Kata’s latest addition to the dining scene couldn’t be more stunning. Kata Rocks’ restaurant embraces state-of-theart modern design, poolside dining right on the rocks and spectacular views over Kata Bay. But it doesn’t end there. Chef Steve has created an environment that breathes simple elegance while emphasising wholesome, natural ingredients. According to Steve this means, “The best of Thailand’s local and organic produce, complemented by imported ingredients from the finest producers of taste around the globe.” The menu focuses on top quality grilled meats and seafood. In addition to traditional starters and main courses, Kata Rocks offers a wide selection of side dishes to encourage sharing. ‘Mix and match’ from amongst Steve’s creations such as Salmon & vodka crab cake, avocado lime salsa, papaya mint salad; Roast pumpkin, mustard aioli & pumpkin seeds; Green beans, feta cheese & crispy parma ham. Or go for a succulent main course, for example Roasted Tajima beef tenderloin, olive gremolata, wild mushrooms, pearl onions, pinot glaze. Before you dine – or simply make an evening of it – there’s the Kata Rocks Bar. They claim it’s “…a huge cut above the 1000s of Phuket bars” and they’ve got a point! The same cool design as the restaurant, the same spacious poolside location and the same splendid views – but a bar with a difference. A wide selection of tasty “Bar Bites & Canapés”, drinks with a unique twist, classic cocktails and combinations and the really different “Enomatic” wine serving system; a huge range of premium wines by the glass dispensed by a machine! Simply browse the collection of wines on display, make your selection, press a button and… drink. The machine’s preservation system keeps the wine as fresh as the day it was opened for up to four weeks. The Kata Rocks team describe their creation as “... where friends come together to share great food, neither stuffy nor too casual.” It works. Mama Mia! Conceptualisations and ingenuity in Italian cuisine come to Nai Harn! Relish an authentic style of a diverse array of favourites and new combinations served in a stylish yet cozy ambiance, or savour pizzas in a separate casual seating area by a wood-fired oven. An evening meal must kick off with an aperitif! And so we did, while soaking up the surroundings of the Da Vinci restaurant and bar. Open air, but with enough cover for when the rains come (and with an air-conditioned dining room too), Da Vinci is tasteful, beautifully designed and welcoming. The children’s play area offers parents the opportunity to relax with a fine meal, while keeping their kids in sight. Tantalizing temptations come from the kitchen with fresh ingredients as signature items in every dish. Our first adventure was the antipasti of Bruschetta, grilled sliced bread with chopped tomato, garlic and olives. Refreshing and the perfect choice to get us started, it was followed by the primi piatti course of a trio of pastas: Lasagne Al Forno (homemade lasagne in layers with beef and tomato sauce), Spaghetti Gamberi Zucchine Vodka (spaghetti with prawns, zucchini and vodka) and Spaghetti Neri Pomodorini Calamari e Gamberi (black spaghetti with tomato, squid and prawn). Unique tastes and texture combinations, underlining the quality of the ingredients. Good wine is, of course, essential to a fine meal. The Palazzo Della Torre Veronese Indicazione Geografica Tipica 2004, Allegrini was the perfect red to complement the first two courses and continued to match the secondi piatti and pizze courses, Scaloppine Al Vino Bianco Con Patate (tender, perfectly cooked fillets of pork in white wine, served with potatoes). Pizza is a must-have in a traditional Italian restaurant, and Al Proscuitto Crudo (tomato, Mozzarella cheese and Parma ham) is one not to be missed! Semifreddo All Arancio and Semifreddo All Amaretto (home made orange and amaretto sherberts) were the indulging cap to the meal. For superlative Italian cuisine with the freshest of ingredients, be sure to take the Da Vinci voyage of discovery.

Oyster-Grill-Wine-Beer Bar Oysters, foie gras, steak, french fries and mayonnaise, a Belgian blond and... chocolate beer? Superbly presented and well prepared food, plus exotic beverages, make for an exceptional dining experience. Even more so in a chic yet casual setting. The Brasserie Wine Grill and Oyster Bar, one of Phuket City’s newer venues, blends elegant décor and soft lighting to create a warm and relaxing ambience. The Brasserie has four main areas – an oyster bar, a dining area of white tablecloths and framed prints depicting Belgian and French scenes, the half circle-shaped bar with its 31 Belgian beers and other beverages, and an informal space with comfortable couches, armchairs and low tables to dine and enjoy reading materials. Alain, the owner/chef of this Belgian brasserie suggested an array of dishes. Pacific oysters and Warm tomato soup with a vegetable top (served in a shot glass) were a superb way to begin, while River prawns cooked in a peppery paste and Foie gras with an apple topping were pure delight. Chef Alain’s excellence and passion for his craft was further displayed in the fish and meat courses. The moist fish, served in foil, was first grilled and then steamed with wine and spices, bringing out the ich flavours. Pan-fried in butter, the steak was cooked to medium rare perfection and served with french fries and homemade mayonnaise. Decadent desserts captivate the sweet tooth in all of us. The Brasserie’s Chocolate mousse and Crème caramel did not dissapoint. Good food must be complemented by good beverages and ‘must-haves’. Leffe draught (Belgian) beer followed by a very drinkable French red house wine fitted the bill perfectly. And after? Indulge yourself at the bar and see if you dare to try an exotic beer – chocolate, peach, cherry, raspberry... Outstanding food and drink go hand and hand with a glorious setting and atmosphere. The Brasserie Wine Grill and Oyster Bar is a welcome – and very different – addition to Phuket’s ever-growing variety of dining choices. Bon Appetit! 11

Yes I know, I’m in Thailand, but tonight I fancied Greek. Perhaps it was watching Zorba on TV earlier... Anyway, I wanted Greek and I was walking through Kata when Two Chefs came into view. I checked the menu; it was vast, covering Italian, Mexican, Aussie steaks, Greek, Thai and more. And the huge beer and cocktail list... Belgian brews... I chose Tzatziki with Garlic Bread followed by Greek Beef Tenderloin Skewer with more tzatziki, tasty feta cheese salad and baked potato. My drinking pal chose Toast Skagen with prawns, dill, chili and mayonnaise. He followed with Wooden “Planksteak” – grilled pork tenderloin, a surround of mashed potatoes, sauce béarnaise, bacon and red wine sauce served on – yes – a wooden plank. Everything was simply superb! While ordering, we met one of Two Chefs partners, Henrik, who explained the thinking behind the Two Chefs Group. They have ‘Bar & Grill’ restaurants in Kata Centre and Karon, and a new restaurant opening on 1st Dec in Icon Park, just south of Kamala, this one with a ‘Sky Terrace’ for night owls. They all have similar menus; some have live bands and some single musicians - all Filipino. Not enough? Well then, check out their ‘local’ bistros in Kata-Karon, one next to their bakery and birthday cake outlet. Back at Kata Centre, we discovered a discreet 2nd floor dining area – great for couple’s dining, but would work well for parties too. Talking of parties, Henrik told us, Two Chefs outside catering is up and running, offering beachside fireworks as one novel feature. These Two Chefs are really going places... The smiling staff took great care of us as if they really loved working here. Fun, enthusiasm and efficiency were the keynotes – but neither fast delivery nor presentation were sacrificed. And here’s a real bonus: they operate an ‘allday-all-night’ Happy Hour! The Chang beer is cold and and the Sangria is... well... exquisitely Spanish. Two Chefs have a winning formula. Dine on Italian food right on the beach! Savour authentic regional dishes while sitting alfresco on the terrace with a view to the ocean – or opt for the classic Italian atmosphere of the indoor dining area if fresh sea air is not your scene or the if weather has decided to be unco-operative. Tucked away on Surin Beach, Cefalù offers not only a spectacular setting to enjoy a seaside meal, but also superb Italian fare with an extensive wine list to match. Owner and Chef Duilio and his team have a strong reputation for preparing delicious dishes using only the freshest and highest quality ingredients – served of course with utmost care and attention to detail. Two starters that are a ‘must try’ are the Crostino al Prosciutto di Parma or sliced bread with Parma ham and mozzarella cheese and the Tartare di tonno or fresh tuna tartare with toasted bread. The salty taste of the dry-cured pork and the milky taste of the firm cheese ball complement each other perfectly. Delightful in the way it was presented, the tuna was moist and succulent. On our visit to Cefalù’s, Duilio’s main course recommendations were outstanding. He suggested Lasagne al forno (al ragù) or homemade lasagna with meat and Ravioli polpa di granchio e gamberetti or ravioli filled with crab and shrimps served with lobster bisque. The lasagna was meaty and moist and spiced perfectly – just like ‘mama used to make’ and the seafood ravioli was heaven for the taste-buds and a treat for the eyes. Naturally, an Italian dinner cannot exist without the perfect wine and here Cefalù’s notches up a healthy score with its extensive wine list, featuring (of course) a solid selection of Italian wines. Dessert was a creamy Panna Cotta topped with cherries and a spongy Tiramisu, traditional Italian desserts and absolutely delicious. Cefalù’s offers a casual dining experience with superb food with an unbeatable beach location. Truly magnifico!

Pasta Basta not only brings another dimension to waterside dining at Royal Phuket Marina, but offers something unique to Phuket: Design your own pasta dish. As for the environment, JOBI designers’ Pui has employed her creative talents creating an ‘industrial’ feel; a long communal dining table occupies the centre of the restaurant, surrounded by high level dining ‘à deux’ tables. The décor is simple, creating the kind of unassuming atmosphere you could expect from a chic Milan city-centre eatery. Back to that do-it-yourself pasta. If you’re like me, this kind of thing doesn’t generally appeal BUT, once we got stuck into it, there’s no denying it’s a great way to go. Take a few minutes to work out how to do it, check with your host Cathy Masson if you’re not sure what goes with what, then dive in and create your own mouthwatering experience. My choice: penne with (base sauce) olive oil, (ingredients) scallops and mussels and (additional condiments) garlic and white truffle oil. I’m a genius! OK, the fact that the ingredients were top quality and the chef clearly knows a thing or two may have contributed to my enjoyment of the best pasta meal I’ve eaten for as long as I can remember. My dining companion went against Cathy’s advice and selected smoked salmon and Parma ham – two of her favourite tastes – as her two main ingredients and said it was divine. Just goes to show: when you’re in the driving seat you can buck convention happily. But, if you prefer to stay within the bounds of convention, feel free to go for one of the ‘Classic Creations’, where the chef does all the work. But you’ll be missing out. Around the edges of our pasta creations, we ordered garlic bread, bruschetta and a fresh salmon salad. The former were as you’d expect, the latter simply heavenly. All was washed down with a very drinkable Santa Helena Cabernet Sauvignon and followed by desserts from nearby Les Anges bakery. Pasta Basta is quite simply first-rate waterside dining with no pretentions – just impeccably sourced and prepared ingredients and excellent service from a team that never stops smiling and is obviously happy at work. My companion’s question, “When can we come back?” says it all. 15

I have a confession to make. I really know nothing about Vietnamese food – or at least I didn’t until sampling Madame Saigon’s menu on the Royal Phuket Marina boardwalk. With its fresh and airy décor, evoking the essence of colonial Vietnam, comfortable seating inside – or out on the boardwalk overlooking the fabulous yachts – not to mention a cuisine that had yet to make an impact on Phuket, Madame Saigon is a refreshing change from the Phuket dining-out malaise, ‘same-same-no-difference’. Accepting menus from one of the ever-smiling waitresses, we stared glassy-eyed and uncomprehending before calling our host, Cathy Masson, over for guidance and a little background on what we were about to experience. Explaining that Vietnamese food – low on oil and high on fresh herbs and vegetables – is considered one of the healthiest in the world, she guided us through a selection representative of the cuisine. We sampled Chao Tom (minced prawn and pork on lemongrass skewers), Nem Mua Ha (classic ‘summer rolls’ – crispy raw vegetables, aromatic herbs and cool noodles, all wrapped in a translucent soft rice wrapper), some Nem Rau (crispy spring rolls) to ward off my companion’s pending deep-fried withdrawal symptoms, Ga Chi Sa (stir-fried lemongrass chicken), Bo Luc Lac (stir-fried ‘shaking’ beef seasoned with black pepper) and Pho (delicious rice noodle soup made with either beef or seafood). What was the verdict? Well, we both had our “I like that one most” moments. For me it was the Chao Tom and Ga Chi Sa. For her, the Nem Mua Ha and, yes, the Nem Rau. We both raved over the Pho, but realised we’d ordered way too much (we expected small portions – wrong!), so were unable to truly do its subtle flavours justice. We’ll be back to give that another go – maybe accompanied by nothing more than some Guan Han (Vietnamese barbecued pork). What makes Madame Saigon a welcome addition to Phuket dining, apart from the superb location, is the variety they’ve added to our ‘standard’ Phuket choices. And, with the most expensive dish (beef ) only about 300 baht (incl tax and service), going Vietnamese is not going to break the bank.

It was a brave move to open three restaurants (well, two restaurants and a unique lounge bar) on the same day – but Royal Phuket Marina did it with their soft opening on the first day of the Phuket International Boatshow in January 2014. Long-awaited by mid-island residents, the marina’s boardwalk has come alive and promises to be a unique place to drink and dine ‘à la St Tropez’. We started our ‘marina evening’ at The Speakeasy – a name that conjures up 1920s-30s prohibition in the USA, when alcohol was illegal. Speakeasies blossomed and, unlike the traditional bars, welcomed men and women who wanted a few drinks, to listen to live music and to dance. Why “speakeasy”? Well, originally it was because pre-prohibition unlicensed USA bartenders would tell their customers to “speak easy” when ordering their alcohol. Of course, there’s nothing dodgy about Phuket’s Speakeasy at Royal Phuket Marina’s boardwalk – but it does conjure up images of an Al Capone hangout; you almost expect Eliot Ness and his ‘Untouchables’ to burst through the doors. This atmosphere is thanks to interior designer Pui (of JOBI designers) who, with her eye for detail, has done an amazing job of recreating the authentic ‘speakeasy’ environment. The Speakeasy, along with the two boardwalk restaurants, is managed by Cathy Masson – one of Phuket’s best known restaurateurs whose unique ‘The Wall’ in Rawai was one of the south island’s favourite eateries in the late 90s. What is The Speakeasy about? Well, lounge around with friends on one of the luxurious sofas, soaking up the atmosphere with a perfect gin & tonic or a cocktail from the extensive menu. Or sip a malt whisky accompanied by a good cigar outside on the boardwalk. It’s perfect for informal meetings and briefings too, with a private area in the back behind the central island bar (but no, there isn’t a door into a back alley – that would be just a bit TOO authentic). And anywhere that limits its selection of gins to Hendricks, Bombay Sapphire and Tanqueray has my vote! Daily happy hour from 6-9 pm 50% off cocktails, local beers and selected wines. 17

About the Chef Jaree Noisamlee Originally from Trang in the south of Thailand, Chef Jaree studied cookery at Pranakorntai University in Bangkok before joining the famous Mandarin Oriental. When Baan Rim Pa was established in 1990, she was asked to join the small team by Khun Das (Baan Rim Pa’s Managing Director) who had also been seconded from Mandarin Oriental and has been here ever since. Chef Jaree has always been a totally ‘hands on’ chef and continues to thrive in the kitchen making sure her team keep to the highest standards and quality expected of ‘Royal Thai Cuisine’. She runs a very tight ship with a small team of 17 in the kitchen. In high season they can produce up to 700 dishes in one day which can be a major challenge for any team.

Goong Sarong Deep Fried Prawns Rolled with Yellow Noodles Ingredients 1/2 lb fresh prawns 1/4 ib long life noodles (mee sou – usually available at shop with Chinese ingredients) 1 tbsp chopped coriander root

2 tbsp chopped garlic 1 tsp ground black pepper 1 cup vegetable oil 2 tbsp Chinese plum sauce 1 tbsp ketchup

Preparation Peel the prawns, but leave the hard tail flap. Remove the dark vein. Pound the coriander and garlic in a mortar until a paste is formed. This can also be done in a blender or food processor. Add a little oil if necessary. Add the pepper and the shrimp to the marinade, mix well and let marinate. Soak the noodles in the hot water until soft and then drain. Remove a shrimp from the marinade and wrap with one or more noodles until the shrimp is covered in a ‘sarong’. Repeat until all the shrimps have been covered. Fry in hot oil until the noodles are brown and crunchy.
