A

grader spent most of Easter Monday morning carving apart the glacial build-up on 7th Avenue in front of our house. By this afternoon there were large piles of crusty compressed snow slabs on the west side of the street, waiting to be hauled away later in the week. This whole snow clearance routine started about two weeks ago now and if it wasn’t for the steady morning snowfalls that greeted us all through Easter weekend, the downtown streets would be pretty clear now. Aside from Front Street, which is really part of the territorially maintained Klondike Highway, Dawson’s streets are packed dirt and gravel. This is not due to

some nostalgic adherence to Gold Rush times. Rather, we have to dig them up so often to repair water and sewer pipes that having to break asphalt or chip-seal every time would be even worse than cracking our frozen soil. In some ways, our streets are better in the winter. All the potholes are filled in by packed snow, while regular sanding and plowing keeps them safe to use. Of course the snow compacts to a kind of glacial ice during the winter and street levels rise half a foot or more (say, half a pick-up truck tire) until they are even with the elevated boardwalks. Spring drops the levels in reverse and makes it harder to get from the street to the boardwalks.

Dawson is not a friendly town for people with mobility issues. If it would all just sublimate (turn to vapour) in the spring under the urging of the breeze and the increasingly intense sunlight hours, that would be fine, but most of it melts, and if it was left in place to do that, the gumbo on our streets would be even worse than it gets to be anyway. So we run graders over it with blades that dig deep and break it up. Then we plow it into piles, and truck it all to several places around town where it can melt without dissolving the streets. On the wider streets, up to 5th Avenue, the process involves

On the narrower streets, they pile it up along both sides and deal with it later. Our storm drains do absorb some of the run-off, but there’s enough water coming from people’s yards and off the hill to the east of town without overloading the drains with street ice. Some of the ice chunks from the plowing are large enough to allow for a kind of geologic record of the major snowfalls; each one punctuated by a line of dirt where the road was sanded after a major dump. The thickest one I’ve seen this year shows at least nine major snowfalls. The cleanest and thickest line is the most recent, while the lower ones are dirtier, more compressed, and therefore harder to count. Until Easter weekend, the broken chunks stood out quite starkly against the sides of the streets, but four consecutive mornings of what my wife has been referring to as “dandruff snow” has softened the edges all over town. As below, so above. Boardwalks along several buildings are condoned off with caution tape, advising people to avoid them in case some massive chunk of snow comes crashing down. As someone who lost the railings and part of the small deck just off our second floor bedroom one year around this time when our slide guard failed, I know how heavy that compacted snow can be. As the Ice Melts allows Yukon authors to share their work through video

I

t’s all Joanna Lilley’s fault if you ask Ellen Bielawski. If Lilley hadn’t released Endlings last year, a collection of poetry about extinct animals, Bielawski wouldn’t have come up with As the Ice Melts. “I was appalled that all of her launch events had to be cancelled due to COVID and I thought it would be amazing to create a project that allowed her to share her work in landscapes where extinction threatens,” says Bielawski, who was inspired to the project by a combination of Lilley’s book and by hearing Champagne and Aishihik Chief Steve Smith speak about the fish weir at Klukshu Village (Smith said there used to be so many salmon, people could hear them coming. These days, their

numbers are greatly reduced). . As the Ice Melts is a project that takes the form of two videos which present stories and poetry on the theme of our changing environment. The work has been put together by Bielawski, Lilley and Champagne and Aishihik First Nations storyteller, Ron Chambers. The videos were shot in locations in Kluane that are currently undergoing changes connected to climate change, including Łù’àn Män (the south shore of Kluane Lake) and Àłsêxh (Alsek) Meadow. retreating glaciers; Lilley reads poems from Endlings about extinct northern species; and Chambers shares stories about the land and his cultural history inspired by the two locations. Yukon filmmaker Marten Berkman also recorded the two events and is using the footage for a virtual reality project. The project was funded by a digital originals microgrant, an initiative set up by the Canada Council for the Arts as a response to the pandemic to help creators share work online. Lilley says the grant came at a time when opportunities to share work and connect with audiences have been diminished, thanks to the pandemic. She says she’s grateful to the Champagne and Aishihik First Nations, the Kluane First Nation and White River First Nation for allowing them to record on their traditional territories and share the video so people know how special the locations are. ■ cont’d on page 5 ...

WILD STRAWBERRY JAM Summer in a jar

T

he berry season is still months away, but already I’m dreaming of golden afternoons on my hands and knees, picking one strawberry after another and popping them into my mouth. That’s my favourite way to eat the tiny, delicate, wild strawberry, so fragrant it is the essence of strawberry distilled into one small bite still warm from the sun. Strawberry patches come and go. I’ve found them by the side of the Alaska Highway, on the edge of urban paths and, once, in a gravel pit between Pelly Crossing and Minto. We ate all we could, and then had a snooze with all the doors and windows open before turning back onto the highway. Every summer since that day we’ve pulled into the gravel pit to check, but the berries have never again come back in such abundance. Wild strawberries are so delicate they tend to turn into jam in the container on the way home. I’ve rarely invested the time in picking enough berries to can. But other folks are more perseverant. A close friend, for example, gave me a small jar of jam for Christmas. And so, I made cheesecake. RICOTTA CHEESECAKE WITH WILD STRAWBERRY JAM Inspired by chef Jenn Segal at onceuponachef.com The topping of wild strawberry jam is exquisite all on its own, but

if you want to gild the lily, try the optional addition of peaches simmered in honey and Amaretto. Peaches + strawberries = summer! Ingredients Crust • ¾ cup whole raw almonds • ¼ cup all-purpose flour • ¼ cup almond flour • ¼ cup (packed) brown sugar • Pinch of kosher salt • 1 large egg yolk • 2 tbsp unsalted butter, melted and cooled • ½ tsp almond extract Filling • 8 oz full-fat cream cheese, at room temperature • 500 g (one small tub) ricotta cheese • ¾ cup sugar • ¼ teaspoon kosher salt • 2 large eggs • 1 tsp vanilla extract • 1 tbsp amaretto • 1 tbsp cornstarch • Zest of one orange, grated Topping • ½ cup wild strawberry jam Optional: • 2 cups of sliced peaches, fresh or frozen • ¼ cup wildflower honey • 2 tbsp water • 1 tbsp Amaretto or 1 tsp almond extract Instructions 1. Preheat oven to 325 degrees F. Butter a 9-inch spring-form pan and dust it with flour.

2. To make the crust, place the almonds, flours, sugar and salt in a food processor and pulse until the mixture is the texture of coarse sand. Add the egg yolk, melted butter and almond extract. Pulse until evenly mixed. Transfer to the baking pan and press the mixture evenly into the base with your fingers. Freeze for 10 minutes to firm up. Bake for 10 to 12 minutes, until crust is just turning golden. Cool on a rack while you make the filling. 3. Combine the cream cheese, sugar and salt in the food processor. Process until smooth. Add the ricotta and process again until smooth. Add the eggs, one at a time, pulsing for 5-10 seconds each time. Add the vanilla, amaretto, cornstarch and orange zest and process until just mixed. 4. Pour the filling into the cooled crust, smoothing the top with a spatula or the back of a spoon. Bake for 45 to 50 minutes, until the top is lightly golden, the edges are set and the center is jiggly (it will keep cooking and firm up as it cools). 5. Remove cake from the oven and cool on a rack to room temperature. Don’t worry if it sinks a bit. After it cools, run a knife between the cake and the rim of the pan to make sure it’s not sticking. Cover tightly and

PHOTO: Michele Genest refrigerate for at least 8 hours or overnight. 6. Heat the honey and water in a small pot over medium low until simmering. Add the sliced peaches and simmer gently until the peaches have softened, about 3 minutes. Remove them from the liquid and place them in a bowl. Increase the heat under the pot to medium, add Amaretto or almond extract and reduce the mixture to ¼ cup. Pour over the fruit, cool, and refrigerate until you’re ready to serve. If there

is leftover syrup after all the fruit is served, use it in bourbon-based cocktails. 7. Once the cake has chilled, spread the strawberry jam evenly over top.To serve, release the cake from the rim of the pan, but leave it on the base. Slice individual pieces, wiping the knife clean between each slice, and serve the peaches in honey on the side, possibly with whipped cream. 8. Makes one 9-inch cake, enough for 8 to 10 servings. ■

In a skillet over medium high heat, cook the ham until crisp. Using a slotted spoon remove the ham. Place the skillet over the heat and add chopped onion, cook until translucent - about 6 minutes. Add kale and toss with onions until kale begins to wilt and is coated in fat, pour stock over kale and continue to cook until kale is tender and stock has evaporated - about 10 minutes, season to taste with salt and pepper.. Remove from heat and keep warm while you cook the eggs, or store in the fridge for up to 3 days until you’re ready to use it.

Toast the sourdough bread and divide kale between slices of bread. Melt butter in a nonstick skillet over medium high heat, when the butter has melted bread eggs into the pan and cook until whites are set and yolks are runny. Place an egg on each sliced of kale covered bread and serve.

YUKON SWALLOW AND BATS ON FARMLANDS

Maria Leung is a wildlife biologist living in Whitehorse and a keen supporter of local food. She, along with Donald Reid (Wildlife Conservation Society Canada) and Brian Slough (Consulting Biologist), has been working on this project on species at risk on Yukon agricultural lands, supported by Environment Canada Habitat Stewardship Program, and by Weston Family Foundation.

he thick blanket of snow covering the landscape would hardly suggest that spring is around the corner, but the lengthening daylight and the calls of the boreal owl tell me otherwise. When the last vestiges of snow are disappearing, we anticipate the return of our seasonal wildlife, the migratory birds and the bats. For the past two years, our team has been studying a few of these species in and around farmlands in Yukon, namely Barn Swallow, Bank Swallow, Rusty Blackbird, and Little Brown Bat, with the support of local farmers and landowners. These species were selected because the Committee on the Status of Wildlife Species in Canada (COSEWIC) had identified them as species at risk. The three bird species have all seen drastic population declines of 70% or more in Canada. The Little Brown Bat has succumbed to white nose syndrome in other parts of its range, an imported fungus that results in massive bat mortalities in winter hibernacula. Downward trends in insect populations and habitat degradation are among the threats facing these species. Currently, in Yukon, we find ourselves in an enviable situation. The nests of Barn Swallows that we followed were more often successful than not. In both years, a few pairs fledged two broods successively. We documented 37 active colonies of Bank Swallows along the 61 km stretch of the Takhini River ending at the Yukon River. We detected pairs of Rusty Blackbirds in the Ta-

PHOTO: Maria Leung khini River Valley, the M’Clintock Valley, and close to the north end of Little Atlin Lake. Little Brown Bats and other bat species were found on all farms where we set up acoustic detectors, and over 75% of the bat boxes we installed saw some use by bats.

mixed with patches and borders of forest and wetlands. Many of the wetlands and ponds are still surrounded by native marsh, shrub and forest. For forest bats, such as the Little Brown Bat, tracts of forest provide roosting sites and safe cover for commuting to favoured

YUKON FAMILY VACATION SPECIAL Compared to other parts of Canada, the Barn Swallow, Bank Swallow, Rusty Blackbird and Little Brown Bat appear to be doing relatively well here in Yukon more insight as to what the Yukon is endowed with. Swallows are aerial insectivores, catching their insect prey in the air, and do not usually feed during rainstorms or when cold temperatures prevent the insects from flying. This would mean that the total time during which it was possible to feed was much reduced in 2020. However, the unusually high abundance of mosquitoes meant that finding prey was relatively easy when weather was agreeable. This could explain why we did not detect a drop in Barn Swallow nesting success compared to the sunnier summer of 2019, or fewer sites with bat activity despite the poor weather. Bats are also aerial insectivores although here in Yukon, they are known to glean insects and spiders from vegetation early in the growing season.

Numerous insects for birds and bats to feed on also suggests that Yukon farmers use fewer insecticides than farmers in other parts of Canada. This is crucial, because declining populations of insects are implicated in the decline of

these and many other species that depend on insect prey. So, compared to other parts of Canada, the Barn Swallow, Bank Swallow, Rusty Blackbird and Little Brown Bat appear to be doing relatively well here in Yukon. We are fortunate that many farmers have kept native vegetation around their wetlands, and that many farmers care about the wildlife they can reasonably share their farmlands with. The benefits are often mutual, because swallows and bats consume insects that can be pests to people and crops. Our hope is that we can continue to see the birds, bats and insects thrive in Yukon, including in our agricultural landscape. Meanwhile, we continue to summarize our findings in a set of beneficial practices for farmers and land planners. ■

Night Market offers a taste of Thai

T

roy King, the executive chef behind the recently-opened Night Market, is a person who seems to live by the Asianfusion restaurant’s slogan, “grab life by the bowls.” King is already known for heading up the team at Wood Street Ramen. I meet with him to talk about Night Market, which is sandwiched between Pizza Hut and Marble Slab Creamery on 2nd Avenue. The small space is long and narrow, just like a stall in a market. The tables are jade green and the wooden seating is a deep red. The lighting is subdued, but strings of white lights and colourful lanterns create a beach party vibe. From the speakers, Jimmy Buffet is wasting away in Margaritaville and the Beach Boys are singing about Kokomo and Key Largo. Running the entire length of the main wall is a mural of a rainy night market with crowds wandering through food stalls. In King’s imagination, the people in the mural are coming to his stall, which offers refuge from the dreary drizzle. You could interpret the mural as being a metaphor for the pan-

demic, where Yukoners have been enduring a long winter without the usual ability to escape to exotic locations, or even to Vancouver for some international cuisine we can’t get here. Night Market offers winter-weary folks a culinary getaway without leaving the territory. “No one can go on vacation, so we try to bring the vacation here,” King says. To create his vision of a night market, King had some local help. Dan Bushnell of Molotov and Bricks Tattoo, and King’s Wood Street Ramen neighbour, painted the mural. King credits Paul Cairns of Alpine Builders with creating a space which transports us to Thailand, if only for a while. “I don’t know how the hell he did this,” King says, waving his hand at the space, which includes a pagoda roof detail around the bar. “He said ‘How about bamboo?’ I was like ‘Pfft! You’re never going to find bamboo!’” But the builder found bamboo in Vancouver and it arrived in two weeks. As King and I chat, general manager, Chase Dumoulin, places before me a virgin piña colada with a generous garnish of fresh tropical fruit. This mocktail and its boozy counterpart are typical of the bar program which features tiki-style concoctions you’d get while vacationing in Thailand.

A few noodle bowls snuck on the menu as well because if he doesn’t offer pad Thai, Kings says, he’ll be kicked out of town. As with Wood Street Ramen, King offers dishes for the glutenfree, pescatarian and vegan diners amongst us, as well as meat options. The meat and produce comes from local growers including Fox Ridge Farm and Elemental Farm. And not just the food is lo-

cal. The Night Market apparel is printed by Green Screen Printers. King’s philosophy is to support local businesses, an ethic he picked up growing up in Saskatchewan. “I come from a big cattle farm. Support your neighbours and your neighbours will support you.” How is it that a guy from Saskatchewan ended up running two Asian-inspired restaurants in Whitehorse? It began with King’s seemingly innocent side trip north while on his way to Asia a few years ago. King was training in Hong Kong and had returned home to Saskatchewan to visit family and friends. En route to Vancouver

to fly back overseas, King decided to visit the Yukon, which was on his bucket list. While staying at Inn on the Lake, King discovered they needed a chef so he took the job. He started doing ramen pop-ups at Woodcutter’s Blanket, which were wildly popular. When the demand for ramen proved more than the pop-ups could deliver, King found the permanent location on Wood Street. King started recruiting Saskatchewanians he’d worked with when he was head chef in a Regina restaurant. A “skinny kid” named Chris Corner who started as

a dishwasher seven or eight years ago and eventually became a souschef, is now a partner at Wood Street. Server Victoria Mills also moved up from Saskatchewan to join the team. It wasn’t the team’s original intention to open a second restaurant. Far from it. Last July, King had a stroke that led to a loss of control of his right hand. He actually thought his career was over. He credits some “awesome doctors” and his team (especially Corner) with his recovery and subsequent ability to take on a new venture during the pandemic. Last year, King knew people in

Dublin Gulch: A History of the Eagle Gold Mine Axiom Award Silver Medalist! The team at Victoria Gold is excited to congratulate Michael Gates, who last month won a silver medal in the Axiom Business Book Awards for the book. In June 2020, Yukon author and historian Michael Gates published Dublin Gulch: A History of the Eagle Gold Mine. He researched and wrote this engaging, photographyfilled book over 18 months. Dublin Gulch: A History of the Eagle Gold Mine chronicles the story of the generations of the colourful prospectors and miners who dreamed of, and toiled for, gold in the area and Victoria Gold Corp’s journey as the company that succeeded; going on to develop, construct and operate the Eagle Gold Mine northwest of the Village of Mayo. Dublin Gulch: A History of the Eagle Gold Mine was chosen from nearly 500 entries from authors and publishers located in North America and overseas, which published outstanding English-language business books in the past year. These prestigious and competitive prizes are presented in 23 categories to recognize new and innovative works published in the business books genre. “It was a great experience to tell the story of Victoria Gold, ‘the Little Company that Could,’ added Gates. “I would also like to acknowledge the support and encouragement of Victoria Gold and the professional expertise of Harbour Publishing to make this book a winner.”
