A zesty citrus salad to kickstart the new year

Happy New Year! If you’re anything like me, you might feel like you need a fullbody cleanse just to shake off all the pumpkin spice and peppermint bark still lingering in your system.

After all the holiday indulgence, it’s the perfect time to hit the reset button with lighter, healthier meals. And what better way to start than with citrus? Lucky for us, it’s citrus season! It’s peak season for these tangy, vibrant fruits. They’re at their juiciest and most affordable, making them ideal for a budget-friendly detox. One of my favorite ways to enjoy citrus is in a refreshing winter citrus salad. It’s a simple but satisfying combination of greens, citrus segments and a sweet and tangy vinaigrette that ties it all together. The dressing is a mix of orange juice, honey, a hint of mustard, apple cider vinegar and olive oil. It’s so delicious, so easy to make ahead and keep in the fridge.

To prepare, I cut up a variety of colorful citrus the night before -- blood oranges, grapefruits, mandarins, cara cara oranges or whatever’s on sale -and store them in the fridge. When it’s time to eat, I toss the citrus with greens, fresh mint or parsley, nuts like almonds or pistachios, and a sprinkle of pomegranate seeds. Sometimes I add grilled chicken or fish for a protein boost, but it’s just as delightful on its own or as a side dish.

How to Supreme Fruit for Citrus Salad

For an elegant flair, slice 1/2 inch from the top and bottom of each citrus fruit, then stand them upright on a cutting board. Use a sharp paring knife to carefully slice away the peel and pith, following the curve of the fruit. Cut along each membrane to gently release the citrus sections, known as supremes, for a beautifully refined touch. Squeeze the juice from the leftover citrus membranes into a measuring cup or small bowl to make the vinaigrette, recipe below.

WINTER CITRUS SALAD

Yield: 4 servings

Total Time: 20 minutes

For the Dressing:

4 tablespoons orange or mixed citrus juice

1 lime, juiced and zested

2 tablespoons apple cider vinegar

2 tablespoons honey

1 teaspoon Dijon mustard

1 small clove garlic, minced or pressed

1/4 teaspoon kosher salt

1/4 teaspoon black pepper

1/2 cup extra virgin olive oil

For the Salad:

6 to 8 cups lightly packed mixed greens

2-3 navel oranges (or blood oranges or cara cara oranges), sliced into supremes

1 grapefruit, sliced into supremes

1/2 small red onion, thinly sliced

A handful of fresh mint or parsley, torn 4 tablespoons pistachios (optional)

1/2 cup pomegranate arils (optional)

Grilled chicken or fish (optional)

Make the dressing: In a small bowl or jar, whisk together the orange juice, lime juice, vinegar, honey, Dijon mustard and minced garlic. Season with salt and pepper. While whisking, slowly drizzle in the olive oil. Give it a taste and adjust the seasoning with more salt, pepper or a touch more honey if needed. Yield: approximately 1 1/3 cups.

Assemble the salad: Toss the mixed greens with some of the dressing, then spread them on a platter. Top artistically with citrus, red onion and fresh herbs. Sprinkle with pomegranate arils and pistachios for added crunch.

To serve: Drizzle the dressing over the salad and serve immediately. This salad is colorful, customizable and packed with Vitamin C. It’s a bright, flavorful way to embrace healthier habits and make the most of citrus season. Here’s to a fresh start -- and a New Year!

Altered Furniture

It’s a current trend to buy inexpensive old furniture and alter it into something new. Some people may see this as disrespectful to history, but it’s a practice that has been going on for hundreds of years. Historically, everyday items like furniture and clothing were made to last, handed down for generations and altered to suit changing fashions.

Furniture of the Victorian era (about 1830-1900) came in many styles, all of which were elaborately decorated. Sometimes, earlier furniture in simpler styles like Queen Anne or Chippendale was recarved or had veneers or inlay added to fit newer, fancier fashions. More recently, the reverse has become more common: paint is stripped off or carvings are planed away to suit more modern, simpler tastes.

This secretaire cabinet, which sold at a Bonhams auction in London, is an excellent example of the earlier trend of making furniture more elaborate. It was made around 1830, during the reign of William IV, but the auction catalog’s description included a salesroom notice saying, “the japanned decoration ... is evidently of a later date.” Japanning is a type of painted finish that imitates the lacquer used by artisans in China and Japan. It was often used with gilt and colorful decorations, as shown here. The added decorations may have contributed to the cabinet’s appeal; it sold for 7,650 pounds, or about $9,274.

A: She’s Tika Sumpter, and she honed her acting skills playing Layla Williamson on the ABC soap “One Life to Live” from 2006-2011. She went on to land regular roles on “Gossip Girl,” “Mixedish,” and “The Haves and the Have Nots” before being cast in the hit franchise “Sonic.” Sumpter isn’t the only former soap star in “Sonic 3.” Shemar Moore and Sofia Pernas both got their starts on CBS’s “The Young and the Restless.”

Q: What ever happened to Rob Lowe’s show “9-1-1 Lone Star”? I thought it got really high ratings.

A: Despite being Fox’s second-highest-rated series during the first half of 2023, the RyanMurphy-produced series “9-1-1: Lone Star” was given the axe. Its fifth and final season began airing this past September. The show will return on Jan. 20 for three more weeks before bidding a

approximate age, condition, etc. Look closely at the dial, including the edge, and at the backplate of the movement. A maker’s name or mark, patent date or serial number are helpful details. There are many books about identifying antique clocks; look for them at your library. Once you have identifying information, check price guides like Kovel’s

final farewell. According to an article in Variety, the decision to cancel the series “wasn’t due to lack of enthusiasm for the show. Instead, it was a matter of business logistics.”

According to Murphy, he loved the show, but “the financials just didn’t work. It’s a Disney company that was on a Fox network, and it just was never going to work.”

This mismatch was the result of Disney’s acquisition of 21st Century Fox, which included the 20th Century Fox film and TV studios but excluded the Fox network. “The arrangement was less than ideal,” according to Variety.

The announcement was another blow for Lowe in 2024, whose other series “Unstable,” a comedy on Netflix costarring his son, John Owen Lowe, was also canceled. Fortunately, he has a new pet project to focus on, a possible sequel to the ‘80s classic “St. Elmo’s Fire.” Interest began stirring among its cast members, including Demi Moore, after the airing of the Hulu documentary “Brats.” The process has been slow so far, but Lowe says it’s because they’re searching for the right script.

Q: When is the “Georgie & Mandy” sitcom coming back? I know that like most shows, it’s taking a break during the holidays, but I hope it’s not a long one. -- J.W.

A: The “Young Sheldon” spin-off sitcom “Georgie & Mandy’s First Marriage” will return to CBS with new episodes beginning Jan. 30. With February being a big ratings “sweeps” month, look for some of your favorite “Sheldon” cast members to appear, including Georgie’s mom, Mary, played by Zoe Perry, and Pastor Jeff, played by Matt Hobby. So far, Sheldon himself (Iain Armitage) hasn’t returned, but perhaps they could be saving it for the season finale. The show is a hit, so there will be plenty of opportunities in future seasons for some of the core “Sheldon” cast to pop up as guest stars or recurring characters. Butler’s just completed the black comedy “Eddington” with Pedro Pascal and Emma Stone. He is now shooting the crime thriller “Caught Stealing” with Zoë Kravitz, Regina King, Matt Smith, Liev Schreiber and Bad Bunny. Kravitz (Catwoman in “The Batman,” opposite Robert Pattinson) recently directed “Blink Twice,” with her ex-paramour Channing Tatum, plus Christian Slater, Simon Rex, Kyle MacLachlan and Geena Davis. It opened in late August 2024 and grossed a modest $46.4 million against its $20 million cost. “The Batman 2,” again with Pattinson, is now slated for 2027. “The Batman” (2022) cost $200 million and grossed $773 million.

Last week I shared three of my favorite salad recipes to welcome the New Year, and this week I am adding a new favorite to that list.

This Cool and Crunchy Winter Salad features a unique medley of ingredients chosen for their bright and crisp flavors and easy availability no matter the season. A refreshing minty vinaigrette adds a cool finish to the salad and pulls all the flavors together.

Light, fresh and delicious, this salad is the essence of “clean eating.”

There are just five main ingredients needed to make this chopped salad, all chosen for their crisp nature and contrasting flavors. For the greens, I combine one full bunch of celery with one head of Romaine lettuce. Both ingredients bring terrific freshness and texture to the salad that belies their neutral flavor.

Juicy red grapes add color and a wonderful touch of crispy sweetness to the salad to balance the tangy dressing. A handful of pecans and finely chopped red onion enhance the depth of texture and flavor, which is further elevated by the Minty Vinaigrette.

My red onion was particularly strong on this occasion, so I ran it under some cold water for about a minute after chopping it, which helped to mellow its spicy heat. A shallot would also work in place of the onion. When testing this recipe, I initially sliced the grapes into quarters but found that they started to lose their firmness almost as soon as they were tossed into the salad and became almost mushy after just a few

*** The top-grossing film in Italy that even beat “Wicked” and “Gladiator II” at the box office was “The Boy With Pink Pants.” It tells the story of 15-year-old Andrea Spezzacatena (played by Samuele Carrino), who committed suicide after enduring bullying at school and online. The film explores the real story behind Italy’s first publicized case of online bullying that led to the suicide of a minor.

Apparently, teens and families turned out in hordes to see the film, and the repeated business of teens, who’ve seen it four or five times, have driven up the grosses. (Much like our teens in the United States who see comic book epics multiple times.) ***

Equally depressing is the upcoming film from Barry Levinson with David Mamet’s screenplay about John F. Kennedy’s assassination. It stars Oscar winners Jared Leto, Al Pacino, Jessica Chastain and Brendan Fraser, as well as Oscar nominee Bryan Cranston. The only way they can make this different from the slew of JFK conspiracy films we’ve had before is to make it a musical!

While the film “Barbie” didn’t gross as much as “Spider-Man” (it only grossed $1.446 billion), it nonetheless sent Barbie doll sales soaring. Mattel calculates that the revenue because of “Barbie” was a whopping $125 million, up 14% from their usual earnings. Will there be a “Barbie 2,” or will it be “Just Ken”?

The Minty Vinaigrette also has just five ingredients and was inspired by the fresh mint I had left over from the Sicilian Citrus Salad we enjoyed with our Christmas feast (another great winter salad). A generous amount of finely chopped fresh mint is combined with extra-virgin olive oil, lemon juice, honey and garlic to create a tangy and refreshing vinaigrette that can also be used as a dressing with chicken, fish and seafood dishes.

This recipe can be easily multiplied to serve large groups, and it holds up well for several days in the refrigerator. This wintry salad goes well with a variety of main courses, and I also enjoy it topped with roasted chicken or canned tuna for a light lunch or dinner.

When Tony and I first tasted this salad, one feeling we both experienced was how clean we felt as we ate it. Light, nutritious and delicious, this Cool and Crunchy Winter Salad with Minty Vinaigrette is a welcome addition to our healthy recipe repertoire.

Sarah’s Cool and Crunchy Winter Salad

Salad ingredients:

• 1 bunch of celery, cut into ¼-inch slices (about 3 cups)

1 head of Romaine lettuce, chopped into halfinch strips (about 2 cups)

• 1 ½ cups red grapes, halved

½ cup pecans, roughly chopped (plain or toasted)

1/3 cup red onion, finely chopped

• ½ teaspoon kosher salt

• ¼ teaspoon ground black pepper

Minty Vinaigrette:

½ cup extra-virgin olive oil

¼ cup fresh lemon juice or red wine vinegar

• 2 teaspoons fresh mint, finely chopped 2 teaspoons honey

1 clove garlic, lightly smashed, or ½ teaspoon garlic powder

• 1 teaspoon kosher salt

• ½ teaspoon ground black pepper

Directions: Place the vinaigrette ingredients in a medium bowl or jar and whisk or shake vigorously until well combined and fully emulsified. Taste and adjust flavors as desired. The dressing can be prepared up to one week in advance and refrigerated until ready to use.

For the salad, place the celery, lettuce, grapes, pecans and red onion in a large bowl. Add half of the vinaigrette and toss to combine. Add more dressing as desired (I usually add at least another

¼ cup) and save the remainder to use with any leftovers. Add the salt and pepper and stir to incorporate. Taste and add more seasoning as desired. Serve immediately or refrigerate in an airtight container for up to 24 hours before serving. Leftovers can be refrigerated for up to 5 days.

Mark Thompson, County Auditor, presented the two bids that were received to be the official newspaper for the 2025 County Board Meeting for informational purposes only.

Andy Thorson, Facility Maintenance Director, presented 2016 Elevator Compliance Bids recommending the bid be awarded to Minnesota Elevator for the total sum of $257,420.00 A motion by Steve Gardner, seconded by Duane Anderson was on vote unanimously adopted.

Eric VanDyken, Zoning Administrator, appeared to present the following for approval: Conditional Use Permit (CUP) request of Michael Dahl for a gun and archery range. Motion by Duane Anderson, seconded by Dale Anderson to approve the request based on proposed conditions and findings as recommended by the Planning Commission was on vote unanimously adopted. Mel Odens, Public Works Director, appeared to request acceptance of the CP 119-20 project and make the final payment in the amount of $56,800.36 to John Riley Construction, Inc.

Mel Odens, Public Works Director, appeared to request acceptance of the SP 034-644- 007 SP 065-614-005 project and make the final payment in the amount of $36,191.70 to R&G Construction, Co. revised to release final payment contingent upon the final paperwork
