Mark Murphy: Dingle Cookery School

Now is the perfect time for some warming and comfort food. Food like this will always help lift your mood. A good stew is full of flavour, it is easy to cook but with a little attention at the beginning is the difference between an average stew and a good stew. Take your time to brown the meat then slowly cook the vegetables. After this once it is in place you can sit back and let it work away.

Ingredients

8 chicken thighs, skin on rapeseed oil 150g streaky bacon, diced 1 onion, finely diced small bunch of thyme, leaves picked from stalk 2 cloves of garlic, crushed 1 litre of chicken stock

250g le Puy lentils or green lentils 1 squash, peeled, seeds removed and cut into 2cm pieces salt and pepper handful of Italian parsley, chopped to serve mash potato or celeriac mash

Method

Season the chicken with salt and pepper. Put a pan on over medium to high heat. Once hot add a little oil to the pan, add the chicken skin side down. Allow this to brown for about 5 minutes then turn the chicken pieces over and cook for another 3 minutes or so. Remove the chicken and add the bacon. Cook for about 2-3 minutes or until they have started to brown, turn down the heat and add the onions and thyme.

Allow this to cook slowly for about 5 minutes. Add the garlic and continue to cook for another few minutes. Return the chicken to the pan and add the stock, bring this to a simmer and cook for about 45 minutes.

At this stage the chicken should be tender. Add the lentils and squash. Bring this back to a simmer and allow to cook for about 20-25 minutes. At this stage the sauce should have thickened and taste to check that the lentils and squash have cooked. Season with salt and pepper and add some the parsley. Serve with some mash potato or some creamy celeriac mash.
