Making the most of your Portugal holiday

Part 1 of 2

ere are some of my tips on travel to Portugal as a curious 70-year-old with a “willing to try it at least once” philosophy. This is based on two weeks travelling by train with another 69-year-old woman in late March and April. We landed in Lisbon, headed south to Faro (yes, there is a Faro in Portugal), further east to Tavira, back to Lisbon, a day trip to Evora in Central

Research and focus your interest

Focus. When travelling with a friend, be clear about what you both want to get out of the trip. Is it to see the cathedrals, architecture and artwork? To experience the port wine, traditional food and music? See megalithic and historical sites or “tourist stops?” Shop ‘til you drop at local markets or shopping centres? Go on a birdwatching river tour in a solar-powered boat? Enjoy quiet contemplation or creative time? You can, as we did, find all of these and more in Portugal.

When in Faro.... Portugal ... cont’d your research before you go. Consult guidebooks, friends and, with a certain degree of skepticism, Trip Advisor and Booking.com. We booked one 10-hour tour to Evora with our own guide. It was expensive, but well worth it. The only other guided tour we took was to the Porto wine tasting and winery. Walking poles were especially useful for the winding and hilly cobblestone streets.

Be bold and go to the Tourist Info Centre! In all innocence, the first time I made a list of three or four questions to ask. Playing the dumb tourist card, I told the clerk about the list and was met with a stony silence. This was common in all the info centres, except Porto and Evora. I wondered if it was a cultural thing, or we had caught them all on their bad day, or they were tired of the same “dumb” questions? It became a standing joke and we made it our mission to leave a little smile on the faces of the clerks who provided services in info centres and train stations. We did manage a couple of times! On the other hand, people on the street were often very helpful even if they had no English and we had our limited Portuguese pocket guides.

Lisbon is a city, what more can I say? There are people, traffic and noise BUT we chose what we wanted to see. We bought a day pass for use on various forms of public transit. The system was

relatively easy to navigate once we understood the various lines. We headed to Mosteiro dos Jeronimos in the Belem district. The monastery was built in the early 1500s and we were amazed by the architectural styles and artwork.

friend chose to go to the Museu Calouste Gulbenkian, which has an amazing collection of Egyptian, Islamic, Asian and European art. I opted to explore the Parque Eduardo VII and Jardim Amália Rodriques, lovely parks that were across the street from our guesthouse! I enjoyed a café au lait and another custard tart! I also had time to smell the roses, and do some Tai chi and a bit of writing in a quiet area.

Other differences included when to “push/pull” a door, or when to pay at a café or coffee shop. I had one café clerk shout after me when I unintentionally started to walk out without paying. We’d been there so long enjoying our café au lait and custard tart, we simply forgot. The bonus is that you never feel rushed to finish your meal, no matter where you go.

The worst place we stayed was the most expensive. The hostel in Lisbon city centre was located above a train station. We renamed it “Desperation Hostel.” It had a shared, dirty bathroom, a hot and stuffy bedroom and an extra charge for a towel. We stayed in two other Lisbon guesthouses with kitchen access and proximity to public transit, train stations and the airport. At 45 to 50 Euros, they were half the price of the hostel and of good to excellent quality. All places were quiet after 10 p.m., including the hostels.

Consider the most convenient location for proximity to sights

The Porto market is a bustling streetside affair you want to see. Check access to transportation systems you’re using, keeping in mind that train stations are not necessarily close to bus systems.

Quirky systems or was it the quirky tourist? The locking system on doors! To be honest, I still haven’t figured it out. In our guesthouses we had individual keys for our room,z the apartment door and the outside door. They had skeleton-style keys with a double locking mechanism that required a specific sequence of turns. Most times we fiddled around for a few minutes before

Lisbon has several districts and it is sometimes difficult to figure out where you are in relation to the place you want to go. In one case, the Uber driver had difficulty and had to phone the guesthouse. We found that taxis were sometimes difficult to find. Toward the end, we used Uber electric cars in Porto and Lisbon, which worked really well since they rely on Google Maps to find your precise location. I could go on at length about the cultural insights and miscommunication, but I leave that for you to discover if you go to Portugal! You can be assured of an exciting adventure and, on the whole, a very welcoming place!

Joanna Lilley feels most herself when she’s writing

J

oanna Lilley has always loved reading. She’s one of those people that you’ll find in the theatre reading a book before the movie begins. It fits that she would also enjoy writing. “As a child, I also always loved writing in notebooks and diaries and the physical act of writing with pen and paper.” Later on, that translated to pushing the keys on typewriters and keyboards. “As an introvert, I often felt that writing came more easily to me than talking and it still feels that way. I feel most myself when I’m writing.” It stands to reason that this affection influenced her academic and professional choices, though it took her a while to come around to accepting that she was a writer. Growing up in the UK may have contributed to this. The class structure there made her think it was too pretentious to consider herself a writer. Lilley migrated to journalism and public sector communications. Her day job for the last 11 years has been as a senior communications advisor for the Yukon Government. “Working with words so much helped me to build up my confidence over the years and I very slowly come out of the closet as a writer who wrote creatively.” At this point, Lilley has two poetry collections, a book of short stories and a novel, with another poetry book on the way.

Joanna Lilley and her dog Though being published is a great confidence-builder, she’s come to think that it’s the act of writing that defines a person the most. “I believe that anyone who writes and has a passion for writing is indeed a writer. It is the act of writing that makes you a writer, not what you may or may not have had published.” Writing is critical to her sense of self and well-being. “I feel a compulsion to write that I think would exist even if I never was able to get anything published. This sounds a bit grandiose, but writing connects me to myself and helps me cope with life.

I don’t know what I’d do without it. It’s the thing I love doing most.” Her subjects come from life, “the everyday, ordinary experience of living.” “I’m preoccupied with how to articulate a response to what’s happening to people, animals and the natural environment all around the world. Ultimately, I’m interested in trying to articulate that response through stories, whether in fiction or poetry, and through different points of view, including animals’ perspectives.” She likes to write first thing every day, though that isn’t always possible. She finds that the act of

writing creates more writing and stimulates ideas that might not come to her otherwise. Her time preference means weekends are best for her. “I try to write on Saturday and Sunday mornings before I start doing all the things I really ought to be doing, like vacuuming, washing, responding to emails and so on. If I do those things first then the writing slips away from me. Sometimes I think I’ve mastered the skill of ignoring the dust and dirt and errands and chores a bit too well!” Her writing process varies with her projects. Both fiction and poetry require some research, but the

former needs more planning and the latter is more spontaneous. She usually has more than one project on the go, sometimes quite different work. Currently she is preparing that next book of poems and writing another novel. “When other ideas for poems or stories or themes pop into my head, I make a note and hope that those ideas are percolating somewhere in my subconscious, ready for when I can pay them greater attention.” Lilley was one of the mentors at this year’s Young Authors’ Conference, which was held at F.H. Collins High School on May 2 and 3. She also read at the Live Words public reading on May 1, joining fellow mentor authors David Geary, Sigmund Brewer, Heather O’Neill and Jan Redford. In her sessions at F.H. Collins, she had this advice for her workshop group. “If you have an interest in writing, you should simply spend time writing and spend time reading. You don’t even need to have a plan for your writing. Just start writing whatever comes into your head, however trivial and mundane, and just keep writing and see what happens.”

few weeks ago, a friend sent me an opinion piece from a recent edition of The Globe and Mail. It was about falls. Not the waterfall kind. The kind that involves finding oneself suddenly on the ground or on the floor. It was written by Sandra Martin and entitled “A Senior’s Resolution: No More Falling in 2019.” It was very well-written and also very scary. The piece described so many serious consequences of falling. As I read it, however, I also felt some anger rising up as I contemplated all the restrictions that might be necessary to prevent falling. As a retired family physician, I am well aware of the effect that a simple fall can have, especially as one gets older. A broken hip can lead to the end of independent living or even death. (A somewhat extreme outcome, but not uncommon.) I am also aware that the effects of diminished vision, hearing and balance (all common in aging) can make one more prone to falling. Then there’s the plethora of medical problems that can increase the chance of serious consequences from a fall. For me though, there is something life-affirming in having the choice to take a risk. I am talking here about physical risk, often the risk of falling. Perhaps that

NOT RECOMMENDED: being on your phone as you walk sounds crazy, but it is true for me. It is certainly an individual decision and different for everyone. If a person has osteoporosis (a thinning of the bones, especially common in small, slight women as they age), it is a very wise decision to do everything possible to avoid falling. But it is also well-known that weight-bearing exercise reduces the chance of osteoporosis. So there has to be a trade-off. I don’t want to stop doing the ex-

ercise that makes me feel alive and keeps me fit, but I also don’t want to fall and break a bone. I pondered this back in February standing at the top of Dog Hill on the Mount Mac ski trails. I was trying to decide if I really needed to snow plow or if I should just go for it. How much risk was I willing to take for the thrill of going fast? How confidant was I in my ability to make it? And then, later, as the snow receded, I found I was asking

myself whether or not I should resume riding my bike around town. What if I was struck by a car? It is also true, though, that one can fall and break a hip in one’s own kitchen, turning suddenly or tripping, etc. It is not just a question of the amount of risk, but of the severity of consequences. Unfortunately, most of us cannot know all this in advance. It was a sunny day on the ski trail, the

RECOMMENDED: acknowledging the risks and understanding the consequences conditions were good, I felt fit, so I decided to go for it! I actually fell about six times this winter, on the ski trail, walking my dog and on the sidewalk. I try to use cleats on my boots but find that they hurt the bottom of my left foot. So I take a risk. I bypass ice on the trails by going through the woods. I tiptoe across sections of icy sidewalk that cannot be avoided. I was very lucky to come away with nothing more ser-

ious than bruises. I also try to be conscious of what I am doing and not lost in my thoughts. Mindfulness is a great preventer of falls. No checking my phone, planning the future or reviewing the past while walking. Just be there. But I acknowledge that I do often take risks. I think that I understand the possible consequences and have decided that I am OK with that. (Some readers may think I am just in denial.)

hurlburt.ca Perhaps one can make a case for the difference between care and caution, and fear and risk. Fear often leads to excessive caution. That tension and anxiety can increase the risk of falls. When I was learning to mountain bike my son told me to look where I wanted to go, not where I don’t want to go. Still, my eyes are drawn to that hole beside the trail or that irregular patch of pavement. Why is that? When it happens, muscles tighten up, I clench my teeth and I am more inclined to hit the hole. I am a very fortunate senior. I have always been physically active and that has contributed to the maintenance of the ability required to do the activities I enjoy. It is extremely difficult, not impossible, but difficult, to begin exercising as a senior if one has not had the habit earlier in life. So for all you younger folks reading this, get moving while you still can.

We had some local pork belly that we got from Flat Creek Farms, left over from our Easter dinner and instead of the usual recipes of roasting it I wanted to show how we can add a touch of Chinese flair to local produce! Serve with rice for an authentic Chinese Meal!

DIRECTIONS: 1. Place pork belly and 6 slices of ginger into a large pan. Cover with cold water. Bring to the boil and cook for 5 minutes. Take out and place on a cutting board. 2. Heat a large pan or wok, add oil, add three slices of ginger, 4 cloves garlic, 3 bay leaves, 1 cinnamon stick, 1 whole star anise (or, a small pinch of anise seeds), 1 green onion and 3 dried chillies (optional). 3. Stir fry the herbs and spices until the oil is fragrant you’ll be able to smell it! 4. Slice the pork into cubes and add into the wok with the fragrant oil. Brown the pork and add in 4 cups of cold water. 5. Heat this on high heat for 10 minutes. 6. Lower the heat down to a simmer, add 1 tablespoon of dark soy, 6 tablespoons of light soy, 2 tablespoons of rice vinegar and 3 tablespoons of brown sugar. 7. Simmer for an hour until the meat is tender. 8. Remove the cooked meat and place in serving dish. Thicken the sauce a little by cranking up the heat so the sauce starts to boil. At this point, you can taste the sauce and adjust the seasoning (add more salt, some more vinegar, more sugar) to your taste.

Local play focuses on the most notorious bomber you’ve never heard of by Amber Church

I

f you’ve never heard of Paul Chartier, it’s with good reason. History doesn’t usually remember what might have been. “If he had succeeded in what he set out to do, his name would be taught in every classroom in the nation,” said Doug Ruther-

ford, local playwright. “But he failed, which has made him a very famous Canadian that no one has ever heard of.” Chartier is the protagonist of Rutherford’s new one-man production, The Last President of Canada. The play lifts Chartier from the status of Canadian history footnote and places him centre stage for a story that examines mental illness and terrorism. Paul Joseph Chartier was 44 on Wednesday, May 18, 1966, when he lit the fuse on the pipe bomb in a stall of the men’s bathroom in Centre Block of Canada’s Parliament Buildings. He intended to throw his homemade explosive from the public gallery into Question Period to “exterminate” as many members of Parliament as

possible. In particular, he was after Prime Minister Lester B. Pearson and Progressive Conservative party leader, John Diefenbaker. In the end, the only person he was able to kill was himself. Thwarted by his own ineptitude, Chartier made his fuse length too short and didn’t even manage to leave the bathroom stall before the bomb went off. “It was really par for the course,” said Rutherford reflecting on the day. “Chartier had failed at everything he had tried to do for his entire adult life. It makes perfect sense that he would fail at this act of terrorism as well.” Rutherford has been looking deeply into Chartier’s life for the last two-and-a-half years. During that time, he crafted the play’s script, a process that was complicated by the fact that even 53 years later, many details are still not publicly available. “The lack of available details creates

a whole set of challenges,” said Rutherford. “Especially since you’re dealing with an historical figure. You don’t have the leeway you do in fiction. You’re really tied to the individual. It ends up taking a lot of mental capacity.” What he does know doesn’t paint a very rosy picture though. Chartier showed signs of mental illness from his teenage years onward. Later, he was diagnosed with anxiety and borderline psychosis. The majority of his life was characterized by weird and erratic decisions. He would quit a job at any perceived slight, he ran a number of businesses into bankruptcy, he abused his wife and he had a series of run-ins with the law. “His head is not somewhere I’d like to live in for any length of time,” said Rutherford of trying to embody the character for the performance. “My wife, Clara, says she will be very happy when that individual in the basement goes away.” Rutherford was in elementary school in 1966, but remembers Chartier’s attempted attack on Parliament from the news. He has always found Chartier interesting, but in recent years, as the number of lone-actor terrorists motivated by mental illness instead of ideology has continued to rise, he realised just how relevant his story is to our world today. The challenge Rutherford faced in trying to tell that story was how to do it justice without a cast of thousands. The solution came to him as he considered Chartier’s goals for the attack. Chartier believed that the Government of Canada was responsible for everything that had gone wrong in his

life. To right this wrong he intended to deliver a 15-page speech to whomever survived his attack in the House of Commons before declaring himself the President of Canada. Rutherford realised that he could tell the story he wanted to tell with a small cast (a cast of one, in fact) if the play focussed on the powers that be giving Chartier’s ghost what he’s been waiting 53 years for–the opportunity to address the House. Rutherford will embody Chartier’s ghost on the stage. He will explore, through monologue and dialogue with sound clips, the events that led up to Chartier’s untimely demise, his motivations and his commentary on terrorism today, derived from his half-acentury of ethereal observations. The Last President of Canada will premiere at the Old Fire Hall on May 23 and will continue through May 26. It will travel to Atlin’s Globe Theatre on June 1, and then on to the Ottawa Fringe Festival later in June, where it will show at least six times. Rutherford classifies the production as a development play. This means there will be opportunities for audience feedback both online and in-person after the performance. He also cautions that some of the language his character uses when speaking about mental illness is dated and would not be acceptable by today’s standards. Amber Church is generally enthusiastic about everything, but she spends most of her time creating in an art studio and chasing a child and dog through the wilderness.

The Ravenmaster: My life with the ravens at the Tower of London

o did I! From 4 p.m. to midnight on the very day I found the last hard copy of The Ravenmaster for sale in Whitehorse. I bought it as a birthday present for a 10-year-old grandson, anticipating he might learn a few things about the Yukon’s official territorial bird. Boy, was that ever an underassessment! This lovely little 229-page gemstone of a book from the UK is not only “cute and funny” (the first two words I used to assure his parents the book was properly scouted for a pre-teen reader), but also extremely informative when it comes to ravenhood, raven history and ravenology. The book details the real-life experiences of author Christopher Skaife, who works as Ravenmaster at England’s Tower of London, famously home to a group of ravens. Legend has it that if the ravens should ever leave, the Tower will fall. This is certainly the most comprehensive and inclusive raven book this researcher has encountered, even after a lifetime of admiring the mighty, black birds from a suitable distance. Don’t be misled by this overly effusive intro into what is just another commonplace book review. Ravenmaster isn’t a children’s book. It’s intended for readers of all ages, living anywhere in the world. (Though Skaife obviously had British readers in mind while he was writing it.) The only places this book might not find a grateful readership are in the southern hemisphere because the noble raven is not found south of the equator. This is just one tidbit

Skaife also credits Shakespeare and Dickens (both Brits) as the literary bellweathers of ravenhood rather bestowing that honour on the American Poe, but all that sort of intellectual commentary comes near the end when you are totally hooked on what you are reading and have unexpectedly learned along the way. The hook is set from the first sentence, which is cast like a fly rod at 0530 on an autumn London morning. The author starts his day by hollering “good morning!” to the rising sun. This serves as his verbal signal to Merlina, perched on the highest pinnacle of London Tower, to fly down and begin her new day. Merlina is the only raven who is given the option to

stay outside overnight to guard The Tower, an assignment Skaife gave her for only one reason—she refuses to come inside unless it’s raining and sees herself as the protector of the other ravens. From that pre-dawn moment, Skaife spends the long full day with his readers, guiding them and the ravens through a daily routine which concludes with the following: “Final Check at 2300 hours: “Once again, it’s just me and the birds. The Tower is in darkness. Everyone is asleep. “I rise up onto Tower Green and open up the night box for Merlina. She’s the last to bed. She only goes to bed once all the other ravens have been put away for the night. Often she refuses to go to bed at all and stays up on the rooftops. It looks like she’s going to stay there

tonight, watching and thinking. “Almost a thousand years ago a great fortress was built by a river on its northern shoreline, on the site of an old Roman fort, a huge building reaching skyward, the likes of which no one in England had seen before. Designed to provide security and protection, it was also a reminder to the citizens of the city that they had been conquered. “Rising above it all were the birds. “They rise above it still.” In between 0530 and 2300, Skaife becomes a Tower tour guide and writes the book as if it’s just another day explaining the Tower and its ravens to the vast hordes of international tourists which number close to three million per year or 8,300 per day. The retired military machine-gunner thus becomes an entertaining guide and storyteller. This is where and how Ravenmaster gets its charm. He becomes a combination of sarcastic comedian and caustic lecturer as he goes about his job, bombing readers with one great fact after another until you find yourself awestruck at the number of things you are learning about ravens and Tower history. I thought to myself, if this pre-birthday scout reading is blowing the mind of a 72-yearold gift-giver, what will it do to the formative and fertile intellect of the 10-year-old birthday boy himself? We have a four-quadrant grandparent entourage around here, each of whom have slipped into predictable styles of gift-giving. Yours truly is the “Grandfather of Books” for our teh grandchildren, aged eight, 10 and 12 this year. I never buy toys for them and always buy books, trying to time the gifts to whatever stage of childhood development they are currently enjoying, or whatever new interests they have made public. )At one time early in their lives I referred to them as Trucks, Baseball and Horses.) Ravenmaster might be the best kiddie gift ever, but it comes with a wise grandparental warning— hide it from your parents or you may never get your turn to read it!

Raising girls’ voices with rock and roll

Teaching consent with guitars and high fives by Selene Vakharia

I

n a society where girls are socialized to be quiet and not take up too much space, permission to be loud can be an important tool when it comes to raising a generation of youth who are empowered to speak up for themselves and others. Lana Welchman is excited to help them do that. “You give a kid a microphone and probably they have never even allowed their voice to be that loud,” said Welchman , founder and committee member of Yukon Girls Rock Camp, a week-long day camp for girls and gender non-conforming youth aged eight to 17. The camps take place in Dawson City and Whitehorse, but they’re part of a worldwide movement of arts and music programs aimed at empowering youth and working together to fight oppression, including gender-based violence. The first camp took place in 2001 in Portland, Oregon and quickly spread across the globe. In 2015, Dawson City held its first camp. Through teaching girls and non-binary youth to play as a rock band, the camp teaches the more important lessons of consent, healthy relationships and standing up for themselves and others. “At camp we have this goal of creating this little world in which people treat each other in the way they should be treated,” said Welchman. “(We) create a world in which campers can express their voices and themselves in a supportive environment.” The camp teaches consent and respecting boundaries as an everyday practice, not just something

you consider when the situation is sexual. “We practice consent and we use the word consent. We start with objects,” she said. “It takes it away from sexual consent to a point of ‘this is just what you do.’” At Girls Rock Camp, you need to get consent to touch someone’s guitar or to borrow their belong-

Lana believes that practice is key to kids learning. In earlier camps, there were workshops around consent, but Welchamn said the learnings didn’t stay with

The principles of consent and healthy relationships don’t always come naturally to kids, but the moments that are the hardest offer some of the best opportunities for learning and practice. “(Working with each other in a band) can be a really difficult relationship to navigate,” said Welchman. “There’s lots of tears and lots of frustration, but we look at it as an opportunity for kids to practice healthy relationships.”

Camp counsellors and on-hand support counsellors help campers navigate relationships and have conversations where they learn to express themselves and grow. Throughout the week, campers build their skills around communication, self-expression, boundary-setting and recognizing what healthy and respectful relationships look and feel like. The goal of the camp is to arm the kids with skills and tools they can take back to the real world. “Our hope is that when they return to the real world they have these tools of ‘no this is how I want to be treated’ and ‘you can’t come into my space without asking me first,’” said Welchman. “We really believe that foundation is necessary. (You) have to get the foundations first before you can get to the realm of sexual consent.” Over the next five years, the organization will continue camps in Dawson and Whitehorse while helping to foster the program across the North. Community organizations have reached out to Welchman asking for help developing programs for their own communities. No two programs are the same.

A local group finds a small way to make a big difference by Gabriela Sgaga

A

ndy Cunningham first heard about 100 Men Who Give a Damn while living in Nova Scotia several years ago. The organization used a unique approach to raising money for non-profits in the community–one that was simple, but unlike anything Cunningham had seen before. Members made regular donations to the group. Multiple times a year, they then nominated and voted for deserving groups to give the money to. About a year ago, Cunningham (who now lives in Dawson City) and his wife, Lana Welchman, were sitting in the local tavern discussing community needs and support. That’s when Cunningham remembered the group in Nova Scotia. “I said to Lana, we should do something like this in Dawson–there are lots of people who care for their community, lots of small groups that can benefit, it’s a great place for this.” Welchman agreed. “A group like this also brings some awareness to things that are happening here, who the nonprofits are, who we can donate to. It invites people to tune in,” sais Welchman. The pair started to research, looking at other groups across the country that had the same approach. They also noticed that most of the organizations used the same sort of title, incorporating the words “men” or “women” who cared. Both Welchman and Cunningham wanted to include everyone though. “Dawson is small. We wanted to open it up to everyone and everything, so we decided on 100

the community,” said Katie Pearse, president of the Humane Society Dawson. “And the support we felt from the community, was amazing!” She said the society used the money to fund a much-needed summer student at the shelter. While meetings are short, lasting only one hour, Cunningham said it’s also an opportunity for social time with the community. “It brings together people who aren’t normally in a room together–it draws a good mix of community members and is a way to connect with different groups, find out what’s going on and see that nonprofits need help,” he said. Ultimately, the goal (and Welchman’s personal dream) is to have a meeting where 100 people show up, donate $100 each and are then able to offer a total of $10,000 to a community group. In the meantime, 100 People Who Give a Damn is doing all right. It its first year of operation, it has given away close to $9,000 in total to three different nonprofit groups including Humane Society Dawson, Canada Prenatal Nutrition Program Dawson City and Girls Rock Camp. Welchman said that in order to keep it as grassroots as possible, there is no board, no bank account and no rules. “It’s a non-organization,” she said with a smile. Here’s how it works in Dawson: anyone can sign up to be a member of the group. Members agree to write a $100 cheque once every four months. Members can then nominate a deserving group before one of three meetings per year. All nominations are put into a hat, then three names are randomly picked. The three are contacted and invited to come to the next meeting to give a five-minute presentation on their needs and how the money would be used.

“Just them and a microphone, nothing else,” said Cunningham. The people in the room then vote on which group will receive the money. This is where the only rule comes in. “You have to be in the room to vote,” said Welchman. “If people want to give, but can’t make it, that’s fine, but you can’t vote unless you’re there.” The winning group then goes to the next meeting and gives an update on how the money was used. After that, the group has to wait a year before they can be nominated again. This way, other organizations have a chance. At first, Cunningham and Welchman debated whether to split the donated money between the three groups, but ultimately

decided against it. “We wanted to compound the funds for real change,” said Welchman, noting that one large sum can have more impact than three smaller ones. After finding support from local businesses and organizations to get a website together, secure a meeting hall, arrange free advertising and a location for dropping off cheques, 100 People Who Give A Damn had its first meeting in April of 2018. It was a success, and the first group to win was Humane Society Dawson. “For an organization like ours that depends mostly on donations and fundraising, and has to work so hard to keep money in the bank, it’s such a privilege to receive such a large amount from

Tinfoil is a boon to the fine art of barbequing

infoil, as it’s commonly called, is actually aluminum foil. While it’s not essential, it is a boon to the fine art of barbequing. One of the first things to understand is that it comes in various weights/thicknesses and strengths. Some of it is so flimsy that it tears even while wrapping a nicely shaped potato. Not only does it tear, but then burning the wrapped food is almost guaranteed. Thicker foil allows more leeway as far cooking time is concerned. Usually, the cheaper foil wraps are also the thinnest, so spend a bit more and get a thicker, better quality wrap. The wider, longer rolls in the $20 range are the best buy as far as economy and quality are concerned. If it is difficult (ie: there’s tearing) to pull it off the roll, remove the roll from the box and put a small dab of vegetable oil on the circular plastic mounts inside each end of the box. The most common foil-wrapped barbeque item is probably the potato. It can be sliced, quartered, or grilled whole, with or without a slice of onion in the cuts. A little olive oil, or my favourite, oyster sauce, can be poured over the spud before completing the wrap.

Other excellent veggie combos include carrot sticks with olive oil and some cinnamon, zucchini sticks/slices with olive oil and chopped garlic, or cauliflower, broccoli, pepper slices, and sliced red onion with a little olive oil and garlic. Try any of your favourite oil-based salad dressings. If the product tends towards charring, use a little water inside the wrap and lower the heat by turning it down, or just move the wrapped item off to one side. Foil is also very useful when it comes to cooking fish. It can be wrapped around the whole fish, or around the headless, dressed fish with slices of lemon (you can also try a variety of other sauces, oils

When cooking a fillet such as salmon or lake trout, or a slab such as halibut, the foil can be stretched out over the wire rack (large enough for the fish piece) and then perforated with a fork to allow the juices to escape. This way, you retain the dry cooking method offered by the barbeque. This method is especially good if you are cooking a skinless fillet because it does not stick to the rack in the barbeque. Burgers are easier on a perforated tinfoil base because they stay together better and don’t stick as they often do on the wire rack. One of the biggest positives of barbequing with foil is the cleanup. No muss, no fuss. Just ball up the tinfoil and put it in the garbage. Please don’t put it in the fire as it does not burn.

edible berries in the honeysuckle and cotoneaster bushes in our Riverdale yard. Early the next morning,

a small flock of waxwings

showed

up

and

settled high in our fir

tree, soaking up the sun

and eating snow. They soon started to visit all the berry bushes below.

Some were quite acrobat-

ic, even hanging upside down to reach a berry.

It was all quite magical. Such beautiful birds!
