Colourful trees in changing seasons

H

i all! As the seasons and colours change, inspiration is everywhere. Last time we explored complementary colours; this time we will explore monochromatic colours, or the colours that are neighbors on the colors wheel. We will have the vivid yellows, oranges and reds, and add some green to build on the combinations we already tried. Playing with colours is plain fun. There’s no way to go wrong! Grab your colours and let’s go.

What you’ll need: • colours

[green, red, yellow orange] yellow, • paper

1. Take one of the above colours and make random lines (approximately one inch in length) all over the paper, spaced out.

Ingredients • 1 lbs deer meat • Dry red wine • Steak spice to taste • Your favourite barbeque sauce • Garlic powder and pepper to taste

Instructions Mix and simmer together for about 15 minutes. Brown enough venison steaks to feed half a dozen hungry family members. Once browned, cover with above sauce. Bake at 350 F for about one hour.

ne thing you know for sure about wild meat is that it hasn’t been loaded with chemicals and growth hormones to get it to market quickly. In general, it has feasted on wild plants and grasses. It’s about the most natural meat you could get. When hunting and harvesting wild game, you know the exact date it was harvested, the type of animal, when it was butchered and put in your freezer. The difference in taste is remarkable. Unfortunately, my hunting days have rather come to a close, so the closest meat we can get is from the Circle D Ranch, just north of the Whitehorse. That’s where we get our Black Angus meat, freshly killed, hung and butchered on the ranch. There are no chemicals added and the animals feed entirely on chemicalfree grass fields. What more could a retired hunter ask for? Of course, in the final analysis, venison is one of the finest meats you could adorn the supper table with. I’ve used the following recipe to cook it. Different big-game animals have specific heats and cooking times, as you’ll see below.

Instructions Lightly brown your onions in butter. Remove these from the fat and then slowly brown your steaks on both sides. Spread the browned onions over the steaks and cook very slowly for about 30 minutes on the stovetop until the steaks are tender. Mix together the sour cream, flour and brown mushrooms to create a sauce. Add this to the steaks while still hot. Cover and simmer for about 20 minutes.

Venison chops with garlic Ingredients • 5 to 6 venison chops • 2 cups of cooked diced carrots

1 garlic clove 4 tbsp flour 2 tbsp cooking oil 4 tbsp chilli sauce 2 medium white onions, chopped • 3/4 cup dry wine • Salt and pepper to taste Instructions Rub chops with cut clove garlic, sprinkle with salt and pepper. Sear chops on both sides in cooking oil in a frying pan, then remove to a baking dish. Sauté onions and carrots in frying pan until the onions are soft. Add the flour, chill sauce and wine. Cook until thickened. Place some of the carrot mixture on top of each chop and bake at 300 F for 45 minutes.

Instructions Take 1 lbs piece of deer loin or hind. Cut into steaks to about 2 to 3 centimetres thick. Place this in a non-metal marinade dish. Sprinkle with steak spice, garlic powder and pepper. Add a small amount of dry red wine and allow to stand for 2 to 4 hours. Remove and place on a hot barbeque to sear for 3 to 4 minutes. Turn the heat down to low. Pour the remainder of the marinade over the steak and then close the barbeque cover. Allow to set for about 6 minutes. Turn the barbeque to high heat and flip steaks over. Baste with barbeque sauce. After 4 minutes, turn temperature down to low. Steaks should be ready in about another 7 minutes. I’ll close this week’s column with some wise words on survival: The best way to make an emergency fire with two sticks is to make sure one of them is a match. And I will say Amen to that brother! Better than box, fiveingredient mac and cheese

S

uperfast, super easy and super delicious, this sauce comes together quicker than you can boil a pot of water for the noodles. Make sure you’ve got everything whisked together before you turn on the heat. Once you’ve tried this a couple of times, start giving new cheese and additions a try. Add garlic and use parmesan instead of cheddar and you’ve got alfredo. Stir in some cooked bacon (or hotdogs, definitely hotdogs), maybe a can of tuna, or some broccoli. Serves 4

❑ 1 (354ml) can condensed milk ❑ 1 1/2 cup grated cheddar cheese ❑ 1 tsp plus 1 tbsp cornstarch ❑ 1 tsp prepared mustard

Truthfully, if you count salt and pepper it’s seven ingredients

Whisk together condensed milk, cheddar cheese, cornstarch and mustard in a pot. Place a pot over medium-high heat and bring to a simmer, stirring constantly. Season to taste with salt and pepper.

Musicians in Isolation with Manus Hopkins

Melia Hudgin The second artist featured in our “Musicians in Isolation Series,” multi-stylist Melia Hudgin is currently working on her debut EP and preparing to move to Toronto in the fall.

M

usic came to Melia Hudgin completely naturally. She was singing as soon as she could talk, often with encouragement from her grandma, who was a member of the city choir. After playing in several school musicals and teaching herself guitar in elementary school, then studying in Wood Street School’s MAD (music, arts and dance) program in high school, Hudgin eventually turned her attention to creating her own music. Earlier on in high school, Hudgin thought she wanted to eventually go to college or university for theatre, but making music of her own became a priority after she got into emo and punk music styles. She cites singer and rapper Lil Peep as one of her biggest influences and a key reason she felt inspired to start producing her own beats and writing her own lyrics. “The way he was very upfront and real about the things he went through in his life was very inspirational to me,” she says of Lil Peep. “I could almost completely relate to the things he was talking about.” Lil Peep was known for being candid about his struggles with his sexuality, as well as with drugs and depression. He died of an accidental overdose aged 21, but remains a highly influential figure in several modern music scenes. Hudgin herself has also been boldly honest in her lyrics about her own experiences with issues like dysmorphia and addiction. A wide array of influences makes it difficult to find one genre or style in which Hudgin’s music can be boxed. Artists she draws from range from emo and alternative bands like My Chemical Romance

and Kings of Leon to contemporary rappers lie $uicideboy$ and Chief Keef. But with a wave of genrebending, convention-defying artists permeating the mainstream music scene right now, Hudgin is in good company as a multi-stylistic artist. She releases her music on Soundcloud under the name ‘princess meliá’, and also uses Soundcloud as a networking tool to connect with other artists. For Hudgin, being a producer is just as important as being a singer. Producing her own beats gives her an added level of artistic freedom and creative control, and it’s important for Hudgin to be able to do it all herself without having to rely on others. “I do love working with other artists, but my philosophy is definitely defined by having an independent personality,” she says. Right before COVID-19 hit and everything started getting shut down, Hudgin had moved to Edmonton, aiming to begin supporting herself there while working towards going to music school. She ended up returning to Whitehorse, and while the stress associated with the pandemic and a sudden relocation hindered her productivity and motivation at first, she didn’t allow it to stop her from making music, and has still been steadily releasing tracks on Soundcloud and working on her first EP, for which she’s teamed up with Keenan Davis, a producer from Dawson. “I have a lot more time to work on things now,” she says. “I feel like because I’ve had time to sit with myself and my thoughts, I’ve had a huge creative rush with writing songs.” Not content to just make music

Part One When you fly over Yukon and British Columbia, look out your window if you can. You will see an endless, rugged landscape, broken by lakes and rivers. The first geologists who came to map this vast land did not have the fortune to do a flyover first. As different means of transportation evolved over the past 100 years, so has the way maps have been made.

T

he earliest geology maps of the Yukon show only the rocks that line the major rivers; there are vast blank areas beyond the shoreline. If people wanted to cover a large distance in the shortest time you travelled by boat, mapping as you went. The Geological Survey of Canada (GSC) was created in 1842. The survey’s earliest days were spent mapping around the Great Lakes and locating coal reserves in Nova Scotia. After confederation the GSC expanded their reach to the west, mapping potential routes for the new railway in 1871. The GSC mounted their first geological expedition to the Yukon in 1887. This was organized due to sovereignty concerns triggered by a trip Lieutenant Frederick Schwatka of the United States Army made in 1883. Schwatka traversed and mapped the length of the Yukon River naming many of the fea-

tures we know today. The 1887 expedition to what was then known as the Yukon District of the Northwest Territory was led by George Mercer Dawson. The expedition had three parties. Dawson and his four men traveled up the Stikine River and into the Liard River to Frances Lake, then overland to the Pelly River and finally up the Yukon River and over the Chilkoot to the coast. William Ogilvie a land surveyor and his party started at Dyea went over the Chilkoot Pass and down the Yukon River. His goal was to establish the exact location of the boundary between Yukon and Alaska. The final crew led by Richard McConnell split with Dawson at the Liard River and went downstream to Fort Simpson and beyond. After taking the newly built railway from Ottawa to Vancouver, Dawson’s expedition caught an Alaskan steamer to Wrangell,

y dog Bear has special needs. There, I said it. His name is Bear, because a small dog needs a big name. After the death of his brother and constant companion Moose, Bear developed separation anxiety. We

got him a new brother, Cariboo (Boo for short), but were not sure he could ever be kenneled again. We love to travel, but always had stress about leaving our boys with strangers. That’s when we found Heather Grantham, the dog whis-

perer at Kluane Point Kennel in Haines Junction. Heather and TJ Grantham, long-time Yukon residents, have turned their love for animals into a new kennel which provides service to both local dog owners and those

Heather Grantham holding a doggie client, Pumpkin vibrates with a positive energy and shares a confident optimism. Heather calmly listened to my concerns and designed a plan which included a trial stay to assess the dogs. Sometimes dog owners also have separation anxiety and need reassurance. It was comforting that Heather was optimistic about having a positive outcome and she was right. She knelt down to greet my small dogs and they loved her. Throughout their stay, Heather sent updates and pictures to ease our worries. Kluane Point Kennel is located on a little farm just outside of Haines Junction, with views of the majestic Kluane National Park mountains. Their farm includes ample room for horses, chickens, ducks, cats and, of course, dogs. The Granthams have lived in Haines Junction for about six years and the kennel is the realization of a long-held dream. Kluane Point Kennel is already building a solid reputation among dog owners. The family-run business provides both short and long-term dog boarding. Heather and TJ’s chil-

dren take an active part in walking and caring for the animals in their charge. In addition to boarding services, clients can drop their dogs for the day so they can travel to Whitehorse for supplies without the worry and stress of leaving their dogs in their vehicle. The kennel building is located adjacent to the house. Each dog has their own heated indoor space which backs onto a one-acre fenced dog park for supervised outdoor play. For dogs who do not play well with others, there is a separate run for individual exercise. The kennel also caters to customized care for dogs with special needs, including administering medication, observing special diet requirements and more. Heather sends emails and pictures of how the dogs are adjusting to their stay at the kennel. These assure owners that their dogs are happy and being cared for. In addition to boarding services, the kennel provides half-hour training sessions to teach basic dog manners such as walking at heel,

jumping up, barking, recall, crate training and extended stay/place work. Dogs staying at the kennel get supervised socialization with other dogs and people (including children), as well as exposure to other animals such as horses, chickens and cats. Heather works on owner-identified unwanted behaviours and helps the dog and owner to overcome them. Heather and TJ Grantham are committed to providing the best care possible for their customer’s dogs. As the first anniversary of the opening of Kluane Point Kennel approaches, it is as clear as their view of the mountains, they are doing just that. Early geological mapping ... continued from page 11 Alaska. Then up the Stikine River as far as you could go by boat, to Telegraph Creek. From there the trip to Dease Lake was by pack horse along a cart trail constructed by the British Columbia government. The trail followed a long used route the Tahltan Nation used for trading with the indigenous peoples of the interior. Dawson arrived at a still frozen Dease Lake in early June and set about to whipsaw planks to construct three wooden boats. With the addition of five indigenous guides and boatmen they headed out on June 18th, just after the ice went out. They travelled down the Dease River to the Liard and then slowly up the Liard and Frances Rivers, arriving at Frances Lake on July 8. Here they left their boats to make a three week hike overland into the Pelly River drainage. There the GSC crew built a canoe with canvas they had packed in. A canoe was better suited than a wooden boat for the rough sections of the upper Pelly. On August 11, they reached Fort Selkirk on the Yukon River and built their fifth and last boat. This boat took them up the river to Lindeman Lake where they hiked over the Chilkoot to Dyea on September 20 to catch a steamer south.

Share the Spirit Yukon started as “Adopt a Family” by Ed and Donna Isaak in 1996. Its name changed to “Share the Spirit” in 2000 as the Kin Club & Kinnettes took over. They ran the program successfully until 2016 when we, the Whitehorse Firefighters Charitable Society, took over responsibility for helping Yukon families during the holidays. We started using our firefighting connections and linked together communities across the territory. Today, run by off duty Whitehorse Firefighters, “Share the Spirit Yukon” is the largest Christmas assistance program in Northern Canada, helping 724 children in 2019. The delivery area makes this program the largest of its kind in Canada, today helping 10 communities (Whitehorse, Dawson City, Watson Lake, Haines Junction, Carcross, Tagish, Old Crow Carmacks, Mayo, and Pelly Crossing) over 2000 sq kms. We work with over 20 governmental, nongovernmental organizations to make sure the gifts and food are getting to those who need it the most. With generous help from local families sponsoring those in need, and with business/private donations, we continue our quest to make sure no child goes without at Christmas in the Yukon.

This is the season for tall tales, for digging in the freezer for fish caught in the summer, for whipping up a batch of salmon patties and gathering your small crowd around to enjoy them with ice cold vodka and some outrageous fibs

P

eople who live and work on the water are good at tall tales. Fisher people don’t just tell whoppers about the whopper that got away, they tell ghost stories, stories with an element of magic, stories that strike a chill into the heart. The movie Jaws is one such tall tale. For me the two scariest moments in that movie include the very beginning at the beach party—I still can’t watch it—when the young woman in the dark water is all alone except for the drunk guy on the beach and suddenly she is being pulled one way and then the other by a terrible unseen force below. There’s thrashing and screaming and then silence and the calm sea. The other scariest moment is in the boat, again at night, in the galley after Robert Shaw and Richard

Dreyfuss have compared scars and the light swinging over the table illuminates Robert Shaw’s face as he tells Roy Scheider and Richard Dreyfuss the story of the USS Indianapolis after it was torpedoed by a Japanese submarine in 1945. It sank in 12 minutes, he says, leaving 800 sailors adrift in the ocean and under attack by the sharks that circled the sailors in the water. It ate them over three days while they tried to defend themselves, linking arms and facing outwards, kicking and yelling at the sharks, who paid them little heed. One of the scariest lines in the movie is “sometimes that shark would go away, sometimes he wouldn’t go away.” I have my own tall tale: one fall evening in Greece my partner and I were circling a remote island in a rising wind looking for a place to

harbour for the night. We chose one spot on the lee side, but soon the waves were threatening to bump our boat against the rocks, so we upped anchor and chugged to another protected bay the wind had not reached. We lit a cooking fire on a flat rock and settled in with a glass of retsina and had just put three fat melanuria to grill on the coals when a rogue wave swept over the rock and took fire, fish and restina with it. We scrambled back into the boat and, for the next hour, raced frantically from one bay to another as the wind grew stronger and the waves higher, the sky darkened and we couldn’t see a thing, growing more and more desperate until my partner remembered that he had heard, in the old stories, of two heavy cables laid in a bay on the island’s southern

side anchored into the rock on either shore. We drove into that exposed bay and he shone on a light onto the rocks, found one anchor, followed the cable with a grappling hook, lifted it into the boat and tied our bow line to the bight at the cable’s end. He grappled on the sea floor for the other cable, found it, hauled it up and tied our off our stern line to the bight. We rocked in the middle of the bay for that night and for the next four nights, held snugly in place by the cables while the storm raged around us. Our only regret was we didn’t have any brandy. Smoked Salmon Patties with Wasabi Mayo Ingredients: • 1/2 lb hot-smoked salmon • 1/4 cup to 1/3 cup breadcrumbs • 2 whole green onions, both white and green parts, minced • 2 tbsp minced capers • 1 large egg, beaten • 1 tbsp lemon juice • 1 tbsp grated lemon zest • 2 tbsp mayonnaise • 1/4 tsp freshly ground black pepper • 3 tbsp breadcrumbs for coating patties • 1 tbsp butter • 1 tbsp olive oil

Makes about 25 patties, 1-inch in diameter and ½-inch thick.

Wasabi Mayo Ingredients: • 2 tsp wasabi powder • 2 tsp cold water • 2 tbsp mayonnaise • 1 tsp soya sauce Instructions: Mix wasabi powder and cold water together until smooth. Add mayonnaise and whisk until smooth, followed by the soya sauce. Chill until ready to serve. Makes about 3 tbsp, enough for 25 patties. Instructions: Remove the skin from the smoked salmon and flake it into a medium-sized bowl. With a fork, lightly stir in the breadcrumbs, green onion and capers until thoroughly combined. Whisk together the egg and remaining ingredients in a smaller bowl and pour over top of the salmon mixture. Stir to combine. Form a small appetizer-sized patty from about one tablespoonful of the mixture. If the mixture is not stiff enough to hold together, add more breadcrumbs, one tablespoon at a time, until the patty holds its shape. Continue to form patties, placing them on a parchment-lined baking tray, until all the mixture is used up. Coat each patty in bread crumbs before frying. Melt butter and oil in a castiron frying pan over medium heat. When the fat is sizzling, cook patties in batches, 3 minutes the first side, 2 minutes the second side. Keep warm in a 200F oven until all the patties are done. Serve warm with wasabi mayo on the side.
