SPICED CARROT AND FETA SANDWICHES

Sweet spiced carrots and salty brined feta make this a vegetarian sandwich that’s super satisfying. You can serve this sandwich warm or at room temperature, which makes it a great sandwich to take to work or school. Serves 2

INGREDIENTS

❑ 4 carrots, peeled and quartered ❑ 2 tbsp olive oil ❑ 1 tsp curry powder ❑ 1/2 tsp ground cumin ❑ 1/4 tsp ground cinnamon

❑ 1/2 tsp salt ❑ 1/2 tsp pepper ❑ 1/4 cup crumbled feta ❑ 2 tbsp cilantro, chopped ❑ Drizzle of lemon juice ❑ 4 slices sourdough bread, toasted

METHOD

1Toss carrots with olive oil, curry, cumin, cinnamon and salt and pepper, and place in a 425°F oven and cook until browned, about 20 minutes. Remove and let cool to room temperature.

2Assemble sandwiches by dividing spiced carrots between 2 slices of bread. Top with feta and chopped cilantro and a drizzle of lemon.

Cut in half and serve.
