all migration is over, but you can still see some pretty cool birds around if you know where to look. One popular birding area is along the Yukon River near the Rotary Centennial Bridge. The open water here attracts a wide array of species, and it’s a special spot for birds and birders, said Cameron Eckert, president of the Yukon Bird Club. It’s my go-to site yearround to catch a glimpse of diving ducks, like mergansers, which troll the river current with their heads down in search of fish and underwater insects. Next week Eckert will lead a free guided bird walk, called What’s on the River, where the club to look for birds that are enjoying the river even as temperatures plummet. “It’s a very good spot for seeing late migrants, songbirds and waterfowl,” Eckert said. “We’ve also seen American Robins, American Dippers and Mergansers, late lingering Mallards, and last year there was a Belted Kingfisher nearby.” Eckert keeps his eye on most of the birding areas in the Yukon, and began offering the leisurely noon hour walk along the river here three years ago. here’s no point in making things just to decorate your garage – that’s how the Spruce Bog Craft Sale got its start, said Pam Charman, co-ordinator of the sale. “People just wanted to make things,” she said. “They wanted to be creative and they needed a place to sell things. It’s difficult to break into the retail market, so four or five people (within the Yukon Craft Society) sat down and thought up the idea.” That was roughly four decades ago, and the event – which Charman said was initially largely “young moms at home with kids who were looking to do something to keep their sanity” – has exploded in size. The sale skipped around from venue to venue as it grew – it used to fit easily inside the gym at Whitehorse Elementary – until about 10 years ago, when it moved to the flexi hall at the Canada Games Centre. “It was the biggest space available,” Charman said. This year’s market takes place Saturday, November 18 from 11 a.m. to 5 p.m. Doors open at 10:15 a.m. for seniors and those with mobility issues. There are plenty of returning vendors, as well as a few newbies, for a total of roughly 100 booths. Charman said there’s great

diversity in the items for sale because there are really no rules about what vendors can sell – applications are open to any kind of crafting, as long the work for sale is handmade and not massproduced. Makers from Whitehorse, Dawson City, Tagish, Teslin and Carcross will sell standard craft items, including knits, crocheting, candles, jewellery and paintings. The free event will also feature coffee roasters, stained-glass makers, granite serving boards, gems and essential oils. Twisted Gourmet, from Whitehorse, will be selling their smallbatch spice blends. Novelist Kevin Linville will also be there with his self-published book The Big People. There will also be soaps, lotions, bath bombs and personal hygiene items – something that’s become more common in recent years. “That didn’t really exist back when the sale started,” Charman said. “Trends sort of come and go. There was a period of time when we had lots of people who did macramé and then we had lots of people who did woodwork.” Charman said she expects this year to be quite busy. On average, the event has an attendance of 4,000 people. On a slow year (like the years Wal-Mart and the Superstore opened right around the

same time as the sale), it might only see 3,500. This year though, with the Save-On Foods opening out of the way, Charman expects a return to form. “It does tend to be a pretty husting place until 2 p.m. and then it thins out so you don’t have to wear a face guard to keep the elbows out of your mouth,” she said. For those who can’t make it on the 18th, there’s also a 14-day boutique open at the Westmark Hotel from December 7 to 20. The hours are Monday to Wednesday 10 a.m. to 7:00 p.m., Thursday and Friday 10 a.m. to 9:00 p.m., Saturday 10 a.m. to 7 p.m, and Sunday 11 a.m. to 5 p.m. The selection isn’t quite the same as the one-day fair, but a number of Spruce Bog vendors will be there to sell and answer questions about the work. FLEMISH BEEF STEW

1 slice bacon 2 medium white onions, sliced 2 pounds stewing beef, cut in I inch cubes 1 ½ Tbsp flour 3 cups beer 1 small bay leaf Pinch of thyme 1 clove garlic 1 Tbsp sugar 1 tsp white vinegar Salt and pepper to taste In a frying pan, cook bacon strip to crisp. Break up, put into a casserole dish. Sauté onions in the bacon fat and add to casserole. In the same frying pan, brown the meat cubes well. Sprinkle flour over meat, stir until absorbed. Remove from heat, add beer and stir well. Add beef to the casserole, along will all of the remaining ingredients. Bake at 325ºF until tender.

CHICKEN TETRAZZINI

2 Tbsp shortening ¾ cup celery, diced ¼ cup minced onions ½ cup green peppers, diced 1 can mushroom soup 1 cup milk ¼ pound sharp cheese, grated 1 tsp salt 1 Tbsp Worcestershire sauce 1 ½ cup diced cooked chicken 4 oz. spaghetti (cooked) ½ cup Parmesan cheese ⅛ tsp black pepper Melt shortening, sauté celery, onions and peppers. Blend soup and milk and add cheese, salt, and sauce, Stir. Add meat and heat thoroughly. Combine with spaghetti. Sprinkle with Parmesan cheese, pepper to taste, and serve.

Flemish beef stew CABBAGE PIGS AND SAUERKRAUT

Beef or pork Uncooked rice 1 large cabbage 1 can tomato soup 1 quart sauerkraut

Mix together equal amounts of uncooked rice and ground beef or pork. Tear a head of cabbage into separate leaves. Put 2 tablespoons of meat mixture into each cabbage leaf and tie up with. In a large pot, pour one can of tomato soup over a quart of sauerkraut and bring to a boil. Drop in cabbage pigs, cover and cook over low heat for one to one and a half hours. Add water if necessary. Untie when serving.

BAKED PORK CHOPS

6 pork chops, 1-inch thick 6 slices of pineapple Flour Salt Pepper Celery

Preheat oven to 350o F. Arrange chops in shallow pan. Coat with flour, celery and seasoning. Bake in hot oven. Baste with 1 teaspoon of water for each chop. After 30 minutes, lay a pineapple slice on top of each chop and bake for 15 minutes or more.

LIVER CASSEROLE

1 pound of liver 1 small white onion, chopped

2 cups of canned tomatoes 3 cups cooked rice or potatoes Salt and pepper to taste Drop liver into boiling salted water and cook for about 10 minutes. Remove and cut into small pieces. Combine all ingredients in casserole dish and cook in oven for 30 minutes or until flavours are blended.

1 pound ground beef 2 white onions, chopped 2 celery sticks, sliced Water 1 Tbsp flour Salt pepper to taste Green beans 2 Carrots, sliced lengthwise 2 Potatoes, thinly sliced Butter

Brown ground beef in large frying pan, then drain off fat. Add onions and celery. Sprinkle with flour. Add water, and salt and pepper. Layer beans, carrots and potatoes on top. Sprinkle with salt and pepper. Dot with butter. Simmer, covered, for one to one and a half hours on low heat until done. Murray Martin shares recipes from the 1940s and ‘50s with us. Whip ‘em out and measure!

Yukon Fish and Game’s Big Bull Night is coming up on Nov. 18 by Ben Keddy

I

t has long been accepted that the tallest of tales reside in areas where fishing and hunting abound. It’s hard to say what exactly it is about the pristine waters of a prime fishing hole or a swamp at rut, but it seems that these climates, more than anywhere else in the world, are the preferred habitat of the whopper. Just this year I encountered one such tale while river hunting. One of our parties returned at dark with a nice little 20” bull in the front of the boat and the first words out of their mouths were: “But you should have seen the other one!” As the hours and beverages pass by this phantom moose grew from 40, to 50, to “60 inches. Easy!” Local conservation groups, in an effort to prevent these yarns

from taking hold north of 60, have instituted submission events where boasting rights must be earned in front of an official scorer and peers. Thanks to the efforts of conservation groups such as the Yukon Fish and Game Association (YFGA), we may be able to prevent further spread of these falsehoods. That’s right folks! It’s that time of year again. We are rapidly approaching the YFGA Big Bull Night. A prestigious event where… actually it’s just a really good time. And there’s beer. Just sayin’. All kidding aside ,though, this is an amazing event recognizing Yukon locals for doing Yukon stuff. On Saturday, November 18, all Yukon Fish and Game members are welcome to bring their antlers,

Like all great hunting stories, no one is really quite sure just how long this event has been happening, but it’s generally thought to be at least as old as the YFGA

itself. Big Bull Night and the subsequent Big Game Dinner are an amazing example of camaraderie and community in the Yukon. Local businesses sponsor the awards, locals organize the entire event, local scorers and hunting professionals donate their time and effort to actually make the event a reality. Here’s how it works, if you are a member in good standing of the Yukon Fish and Game Association and you have had a great year in the bush, you can bring your cleaned trophy to the Mount Mcintyre Recreation Centre on November 18, between 3 p.m. and 9 p.m. Once there, you are welcome to get said trophy scored by certified Boone and Crockett scorers. To participate, your membership must be at least one day older than the day you harvested your animal, and you must be hunting, unguided, on a Yukon resident license. If you feel like you have a winner, you can enter your trophy for an award at the Big Game Awards Dinner later this winter. If your beast is already with the taxidermist, you can bring your official score card from them and submit it, as well. You also get to see your competition. The biggest moose I have ever seen

not-on-the-internet was at my first Big Bull Night. New this year, is a guess the score event. People will be invited to take their best guess at a trophy and then see it scored professionally. Jim Welsh, a HEED instructor and local awesome guy, will be there taking questions and telling stories. This is a great night being put on by a great organization. Even if you are a non-member, or even a non-hunter, the YFGA invites you to come out and see what they’re all about. Every outdoor enthusiast in the Yukon has a place at this event. Conservation is a huge issue for a wilderness oriented community like ours. Organizations like YFGA spearhead this effort. As a non-profit group, they get their power from numbers. More members mean a bigger voice for conservation in the Yukon and hopefully the ability for us all to enjoy this beautiful place and all that it has to offer for generations more. Wild Game Recipes with Sydney Oland

Bear pepperoni and herbed ricotta stromboli

B

ear is a controversial meat. Unlike most other game, hunters aren’t forced to keep any of the meat and can hike out the pelt and skull leaving the rest of the animal in the woods for scavengers. There also seems to be some sort of stigma about eating bear. I know a few hunters who will hunt and eat most animals, but feel weird about consuming bear – which is a shame because there are a few butchers here in Whitehorse who do a great job with curing and smoking bear. It seems like the most common ways people get their bear processed is either into pepperoni, salami or ham – and those are all great choices. This recipe uses bear pepperoni, but you could use salami. Or really anything. Stromboli are delicious no matter what they’re filled with. But if you’re a bear novice give something like this a try.

Bear pepperoni and herbed ricotta stromboli INGREDIENTS 1 recipe pizza dough (you can even buy the premade version at the grocery store) ¼ cup ricotta cheese ¼ teaspoon dried thyme ¼ teaspoon dried oregano Salt and pepper, to taste 1 cup thinly sliced bear pepperoni 1 cup grated mozzarella cheese 1 egg, beaten 1 Tbsp grated parmesan

Pile all your filling in the centre of the dough

Serve it with dipping sauce – marinara is a classic, but a bottle of ranch is my personal junk food allstar.

METHOD

1 Set oven at 400 ºF and have on hand a lined baking sheet. Roll out the dough into a rectangle, leaving a 1 inch border. Place the ricotta in the centre, fol2 lowed by the thyme and oregano, season with salt and pepper. Place pepperoni on top of ricotta then cover with shredded mozzarella.

Brush the edges with beaten egg then fold the two shorter ends up over the filling. Using the long ends roll the Stromboli so the filling is completely encased. Place on lined baking sheet and brush with remaining egg wash and sprinkle with grated parmesan.

O

ne of the childhood traditions if you grew up in Canada is the annual school Remembrance Day ceremony. Some day right before the statutory holiday, class by class students march down to the gymnasium to sit in rows and watch the presentation. I must admit, it took me until my teen years to feel connection with the ceremonies. The somberness always had an effect on me, but I struggled to relate to the scope and significance of the world wars. Perhaps I started to better understand the enormity of it all as I neared the age of those men and women who went over to serve. As I reflected on that in preparation to write this piece, it reinforced the continued importance of our Remembrance Day ceremonies. As time moves on, and we grow less connected to the world wars, there is a danger that we lose our appreciation for the sacrifices, the origins and the horrors of these events. They remain valuable tools, lest we forget. The Royal Canadian Legion Branch 254 is the main organizer of the Whitehorse Remembrance Day ceremony, but is supported by a number of partners who make it happen, according to Legion president Joseph Mewett. “We have a lot of support,” said Mewett. “Lots of businesses buy a wreath from us to display in their store. The City also provides us the Canada Games Centre to hold the

Poppies are the major fundraiser for the year for the Legion and help them provide services to local veterans. “The Legion provides support for veterans and their families,”

Mewett said. “And you don’t have to be a Legion member to get support.” Lending support isn’t always easy, according to Mewett. Many military people who have served don’t classify themselves veterans, because they think of veterans as those who fought in World War I, World War II or Korea.

“We found that they wouldn’t say they were a veteran if asked,” Mewett said. “I served in Afghanistan and Bosnia and for a long didn’t view myself as a veteran. We now ask, ‘Have you served?’ and have been telling Veterans’ Affairs about it.” Currently, the Yukon Legion branch has approximately 400 members, of which more than 160 of them have served. “The Legion is a second home, a second family,” Mewett said. “People come because it’s a place where you can get support from others who have been through the same thing. We understand and it’s almost impossible to relate if you haven’t been through it.” Remembrance Day is now as much an opportunity to recognize all those men and women who have served and returned home. We owe them thanks. That’s why we wear our poppies and hold our ceremonies, to support and remember. So on the 11th hour of the 11th day of the 11th month, take a moment to reflect on Canada’s history and the Canadian women who have served, and continue to serve. To them, I say thank you. his is a slightly different edition of The Bookshelf. As with the earlier columns, this one features a book that reflects on Canadian and Yukon history. The difference is that this column is going to direct you to a website. The Northern Review identifies itself as a “multidisciplinary journal exploring human experience in the Circumpolar North.” It is published by the School of Liberal Arts at the Yukon College. Volume number 44 is entitled The North and the First World War, and, at 464 pages, is somewhat thicker than most of the other volumes in the series. It contains the complete list of the papers from the The North and the First World War Conference that was held in Whitehorse, and partly in Dawson City, between May 9 and 12 of 2016. There were 20 presentations in all during the conference, many of them by such Yukon notables as Brent Slobodin, Michael Gates, Sally Robinson, Kathy Jones-Gates and Max Fraser. The conference was co-chaired by Slobodin and historian Ken Coates. Visitors included historians from a number of Canadian universities; the Canadian War Museum, Libraries and Archives Canada; and such independent historians as Timothy J. Popp and Mark Zuehlke.

Gordie Tentrees previews new album

live. It will be Parry’s first time on a stage, Tentrees said. And though Desjardins is known for her percussion with Ryan McNally, this is the first time she’ll be playing her own music in front of a crowd. With these shows, Tentrees wanted a unique venue, which is why he opted for Hamilton and Son Guitar Works. With only 65 seats, he said, it’s funky, intimate and well-suited to the kind of performance he and his openers are going to give. Tentrees is excited for the Woodshed Sessions because he says conceptualizing and recording GRIT helped him realize one of his biggest assets is playing live. “It was becoming clear that our live show was growing and kind of taking off in the last three years,” he says. That had the effect of changing his thinking on how he has to act in front of an audience. It opened him up to the idea that there are no rules, which has allowed him to be more honest and authentic about what he’s doing. Tentrees said he’s less focussed these days on winning over and appeasing a crowd, which can often come at the cost of taking chances. It becomes too easy, he said, if you’re playing every night, to tell the same stories, play the same songs, and stick to a script. He said that once you let go of that, you can find something really special. “Some magic will start to ensue,” he said. “You have to take more risks to get success out of that kind of thing.” Tickets can be purchased online at Eventbrite.com. aking his seventh album was the most fun Gordie Tentrees has had as a musician, but it didn’t start out that way. “It was the toughest thing I’ve ever done,” Tentrees said, looking back on the album, which is a collection of new songs recorded over the course of five live shows last November. “After the second show, I was like ‘This is crazy.’” Not only was he dealing with the pressure of wondering how audiences would react to brandnew songs, he was documenting it. On top of that, Tentrees’ European label, Greywood Records, didn’t know he was planning to deliver a live album. Eventually, Tentrees says, he had to just forget about the recording and focus on the show. That’s when he started having fun. As a bonus, he says, GRIT, the album that came out of the experience, was well-received by Greywood, which is releasing worldwide on March 2. “They said, ‘We had no idea it was a live record until we heard the audience at the end.’ Which was exactly what I wanted,” Tentrees said. He has always aimed for a liveoff-the-floor feel with his studio records. Yukoners will have the chance to hear the new songs November 15 and 16, when Tentrees plays The Woodshed Sessions – two back-to-back shows at Hamilton and Son Guitar Works in Whitehorse. He’ll be joined on the 15th by Yukon storyteller Laurel Parry, and on the 16th by multi-instrumentalist Brigitte Desjardins. Tentrees said he chose them for selfish reasons – both are performers he really wanted to see

Stepping Out with Darrell Hookey

Supporting great health care in the Yukon P hilip Fitzgerald was embarrassed when he is asked about his greatest sense of accomplishment as the chair of the Yukon Hospital Foundation. “It sounds too financial,” he explained. Well? “It doesn’t sound right,” he said, finally. “But our bottom line was $800,000.” That’s available money. As a professional accountant, and the chief financial officer and president, hotels for Northern Vision Development, Fitzgerald understands it isn’t just about the money – it is all about what the money can do for Yukoners. “We can reach our targets quicker and keep going,” he said. “We had a two-year plan to raise funds for a fluoroscopy machine (a state-of-the-art full-motion video x-ray) and we will likely get it done under that time. And, so, we identified a new project: a simulation centre. “It is a smart training facility – half-million-dollar dolls, really – that allows doctors, nurses and first responders to practise in real-life situations. “It is for refreshment training and new procedures; we can take it to a mine site and program it to have a heart attack for their emergency medical technicians.” That $800,000 profit at the end

of the year means Yukoners will get medical services more quickly. For instance, through the good works of the Yukon Hospital Foundation and past foundation chairpersons, Whitehorse General Hospital has the only MRI in the north. And, along with advanced equipment throughout WGH, Dawson City and Watson Lake have portable ultrasound machines and First Nations Health Programs. “I am not a health expert, I am an accountant,” Fitzgerald explained. “It is nice to know I can leverage my business skills to help the organization go to the next level… an organization that is already set up and has so much goodwill.” Just as he keeps track of Northern Vision Development’s $85 million in assets as his day job, Fitzgerald sees his role with Yukon Hospital Foundation as “just one cog that coordinates all the great efforts to get everybody going in one direction.” He said the board provides strategic guidance and support to a full-time president (who is paid by the government, not from donations), liaises with donors and drums up more donations. Then, of course, gives it to the hospital boards. “I like (the foundation) as an NGO because its main effort is raising money, not spending

money, so you get a real sense of accomplishment quickly,” Fitzgerald said. “Ultimately, the hospital touches all of us.” Besides his volunteer work with the foundation, he is also on government boards, past-president of the Whitehorse Chamber of Commerce and is treasurer of the Yukon Chamber of Commerce. And he was recently tapped to help out with his daughter’s Polarette’s Gymnastics Club. His bosses at Northern Vision Development don’t seem to mind that he is being pulled in so many directions. Indeed, “Most, if not all of the senior managers, here, are involved in NGOs. “It is the nature of the environment in the Yukon and we like giving back to the community. “So, we work around it.” There are benefits to any employer of staff volunteering, Fitzgerald said. “It is a great stepping stone for people to learn managerial and executive skills outside of your skillset and to prove yourself as a leader. “You go into roles far quicker and you do more far quicker.” Still, there are lots of opportunities for Fitzgerald to get out from behind the desk. He can be seen this Christmas season helping out at the annual Northwestel Festival of Trees’ events. The trees will be displayed this

year at the Yukon Government’s Main Administration Building from November 23 to 28 from 9 a.m. to 5 p.m. Stepping Up features those who lead volunteer organizations in the Yukon. Darrell Hookey is a freelance writer in Whitehorse.
