one of many chefs who have made their way from around the world to train and work in Paris. Wandile Mabaso from Les Creatifs in Johannesburg is one of our travel companions. Having lived in Paris for two years under the apprenticeship of Alain Ducasse, Wandile provides access to some of the most exclusive eateries Paris has to offer. There’s Sunday lunch at Hôtel Plaza Athénée on the famous avenue Montaigne, the tree-lined boulevard of French fashion. At the hotel’s Michelinstar restaurant, Le Relais Plaza, the waiter stands next to our table and carves slices of tender lamb and Bresse chicken (reputedly the best quality table chicken in the world), then places it on our plates with duck-fat roasted potatoes and a green salad. There’s high tea at Restaurant Le Meurice Alain Ducasse, where we experience the extraordinary desserts of pastry chef Cédric Grolet – freshly-baked madeleines as well as astonishing innovations like the legendary ‘trompe-l’œil’ sculpted fruit. Crack into the carved chocolate and an explosion of fruity flavours erupts. Hôtel Le Meurice, overlooking the Tuileries Garden, is reminiscent of 18th century splendour with chandeliers and ornate tea sets. This is where Queen Victoria stayed, and Pablo Picasso was married here in 1918. A large oil portrait on the wall still bears the scar of a popping champagne cork from Picasso’s happy wedding table. Bob Dylan and Coco Chanel were all frequent guests here. For Salvador Dali, Le Meurice became his second home for more than 30 years, the main restaurant now named after him. For a more casual affair, there’s dinner at Mun on the ChampsÉlysées, which evokes the intoxicating smell of opium dens with

Here you can feast on Baeri caviar, faux filet de Wagyu Miyazaki or tuna tataki, or sit on the verandah with a glass of French champagne against the backdrop of the twinkling Eiffel Tower.

A PLACE OF SCENT Paris is also synonymous with scent, its history with master perfumers dating back to the 1800s. Located in the Opéra Garnier district in Paris, the Musée du Parfum Fragonard offers perfume lovers the opportunity to discover the secrets of perfume making for free. Founded in 1926, Fragonard Parfumerie is a family business with unique traditional French know-how. Here, you can slip into the shoes of an apprentice perfumer by creating your own eau de cologne or peruse the collection of art objects linked to perfumery, ranging from rare pieces from antiquity to those of the 20th century. A visit to L’Occitane is also worthwhile, specifically the one at 86 Champs-Elysées. Here, perfumery L’Occitane and chocolatier Pierre Herme have created a hybrid store offering a dessert bar, a coffee station and a restaurant. Adding an olfactory twist,

A PLACE OF SIGHT Whether it’s marvelling at the Eiffel Tower, Arc de Triomphe or Notre Dame (set to reopen at the end of 2024 after extensive restoration after fire damage), or simply walking the winding cobbled streets of beautiful Montmartre, Paris sights never disappoint. But, arguably, it’s the museums where you can truly feast your eyes. The Louvre with its iconic glass pyramid is home to the Mona Lisa and Venus de Milo and offers art lovers a taste of both ancient and modern pieces. But its Musée D’orsay overlooking the Seine River, that is perhaps the better loved of the two, offering a richer and less tourist-packed experience. Famous for its vast collection of Impressionist paintings, Musée d’Orsay holds the largest number of famous paintings in the world by much beloved painters Monet, Manet, Pissarro, Morisot and Renoir. It is also home to Vincent van Gogh’s self-portrait and ‘The Starry Night‘, and is the perfect way to spend an afternoon. A PLACE OF TOUCH The literary quarter in and around Saint-Germain-de-Prés, rich with bookshops and literary cafés, allows for a natural experience of touch. Flip through pages of iconic novels in bookshops like Shakespeare and Company, reputedly one of the most famous

While cafés like Les Deux Magots and Café de Flore are famous for being frequented by Paris intellectuals, like Descartes, Picasso, Simone de Beauvoir and Trotsky, it’s the quieter, less touristy Les Éditeurs where you can find modern-day publishers and authors negotiating book details. Here, red leather couches and large bookshelves with rows of neatly placed books (5 000 in total) lend this establishment an air of sophistication rather than a stuffy or bookish sentiment. Of course a trip to Paris cannot be complete without shopping and while there’s no shortage of the big luxury brands (a walk down the Champs-Elysées will take you past the storefront displays of Cartier, Omega, Dior and Louis Vuitton), it’s well worth venturing into one of the exclusive shopping malls. At Galeries Lafayette you can run your hands over a Karl Lagerfeld LBD or Cartier handbag or try on a pair of Dior sunglasses. From exceptional ready-to-wear garments to exclusive accessories, the finest luxury houses rub shoulders with niche labels.
