Some changes have been bittersweet, such as saying goodbye to the executive director, Joe Wickenhauser. Wickenhauser joined Queer Yukon in 2020 as QYS’s first permanent employee. Since then, as the QYS communications manager, Sirois said, “He [Wickenhauser] tirelessly led the organization through a tremendous transformation, from an allvolunteer Pride committee, to an established service-providing organization.” Other changes have been groundbreaking. Recognizing the need for safer spaces to gather, access resources and connect, QYS has been renovating their new inclusive drop-in community space in downtown Whitehorse. hard to say because it’s very timespecific and situational. I think community can change pretty quickly, especially these days. We’ve been seeing a lot more folx moving up to the territory who are who are out, trans, and queer. We’re also seeing more youth participating or wanting to participate. “QYS wants to do a lot for the community but with, again, a somewhat-limited capacity. We have to kind of be cautious as to how we move forward, so we’re not promising absolutely

everything.” Sirois smiled, then continued, “But we also want to serve our growing, expanding communities to the best of our abilities.” Listening is at the core of how QYS grows. Sirois said, “We’re trying to push for Queer Yukon Society to become more advocacy centered. Many requests we hear from the community are focussed on the need for resources, support and a need for health-care assistance and navigating the healthcare system. We are really trying to put our attention to [what

the] community needs most and in those sectors of advocacy and resources.” QYS and Sirois put a lot of heart into their work. “We still really deeply care for community and want to see them safe, protected and have the resources they need.” She continued, “We will advocate for [and] on their behalf for as long as we’re here—especially when we see the youth show up and engage and participate! It’s always very exciting to me to see that next generation coming in and be excited to be out.” n

hree days of dance, parties, crafts, music and more will be offered from August 12–14 in Haines Junction. Augusto! Children’s Festival will be back after a long break because of the pandemic. It is the fourth time the festival will take place. The Dakwäkäda Dancers will open the festival in the Grand Hall at the Haines Junction Convention Centre. “We are really excited to be able to hold the festival again. The pandemic has been challenging but we are very pleased that 80 per cent of the presenters contracted in 2020 will be at the festival this year,” Darlene Sillery, (a board member and organizer) said. One of the main acts will be the Saturdaynight feature performers Les Soeurs Kif-Kif (The Kif-Kif Sisters) from Montréal. Inseparable since birth, these identical twin sisters have been doing street performances all over the world, for over a decade. They describe their work as a charming cocktail of theatre, circus, magic, puppetry and, typically, French craziness. The Saturday-night feature performance of the Kif-Kif Sisters is open to the whole community, Sillery added. “We are also excited to welcome Ken Bishop, of Friends Forever Puppets, who has performed thousands of puppet shows. His variety shows feature lively songs, fast action skills, and dialogue with a multitude of characters,” Sillery said. New this year will be a closing 45-minute puppet show on Sunday afternoon, with Friends Forever Puppets. This event is free to everyone. Sillery is sure this will be a great finale to the festival. Ken Bishop is based in Alberta. He also starred on Story-

time, a Saturday-morning kids program that aired across Canada, on CTV, for over five years. On his website, he writes that all of his puppets are original and that at one time he owned over 350 characters. Augusto! Children’s Festival provides an opportunity, not only for children but also for their parents, to experience a variety of art, craft and music activities through shows and workshops led by professional artists. The goal has been to design a festival that involves the whole community— artists, attendees, volunteers and local vendors.

is more, Sillery said: “Over the weekend, twenty-eight one-hour art and music workshops will be on offer for ages five to twelve. For ages two to four, Toddler Town will be a mini festival, by itself, with structured activities, short concerts and an amazing cardboard village to explore.” The festival is, in part, a legacy of the Alsek Music Festival, which ran for 17 years in Haines Junction. That music festival was a big part of every summer, with many local people participating in it. Augusto! is similar, with community members participating as audience members (both kids and parents), presenters, volunteers or service providers. Three of the festival’s current board members worked with the Alsek Music Festival, with local musicians. Sillery said it is important for the community to hold the festival. “We believe festivals are good for communities, and our current demographics, in Haines Junction, of young families and active grandparents, seemed the perfect fit for a children’s festival.” Festival organizers work year-round to plan and fundraise for the event. “We sell 120 tickets for the festival, but with presenters, parents and volunteers, approximately four-hundred people participate over the weekend. The first festival was in 2017. Because of Covid, there wasn’t a festival in 2020 and 2021.” Tickets are still available for Augusto! Children’s Festival and can be purchased through email, until midnight on Friday, August 12 (augustofestival@gmail.com). Names and ages of children, as well as names of parents or guardians who will be attending, as well as their contact numbers, are required. Children ages five to 12 can register for up to six workshops. For Toddler Town, no preregistration is needed. n

The Kif-Kif Sisters will be performing in this year’s Augusto! Many local artists will offer workshops Musician and singer Annie Avery will host the Friday-night dance, as in past years when the festival was running. Amber Church will show children how to create monster puppets. Some of the programming for this year’s festival includes workshops where kids can create dream journals and cardboard animals, or play musical games. Megan Melanson will host a Mad Hatter workshop where she will show children how to create their own hat. Karrie Brown will use her traditional beading and sewing knowledge to show kids how to craft their own furry iceworm. Annie Desautels will help children to prepare an Enchanted Forest Explorer’s Kit. PREMIER PUTS HIS ‘BEST FOOT FORWARD’ AND MAKES A LITTLE YUKON HISTORY Who drank the 100,000th Sourtoe Cocktail?

W

ell, now we know. The famous drink (also known as The Toe), was created by the equally famous Captain Dick, in 1973, in the even more famous locale known as Dawson City, and has been a major “Yukon To Do” for visitors and locals alike. Since 1973, the number of exclusive members of the Sourtoe Cocktail Club has climbed steadily, over the years, to reach the numerical milestone this week. Premier Sandy Silver was the individual who figuratively and literally bellied up to the bar to make a little history on July 19 when he downed the 100,000th Sourtoe Cocktail. The Downtown Hotel in Dawson is where the Sourtoe Cocktail resides and, as legend goes, it in-

volves drinking a shot of whisky (or gin) with a mummified human toe in it. Once the Toe touches the imbiber’s lips, they will have officially joined the club and will receive a certificate to commemorate the occasion. Downtown Hotel’s Director of Sourtoe Cocktail Relations, Adam Gerle, said the excitement had been building, in Dawson City, in anticipation of the auspicious moment, with designs on enticing AList celebrities to potentially be in on the history-making event. Gerle said he had even invited Canadian actor Ryan Reynolds up to do the honours with his (Reynold’s brand) Aviation Gin. But it is the Yukon’s top politician who is claiming the bragging rights and “no-toe-riety” of drinking the 100,000th Sourtoe Cocktail, Gerle said. Sandy Silver is not just the Yukon’s Premier, he is also MLA for the Klondike riding, where Dawson City is located, and a

He beat out other contenders for the bragging rights. “I don’t often get asked to fill in for Ryan Reynolds, but I’m always happy to oblige,” the Premier said. “Drinking the Sourtoe Cocktail is a time-honoured tradition in my hometown of Dawson. Visitors from around the world have touched their lips to the Toe, and so have many residents. I am thrilled to have been served the 100,000th Sourtoe Cocktail … it’s not my first and it won’t be my last.” Terry Lee, who is the current Toe Master at the Downtown Hotel, enjoyed Sourtoe Cocktail

He would be thrilled to know we’re hitting 100,000 members!” Captain Dick Stephenson was the founder of the Sourtoe Cocktail, back in 1973, and presided over every tip of the glass containing a toe, until he passed away in 2019. However, the legacy of Captain Dick lives on in

physical form, as well, after he willed all 10 of his toes to the Downtown Hotel. Lee said it was a way to ensure that there will be more Sourtoe cocktails in the future. “Fresh toes are difficult to come by these days, and his generous “toe-nation” will help ensure the tradition continues.” Gerle said this milestone just adds to the legend and the history that makes the territory so interesting and special. “Only in the Yukon,” chuckled Gerle. “The poet Robert Service was correct: there really are strange things done under the Midnight Sun!” n

FLY STRAIGHT LIKE A HONEYBEE Most of us have watched bees as they “buzz” from flower to flower

T

heir flight pattern is anything but straight. They zig, they zag, they hover and finally they land on a flower’s center to indulge in nectar, pick up pollen and return to the hive where they make that sweet stuff that most of us have grown up with— honey. So, the idiom make a beeline for is a bit of a mystery as we watch the erratic dance of bees. And one of the key tenements of geometry is the well-known fact that the straightest distance between two points is a straight line (hated math, loved geometry). So, what’s with bees and beelines? And why have we developed this helpful idiom to describe the most-direct route from “A” to “B(ee)”? The mystery is solved after honeybees have finished their business in the flower patch. Loaded with nectar and pollen, they fly straight back to the hive

BRAKE FLUID

Regular brake fluid changes ensure that a car’s braking system operates safely and effectively. Modern braking systems use brake fluid to transfer the application of the brake pedal down to the front and rear brakes, to bring the vehicle to a stop. The fluid is usually silicone based, which does not compress, giving a solid pedal feel and an increased temperature rating. The downside to using this style of fluid is that it absorbs moisture from the air. Constant braking causes massive amounts of heat to be generated by the braking components, which is then transferred into the fluid. If there is moisture in the fluid, this will decrease the temperature rating of the fluid, and can result in a soft brake pedal and increased stopping distance. Most manufacturers recommend brake fluid changes every 2 years, regardless of kilometres travelled, but it may need to be changed more frequently if the vehicle is operated under abnormal conditions.

o when it came time to celebrate a friend’s milestone birthday, I was determined to pick the perfect bottle of bubbly. With so many choices and varieties available, how do you know what to get if you want to make a lasting impression? The way I see it, there are two safe choices: going with something classic or going with something new. In this case, I opted to go for something new, which was Rosé Prosecco. While Prosecco itself has been around since the 1700s, Rosé Prosecco first launched on the market in 2020. Why it took so long to be developed is a bit of a mystery. But what is known are the specific regulations that must be followed in order to produce it. In Italy, there is an organization called the Denominazione di Origine Controllata (DOC or destination of controlled origin). This organization regulates Prosecco products, and all Prosecco produced under the DOC label are of the second-highest quality—the DOCG being the highest. Let’s take a look at what some of the rules are for producing the new found Rosé Prosecco. Regular Prosecco is made with the white Glera grape. Rosé Prosecco must be made of the same Glera grape and the Pinot Noir grape. But the amount of Pinot Noir must fall between 10–15 per cent of the batch. Rosé Prosecco must also undergo a second fermentation process, for a minimum of 60 days, in order to keep its fizz-like composition. Still or flat versions are not allowed to be produced under the DOC label. The word Millesimato (85 per cent of the grapes used are from the year of the vintage) must be on the label, along with the year of

The bottle that I got my hands on is called Santomè Prosecco Rosé Brut. This batch comprises 90 per cent Glera grapes and 10 per cent Pinot Noir grapes. The grapes for this brand are grown in the northern Italian region of Trevino. For the rosé blend, there is a special section of 27 hectares on a small picturesque island called the Grave di Papadopoli, which sits in the middle of by the Piave River. The soil on this island is apparently ideal for enhancing the main attributes of Prosecco— scent, freshness and a balanced taste. Now, time to taste this new

pretty-looking Prosecco. Of course, I let my friend have the honours of having the first few sips. She described it as being very fruity, light and lovely. Then she downed the rest of the glass and moved on to a second one (always a good sign). My palate is a bit more sophisticated and this is how it tasted to me: when you first taste it, there are sweet hints of raspberries and strawberries. The bubbles are not overpowering and, therefore, the taste of the fizz is light. The finishing notes taste like roses, with slight honey accents. Overall, the taste is well-balanced, crisp and fresh. In our case, it paired very well with chocolate-dipped strawberries. Very happy with how this new discovery turned out and would highly recommend it to any Prosecco lover. n

SEARED ONGLET STEAKS WITH ROASTED POTATOES

O

nglet is the French description of a hanger steak, a lovely little tab of meat that comes from around the lower belly of a cow. This local beauty is from Tum Tum’s Black Gilt Meats, next to Takhini Gas. If you have time, let your steaks sit in this rub overnight; if not, a half hour on the counter while you’re getting everything else together will be just fine. What this bistro steak deserves are some perfect crisp french fries, but that’s a lot to deal with in the middle of the week. Instead high roasting a few small local potatoes gets you the creamy, crisp, salty bite without having to deal with a pot of oil. Or I guess you could use an air fryer? I’ve never used one but this seems like a good place to break out that kitchen tool if you’ve got one. Serves 2.

Ingredients:

ð 1 Tbsp salt ð 1/2 tsp dried rosemary ð 1/2 tsp cracked black pepper ð 1/2 tsp red pepper flakes ð 2 onglet steaks ð 5 Tbsp olive oil, divided ð Salt, to taste ð 8–12 small potatoes, halved (or quartered depending on size) Fresh thyme, optional ð Asparagus, optional ð

1. Combine salt, rosemary, cracked black pepper and red pepper flakes, then mix well. Rub onto the steaks and let sit for at least 30 minutes and up to overnight in the fridge. 2. Heat oven to 425℉. Toss potatoes with 3 tablespoons of olive oil and season to taste with salt, then place potatoes cut side down in a cast iron pan. Roast potatoes for 20 minutes (or until brown on one side and beginning to soften), then flip the potatoes and continue to cook until potatoes are brown and soft. Remove from the oven and let rest. 3. Heat 2 tablespoons of olive oil in a large skillet over high heat. When smoking, add steak to the pan and cook for 3 minutes, then flip and cook an additional 3 minutes for rare (or continue to flip and cook until you reach desired doneness). Let steaks rest for 10 minutes before slicing. Serve with potatoes and top with fresh thyme. n

im Falconer’s new book has a long and unwieldy title, but it probably needs it to cover the contents appropriately. While Klondikers: Dawson City’s Stanley Cup Challenge provides the hook that will get the book bought by many a Yukoner, a larger part of the story here is given by And How a Nation Fell in Love With Hockey. The Dawson Challengers do get an early mention in the book. The three-page prologue is all about

their trip and their dream to contest for the Dominion Hockey Challenge Cup (better known as the Stanley Cup, after the Governor General who donated it). But Dawson’s history with hockey stays on the back burner until page 89, and part one of the book is about how hockey developed into a craze and how Weldy Young, who was a star player in the early development of the game, back in Central Canada, was probably a key factor in persuading mining superstar Joe Boyle to sponsor a team between 1899, when Young moved here, and 1905, when the trip began. We complain about violence in the game, but Falconer’s history shows that it has always been there and was always part of the fan attraction. He doesn’t really clear up where the game began. I went to grade 12 in Windsor, N.S., one of the towns that lays claim to its origins; but Kingston, Ont.; Montreal, PQ (Quebec); and the Indigenous settlement of Déliine, on Great Bear Lake, where Franklin’s crew played it, all get a mention, and similar-sounding games, in various parts of Europe and North America, blur the lines still further. In our time, professional teams compete all year to get a shot at the cup. Professional was almost a cuss word to the early promoters of the game, which slowly moved out of Ontario and Quebec as the nation expanded westward. It was a challenge cup then, and any place that could mount a team and finance the trip could have a go, maybe after some local playoffs. Once the game moved to indoor arenas, there were costs to be covered and prizes to be won. That kind of explains why what was essentially a central-Canadian preoccupation would even consider accepting a challenge from someplace as far away as Dawson. Klondike still had its romantic cachet in that first decade after the Gold Rush, and there was some promotional value in linking it to the game.

That Young had been a star in the game’s early days in the East helped, and Boyle’s reputation, though not as legendary as it would become after his adventures in World War I, was persuasive. He was known as a man who could get things done. There’s a fair amount about Boyle’s early years in this book, though we’re all still waiting for Max Fraser’s film to get the whole story out there. Part two of the book alternates between Dawson and Outside; and part three (the last 65 pages) concentrates on the actual Klondikers’ trip and the games they played, including the actual contest and a barnstorming tour around Central Canada, the Maritimes and some game in the United States. Falconer was the Berton House Writer-in-Residence, during the summer of 2012, while he was working on the book that would be called Bad Singer: The Surprising Science of Tone Deafness and How We Hear Music. It’s another long title, but the visiting author, who helmed a radio show at CFYT-FM, while he was here, has been frustrated by this problem for most of his life. The re-enactment of the original trip, staged in 1996, was long over by the time Falconer arrived here for his return visit (he had worked in a mine here, years earlier), but it was still a tale being told—especially among hockey players, of whom Falconer was one. At that time, only a couple of years had passed since Don Reddick’s book about that trip, called The Trail Less Traveled: The Yukon’s Dawson City-to-Ottawa Stanley Cup Reenactment, had been published, so the tale was still fairly fresh. Nevertheless, Falconer says it was only several years later that he thought of writing about the game and the event. There was a lot of research involved, but he reserves special thanks for Dawson City Museum staff Angharad Wenz, and former director Alex Somerville. n

In 2018, I started riding a mountain bike named “Grasshopper”

n my stories with What’s Up Yukon, we discovered how to maintain a bike, how to ride a bike (and not die) and, generally, how challenging taking up a new sport in your thirties can be. It’s been four years, and each year I bike more and more, and now I bike in the winter! So, in this next series, I wanted to highlight how special mountain biking is for making lifelong friends, for keeping your dogs active and for surviving and building your rela-

tionship with your spouse, while discovering the Yukon in the process. So let’s dive into “Biking with Friends.” When I moved to Whitehorse, I knew absolutely nobody. But mountain biking changed that and here’s how:

CMBC & Dirt Girls When I first attempted to bike, I literally couldn’t imagine ever changing gears or staying upright and watching where I was going as I went down a hill I could barely walk down. But over the years, my confidence grew and that was mostly thanks to other people. I joined Contagious Mountain Bike Club

I first posted on their Facebook page that I was looking for someone with the patience of a monk, to ride with me, and I inadvertently made a best friend, Michelle Friesen, who ended up being my wedding officiant four years later! It’s completely a supportive and inclusive environment to go ride bikes at your level, in a safe way, together. Michelle led a Dirt Girls group one evening. It was an easy-level

group, and the overall, badass women that came meant that we were all ripping it as hard as we were comfortable with. You can also volunteer at any of these groups or with their board.

Skills, clinics & events There are a lot of events out there. For me, I can barely survive 20 kilometres of mountain

biking, let alone biking Royalty of the Canyon (formerly King of the Canyon), which is 50 kilometres all over Grey Mountain. Or biking with the even-crazier people who do the unofficial Triple Crown, which involves riding up and down three big mountains in town: Haeckel Hill, Grey Mountain and Mount Mac. There have been a few events that have appealed to me with my abilities. These include Shredhers Mountain Bike Retreat, and Fatbiking at Christmas. In 2021, Michelle Friesen organized the first-ever ShredHERs retreat. It was a two-day retreat for newbie women who were partnered with a mentor. It was fantastic. Kate White gave us all positive improvements for our biking and we all had a laugh and enjoyed our mountain biking at Montana Mountain in Carcross. What was great for me is that my mentee and I totally hit it up. I explained to her how difficult biking has been for me, how much everything scares me and how much I wish I could do stuff. We decided to go off on our own and went down a trail called Upper Wolverine. I told her, “I usually walk everything, so let’s see.” White had just shown us new techniques for walking the “line” we

would take, to see it before we would rode it. We started on the trail and immediately hit something I had never done. We walked it together. Then I thought to myself, Bugger it. Go for it. I rode it! Then my mentee rode it! Then we kept doing it! There were a few sections we didn’t want to do (and probably never will). “Oh my goodness,” I said, “this is the most I’ve ever done on this trail. Seriously, this is crazy!” “Thank you!” My mentee said. “I think knowing you hadn’t done this before and seeing you do it made me really think I could do it too!” That’s what mountain biking can do for you—take you out of your comfort zone, and even if it takes you three years to do something (or if you never do something), you always have someone there to support you. Another great way to make friends and get better at biking is to participate in one of the highly in-demand skills clinics.

Mount Sima & Carcross Still not sure about reaching out directly to the world in the above methods? Fear not. The oldschool way is to show up and join a pack. Mount Sima is on wednesday nights and provides a bike-lift, to shuttle you up the mountain, so you can ride down. What better way to make a new biking friend than to jump on the lift and start chatting? And don’t worry if you can’t ride down the whole thing just yet. It took me two years and many children passing me before I could make it down their easiest trail. Carcross is also a great option to meet and to join in on rides. Any given weekend, once the snow is gone, there are shuttle vehicles making their way up and down the mountain. Bring your camping chair, lunch and a beer, because you are certainly going to meet some fellow bikers and, hopefully, new friends. PRESERVING VEGGIES FOR (BRRRH!) WINTER Lacto-fermentation At minus 50℃, growing root vegetables is not an easy thing. In the Yukon, while the growing season in the summer is very efficient, with almost 20 hours of daylight, the winters are tough for our food gardens. To keep eating local during cold months, with very little energy and time required, lacto-fermentation is a fantastic solution for preserving fruits and vegetables, among other foods.

Preserving veggies for years (in salt and water) Since the Neolithic Age, the process of lacto-fermentation is well-known. The idea is to preserve food in salt or a brine (salt and water), in an airtight container. The salt allows the produce to stay firm and helps to accelerate fermentation. In those conditions, fermentation will start producing lactic acid, thanks to lactic bacteria that is naturally available in veggies. These bacteria multiply, feeding on food sugars (carbohydrates). The acidity produced destroys any pathogens or bacteria and avoids risk of food decomposition or alteration. Once fermentation is done, food can be kept for years at room temperature. In addition to preserving, fermenting has other benefits. The process keeps vitamins in the fruits and vegetables and even increases their levels. The food is also easy to digest and strengthens our immune system. Beyond health benefits, lacto-

READY TO GO BACK TO SCHOOL?

Enjoy fermented veggies on a thick slice of sourdough bread fermented products are delicious, cost saving and super easy to make. So what are lacto-fermented products? Sauerkraut, pickles, kimchi or any veggies or fruits in a brine; but also ham, salami and some fishes such as Nước Mắm (Vietnamese dipping sauce) and smoked salmon (salted before being smoked).

Salt or brine? Use salt for veggies that have high water content (1% salt for the veggies weight, cut into small pieces). You will see the brine appear naturally. For whole veggies or low-water-content ones, immerse them in a brine (3% salt to the water volume). Here are several recipes to get you started!

Fermented Root Vegetables What you need: • A mixing bowl and a knife (optional) • Glass jars • Veggies such as cabbage, carrots, beetroot, parsnips, turnips, white radishes • Sea salt: 1% of the prepared veggies weight • Aromatics such as garlic, onion, parsley, coriander, cinnamon, ginger

Process: 1. Grate or cut veggies into small pieces, or leave them whole if they are small enough. 2. Mix veggies, salt and aromatics together. Press mixture with your hand until water emerges. 3. Let it rest for 15 minutes until the juice comes out 4. Add to jars (including the juice), leaving 1 inch of space at the top. Press firmly to remove any air. 5. Seal the jars and put them on a plate. If there is too much juice, you can remove some. Let them ferment at room temperature for at least a week. Don’t open the jars during the fermentation process (to avoid air coming in). The veggies will give away the water and the pots will be full of liquid. After a couple of days, they will be slightly effervescent due to the creation of carbonic gas, removing any air left at the top of the jars. 6. You can keep the jars in the fridge or at room temperature for weeks to months. The veggies can be eaten in a salad, or in soup. Don’t salt your meal again; the veggies are already seasoned! cont’d on page 20 ...

Fermented Garlic If you love garlic but want to avoid the strong taste, fermenting is the perfect solution. What you need: • Glass jars • Young (green) garlic • Sea salt for brine (3% of water volume) Process: 1. Select young garlic and separate the cloves. It is not necessary to peel them. Put them into the jars. 2. Prepare the brine with 30 grams of sea salt, per litre, of non-chlorinated water (if your water is chlorinated, leave it in an open jar to evaporate for a few hours).

3. Pour the cool brine over the cloves. 4. Seal the jars and leave them to ferment for a week at room temperature, and then in a cooler room or in the fridge for at least 3 weeks. 5. Another option is to replace the brine with a natural, liquid flower honey, wait for at least a month to ferment (8 to 12 months is ideal). An absolute delish! 6. This garlic can be used like the fresh one—on pizza, in pesto or with meat or fish. The longer it ferments, the better it is! You can keep the juice for cooking.

Baba Ganoush To preserve eggplants, here is a delicious sauce recipe to keep for fall and winter.

What you need: • 1 glass jar (500ml/18oz) • 2 to 4 eggplants • 2 garlic cloves, cut into 4 pieces • 2.11 cups (18oz) of water • A Tbsp sea salt • Olive oil Process: 1. Peel the eggplants, cut them into slices and then in half again. Place them into a colander and sprinkle with sea salt. Leave for one hour (the water will come out). 2. Prepare the brine: add the salt to the non-chlorinated water. 3. Once ready, press the eggplants in your hands to remove excess water. 4. Pack them into the jar, with the garlic and any aromatics you like (oregano, parsley, etc.).

5. Pour the brine overtop. 6. Seal the jar and leave it to ferment for two weeks. Open the jar and remove the brine (you can keep it for making soup or a sauce). Replace the brine with olive oil. The eggplants will be preserved for months in olive oil. Delicious on bread or with pasta.

Preserved Lemons My little favourite! Preserved lemons are delicious when slowly cooked with veggies, fish or meat. The traditional recipe makes use of the whole lemon. For similar results, I would recommend using only the peels, as a way to reduce waste in your kitchen.

What you need: • 1 glass jar • Organic lemon peels (use organic as others are heavily treated) • Sea salt Process: 1. Cut the lemon skins in two or three pieces. 2. Place a layer of lemon skins into the jar. 3. Add a tablespoon of salt inbetween each layer of lemon skins. 4. Press well and add more layers until you reach the top of the jar. 5. Seal the jar and leave for (at least) a month or two. Can be kept for years! n

She is a 2-year-old, female German Shepherd. Maple is available for adoption from foster. Her foster family really enjoys having her, but it’s time for her to find her forever home, this is what they have to say about her: Maple is a gentle giant around the house. She is patient and affectionate and loves pets and cuddles. Maple has excellent leash skills and knows how to heel beside her walker without pulling. She does react quite assertively towards other dogs who come to the fence and would benefit from meeting other dogs in a training environment. It’s uncertain how much exposure she’s had to other dogs but it’s clear she is a smart girl. Maple is good around children. She is a dream around the house. She is also fully house trained and knows many commands like how to sit and lie down. She is independent at home and when she has been left alone for short periods of time, she leaves the house looking as it did before. Maple is a loyal and loving girl and will make a family very complete. ***Maple has been diagnosed with mild hip dysplasia which is likely congenital. The vet believes with proper care and management she is able to live a full and happy life. Manus Hopkins is a Toronto-based musician and music journalist, originally from Whitehorse.

Paris Pick, one of the Yukon’s most-recognized and mostcelebrated musical artists, is leaving the Yukon with a send-off concert taking place August 12

I

t’s official. After nearly a decade in the Yukon, Paris Pick is moving away—first to pursue music school and then to continue the trajectory of her career as an artist. It’s bittersweet: Pick came to Whitehorse from Port Hardy, B.C., at age 18, and within a few years had become one of the most-recognized and mostcelebrated artists in the territory, amassing national recognition and even beginning to break into the overseas market. But now, at age 27, Pick is ready to take on the world—and the world had better be ready for her. “Moving up here was an inspiration,” Pick said, looking back on her humble beginnings just before heading back into Jordy Walker’s studio to continue tracking vocals for her next release. “I started playing music the way I do now because of the community.” Pick’s love for the local music and arts community was born the

that she wanted to play music. It’s interesting to hear Pick put herself back in her old shoes, as an unknown young woman who had started a new adventure in a strange place, not knowing what

to expect. Anyone who knows the musicians of the Yukon knows who Pick is. With full-length albums, award nominations, national tours and international showcases under her belt, she’s also staged her own DIY festival, Greasefest, for the past few years, while helping local venues with bookings, teaching youth rock bands at summer camps, and acting as a mentor to many of the Yukon’s younger upand-coming artists. “It’s gonna be pretty emotional leaving,” she admitted. “But I’m also very excited and I know Whitehorse isn’t going anywhere. So I’ll be back.” Pick is packing up at the end of the summer and is driving down to Nelson, B.C., where she’ll be pursuing a two-year diploma at Selkirk College. The decision to pursue music school was more like a revelation to Pick, which came when she was reflecting on what she wanted to do with her life while on vacation in Mexico last winter. “I want to play music until I die,” she said. “I’m already almost there.” Furthering her education in music seemed like the natural next step for Pick, who is a selftaught musician who wants to better understand the theoretical aspects of creating and performing music. It’s not the qualification or the piece of paper that’s important to Pick; it’s all about expanding her understanding of music. “I’m not giving myself any expectations, but definitely just want to get more knowledge,”

she said. Landing on Selkirk College wasn’t a difficult decision, either, as several of Pick’s fellow prominent, local music-scene members are graduates of that program, including Selina Heyligers-Hare, Elijah Bekk and some of the members of Major Funk. “Everyone knows Selena Heyligers-Hare, who was probably my biggest inspiration living here in the Yukon,” said Pick. Just seeing another female musician—she’s totally badass. And when she came back from school, we all saw a level-up in her playing and performance.” Pick’s main act, for the past several years, has been her eponymous band, Paris Pick and the Pricks. Though she’s able to hire musicians on a touch-andgo basis, often putting together a group for whichever showcase or tour she has coming up, she’s had other long-serving members and some who have left to pursue other goals but have returned, at one point or another, too. Once she gets down to Nelson, she already has a plan to put together the newest iteration of the Pricks. “I pretty much have a version of my band ready to go for when I get down there, because my old guitar player, Zach Pelland, lives in Cranbrook, which is just two hours away; and my old drummer, Lee Campese, is in Ymir,” said Pick. “So, I pretty much have everything I need when I get down there. She’s never lived in a city before, either, and thinks Calgary would be a good one to try out. “Definitely every time I’ve played there they’ve been vibing on the Paris Pick show,” she said. “And that’s another reason why I think I’ve got to bring my band there.” Not one to leave without a massive send-off, Pick will be hosting a going-away event at the 98 Hotel on Friday, August 12. The evening will feature a host of Yukon performers, including John From Dawson and NitPik, Clout Game, Bon Che and Joshua Gladston. Admission will be by donation at the door, with the proceeds going to help Pick along her journey to B.C. Also part of the night will be a Crocs fashion show, with prizes from local businesses being given
