“Infinite luxury”… that’s the brand behind Kata Rocks, so we went along to see if the experience lives up to the name. You can’t fail to be blown away by the setting and the cool design. The indoor-outdoor bar area, faces the infinity edge pool with the ‘kata rocks’ below, one of the island’s best spots for sunset watching; once the sun’s gone down, the subdued crashing of waves and the distant lights of Kata Beach remind you that you’re at the ocean’s edge. We started with poolside cocktails, which came with delicious complimentary tapas. Then it was time to see what the main event offered. With a choice of Thai or western menu, we both opted for the latter and kicked off with Tomato seafood soup, preserved lemon, crab & chive crème fraîche and Slow-cooked pork belly, seared scallops, cauliflower cream, raisin & honey dressing. Main courses were Duck leg tartlet, plum duck breast, beetroot, pear & black rice salad and Pan seared grouper, baby tomatoes, fennel, lemongrass & soy beurre blanc. I watched the reaction of my companion, a cynical veteran of countless gourmet lunches and dinners around the globe. “This is good, surprisingly good,” he said – an accolade from someone not noted for heaping praise on anything or anyone. For dessert, we feasted on Frozen cappuccino terrine, almond cookie & white chocolate fondue, Baby citrus meringue tartlets & Chocolate fudge ganache with honey tuille. Not usually a dessert man, I confess that we left not a scrap on the plate. Simply divine! The wine list is, as you’d expect, extensive and variedwith carefully selected wines starting at around 1,500 baht. We selected a very acceptable South African pinotage, Eikendaal 2010 – at 1,450 baht. So, does “Infinite Luxury” cost the earth? Surprisingly, at Kata Rocks, it doesn’t have to. A 3-course meal works out between 1,240 - 2,100 baht ++ (add another 1,000 if you’re an Australian Wagyu Rib Eye fan).

We all have those days when our minds are just too scattered. Well, wouldn’t it be nice to have a ride through a road where on one side you’ve got Bang Tao beach and the famous Outrigger Lake, and on the other side a marvellous green forest with the smell of wood and grass. Keep going and you’ll reach Nikki Beach Club right by Layan beach, with marvellous view of the perfect blue Andaman Sea. But that‘s not going to get you into chill mode all by itself. That’s where Nikki Beach club comes in, with its free, fresh spirit. That’s not only because of the tasteful white theme and the happy smiles but also the carefully selected music; the DJs know exactly when to change the style of music to suit the particular moment you’re experiencing. Brilliant! Me and the Sunday Brunch... The buffet of worldwide classics, just perfect for a relaxing sunny Sunday. From Shrimp Thai Sea Food Salad, Pasta and Mixed Salads, Fried Spiced-up Vegetables, Tomato Mozzarella Paninis all the way to juicy Steak and Oyster filled with marvelous bacon and cheese. Dressings are the soul of the food here. The Pesto at Nikki is “Sabroso” as the Spanish say. A dip in the ‘sea view’ pool, the tunes playing in the air, dancing with the staff while sipping on my Nikki Famous Rosé, I wouldn’t dare to say I had a boring Sunday! It got even better when my mango ice cream and kiwi crepe arrived. Jealous yet? Oh and the staff? Nice? Friendly? That’s an understatement, of course. Details are Nikki’s speciality. Let me leave it at that. Judge for yourself... Me, Nikki and à la carte, different spirit, different style. First things first: world-famous Nikki Mojito, le parfait. From Italy to Spain to New York City and now here in Phuket, it’s Nikki and it’s cocktails. Sangria jug, Phuket Piña Colada, Mallorcan Delight; could have them all. You’ve gotta love a tasty cocktail under the stars, this time with really mellow beats, as clichéed as it may sound. The moment I was greeted by Peter, the Executive Chef, I knew I ought to have prawns. My decision was confirmed when other staff made the same recommendation. Grilled Tiger Prawns with Mild Chilli and Garlic, Parmesan Polenta and Tomato Relish as well as the lovely Buratta Salad. A staggering dinner in a tranquil place. The ‘other’ Nikki Beach.

Mama Mia! Conceptualisations and ingenuity in Italian cuisine come to Nai Harn! Relish an authentic style of a diverse array of favourites and new combinations served in a stylish yet cozy ambiance, or savour pizzas in a separate casual seating area by a wood-fired oven. An evening meal must kick off with an aperitif! And so we did, while soaking up the surroundings of the Da Vinci restaurant and bar. Open air, but with enough cover for when the rains come (and with an air-conditioned dining room too), Da Vinci is tasteful, beautifully designed and welcoming. The children’s play area offers parents the opportunity to relax with a fine meal, while keeping their kids in sight. Tantalizing temptations come from the kitchen with fresh ingredients as signature items in every dish. Our first adventure was the antipasti of Bruschetta, grilled sliced bread with chopped tomato, garlic and olives. Refreshing and the perfect choice to get us started, it was followed by the primi piatti course of a trio of pastas: Lasagne Al Forno (homemade lasagne in layers with beef and tomato sauce), Spaghetti Gamberi Zucchine Vodka (spaghetti with prawns, zucchini and vodka) and Spaghetti Neri Pomodorini Calamari e Gamberi (black spaghetti with tomato, squid and prawn). Unique tastes and texture combinations, underlining the quality of the ingredients. Good wine is, of course, essential to a fine meal. The Palazzo Della Torre Veronese Indicazione Geografica Tipica 2004, Allegrini was the perfect red to complement the first two courses and continued to match the secondi piatti and pizze courses, Scaloppine Al Vino Bianco Con Patate (tender, perfectly cooked fillets of pork in white wine, served with potatoes). Pizza is a must-have in a traditional Italian restaurant, and Al Proscuitto Crudo (tomato, Mozzarella cheese and Parma ham) is one not to be missed! Semifreddo All Arancio and Semifreddo All Amaretto (home made orange and amaretto sherberts) were the indulging cap to the meal. For superlative Italian cuisine with the freshest of ingredients, be sure to take the Da Vinci voyage of discovery.

The heart of a fine dining experience is elaborate dishes elegantly displayed and subtly, exquisitely spiced. The Royal Thai Banquet includes an array of starters, soups, main courses and desserts, which range in degrees of spiciness and represent an innovative approach to Thai cooking with a spectrum of recipes from the past and present with a look to the future. Starters include Chor Muang, a steamed flower shaped dumpling, Doi Kham Salad, purple eggplant salad with grilled scallops, Labb Salmon, a salmon tartar and Black Chicken Crispy Spring Rolls. Enticing soups include a choice of Tom Kha Kai Black Chicken, a soup of coconut milk and galangal and Tom Klong Wild Red Sea Bass, a spicy and sour soup. Main courses, a variety of seafood and meats, are tantalizing. Nooror’s Massaman Lamb, a coconut milk curry with potatoes, peanuts and cashew nuts, is described in a 19th century poem by King Rama II. Then there’s Duck with Tamarind Sauce, Black Chicken Green Curry, Phad Sator Koong, prawns with parkia in shrimp paste and Bamboo Fish, Parrot fish cooked in a bamboo case. Exceptional. Professional. Outstanding hospitality. Topnotch service. Executive Chef Justin Baziuk plans and steers the evening on a culinary journey that begins with sourcing the best and freshest ingredients from all over the world. Beef has been farm raised and grass or grain fed, the poultry is organic and the seafood caught fresh daily, while produce is obtained from organic farmers. Finger foods, breads and sweets are all made in house. Chef Justin – renowned for his passion in all aspects of cooking (and indeed his passion in explaining it!) – served an unparalleled array of appetizers, main courses and desserts. Scallops, scotch single malt salmon, blue crab ravioli and foie gras marked the beginning, exhibiting an intricate combination of ingredients, perfect on the palate and elegantly presented. The main course featured top-notch quality meats from Australia – pedigree Hereford and Black Angus beef and lamb – cooked to medium-rare perfection. Side dishes and fine wines were glorious accompaniments. The irrestible sweet treats included a French-style cheesecake and an assortment of chocolate treasures beautifully crafted. Not forgetting the between-courses palate cleanser: fruit sherbet and Bailey’s ice cream. Perfect! Top quality ingredients, on which Chef Justin has based some outstanding dishes, together with flair in preparation and presentation combine to create a memorable occasion. Along with superb hospitality and a peaceful and idyllic setting, the recipe is there for an elegant and unmatched evening.

It was a brave move to open three restaurants (well, two restaurants and a unique lounge bar) on the same day – but Royal Phuket Marina did it with their soft opening on the first day of the Phuket International Boatshow in January 2014. Long-awaited by mid-island residents, the marina’s boardwalk has come alive and promises to be a unique place to drink and dine ‘à la St Tropez’. We started our ‘marina evening’ at The Speakeasy – a name that conjures up 1920s-30s prohibition in the USA, when alcohol was illegal. Speakeasies blossomed and, unlike the traditional bars, welcomed men and women who wanted a few drinks, to listen to live music and to dance. Why “speakeasy”? Well, originally it was because pre-prohibition unlicensed USA bartenders would tell their customers to “speak easy” when ordering their alcohol. Of course, there’s nothing dodgy about Phuket’s Speakeasy at Royal Phuket Marina’s boardwalk – but it does conjure up images of an Al Capone hangout; you almost expect Eliot Ness and his ‘Untouchables’ to burst through the doors. This atmosphere is thanks to interior designer Pui (of JOBI designers) who, with her eye for detail, has done an amazing job of recreating the authentic ‘speakeasy’ environment. The Speakeasy, along with the two boardwalk restaurants, is managed by Cathy Masson – one of Phuket’s best known restaurateurs whose unique ‘The Wall’ in Rawai was one of the south island’s favourite eateries in the late 90s. What is The Speakeasy about? Well, lounge around with friends on one of the luxurious sofas, soaking up the atmosphere with a perfect gin & tonic or a cocktail from the extensive menu. Or sip a malt whisky accompanied by a good cigar outside on the boardwalk. It’s perfect for informal meetings and briefings too, with a private area in the back behind the central island bar (but no, there isn’t a door into a back alley – that would be just a bit TOO authentic). And anywhere that limits its selection of gins to Hendricks, Bombay Sapphire and Tanqueray has my vote! Daily happy hour from 6-9 pm Fridays live music from 7pm 15

I have a confession to make. I really know nothing about Vietnamese food – or at least I didn’t until sampling Madame Saigon’s menu on the Royal Phuket Marina boardwalk. With its fresh and airy décor, evoking the essence of colonial Vietnam, comfortable seating inside – or out on the boardwalk overlooking the fabulous yachts – not to mention a cuisine that had yet to make an impact on Phuket, Madame Saigon is a refreshing change from the Phuket dining-out malaise, ‘same-same-no-difference’. Accepting menus from one of the ever-smiling waitresses, we stared glassy-eyed and uncomprehending before calling our host, Cathy Masson, over for guidance and a little background on what we were about to experience. Explaining that Vietnamese food – low on oil and high on fresh herbs and vegetables – is considered one of the healthiest in the world, she guided us through a selection representative of the cuisine. We sampled Chao Tom (minced prawn and pork on lemongrass skewers), Nem Mua Ha (classic ‘summer rolls’ – crispy raw vegetables, aromatic herbs and cool noodles, all wrapped in a translucent soft rice wrapper), some Nem Rau (crispy spring rolls) to ward off my companion’s pending deep-fried withdrawal symptoms, Ga Chi Sa (stir-fried lemongrass chicken), Bo Luc Lac (stir-fried ‘shaking’ beef seasoned with black pepper) and Pho (delicious rice noodle soup made with either beef or seafood). What was the verdict? Well, we both had our “I like that one most” moments. For me it was the Chao Tom and Ga Chi Sa. For her, the Nem Mua Ha and, yes, the Nem Rau. We both raved over the Pho, but realised we’d ordered way too much (we expected small portions – wrong!), so were unable to truly do its subtle flavours justice. We’ll be back to give that another go – maybe accompanied by nothing more than some Guan Han (Vietnamese barbecued pork). What makes Madame Saigon a welcome addition to Phuket dining, apart from the superb location, is the variety they’ve added to our ‘standard’ Phuket choices. And, with the most expensive dish (beef ) only about 300 baht (incl tax and service), going Vietnamese is not going to break the bank.

Pasta Basta not only brings another dimension to waterside dining at Royal Phuket Marina, but offers something unique to Phuket: Design your own pasta dish. As for the environment, JOBI designers’ Pui has employed her creative talents creating an ‘industrial’ feel; a long communal dining table occupies the centre of the restaurant, surrounded by high level dining ‘à deux’ tables. The décor is simple, creating the kind of unassuming atmosphere you could expect from a chic Milan city-centre eatery. Back to that do-it-yourself pasta. If you’re like me, this kind of thing doesn’t generally appeal BUT, once we got stuck into it, there’s no denying it’s a great way to go. Take a few minutes to work out how to do it, check with your host Cathy Masson if you’re not sure what goes with what, then dive in and create your own mouthwatering experience. My choice: penne with (base sauce) olive oil, (ingredients) scallops and mussels and (additional condiments) garlic and white truffle oil. I’m a genius! OK, the fact that the ingredients were top quality and the chef clearly knows a thing or two may have contributed to my enjoyment of the best pasta meal I’ve eaten for as long as I can remember. My dining companion went against Cathy’s advice and selected smoked salmon and Parma ham – two of her favourite tastes – as her two main ingredients and said it was divine. Just goes to show: when you’re in the driving seat you can buck convention happily. But, if you prefer to stay within the bounds of convention, feel free to go for one of the ‘Classic Creations’, where the chef does all the work. But you’ll be missing out. Around the edges of our pasta creations, we ordered garlic bread, bruschetta and a fresh salmon salad. The former were as you’d expect, the latter simply heavenly. All was washed down with a very drinkable Santa Helena Cabernet Sauvignon and followed by desserts from nearby Les Anges bakery.
