What’s with all the brushes? of polyester. I prefer a synthetic, due to not wanting to hurt the piggy bank or the animals! Watercolour requires thin, soft bristles that work well as they absorb water and little pigment. Acrylics require a slightly heavier bristle, for the medium density of the paint. A tip for practising brush strokes ...

Try experimenting with the position of your hand, kind of like a conductor—use your wrist and arm and get flexible with the way you push that paint around. If you can practice this one thing, you will need less types of brushes. Another great tip I can share is to flip each side and try spinning as you’re in mid stroke. This will help to unload the paint better as you go.

Loading up and cleaning up ...

Now, finally, in order to keep that brush shape, do not overload the brush, do not mix piles of paint with the brush (use a pallet knife) and keep the paint on the first top three-quarters, leaving the metal part clean. And make sure to clean brushes as you go (not letting paint dry there as you’re working), and do a final cleanup at the end with dish soap and water, then squeeze out the liquid and lay flat to dry. Have Fun!

Eye on the Outdoors with Murray Martin

The life and times of a bear (and being ‘bear aware’)

T

he life and times of wildlife is an amazing to study; for example, did you know that a genus of beaver was once the size of a bear, and the horse was the size of a German shepherd? But, personally, other than facing a mad wolverine, I would say that the black bear is the most mistrusted creature in all of North America. The study of wildlife, along with the study of ethology (study of animal behaviour, especially in natural conditions), is one of the most interesting subject matters, especially when you jump back a few million years. We consider the black bear to be a large animal; and the beaver, a small animal. But back in time, the beaver was a large as today’s black bear. Evolution is an amazing thing, as even we humans were known for “monkeying around.” It’s questionable what the average person actually knows about bears. Humans sometimes stretch upwards to see something a little farther away. Well, the bear does this also, as proven in the accompanying photo. Should you encounter a black bear and see it standing on its back legs, it is trying to get a better look at what could be its next meal. The black bear will also lean against something to be able to scratch its back. (Certainly I have done the same.) A word to the wise for mushroom pickers ... mushrooms, seemingly, are a tasty treat for

(Just because a bear may be eating mushrooms, and you don’t want to be mistaken for a mushroom). Also, on our property, back in Ontario, I often watched deer feeding on poison ivy, with no ill effects. So, another word to the wise: Don’t believe that you can eat anything an animal can. Back to the subject at hand … If you think you can outrun a

black bear, think again. An Olympic female runner (on a back trail in Quebec) came face to face with a black bear. She turned and attempted to outrun it, but the bear was faster and caught up with her and killed her within 30 yards. Also, a black bear can out-

climb you in a race to the top of a tree. Black bears come in several colours. I have seen a black bear with a rust-coloured coat; a black bear with a white face and throat; and, I have seen a black bear, with a white-coloured throat, that had

been raised in captivity and taken to shows. Generally, a bear that has put on a good number of pounds will settle down for its winter sleep around the end of November. If food is in short supply, the bear may not go into its winter deep sleep until much later. Depending on a number of factors, a bear may wake up at any time, during winter, and leave its den for short periods. Spring is a dangerous time to encounter a bear, especially a female with cubs. She will attack anything if she fears her young are in harm’s way. It is strongly advised, when walking along roads or trails, that hikers carry bear spray (and that they check the expiry date). If you come across a bear in a cave or enclosure, during winter, don’t be fooled about hibernation (it is what is called a “deep sleep”). If you don’t believe this, give the bear three good jabs, with a sharp stick, and if you come out of the cave at the same pace you walked into it, I will be in my car, waiting, with a hundred bucks to give you. My Failed Pancreas ...

On September 7 from 7 p.m. to 9 p.m. at Baked Café, Mikka and others will share their stories at My Failed Pancreas: Life with Type 1 Diabetes, an event planned by the Yukon T1D Support Network to help others understand the reality of persons living with Type 1 Diabetes by Marney Paradis

What is type 1 diabetes? Diabetes mellitus type 1, often called type 1 diabetes, is an autoimmune disease caused when antibodies destroy the beta cells of the pancreas. The pancreas is responsible for the production of a hormone called insulin. Insulin regulates the metabolism of fats, proteins and carbohydrates. When the beta cells of the pancreas are destroyed, insulin is no longer produced and the body is incapable of regulating blood sugar. Without insulin, the body will die. For Mikka, who received a diagnosis of type 1 diabetes after further antibody testing, the disease is the biggest thing on her mind. She said, “I was used to going for runs in the morning. The first time I went for a run, after diagnosis, a neighbour had to call 9-1-1 because my blood glucose level dropped so quick.”

Lifestyle changes Lifestyle changes are often tremendously difficult for people with type 1 diabetes. Typically,

As carbohydrate intake/insulin ratio must be considered when exercising, physical activity needs to be planned. For people like Mikka, who are used to spontaneous activities, the mental preparation needed for planning exercise may be overwhelming. Choosing what foods to consume and when to eat them is another difficult task. Everything that is eaten needs to be gauged according to its carbohydrate, fat and protein content. The chal-

lenge lies in calculating insulin dosage, a scenario commonly called “insulin math.” Though the general rule is total grams of carbohydrates divided by the grams of carbohydrates disposed by one insulin unit, this can vary wildly based on the type of day one is having with stress, exercise and sleep considerations. Further, the correction dose that follows is the difference between actual glucose and target glucose, divided by the correction factor. If it sounds complicated and timeconsuming, that is because it is.

to Vancouver as a “nightmare.” First, airport security wouldn’t let her apple juice through with her. As anyone with type 1 diabetes knows, prevention of a low is paramount, and having juice nearby is not only a convenience, it is a survival tool. Second, the concert venue wouldn’t let her take her small backpack into the show, even though it contained her insulin and her necessary sugar-laden snacks. Third, she has been refused participation in events because helping her avoid hypoglycemia is “beyond the event organizer’s capacity.” Fourth, Mikka is worn down by people asking her what is wrong with her as she pokes her finger or injects insulin. She identifies bathrooms and bathroom stalls as her “lifeline to peace,” a place where she can avoid the stares and questions of others.

hen 22-year-old Mikka started feeling sick, she assumed it was the flu. She felt nauseated and was drinking water all the time. It wasn’t until her best friend commented on her weight that she became concerned. “You’re looking kind of thin,” she told Mikka. Mikka looked at her legs and could see that she had lost weight and thought, Oh no. She knew right away that something was wrong. She went to the emergency room and within an hour was told that her blood glucose was reading 30 (an ideal range is between 4 and 7). She was also told that the ketones in her urine indicated that she was in a state of diabetic ketoacidosis (DKA). DKA is a lifethreatening condition in which the blood essentially turns acidic. It was likely, the doctor said, that Mikka had type 1 diabetes.

A person with type 1 diabetes may have to wake up several times a night to treat a drop in blood glucose levels. Mikka was having such a hard time with this aspect that she ended up having to leave her full-time job. She was simply exhausted from waking up multiple times every night.

The future and finding peace Above all else, Mikka says that the weight on her soul is knowing what the future holds. She tries to find peace in knowing that she is doing the best that she can, but she also knows what the data presents: many people with type 1 diabetes face a future with health complications, including diabetic retinopathy, peripheral neuropathy, heart disease and stroke. As she nears the five-year anniversary of her diagnosis, she is reminded that, at year 5, the blood vessels of the eye may start showing signs of damage. “What can I do?” Mikka asks. “Every day, I just do the best I can. That is all any of us can do. Wake up, put your feet on the floor, and move forward with your day.” Mikka and others with type 1 diabetes are sharing their stories at the event My Failed Pancreas: Life with Type 1 Diabetes, taking place on September 7, 7–9 p.m. at Baked Café. Matthew Lien has returned home and to his Yukon production company, Whispering Willows Records, to ‘create musical art that inspires and then relieves to a point of peace and stillness’

A

fter spending the last decade in southeast Asia, renowned Yukon folk artist Matthew Lien has finally returned home to continue his exploration of space. No, not outer space ... actually, it’s more like inner space. “I’ve always been interested in the art of space when I produce music,” Lien explains. “You’ve got your left, right and center, the panning spectrum of instrumentation when you’re mixing, but you can do a lot to increase the depth of field, and increase the left and

right boundaries much further than where the speakers are designed, using various technologies. “Right now, a very big topic, everywhere, is immersive audio, spatial audio.” During his time abroad in Taiwan and China, where his album Bleeding Wolves went multi-platinum, Lien began to notice a shift in the music industry. The practice of studio recording became more and more relegated to the cheaper, more economical home or laptop computer, and once-staggering vinyl and compact-disc sales

dwindled in the looming shadow of online streaming platforms. With that shift, Lien explains, came another inevitable development. “Everybody on the street, on the subway, is on earbuds now because of the proliferation of the

smartphone,” he said. “[Through the] Audio Engineering Society, I discovered that the actual spec of this is that eighty-five per cent of music consumers are doing so over earphones now. [When I started recording], we completely disregarded the headphone market, we just produced music for speakers, but now ... the time has come to at least take a shot at disregarding the speaker market entirely and focus on headphonespecific technology.” Lien is filled with optimism and inspiration at this new potential avenue and has developed what he hopes will be a revolutionary approach to recording technology. It is this new technology that brings him home to the Yukon, conducting recordings and research under his production company, Whispering Willows Records. Lien’s novel approach to recording and producing music is two-fold. The first problem to address, he explains, is the fact that

when one is listening to music on headphones, the sound is intrusive. That is, it sounds like it’s right inside your head. Lien believes that, if the music were to sound as if it were outside the listener’s head, they would be immersed in a much more natural acoustic experience. His new solution begins with an older technology—binaural recording. “Binaural recording involves using a microphone that looks like a human head, with the stereo microphones embedded in the position of the ear drums,” he explains. “So this kind of microphone is a kind of proxy for your head, so the reason we hear sound in 3D is because of the physics of our binaural hearing system.” Music recorded with this sort of microphone and played back in headphones creates a very strong sense of spatial immersion. “You feel very much that you are cont’d on page 9 ...

His plan, moving forward, is to continue the recording of a completely binaurally-recorded album, several songs of which have already been completed. Lien’s return to the Yukon, to explore this technology and continue his recording, is not for mere convenience. Like so many others, he returns to the North in search of silence. “If there was a constant noise floor in any beautiful church, say a freeway outside, you would not care about the acoustic quality; you would not even notice it. The reason we feel performances in concert halls or in cathedrals are so beautiful is because there is that underlying silence. “I think we need that ... that’s one reason people constructed those acoustic spaces in the first place. It’s a service that we pro-

Why not put it into, say, a church? “Space is an art form in music production ... how that sound is approaching you, and the acoustics of where that sound appears to be is so valuable and potent when we hear it,” Lien said.

“A sound that starts softly and swells up with emotion, and it’s coming at us from above, or to the left and approaching, it appears to be in some grand acoustic space, and if you can really wrap the listener in the complete three-hundred-and-sixty-degree of that effect, there’s great power in that.” In order to achieve this effect, Lien uses binaural recording to capture an acoustic profile of a space and use it as an overlay on an audio recording. “By broadcasting a sweep tone into a church, which covers every frequency audible to the human

ear, and recording that with binaural microphones and then using special software to examine the difference in the sweep tone from before and after the recording, the software is able to extrapolate the difference and create kind of an acoustic fingerprint of that space, and I’m able to then apply that to a recording.” Some of the people Lien has shared this with (leading figures in the industry) have written letters of support, inspired and intrigued by the approach, he said, explaining that nobody has taken binaural technology to this level before, to

Pasta with walnut garlic sauce ... cont’d

METHOD

1

In a large skillet over medium-high heat, toast the walnuts until they just begin to brown, then remove from heat. Place walnuts in a bowl and reserve. Place skillet back over heat and melt the butter, add the garlic and cook until just softened, about 2 minutes. Add milk and bring to a simmer. Then add bread and remove from heat. Stir bread into milk mixture and mash with a spatula until you get a thick paste. Add half the reserved walnuts and the parmesan cheese and, using a hand blender, blend until the large chunks are gone but the sauce still has a coarse texture, then season to taste with salt and pepper.

Blend until most of the large chunks are broken down

Cook pasta according to directions on package, reserving ½ cup cooking liquid. Then drain pasta and add it to the sauce. If needed, add some reserved pasta cooking liquid to loosen the pasta. Adjust seasoning, if necessary, and top with remaining walnuts and serve.

usiness After Hours (BAHs) are a regular fall and winter activity for networking professionals in Whitehorse. Coordinated by the Whitehorse Chamber of Commerce, the events are an opportunity for Whitehorse businesses to host their peers in a social setting and learn more about what is happening across the city. Andrei Samson is the office manager at the Whitehorse Chamber of Commerce and is responsible for helping businesses schedule, plan and host events throughout the winter. “Businesses come to the [Whitehorse] Chamber and they will help with organizing,” she explained. “A business would usually do food, beverage and location. The Whitehorse Chamber of Commerce can do the agenda, planning, advertising and RSVPs.” The Whitehorse Chamber has a regular agenda that most BAHs follow, and they coordinate scheduling so that two businesses aren’t hosting competing events. Some might question why a business would host an event, but there are benefits, according to Samson. “The main value is networking for the business community,” she said. “You can meet people and discuss ideas, and it connects the business community and government at all levels. “It allows business owners to get profile for products by hosting. Smaller, or similar types of businesses may also partner.” There is also potential for creativity and entertainment from hosting businesses at BAHs, according to Samson. She provided the example that, last year, Jordi Mikeli hosted at Triple J Music, but also presented on behalf of Kona’s Coalition and how businesses could support that organization. This year, the first event will be hosted by Greg Karais, who owns Yukon, North of Ordinary, at the new North of Ordinary Experience Centre. Hosting a BAH seemed like a natural fit in their new space at

Humbug kicks off the Festival of Trees in November. As well, the Yukon Convention Bureau hosts an event in February and NorthwesTel unveils their new telephone book cover in the spring. While all businesses are invited to host BAHs during the year, there are a number of annual events that are popular amongst the networking crowd. According to Samson, the biggest BAH is hosted by Air North, Yukon’s Airline, in December, and the BAH

Anto Yukon soap is inspired by Kym Rempel’s favourite Canadian landscapes

K

ym Rempel is the owner and creator of Anto Yukon, a bath and body company unique to the Yukon. Her products are made from all-natural ingredients that are locally collected, processed and produced in small batches in her studio. “Soap is definitely the biggest seller,” explained Rempel. Anto Yukon’s all-natural and vegan products, made with natural clay, have been a huge success not only in the Yukon, but also in other Canadian locations. Rempel also produces essential oils, some made specifically for muscle pain and arthritis, as well as muscle and facial rubs and bath salts. “The thing that has really kept me going is that I fell in love with essential oils and scent creation,

and I really enjoy coming up with exciting and new combinations.” Rempel started making soap in 2013 after her mom had signed her up for a fun soap-making class. After she finished school, Rempel moved to the Yukon and continued to pursue soap-making on the side. She then started to sell her soaps in local shops, such as Aroma Borealis and the Collective Good. With a background in resource management and GIS mapping, Rempel worked in government for a while. This experience also influenced her soap-

making and eventually she decided to focus on her creative work full-time—just about to complete a second season—based out of her store in Carcross. As she progressed in making soap and started to sell more products, Rempel was stuck when trying to find a name for her franchise. Where did the name Anto Yukon come from? many might wonder. Rempel had quite the explanation: “I couldn’t come up with a name,” she laughed, “so a friend of mine told me everyone loves their dog ... name your company after your dog, and that’s what I did!” The name stuck and, eventually, once her company started to take off more, she decided to add Yukon to “Anto,” naming her soap and oil franchise Anto Yukon. Rempel draws her inspiration from some of her favourite Canadian landscapes, and as an avid traveller she has explored many exceptional places. “Every soap relates to its name in some way or

another,” she explained. Fox Lake soap includes fireweed, which has covered the Fox Lake landscape since a massive forest fire burned through it in 1998. Miles Canyon contains juniper and sage, which are native to the area. Dawson City soap is blackened with activated charcoal and includes a line of gold mica through it, hinting at the Klondike Gold Rush days. Carcross Desert helps dry skin and includes lemongrass and Kluane, and one of her best sellers includes Kluane glacier silt, a natural product that caught her eye when she was working for the Kluane First Nation. Rempel makes 16 scents, altogether—14 soaps and two seasonal soaps—and over the Christmas holidays she sometimes produces as many as 20 soaps. Rempel has also recently started to expand her line of soaps. “I have decided to start a full Canadian line of soaps.” She has big plans for the foreseeable future, as her products are now being sold in more than 35 stores in southern Canada. Anto Yukon’s products were also sold by Holt Renfrew this past year, at five different locations across Canada (in Toronto, Calgary and Vancouver), and were featured in the H Project, a Holt Renfrew boutique dedicated to showcasing Canadian-made luxury items. This provided her with a lot of press, and her products have been featured in magazine spots since then! Rempel has been accepted into EntrepreNorth, an entrepreneurial program for northern Canada. She will be partnered with a mentor and will travel to meet entrepreneurs across the three territories. She shared her excitement about being part of a group like this where she and others can share unique issues that face export businesses in the North, as well as hopefully gaining advice on how to scale. Time for Thai!

Starfire, Skagway’s authentic Thai food restaurant, is the answer when the question is, “Hey, where do I get some fresh, authentic Thai food?”

“M

iss, where are you living?” (U.S. border agent) “Whitehorse.” (Me) “Ohh ... you’re coming to eat Thai food.” “What?” (Me, looking puzzled) “Whitehorse people come to Skagway to eat Thai food.” On my first trip down to Skagway, Alaska (in May 2017), crossing the border, I was thoroughly perplexed at the statement by the U.S. border agent. The longer I have lived in Whitehorse, the more I have grown to understand that Yukoners crave Thai food and many will drive to Skagway just to taste the delicacies it offers. So what would make you drive four hours, round-trip through a mountain pass, and cross an international border to eat Thai food? Apparently, tasty, authentic Thai food that you cannot get in the Yukon. So it was time to go and discover what all the fuss was about and to meet the owners/operators, Jeffrey Hitt and Judd Davis, in Skagway at their restaurant, Starfire. “The Starfire restaurant has been delighting locals and the hundreds of thousands of cruise

ship passengers and crew that pass through Skagway each and every summer,” said Hitt. “We pride ourselves on serving fresh, authentic food at reasonable prices. “And let’s face it, this is Alaska, so reasonable is relative!” Davis learned his recipes for Thai cooking in several places; one of these was a restaurant in Austin, Texas, called Thai Passion. In order to work in their kitchen (staffed only with Thai nativespeakers), he had to learn to speak and read Thai. As he did this, he worked with native Thai chefs and learned to create authentic, traditional dishes. Davis also travelled to Thailand, often, studying and learning the traditional foods served by the grandmothers and mothers of his friends. “We each came to Skagway as seasonal workers and met while working in the Chilkoot Room at the Westmark Inn,” Hitt recalls. “We soon discovered that we were both from Austin, Texas, and had long careers in the restaurant industry—Judd, in the kitchen; and Jeffrey, in the front of the House as waiter, bartender and manager.” In 2004, the Texans joined forces and bought a little café,

Sabrosa, from a friend leaving Skagway. Two years later they had an opportunity to start their own business in a former Filipino restaurant on Fourth Avenue. This is where Starfire began. “Judd had been cooking for ‘Thai Nights’ in several locations around town, and they were always popular with the locals. We felt we could probably pay the bills by feeding the cruise ship employees, who are predominantly from Southeast Asia,” said Hitt. “Never in a million years did we think this crazy idea would be as popular as it is today.” As we entered to sit down in May, on a Friday night, it was like the “eerie calm before the storm.” The kitchen was stocked and ready to go for the onslaught of the busiest weekend of the season, the Canadian May long weekend. “Starfire is an extremely popular place for Yukoners. Why do you think Yukoners drive all that way just for Starfire?” I asked. “Good question,” Hitt remarks. “Our first few years, this really caught us off guard. We couldn’t believe that Yukoners would want to drive to Skagway just to eat our food. Now we plan and staff around all Canadian holidays.”

I ordered the Prik Pao, a delicious fried rockfish fillet with basil, tomato, bell pepper, mushroom, lime juice, tamarind and fresh chilies. The authentic taste and spices was like actually eating in Thailand. The portions were large, so I was glad my friend Nicole was happy to share the plate. As we were gurgling down the food, Brandon alerted me to the lost opportunity for taking photos for this very article; as such, the plates were almost devoured before I realized (hence, the half-eaten “plate” photos). The tasty dish was too overwhelming. “We import our spices and several other ingredients from Thailand. What makes us unique is our passion and commitment to the food and the industry,” said Hitt. “We wanted to create an alternative to typical Alaskan fare, such as fish and chips or burgers and fries.
